The main activity was related to the description of qualitative data on commonly consumed fruit (strawberry, plum, apple) and vegetables (tomato and sweet bell pepper) along some processing chains (jam, juices and dried products), pointing out the role of different sources of variability, such as the type of cultivation (Conventional, CONV or Organic, ORG), the different cultivars, the sampling year, and the type of processing. A particular attention has been paid on the type of processing, where the use of innovative plant was performed, in comparison with traditional or home-made processing typologies. This for the need, especially for local and small farmers, of small and simple plants to process agricultural products, in order to add value for their productions, for achieving high quality and safe products. For this scope three types of approaches for processing were used: - a miniaturized multifunctional processing line (MT), already validated in previous Projects, in comparison with home-made technique (HM) for jam strawberry production; - a pneumatic press, a rack-press and a belt-press compared for the production of apple juices; - an innovative drier, completely supplied by solar energy (SUN) compared with a traditional forced air oven-drier (OVEN) was used for the production of prunes, dried tomatoes and sweet bell peppers. The list of analyzed samples is shown on the Final Report Document: SCHEME OF ANALYZED SAMPLES (ORG is Organic, CONV is Conventional) The processed samples were produced in open field on two consecutive sampling years (2015 and 2016), on experimental fields. A third year of sampling was added, considering the evaluation made on raw products. Moreover, for tomato and sweet bell pepper, the production made from open fields of private organic growers, was considered, so obtaining samples in two consecutive years (2016 and 2017). Hence, a further comparison of the quality indexes was made on raw products in three consecutive years (2015, 2016 and 2017). The control samples were represented by the lyophilized material, generally referred as “raw” or “not treated” sample. The considered qualitative data regarded "Desired" and "Non Desired" compounds, being the desired ones those potentially healthy and tasty for humans, such as phytochemicals, antioxidants and volatiles, and the non desired some anti-nutritional traits, such as the mycotoxin patulin and the presence of allergens. The samples were also evaluated by their sensory properties, by using a trained panel. As for the allergen analysis, they were analyzed by indirect competitive ELISA for determination of Bet v 1-related protein, or pathogenesis-related proteins (PR-10), causing birch pollen related fruit allergies. A big amount of data was collected, with a consequent variability among them. The general consideration about desired compounds that can be made is that, if a well detectable difference in composition has been found in raw product, this difference was also retained in the processed one, with the processing technique strongly influencing the qualitative parameters of the final products. In this context, better results in terms of antioxidant presence were found for: - apple juices obtained from belt-press; - strawberry jams obtained with miniaturized small-scale plant; - prunes, tomatoes and sweet bell pepper obtained with oven drying. On the other hand, it has to be pointed out that processing methods causing a lower retention on the phytochemical contents often show a better response in term of sensory properties, as found in apple juices and in solar-dried samples of strawberries, plums and tomatoes. Some differences were found among the assayed cultivars, and, finally, among the comparison of the system of cultivation (ORG vs CONV). Specifically, the system of cultivation mainly influenced the antioxidant content in apples of traditional cultivars of Estonia obtained from aged plants; as for strawberry, it was found an higher amount of antioxidants in organic samples in one year of three, and a significant increase in ascorbic acid was found in the assayed local variety of organic bell pepper, in all three years, but not in the corresponding commercial hybrid. On the other hand, the plum cultivar Jubileum, assayed from Denmark and Norway in two years, resulted not adapted for organic cultivation for the content in ascorbic acid, constantly giving lower indexes in all samples in comparison with fruits from conventional cultivation. As regards the influence of the sampling years, in samples of apples, plums, tomatoes and sweet bell pepper, a tendency to an increase in phytochemicals and antioxidant indexes was detected in 2016 with respect to 2015 samples, due to the very different climate conditions of these two years. Interestingly, for the non desired traits, no clear relationship was found between the presence of patulin and allergens for the systems of cultivations, but significant variations were found with the difference in processing technique, with the sampling years and with the assayed cultivars. Interestingly, for some apple cultivars from Estonia low levels of the allergen Mald1 were detected. Concluding, the sources of variability among the analyzed samples gave, in order of influence, the following ranking: - 1. Processing techniques; - 2. Years of sampling; - 3. Cultivars; - 4. Growing methods.

I Norge er det et mål å øke forbruket av frukt, bær og grønnsaker. Ved økt produksjon av disse, vil man i høysesongen kunne få en høyere produksjon enn det som blir solgt for fersk konsum. Høytrykksprosessering (HP) kan benyttes til å lage høykvalitetsprodukter av disse overskuddsråvarene. Denne typen høykvalitetsprodukter, basert på norske frukt- og bær-produkter, vil kunne ha stort potensiale da norske råvarer oppleves som ferske, sunne og gode. Høytrykksbehandling av mat kan benyttes for å oppnå produkter med forbedret kvalitet, lengre holdbarhet og økt mattrygghet. Maten blir også sunnere og friskere da næringsstoffene blir bedre bevart enn ved varmebehandling. I dette forprosjektet har det vært arbeidet med bringebær og plommer. Forsøk med høytrykksprosessering av bringebærjuice, mos og hele bær ble utført. Resultatene viste at prøver behandlet med HP har en betydelig lenger holdbarhet sammenlignet med kontrollprøver. Juiceprøver lagret i 97 dager viste svært lav bakteriell vekst, og analyse av sukker og syreinnhold viste at trykk hadde liten innvirkning på viktige smakskomponenter. Norwegian fruits and berries have an unused potential. During the peak season, there is a higher production than is being sold for fresh consumption. High pressure processing (HPP) can be used for making high quality products from the excess production. HPP of foods can be used to increase the quality and shelf life of foods. The food will also be healthier and fresher as the nutrients will be better preserved in HPP than by heat treatment. In this project the focus has been on high pressure processing of raspberries and plums. Studies on raspberry juice, purée and whole berries showed a considerably longer shelf life compared to control samples. Analysis of sugar and acid content indicated that HPP had low impact on important flavouring components.

Njøs næringsutvikling har leia prosjektet «Kvalitetskompost til bruk i frukt og bærhagar». Som del av dette prosjektet har Bioforsk Ullensavang utført forsøk med kompost i den økologiske frukthagen på Ernes i Ullensvang. I 2011 vart det lagt ut forsøk med tilførsel av ulike mengder kompost langs trerekkjene, og effekten av nedmolding etter spreiing vart undersøkt. I eit nytt forsøk vart det i 2012 fresa ned ulike mengder kompost før planting av eit nytt eplefelt. I begge forsøka vart det teke ut prøver for vanlege kjemisk analyse av viktige næringsstoff i jord og blad. Avling og fruktkvalitet vart registrert når det var avling i forsøksfelta. Tilvekst vart målt som skotlengde og stammeomkrins. Målingane av tilvekst i 2013 og målingar av mineralisert nitrogen i feltet hausten 2013 er ikkje klart når arbeidet med denne rapporten er avslutta (18. februar 2014). Det vart teke ut prøve av jorda av dei ulike rutene for vurdering av den biologiske aktiviteten i jorda. Desse analysene vart gjort av Vital analyse. Lindum Bioplan har delteke i diskusjonane om opplegget, og levert komposten som vart nytta. Det var ulike kompostar som vart brukt i dei to forsøka. Komposten som vart nytta i 2011 var lite omdanna, medan komposten som vart nytta vart rekna som særleg godt kompostert masse. Resultat: Tilførsel i etablert felt: • Komposten tilførde næring til feltet. Der det var tilført kompost, var det meir tilgjengeleg nitrogen for plantene. Dette førde til auka vekst. • Det var klarare utslag der komposten var molda ned. • Andre og tredje året hadde auka vekst ført til reduksjon i tilgjengeleg mineralemne i jorda. Dette såg ein og i bladanalysane. • Der det var tilført kompost fekk ein større avling og fruktkvaliteten var som ein ville forventa med meir plantetilgjengeleg nitrogen: grønare eple med mindre oppløyst turrstoff m.m. Nedmolding av kompost før planting • Komposten tilførde næringsstoff, men nitrogenverknaden var negativ i etableringsåret (omdanningsprosessar i jorda som brukte nitrogen?) • Feltet bør fylgjast eitt år til Det er ikkje signifikante skilnader mellom dei ulike ledda med omsyn til dei faktorane Vital analyse målte. Det ville vore ynskjeleg å gjera registreringar i feltet også i komande sesong, særleg i feltet der det var tilført kompost før planting. Her har ein berre registreringar i ein sesong.

Lift Up og Lingalaks i samarbeid med Bioforsk og NIFES gjennomførte forprosjektet Grønlaks. Fiskeslam samlet opp under merder i oppdrettsanlegg ble prøvd innblandet i vekstmedium for planter. Resultatene var positive. Lift Up og Lingalaks har nå gjennomført prosjektet «Full skala system for slamoppsamling – oppdrett». Et delprosjekt gjennomført av Bioforsk, har hatt som formål å finne slammets verdi som gjødsel og/eller biogass, og identifisere mulige partnere og konsepter for videre slambehandling. Analyser av slam og tørket slam (snus) viser at det i dette prosjektet ikke ble funnet innehold av tungmetaller som vil legge restriksjoner på bruken som gjødsel i landbruket (kapittel 2). På grunn av slakting midt i prosjektperioden på den ene lokaliteten og utsetting av ny fisk på den andre lokaliteten med slamoppsamlingsutstyr, har det ikke vært mulig å få en sammenhengende analyseserie gjennom året og stadiene i omløpet fra ung fisk til slakteferdig fisk. Fiskeslam ble etter oppsamling transportert til Bioforsk Ullensvang for å prøves i dyrkingsforsøk med jordbær, plommer og graseng. I forsøket har ulike vekster fått behandling med ubehandlet slam, fortynnet slam, tørket slam og slam blandet i torv. Resultatene viser at råvaren inneholder næringsstoffer (m.a. nitrogen) som er tilgjengeleig for plantene som gjødsel. Fiskeslam inneholder klor, men det er ikke påvist veksthemming eller synlige skader av dette (kapittel 3). I Kapittel 4 er det gjort en vurdering av slam fra marint fiskeoppdrett som råstoff for biogassanlegg. Konklusjonen er at det er godt egnet. Utfordringer kan være vann- og saltinnholdet. Næringsstoffene som finnes i slammet fra oppdrettsanlegg vil i sin helhet finnes igjen i bioresten som er vist å ha tilsvarende gjødseleffekt som husdyrgjødsel når samme mengde nitrogen doseres. Biogassanlegg knyttet til enkelte oppdrettsanlegg vurderes som mindre aktuelt fordi slike anlegg vil ha for store etablerings- og driftskostnader og samtidig gi begrenset energiutbytte. Det anbefales i stedet å vurdere mulighetene for å behandle slammet sammen med andre avfallsfraksjoner, evt i allerede etablerte eller planlagte anlegg.

Proceedings of the International Conference “Environmentally friendly and safe technologies for quality of fruit and vegetables”, held in Universidade do Algarve, Faro, Portugal, on January 14-16, 2009. This Conference was a join activity with COST Action 924. Foliar applications of fertilizers are an important part of standard fertilization programmes in apples to optimize the content of nutrients important to growth and fruit quality. In an experiment in plums (Prunus domestia L.) a foliar fertilization programme was compared to traditional application of fertilizers on the soil. In another experiment extra magnesium, potassium and the combination of both magnesium and potassium were compared to control trees given a standard foliar fertilization programme. Yield and fruit size was registered. Analyses included fruit quality factors, content of major nutrients in fruits and leaves as well as storability. The effects of the different programmes on yield, fruit size and most fruit quality factors were not significant. Fruits from trees given foliar fertilizers had, however, higher content of nitrogen and significantly lower contents of the other major nutrients. The application of extra potassium and magnesium did not increase the level of these elements, but a significant reduction in the Ca-content was observed. Accordingly a higher K:Ca-ratio was observed in potassium and magnesium sprayed fruits. Even though no differences in fruit firmness were observed between the treatments at harvest, after two weeks of storage the plums from potassium sprayed trees were significantly softer than the controls.

Bioforsk og NILF har gjennomfort ei vurdering av norsk epleproduksjon for industri; primart fersk jus og eplejuskonsentrat. Granskinga syner at dyrkarane ma ha 4,83kr pr kg (ved maskinell hausting) eller 6,04 kr pr kg (ved handhausting) for a fa okonomi i produksjonen. Det vert tilradd sortar og dyrkingsopplegg som kan gje mest mogleg rasjonell produksjon. Dersom ein skal ha ei storre satsing med maskinell hausting, er det omrade i Telemark, Vestfold eller Buskerud som er aktuelle.
