Pigmented rice has attracted major attention because of its higher levels of bioactive compounds and its higher concentration of micro- and macronutrients, compared with white rice. Pigmented rice cultivars are found in various colors i.e. black, purple, red, and brown. Pigmented rice contains good amounts of vitamins, minerals, fiber, and different phytochemicals with beneficial health effects. Pigmented rice is abundant in phenols, flavonoids, and antioxidant compounds. In comparison with white rice varieties, colored rice contains higher levels of polyphenols. Starch is the main component of rice grain, and it accounts for about 72–82% of brown rice and 90% of milled rice. Native starches have many drawbacks; to improve these properties, starch is generally modified using different physical, chemical, and enzymatic treatments. Functional properties are the basic physicochemical properties of flours, which have a complex relationship between different components of grains. Pigmented rice has desirable functional properties, which are essential for product formulations. Pigmented rice has been reported to have several health benefits including preventing hypertension, gluten-related disorders, and heart diseases; as well as having anti-diabetic potential, antioxidant properties, anti-inflammatory activity, and anti-cancer activity. This chapter will highlight the opportunities for developing novel health supplements from pigmented rice flours. Biotechnology is used in various crops, including rice, to improve its desirable properties. In this chapter, we will provide an overview of the nutritional composition, bioactive characteristics, functional properties and health benefits of pigmented rice.

Purpose The purpose of this paper is to highlight the biological activities of low-calorie natural sweetener, i.e. monk fruit (Siraitia grosvenorii), which are associated with its bioactive constituents. Design/methodology/approach Recent investigations focused on biochemical characterization and nutraceutical potential of monk fruit (traditional Chinese perennial vine) have been critically reviewed. Also, the safety and influence of monk fruit on organoleptic characteristics of prepared food products have been documented. Findings Biochemistry of monk fruit revealed that mogrosides are the principal compounds responsible for the high-intensity sweetness in the monk fruit. The fruit induces several biological activities including anti-oxidative effect, hypoglycemic response, anti-allergic properties, anti-carcinogenic and anti-tissue damage activities. Attributing to great potential as a bio-functional sweetener in food products, monk fruit extract has been approved as Generally Regarded as Safe. Originality/value This paper highlights the biological potential of monk fruit opening the doors to future investigations for its utilization in products of commercial importance including food and pharmaceutical preparations.

Background: In India, Anaemia among children is still one of the major nutritional problems of public health concern. Aim of the Study: The aim of the present study was to assess the prevalence of anaemia among Anganwadi children (3-6 years of age) and to determine the important risk factors associated with anaemia. Study Design: Cross-sectional study. Place and Duration of Study: Study was conducted among 390 Anganwadi children of Udham Singh Nagar district of Uttarakhand, during April, 2019- August, 2019. Methodology: In this cross sectional study, data on socio-demographic, socioeconomic, hygiene and dietary practices were collected using a self-structured questionnaire. Hemoglobin (Hb) and anthropometric measurements were carried out. Multivariable logistic regression analysis was employed to estimate the adjusted odds ratio (AOR). Results: A majority, 70.54% of the Anganwadi children were found to be anaemic, with higher prevalence among male children (51.30%) as compared to female children (48.70%). The mean hemoglobin concentration of children was 9.91 (±1.9 g/dl). Stunting was higher among males (54.83%) as compared to females (45.17%).Multivariable logistic regression analysis showed that anaemia was significantly associated with monthly income of family AOR (95% CI) 3.25(2.49, 4.00), mother's illiteracy AOR (95% CI) 1.98 (1.49, 2.46), history of anaemia in mother AOR (95% CI) 1.60(0.67, 2.52 ), history of worms in child's stool AOR (95% CI) 3.17(2.26,4.03), barefoot walking AOR (95% CI) 3.08(2.11,4.04) and lack of habit of hand washing AOR (95% CI) 1.55(0.98, 2.11). Conclusion: The prevalence of anaemia among children was high. Iron supplementation, nutrition education among mothers and overall personal hygiene are important to ameliorate their iron status.

This study was undertaken to analyze the dietary pattern and nutritional status of preschool children and to check the association between diet and socio-demographic factors. Dietary Pattern of 390 preschool children from Udham Singh Nagar district of Uttarakhand state of India was assessed. 24-Hour dietary recall and food frequency questionnaire (FFQ) was used for collecting information regarding dietary intake for three consecutive days. Nutritional indices (weight for age, height for age, weight for height, and BMI for age Z score) were studied using WHO Anthro software. Results indicated that the nutrient intake was inadequate, with major children consuming less than 60% of the recommended intake. We present an unusual case of double-orifice mitral valve with mitral regurgitation in a middle-aged man associated with the atrial septal defect, highlighting the role of three-dimensional transesophageal echocardiography.

Citrus fruits are well known for their medicinal and therapeutic potential due to the presence of immense bioactive components. With the enormous consumption of citrus juice, citrus processing industries are focused on the production of juice but at the same time, a large amount of waste is produced mainly in the form of peel, seeds, pomace, and wastewater. This waste left after processing leads to environmental pollution and health-related hazards. However, it could be exploited for the recovery of essential oils, pectin, nutraceuticals, macro and micronutrients, ethanol, and biofuel generation. In view of the importance and health benefits of bioactive compounds found in citrus waste, the present review summarizes the recent work done on the citrus fruit waste valorization for recovery of value-added compounds leading to zero wastage. Therefore, instead of calling it waste, these could be a good resource of significant valuable components, in this way encouraging the zero-waste theory.

Aims: To determine the bioactive components and total antioxidant capacity (TAC) in selected underutilized crops of the Himalayan region viz. Barnyard millet, Grain amaranth, Rice bean, Black soybean and Horsegram. Study Design: Experimental design (Lab experiment). Place and Duration of Study: Department of Foods and Nutrition, College of Home Science, G. B. Pant University of Agriculture and Technology, Pantnagar, Uttarakhand, in the year 2016-18. Methodology: We applied different processing techniques (covered pan cooking and pressure cooking) in the underutilized crops and analyzed the total phenol, total flavonoids and total antioxidant capacity (Ferric reducing antioxidant power (FRAP) assay and (2, 2-Diphenyl-1-picrylhydrazyl) (DPPH) by using standard methods. Results: It was found that black soybean had highest phenolic content after both thermal treatments (3233.76 mg GAE/100 g for pan cooked and 1883.11 mg GAE/100 g for pressure cooked samples) and TAC by both FRAP (6423.76 mg TE/100 g for pan-cooked and 4415.58 mg TE/100 g for pressure cooked) and DPPH (536.41 and 453.98 mg TE/100g for pan and pressure cooked samples, respectively) method. Among raw samples, rice bean contained the highest flavonoid content and TAC by FRAP assay. In contrast, raw grain Amaranth showed the lowest phenolic content. Further, pressure cooking was found to be better for barnyard millet, while in pulses, pan cooking yielded the best results (in terms of increased value/lower losses). Conclusion: It can be concluded that among pulses pan cooked black soybean was found to have a good store of bioactive compounds as compared to rice bean and horse gram. The pressure cooking method was found to be suitable for millet like a barnyard.

The aim of the present study was to formulate low cost ready to serve whey based health drink enriched with five ingredients namely, Milk Whey(65%), Buransh ( Rhododendron arboretum ) juice(10%), Honey (25%),Green Tea Extract (Guardian natural extracts-GUARDIAN®) (0.5%), Probiotic culture (Howard HOWARU® Bifido)(2%). The methodology for preparing the RTS beverage comprised of preparing whey, then mixing with Rhododendron (Buransh) extract/juice, honey and green tea extract and pasteurizing the prepared RTS beverage.This step was followed by immediate incorporation of probiotics into the RTS, bottling, capping incubation, and storage under refrigerated conditions. The results of chemical analysis showed that the RTS beverage contains 115.580 calories, 1.28 g protein, 27.75 g carbohydrate, 0.28 g of total fat and 147.44 g calcium per 100 ml. In addition it has a Total Phenolic content of 0.00914 GAE/100g, Flavonoid content of 0.000138mg/100g and DPPH activity of 299.91 mg T E/100g. The RTS beverage has a TSS of 36.6° Brix, pH 0f 4.65, titrable acidity of 5.4g/l and had insignificant microbial growth on dayone. Sensory evaluation of the product revealed that its organoleptic acceptability increased from 43.33% on the first day to 60% on the 7 th day. Antioxidants from Buransh ( Rhododendron arboretum ) and green tea extract add to the therapeutic value of the RTS Beverage, helping the body to fight against oxidative stress, thereby strengthening the immune system. Unlike white sugar, honey added the benefit of providing antioxidants and a variety of nutrients. The RTS beverage has a shelf-life of 30 days under refrigerated conditions.

The present study aims to optimize the process variables for development of ready-to-eat (RTE) iron-rich extruded snacks from locally available food grains (barnyard millet, defatted soy flour, amla (Indian gooseberry) and rice flour). Experiments were carried out using Box-Behnken design with three independent parameters viz, blend ratio (barnyard: defatted soy flour), barrel temperature (°C), and amla (g/100 g of the total flour) and six responses viz. bulk density (BD), crispiness (CR), the color difference (ΔE), iron, ascorbic acid and protein content. High Doppler valve gradient is generally suggestive of valve thrombosis. However, it should be corroborated with the finding of restricted leaflet movement to confirm the diagnosis. In the present case, abnormally high gradient was not associated with limited leaflet movements or any valve thrombus.

The cross sectional community based study was conducted to assess the prevalence of Polycystic Ovarian Syndrome (PCOS) and its associated factors among college going girls (20-30 years) residing in hostels of U.S. Nagar district of Northern India. The data on 250 subjects was obtained using self-designed pre-tested questionnaires during March to June 2018. Information was collected on menstrual and clinical history, dietary history, physical activity parameters and general information of subjects. The data was presented in percentages; chi square analysis, correlation analysis and rate ratio was also used to analyze the association between dependent and independent variables. The results showed that the prevalence of PCOS was 6% as evaluated by clinical diagnostic tool used in the questionnaire. A total of 18.4% subjects reported variable or long menstrual cycles, 6% subjects reported less than 9 menses annually and 7.2% subjects reported irregular menses with weight gain. A significant association was found between PCOS and high body mass index values and sedentary physical activity level. It was found that overweight and obese subjects have seven times higher risk of developing PCOS as compared to underweight and normal individuals. Also subjects with sedentary physical activity level have eight times higher risk of developing PCOS as compared to their counterparts with moderate physical activity. No strong association was found between PCOS and fast food consumption. The study concluded that body mass index and physical activity level of subjects were associated with poly cystic ovary syndrome (PCOS) using rate ratio as a tool. The study results indicate the need to conduct large study on PCOS in India.
