This is the third special issue of the

The 261st American Chemical Society (ACS) 2021 spring meeting was virtually held on April 5-16, 2021. It was the 2nd 100% online ACS meeting after the first 2020 virtual fall meeting. This manuscript highlights the Agricultural and Food Chemistry Division (AGFD) technical program that hosted 8 symposia that consisted of 33 sessions that covered various food science, food chemistry, analytical science, and agricultural science topics. A total of 270 abstracts were accepted to the AGFD oral and poster programs that were organized by 24 hosts in academia, industry, and government from all around the world. The 2nd virtual meeting was very successful with the seamless technology and the people who are familiar with the virtual presentations.

This is the second special issue of the Journal of Agricultural and Food Chemistry (JAFC) that reviews the Agricultural and Food Chemistry Division (AGFD) technical program from a national meeting of the American Chemical Society (ACS). The 260th meeting was virtually held on August 17-20, 2020 as a result of the COVID-19 pandemic. Although it was the first-ever all online meeting in ACS history, a total of 311 abstracts were submitted to the AGFD technical program for oral and poster presentations and 34 technical sessions were held in 22 symposia, which covered a broad range of food and agricultural topics. The very first virtual ACS meeting was successful with the high quality of presentations, the number of online audiences, and seamless technology.

Volatile compounds and non-phenolic metabolites (amino acids, organic acids, and sugars) of aqueous green tea extracts obtained by ultrasonic extraction (UE), agitation extraction (AE), hot water extraction (HWE), and conventional extraction (CE) were determined using SPME-GC-MS and HPLC, respectively. Significantly higher (P 0.05) yields of volatiles and non-phenolic metabolites were obtained via UE and AE than via HWE and CE. UE, AE, HWE, and CE released 212, 201, 103, and 65 volatiles, respectively. Sum total of amino acid and organic acid in extracts was 54.57, 54.35, 27.11, and 12.67 (mg/100 g), and 5.96, 6.19, 3.81, and 1.68 (mg/100 g) for UE, AE, HWE, and CE, respectively. Volatiles except nitrogen-containing compounds had higher positive correlations with l-theanine, sucrose, malic acid, and catechins yields. Findings of the current study suggest that an efficient extraction technique may significantly increase volatile and non-phenolic metabolite yields in aqueous green tea extract.

The effects of a stressor nitride oxide layer on device performance and reliability are investigated. Impact of tensile and compressive stress contact etch stop layer (CESL) and shallow trench isolation(STI) mechanical stress on performance and mobility enhancement of /(100) Fully Depleted Sillicon On Insulator(FD-SOI) MOSFETs (ultrathin film, short length, metal-gate/high-K stack, thin BOX) were studied in detail. By thoroughly evaluating their impact on current, mobility, and threshold voltage, the performance gain of CESL is quantified at CMOS with mobility enhancement identified as the major source. It is also experimentally demonstrated that advantageous Length of Diffusion. In the Compress CESL(cCESL) strain , PMOS show 34% performance enhancement with LOD increase 0.1nm to 1um. On the ather hand, NMOS show 3.41%. In the Tensile CESL(tCESL) strain , NMOS show 11.72% performance enhancement with same LOD condition. On the ather hand , PMOS has changed 3.72%.

Current study was designed to find out how tea harvesting time affects the volatile and non-volatile compounds profiles of green tea. In addition, correlation of instrumental volatile and non-volatile compounds analyses to consumer perception were analyzed. Overall, earlier harvested green tea had stronger antioxidant capacity (~61.0%) due to the polyphenolic compounds from catechin (23,164 mg/L), in comparison to later harvested green teas (11,961 mg/L). However, high catechin content in green tea influenced negatively the consumer likings of green tea, due to high bitterness (27.6%) and astringency (13.4%). Volatile compounds drive consumer liking of green tea products were also identified, that included linalool, 2,3-methyl butanal, 2-heptanone, (E,E)-3,5-Octadien-2-one. Finding from current study are useful for green tea industry as it provide the difference in physiochemical properties of green tea harvested at different intervals.

Tea creaming is the development of a cloudy or hazy appearance in tea and ready-to-drink tea products on cooling and is highly undesirable in the tea beverage industry. Commonly associated with fermented black or oolong teas, the objective of this study was to investigate the physicochemical mechanism of the formation of tea cream in nonfermented green tea (Camellia sinensis) and a caffeine-containing botanical tea from yaupon holly (Ilex vomitoria) that is free of catechin-based polyphenolics. Four tea-creaming activators (phenolics, soluble protein, caffeine, and metal ions) were added to tea infusions as well as decaffeinated teas created by chloroform extraction. Tea-creaming activators increased the weight and turbidity of both teas with the exception of soluble protein addition (as bovine serum albumin) to green tea, whereas the greatest increase in turbidity occurred with the addition of metal ions in green tea. Tea creaming was equally developed at three incubation temperatures (4, 25, and 40 °C) in both teas, but tea-creaming compositions in each tea were different at the incubating temperatures. The antioxidant capacity of each tea was lowered after creaming due to the loss of antioxidants that participated in tea cream formation.

Monomeric flavonoids (flavan 3-ols or tea catechins) present in Camellia sinensis leaf are transformed to polymeric theaflavin and thearubigin by oxidation occurring during tea fermentation. The distinctive colour, decreased bitterness and astringency, and characteristic flavour are derived from the fermentation process giving fermented teas a marked distinction from non-fermented green tea. Even though teas are available in many different fermentation levels from green to black, the difference in phytochemicals and volatile compounds in teas with different degrees of fermentation has not been fully investigated yet within the same tea leaf. The objective of this study was to observe non-volatile phytochemicals including polyphenolic and volatile compounds changes by oxidation under strict processing control and to evaluate the degree of fermentation for the maximum antioxidant capacity with the same tea material. Harvested tea leaf was immediately processed to different degrees of oxidative fermentation (0%, 20%, 40%, 60%, and 80%). Tea infusions brewed with each processed tea leaf were analysed for polyphenolic profile, total soluble phenolics, antioxidant capacity, and volatile profile using LC–MS, HPLC, Folin–Ciocalteu assay, Oxygen Radical Absorbance Capacity (ORAC), and GC–MS analyses. The flavonoids in non-fermented green tea were significantly lessened during the oxidative fermentation process and the decreased monomeric flavonoids were transformed to polymeric theaflavin and thearubigin as the leaves were more processed. Total soluble phenolics and antioxidant capacity were significantly higher as tea leaves were less processed with a high correlation with individual polyphenolic changes. Volatile compounds present in tea leaf were analysed by GC–MS to observe changes due to processing and were utilised to create a model to differentiate fermentation based on volatile composition. Twenty-four compounds were used to build an initial model which was optimised to 16 compounds with complete separation of the groups using discriminant function analysis. The data suggested that fermentation diminished antioxidant capacity of tea and could result in lowering potential health benefits from flavonoids. This result should be considered for tea manufacturing and the development of functional foods desiring maximum potential health benefits from antioxidant flavonoids in tea.

Ready to drink (RTD) teas are a growing segment in the beverage category, brought about by improvements in the flavor of these products and healthy market trends driven by consumers. The presented results evaluated the antioxidant phytochemical stability of RTD teas from aqueous infusions of traditional green tea (Camellia sinensis) and a botanical tea from yaupon holly (Ilex vomitoria) as influenced by packaging materials during cold storage. Two common packaging materials for RTD products are glass and polyethylene terephthalate (PET) and have been compared to a retortable pouch (RP), an emerging packaging material for various types of food since it is durable, inexpensive, lightweight, and easy to sterilize. Storage stability was then evaluated for each aqueous infusion prepared at 10 g/L at 90 °C for 10 min and evaluated at 3 °C in the absence of light over 12 weeks. Analyses included quantification and characterization of individual polyphenolics by high-performance liquid chromatography-photodiode array and liquid chromatography-electrospray ionization-mass spectrometry as well as changes in total antioxidant capacity. For green tea, concentrations of the three major flavan-3-ols, epigallocatechin gallate, epigallocatechin, and epicatechin gallate were better retained in glass bottles as compared to other packages over 12 weeks. In yaupon holly, chlorogenic acid and its isomers that were the predominant compounds were generally stable in each packaging material, and a 20.6-fold higher amount of saponin was found as compared to green tea, which caused higher stability of flavonol glycosides present in yaupon holly during storage. The antioxidant capacity of green tea was better retained in glass and PET versus RP, whereas no differences were again observed for yaupon holly. Results highlight the superiority of oxygen-impervious glass packaging, but viable alternatives may be utilizable for RTD teas with variable phytochemical compositions.

Mangoes are an important tropical fruit crop worldwide and are best noted for their vibrant flesh colour, juicy texture, and sweet flavour, along with important nutrient contributions from their phytochemical constituents. Mangoes imported to the US must be exposed to thermal quarantine treatments, such as irradiation and hot water treatment (HWT), to eradicate invasive pests, yet limited data exist regarding polyphenolic changes to the fruit following hot water immersion treatment. Although the water temperature remains constant, the duration of treatment depends on fruit size. Therefore, these investigations focused on polyphenolic and antioxidant changes to mature, green mangoes following varying times of HWT and their changes during short-term storage. Experimentally, fruit were immersed in 46.1 °C water from 70 to 110 min; half evaluated within 2 h of treatment, while the remainder was evaluated after 4 days of storage at 25 °C for changes in polyphenolics, antioxidant capacity and fruit quality. Free gallic acid and four gallotannins were tentatively identified as the major polyphenolics present by HPLC analysis against authentic standards. Two major polyphenolics in mango, gallic acid and gallotannins, as well as total soluble phenolics, decreased as a result of prolonged HWT, while the antioxidant capacity remained unchanged in all heat-treated mangoes immediately after HWT. However, during 4 days storage, only minor changes were observed in gallic acid and gallotannin concentrations whereas total soluble phenolics and antioxidant capacity in all hot water-treated fruits decreased. The optimum hot water immersion times did not affect the external quality and polyphenolics of mangoes but all heat treatments reduced total soluble phenolics and antioxidant capacity, regardless of the duration of treatment times, during 4 days storage.

Tropical fruits such as mangoes destined for import into the United States are commonly required to have a thermal treatment against invasive pests, which could be combined with controlled atmosphere (CA) storage to prolong shelf life and preserve fruit quality. Changes in antioxidant phytochemicals and resultant quality during storage and ripening were investigated in fresh mangoes, as influenced by application of CA in combination with a hot water immersion quarantine treatment (46 °C for 75 min). Mature-green mangoes with or without a hot water treatment, were held in air, 3% O2 + 97% N2, or 3% O2 + 10% CO2 + 87% N2 and evaluated for external quality and phytochemical differences after storage for 2 weeks at 10 °C and after subsequent ripening in air at 25 °C. Visible appearance of anthracnose during ripening was effectively inhibited by the hot water treatments combined with CA. Concentrations of gallic acid and numerous hydrolysable tannins and their resultant antioxidant capacity were unaffected by the hot water treatment, while total polyphenolics naturally decreased throughout fruit ripening, regardless of hot water treatment or storage atmosphere. However, the overall decline in polyphenolic concentration was inhibited by the CA treatments, as a result of delayed ripening. Quality parameters such as flesh colour and titratable acidity provided supporting evidence that the CA conditions helped to delay fruit ripening.

Polyphenolics extracted from yaupon holly (Ilex vomitoria, Aquifoliaceae) (YH) leaves were investigated in human colon cells for their chemopreventive and anti-inflammatory activities. An activity-guided fractionation allowed the selection of YH flavonol-rich fraction due to its preferential inhibition of HT-29 colon cancer viability over the normal CCD-18Co colon cells. Quercetin and kaempferol 3-rutinosides, main components identified in this fraction, protected CCD-18Co cells against reactive oxidative species (ROS) in part due to increased activity of antioxidant enzymes. In addition, up-regulation of microRNA-146a (miR-146a) known as a negative regulator of pro-inflammatory NF-κB activation was the underlying molecular mechanism that protected CCD-18Co from inflammation.
