Abstract

国際資源学部資源政策コースにおいて2014 ～ 2016 年度にかけて実施した初年次教育の取り組みを報告した上で，担当教員による所感と履修学生による授業評価アンケートの結果を参照して教育プログラムの内容を総括した。検討の結果，2014 ～ 2016 年度の試みでは，教育プログラムの修正によって新入生への細やかな指導体制が整いつつあるものの，履修者の興味関心を喚起する点が不十分であると推論された。今後の改善案の１つとして，資源政策コースの専門教育内容である資源・エネルギー・環境等と関わる課題に対する人文社会科学のアプローチを用いた教員の研究内容を授業題材として取り込むことも考えられる。

application / pdf, 研究ノート, 要旨：保健分野のソーシャル・キャピタル研究では、ソーシャル・キャピタルの内実が地域毎に異なるにも関わらずその内実が解明されず、またソーシャル・キャピタルと健康の因果関係が明らかにされないという２つの問題点がある。本研究では、対象社会の社会構造の特徴を精査した上で、それが集団レベルの健康状態と結びつくメカニズムの解明を目指す文化人類学の手法を構想した。2015年４月から秋田県男鹿市Ａ地区の住民を対象に行った現在までの予備調査では、対象地域住民の間で社会的紐帯が強く、その背景に親族組織や農事勉強会などの社会組織が関連するという手がかりを得た。本稿では現在までに得た予備調査データを参照しつつ本研究の構想を示す。 Abstract：Many studies have been conducted using the concept of social capital in the fi eld of health recently. These studies typically have two problems. The first is that they do not pay close attention to the actual situation of social capital, although there are real diff erences amongst communities. The second is that they do not discuss causation between social capital and health status. Thus, in this study, we utilize a cultural anthropological approach to investigate the relationship between the social structure and the health status of a given group, based on a survey of the characteristics of social structure in the subject community. The participants are located in the (A) district of Ogacity, Akita, where we have been conducting fieldwork since April, 2015. According to our preliminary fieldwork, we have discovered results, which suggest that the connection amongst the people was strong in the subject community, which has a relationship with social organizations such as a kin group, agricultural study meeting, and so on. In this article, we present our research framework based on data from our preliminary fieldwork.

Abstract

Objectives: People in the Papua New Guinea Highlands consume sweet potatoes as their dietary staple; consumption of animal protein is limited. In such societies with marginal protein intake, the intra-household allocation of animal protein in terms of sex or age is of importance. The objective of this study was to investigate how the allocation pattern of protein-rich foods by sex and age is associated with economic development in the Papua New Guinea Highlands. Methods: The carbon and nitrogen isotopic compositions of fingernails, collected in 1995 in two areas (Tari and Port Moresby [the national capital where Tari migrants resided]), and of scalp hair, collected in 2007, 2012, and 2013 in three areas of different degree of economic development (Levani, Tari, and Goroka) were analyzed. Results: Analysis of fingernail samples showed that δ15N was lower in rural communities than in the urban migrant community, while a sex difference in δ15N (higher in males than in females) was found in the former but not in the latter community. Age was not associated with either δ15N or d13C values. The analysis of scalp hair samples showed that δ15N values were lowest in Levani, the least developed area. Furthermore, there were statistically significant sex differences in δ15N values in Levani but not in Tari and Goroka. Age was not associated with either δ15N or d13C values. Discussion: The sex inequality in animal protein consumption seems to have decreased as the communities in the Papua New Guinea Highlands have experienced economic development. Abstract

Objectives The aim of this article was to develop a semi-quantitative food frequency questionnaire (FFQ) and evaluate its validity to estimate habitual protein intake, and investigate current dietary protein intakes of Papua New Guinea (PNG) Highlanders. Methods A 32-item FFQ was developed and tested among 135 healthy male and female volunteers. The FFQ-estimated daily total and animal protein intakes were compared with biomarkers and 3-day Weighed Food Records (WFR) by correlation analyses, Bland-Altman plot analyses and joint classification analyses. Results The FFQ-estimated total protein intake significantly correlated with urinary nitrogen in the first morning void after adjusting urinary creatinine concentration ( r = 0.28, P < 0.01) and the FFQ-estimated animal protein intake significantly correlated with the hair δ15N (Spearman's r = 0.34, P < 0.001). The limits of agreement were ±2.39 Z-score residuals for total protein intake and ±2.19 Z-score for animal protein intake, and intra-individual differences increased as protein intake increased. The classification into the same and adjacent quartiles was 66.0% for total protein intake and 73.6% for animal protein intake. Median daily total and animal protein intake estimates from the FFQ and the 3-day WFR showed a good agreement with differences of 0.2 and 4.9 g, respectively. None of the studied communities in the PNG Highlands met the biologically required protein intake; although the community closer to an urban center showed higher protein intake than the more remote communities. Abstract

A novel method of rapid detection using microplate wells with casein and calcium ions was developed for measuring protease activity. This new method is based on the theory that the hydrolysis by the proteases reduces the turbidity of the solution without coagulation. The three Lactobacillus delbrueckiissp. bulgaricusstrains that were tested secreted a protease with activity that reached its maximum 4 to 8h after incubation (log phase) and then decreased rapidly. The new method allows the protease activity to be detected and measured more rapidly, easily, and economically than do other methods with fluorescent reagents or radioisotopes, and the new method is especially useful for analyzing large numbers of test samples (e.g., chromatographically fractionated eluates).
