Determining the age of the cattle is important in the cattle industry especially for trading purposes. Dentition and ossification scores are currently used to estimate the age of cattle. Both these methods have limitations which can create significant differences in carcass value. In this study, a fibre-optic probe-based spatially resolved diffuse reflectance spectroscopy system was used to investigate the possibility of using visible-near-infrared spectra for predicting the chronological age of beef cattle. This investigation was carried out on hide samples taken from 80 cattle with accurate date of birth and of the same breed. Spectra of hide samples taken from the neck area were used to build partial least squares models to estimate the age of the cattle. Various empirical pre-processing methods and wavelength selection using genetic algorithm (GA) were used to investigate whether these approaches could enhance model performance. Model performance was evaluated using the repeated learning-testing (RLT) method. A model with the lowest average root mean square error of prediction (ARMSEP) of 2.0 years was obtained when reflected intensity spectra collected from a source-detector distance of 1.0 mm was used after pre-processing with automatic Whittaker filter and applying wavelength selection using GA indicating the feasibility of this method for estimating the age of cattle. Two approaches for utilising measurements from all the source-detector distances collected by the spatially resolved measurement system were also considered. Both these approaches, co-adding and data fusion through augmentation, led to poorer model performance compared to using measurements from only one source-to-detector distance.

Instrumental colour parameters, chroma, hue angle, 630/580 and myoglobin isoforms were assessed repeatedly every 5 min during the first 40 min and every 10 min from 40 to 120 min after surface cutting. Colour stability was measured instrumentally during 4 consecutive days of simulated retail display. L* values were lower for Frozen treatment compared to meat aged for 6 and 12 days. Redness increased at a lower rate for Frozen treatment compared to samples aged for 6 days up to the breakpoint and took a longer time to stabilize. Meat subjected to the ageing-freezing/thaw process required a longer time to reach a fully bloomed status than meat aged up to 12 days post mortem. The ageing-freezing/thaw process improved the redness of lamb meat displayed for 4 days in cold storage. We evaluated the effects of full-fat black soldier fly larvae (BSFL) on broiler carcass composition, cut yield, and breast meat quality. Broilers were fed for 42 days with up to 20% dietary inclusion of BSFL (0, 5, 10, 15, and 20%). On day 42, 120 broilers were slaughtered, and images were taken using computed tomography. Breasts, drumsticks, and thighs were collected for cut yield determination. The pH, color, lipid oxidation, cooking loss, shear force, amino acid profile, and fatty acid profile of the breast meat were assessed. There was no dietary effect on carcass composition or meat quality parameters except for fatty and amino acids compositions. When 20% BSFL was included in the diet, individual fatty and amino acids, such as lauric and myristic acids, aspartic acid, glutamine, and lysine, increased by 22.0-, 5.50-, 1.08-, 1.06-, and 1.06-fold, respectively (p &lt, 0.05). Although total polyunsaturated fatty acids decreased, eicosapentaenoic fatty acids (EPA) increased by 78% in the 20% BSFL inclusion group. In conclusion, up to 20%, dietary full-fat BSFL did not affect key meat characteristics but positively increased the levels of the health-claimable omega-3 fatty acid EPA.

The aim of this study was to investigate the effects of feed efficiency classifications on live animal measurements, circulating IGF-1 and leptin concentrations, and carcass, non-carcass and meat quality traits of lambs. One-hundred and two lambs approximately 70 days-old with initial live weight of 24.6 ± 3.71 kg (mean ± SD) were individually fed for 56 days to determine residual feed intake (RFI) and residual feed intake and gain (RIG). Lambs were then classified as phenotypically Low-, Medium- or High-RFI and Low-, Medium- or High-RIG phenotypes. Circulating leptin and IGF-1 concentrations were higher in more efficient lambs (Low-RFI or High-RIG). Variation in RFI and RIG did not affect meat redness or tenderness, but High-RIG lambs had darker meat. These findings show that the phenotypically more efficient Low-RFI and High-RIG lambs produced carcasses with similar characteristics and meat quality as the less efficient High-RFI and Low-RIG lambs but have a strategic advantage of lower feed intake to achieve similar production outcomes.

The aim of the current study was to identify whether changes in pH or temperature during the development of rigor mortis influence spectral quality and thus the prediction of intramuscular fat (IMF) in hot lamb carcases. Semimembranosus muscles (SM) of 75 lamb carcases were measured pre-rigor 3 times (Runs 1–3) using a near infrared (NIR) spectrometer with muscle pH and temperature also recorded. Calibration models for the prediction of IMF showed that spectra measurements taken at Run 2 (R2 = 0.42, RMSE = 0.75) and Run 3 (R2 = 0.38, RMSE = 0.78) provided more accurate and precise models compared to Run 1 (R2 = 0.27, RMSE = 0.84). An association between spectral variance, internal and surface temperature of the SM was observed across runs. These results suggest that, as muscle temperature declined during the early post-mortem period there was an improved ability of NIR spectra to predict IMF.

Lamb steaks from semimembranosus (SM) and longissimus thoracis et lumborum (LTL) muscles were allocated to three different packaging treatments - Darfresh® vacuum skin packaging (VSP), Darfresh® Bloom packaging (80% O2:20% CO2; Hi-Ox-DB) or high oxygen modified atmosphere packaging (80% O2:20% CO2; Hi-Ox-MAP) - and stored in simulated retail display for 5 or 10days and then subjected to consumer sensory and chemical analyses. Hi-Ox-MAP and Hi-Ox-DB samples had lower tenderness, flavor, juiciness and overall liking scores and higher TBARS values, compared to VSP. Hi-Ox-MAP samples deteriorated in juiciness and flavor between 5 and 10days. Hi-Ox-MAP LTL samples had a lower myofibrillar fragmentation index, consistent with reduced proteolysis, although desmin proteolysis and desmin and troponin-T cross-linking were not influenced by packaging. The LTL exhibited greater desmin degradation and reduced desmin cross-linking relative to the SM, supporting the higher tenderness scores in this muscle. Direct packaging of lamb into retail ready VSP may provide the sheepmeat industry with greater flexibility while increasing consumer satisfaction.

The effect of muscle fibre orientation and measurement interval on lamb meat drip losses was tested using the EZ-DripLoss (EZ) method. Sample cores were removed from 100 semimembranosus (SM) and longissimus lumborum (LL) muscles, sourced from different Merino lamb carcasses. Two cores with either horizontal or vertical fibre orientation, relative to the core diameter, were removed from each SM. One core with vertical fibre orientation was removed from each LL. The drip loss (%) of these cores was then monitored across four 24 h measurement intervals. It was found that fibre orientation did not impact on SM drip losses. Both SM and LL drip losses increased, linear to measurement interval. SM drip loss increased more than LL over the four measurement intervals and consequently, SM drip losses were higher than LL. Longer measurement intervals which are defined in the methods section are recommended when testing lamb meat drip losses using the EZ method.

The current study investigated the effects of the supplementation of lambs with algae on the expression of genes that direct the accumulation of long chain omega-3 polyunsaturated fatty acids (LCn-3PUFA). The nutrition of the lamb's dam around mating was also considered. The dams were fed with either silage (SLG) or oat/cottonseed (OAT) based diets for six weeks prior to and, three weeks following conception. mRNA levels of FADS1, FADS2, CPT1, SCD, ACC and fad2 were measured in the liver, muscle and subcutaneous fat from lambs fed a control diet consisting of oat and lupin grains and chopped lucerne (CTRL) or the CTRL diet with algae (DHAgold™) added at 1.92% DM (ALG). The lambs were 117.4±2.4 days of age and weighed 37.3±3.2 kg at the beginning of the experimental period, and six weeks later they were slaughtered at 160.4±2.4 days of age and a final live weight of 50.1±4.4 kg. The expression of FADS1 in liver tissue was not affected (P>0.05) by the interaction between dam nutrition and algae supplementation, however it was higher (P 0.05) by algae supplementation, but it was higher (P 0.05).

A number of studies have shown that dietary omega-6 and omega-3 long-chain fatty acids can be incorporated into muscle tissue of ruminants despite the biohydrogenation of dietary fatty acids in the rumen. The main focus of this review is on eicosapentaenoic (20:5n-3) and docosahexaenoic (22:6n-3) fatty acids because health authorities around the world consider the sum of these fatty acids as the basis of classifying a food as a source or good source of omega-3 polyunsaturated fatty acids (PUFAs). A high proportion of polyunsaturated fatty acids are hydrogenated in the rumen, leading to a higher concentration of 18:0, but some escapes the rumen to be absorbed intact by the small intestine. Feeding strategies for ruminants have been successfully applied to increase the absorption of PUFAs in the small intestine and therefore to increase the levels of PUFAs in muscle tissue. Protected fats and algae are strong candidates to improve the nutritional value of red meat in ruminants in terms of health-claimable omega-3 fatty acids. Efforts to understand the genetic basis of fatty acid metabolism have been underway. The knowledge of the main genes which control the output of omega-3 fatty acids is still lacking, but gene expression studies have helped to explain the deposition of these acids in muscle, liver, and subcutaneous fat.

Primiparous Santa Gertrudis heifers were used to evaluate the effects of gestational dietary protein content on meat quality traits of 20 month old bull progeny (n = 40). At − 60 d before AI, heifers were randomly allocated to HIGH or LOW protein diet (HPERI and LPERI). From 24 dpc, half of each treatment group changed to an alternative post-conception HIGH or LOW protein diet (HPOST and LPOST). LPERI and LPOST diets resulted in higher shear force of the semitendinosus muscle than HPERI (P = 0.053) and HPOST (P = 0.003), respectively. Heat-soluble collagen in the semitendinosus muscle was lower (P = 0.019) for LPERI than HPERI. Collagen and tenderness of the longissimus muscle were not affected by dam nutrition (P > 0.05). Color, pH, sarcomere length, cooking loss, compression values, desmin and troponin-T degradation, fiber type, intramuscular fat and polyunsaturated fatty acid content were not affected by dam nutrition during the peri-conception and first trimester gestational period (P > 0.05).

The Warner-Bratzler shear force (WBSF) of 335 lamb m. longissimus lumborum (LL) caudal and cranial ends was measured to examine and simulate the effect of replicate number (r: 1-8) on the precision of mean WBSF estimates and to compare LL caudal and cranial end WBSF means. All LL were sourced from two experimental flocks as part of the Information Nucleus slaughter programme (CRC for Sheep Industry Innovation) and analysed using a Lloyd Texture analyser with a Warner-Bratzler blade attachment. WBSF data were natural logarithm (ln) transformed before statistical analysis. Mean ln(WBSF) precision improved as r increased; however the practical implications support an r equal to 6, as precision improves only marginally with additional replicates. Increasing LL sample replication results in better ln(WBSF) precision compared with increasing r, provided that sample replicates are removed from the same LL end. Cranial end mean WBSF was 11.2 ± 1.3% higher than the caudal end.

Sixty shoulders from 32 male lambs fed with 30, 40, 50 or 60% oldman saltbush hay for 60 days were vacuum-packaged and stored in a refrigerator at 0 ± 1°C for 0, 7 or 14 days of ageing. O fígado das fêmeas TxSI cresceu em taxas mais elevadas quando comparadas às fêmeas dos outros grupos genéticos. Os machos e fêmeas do grupo TxSI apresentaram taxas de crescimento maiores para rúmen/retículo, respectivamente, comparado aos grupos SI e BxSI. Males and females, including purebred Santa Inês lamb (SI) and crosses between Santa Inês dams and Texel (TxSI), Ile de France (IFxSI) and Bergamasca (BxSI) sires were feedlot finished and slaughtered at 15, 25, 35 and 45kg live weight. After slaughter, the following non- carcass components were weighed and calculated the allometric growth. Lungs of BxSI males grew faster than those of SI and TxSI. Trachea/esophagus in SI and TxSI males grew slower than IFxSI and BxSI. Kidneys BxSI males grew faster than TxSI and IFxSI. Livers of female TxSI lamb grew more rapidly than those of females in the other genetic groups. In both males and females, the rumen/reticulum grew faster in the TxSI group than SI and BxSI groups. Foram utilizados 32 ovinos machos castrados, com 8 meses de idade e peso inicial de 22 + 1,97kg, confinados individualmente e abatidos após 60 dias de confinamento. Os pesos de carcaça quente e fria decresceram linearmente com o aumento de feno de erva-sal na dieta, no entanto, não houve efeito para o rendimento verdadeiro de carcaça (59,42%) e dos cortes: paleta (19,26%), pescoço (8,52%), costelas (26,57%) e perna (33,88%). Houve efeito linear decrescente para área de olho de lombo e espessura de gordura à medida que o nível de feno de erva-sal aumentou na dieta. Os pesos e os rendimentos de pele, fígado, coração, rins com gordura perirrenal e gorduras omental e mesentérica decresceram linearmente com a inclusão de feno de erva-sal na dieta, enquanto o conteúdo (%) do trato gastrintestinal aumentou. O aumento da proporção de feno de erva-sal na dieta de cordeiros proporciona adequados rendimentos verdadeiros de carcaça e dos cortes comerciais, no entanto, reduz a área de olho de lombo e a espessura de gordura subcutânea, medidas importantes na avaliação qualitativa da carcaça ovina. This work aimed to evaluate the carcass yields, commercial cuts and non-carcass components of Santa Inês lambs fed with 30, 40, 50 or 60% of oldman saltbush hay with concentrated. Were used 32 castrated lambs at 8 months old and initial body weight of 22 + 1.97kg, housed individually and slaughtered after 60 days of feedlot. The weights of hot and cold carcass decreased linearly with the inclusion of saltbush hay in the diet, however, there was no effect for true carcass yield and commercial cuts: shoulder (19.26%), neck (8.52%) ribs (26.57%) and leg (33.88%). There was a linear decrease for ribeye area and fat thickness when the level of hay in the diet increased. The weights and yields of skin, liver, heart, kidneys with perirenal fat, omental and mesenteric fats decreased linearly with the inclusion of hay in the diet, while the content (%) of gastrointestinal tract increased. The increased proportion of saltbush hay in the diet of lambs provided adequate true carcass yield and commercial cuts, however, reduces the ribeye area and fat thickness, important measurements in the qualitative evaluation of the lamb's carcass.
