2. Meso-institutions shaping arenas for policymaking: an exploratory study on front-of-package food labelling in Brazil, Chile, and Mexico

Front-of-package food labelling (FOPL) is a mechanism to inform consumers on food nutrients content and risks for health. Each country, within its own institutional framework, defines methods and protocols to formulate rules capable of influencing organizations and the behavior of agents. The paper aims at evaluating the role of some meso-institutions in shaping arenas for policymaking on FOPL based on an exploratory study in Brazil, Chile, and Mexico. A documental analysis and literature review were employed, followed by in-depth interviews. The relevant aspects of FOPL assessed were thresholds for sugar, fats, and sodium; marketing restrictions, and timeframe given for compliance with the new rules. The contribution of this article is to illuminate the way in which meso-institutions operate in a specific context, namely the development of food labelling standards. The focus is to find the rules that allowed the participation of stakeholders in the process of defining normative acts intended to regulate food labelling. The discussion of mandatory FOPL can be interpreted as a struggle to define proper rights for the food industry and the consumer. Meso-institutions, as translators of general normative principles in specific contexts, can encourage or restrict stakeholder participation in policymaking. Besides political arena, the participation can be done in other arenas, such as legislature, regulatory agencies, scientific community, media and public opinion. Institutions that encourage stakeholder participation increase the probability of obtaining widely accepted specific rules.

The contemporary context in which the food industry is set up instigates a new product conception towards food ethics. However, how effectively does this perspective materialize on the gondolas of retail chains? In order to bring some elements to discussion, this article presents an exploratory study based on the decoding of information contained in food labels marketed in Brazil. In total, 287 labels regarding four categories (juices, snacks, chocolates, and yogurt) were analyzed using the Reverse Engineering methodology. The results indicate a movement of brand differentiation structured in actions conducted inside (a result of product and process engineering) and outside (regarding relationship engineering along the value chain). In other words, the internalization of innovations in products and processes (inside perspective) and; the development of vertical cooperation and coordination relations outside the company (outside perspective). In this sense, participation in globally connected markets is described as a driver of differentiation strategies regarding ethical aspects in the food processing industry and has direct effects on the vertical structures of firms, as suggested by the value chain literature.

No Brasil, as lesões por pressão representam um problema de saúde pública, em virtude do grande número de pessoas com a integridade da pele prejudicada. Essas lesões têm grande impacto na vida dos pacientes e de seus familiares, e sua prevenção em pacientes hospitalizados não é tão simples. É importante que todos os envolvidos no cuidado tenham conhecimento de como tratar de maneira adequada as lesões por pressão, a fim de evitá-las. Com este estudo pretende-se fazer um levantamento sobre os dados de incidência de úlcera por pressão no país. Trata-se de uma revisão de literatura do tipo integrativa. Foram acessados artigos publicados no período de 2009 a 2013, indexados na base de dados Biblioteca Virtual em Saúde. Após a seleção e análise, estes foram classificados e divididos em três categorias temáticas. Quando medidas preventivas de lesões por pressão são adotadas por todos pacientes em risco de desenvolvê-las, a taxa de incidência se torna baixa. Em contrapartida, quando essas medidas não são adotadas ou aplicadas à pequena parcela dos pacientes em risco, o valor da incidência é elevado. Fato que reforça a importância de ações preventivas, após avaliação do paciente, de acordo com as necessidades de cada um.

Com o aumento do número de acidentes por queda em idosos e a criação das Metas Internacionais de Segurança o objetivo do estudo foi em avaliar a aplicação do instrumento utilizado para identificar risco de queda em idosos de um Hospital público de referência. Foi um estudo exploratório, descritivo com abordagem quantitativa. A amostra foi composta por 59 idosos. A coleta dos dados foi realizada em outubro de 2015 e a análise estatística foi realizada através do programa SPSS 22.0 Na análise dos dados, as informações foram organizadas em tabelas e gráficos. A coleta foi iniciada após a emissão do parecer do Comitê de Ética da Universidade Estadual do Piauí (CAAE:47110315.0.0000.5209) e do parecer da instituição coparticipante (CAAE: 47110315.0.3001.5613). Dos 59 prontuários vistos, apenas 59,32% estavam legíveis. Dos 29 instrumentos classificados quanto ao grau de risco de queda, predominou 62,07% com alto risco. A partir deste estudo, conclui-se a falta de habilidade do profissional enfermeiro diante da aplicação do instrumento de avaliação do risco de queda.

In this study, the objective was to identify the satisfaction and preferences degree of Sao Paulo state consumers on the quality of ship meat (color, flavor, tenderness, juiciness and fat), nutritional value, food security, availability, place of purchase and satisfaction with the product customers (cuts, packaging, origin, price, availability). For this, we surveyed the application of 93 questionnaires with 33 questions to the consumers of lamb meat. The data were submitted to a Factor Analysis in Principal Components and Distribution of Frequencies. The main items of sampling were: satisfaction with the product; preferences; consumption of meat; available for purchase; standard of meat and profile of the consumer. Indirectly, consumers appeared as weaknesses in the supply chain: low availability of the product, high prices and high level of informal market. The results indicated the possibility of market segmentation in terms of schooling and income, where the meat characteristics as the amount of fat and flavor should be taken into consideration.Neste trabalho, o objetivo foi identificar conceitos ligados a preferências e satisfação de consumidores paulistas em relação à qualidade da carne ovina (cor, sabor, maciez, suculência e gordura), valor nutricional, segurança alimentar, disponibilidade, local de compra e satisfação com o produto adquirido (cortes, embalagens, origem, preço). Para isso, realizou-se levantamento com a aplicação de 93 questionários com 33 perguntas aos consumidores de carne ovina, e os dados obtidos foram submetidos à análise fatorial por componentes principais e distribuição de frequências. Os consumidores apontaram como pontos fracos da cadeia de comercialização: baixa disponibilidade do produto e preços elevados. Os resultados indicam a possibilidade de segmentação de mercado em função da escolaridade e renda, em que características como a quantidade de gordura e sabor devem ser consideradas.

This unique and timely text is designed to help food science students learn to perform critical analysis of food processing technology and consider the incorporation of elements that touch on contemporary technological developments in the food sector. As the food industry adjusts to new consumer demands for safe and low processed foods, the time has come to harmonize product and process engineering with ‘relationship engineering'from farm to fork. This increasingly allows the opportunity for food sector professionals to consider the existence of new drivers of food consumption. These newly discovered drivers are explored in great detail over the course of this book from industrial, economic and human resource viewpoints. Social Drivers In Food Technology presents a series of helpful case studies are presented covering six important food sectors: chocolate, coffee, yogurt, juice, baby food and snacks. These cases have been chosen in orderto illustrate dynamic and innovative advances in food processing technology. The information provided over the course of this book has been gained through the thorough study of both scientific literature and organizational reports from food processing companies. International audience; This empirical article deals with the location strategy and performance outcomes of franchised chains in Brazil. Brazilian franchising has experienced vertiginous process of expansion in recent years, being present in different regions of this country of continental size, including the most remote and less developed. Based on the background literature in economics and management regarding location choices and spatial competition in retailing, we use a new and unique dataset to distinguish several behavior categories in spatial strategies of franchising chains in Brazil, via a two-step cluster analysis. The performance outcomes are then studied with econometric estimations on panel data. Our results provide evidence that the choice for agglomeration, and the location in areas with a high population and a high human development index, lead to higher chain performances.

The research aimed to analyze the scientific production about the quality of nursing records and their consequences for care and service. This is an integrative review of the literature. The search took place at the base of the Virtual Health Library based on the following question: What is the scientific production about the quality of nursing records and what are the consequences for health care and service? Inclusion criteria were articles published from January 2008 to July 2018; in the Portuguese language, made available in full in (full text and free access) and providing information on the subject. Excluded articles that did not deal with the theme; unavailable in full; with incomplete texts; that did not provide enough information on the subject of the study and that were in chronological time outside the stipulated. The interpretations of the data were made through textual analysis, and the results presented in tables. The articles were grouped in three thematic categories: Audit in nursing; Nursing records and quality of care; Consequences of nursing records for the service. [ABSTRACT FROM AUTHOR]

The main goal of this paper was to conduct an exploratory study regarding consumer preference in the field of Food Science and Technology. Two questions guided this study: Is it possible to identify a trail of crumbs concerning consumer behavior in the Food Science and Technology field? And, if that trail exists, where is it leading academia in terms of research trends of interest? A bibliometric study was conducted using an analysis software called CiteSpace. The use of this methodology ensured the impartiality of the literature review of the topic of interest. A survey of all articles indexed in Web of Science between 1993 and 2013 regarding consumer behaviour was carried out. In total, 1,786 articles were analyzed. The recent increased concern regarding consumer behavior was evident. With the USA and Spain having a significant role in driving the trail. Eight other countries that exhibited similar influences are: Italy, England, Australia, Germany, Denmark, France, Netherlands and Brazil. The research trends observed were grouped into seven major hot topics: sensory, health, safety, willingness to pay, packaging, ethics, and lifestyle/convenience. However, the development of publishing trends depended on where the research was carried out. A final suggestive finding, demonstrated that scientific knowledge does not occur in a vacuum.
