Buckwheat is one of the potential food ingredients for the functional food industry. A growing trend for consumer demand highlights the need for the development of composite flour-based bakery products like cookies and cakes. The aim of this study was to analysis the nutrient composition, and microbiological safety examination of buckwheat fortified cakes (BFC), as well as comparative evaluation with locally available branded cakes (LBC). BFC was prepared with the incorporation of 10, 20, 30, and 40% buckwheat flour in wheat flour to measure the quality and acceptability of cakes. Aim This study aimed to investigate the nutrient contents and the anti-hyperglycemic effect of the immature endosperm of sugar palm (IESP) (Borassus flabellifer L.) fruit on type-2 diabetes mellitus (T2DM) patients. Methods This is a short type case study where patients (n = 30) with T2DM were randomly selected and fed IESP (100 mL) twice a day after a regular meal and continued this experiment up to 4th weeks. Result The mean fasting blood glucose (FBG) level was markedly reduced from 1st week (15.74 mmol/L) to 4th week (10.53 mmol/L) among the patients who had normal body mass index (18.5–24.9). Only 16.67% diabetic patients had irregular FBG levels where 10% were in the previous stages after finishing the experimental period, and exceptionally in the case of 6.67% diabetic patients, this therapeutic juice was unsuccessful because of their irregular intake of insulin. The IESP was more effective on female (p ≤ 0.001) patients than males (p ≤ 0.05). Conclusion The IESP could be considered as anti-hyperglycemic fruit, and this might be due to its nutrient contents, especially phytochemicals, fiber, sodium, potassium, copper, and zinc.

This study was designed to develop noodles fortified with mushrooms at different levels and nutritionally compared with locally available branded noodles in Bangladesh. Sensory evaluation and proximate nutrient analysis were done by standard method. On the sensory point of view, noodles prepared with 5% mushroom powder was better than 0%, 8%, and 10% mushroom fortified noodles and also had a good taste without odd flavors. Mustard oil is popular edible oil in Bangladesh. It contains about more than fifty percent erucic acid which is toxic to human beings. This study evaluated the determination of biochemical properties (acid value, iodine value, saponification value and unsaponifiable matter %) of mustard oil, virgin coconut and sesame oil and toxicity determination of these oils through blood indices targeting of these oil by mixing with normal diet as a dietary supplementation. This study found acid value of mustard, sesame and virgin coconut oil was 0.92, 0.312, 0.52 respectively. Iodine value of mustard, sesame and virgin coconut oil were 110.2, 105.2, and 11 respectively. Saponification value of wild mustard, sesame and virgin coconut oil was 171.1, 187.2 and 240 respectively and unsaponifiable matter % of mustard, sesame and virgin coconut oil was 1.19, 0.31 and 0.92 respectively. Background Nutrition is an important predictor of an athlete's performance. It is more important for particularly those athletes who are in the growing stage (adolescents). This study aimed to assess their current level of knowledge, attitude, and practices (KAP) of nutrition and to predict potential factors impacting their level of these KAP. Methods A cross-sectional study was conducted among adolescent trainee athletes selected conveniently from 11 sports departments (e.g. cricket, football, hockey, etc.) of Bangladesh Krira Shikkha Protishtan (BKSP). A semi-structured interviewer-administered questionnaire was used for data collection. Anthropometric measurements (e.g. height, weight, BMI, BF %) were taken using appropriate methods. The data were analyzed using R (v3.6.1) and Python Jupyter Notebook. Descriptive statistics, t-test, analysis of variance (ANOVA), and logistic regression were used to determine the relationship between dependent and independent variables. Results A total number of 260 participants were enrolled in this study, most of them (86%) were male. Their mean age was 15.50 ± 1.83 ranging from 12-19 years. More than half of the participants had good nutrition knowledge (n = 149, 57.3%). Fifty-seven percent of participants had a positive attitude (n = 146) and 57.69% (n = 150) had a good level of practices regarding nutrition. Age (p = 0.007), gender (p = 0.004), department of training (p = 0.0034), and duration of sports training (p = 0.004) of participants were significantly associated with knowledge, while only age and BMI were significantly associated with practices. Athletes with less body fat were more likely to have good nutrition practice behavior (AOR 0.895; 95% CI 0.83, 0.96; p < 0.05) and nutrition knowledge was positively associated with nutrition practice (AOR 2.335; 95% CI 1.405, 3.88; p = 0.001). Conclusion Knowledge, attitude, and practices level observed among many of our participants was satisfactory. Previous nutrition training was found as a potentially modifiable factor of good nutrition knowledge and good nutrition knowledge was found to be a predictor of good practice score. Diabetic patients usually avoid germinated endosperm of sugar palm (GESP) and elephant foot yam tuber (EFYT), fearing that these may further deteriorate existing hyperglycemia. In the present study, this suspicion was investigated by analyzing the nutrients and following the animal experiments by supplementary feeding powder of GESP, EFYT, and their mixture in addition to the regular diet for the six consecutive weeks. Next three weeks, the powder was withdrawn, and fasting blood glucose (FBG) levels were recorded from the beginning. Elephant foot yam is widely consumed as a vegetable and locally known as 'Ol' in Bangladesh. However, taboos regarding elephant foot yam are the prominent barrier for diabetic patients to consume this tuber. The study aims to judge the concept scientifically. The literature review showed that elephant foot yam tuber is a good source of carbohydrates, protein, fiber, and minerals but low in fat. Secondary metabolites viz. phytochemicals of this tuber had a significant anti-hyperglycemic effect. In conclusion, elephant foot yam tuber is safe and beneficial for patients with diabetes.

Obesity is a cluster of non-transmissible diseases creating a massive socioeconomic and civil health burden in both developed and developing countries. The prevalence of obesity is increased in an alarming rate and one-third of the world’s population carrying obesity. Phenolic compounds from plant sources play a great role on obesity. Green tea or herbal tea that contains four types of catechins reduced cholesterol level through the modulation of bile acid absorption and metabolism. Objectives: the aim of this study was to monitor the effects of green tea and nutritional education about dietary habit on obese persons. Methods: A randomized control trial (n=20) of obese persons were selected as baseline study and a sliming herbal tea (green tea) with nutritional counseling was prescribed for 12 weeks to take regularly for twice in a day. Results: This study showed a positive impact on obese individuals. After 12 weeks intervention, BMI was decreased from 30.94 to 30.57, body weight, body fat and body fat mass were reduced from 72.50 to 71.36 kg, 32.06 to 30.18% and 27.38 to 25.52 kg respectively. Moreover, a dietary practice of high protein diet with low calorie and low fat diet was developed through nutrition counseling at the baseline study. Conclusion: Obesity management is a combined process. So, green tea with planned diet might be a fruitful effort to reduce body weight, body fat and overall BMI of an obese person.

Rapeseed oil is commonly used as cooking oil in Bangladesh especially in the rural areas and traditionally used with other food items in urban societies. This study evaluated the biochemical properties and chromatographic picturesque of various rapeseed oils namely mustard (wild and hybrid), rai (wild and hybrid) and canola oil in both raw and fried state. The qualitative tests such as acid value, iodine value, peroxide value, saponification value, unsaponifiable matter and Rechert-Meissl value were determined to differentiate the better quality of these consumable oils. Among five types of rapeseed oils, canola oil could be the best choice for consumption due to its lower erucic acid (6%) and high polyunsaturated fatty acids content, while the erucic acid content of mustard (wild), mustard (hybrid), rai (wild) and rai (hybrid) were 51.56, 64.82, 56.31 and 67.98% respectively. Canola oil also had the lowest level of acid value, peroxide value, saponification value and Reichert Meissl value but higher level of iodine value. On the other hand, rai (hybrid) fried oil was the lowest quality of consumable oil in comparison with other forms of rapeseed oils. Raw seed oils were also better than fried oils. Exclusive breast feeding means that the baby has no other food or drinks even dummy or pacfier. Human milk provides immunoglobulin and lactoferrin which protects the host gastro-intestinal system from enterotoxigenic Escherichia coli a major cause of infant Diarrhoea. Secretory immunoglobulin-A is an important component of passive immunity in first weeks before endgenous immunoglobulin production begins. The current study showed that out 400 infants 15.5% were not anemic and possessed good health but 35% were moderately anemic, 43% were mild anemia and 6.5% were severely anemic. But this study showed alter result because childs health not only depend on breastfeeding but also many other factors such as weaning practice, vaccination, mothers awareness about sanitation and hygiene over all nutritional status of mother, usually they are anemic. After breastfeeding the second most critical factor is weaning practice that affects the childs health. Study showed around 59% family dont know about weaning practice and their benefit and the proportion even higher in rural area (80.5%). The anemia prevalence (66%) was higher among 7-12 moths age group compared to below six months aged infants (34%). The prevalence of other two diseases was also higher among infant from rural area (40 and 57%). This higher prevalence of anemia, pneumonia and diarrhea among infant within 7 to 12 months and particularly in rural area could be explained by the hypothesis of inadequate knowledge and practice of weaning.

The prevalence of diarrhoea and pneumonia is quite alarming amongst children under 5 years of age who belong to low socioeconomic status. This study was carried out from January to December (2012) in Kushtia, and the total sample were boys (209) and girls (191). Anthropometric measurements were performed by standard methods National Centre for Health Statistics (NCHS). The prevalence of severe underweight, stunting and wasting (≤ -3 SD) were found in the sample data about 11%, 22% and 17% respectively; whereas the prevalence of pneumonia, diarrhea and both pneumonia & diarrhea was found 53%, 44.50% and 38.75% respectively. The high prevalence of pneumonia (62.72%) and frequency (1.85) were found in under 12 months age group, while diarrhea (48.86%) and both pneumonia & diarrhea (45.45%) were found in 13-24 months age group. A greatest relationship was found between mother and child health status. About 89.26% mothers with poor health status have a sick child. Among the mothers with good health, the percentage of sick children was 45.73%. In this study, 34.25% of children were found to be severe anemic, 40.25% of children were found to be moderately anemic and 25.50% were nonanemic. Our findings underscore the fact that even poor nutrition or marginal malnutrition can predispose children to pneumonia. Anemia also significantly increased the risk of pneumonia in children. Our study revealed that anemia might be a risk factor for lower respiratory tract infections including pneumonia; however further studies with statistical model is needed to confirm. This study also indicated that children with diarrhea were at increased risk of pneumonia.

Traditional sun drying methods are widely used in Bangladesh to dry fish, though the quality is not satisfactory. The aim of this study was to assess the quality of solar tunnel dried Bombay duck and Siler pomfret, and to compare it with traditional sun dried Bombay duck and Silver pomfret. Raw fish samples of Bombay duck and Silver pomfret was collected and dried using solar tunnel dryer. The quality of the dried product was analyzed measuring moisture, protein, fat, ash, peroxide value and Total Volatile Base Nitrogen (TVB-N) content and analyzing water reconstitution properties. Traditional sun dried Bombay duck and Silver pomfret were also collected from different area, and the same measurement was also performed and compared with solar tunnel dried fish samples. Microbial quality was also analyzed using standard methods. Organoleptic quality of solar tunnel dried fish samples was found very well without any objectionable flavor and odor, compared with traditional sun dried fish samples. Moisture content was also observed (15.25 % in Bombay duck and 13.43 % in Silver pomfret) within the acceptable range. Protein content of solar dried fish samples was also found higher than that of traditional sun dried samples and water reconstitution power was also found better. Peroxide and TVB-N value of the solar tunnel dried studied samples were found within the normal limit of 10-20meq/kg of oil and up to 30 mg/100gm, respectively. Aerobic Plate Count was found lower, however Salmonella and Coliform was not found in both dried samples. The quality of solar tunnel dried Bombay duck and Silver pomfret samples were of excellent compared with samples dried by traditional sun drying method.
