Patients with Type 1 diabetes mellitus (DM-1) represent a heterogeneous group with different phenotypes, which might include some individuals with genetic predisposition towards insulin resistance (IR) and metabolic phenotype (MPH) development. At present, the IR effects on cardiovascular risk development in DM-1 patients remain an understudied area.Aim. To assess the prevalence of cardiometabolic risk factors (RF) and micro- and macrovascular complications by phenotype in patients with DM-1. Material and methods. The study included 3371 DM-1 patients from the Altay Region Diabetes Register. All participants were divided into two groups, by the waist circumference/hip circumference ratio: those with normal phenotype (NPH) and those with metabolic phenotype (MPH). Overall and separately in two age groups (under 50 and >50 years), the prevalence of the following characteristics was assessed: overweight, obesity, arterial hypertension, diabetic retinopathy, diabetic nephropathy, diabetic polyneuropathy, acute myocardial infarction, stroke (S), angina, and lipid metabolism disturbances.Results. MPH was registered in 46,5% of DM-1 patients. Overall, MPH patients were 7 years older than their NPH peers. The percentage of men was higher among MPH participants. Structural analysis of single-sided axial-flux permanent magnet (AFPM) machines for automotive cooling applications is presented in this article. First, the machine configuration and various magnetic materials for this machine, namely, electrical steel (ES) and soft magnetic composite (SMC), are introduced. Second, analytical modeling of the axial electromagnetic force is established to identify the components having a significant influence on the machine vibration and noise. Third, the electromagnetic forces for AFPM machines with different magnetic materials and machine eigenmodes are studied based on finite-element analysis. By using 2-D fast Fourier transform (2-D-FFT), the spatial and temporal orders of the electromagnetic force are obtained to verify the analytical modeling. Finally, by coupling the results from electromagnetic analysis and modal analysis, the vibration and noise for AFPM machines with different magnetic materials are investigated. The results show that the application of different magnetic materials greatly affects the vibration and noise characteristics of single-sided AFPM machines.

Аmong patients DM of type 2 (DM 2) Altay territories the stroke is at the bottom of death in 4,1 times more often, than among the edge population. A research objective: to estimate and compare a role of various risk factors (RF) in occurrence of a stroke at patients DM 2 sick of a diabetes according to register DM 2. Assumed RF in the basic group (patients prevalence was compared to a stroke) and in comparison group (patients without a stroke) with calculation of the odds ratio of development of a stroke. Were compared statistically significant RF developments of a stroke 2005 and 2008. Studying RF of a stroke at patients СД of type 2 and work carrying out on decrease in force of their influence, has allowed to level influence of one of the most significant risk factors of development of a stroke in 2005, late diagnostics blood pressure that has resulted in 2008 in decrease in death rate from a stroke among patients DM 2 on 24,9% more than among the population of Altay territory.

14. Glucose variability in subjects with type 1 diabetes: the relationships with non-enzymatic glycation, albuminuria and renal function

Background and aim: Recent studies recognized increased glucose variability as an important factor in pathogenesis of diabetic chronic kidney disease (CKD). We evaluated the relationships between serum concentrations of glycation products, glycemic variability parameters, albuminuria and kidney function in subjects with type 1 diabetes at early and advanced stages of CKD.Materials and Methods: One hundred and forty eight patients with type 1 diabetes were included in the study. Ninety five 95 individuals had CKD C1-C2 and 53 subjects had CKD C3-5. Time in range (TIR), time below range (TBR), time above range (TAR) and a panel of GV parameters were calculated from continuous glucose monitoring system (CGMS) data. Serum concentrations of 1,5-anhydroglucitol (1,5-AG), glycated albumin (GA), and advanced glycation end products (AGEs) were determined by ELISA. Twenty subjects without disturbance of carbohydrate metabolism were acted as control.Results: In subjects with CKD stage 1-2, HbA1c was positively associated with average value of glucose obtained by CGMS, as well as with TAR, MAGE, LI, HBGI, CONGA, MAG and M-value. In patients with more advanced CKD stages these relationships were lost. Concentrations of GA and AGEs were elevated significantly in subjects with diabetes as compared to control (both P < 0.001). The concentrations in serum of 1,5-AG were reduced (P < 0.0001), reflecting increase in glucose variability. The levels of GA, but not AGEs, were associated negatively with 1,5-AG concentration. In patients with CKD C1-C2 stages, the estimated glomerular filtration rate (eGFR) showed inverse relationships with TBR and LBGI. Oppositely, in patients with CKD C3-C5 eGFR correlated negatively with mean glucose, TAR, MAGE, CONGA, HBGI and M-value and some GV parameters. In both groups albuminuria was associated positively with AGEs, GA, HbA1c, mean glucose, TAR, and glucose variability indices.Conclusions: We detected different patterns of relationships between eGFR and glucose variability parameters in subjects with T1DM at early and advanced CKD stages. In these patients, enhanced GV may contribute to albuminuria through acceleration of non-enzymatic glycation processes.

16. The atmospheric signature of Io's Prometheus plume and anti-jovian hemisphere: evidence for a sublimation atmosphere

Using the Hubble Space Telescope's Space Telescope Imaging Spectrograph we have obtained for the first time spatially resolved 2000-3000 [Angstrom] spectra of Io's Prometheus plume and adjoining regions on Io's anti-jovian hemisphere in the latitude range 60[degrees] N-60[degrees] S, using a 0.1' slit centered on Prometheus and tilted roughly 45[degrees] to the spin axis. The S[O.sub.2] column density peaked at 1.25 x [10.sup.17] [cm.sup.-2] near the equator, with an additional 5 x [10.sup.16] [cm.sup.-2] enhancement over Prometheus corresponding to a model volcanic S[O.sub.2] output of [10.sup.5] kg [s.sup.-1]. Apart from the Prometheus peak, the S[O.sub.2] column density dropped fairly smoothly away from the subsolar point, even over regions that included potential volcanic sources. At latitudes less than [+ or -] 30[degrees], the dropoff rate was consistent with control by vapor pressure equilibrium with surface frost with subsolar temperature 117.3 [+ or -] 0.6 K, though S[O.sub.2] abundance was higher than predicted by vapor pressure control at mid-latitudes, especially in the northern hemisphere. We conclude that, at least at low latitudes on the anti-jovian hemisphere where there are extensive deposits of optically-thick S[O.sub.2] frost, the atmosphere is probably primarily supported by sublimation of surface frost. Although the 45[degrees] tilt of our slit prevents us from separating the dependence of atmospheric density on solar zenith angle from its dependence on latitude, the pattern is consistent with a sublimation atmosphere regardless of which parameter is the dominant control. The observed drop in gas abundance towards higher latitudes is consistent with the interpretation of previous Lyman alpha images of Io as indicating an atmosphere concentrated at low latitudes. Comparison with previous disk-resolved UV spectroscopy, Lyman-alpha images, and mid-infrared spectroscopy suggests that Io's atmosphere is denser and more widespread on the anti-jovian hemisphere than at other longitudes. S[O.sub.2] gas temperatures were in the range of 150-250 K over the majority of the anti-jovian hemisphere, consistent with previous observations. SO was not definitively detected in our spectra, with upper limits to the SO/S[O.sub.2] ratio in the range 1-10%, roughly consistent with previous observations. [S.sub.2] gas was not seen anywhere, with an upper limit of 7.5 x [10.sup.14] [cm.sup.-2] for the Prometheus plume, confirming that this plume is significantly poorer in [S.sub.2] than the Pele plume ([S.sub.2]/S[O.sub.2] < 0.005, compared to 0.08-0.3 at Pele). In addition to the gas absorption signatures, we have observed continuum emission in the near ultraviolet (near 2800 [Angstrom]) for the first time. The brightness of the observed emission was directly correlated with the S[O.sub.2] abundance, strongly peaking in the equatorial region over Prometheus. Emission brightness was modestly anti-correlated with the jovian magnetic latitude, decreasing when Io intersected the toms centrifugal equator. Keywords: Io; Satellites; Atmospheres; Spectroscopy

The author analyzes the processes of culture globalization, in which standardization and unification con- trary to the traditional identity. The standardization of culture is prevailing; it is the influence of the media and diffusion of new consumption ways. Mass cultures wider introduce a new form of high cultures, that is, technological or scientific ones, which promote harmonization and standardization. The content of the mate- rial culture is more uniform than in the past, many newest practices are in widespread use on large areas. As a result of the globalization the high cultural concentration and mobility increasingly provoke cross-cultural encounters. In the field of intangible components in the current cultural situation, there is cultural clash of traditionalism and globalization, while in the sphere of material components of the culture the contemporary person is becoming more and more follower of the products of globalization. Food culture as a method of studying social and cultural transformations indicates that nowadays there is cultural diffusion and the Islamization of a global culture. Studies of food consumption show that there is a strong link between religion and consumer choice of food. The motivation and behaviour of each person is different because they are based on cultural characteristics, which is most evident in consumer shopping behavior. In modern consumer culture the symbols often appear in the form of logos and trademarks. Often, they choose for logos the modification of the widely known traditional cultural symbols which are based on recognizable cultural meanings and which, at the same time, design modern world-view, creating modern myths based on traditional. The most popular trademark of modernity is the Apple logo or “Bitten apple.” A modern interpretation of this symbol is based on the fact that traditionalism is strong, but the active person is always out of the local area. As a result the person feels lonely due to the weakening of traditional ties and looks for replace lost forms of identity.

Background: Individuals with type 2 diabetes mellitus are at increased risk for heart failure (HF), particularly those with coexisting atherosclerotic cardiovascular disease and/or kidney disease. Some but not all dipeptidyl peptidase-4 inhibitors have been associated with increased HF risk. We performed secondary analyses of HF and related outcomes with the dipeptidyl peptidase-4 inhibitor linagliptin versus placebo in CARMELINA (The Cardiovascular and Renal Microvascular Outcome Study With Linagliptin), a cardiovascular outcomes trial that enrolled participants with type 2 diabetes mellitus and atherosclerotic cardiovascular disease and/or kidney disease. Methods: Participants in 27 countries with type 2 diabetes mellitus and concomitant atherosclerotic cardiovascular disease and/or kidney disease were randomized 1:1 to receive once daily oral linagliptin 5 mg or placebo, on top of standard of care. All hospitalization for HF (hHF), cardiovascular outcomes, and deaths were prospectively captured and centrally adjudicated. In prespecified and post hoc analyses of HF and related events, Cox proportional hazards models adjusting for region and baseline history of HF were used. Recurrent hHF events were analyzed using a negative binomial model. In a subset of participants with left ventricular ejection fraction captured within the year before randomization, HF-related outcomes were assessed in subgroups stratified by left ventricular ejection fraction > or 50%. Results: CARMELINA enrolled 6979 participants (mean age, 65.9 years; estimated glomerular filtration rate, mL/min per 1.73m(2); hemoglobin A1c, 8.0%; 62.9% men; diabetes mellitus duration, 14.8 years), including 1873 (26.8%) with a history of HF at baseline. Median follow-up was 2.2 years. Linagliptin versus placebo did not affect the incidence of hHF (209/3494 [6.0%] versus 226/3485 [6.5%], respectively; hazard ratio [HR], 0.90; 95% CI, 0.74-1.08), the composite of cardiovascular death/hHF (HR, 0.94; 95% CI, 0.82-1.08), or risk for recurrent hHF events (326 versus 359 events, respectively; rate ratio, 0.94; 95% CI, 0.75-1.20). There was no heterogeneity of linagliptin effects on hHF by history of HF at baseline, baseline estimated glomerular filtration rate or urine albumin-creatinine ratio, or prerandomization left ventricular ejection fraction. Conclusions: In a large, international cardiovascular outcome trial in participants with type 2 diabetes mellitus and concomitant atherosclerotic cardiovascular disease and/or kidney disease, linagliptin did not affect the risk of hHF or other selected HF-related outcomes, including among participants with and without a history of HF, across the spectrum of kidney disease, and independent of previous left ventricular ejection fraction. - Abstract
IMPORTANCE Type 2 diabetes is associated with increased cardiovascular (CV) risk. Prior trials have demonstrated CV safety of 3 dipeptidyl peptidase 4 (DPP-4) inhibitors but have included limited numbers of patients with high CV risk and chronic kidney disease. OBJECTIVE To evaluate the effect of linagliptin, a selective DPP-4 inhibitor, on CV outcomes and kidney outcomes in patients with type 2 diabetes at high risk of CV and kidney events. DESIGN, SETTING, AND PARTICIPANTS Randomized, placebo-controlled, multicenter noninferiority trial conducted from August 2013 to August 2016 at 605 clinic sites in 27 countries among adults with type 2 diabetes, hemoglobin A(1c) of 6.5% to 10.0%, high CV risk (history of vascular disease and urine-albumin creatinine ratio [UACR] > 200mg/g), and high renal risk (reduced eGFR and micro-or macroalbuminuria). Participants with end-stage renal disease (ESRD) were excluded. Final follow-up occurred on January 18, 2018. INTERVENTIONS Patients were randomized to receive linagliptin, 5 mg once daily (n = 3494), or placebo once daily (n = 3485) added to usual care. Other glucose-lowering medications or insulin could be added based on clinical need and local clinical guidelines. MAIN OUTCOMES AND MEASURES Primary outcomewas time to first occurrence of the composite of CV death, nonfatalmyocardial infarction, or nonfatal stroke. Criteria for noninferiority of linagliptin vs placebo was defined by the upper limit of the 2-sided 95% CI for the hazard ratio (HR) of linagliptin relative to placebo being less than 1.3. Secondary outcome was time to first occurrence of adjudicated death due to renal failure, ESRD, or sustained 40% or higher decrease in eGFR from baseline. RESULTS Of 6991 enrollees, 6979 (mean age, 65.9 years; eGFR, 54.6 mL/min/1.73m2; 80.1% with UACR > 30mg/g) received at least 1 dose of study medication and 98.7% completed the study. The article is devoted to research and analysis of modernity using food culture as a method of studying social and cultural transformations, which implies the culture of cooking, consumption, and food production and which is the most bright and sensitive represent of social and cultural transformations taking place in society. In the study there are three main components of food culture: traditional food culture, which is the most conservative and conveys a special “spirit” of the ethnic group or nation; food with the elements of mix, innovation, improvisation, imitation; and finally, a network of high-tech types of food of a global culture and fast-food outlets (McDonald’s, KFC, etc.). The author discusses the change in culture from tradition, where food is a symbol of the ethnic group, people or nation to innovations up to a global monoculture of the universal and unified fast-food. The consumption of alternative food sold in hypermarkets and supermarkets, the use of achievements of scientific-technical progress, love of comfort brought elements of «being like at home»; it erases the distinction not only between urban and rural culture or between states, but the whole world becomes a single space of global social cultural environment, where modern life style dictates and requires to eat fast food.

The aim: to assess the relationships between glucose variability (GV) parameters and renal function in patients with type 1 diabetes (T1D) at different stages of chronic kidney disease (CKD). Materials and Methods: We observed 127 patients with T1D, 48 M/79 F, from 18 to 72 years of age. Patients were divided into 5 groups: 1) no signs of CKD (CKD0), n=27; 2) CKD С1-C2, n=67; 3) CKD С3-C4, n=26; 5) CKD С5 (hemodialysis, n=7). Time in ranges and GV parameters: Mean Amplitude of Glucose Excursions (MAGE), Lability Index (LI), Low Blood Glucose Index (LBGI), High Blood Glucose Index (HBGI), 2-hour Continuous Overlapping Net Glycemic Action (CONGA), and Mean Absolute Glucose (MAG) were derived from 72-hour continuous glucose monitoring. Results: As compared to patients without CKD, the values of MAGE, LI, HBGI were increased significantly in patients with CKD C1-C2 (all p 60 ml/min/1.73m2 HbA1c levels correlated positively with mean monitored glucose, time in hyperglycemic range, HBGI, CONGA, MAGE, LI, and MAG. On the contrary, in patients with lower eGFR none of GV parameters correlated with HbA1c. Conclusions: The results demonstrate non-linear relationships between eGFR and GV parameters in patients with T1D.

Katsesse valiti holsteini tõugu lehmad kinnijätmisel toitumushinde alusel: rühm 1, alamäärases toitumuses lehmad (BCS ≤ 3,0); rühm 2, optimaalses toitumuses lehmad (BCS 3,25-3,5) ning rühm 3, ülemäärases toitumuses lehmad (BCS ≥ 3,75). Töös uuriti poegimiseelse toitumushinde seost poegimisjärgse toitumushinde muutusega ning töö eesmärgiks oli selgitada, kas poegimiseelne toitumushinne mõjutab poegimisjärgset energiabilanssi. Käesoleva katse raames kasutati Eesti Maaülikooli veterinaarmeditsiini- ja loomkasvatuse instituudi söötmisosakonna sööda ja ainevahetuse uurimise laboris tehtud söötade keemiliste analüüside tulemusi; Jõudluskontrolli Keskuse piimaanalüüside laboris saadud piima rasva, valgu ja laktoosi sisaldusi; toitumushindeid, mis saadi J. D. Fergusoni meetodit kasutades ja autori poolt arvutatud energiabilansi andmeid. Alamäärases ja optimaalses toitumuses lehmade toitumushinne suurenes kuni poegimiseni, seejärel langes kuni seemenduseni ning 150ndaks lüpsipäevaks oli lehmade toitumus jälle tõusnud. Ülemäärases toitumuses loomade toitumushinne hakkas langema pärast kinnijätmist ning langes vaatlusperioodi lõpuni. Katserühmade kõige suurem toitumushinde langus leidis aset poegimisest seemenduseni. Ülemäärases toitumuses olevate loomade NEB nadiir oli kõige sügavam ja nende NEB periood kestis kõige kauem. Alamäärases toitumuses loomade NEB poegimispäeval oli kõige väiksem ja negatiivne energiabilansi periood kestis kõige vähem. Nadiir oli väikseim optimaalses toitumuses olevatel lehmadel. Katserühmade energiabilansi näitajad on välja toodud tabelis 4. Töö tulemusena selgus, et poegimieelne toitumus avaldab mõju poegimisjärgsele energiabilansile. Kinnijätmisel ülemäärases toitumuses olevate lehmade toitumushinde ja energiabilansi langus oli kõige suurem ning taastumine kõige aeglasem. Töö tausta kirjeldus: tiinuse lõpus ja laktatsiooni alguses on piimalehmade energiatarve väga suur ning loomad ei suuda seda katta söömusega. Seetõttu tekib negatiivse energiabilansi (NEB) periood, lehmad võtavad puuduva energia oma kehavarude arvelt ja selle tulemusel nende kehamass väheneb. Ühtlasi sõltub poegimisjärgsest söömusest NEB sügavus ja kestvus. Liiga sügav ja liiga pikk negatiivse energiabilansi periood tekitab ainevahetushaigusi ja probleeme tiinestumisega. Töö eesmärk: uurida poegimiseelse toitumuse seost poegimisjärgse toitumushinde muutusega ja uurida poegimiseelse toitumuse seost poegimisjärgse negatiivse energiabilansi nadiiri ja kestvusega. Töös kasutatud andmete ja metoodika kirjeldus. Katse viidi läbi Eesti Maaülikooli Märja katsefarmis (Eerika Farm OÜ). Katses osales 20 multipaarset eesti holsteini tõugu lüpsilehma. Katserühmade moodustamine toimus kinnijätmisel toitumuse alusel: alamäärases toitumuses lehmad (toitumushinne ≤ 3,0), optimaalses toitumuses lehmad (toitumushinne 3,25-3,5); ülemäärases toitumuses lehmad (toitumushinne ≥ 3,75). BCS langus oli kõige suurem ja kestis kõige kauem ülemäärases toitumuses loomadel. Optimaalses ja ülemäärases toitumuses lehmadel langes toitumushinne poegimisest seemenduseni. Optimaalses toitumuses olevate lehmade negatiivse energiabilansi nadiir oli väiksem kui alamäärases või ülemäärases toitumuses loomadel. Negatiivse energiabilansi periood oli kõige lühem alamäärases toitumuses lehmadel ning kõige pikem ja sügavam loomadel, kes kinnijätmisel olid ülemäärases toitumuses. Diskussioon: käesolev magistritöö põhineb Märja katselaudas suuremahulise institutsionaalse uurimisteema ,,Piimalehmade sigimine ja tervis“ (juht Andres Valdmann) raames kogutud andmetel. Katse ise jätkub kuni 2018 aastani ning alles siis kui katseloomadelt saadud andmete hulk on suurem saab teha üldisemaid järeldusi. This Master’s thesis is based on the large-scale institutional research project ,, Fertility and health in dairy cattle“ carried out on Märja Experimental Farm. The aim of the thesis was to analyse the relationship of body condition score (BCS) before calving with post partum body condition score dynamics and to assertain whether BCS before calving influences post partum energy balance. Twenty Holstein cows were divided into three groups according to their body condition score at drying off: group 1, under-conditioned cows (BCS ≤ 3,0); group 2, optimally conditioned cows (BCS 3,25-3,5); and group 3, over-conditioned cows (BCS ≥ 3,75). Results of the chemical analyses of the feeds from the feed analyses laboratory of the department of animal nutrition (Institute of Veterinary Medicine and Animal Sciences of the Estonian University of Life Sciences), milk fat, protein and lactose content data from the laboratory of Esronian Animal Recording Centre, BC scores obtained using the method by J. D. Ferguson and EB data calculated by the author have been used in the thesis. BCS of under-conditioned cows and cows with optimal BCS increased until parturition, decreased from parturition until insemination and by 150 DIM increased again. BCS of over-conditioned cows began to decrease before calving and decreased until 150 DIM. The most substantial BCS decline occurred from calving to insemination in all the groups. Negative energy balance nadir of the over-conditioned animals were the deepest and their negative energy balance period lasted longer than in other groups. Energy balance of the under-conditioned cows on the calving day was less negative and the NEB period lasted less than in other groups. NEB nadir of the cows with optimal BCS was the smallest. The results confirmed that the dry period body condition score has influence on post partum energy balance. The cows over-conditioned at dry off had the most substantial BCS and EB decline and their recovery was the slowest.

Summary Spoilage and safety of cooked, brined and modified atmosphere packed shrimps were studied at 0, 5, 8, 15 and 25 °C. Shrimps from two sources, cold and warm waters, were brined in a sodium–chloride brine containing benzoic, citric and sorbic acids. Shelf-life was above 7 months at 0 °C but only 4–6 days at 25 °C. Apparent activation energy for the effect of temperature on shelf-life was > 100 kJ mol-1. This pronounced effect of temperature was explained by changes in spoilage microflora at different storage temperatures. Simple and empirical mathematical models for rates of spoilage were developed for the prediction of shelf-life at different temperatures. To evaluate safety, products were challenged with Listeria monocytogenes and spores of Clostridium botulinum. Above 5 °C growth responses of L. monocytogenes followed the square root model with a Tmin-value of +0.2 °C. Cl. botulinum produced toxin at the time of spoilage at 25 °C but only in shrimps with < 3% water-phase salt.

31. Prevalence and growth of Listeria monocytogenes in naturally contaminated seafood

Listeria monocytogenes contamination of seafood varies with product category. The highest prevalence was found in cold-smoked fish (34-60%), while the lowest was found in heat-treated and cured seafood (4-12%). The prevalence of L. monocytogenes differed greatly in cold-smoked salmon between production sites, ranging from < 1.4% (nil out of 70 samples) to 100%. The prevalence at the individual production sites was reproducible at repeated sampling. The results indicate that it is possible to produce cold-smoked salmon with a low prevalence of L. monocytogenes. The organism showed moderate growth in naturally contaminated cold-smoked, and 'gravad', fish while the growth appeared faster in hot smoked fish. Thus L. monocytogenes is not under control in these products. Finally, the prevalence and growth of L. monocytogenes in naturally contaminated cold-smoked salmon are discussed in relation to controlling this risk.

33. Significance of volatile compounds produced by spoilage bacteria in vacuum-packed cold-smoked salmon (Salmo salar) analyzed by GC-MS and multivariate regression

Changes were studied in the concentration of 38 volatile compounds during chilled storage at 5 degrees C of six lots of commercially produced vacuum-packed cold-smoked salmon and sterile cold-smoked salmon. The majority of volatile compounds produced during spoilage of cold-smoked salmon were alcohols, which were produced by microbial activity. Partial least-squares regression of volatile compounds and sensory results allowed for a multiple compound quality index to be developed. This index was based on volatile bacterial metabolites, 1-propanol and 2-butanone, and 2-furancarboxaldehyde produced by autolytic activity. Only a few of the volatile compounds produced during spoilage of cold-smoked salmon had an aroma value high enough to indicate contribution to the spoilage off-flavor of cold-smoked salmon. These were trimethylamine, 3-methylbutanal, 2-methyl-1-butanol, 3-methyl-1-butanol, 1-penten-3-ol, and 1-propanol. The potency and importance of these compounds was confirmed by gas chromatography-olfactometry. The present study provides valuable information on the bacterial reactions responsible for spoilage off-flavors of cold-smoked salmon, which can be used to develop biosensors for on-pack shelf-life determinations.

One hundred and forty-eight Listeria monocytogenes isolates originating from vacuum packed cold-smoked salmon produced in 10 different Danish smokehouses were compared by Random Amplified Polymorphic DNA (RAPD) profiling. A total of 16 different reproducible RAPD profiles were obtained using a standardised RAPD analysis by four primers separately. The grouping of the 148 strains was exactly the same for the four primers used. For a sub-set of 20 strains typed by Pulsed Field Gel Electrophoresis (PFGE), only one strain was allocated into a different group as compared to the grouping by RAPD typing. Different RAPD types dominated in products from different smokehouses. Some identical RAPD types were isolated in several smokehouses. In each of four smokehouses, one particular RAPD type could be repeatedly isolated from products. Each smokehouse/product carried its own specific RAPD type and this may indicate a possible persistence of closely related strains of L. monocytogenes in smokehouses.

At least three outbreaks of listeriosis associated with seafood have been reported. Listeria monocytogenes is widely distributed in the general environment including fresh water, coastal water and live fish from these areas. Contamination or recontamination of seafood may also take place during processing and low levels (< 100 cfu/g) of L. monocytogenes are frequently found on seafood including ready-to-eat (RTE) products. Apart from heat treatment, which is very effective, there are few options for eliminating L. monocytogenes from foods and equipment. It is essential therefore, that growth of L. monocytogenes in the final product be inhibited. The preventive measures include the formulation of a cleaning and sanitising program specifically designed at reducing the presence of L. monocytogenes in the factory environment, the safe elimination of L. monocytogenes from heat treated products and prevention of growth in RTE products within the normal shelf life and conditions stated on the label. If any sampling is required, the sampling plans suggested by the International Commission on Microbiological Specifications for Foods [Int. J. Food Microbiol., 22 (1994) 89-96] are useful.

Production of biogenic amines during chill storage of 12 lots of cold-smoked salmon was studied. These data allowed for a multiple compound quality index to be developed by multivariate regression (partial least square regression). The quality index was based on concentrations of cadaverine, histamine, putrescine, and tyramine and pH and showed good correlation with sensory assessments. Biogenic amines were indicators of spoilage rather than casual agents of spoilage off-flavors. Four different biogenic amine profiles were found at the time of spoilage in cold-smoked salmon. These were the results of differences in the spoilage microflora. Histamine was detected above regulatory limits but below toxic levels. Measurements of salt and dry matter for calculation of water phase salt could be substituted by rapid water activity measurements.

38. Predicted and observed growth of Listeria monocytogenes in seafood challenge tests and in naturally contaminated cold-smoked salmon

The performance of the Pathogen Modelling Program, the Food MicroModel, the Murphy-model and the Ross-model for growth of L. monocytogenes was evaluated by comparison with data from 100 seafood challenge tests and data from 13 storage trials with naturally contaminated sliced vacuum-packed cold-smoked salmon. Challenge tests with both cured and noncured products were studied, and graphs as well as the bias- and the accuracy factors were used for comparison of the observed and predicted growth. The Pathogen Modelling Program could not be successfully validated in seafood challenge tests. Growth rates were markedly overestimated and the mu(max)-bias factor was as high as 3.9 in challenge tests with cured products. On the basis of the effect of temperature, NaCl/a(w) and pH, the mu(max)-bias factor of the other three models studied, varied between 1.0 and 2.3 in the challenge tests with cured and noncured seafoods. None of the models accurately predicted the growth in both cured and noncured seafoods. However, the results indicated that a new expanded model, including the additional effect of lactate and phenol, may provide accurate predictions of the growth of L. monocytogenes in challenge tests with various types of seafoods. Storage trials clearly showed the growth of L. monocytogenes in naturally contaminated cold-smoked salmon to be markedly slower than growth in inoculated challenge tests. Consequently, all four models substantially overestimated growth in the naturally contaminated products. Temperature, pH, NaCl/a(w) and lactate were measured in the storage trials and on the basis of these parameters, the Food MicroModel mu(max)-bias factor was 5.2. Clearly, the model could not be successfully validated with naturally contaminated cold-smoked salmon. To improve the applicability of predictive models to fish products, it is suggested to include studies with naturally contaminated products in the development and validation of models with seafood pathogens.

The article discusses historical study of the environmental justice movement in the U.S. It traces the movement to the social benefits from the environmental regulations in the 1970s and 1980s. The article discusses a perceived ethical lag among environmental planners in Pennsylvania in the late 20th century and the early 21st century and cites a report written by the Environmental Justice Work Group (EJWG) in the Pennsylvania state Department of Environmental Protection (DEP). According to the article, the study of the environmental justice movement was established by the scholarship of the late sociologist Robert D. Bullard and his book "Dumping in Dixie," published in 1990.
