Abstract Under the EU’s new “Farm to Fork” strategy, crop production systems should rapidly become more environmentally friendly. In particular, by adopting agroecological measures that support functional biodiversity and improve ecosystem services for crop production, this paper contributes to the ongoing efforts in characterizing the socio-economic effects that the upscaling of these measures entails, by looking into two key measures: flower strips and mulching. One important socio-economic aspect of their adoption is their potential impact on agricultural income; however, knowledge on costs and benefits of measures enhancing functional biodiversity at the farm level is still limited. In order to improve these shortcomings our approach makes use of data from field experiments completed with interviews to provide cost–benefit results for flower strips and organic mulching. The estimations show that for “flower strips,” on average costs could be covered by compensation payments. Regarding the in-crop measure “organic mulching,” the benefits potentially outweigh the costs under the frame conditions of organic agriculture. The analysis also highlights some obstacles and knowledge gaps in the estimation of benefits, especially for off-crop measures like flower strips.

Abstract Background In recent years, there has been a lot of discussion over the impact of ultra-processed foods (UPFs) intake on overall health of subjects. However, the association between UPFs intake and metabolic unhealthy (MU) status is still in a state of ambiguity. The current study assessed the relationship between UPFs intake and MU status with regard to brain-derived neurotrophic factor (BDNF) and adropin levels. Methods A sample of Iranian adults (aged 20–65 years) was selected to participate in this cross-sectional study using a multistage cluster random-sampling method. UPFs intake was assessed by a validated food frequency questionnaire and NOVA classification. Concentrations of metabolic parameters, BDNF and adropin were determined through fasting blood samples. MU status was assessed according to the criteria proposed by Wildman. Results The overall prevalence of MU phenotype among study participants (n = 527) was 42.5%. Higher intake of UPFs was associated with elevated odds of MU status in multivariable-adjusted model (ORT3 vs. T1=1.88; 95%CI: 1.02–3.45). Moreover, a positive association was observed between UPFs intake and hypertriglyceridemia after controlling all confounders (ORT3 vs. T1=2.07; 95%CI: 1.15–3.73). However, each tertile increase in UPFs intake was not significantly associated with serum BDNF ( $$\:\beta\:$$ =0.15; 95%CI: -0.05, 0.34; P = 0.14) and adropin ( $$\:\beta\:$$ =-1.37; 95%CI: -6.16, 3.42; P = 0.58) levels in multivariable-adjusted linear regression models. Conclusion Our findings suggested that higher consumption of UPFs was related to increased likelihood of MU status among a sample of Iranian adults. Further longitudinal studies are needed to verify the directionality and generalizability of the results to all adult populations.

Abstract Background Polycystic ovary syndrome (PCOS) is a unity of endocrine and metabolic disorders, associated with PI3K/AKT/mTOR, autophagy, and gut microbiota. Quinoa is a valuable food source, which contains rich minerals, unsaturated fatty acids, and has a positive modulating effect on metabolic diseases. However, its effects and potential mechanisms on PCOS have not been reported yet. Therefore, the purpose of this study is to investigate the effect of quinoa on PCOS rats by regulating PI3K/AKT/mTOR, autophagy, and gut microbiota. Methods Ten–week-old female Sprague-Dawley (SD) rats have received letrozole for 24 days for induction of PCOS and subsequently were treated with a quinoa diet for 8 weeks. Vaginal smears were used to analyze the estrous cycle of rats. Hormone and biochemical indexes were analyzed by kit assays and glucometer. The pathological changes of ovary, pancreas, duodenum and colon were observed by HE staining. PI3K, AKT, mTOR and autophagy-related proteins in the ovary and colon were measured by western blot and immunohistochemistry staining. Tight junction proteins in colon were measured by immunohistochemistry staining. 16 s rDNA sequencing was used to detect the changes of intestinal microbiota in rats. Network pharmacology and molecular docking were used to study the possible targets and mechanisms of quinoa on PCOS. Spearman correlation analysis was used to study the relationship between intestinal microbial abundance and hormone levels of PCOS rats at the phylum and genus level. Results Quinoa significantly improved estrous cycle and biochemical parameters of PCOS-like rats, and the pathological state of ovary, pancreas, duodenum and colon tissues. Especially, quinoa significantly regulated the expression of PI3K, AKT, mTOR and autophagy-related proteins in the ovary. Quinoa may repair the intestinal barrier by upregulating the expression of tight junction proteins in the colon, and regulate autophagy-related factors in colon. Additionally, quinoa increased the abundance of Lactobacillu, Bacteroides and Oscillospira, and decreased the Firmicutes/Bacteroidetes ratio and the Blautia, and Prevotella, reversing the dysregulation of the gut microbiota. Correlation analysis showed that there is a strong correlation between gut microbiota with significant changes in abundance and hormone related to PCOS. Conclusion Our result indicated that effect of quinoa on PCOS maybe associated with activation of the PI3K/AKT/mTOR signaling pathway, inhibition of autophagy, and regulation of intestinal flora.

Abstract Background No study has investigated the association between ultra-processed food (UPF) and pre-diabetes development. Furthermore, prior investigations on the association between UPF and the risk of type 2 diabetes (T2D) were primarily conducted in Europe and America, and studies in other regions are lacking. We investigated the association between ultra-processed foods and the risk of pre-diabetes and T2D in a cohort of Iranians. Methods This prospective study, with a sample size of 1954 for pre-diabetes and 2457 for T2D, was conducted among adults’ participants (aged ≥ 18 years) from the Tehran Lipid and Glucose Study (TLGS). We defined UPF intake using NOVA calcification as a proportion of total energy, and calculated its average intake during the follow-ups. The hazard ratios (HR) and 95% confidence intervals (95% CI) for pre-diabetes/T2D across tertiles of total UPF and per 10% of its increment were examined using Cox proportional hazards models. We also investigated the possibility of non-linear association using a restricted cubic spline regression. Results We identified 766 and 256 cases of pre-diabetes and T2D, respectively, during a median follow-up of 7 years for pre-diabetes and 8.6 years for T2D. In the multivariable adjusted model, a 10% increase in total UPF intake was associated with a 12% higher risk of pre-diabetes (HR = 1.12; 95% 1.02, 1.23). The incidence of pre-diabetes was also higher in those in tertile 3 than those in tertile 1 (HR = 1.28; 95% CI = 1.07, 1.52). Following additional adjustment for diet quality, the results remained unchanged. Spline regression demonstrated a J-shaped association between UPF and the risk of pre-diabetes; the risk of pre-diabetes did not increase until UPF consumption exceeded about 24% of total energy intake. Of the individual UPF, hydrogenated fat/mayonnaise/ margarine group was related to an increased risk of pre-diabetes. The total UPF and its individual items were not associated with T2D. Conclusions This study found a positive, non-linear relationship between total UPF and the risk of pre-diabetes in Iranian adults. Our data could not show any significant association between UPF and T2D risk.

Abstract Introduction Burkina Faso implemented stringent measures in response to the COVID-19 pandemic that profoundly affected its economy and might have exacerbated food insecurity. While prior studies have assessed the impact of these measures on consumers, there is a dearth of evidence of its effects on food producers in Sub-Saharan Africa. This study aims (i) to evaluate the repercussions of COVID-19 on the possession of food production assets and on the number of livestock owned; and (ii) to determine the correlation between the food insecurity experience scale (FIES) score, ownership of these assets, and the number of livestock owned. Methods This study employs a pre-post comparison design in two panels of randomly selected households in Burkina Faso. While Panel A was constituted of 384 households predominantly (76%) living in rural areas, Panel B comprised 504 households, only half of which (51%) lived in rural areas. All households were visited twice: in July 2019 and February 2021, for Panel A, and in February 2020 and February 2021, for Panel B. Panel B was added to the study before the pandemic thanks to additional funding; the timing of the survey was harmonized in both panels for the second round. Regression models were used with fixed effects at the household level, controlling for potential time-invariant confounding variables, and correlation coefficients between possession of production assets or number of livestock and FIES score were measured. Results Our findings indicate that the possession of some assets in Panel A (cart, livestock, bicycle, watch) was significantly reduced during the pandemic, as was the herd sizes among livestock-owning households in both panels. Households with fewer production assets and number of livestock were more likely to experience food insecurity. Conclusion This study underscores the vulnerability of rural households in Burkina Faso to the economic disruptions caused by the COVID-19 pandemic. Addressing the challenges faced by farming and livestock-owning households is crucial for mitigating food insecurity and improving resilience in the face of ongoing crises.

Abstract Background While several validated sports nutrition knowledge questionnaires exist, none are specifically designed to assess the sports nutrition knowledge (SNK) of Sri Lankan track and field athletes. This study aims to validate the Sri Lankan Sports Nutrition Knowledge Questionnaire (SLn-SNKQ), tailored for this athlete group, to provide more accurate and meaningful insights for research and practice. This will enable health professionals and coaches to confidently assess athletes’ nutrition knowledge, which directly influences their food choices. Methods The validity of the questionnaire was established through a multi-step approach. Content validity was achieved via ratings from nutrition experts, all of whom had specialized training in human nutrition and experience of working with athletes. Face validity was evaluated through in-depth telephone interviews with elite or highly trained athletes, using a retrospective think-out-loud protocol to gather feedback on the clarity and relevance of the questions. Construct validity involved nutrition-trained doctors (NTG), non-nutrition-trained professionals (NNTG), and elite-level athletes’ groups (AG). Internal consistency was assessed using Cronbach’s alpha, and test-retest reliability was evaluated. Results The final tool comprised 123 individual statements or prompts (items) that were organized into 32 broader questions, spanning 12 sub-sections. Content validity was confirmed by fully integrating 49 out of 70 comments and partially integrating four comments received from nutrition experts for each sub-section. Face validity was established by fully integrating 33 out of 40 comments received from 16 elite and highly trained athletes. Construct validity was confirmed, indicating significant differences in the total scores achieved as a percentage of the SLn-SNKQ among the NTG (462.5, 92.5%), NNTG (223.5, 44.7%), and AG (235, 47.0%; p 0.7). Conclusions The SLn-SNKQ has been validated and demonstrates robust psychometric properties, offering a reliable tool for assessing SNK among Sri Lankan track and field athletes.

Abstract Background Although adherence to a healthy dietary pattern is one of the primary recommendations for the prevention of polycystic ovary syndrome (PCOS), there is still no conclusive evidence of which specific dietary pattern is best. The Lifelines diet score (LLDS) is a new, evidence-based scoring system to determine diet quality, and its association with PCOS has not been investigated. The present study aimed to assess the association between LLDS and PCOS in Iranian women. Materials and methods This frequency-matched case-control study was carried out on 108 women with PCOS and 108 women without PCOS as a control group in Yazd, Iran. Healthy controls were matched to PCOS women based on age and BMI. The validated 178-item food frequency questionnaire was used to assess the usual dietary intake. Logistic regression was used to estimate the association between LLDS and PCOS. Abstract Background Irritable bowel syndrome (IBS) is a common gastrointestinal disorder in which the intake of food is known to exacerbate symptoms. Experiencing food related symptoms can lead to avoidance of food, and cause anxiety related to food intake. We aimed to explore perceptions of the healthiness of food, food avoidance, and food-related worry and anxiety among individuals with and without IBS. Methods This study was based on a survey conducted in January-February 2017. In total, 2000 participants aged 20–65 were invited by postal letter randomly obtained through the Swedish state personal address register. The questionnaire included aspects of socioeconomic position, different disorders including IBS and food intolerances, food avoidance, and food-related worry or anxiety. Results In total, 538 participants were included in this study, of whom 8.4% (n = 45) reported having IBS. Abstract Cocoa bean shell (CBS) remains a commonly produced by-product of cocoa bean processing. It is usually obtained from fermented and dried cocoa beans that are roasted. The study investigated the potential use of Near-infrared spectroscopy (NIRS) analysis for discriminating roasted and unroasted CBS among cocoa clones and quantifying some nutritional and bioactive components in Ghana. Five clones, comprising four important seed gardens clones used across West Africa and one criollo were evaluated. Cocoa beans from the different clones (T60/887, VENC 4, MO 20, PA 150 and T60/887 × POUND 7) were divided into two parts, with one part roasted at a temperature of 120 °C for 50 min while the other part was kept unroasted. The CBSs were milled and passed through a 425 μm pore-sized sieve to obtain the powder. A handheld portable NIRS was used to scan the CBS powder in Ziplock bags. The nutritional and bioactive characterisation was carried out using official methods. NIRS discriminated the various clones of roasted and unroasted CBS. Carbohydrate was the predominant macronutrient, and ash content ranged from 5.25 to 8.24%. The CBS was high in potassium (2382–3144 mg/100 g) and low in sodium (25.67–51.33 mg/100 g). Total flavonoids and phenolics ranged from 8.61 to 40.71 mgQE/g and 6.34–12.25 mgGAE/g, respectively, for the roasted and unroasted CBS. To ensure better differentiation of cocoa beans from different clones using NIRS, incorporating roasting as a processing parameter is recommended.

Abstract The objective of this study was to assess the impact of incorporating Saccharomyces boulardii yeast (a known probiotic culture) as an adjunct culture on the quality characteristics of Mozzarella cheese, prepared using two different cheesemaking protocols. Protocol I employed unhomogenized milk with cheddaring prior to plasticizing (CUMC), while Protocol II used a blend of homogenized and unhomogenized milk (1:1; BHMC) and obviating cheddaring step. A control cheese (UMC) was produced from unhomogenized milk. The study aimed to determine which cheesemaking protocol better supports S. boulardii survival and produces sensorily satisfactory cheese quality. Key findings showed that cheese made with Protocol II, particularly BHMC4.2 with a higher level of yeast, exhibited the highest yield. Textural properties of cheeses CUMC and BHMC were similar, with UMC and CUMC cheeses demonstrating superior baking characteristics such as shredding, melting, and controlled fat leakage. Sensory evaluation indicated that cheese made with a lower level of adjunct culture scored higher during pizza applications. Furthermore, higher adjunct yeast level produced cheeses having increased S. boulardii as well as Lactic Acid Bacteria counts. The study recommends using cheesemaking Protocol II, as it fosters a S. boulardii count of ~ 105 CFU/g through use of milder cheese curd plasticizing conditions, enhancing the survival of the probiotic yeast. These findings have practical implications for production of Mozzarella cheese having viable probiotic yeast count.

Abstract In this modern world, climate change adversely affects global food security and India is not out of it. India is now going to be the most populous country in the world and a growing population means an ever-increasing demand for safe and healthy food. Cultivation of millets can help us in this aspect as they are nutrient-dense and capable of resisting a variety of harsh environmental conditions, including lack of moisture. Millets are coarse grains that have been traditionally grown and consumed in the Indian subcontinent for about 5000 years. Although they are tagged as “poor man's food grains” regular consumption of millets can help in maintaining the good health of individuals as they are packed with several essential micronutrients like phosphorous, fiber, protein, potassium, manganese, antioxidants, polyphenols, flavonoids etc. Millets have numerous health benefits, including helping to balance our blood glucose levels, keeping our heart in good condition, aiding in weight loss, battling cancer cells, promoting digestion, giving stronger bones, strengthening our cardiovascular system, and acting as an agent for anti-aging. This review work has described the promising potential of millets as the staple of our plate. Graphical abstract

Abstract Recent epidemiological studies have suggested a positive association between ultra-processed food consumption and breast cancer risk, although some studies also reported no association. Furthermore, the evidence regarding the associations between intake of food with lower degrees of processing and breast cancer risk is limited. Thus, we investigated the associations between dietary intake by degree of food processing and breast cancer risk, overall and by breast cancer subtypes in the European Prospective Investigation into Cancer and Nutrition (EPIC) study. Dietary intake of EPIC participants was assessed via questionnaires at baseline. More than 11,000 food ingredients were classified into four groups of food processing levels using the NOVA classification system: unprocessed/minimally processed (NOVA 1), culinary ingredients (NOVA 2), processed (NOVA 3) and ultra-processed (NOVA 4). Cox proportional hazards models were used to estimate hazard ratios (HRs) and 95% confidence intervals (CIs) of breast cancer per standard deviation increase in daily consumption (grams) of foods from each NOVA group. The current analysis included 14,933 breast cancer cases, diagnosed among the 318,686 EPIC female participants, (median follow-up of 14.9 years). No associations were found between breast cancer risk and the level of dietary intake from NOVA 1 [HR per 1 SD=0.99 (95% CI 0.97 – 1.01)], NOVA 2 [HR per 1 SD =1.01 (95% CI 0.98 – 1.03)] and NOVA 4 [HR per 1 SD =1.01 (95% CI 0.99 – 1.03)] foods. However, a positive association was found between NOVA 3 and breast cancer risk [HR per 1 SD =1.05 (95% CI 1.03 – 1.07)] which became non-significant after adjustment for alcohol intake [HR per 1 SD =1.01 (95% CI 0.98 – 1.05)] or when beer and wine were excluded from this group [HR per 1 SD =0.99 (95% CI 0.97 – 1.01)]. The associations did not differ by breast cancer subtype, menopausal status or body mass index. Findings from this large-scale prospective study suggest that the positive association between processed food intake and breast cancer risk was likely driven by alcoholic beverage consumption. Abstract The incidence of diabetes mellitus, a pressing global health concern that is rapidly increasing, has prompted the exploration of medicinal plants for potential remedies, particularly those within the Rubus genus. This comprehensive review aims to connect traditional knowledge with scientific insights, shedding light on the antidiabetic properties of various Rubus species. An exhaustive exploration of the literature revealed that Rubus chingii Hu, Rubus idaeus, Rubus ulmifolius, Rubus fruticosus, Rubus amabilis, and some other Rubus species exhibited noteworthy antidiabetic effects, each operating via distinct mechanisms. Furthermore, Rubus species serve as abundant reservoirs of bioactive compounds, including flavonoids, phenolic acids, tannins, alkaloids, glycosides, antioxidants, triterpenoids, and sterols. As indicated by various in vivo and in vitro studies, these compounds notably improve insulin secretion, increase hepatic glycogen synthesis, inhibit key digestive enzymes, enhance the functions of β-cells in the pancreas, and effectively reduce blood glucose levels. This review, which describes the antidiabetic potential of Rubus species in terms of both pharmacological effects and traditional uses, offers valuable insights for future scientific initiatives in the development of innovative antidiabetic therapies. Abstract Background Most reviews of nutrition-sensitive programs assess the evidence base for nutrition outcomes without considering how programs were delivered. Process evaluations can fill this void by exploring how or why impacts were or were not achieved. This mid-term process evaluation examines a home garden intervention implemented in a large-scale, livelihoods improvement program in Odisha, India. The objectives are to understand whether the intervention was operating as planned (fidelity), investigate potential pathways to achieve greater impact, and provide insights to help design future home garden programs. Methodology Data collection and analysis for this theory-driven process evaluation are based on a program impact pathway that shows the flow of inputs, processes, outputs, outcomes, and impacts. Quantitative and qualitative data from focus group discussions, semi-structured interviews, and a Process Net-Mapping exercise with beneficiaries, frontline workers, and program management staff. Results Despite a mismatch between the design and implementation (low fidelity), the process evaluation identified positive outputs, outcomes, and impacts on home garden production, consumption, income, health and nutritional outcomes, and women’s empowerment. Flexibility led to greater positive outcomes on nutrition, the adoption of sustainable agricultural practices and easy-to-understand nutrition models, and the likelihood of the intervention being sustained after the program ends. Conclusions To help food systems in rural settings reduce food insecurity by utilizing more sustainable agricultural practices, we recommend that home garden interventions include instruction on easy-to-understand nutrition models and on how to make natural fertilizer. Finding local solutions like home gardens to help address critical supply issues and food insecurity is paramount.

Abstract Salt-fermented fish, a typical food in many regions of the world, was classified into three types depending on the processing method. It was divided into a process of fermenting by adding fish and salt only, a method of filtering it to form a fish sauce, and a method of lactic acid fermenting by adding additional carbohydrates. The free amino acids produced in large quantities through fermentation make salt-fermented fish a valuable protein source in regions where rice is the staple food. Furthermore, they also have significant amounts of omega-3 fatty acids (EPA and DHA), making them nutritionally excellent and functional, with antioxidant, antihypertensive, and fibrinolytic activities that benefit cardiovascular health. Some lactic acid bacteria (LAB) isolated from fermented fish products have beneficial effects on humans, including bacteriocin and probiotic effects. Looking to the future, the potential benefits of reducing naturally occurring biogenic amines and adjusting the salt content for storage stability could further enhance the health and taste benefits of salt-fermented fish, providing hope and optimism for the future of food preservation and nutrition.

Background: Obesity, gestational diabetes mellitus (GDM) and bariatric metabolic surgery (BMS) are increasingly common conditions during pregnancy. Summary: However, clinical knowledge regarding GDM that occurs after BMS remains full of uncertainties. Given its prevalence and potential consequences for the dyad pregnant and offspring, it is imperative to increase knowledge about GDM after BMS, define diagnostic criteria and consequently strategies capable of improving pregnancy outcomes. Key messages: This paper aims to review GDM screening methods after BMS and gives insights regarding new paths of research on this paramount obstetric condition.

However, recent studies have proposed that high salt diet (HSD) can both stimulate the immune system, affecting the differentiation of immune cells, promoting or inhibiting cytokine secretion to fight cancer or elicit a more potent autoimmune response, and exerting an immunosuppressive effect to influence disease development, providing mechanistic insights into the direction of immune regulation in which HSD affects disease.Objective: This paper reviews the immunomodulatory effects of HSD on various innate immune and adaptive cells, especially macrophages, dendritic cells, and T cells, in relation to disease development.Methods: We identified papers by electronically searching the Web of Science (WOS) database from inception through March 2023.Results: A growing number of animal experiments and in vitro cell culture studies have shown that HSD can regulate the differentiation and activation of a variety of immune cells, and promote or inhibit different cytokines to mediate the development of a variety of diseases, including nephropathy, hypertension, cancer, inflammatory bowel disease, and a number of autoimmune diseases. These findings provide a new mechanism for pathological changes in the direction of immune regulation and suggest that HSD is a predisposing factor for a variety of diseases, providing new mechanistic insights into dietary health modification.Conclusion: HSD mediates the development of multiple diseases by regulating the differentiation and activation of a variety of immune cells, and the underlying mechanisms may be related to gut microbes and their metabolites.Keywords: HSD, immune dysregulation, disease pathogenesis, mechanistic insights, review

Summary: Background and Aims: Unfavourable changes in body composition are frequently reported in children with cancer. An easy and affordable method to measure body composition is bioelectrical impedance analysis (BIA). In this study, we compared the Tanita MC780-MA Body Composition Analyzer (Tanita) versus the Bodystat Quadscan 4000 analyzer (Bodystat) to determine whether the Tanita is a suitable analyzer for pediatric oncology patients. Methods: In this study, 84 childhood cancer patients/survivors were included. Per patient 1, 2 or 3 visits were planned during or after treatment. During each visit, BIA measurements were performed first with the Tanita analyzer followed by the Bodystat analyzer. In total, 131 measurements were included. Spearman correlation and concordance correlation coefficients of Lin (CCC) were calculated for fat percentage (Fat%), fat mass (FM) and fat free mass (FFM). Summary: Background & aims: The prognostic nutritional index (PNI), calculated from the serum level of albumin (Alb) and total lymphocyte count (TLC), has been considered to effectively predict the outcomes of critically ill COVID-19 patients. However, since the establishment of COVID-19 treatment regimens, its effectiveness has become unclear. Therefore, we conducted a multicenter study to establish whether PNI is still valid as a prognostic indicator for these patients. Methods: We retrospectively examined the medical records of critically ill COVID-19 patients who required intubation and mechanical ventilatory management (MV) between July 2021 and March 2023. Results: Seventy patients (50 males, mean age 62.9 years) were included and PNI at the start of intensive care was 31.7, which was in the “critical range”. The results obtained showed that PNI was not a predictor of death, whereas the presence of chronic obstructive pulmonary disease (COPD) and a high SOFA score were identified as predictors. The presence of COPD and obesity were also predictive factors for the number of days of MV. Conclusions: Since the establishment of COVID-19 treatment regimens, PNI may not be an effective tool for predicting the risk of death or MV days in critically ill COVID-19 patients.

Summary: Aim: This study aimed to assess dental caries levels, as indicated by the Decay-Missing-Filled Teeth (DMFT) index, and identify risk factors and dietary behaviors associated with DMFT. Material and Methods: A cross-sectional study of 402 adults (aged 18–70) was conducted in 2022, involving individuals attending oral health outpatient centers selected through random sampling. Participants completed a validated nutrition questionnaire to assess dental caries risk factors, and DMFT index assessments were performed at dental centers. Descriptive statistics and multiple linear regression analysis were employed to determine the factors influencing the DMFT index. Results: The majority of the patients (40.3%) fell into the category of “High DMFT index” with a score of >13.9. The “very low DMFT index” group had the lowest percentage among the patients (11.90%). Higher education levels were associated with lower DMFT scores. Among oral health behaviors, frequent tooth brushing and mouthwash use showed the highest association with lower DMFT scores. Conversely, higher consumption of sugary evening snacks, sweetened drinks during evening meals, between-meal snacks, sweetened juice, energy drinks, and soft drinks correlated with higher DMFT scores. Conclusion: This study underscores a significant rise in dental caries risk among participants following the COVID-19 pandemic. The findings highlight the need for targeted interventions, education, and policies to address the increased risk of dental caries and promote oral health among adults.

Summary: Background & Aims: Chewing difficulties are associated with poor physical and mental well-being in elderly populations. Little is known about these relationships in other age groups. Pain and biopsychosocial domains of eating (physical – anatomical, physical – functional, sensory, cognitive, behavioural, social/cultural, and emotional), as defined by the Altered Eating Framework (AEF) (23) have also not been considered as influential factors when exploring the impact of chewing difficulty on well-being. This study aimed to a) investigate relationships between chewing difficulty, pain, AEF domains, and well-being, and b) explore pain as a potential mediator between chewing difficulty and well-being. Method: One-hundred and seventy-nine participants, aged 19–82 years (mean = 43.39 yrs, SD = 15.46 yrs) completed an online survey comprising 8 measures, including chewing difficulty, pain and health, altered eating, and well-being. Data were collected April to November 2023. Results: Chewing difficulty was a significant positive predictor of depression, anxiety, and stress. Pain positively predicted depression and partially mediated the relationship between chewing difficulty and depression. The emotional AEF domain positively predicted depression and stress. Conclusion: Chewing difficulty was associated with poor well-being across a wide age range, findings highlight the importance of considering the impact of pain when exploring such relationships. The emotional AEF domain was most strongly associated with poor well-being, suggesting a possible hierarchical relationship between AEF domains. Future work is needed using prospective designs, and to develop a validated altered eating scale to capture eating experiences and impacts on well-being in real-time.

Summary: Introduction: Metabolic dysfunction-associated fatty liver disease (MAFLD) is on rise, in parallel with the increase in obesity and other lifestyle factors. The systematization of nutritional care is an important tool for diagnosing and intervening appropriately in these cases. However, despite the numerous interventions for MAFLD, few studies explore the systematized approach of the Nutrition Care Process. Objective: To identify the diagnosis and interventions in the nutritional care of people with non-alcoholic hepatic steatosis disease. Method: Descriptive cross-sectional study, of adults with non-alcoholic hepatic steatosis disease who were treated at a specialized outpatient clinic in a public hospital in southern Brazil. Data was collected from February to August 2023, with sociodemographic and clinical data supporting the diagnoses and nutritional interventions. The data was analyzed descriptively by central tendency, simple and relative frequency. Results: 45 people took part, most of them elderly (78%) and obese (93%). The most frequent nutritional problem was excessive energy (62%) and carbohydrate (57%) intake. The main goals set were to reduce energy and simple carbohydrate intake and increase fiber. Conclusion: The most common nutritional diagnosis was Excessive Expected Energy Intake and the need for interventions to reduce energy intake, simple carbohydrates and increase fiber, and all patients required nutritional monitoring. The systematization proposed in the Nutrition Care process standardizes the identification of the diagnosis and appropriate nutritional intervention, making it possible to monitor and evaluate the management of results.

Background: Obesity is a risk factor for pancreatic cancer and negatively contributes to the immune system. However, the mechanisms by which obesity mediates these actions are still poorly understood. Recent studies have demonstrated that extracellular vesicles (EVs) are key mediators of communication between cells and may influence various aspects of cancer progression. Objectives: We aim to explore the influence of EVs derived from adipose tissue of obese mice on cytokine production within the interactions between cancer cells and immune cells. Design: We isolated EVs from the adipose tissue of both C57BL6/J mice and Ob/Ob mice. Subsequently, we treated EVs with Panc02 cells, the murine ductal pancreatic cancer cell line, which were co-cultured with splenocytes. Viability and SMAD4 gene expression were examined in Panc02 cells, and cytokine concentrations of IL-6, IL-4, IL-12, and IL-12p70 were measured in the cultured medium. Results: Interestingly, we observed a significant reduction in splenocyte-mediated Panc02 cell death when treated with EVs derived from the adipose tissue of Ob/Ob mice, compared to those from C57BL6/J mice. Additionally, EVs from Ob/Ob mice-derived adipose tissue significantly increased the levels of IL-4, IL-2, and IL-12p70 in the culture media of Panc02 cells co-cultured with splenocytes, compared to EVs from C57BL6/J mice-derived adipose tissue. Conclusion: Adipose tissue-derived EVs from obese mice suppressed splenocyte-mediated Panc02 cell death and upregulated IL-4, IL-2, and IL-12p70 in cultured medium.

Background: Nutri-Score is a front-of-pack label grading foods and beverages from A to E indicating nutritional quality based on the foods’ favorable and unfavorable components, and a contender in the ongoing debate on the possible implementation of a harmonized mandatory front-of-pack nutrition label in the European Union. NewTools is a research project on scoring systems for foods involving 28 partners representing actors involved in the Norwegian food system. Objective: This study aimed to explore views reported by Norwegian food system actors on the advantages and disadvantages with the updated Nutri-Score algorithms for food and beverages (2022–2023). This included Nutri-Score’s performance in ranking foods according to the national food-based dietary guidelines and to the nutritional challenges in Norway. Design: A total of 28 project partners and 15 other food system stakeholders following the NewTools-project were invited to provide responses on the Nutri-Score algorithms and their application on foods and beverages in the Norwegian food composition table. Thirteen written responses were received and analyzed with qualitative content analysis. Results: The responses to the updated Nutri-Score varied in content, reflecting mainly concerns. Examples of perceived concerns included excessive penalty of salt content; insufficient differentiation based on fat content in meat, sausages, cheese, and milk; and several unreasonable comparisons across food categories. They also expressed a concern that Nutri-Score may stimulate to increased food processing, and some reported inconsistencies between Nutri-Score’s classification of foods and national nutrition guidelines and policies. Discussion and conclusion: Several concerns with the updated Nutri-Score algorithms were raised, including the weighting of specific nutrients, unfair outcomes when comparing across food categories, and inconsistencies with established Norwegian nutrition guidelines and policies. The results should be interpreted with caution, as some perspectives from the Norwegian food system may be missing.

Introduction: Specialized lifestyle programs for patients undergoing metabolic-bariatric surgery (MBS) are provided to facilitate adjustment and adherence to a healthy lifestyle after surgery. However, pre-program food and health literacy in MBS patients are often unknown. In the general population, approximately three-quarters of people exhibit sufficient health literacy. This study aimed to examine food and health literacy of patients awaiting MBS and to identify patient specific factors associated with these literacies. Methods: Patients awaiting MBS completed questionnaires on food literacy (Self-Perceived Food Literacy scale) and health literacy (European Health Literacy Survey Questionnaire-16) at the start of a preoperative lifestyle program. Linear and logistic regression analyses were used to identify associations between multiple variables and preoperative food and health literacy. Results: Among 216 patients, the preoperative mean food literacy score was 3.49±0.44, on a five-point scale. Furthermore, 96.3% of patients showed sufficient health literacy, with scores of 13 or more out of 16. Abstract Introduction: Bariatric surgery has been shown to provide significant patient benefits in terms of weight loss and mitigation of obesity linked co-morbidities, as well as providing improvements in occupational productivity and patient quality of life. However, the choice of which bariatric surgery procedure provides the most patient benefit in each of these cases is still in question. In this study we provide a systematic review, with the objective of evaluating associations between different bariatric surgery procedures and mitigation of obesity linked co-morbidities, improvement in occupational productivity, and patient quality of life, concentrating on three areas: obstructive sleep apnoea (OSA), employment prospects and body image. Methods: The CINAHL, PubMed, Web of Science, and CENTRAL databases were searched for eligible studies. Summary risk ratio (RR) and 95% confidence intervals were estimated using random-effects models. Thirty-three studies were included in this review, including 29 cohort studies and 4 randomised clinical trials (RCTs). Results: Pooled analysis of the observational studies showed significantly lower OSA remission in sleeve gastrectomy (SG) compared to Roux-en-Y gastric bypass (RYGB) across both short-term (1-2 years) and longer-term (3+ years) follow-up periods, (RR=0.91, 95% CI = 0.84–0.99, p=0.02 and RR=0.88, 95% CI = 0.65–0.99, p=0.03 respectively). In contrast, a metanalysis of the RCT studies found no difference in OSA remission between SG and RYGB (RR=1.01, 95% CI = 0.81–1.25, p=0.93). Abstract This paper presents a comprehensive bibliometric review of the scientific literature on women’s entrepreneurship in agriculture across developed and developing countries. The paper delineates the evolving landscape, challenges, and opportunities that shape women’s entrepreneurship experiences in agriculture in the contexts of developed and developing countries. Through a detailed bibliometric analysis of 728 papers from 1992 to 2022, employing performance analysis and science mapping, our methodology distinguishes itself by quantifying contributions and mapping the thematic evolution within this domain. Our study reveals the significant contributions of women entrepreneurs to agricultural innovation, sustainability, and rural development while facing systemic biases, limited access to resources, and societal stereotypes that hinder their entrepreneurial path. The paper underscores the disparity in women’s entrepreneurship between developed and developing regions, with developed countries showcasing lower participation rates in agricultural entrepreneurship but a higher presence in decision-making roles within agribusinesses. In contrast, developing countries display a higher engagement of women in entrepreneurship, driven by necessity and marked by significant contributions to food security and economic stability, though under challenging conditions. Notably, the paper highlights the underrepresentation of women’s agricultural endeavours in scholarly research, pointing to a gap in the documentation and understanding of their contributions. The study reveals emerging themes such as digital agriculture, climate resilience, sustainability, and innovation, pointing towards future research directions that could further empower women in agriculture. It calls for more inclusive research and policy-making to recognise and support women’s vital role in agriculture, advocating for a holistic approach to address women entrepreneurs’ challenges in different economic contexts. Through this analysis, the paper contributes to a deeper understanding of gender dynamics in agricultural entrepreneurship and suggests pathways for fostering more equitable and sustainable agricultural practices.

Abstract Background Nuts consumption is related to cardioprotective effects on primary cardiovascular prevention, but studies conducted in secondary prevention are small, scarce and controversial. The objective of this trial was to evaluate the effects of a regional and sustainable cardioprotective diet added or not with an affordable mixed nuts on cardiometabolic features in patients with previous myocardial infarction. Methods DICA-NUTS study is a national, multi-center, and superiority-parallel randomized clinical trial. Males and females over 40 years old diagnosed with previous myocardial infarction in the last 2 to 6 months were included. Patients were allocated into two groups: the Brazilian Cardioprotective diet (DICA Br) supplemented with 30 g/day of mixed nuts (10 g of peanuts; 10 g of cashew; 10 g of Brazil nuts) (intervention group, n = 193); or only DICA Br prescription (control group, n = 195). The primary outcome was low-density lipoprotein cholesterol means (in mg/dL) after 16 weeks. Secondary outcomes were other lipid biomarkers, glycemic and anthropometric data and diet quality. Results After adjustment for baseline values, participating study site, time since myocardial infarction and statin treatment regimen (high potency, moderate and low potency/no statins), no significant difference was found between the groups in low-density lipoprotein cholesterol concentrations (intervention-control difference: 3.48 mg/dL [-3.45 to 10.41], P = 0.32). Both groups improved their overall diet quality at the end of the study without differences between them after 16 weeks (intervention-control difference: 1.05 (-0.9 to 2.99); P = 0.29). Other lipids, glycemic profile and anthropometrics were also not different between study groups at the end of the study. Conclusion Adding 30 g/day of mixed nuts to the DICA Br for 16 weeks did not change lipid, glycemic and anthropometric features in the post-myocardial infarction setting. Abstract Background The EAT-Lancet diet is a diet aimed at promoting population and planetary health from the perspective of sustainable diets in terms of environmental and health aspects. This study aimed to assess the association between adherence to the EAT-Lancet diet and cardiometabolic risk factors among adults and elderly individuals in a capital city in the northeastern region of Brazil. Methods This is an analytical cross-sectional observational study from a population-based sample conducted between 2019 and 2020, involving 398 non-institutionalized adults and elderly people, of both sexes from “Brazilian Usual Consumption Assessment” study (Brazuca-Natal). There was a 38% response rate due to the suspension of data collection due to the covid-19 pandemic, but According to the comparative analysis of socioeconomic and demographic variables between the surveyed and non-surveyed sectors, losses were found to be random (p = 0.135, Little’s MCAR test). Socioeconomic and lifestyle data, anthropometric measurements, and dietary consumption were collected. We used the Planetary Health Diet Index (PHDI) and the Cardiovascular Health Diet Index (CHDI) for cardiovascular health to assess adherence to the diet’s sustainability. The evaluated cardiometabolic parameters included fasting blood glucose, triglycerides, total cholesterol, HDL-C, LDL-C, and systolic and diastolic blood pressure measurements. We also assessed the presence of type 2 diabetes mellitus, arterial hypertension, and dyslipidemia. For the data analyses, sample weights and the effect of the study design were taken into account. Pearson’s chi-square test was used to evaluate the statistical significance of frequencies. Multiple linear regression models assessed the associations between PHDI and CHDI and its components and the cardiometabolic parameters. Results The mean PHDI was 29.4 (95% CI 28.04:30.81), on a total score ranging from 0 to 150 points and the mean CHDI was 32.63 (95% CI 31.50:33.78), on a total score ranging from 0 to 110 points. Abstract Background The sustainability of diets consumed by African populations under socio-economic transition remains to be determined. This study developed and characterized a multi-dimensional Sustainable Diet Index (SDI) reflecting healthfulness, climate-friendliness, sociocultural benefits, and financial affordability using individual-level data of adults in rural and urban Ghana and Ghanaian migrants in Europe to identify the role of living environment in dietary sustainability. Methods We used cross-sectional data from the multi-centre Research on Obesity and Diabetes among African Migrants Study (N = 3169; age range: 25–70 years). For the SDI construct (0–16 score points), we used the Diet Quality Index-International, food-related greenhouse gas emission, the ratio of natural to processed foods, and the proportion of food expenditure from income. In linear regression analyses, we estimated the adjusted ß-coefficients and 95% confidence intervals (CIs) for the differences in mean SDI across study sites (using rural Ghana as a reference), accounting for sociodemographic and lifestyle factors. Results The overall mean SDI was 8.0 (95% CI: 7.9, 8.1). Participants in the highest SDI-quintile compared to lower quintiles were older, more often women, non-smokers, and alcohol abstainers. The highest mean SDI was seen in London (9.1; 95% CI: 8.9, 9.3), followed by rural Ghana (8.2; 95% CI: 8.0, 8.3), Amsterdam (7.9; 95% CI: 7.7, 8.1), Berlin (7.8; 95% CI: 7.6, 8.0), and urban Ghana (7.7; 95% CI: 7.5, 7.8). Compared to rural Ghana, the differences between study sites were attenuated after accounting for age, gender and energy intake. No further changes were observed after adjustment for lifestyle factors. Conclusion The multi-dimensional SDI describes four dimensions of dietary sustainability in this Ghanaian population. Our findings suggest that living in Europe improved dietary sustainability, but the opposite seems true for urbanization in Ghana.

Abstract Background Type 2 diabetes mellitus (T2DM) is a chronic condition characterized by insulin resistance and impaired insulin production, leading to elevated blood glucose levels. Curcumin, a polyphenolic compound from Curcuma longa, has shown potential in improving insulin sensitivity and reducing blood glucose levels, which may help mitigate type 2 diabetes progression. Objective To assess the efficacy of improving type 2 diabetes (T2DM). Study design This randomized, double-blind, placebo-controlled trial included subjects (n = 272) with criteria for type 2 diabetes. Methods All subjects were randomly assigned to receive curcumin (1500 mg/day) or placebo with blind labels for 12 months. To assess the improvement of T2DM after curcumin treatments body weight and body mass index, fasting plasma glucose, glycosylated hemoglobin A1c, β-cell function (homeostasis model assessment [HOMA-β]), insulin resistance (HOMA-IR), insulin, adiponectin, and leptin were monitored at the baseline and at 3-, 6-, 9-, and 12-month visits during the course of intervention. Abstract Background and aims This study aimed to examine the cumulative effects of body mass index (BMI), body roundness index (BRI), pulse pressure (PP), triglycerides (TG), high-density lipoprotein cholesterol (HDL) and fasting plasma glucose (FPG) on Type 2 diabetes (T2D) morbidity. Methods A total of 78,456 participants aged older than 45 years were extracted from basic public health services in China. During the 2-year follow-up, 6,942 individuals had developed T2D. The binary logistic regression models and multinomial logistic regression models were conducted to investigate the effects of cumulative metabolic parameters on incident T2D, prediabetes regression and progression. Results We found statistically deleterious impacts of exposure to high cumulative BMI, BRI, PP, TG and low cumulative HDL on T2D morbidity and prediabetes progression. Compared to the group with low cumulative of all five parameters, the adjusted ORs for new-onset T2D for participants presenting with 1–2, 3, and 4–5 elevated metabolic parameters were 1.41(1.31,1.52), 1.93(1.74,2.13) and 2.21(1.94,2.51), respectively. There was additive interaction between FPG level and cumulative metabolic parameters with T2D. Compared with participants with the lowest quartile of FPG and low cumulative of all 5 parameters, those with the highest quartile of FPG and high cumulative of 4–5 parameters had a 14.63 [95% CI (12.27, 17.42)] higher risk of incident T2D. Conclusions Participants with more numbers of high-cumulative metabolic parameters were associated with a higher risk of incident T2D and prediabetes progression. A high level of normal FPG could enhance these risks.

Abstract Background Dietary patterns play a crucial role in the development and management of metabolic syndrome (MetS). The Healthy Beverage Index (HBI) is a novel tool that assesses the quality of beverage choices in the diet and provides insights into their potential impact on metabolic health. The aim of this study was to investigate the association between the HBI and the MetS. Methods This cross-sectional study was conducted using data collected at baseline from the Ravansar Noncommunicable Disease Cohort Study. A total of 9,025 participants aged 35 to 65 years were included in the analysis. HBI was calculated using food items from the Food Frequency Questionnaire (FFQ). MetS status was defined according to established criteria, and logistic regression analysis was performed to assess the association between HBI scores and MetS, adjusting for potential confounding variables. Results In our study, 41.13% of the population was found to have MetS, with a significant association between MetS and tertiles of HBI. Furthermore, the logistic regression model showed a significant inverse association between HBI scores and the odds of developing a MetS (OR = 0.90; 95% CI: 0.86, 0.94), even after adjusting for confounding factors, emphasizing the potential protective effect of higher HBI scores. Conclusion Increased HBI scores were associated with lower risk of MetS, emphasizing the importance of choosing health-promoting beverages in controlling MetS. These findings support the association between dietary habits and metabolic health and provide practical guidance for individuals and public health initiatives aimed at improving metabolic outcomes.

Abstract The compounds and properties of açai pulp and Spirulina biomass may suggest complementary and synergistic potential when combined. The aim of this work was to develop sucrose-free and dye-free gummy candies enriched with mixtures of freeze-dried açai pulp (FDAP) and Spirulina biomass. Four formulations were prepared: F1, 3% FDAP and 1% Spirulina; F2, 1% FDAP and 3% Spirulina; F3, 2% FDAP and 2% Spirulina and C, 0% FDAP and 0% Spirulina. The nutritional and functional contents, texture properties, color parameters and sensory characteristics of the gummy candies were assessed. Protein extractability from Macrotermes nigeriensis and its functional properties were investigated under various conditions of pH (2–10) and salt concentration (0.1–1.0 M). Extracted proteins were precipitated through pH adjustment and micellization, respectively. Results showed that maximum protein extractability was 68% and 62.1% at 0.5 M salt concentration and pH10.0, respectively. Salt-extracted protein-rich fraction (SP) had the highest protein composition (68.68 ± 0.41 g/100 g), seconded by alkaline-extracted protein-rich fraction (AP) (62.91 ± 0.53 g/100 g), compared with the raw and defatted fraction (34.36 ± 0.44 and 42.12 ± 0.15 g/100 g), respectively. The highest emulsion capacity (49%) and emulsion stability (35%) were recorded in alkaline pH 10.0. In comparison, the highest foaming capacity (24%) and foaming stability (16%) were recorded in the salt-extracted fraction at 6%. This information could be useful for further studies on the food application potential of proteins isolated from edible M. nigeriensis. Graphical Abstract

Recent developments in seaweed bioactive compounds improved food packaging quality and functional properties and increased food production innovations and sustainability. Seaweed compounds are a good source of gelling, thickening, and emulsifying agents in food industrial products. Further Green Extraction methods are used for the extraction of bioactive compounds, these methods are environment friendly, with less time and high-yield production. Seaweeds incorporate antioxidants that reduce lipid oxidation, thus enhancing food's durability and nutritional value and reducing free radicals' occurrence and retard the growth of bacteria. Seaweed has increased its potential for antimicrobial packaging solutions. The manuscript explores the perspective for advancing seaweed-based films, involving property improvements, increased shelf life, and production scalability. Abstract The COVID-19 epidemic has made a serious threat to the world. It had a terrible effect on human physical and mental health resulting in massive death, hospitalization, etc. All societies and industries were extremely involved during the COVID-19 pandemic as well including the food industry. In other words, the COVID-19 pandemic has impacted the functioning of food systems globally. All over the world, food businesses have been disturbed by the isolation, strict lockdowns, suspension of nearly all activities, and other protectionist practices have been taken to restrain coronavirus spread. The issue of COVID-19 is significant in various research fields as it presents both opportunities and important challenges. This review article deals with the limitations that the pandemic causes for food systems, food insecurity, food waste and loss, consumers’ different demands, and food quality and safety. Also, this paper brings up some opportunities created during the pandemic time like creative food packaging, the adaptation of food technology, enhancing functional food production, and enhancing food resilience.

Abstract Since the outbreak of the COVID-19 pandemic in 2020, tens of thousands of scientific articles have been published. Researchers are enthusiastic to uncover the effects of COVID-19. This study aims to critically assess the methods researchers used to analyze the impact of COVID-19 on food security. The PRISMA and Bibliometric Methods were utilized in this study. The results of the PRISMA indicate that most researchers utilize quantitative methods, 61%, compared to 32% for qualitative and 7% for mixed methods. These findings provide important data. Firstly, researchers continue relying on quantitative methods (multiple linear regression and Chi-square). Secondly, 32% of the articles utilized qualitative and only two qualitative methods, phenomenological and case studies, have been identified. No researchers use grounded theory research (GTR) and ethnographic studies (SE). Thirdly, using mixed method among COVID-19 researchers is uncommon; only 3% of researchers employed it. Next, the results of the bibliometric reveal that the USA and China contribute the most to the publication on the impact of COVID-19 on food security. A review of research publications on the impact of COVID-19 on food security shows an alarming increase in food loss and waste due to excessive household food purchases. This trend has the potential to endanger food availability in the future. Recommendations to the government include offering incentives to reduce food loss and waste, improving supply chain coordination, training, and technical breakthroughs and innovations, especially for small-scale farmers. The government should support food banks and farmers' markets to shorten the value chain and connect farmers with consumers.

Abstract Fresh onions are dehydrated to increase their shelf-life. Primarily, open dehydration techniques like solar dehydration come with the problem of contamination through natural air convection. A solar conduction dryer that uses conduction, convection, and radiation for dehydration of food samples is exploited in this study. The food samples are often contaminated by Bacillus and Aspergillus species spores. As a remedy, pulsed light treatment as a non-thermal technology and infrared treatment as a thermal technology are studied and compared. Bacillus cereus and Aspergillus niger spores are chosen as a representative of bacterial and fungal contamination in onions. Dehydrated onion shreds with varying water activities (0.4, 0.5, 0.6) were treated. The spore inactivation was best described by Weibull model as compared with first-order model. Scanning electron microscopy images of the microbial cells showed surface distortions on the bacterial and fungal spores. The effect of the treatment technologies on the colour, flavour (thiosulphinate and pyruvic acid concentration), total phenolic and flavonoid content, and ascorbic acid concentration are compared. Overall, pulsed light treatment showed promising inactivation with a maximum log reduction of 4.5 log B. cereus spores·g−1 and 3.1 log A. niger spores·g−1 at 2.131 J·cm−2 in samples with water activity 0.6. The inactivation rate increased with an increase in water activity. The colour was better retained in pulsed light treated samples. The thiosulphinate content (9.24 μmol·g−1), total phenolics (0.268 mg GAE·g−1), and flavonoid content (0.344 mg QE·g−1) in the sample were improved upon pulsed light exposure. Graphical Abstract

Abstract Application of agricultural by-products in the functional food and beverage industry is currently gaining prominence. Banana (Musa spp) is a popular tropical fruit with global production of 124.97 million tonnes. The banana production industry contributes to large amount of solid waste/ banana by-products, such as, pseudostem and inflorescence. Palayankodan (Musa × paradisiaca Mysore AAB group), Nendran (Musa × paradisiaca AAB group) and Njalipoovan (Musa × paradisiaca AB group) are three popular and common cultivars in Kerala, a state in South India. The present study was aimed to extract the potential bioactive compounds from the pseudostem and inflorescence of the above-mentioned cultivars and to standardise the process of microencapsulation using spray drying. Ultrasonication assisted extraction using ethanol as solvent was carried out. The extract and wall material parameters were standardised for microencapsulation. The encapsulated powders were analysed for encapsulation yield, retention efficiency, physical properties, phytochemical composition, antioxidant potential and anti-diabetic activity. The encapsulation yields and retention efficiencies of the encapsulated powders were found to be approximately 75 and 70.51%, respectively. Results revealed that the powders exhibited lower bulk density, good solubility and reconstitutability. Scanning electron microscopy was also conducted to reveal the particle morphology. All the powders exhibited smooth, spherical shape, with no pores. The phenolic and flavonoid contents of the encapsulated pseudostem and inflorescence extract powders ranged from 2.75 to 3.13 mg GAE/ g of powder and 34.83 to 46.67 mg QE/g of powder, respectively. The present study also reported the in vitro bioactive properties, in terms of antioxidant and anti-diabetic activities of the encapsulated powders. The HPLC analysis of the microencapsulated powders revealed the presence of gallic acid, protocatechuic acid, trans cinnamic acid, trans ferulic acid, epicatechin and syringic acid. It is clear from the study that the encapsulated powders from banana by-products have a great potential to be utilised by the functional food industry. Graphical Abstract

Abstract The use of enzymes in the production of food products is an ancient practice. Microbes provide several enzymes that are involved in improving the taste, texture, as well as aroma of food items, offering several benefits to the food industry. Subsequently, the ease of availability of these microbial enzymes has increased their utilization in the food industry. This cost-effectiveness and ease of commercial-scale production make enzymes ideal tools for various industrial uses. Microbial enzymes are utilized in processing food products such as those associated with the brewery, dairy and bakery industries. In addition, the nutritional value, color, aroma and texture of food products can be improved by using microbial enzymes. With the progress in technology, several novel enzymes in various applications of the food and beverages industry have been developed and demand is constantly increasing. The present review provides a comparative narrative of the applications of some of the predominating enzymes, such as phytases, lipases, lactases, pectinases, and laccases, commonly used as processing aids in the food industry. Abstract The present study aimed to extend refrigerated stability of locally grown avocado fruit by applying High Hydrostatic Pressure (HHP) treatment. HHP was applied at 600 MPa for 3 min to avocado puree and stored at 4 °C for 28 days. Physicochemical (colour CIE L*, a*, b*, total oil amount, chlorophyll, pH, moisture) and microbiological (mesophilic, yeast-mould) analyses were performed at seven-day intervals on both control (untreated) and HHP-treated sample packs. It could be judged that HHP treatment effectively controlled the colour indices, preventing undesired changes during the cold storage period of avocado puree. In conclusion, this study demonstrated that HHP-processed avocado puree exhibited stability for 28 days compared to unprocessed puree at 4 °C. The shelf-life stability of avocado puree under chilled conditions was extended from 7 to 28 days. Graphical Abstract

Abstract Food contamination by Escherichia coli (E. coli) is an increasing public health concern. Screening for natural plant preservatives has received increasing attention. In this study, dandelion flower phenolic extract (DFPE), with the strongest bacterial inhibition and the highest polyphenol level from various organs, was identified using HPLC and FTIR. The results showed a significant increase in extracellular ATP levels due to cellular membrane leakage in E. coli and decreased Na+-K+ ATPase activity. These behaviors were caused by representative phenolic compounds such as caffeic acid in DFPE. Molecular docking simulations were performed to reveal the mechanism of interaction between caffeic acid and Na+-K+ ATPase. This indicated that conventional hydrogen bonds, pi-anions, and pi-alkyl were involved in the interaction between them. Molecular dynamic equilibrium of the liganded ATPase complex was achieved after 20 ns. The lower values of Rg and SASA demonstrated that the liganded ATPase structure changed from a relatively loose to a tight state in the presence of caffeic acid. Overall, these findings are meaningful for screening bioactive compounds from various food-derived plant tissues using a combination of practical experimentation and molecular simulations. Abstract Sustainable food provision for a continuously growing human population is one of the major challenges for the next decades. Cultured meat represents one of the alternatives which is currently extensively explored. Yet, the most appropriate cell type, capable of long-term proliferation and myogenic differentiation, remains to be identified. Bovine mesenchymal stromal cells (MSCs) are considered as a promising cell source. Within the context of cultured meat production, it is mandatory to maximize cell yield per tissue source. Although many enzymatic methods to isolate MSCs from adipose tissue (AT) have been described, cell yield has never been compared. In this study, we evaluate 32 isolation conditions including four enzyme mixtures (Collagenase type I, Collagenase type I + Trypsin, LiberaseTM and Collagenase type IV) at varying concentrations and incubation times, regarding their efficiency to isolate MSCs from bovine subcutaneous AT. The highest cell yield in combination with a low population doubling time was obtained using LiberaseTM at a concentration of 0.1% for 3 h. MSC identity of the cells was confirmed by tri-lineage differentiation potential and cell surface marker expression. Subsequently, isolated cells were myogenically differentiated using 5-aza-2’-deoxycytidine and galectin-1. mRNA levels of the myogenic regulatory factors (MRF) myogenic factor 5 (MYF5), myogenic differentiation 1 (MYOD1), MYF6, and myogenin (MYOG) were increased, while less paired box 3 (PAX3) mRNA expression was observed when compared to undifferentiated MSCs. The presence of desmin (DES), tropomyosin (TM), and myosin heavy chain (MyHC) in myogenically differentiated bovine AT-MSCs was confirmed using immunofluorescence stainings. When considering MSCs from bovine AT as potential cell source to produce cultured meat, it is recommended to use 0.1% LiberaseTM for 3 h to ensure a high cell yield.
