Brewer's spent grain (BSG) was dried via infra-red drying (IRD) or hot-air drying (HAD) and milled into fine powders. Proximate analysis (moisture, protein, fat, ash, carbohydrates by difference), water activity, dietary fiber, total soluble phenolics, and antioxidant capacity analyses were performed to characterize and compare both types of BSG powders. Mice feeding of the two types of dried BSG, each at three different concentrations, was conducted to compare the effects of the two types of dried BSG on health indicators and to determine evidence of dose response. Weights of body, feed intake, adipose tissue, kidney, and liver were recorded; blood plasma, cholesterol, liver fat, and fecal fat and protein were also measured.Significant differences were observed for liver and adipose tissue, cholesterol, and fecal protein between mice fed diets with different concentrations of BSG compared to the control diet. The analysis of hormones related to type II diabetes and metabolic syndrome did not show differences between the hormones examined, except for ghrelin and leptin, which are directly correlated with increased white adipose tissue in mice consuming high fat diets. No differences in health indicators were found in mice fed with the two different types of BSG. Mice fed with HAD and IRD BSG diets increased the relative abundance of Firmicutes and Bacteroidetes phylum microbiota compared to control diet, with no differences due to the type and concentrations of BSG in mice diets. The present results suggest that increasing levels of BSG incorporated into human foods may impart health benefits.

The microbiome is a numerically vast and taxonomically diverse microbial community that includes bacteria, fungi and viruses. The microbiome inhabits all exposed surfaces of the body and exist in a symbiosis with the host in health individuals. The microbiome can affect normal physiology of a number of host organs and systems, while a disturbance in the microbiota community structure, or failure of host responsive mechanisms to the microbiome have been implicated in a variety of disease etiologies. One of the least well-funded areas of microbiota research in relation to health and disease is the community of microbes that inhabits the oral cavity. Here, we outline the importance of the influence of the oral microbiome on healthy oral tissue homeostasis, the therapeutic options of treatment with live bacteria for diseased states within the oral cavity, and how the oral microbiome may influence healing of oral wounds resulting from oroantral and oronasal fistulas. In addition, we discuss the oral microbiome in relation to its influence on bodily organs distant from the alimentary canal, and on systemic health and disease.

Abstract Hypolipidemic and anti-obesity properties of extruded black, pinto and white beans were examined in male Syrian hamsters fed high fat diets for 3 weeks. The efficiency and effectiveness of extruder processing to eliminate heat-labile antinutrients were also determined. Hamsters fed a high fat diet containing 40% extruded black beans gained the same amount of weight as animals on a low-fat chow diet (based on AIN-93G). Total plasma cholesterol of the hamsters fed bean flour- based diets tended to be lower, ranging between 298 and 356 mg/dL, compared to 365 mg/dL for the control group and total and free liver cholesterol was about 50 and 33% lower, respectively, in the livers (freeze-dried) of hamsters fed the black turtle bean (BB) and pinto bean (PB) diets. The nitrogen content of the feces from hamsters fed the PB and white bean (WB) diets were 2.6x higher than the control and the excretion of deoxycholic acid (DCA) and lithocholic acid (LCA) was higher in all legume fed hamsters The results show that extrusion efficiently and economically reduces anti-nutritive factors that inhibit the digestion and absorption of proteins and carbohydrates. Brasenia schreberi ( chún cài) is an invasive aquatic weed found in the USA, but the plant has economic value in Asia where it is cultivated for food. The young leaves of B. schreberi are coated with gelatinous water-insoluble mucilage. This mucilage is a polysaccharide composed of galactose, mannose, fucose, and other monosaccharides. Because some carbohydrate gels are hypocholesterolemic, we evaluated their cholesterol-lowering properties in male hamsters fed hypercholesterolemic diets containing 2% gel coat from B. schreberi (GEL), or 1% cholestyramine (CA), or 5% hydroxypropyl methylcellulose (HPMC), and compared them to 5% microcrystalline cellulose (control) for 3 weeks. We found that very-low-density lipoprotein-, low-density lipoprotein-, and total-cholesterol concentrations in plasma were significantly lowered by GEL, CA, and HPMC compared to control. High-density lipoprotein-cholesterol concentration was lowered by CA and HPMC. Body weights and abdominal adipose tissue weight of GEL and control group animals were greater than those of the CA and HPMC groups. Fecal lipid excretion was greater in the CA and HPMC groups than in the control group. Expression of hepatic CYP51 and CYP7A1 mRNA was upregulated by CA, HPMC, and GEL, indicating increased hepatic cholesterol and bile acid synthesis. Expression of low-density lipoprotein receptor mRNA was upregulated by all treatments. These results suggest that modulation of hepatic expression of cholesterol and bile acid metabolism-regulated genes contributes to the cholesterol-lowering effects of GEL.

This paper examines the need for interventions to support students who are taking advanced placement courses in small rural districts and describes the Facilitator Preparation Program (FPP) as a strategy to address this need. Issues in the delivery of Online Distance Education (ODE) in small rural schools are summarized and the conceptual foundations and service delivery considerations of the FPP are outlined. Future research needs are also considered.

One of the major goals of the 2005 Antarctic Tropospheric Chemistry Investigation (ANTCI) was to bridge the information gap between current knowledge of South Pole (SP) chemistry and that of the plateau. The former has been extensively studied, but its geographical position on the edge of the plateau makes extrapolating these findings across the plateau problematic. The airborne observations reported here demonstrate that, as at SP, elevated levels of nitric oxide (NO) are a common summertime feature of the plateau. As in earlier studies, planetary boundary layer (PBL) variations were a contributing factor leading to NO fluctuations. Thus, extensive use was made of in situ measurements and models to characterize PBL depths along each flight path and over broader areas of the plateau. Consistent with earlier SP studies that revealed photolysis of nitrate in surface snow as the source of NO x, large vertical gradients in NO were observed over most plateau areas sampled. Similar gradients were also found for the nitrogen species HNO3 and HO2NO2 and for O3. Thus, a common meteorological-chemical feature found was shallow PBLs associated with nitrogen species concentrations that exceeded free tropospheric levels. Collectively, these new results greatly extend the geographical sampling footprint defined by earlier SP studies. In particular, they suggest that previous assessments of the plateau as simply a chemical depository need updating. Although the evidence supporting this position comes in many forms, the fact that net photochemical production of ozone occurs during summer months over extensive areas of the plateau is pivotal.

The concept of trust has been extensively studied within the field of medicine. Yet, a list of factors that clearly influence patients' trust is still under debate. Moreover, the methodological approaches found in literature have been reported to be lacking in their assessments and measurements of trust relationships in the medical field although trust between a patient and medical provider has been proven to increase adherence and improve health outcomes. Hence, adding data to this debate and exploring a reliable method to explore the construct of trust is relevant. This study collects new evidence of the most salient indicators of patient trust by using a narrative approach and highlighting the potential of this method in collecting indicators that could be used to build training that aims to increase patients' trust. We used the Linguistic Inquiry and Word Count software for text analysis to examine the spontaneous narrations of episodes of trust and distrust within the doctor-patient relationship with a sample of 82 adult patients. Results demonstrate the role of the emotional aspects of the doctor-patient relationship. Data highlights the importance of doctors' benevolence toward patients, and positive emotions seem to be deeply connected with any experience of trust, which leads patients to feel more secure. Methods are presented to use these insights to construct mechanisms that establish medical trust and allow providers to implement effective interventions. [ABSTRACT FROM AUTHOR]
