Fermented meat products are vulnerable to microbial contamination because of their long production cycle and rich nutrients, which can affect product quality and result in adverse effects on human health. As consumers pay increasing attention to the flavor and safety of fermented meat products, it is very important to explore the safety and flavor characteristics of meat products. Lactic acid bacteria were the first microorganisms isolated from fermented meat products, which are important dominant microorganisms in traditional fermented meat products and are closely related to product quality. In fermented meat products, lactic acid bacteria can not only produce antibacterial substances that inhibit the growth of harmful microorganisms and therefore improve the safety of meat products, but also improve the flavor of fermented meat products by affecting carbohydrate metabolism as well as protein and lipid decomposition and oxidation. This paper reviews the effect of lactic acid bacteria on improving the product quality by inhibiting the growth of harmful microorganisms in fermented meat products and the effect of lactic acid bacteria the flavor of fermented meat products in order to provide new ideas for future research of fermented meat products.

Strontium aluminate, with suitable lattice parameters and environmentally friendly water solubility, has been strongly sought for use as a sacrificial layer in the preparation of freestanding perovskite oxide thin films in recent years. However, due to this material's inherent water solubility, the methods used for the preparation of epitaxial films have mainly been limited to high-vacuum techniques, which greatly limits these films' development. In this study, we prepared freestanding single-crystal perovskite oxide thin films on strontium aluminate using a simple, easy-to-develop, and low-cost chemical full-solution deposition technique. We demonstrate that a reasonable choice of solvent molecules can effectively reduce the damage to the strontium aluminate layer, allowing successful epitaxy of perovskite oxide thin films, such as 2-methoxyethanol and acetic acid. Molecular dynamics simulations further demonstrated that this is because of their stronger adsorption capacity on the strontium aluminate surface, which enables them to form an effective protective layer to inhibit the hydration reaction of strontium aluminate. Moreover, the freestanding film can still maintain stable ferroelectricity after release from the substrate, which provides an idea for the development of single-crystal perovskite oxide films and creates an opportunity for their development in the field of flexible electronic devices. Pure‐phase α‐formamidinium lead iodide (α‐FAPbI3) perovskite solar cells (PSCs) possess potential high efficiency because of suitable bandgap. However, achieving high‐quality α‐FAPbI3 films during the spin‐coating process is challenging without anti‐solvent extraction, due to the spontaneous formation of the more stable δ‐FAPbI3 phase and the complexity of multi‐component perovskite precursor solutions. Here a gel precursor with an amorphous structure to eliminate the need for anti‐solvent extraction in achieving the homogeneous and highly oriented pure‐phase α‐FAPbI3 is devised films. The incorporation of N,N′‐dimethylpropyleneurea, and alkylammonium chloride results in extended iodoplumbate clusters in the perovskite precursor solution. In situ, spectroscopic analysis reveals that the emergence of the stable amorphous gel precursor during the initial solidification stage ensures a uniform solute distribution. This effectively prevents preferentially oriented growth in the crystal phase precursor, leading to a significant enhancement in film homogeneity. As a result, power conversion efficiencies of 24.17% for the PSC, and 19.3% for the module are achieved, along with superior operational stability, retaining 96.1% of their initial efficiency after 850 h at the maximum power point tracking. These demonstrate the best performance for the reported pure‐phase α‐FAPbI3 PSCs without anti‐solvent extraction, showing great promise for scalable manufacture. [ABSTRACT FROM AUTHOR]

Constructing core–shell structure is recognized as an effective approach for the conventional colloidal semiconductor nanocrystals (NCs) to improve their stability and optical performance in optoelectronic applications. It is, however, still a challenge to develop green manufacture for core–shell lead halide perovskite NCs (PeNCs). Herein, an ice‐confined freeze‐thaw strategy using pure water solvent is devised, which results in the surface reconstruction of CsPbBr3 PeNCs thereby formatting the CsPb2Br5 shell on the CsPbBr3 core to achieve core–shell CsPbBr3@CsPb2Br5. The in situ formation of the CsPb2Br5 shell is attributed to the transformation of the intermediate polyhedral structure with the help of amphiphilic 4‐dodecylbenzene sulfonic acid ligand in the precursor solution. The PeNCs show ultrahigh photoluminescence quantum yield of 95%, remarkable stability and humidity‐resistance. Moreover, both light‐emitting diodes and stretchable fluorescence hydrogels based on the PeNCs exhibit a boosted optical performance and excellent operation stability. The organic solvent‐free and recyclability of this strategy pave a novel way to the environmentally friendly and large‐scale manufacture of high‐quality PeNCs for optoelectronic application.
