Introduction. Maltodextrins are a common dietary supplement with a number of positive properties. They consist of D-glucose units connected by a (1–4) glucoside bond. The research objective was to improve the existing technology of maltodextrin production based on potato and corn starch. Study objects and methods. Maltodextrins were obtained by enzymatic and acidic incomplete hydrolysis of potato and corn starch. Amilolux ATS and Glucolux A were used for enzyme hydrolysis, and sulfuric acid was used for acid hydrolysis. The finished product was obtained by spray drying. The sensory properties of the finished product were determined by standard methods. The method of high-performance liquid chromatography defined the hydrocarbon composition, while the method of dextrose equivalent helped to determine the reducing capacity of sugars. Results and discussions. The study improved the technique of the enzymatic breakdown of starch. Amylolysis ATS proved to be the optimal enzyme preparation in concentration of 0.5 mL/50 cm3). Other optimal parameters included the starch-splitting activity of 2,330.50 u/mL, temperature of hydrolysis of 65 ± 2°C, and pH reactions of pH 6.5. The method of spray drying proved most efficient for drying starch hydrolysates: the drying temperature and air flow was 100°C, while the flow rate of the solution was 12 mL/min). The experiment also established the dextrose equivalent of the finished product (12–13%) and the quantitative content of sugars in the obtained samples. For maltodextrins obtained from potato starch, the content of maltose and glucose was 16.73 ± 0.25% and 12.48 ± 0.050%, respectively; for corn maltodextrins – 40.22 ± 0.30% and 52.93 ± 0.040%. Conclusion. The market for food additives is developing rapidly. Maltodextrin is a natural food additive that can be used in various branches of food industry. The research made it possible to improve the technology of maltodextrin production in t dairy industry.

Introduction. Today, there is a wide range of microorganisms that are resistant to existing traditional antibiotics. Therefore, the development of new drugs with antimicrobial activity is an urgent direction. In this paper, a study was conducted to study the antimicrobial, antibiotic, and biocompatible properties of antibiotics produced by antagonistic microorganisms. Materials and methods: In this article, antagonist bacteria isolated from natural sources of the Kemerovo region-Kuzbass are studied. Antimicrobial properties, antibiotic resistance, and biocompatibility of bacterial strains cultured on dense and liquid nutrient media were studied for these microorganisms. For each selected strain of microorganisms-antagonists, antibiotic resistance to the action of one or more antibacterial drugs was established, which reduce the sensitivity of the culture of microorganisms to the action of an antibacterial substance. Results of the study: when determining antimicrobial activity, it was found that out of 19 tested microorganisms, only 11 (rod-shaped bacteria Geobacillus stearothermophilus, genus Bacillus, namely B. subtilis and B. caldotena, genus Lactobacillus, namely L. plantarum, L. casei, and L. fermentum, spherical bacteria of the genus Leuconostoc, namely L. lactis and L. mesenteroides, genus Pediococcus, and P. acidilactici, P. pentosaceus, and P. damnosus that exhibit high antimicrobial activity against all test strains of pathogenic and potentially pathogenic microorganisms. Discussion and conclusions: The creation of complex antibacterial drugs that will consist of several different types of microbial strains is a popular direction due to the development of new technologies. That is why the biocompatibility of strains was evaluated to create combined drugs that are based on research results. Positive biocompatibility was shown by strains of microorganisms of the genus Bacillus (B. subtilis and B. caldotenax) and Leuconostoc lactis, and strains of the genus Lactobacillus (L. plantarum, L. fermentum and L. casei), Leuconostoc mesenteroides, of the genus Pediococcus (P. acidilactici, P. pentosaceus, and P. damnosus). Increasing healthy lifespan is an urgent area of study in the modern world. But lifespan is negatively affected by age-related pathologies, which are expressed in the violation of various functions of the body, in the development of degenerative diseases (cancer, type 2 diabetes, obesity, cardiovascular diseases, etc.). a Balanced diet can support and improve the functioning of the body, that is, contribute to "healthy aging". In this work, an analysis was conducted of the literature in gerontology and nutr ition by researching both domestic and foreign databases. As a result of the analysis, we studied diseases that contribute to aging, the concept of "healthy aging" and its components, and considered oxidative stress as an important factor in the occurrence of degenerative diseases. The priority role of nutrition in maintaining health and increasing life expectancy is highlighted. Among all the nutrients, the authors identified biologically active substances of plant origin, which were geroprotectors, that i s, substances that protect the body from premature aging. These substances include (flavonoids, vitamins, carbohydrates, carbohydrates), the sources of which are plants: common yarrow (Achillea millefolium L.), common thyme (Thymus Vulgaris), Elmwood (Filipendula ulmaria), rose Rhodiola (Rhodiola rosea L.), Ginkgo biloba (Ginkgo biloba), garlic (Allium sativum L.), Siberian fir (Abies sibirica l). Biologically active substances extracted from plants can be systematically consumed in the form of dietary supplements or functional foods. Thus, the use of functional products enriched with geroprotectors is the best preventive tool for various degenerative diseases that negatively affect life expectancy. [ABSTRACT FROM AUTHOR]
