15. The Effects of the Marination Process with Different Vinegar Varieties on Various Quality Criteria and Heterocyclic Aromatic Amine Formation in Beef Steak

Abstract

Herein, the effect of the dipping (static) marination process (at 4 °C for 2 h) with different types of vinegar (balsamic, pomegranate, apple, and grape) on various quality properties, including texture and protein profile of beef steaks and the formation of heterocyclic aromatic amines (HAAs) in beef steaks cooked on a hot plate (at 200 °C for 24 min), were determined. The results showed that 3.12–4.13% of the marinate liquids were absorbed by beef steak as a result of the marination process. No significant differences (p > 0.05) were observed between the marinated and cooked beef steaks in terms of water content, cooking loss, thiobarbituric acid reactive substances (TBARS) value, hardness, cohesiveness, and chewiness. However, significant differences were detected in terms of pH value and color values (L*, a*, and b*) (p < 0.01), and springiness, 2-amino-3,8-dimethylimidazo (4,5-f) quinoxaline (MeIQx) and total HAA content (p < 0.05). The marination with pomegranate vinegar resulted in the formation of darker steak, while a lighter one was obtained when apple vinegar was used in the marination. The use of balsamic and grape vinegar in the marination process decreased the springiness value compared to the control group. The myofibrillar proteins of beef steaks marinated with different types of vinegar generally showed a similar sodium dodecyl-sulfate polyacrylamide gel electrophoresis (SDS-PAGE) profile. However, some differences were observed in the band density of some proteins depending on the trial and the type of marination. In this study, of the nine examined HAAs, only two (2-amino-3-methylimidazo (4,5-f) quinoline (IQ) and MeIQx) could be detected and quantified. Abstract

Background: Results from retrospective studies suggest that use of neuromuscular blocking agents during general anaesthesia might be linked to postoperative pulmonary complications. We therefore aimed to assess whether the use of neuromuscular blocking agents is associated with postoperative pulmonary complications. Methods: We did a multicentre, prospective observational cohort study. Patients were recruited from 211 hospitals in 28 European countries. We included patients (aged ≥18 years) who received general anaesthesia for any in-hospital procedure except cardiac surgery. Patient characteristics, surgical and anaesthetic details, and chart review at discharge were prospectively collected over 2 weeks. Additionally, each patient underwent postoperative physical examination within 3 days of surgery to check for adverse pulmonary events. The study outcome was the incidence of postoperative pulmonary complications from the end of surgery up to postoperative day 28. Logistic regression analyses were adjusted for surgical factors and patients' preoperative physical status, providing adjusted odds ratios (ORadj) and adjusted absolute risk reduction (ARRadj). This study is registered with ClinicalTrials.gov, number NCT01865513. Findings: Between June 16, 2014, and April 29, 2015, data from 22 803 patients were collected. The use of neuromuscular blocking agents was associated with an increased incidence of postoperative pulmonary complications in patients who had undergone general anaesthesia (1658 [7·6%] of 21 694); ORadj 1·86, 95% CI 1·53–2·26; ARRadj −4·4%, 95% CI −5·5 to −3·2). Only 2·3% of high-risk surgical patients and those with adverse respiratory profiles were anaesthetised without neuromuscular blocking agents. Abstract

The uptake of radioactive cesium by mussels, Mytilus galloprovincialis, collected from Marmara Sea exposed over one month to radioactive contaminated sea water and the subsequent loss in non-radioactive sea water were studied with 137Cs. The uptakes and losses of 137Cs by mussels observed experimentally were plotted and fit to appropriate functions. The experiments clearly showed that the activity concentrations of 137Cs in mussels reached a peak which is a saturation state in 30 days while the loss of a substantial of the 137Cs activity by mussels was observed within 15 days. The activity concentrations of 137Cs in soft parts of the mussels were higher than those measured in whole body of the mussels. more...

Abstract

Background and Design: Treatment of chronic venous ulcers of the lower extremity is still an important difficulty. The principal treatment of these ulcers includes compression therapy, local wound care and surgery. Unresponsiveness to these standard treatments is a frequent situation with negative effects on life quality and reductions in personal productivity. Therefore, there is a need for new applications to increase the effectiveness of treatment in treatment-resistant cases. In the present study, we retrospectively evaluated the results of topical application of amelogenin extracellular matrix protein in resistant venous ulcers. Materials and Methods: We analyzed the records of patients with treatment-resistant venous ulceration who were treated with amelogenin extracellular matrix protein between June 2011 and December 2012. Results: 26 patients (21 male and 5 female) with a total number of 28 ulcers (24 patients with 1 ulcer, 2 patients with two ulcers) were evaluated. The patients were treated with topically applied amelogenin extracellular matrix protein and regional four bandage compression. Bandages were changed weekly. Each cure continued for six weeks. In fourteen patients (15 ulcers), we observed a complete healing by the end of the first cure. In another twelve cases (13 ulcers), the same period resulted with a reduction in wound diameter. We continued to the second cure for these patients. By the end of the second cure, complete healing was achieved in five cases (6 ulcers). Conclusion: Topical application of amelogenin extracellular matrix protein may be considered as an effective therapeutic choice for refractory venous ulcers. (Turkderm 2014; 48: 237-41). more...

Saricaoglu, Furkan Turker/0000-0003-1173-5793 WOS: 000343651700004 This study examined live weight, carcass traits, meat quality and blood parameters of slow-and medium-growing chickens at 84 days of age and compared them with those of commercial slow-and fast-growing genotypes. A total of 2,240 chicks were used in the study. Day-old chicks were wing-banded, and 280 mixed male and female chicks from each genotype were randomly allocated to one of four 1.7 x 3 m compartments. At 84 days of age, 10 males and 10 females per genotype from each compartment were slaughtered, and the following characteristics were evaluated: slaughter weight and carcass traits; meat pH, color values (L* a* b*), water-holding capacity (WHC), chemical composition and texture, blood-serum parameters. Similarities of traits were observed between two-way crossing and commercial slow-growing genotypes and between S3 and S4 three-way crossing and fast-growing genotypes. S5 and S6 three-way crossing genotypes had the slowest growth rates. Genotype was found to have a significant effect on thigh and breast dry-matter and protein levels, with the highest levels found in the two-way crossings. Genotype was found to have a significant effect on blood parameters. Significant differences were found between the sexes in thigh and breast ratios, abdominal fat levels, pH and some color values (P < 0.05). Female chickens also had significantly higher albumin, triglyceride and thigh-meat protein levels than males (P < 0.05). Differences in meat chemical composition did not vary significantly by sex. Sex x genotype interaction was found to have an insignificant effect on all parameters with the exception of texture (breast-meat hardness). Abstract

The effects of locust bean (carob) flour (LBF) as a substitute for cocoa in the production, quality attributes, and storage stability of chocolate spreads were investigated. CON (4.5% cocoa), CF15 (3.0% cocoa + 1.5% LBF), CF30 (1.5% cocoa + 3.0% LBF), and CF45 (4.5% LBF) formulations were produced, and stored at 22 and 35 °C for 12 weeks. Appearance, odor, sweetness, color, and overall acceptability scores decreased with increasing LBF, but up to 3.0% LBF did not affect the scores compared to the CON. Replacing cocoa with LBF at a low level resulted in higher hardness and spreadability. Hardness, free fatty acid, and peroxide values (PV) increased, aw values generally decreased during storage, but PV was still lower than 10 meq O2/kg. As the LBF ratio increased, darkening occurred in the chocolates.
