Dollar stores have rapidly expanded their food offerings in recent years. These foods tend to be higher in calories and lower in nutrients, raising public health concerns, especially in rural and low-income areas where food-access challenges are often greatest. However, there is limited empirical evidence evaluating the impact of this expansion on household food purchases on a national scale. Using data from a yearly, nationally representative panel of approximately 50 000 households, we estimated the share of food purchases from 2008 to 2020 by store type and evaluated the role of dollar stores as food retailers in the United States. We found that dollar stores were the fastest-growing food retailers by household expenditure share (increasing by 89.7%), with rural growth outpacing growth elsewhere (increasing by 102.9%). Though dollar stores still represent a small share of national household food purchases (2.1% in 2020), they play an increasingly prominent role in food-at-home purchases for certain disadvantaged and rural communities. Understanding the quality of the foods they offer and how this may affect diet-related health outcomes is warranted. OBJECTIVE Produce prescriptions have shown promise in improving diabetes care, although most studies have used small samples or lacked controls. Our objective was to evaluate the impacts of a produce prescription program on glycemic control for patients with diabetes. RESEARCH DESIGN AND METHODS Participants included a nonrandom enrollment of 252 patients with diabetes who received a produce prescription and 534 similar control participants from two clinics in Hartford, Connecticut. The start of the COVID-19 pandemic in March 2020 coincided with program implementation. Produce prescription enrollees received vouchers ($60 per month) for 6 months to purchase produce at grocery retail. Controls received usual care. The primary outcome was change in glycated hemoglobin (HbA1c) between treatment and control at 6 months. Secondary outcomes included 6-month changes in systolic (SBP) and diastolic blood pressure (DBP), BMI, hospitalizations, and emergency department admissions. Longitudinal generalized estimating equation models, weighted with propensity score overlap weights, assessed changes in outcomes over time. RESULTS At 6 months, there was no significant difference in change in HbA1c between treatment and control groups, with a difference of 0.13 percentage points (95% CI −0.05, 0.32). No significant difference was observed for change in SBP (3.85 mmHg; −0.12, 7.82), DBP (−0.82 mmHg; −2.42, 0.79), or BMI (−0.22 kg/m2; −1.83, 1.38). Incidence rate ratios for hospitalizations and emergency department visits were 0.54 (0.14, 1.95) and 0.53 (0.06, 4.72), respectively. CONCLUSIONS A 6-month produce prescription program for patients with diabetes, implemented during the onset of the COVID-19 pandemic, was not associated with improved glycemic control.

Objective:The rapid growth in web-based grocery food purchasing has outpaced federal regulatory attention to the online provision of nutrition and allergen information historically required on food product labels. We sought to characterise the extent and variability that online retailers disclose required and regulated information and identify the legal authorities for the federal government to require online food retailers to disclose such information.Design:We performed a limited scan of ten products across nine national online retailers and conducted legal research using LexisNexis to analyse federal regulatory agencies’ authorities.Setting:USA.Participants:N/A.Results:The scan of products revealed that required information (Nutrition Facts Panels, ingredient lists, common food allergens and per cent juice for fruit drinks) was present, conspicuous and legible for an average of only 36·5 % of the products surveyed, ranging from 11·4 % for potential allergens to 54·2 % for ingredients lists. More commonly, voluntary nutrition-related claims were prominently and conspicuously displayed (63·5 % across retailers and products). Our legal examination found that the Food and Drug Administration, Federal Trade Commission and United States Department of Agriculture have existing regulatory authority over labelling, online sales and advertising, and Supplemental Nutrition Assistance Programme retailers that can be utilised to address deficiencies in the provision of required information in the online food retail environment.Conclusions:Information regularly provided to consumers in conventional settings is not being uniformly provided online. Congress or the federal agencies can require online food retailers disclose required nutrition and allergen information to support health, nutrition, equity and informed consumer decision-making.

Although research has demonstrated the positive nutritional value and environmental benefits associated with edible insect consumption, several factors challenge the growth and development of the edible insect industry for human consumption in the US and Canada. Cultural and psychological factors account for much of the aversion US and Canadian consumers display. The absence of specific regulation also constitutes a structural barrier to more widespread production and sale of edible insects. Compared to the US, the European Union has a more developed edible insect industry and has enacted legislation that removes some of the barriers. As consumer awareness of the putative health benefits of edible insects increases, more comprehensive regulations may emerge to keep pace with the growth of this industry. Overall, a multi-disciplinary approach that addresses both benefits and barriers to consumption is needed to facilitate a robust market for edible insects in the US and Canada.

Introduction In the U.S., children regularly consume foods from quick-service restaurants, but little is known about the marketing strategies currently used inside quick-service restaurants. This study aims to validate a child-focused Environmental Assessment Tool for quick-service restaurants, evaluate marketing strategies inside and on the exterior of quick-service restaurants, and examine differences by community race/ethnicity or income. Methods The inter-rater and test–retest reliability of the Environmental Assessment Tool were assessed across the top 5 national quick-service restaurant chains. Marketing techniques in 165 quick-service restaurants (33 per national chain) in socioeconomically and racially/ethnically diverse communities throughout New England were examined in 2018–2019. Mixed methods ANOVA examined the differences in marketing techniques in 2020. Results The inter-rater and test–retest reliability of the Environmental Assessment Tool were high (Cohen's κ>0.80). Approximately 95% of quick-service restaurants marketed less healthy foods, whereas only 6.5% marketed healthy options. When examining the differences by community demographics, there were significantly more price promotion advertisements inside and on the exterior of quick-service restaurants in lower-income communities. In addition, there was a greater number of child-directed advertisements with cartoon or TV/movie characters as well as fewer healthy entree options and more sugar-sweetened beverage and dessert options on the children's menu inside quick-service restaurants in communities with higher minority populations. Conclusions Environmental Assessment Tool is a valid tool to evaluate marketing inside quick-service restaurants. Results suggest that there is a substantial amount of unhealthy food and beverage marketing inside quick-service restaurants, with differences in the number and types of techniques used in lower-income and minority communities. Policies that limit quick-service restaurant marketing to children should be considered.

Stakeholder involvement in research has been demonstrated to increase the effectiveness, validity, and quality of a study. This paper describes the engagement of a stakeholder panel in the development and implementation of an animal-assisted intervention (AAI) assessment and program for children diagnosed with Autism Spectrum Disorder (ASD). Canines for Autism Activity and Nutrition (CAAN) aims to promote physical activity and wellness among children diagnosed with ASD by integrating activities with their pet dog during the child's ongoing Applied Behavioral Analysis (ABA) in-home therapy sessions. Feedback from stakeholders guided program development at each stage of the research process, including this publication. Utilizing a stakeholder-informed approach was essential for the development of assessment tools, program materials, and program design. Methods that may assist others to effectively partner with stakeholders to implement an AAI among children diagnosed with ASD or related disorders are described.

Food is inextricably linked to human health and environmental sustainability, however, very little is known about children’s perceptions of the concept of sustainability in the context of food choices. We aimed to explore the perceptions of Chilean schoolchildren about environmental sustainability, food, and nutrition. Eight online focus groups were conducted with boys and girls aged 8–9 (n = 30). Questions related to environmental sustainability, pocket money, and food characteristics such as price, front-of-package (FOP) warning label, and eco-labels were included. Data analysis was conducted using ATLAS.ti through a hybrid content analysis approach. Five central themes were identified: (1) children’s favorite snacks, (2) knowledge of sustainability, (3) sustainability and eco-labels use, (4) healthfulness of food products, and (5) pocket money and food prices. Most children were not aware of the meaning of “environmental sustainability”, but the concept was understood when it was explained in plain language. Participants showed awareness about the environmental impact of their eating behavior, had a positive perception of eco-labels, and identified food with fewer warning labels as “better” options. Results indicate that children understand the concept of sustainability in food if it is communicated clearly, and that eco-labels may be an effective tool in that effort.

Plants often experience multiple sources of stress simultaneously, yet little is known about interactive effects of multiple stressors on plant metabolic responses. Plants are well known to respond to both drought and insect herbivory through the induced production of secondary metabolites. However, severe drought stress limits photosynthesis and may therefore inhibit the production of induced secondary metabolites in response to herbivory due to carbon limitation. On the other hand, drought-stressed plants may be primed to respond more strongly to herbivory due to hormonal crosstalk or redundancy of metabolites that are produced in response to drought and herbivory. We tested the interactive effects of drought and simulated herbivory in tea plants (Camellia sinensis (L.) Kuntze var. sinensis) grown in the field under varying rainfall interception treatments and then exposed to an exogenous methyl jasmonate (MeJA) treatment. We show that severe drought generally inhibits the induction of secondary metabolites by exogenous MeJA (simulated herbivory). However, a few volatile metabolites, including methyl salicylate, are more strongly induced by MeJA in severely drought-stressed plants compared to moderately stressed plants, possibly due to priming by drought stress. Our approach of using multiple levels of drought stress and a targeted/untargeted approach to measuring volatile metabolites was essential to discovering these patterns of induction. In addition to having implications for plant-herbivore interactions in the presence of abiotic stress, these results have important implications for tea quality.

OBJECTIVES: Greater number and increased frequency of farmers’ markets are an important strategy to improve community-level diet quality by increasing fruit and vegetable availability, yet fall short of addressing health disparities due to a predominantly affluent, white clientele. Introducing Supplemental Nutrition Assistance Program (SNAP) financial incentives at farmers’ markets increases patronage and sales amongst people with economic disadvantage, however SNAP participant incentive program awareness and farmers’ market sales remain low. This study examined whether a digital campaign promoting SNAP incentive programs increases farmers’ market SNAP participation. METHODS: This study was a parallel RCT, with randomization of zip codes to receive (a) digital promotions or (b) no additional promotions. The study sample included target zip codes (n = 96) near New England farmers’ markets with SNAP incentive programs (n = 23). The intervention was a 13-week campaign, placing digital ads on Facebook and the Fresh EBT app promoting SNAP incentive program savings at farmers’ markets. The study measured farmers’ market SNAP shopping patterns and sales as well as digital campaign delivery and engagement. Data were collected July 1 – September 30, 2020. RESULTS: The digital campaign reached 251,966 people, generated 2 million impressions, and resulted in 12,849 clicks. During Summer 2020, zip codes randomized to receive digital promotions had 33.1 SNAP transactions (SE: 6.9) and control zip codes had 18.1 transactions (SE: 4.3), or 82% more transactions associated with promotions (P = 0.068). There were also more new customers from promotion zip codes (10.8 [SE = 2.5] customers) than control zip codes (5.7 [SE = 1.4] customers), or 90% more new customers (P = 0.075). SNAP and incentive sales were higher from promotion zip codes ($1392 [SE: $306]) than control zip codes ($949 [SE: $273]), or 47% greater (P = 0.284), but sales differences were not statistically significant unless controlling for Summer 2019 farmers’ market sales. CONCLUSIONS: Digital SNAP incentive program promotions can increase farmers’ market SNAP participation, the primary study outcome, leveraging SNAP to expand farmers’ market reach and associated nutrition benefit to historically marginalized populations. Snacks contribute nearly one-quarter of children's daily energy intake in the USA. Snack time therefore represents an opportunity for parents to provide foods with key nutrients. Instead, the most common snack foods are major contributors to children's consumption of added sugars and sodium. Parents face major barriers to providing healthier snacks, including perceptions of high cost and lack of child acceptance. We obtained both economic and qualitative data to inform and optimize interventions for parents to promote vegetable snacks for children. We conducted a survey with parents (n = 368) to estimate how much of a discount would influence vegetable snack purchases by estimating willingness-to-pay using the contingent valuation method, using baby-cut carrots as a sample product. We conducted three focus groups (n = 19) and 1 group interview (n = 2) with children to help understand how to increase the appeal of vegetable snacks. Most (70%) parents accepted the reference price for the vegetable snack. Among those who did not, contingent valuation analysis revealed that a mean discount of approximately 30% would shift consumers to purchasing the snack. Focus group results revealed that the appeal of vegetable snacks to children was influenced by how they were prepared and presented, and the child's familiarity with the vegetables and ability to choose among them. This study lays the groundwork for effective interventions to promote the provision of vegetable snacks by parents.

Children regularly consume foods from quick service restaurants (QSRs) in the United States, but little is known about how ordering decisions are made and the impact on selection and consumption. A total of n = 218 parents dining with a child (ages 4&ndash, 16 years) inside a participating QSR completed interviews and demographic surveys and provided their child&rsquo, s leftover foods at the end of the meal. Children&rsquo, s meal consumption was measured using plate-waste methodology. The majority of children selected their meal without parental involvement (80%) and decided what to order prior to entering the QSR (63%). Using mixed-model analysis of variance, children selected and consumed significantly fewer calories and less total fat and sodium when a parent ordered the meal compared with when the child ordered the meal alone. There were no significant differences in selection or consumption when a parent and child ordered the meal together. Approximately one-third of the children consumed foods that were shared. In conclusion, because children primarily select foods without parental involvement and prior to entering QSRs, innovative strategies are needed to influence ordering decisions inside QSRs toward healthier options. Additionally, because food is frequently shared, policies that only focus on children&rsquo, s menus may not be as effective in impacting children&rsquo, s dietary intake.

Changes in diet have been proposed as one way to reduce carbon emissions from the food system. But evidence on the implications of changing to low carbon food choices for both diet quality and food affordability are limited in the U.S. The objective of this study was to (a) estimate greenhouse gas emissions (GHGEs) from U.S. household food purchases; (b) examine the source of GHGEs across U.S. food production industries and stages of the supply chain; and (c) show the association between GHGEs and spending by food categories and household sociodemographics. GHGEs from food expenditures made by households participating in the National Household Food Acquisition and Purchase Survey were calculated using Economic Input-Output Life Cycle Assessment. Results indicate that food purchases accounted for 16% of U.S. GHGEs in 2013 and average weekly household GHGEs were 71.8 kg carbon dioxide equivalents per standard adult. 68% of average weekly household GHGEs from food spending came from agriculture and food manufacturing stages of the food supply chain. Industries that produce animal proteins accounted for 30% of average weekly household GHGEs, the largest share of any food industry. Households generating the highest levels of GHGEs spent a significantly larger share of their food budget on protein foods compared to households generating lower levels of GHGEs. White households and those with higher education levels generated more GHGEs from food spending compared to non-white and less educated households. Overall these findings inform the ongoing debate about which diets or food spending patterns in the U.S. are best for mitigating GHGEs in the food system and if they are feasible for consumers to purchase.

Background. Recent efforts supporting children’s dietary behaviors suggest the importance of food literacy (FL), which is a multidimensional concept that encompasses food-related knowledge, skills, and behaviors. To date, FL has been largely informed by adult and adolescent research. Aims. To assess the FL experiences, perceived skills, and knowledge of school-age children to inform FL educational opportunities. Method. Six focus groups were conducted with children (age 9-12 years) from three Massachusetts elementary schools. Two team members independently reviewed and coded a portion of the transcripts to assess interrater reliability. Predominant themes connected to children’s perceived FL skills and knowledge were identified using an inductive and deductive content analysis approach. Results. There were five central FL themes identified during the focus groups ( n = 31 children), including (1) food systems concepts; (2) food safety and food freshness; (3) gardening environment, perceived skills, and knowledge; (4) cooking environment, perceived skills, and safety; and (5) autonomy of meal preparation. Discussion. The themes that emerged in these focus groups with children provided new information surrounding children’s perceived FL skills and knowledge as well as important context regarding the food environment (school vs. home). These findings captured important concepts across the “farm to plate” spectrum and highlight potential school-based opportunities where FL topics could be expanded upon most successfully. Conclusion. This formative research informed educational opportunities for a FL curriculum, which holds promise for improving food-based education and programs, designing more effective interventions, and developing measurement tools.

Background Children's dietary-related diseases and their associated costs have expanded dramatically in many countries, making children's food choice a policy issue of increasing relevance. As children spend a considerable amount of money on energy-dense, nutrient-poor (EDNP) products, a better understanding of the main drivers of children's independent food purchase decisions is crucial to move this behavior toward healthier options. Objective The objective of the study is to investigate the role of branding and price in motivating children to choose healthier snack options. Methods The study investigates snack choices of children ages 8 to 11, using a survey and a purchase experiment. The research took place in after-school programs of selected schools in the Boston area. Participants included 116 children. Products in the choice experiment differed on three factors: product type, brand, and price. Data were analyzed using aggregated and mixed logit models. Results Children's purchase decisions are primarily determined by product type (Importance Value (IV) 56.6%), while brand (IV 22.8%) and price (IV 20.6%) prove to be of less relevance. Only those children who state that they like the familiar brand reveal a preference for the branded product in their purchase decision. Price is a significant predictor of choice when controlling for whether or not children obtain an allowance. Conclusion It is not simple brand awareness but a child's liking of the brand that determines whether a brand is successful in motivating a child to choose a product. The extent of children's experience with money influences their price responsiveness. To the extent that children who receive an allowance are primarily the ones buying food snacks, higher prices for EDNP snacks could be successful in motivating children to choose a healthier option.

A resurgence of interest in more traditional, authentic and distinctive foods is reflected in the popularity of farmers’ markets, with the premise that locally grown produce is superior in flavor and other sensory and culturally valued characteristics to similar fare from the global marketplace. In this arena, heirloom tomatoes (heirlooms) are increasingly popular with their diverse appearances and tastes. But heirlooms are also idiosyncratic, with splits, cracks, irregular shapes and sizes, and uneven flavors and textures that create production obstacles for growers and selection challenges for shoppers. Through online surveys and telephone and in-person interviews with Massachusetts farmers’ market consumers and vendors, we explored the relative importance of organoleptic properties, particularly flavors and mouthfeel, that influence consumer selection and farmers’ production priorities for heirlooms. Consumers are increasingly concerned about the environmental and social impacts of their purchases. Prior research has assessed willingness to pay (WTP) for environmental and ethical attributes on foods and beverages such as locally grown, fairly traded, and organically produced. However, few studies have examined WTP for agricultural greenhouse gas (GHG) mitigation, especially in the U.S. and to date, no prior study has examined how knowledge or concerns about climate change motivate WTP for climate-friendly products. The objective of this study was to estimate WTP for agricultural GHG mitigation and examine variability in WTP across consumer characteristics, climate change knowledge and risk perception. A sensory-grounded choice experiment and survey assessing climate change knowledge and risk perception was administrated to specialty food and beverage shoppers in the Midwest and Northeastern U.S. Male and lower-income participants, as well as those at the Midwestern study site were willing to pay a higher premium for agricultural GHG mitigation, relative to females, higher income participants, and those in the Northeastern U.S. Knowledge of climate change and level of concerns for the risks it poses were not significantly associated with increased WTP for agricultural GHG mitigation. This suggests that if consumer demand is going to play a role in driving agricultural GHG mitigation, motivations for such purchasing behavior must be more fully understood.

Today's collaborations across fields of health and wellness are insufficient to meet societies' challenges in combating disease and maintaining the ecosystem and public health. In this article, we present a One Health curriculum model designed to encourage undergraduate students of varying disciplines to value the connectedness of animals, humans, and the environment and to think innovatively about solutions to priority global health issues.We present the design and implementation of a course that brought together multiple faculty from different fields of study, including the dental, medical, nutrition, and veterinary schools, in a curriculum designed for undergraduates primarily from Arts & Sciences fields. The curriculum was collaboratively designed around four key One Health categories: 1) Infectious zoonotic diseases and global health, 2) Naturally occurring shared disease in companion animals that can serve as models for human disease, 3) Human-animal interactions, and 4) Impact of environmental health on human and animal health.We show this course successfully deepened students' understandings of One Health, its role in addressing high priority health issues and the overall benefits of a One Health approach to tackling societal problems. We also report a positive experience by the faculty working in collaboration to implement the curriculum model and the overall enthusiasm of students for the course, all of whom would recommend it to their peers.We conclude by proposing the potential of the curriculum model underlying this course to fill the need for One Health Curricula in programs preparing future health professionals. Climate change is impacting food and beverage crops around the world with implications for environmental and human well-being. While numerous studies have examined climate change effects on crop yields, relatively few studies have examined effects on crop quality (concentrations of nutrients, minerals, and secondary metabolites). This review article employs a culturally relevant beverage crop, tea (Camelia sinensis), as a lens to examine environmental effects linked to climate change on the directionality of crop quality. Our systematic review identified 86 articles as relevant to the review question. Findings provide evidence that shifts in seasonality, water stress, geography, light factors, altitude, herbivory and microbes, temperature, and soil factors that are linked to climate change can result in both increases and decreases up to 50% in secondary metabolites. A gap was found regarding evidence on the direct effects of carbon dioxide on tea quality, highlighting a critical research area for future study. While this systematic review provides evidence that multiple environmental parameters are impacting tea quality, the directionality and magnitude of these impacts is not clear with contradictory evidence between studies likely due to confounding factors including variation in tea variety, cultivar, specific environmental and agricultural management conditions, and differences in research methods. The environmental factors with the most consistent evidence in this systematic review were seasonality and water stress with 14 out of 18 studies (78%) demonstrating a decrease in concentrations of phenolic compounds or their bioactivity with a seasonal shift from the spring and /or first tea harvest to other seasons and seven out of 10 studies (70%) showing an increase in levels of phenolic compounds or their bioactivity with drought stress. Herbivory and soil fertility were two of the variables that showed the greatest contradictory evidence on tea quality. Both herbivory and soil fertility are variables which farmers have the greatest control over, pointing to the importance of agricultural management for climate mitigation and adaptation. The development of evidence-based management strategies and crop breeding programs for resilient cultivars are called for to mitigate climate impacts on crop quality and overall risk in agricultural and food systems.

ObjectiveTo determine if US household food purchases with lower levels of red meat spending generate lower life-cycle greenhouse gas emissions (GHGE), greater nutritional quality and improved alignment with the Dietary Guidelines for Americans. Affordability of purchasing patterns by red meat spending levels was also assessed.DesignHousehold food purchase and acquisition data were linked to an environmentally extended input–output life-cycle assessment model to calculate food GHGE. Households (n 4706) were assigned to quintiles by the share of weekly food spending on red meat. Average weekly kilojoule-adjusted GHGE, total food spending, nutrients purchased and 2010 Healthy Eating Index (HEI-2010) were evaluated using ANOVA and linear regression.SettingUSA.ParticipantsHouseholds participating in the 2012–2013 National Household Food Acquisition and Purchase Survey.ResultsThere was substantial variation in the share of the household food budget spent on red meat and total spending on red meat. The association between red meat spending share and total food spending was mixed. Lower red meat spending share was mostly advantageous from a nutritional perspective. Average GHGE were significantly lower and HEI-2010 scores were significantly higher for households spending the least on red meat as a share of total food spending.ConclusionsOnly very low levels of red meat spending as a share of total food spending had advantages for food affordability, lower GHGE, nutrients purchased and diet quality. Further studies assessing changes in GHGE and other environmental burdens, using more sophisticated analytical techniques and accounting for substitution towards non-red meat animal proteins, are needed.

Objective Food literacy provides a framework for food-related knowledge, skills, and behaviors. The aim of this study was to develop a Tool for Food Literacy Assessment in Children (TFLAC), grades 4–5. Methods Development of the TFLAC consisted of 3 phases: (1) content validity using a 2-round modified Delphi panel (n = 16) and content validity ratios (CVR); (2) pilot-testing (n = 38); and (3) assessment of internal consistency and test-retest reliability (n = 706) using Cronbach α and intraclass correlation coefficients, respectively. Statistical significance was set at P Results Round 1 (CVR = 0.40) and 2 (CVR = 0.70) Delphi panel feedback and the pilot test informed modifications to the TFLAC question format, wording, and difficulty. Food literacy domain-specific Cronbach α values were acceptable (range, .80–.98) except for cooking knowledge (.63), and intraclass correlation coefficients were 0.64–0.70 (P Conclusions and Implications The TFLAC meets basic psychometric standards and may serve as a foundation for nutrition education intervention design and evaluation. Further testing with a broader geographic audience may be warranted.

In this study, principal components analysis was used to assess the macro- and micronutrient metal concentrations in pre-monsoon (spring), monsoon (summer), and post-monsoon (autumn) tea (Camelia sinensis (L.) Kuntze) from Yunnan Province, China in 2014–2016. Statistical differences were observed (p = 1.35E-24). Fe, Ca, Mg, Mn, Al, and Ba concentrations were higher in June (monsoon) than in March (pre-monsoon) and September (post-monsoon) compared to Pb, K, Cu, Zn, and Na, which were higher in March and September. Although Fe, Ca, Mg, Mn, Al, and Ba concentrations increased during the monsoon season, sensory analysis did not detect metallic taste in either minimally processed or farmer-processed (commercial) teas. This finding shows the seasonal differences in flavor were due to striking differences in organic chemical composition and concentration.

Climate effects on crop quality at the molecular level are not well-understood. Gas and liquid chromatography–mass spectrometry were used to measure changes of hundreds of compounds in tea at different elevations in Yunnan Province, China. Some increased in concentration while others decreased by 100’s of percent. Orthogonal projection to latent structures-discriminant analysis revealed compounds exhibiting analgesic, antianxiety, antibacterial, anticancer, antidepressant, antifungal, anti-inflammatory, antioxidant, anti-stress, and cardioprotective properties statistically (p = 0.003) differentiated high from low elevation tea. Also, sweet, floral, honey-like notes were higher in concentration in the former while the latter displayed grassy, hay-like aroma. In addition, multivariate analysis of variance showed low elevation tea had statistically (p = 0.0062) higher concentrations of caffeine, epicatechin gallate, gallocatechin, and catechin; all bitter compounds. Although volatiles represent a small fraction of the total mass, this is the first comprehensive report illustrating how normal variations in temperature, 5 °C, due to elevational effects impact tea quality.

Tea is the second most consumed beverage worldwide, and the production of tea is of economic importance in over 50 countries. As a woody perennial, tea plants are cultivated in production systems for numerous decades and thus experience the multiple decadal effects of climate change including influences on tea yields and quality. Changes in tea yields and quality can have notable impacts on the livelihoods of laborers and farmers as well as on regional economies more broadly. This chapter provides an overview on the effects of global climate change on tea production. We start with a review on global climate change trends that highlight robust multi-decadal warming and changes in extreme weather events that have increased. This review on climate change trends is followed with a synopsis of the major effects of climate change on agriculture broadly as well as on tea plants more specifically. We provide a review on tea ecophysiology and thresholds followed by a synthesis on the key abiotic and biotic stressors associated with climate change that impact tea plants including carbon dioxide concentrations, temperature, rainfall, humidity, solar radiation, wind, soil conditions and microorganisms, pests, and pathogens. This chapter ends with a discussion on socioeconomic implications of climate change in major tea-producing areas globally in order to highlight the need to better understand tea physiology in the context of climate change. Overall, the scientific literature and news reports highlight that climate change is already impacting tea systems and that expected climate changes can increase the likelihood of severe and irreversible impacts for tea production and associated livelihoods. Evidence-based adaptation and mitigation strategies through a community-based approach are called for toward a more sustainable tea sector.

Objectives. To measure fluid milk waste in a US School Breakfast in the Classroom Program and estimate its nutritional, economic, and environmental effects. Methods. Fluid milk waste was directly measured on 60 elementary school classroom days in a medium-sized, urban district. The US Department of Agriculture nutrition database, district cost data, and carbon dioxide equivalent (CO2e) emissions and water footprint estimates for fluid milk were used to calculate the associated nutritional, economic, and environmental costs. Results. Of the total milk offered to School Breakfast Program participants, 45% was wasted. A considerably smaller portion of served milk was wasted (26%). The amount of milk wasted translated into 27% of vitamin D and 41% of calcium required of School Breakfast Program meals. The economic and environmental costs amounted to an estimated $274 782 (16% of the district’s total annual School Breakfast Program food expenditures), 644 893 kilograms of CO2e, and 192 260 155 liters of water over the school year in the district. Conclusions. These substantial effects of milk waste undermine the School Breakfast Program’s capacity to ensure short- and long-term food security and federal food waste reduction targets. Interventions that reduce waste are urgently needed.

Seasonal variation in tea (Camellia sinensis (L.) Kuntze; Theaceae) chemistry was investigated using automated sequential, multidimensional gas chromatography/mass spectrometry (GC–GC/MS). Metabolite libraries were produced for teas harvested from the Bulang Mountains in Yunnan, China before and after the onset of the East Asian Monsoon. A total of 201 spring and 196 monsoon metabolites were identified, with 169 common and 59 seasonally unique compounds. An additional 163 metabolites were detected but their identity could not be confirmed. Spectral deconvolution of GC/MS data was used to measure the relative concentrations in the teas. Within each family individual metabolite concentrations increased, decreased and stayed the same. The major constituents in both teas were linalool (28%), geraniol (13%), α-terpineol (10%), hotrienol (4%) and nerol (3%). This work provides the foundation to monitor seasonal variations of tea chemistry.

Farmers in China’s tea-growing regions report that monsoon dynamics and other weather factors are changing and that this is affecting tea harvest decisions. To assess the effect of climate change on tea production in China, this study uses historical weather and production data from 1980 to 2011 to construct a yield response model that estimates the partial effect of weather factors on tea yields in China, with a specific focus on East Asian Monsoon dynamics. Tea (Camellia sinensis (L.) Kunze) has not been studied using these methods even though it is an important crop for human nutrition and the economic well-being of rural communities in many countries. Previous studies have approximated the monsoon period using historical average onset and retreat dates, which we believe limits our understanding of how changing monsoon patterns affect crop productivity. In our analysis, we instead estimate the monsoon season across China’s tea growing regions empirically by identifying the unknown breakpoints in the year-by-province cumulative precipitation. We find that a 1% increase in the monsoon retreat date is associated with 0.481%–0.535% reduction in tea yield. In the previous year, we also find that a 1% increase in the date of the monsoon retreat is associated with a 0.604% decrease in tea yields. For precipitation, we find that a 1% increase in average daily precipitation occurring during the monsoon period is associated with a 0.184%–0.262% reduction in tea yields. In addition, our models show that 1% increase in the average daily monsoon precipitation from the previous growing season is associated with 0.258%–0.327% decline in yields. We also find that a 1% decrease in solar radiation in the previous growing season is associated with 0.554%-0.864% decrease in tea yields. These findings suggest the need for adaptive management and harvesting strategies given climate change projections and the known negative association between excess rainfall and delayed monsoon retreat on tea quality and yield.
