Objective: The present study combined transcriptomic data and computational techniques based on gene expression signatures to identify new bioactive compounds or Food and Drug Administration-approved drugs for the treatment of bipolar disorder (BD). Methods: Five transcriptomic datasets containing 165 blood samples from individuals with BD were selected from the Gene Expression Omnibus (GEO). The number of participants varied from six to 60, with a mean age between 35 and 48 years and a gender difference between them. Most of these patients were receiving pharmacological treatment. Master regulator analysis (MRA) and gene set enrichment analysis (GSEA) were performed to identify genes that were significantly different between patients with BD and healthy controls and their associations with mood states in patients with BD. In addition, molecules that could reverse the transcriptomic profiles of BD-altered regulons were identified from the Library of Network-Based Cellular Signatures Consortium (LINCS) and the Broad Institute Connectivity Map Drug Repurposing Database (cMap) databases. Results: MRA identified 59 candidate master regulators (MRs) that modulate regulatory units enriched with BD-altered genes. In contrast, GSEA identified 134 enriched genes and 982 regulons whose activation state was determined. Both analyses revealed genes exclusively associated with mania, depression, or euthymia, and some genes were shared among these three mood states. We identified bioactive compounds and licensed drug candidates, including antihypertensives and antineoplastic agents, as promising candidates for the treatment of BD. However, experimental validation is essential to confirm these findings in further studies. Conclusion: Although our data are still preliminary, they provide some insights into the biological patterns of different mood states in patients with BD and their potential therapeutic targets. The strategy of transcriptomics plus bioinformatics offers a way to advance drug discovery and personalized medicine by using gene expression information.

ABSTRACT Purpose: To evaluate exogenous hyaluronic acid (HA) derived from bacterial fermentation through enteral and parenteral routes in ischemic skin flaps induced in rats, using clinical and histological exams; and interleukins (IL) as tissue inflammatory biomarkers. Methods: Sixty-four male adults Wistar rats with ischemic skin flaps on the dorsum were randomized into four groups, based on the treatment protocol: subcutaneous administration of saline solution (0.9%) (GI); oral administration of distilled water (GII); subcutaneous administration of HA (0.3%) (GIII); and oral administration of HA (1%) (GIV). Flaps of all groups were comparable regarding clinical and macroscopic evaluation, histological examination, pro-inflammatory cytokines (IL-1β, IL-6, and tumor necrosis factor-α) and anti-inflammatory cytokine IL-10. Results: A lower percentage of necrosis was identified in flaps treated with subcutaneous administration of HA (0.3%). The pro- and anti-inflammatory cytokines, epidermis thickness, blood vessels, and inflammatory cells showed statistically significant inter-group and intra-group differences (p < 0.05). Conclusions: High molecular HA (1,400 ~ 2,000 kDa) administrated by subcutaneous or oral route exhibited beneficial effects in ischemic skin flaps of rats. However, subcutaneous administration of HA (0.3%) showed better results in terms of the percentage of necrosis and epithelialization.

Magnesium oxide is typically white and can be colorized with transition metal insertion by doping. We present the preparation of a green-colored hydroxide by the exchange of Mg2+ on the crystalline lattice with Ni2+ in MgO, using three nickel salts. MgOst was prepared by the colloidal starch suspension method, using cassava starch. The oxides and hydroxides, before and after, were characterized by X-ray diffraction (XRD), and show that a phase change occurs: a transition from periclase (MgO) to brucite (Mg(OH)2) due to the incorporation of nickel ions from different salts (acetate, chloride, and nitrate), resulting in the solid solution [NixMg1−x(OH)2]. The FTIR spectrum corroborates the crystallographic structure identified through XRD patterns, confirming the formation of a crystal structure resembling brucite. The new samples present a green color, indicative of the incorporation of the Ni2+ ions. The antimicrobial activity of products resulting from the doping of magnesium oxide with nickel and the precursor MgOst was assessed through the minimum inhibitory concentration (MIC) test. The evaluation included three bacterial strains: Staphylococcus aureus (ATCC 25923), Escherichia coli (ATCC 25922), Salmonella gallinarum (ATCC 9184), and a yeast strain, Candida albicans (ATCC 10231). The obtained results were promising; the tested samples exhibited antimicrobial activity, with a MIC ranging from 0.312 to 0.625 μg.μL−1. The nickel compound, derived from the precursor chloride salt, demonstrated superior MIC activity. Notably, all tested samples displayed bactericidal activity against the S. aureus strain and exhibited a broad spectrum of inhibition, encompassing both Gram-positive and Gram-negative strains. Only the nickel compounds derived from precursors with acetate and nitrate anions demonstrated antimicrobial activity against C. albicans, exhibiting a fungistatic behavior. Based on the conducted studies, [NixMg1−x(OH)2] has emerged as a promising antimicrobial agent, suitable for applications requiring the delay or inhibition of bacterial growth.

Abstract Schizophrenia (SCZ) response to pharmacological treatment is highly variable. Quetiapine (QTP) administered as QTP lipid core nanocapsules (QLNC) has been shown to modulate drug delivery to the brain of SCZ phenotyped rats (SPR). In the present study, we describe the brain concentration–effect relationship after administrations of QTP as a solution or QLNC to SPR and naïve animals. A semimechanistic pharmacokinetic (PK) model describing free QTP concentrations in the brain was linked to a pharmacodynamic (PD) model to correlate the drug kinetics to changes in dopamine (DA) medial prefrontal cortex extracellular concentrations determined by intracerebral microdialysis. Different structural models were investigated to fit DA concentrations after QTP dosing, and the final model describes the synthesis, release, and elimination of DA using a pool compartment. The results show that nanoparticles increase QTP brain concentrations and DA peak after drug dosing to SPR. To the best of our knowledge, this is the first study that combines microdialysis and PK/PD modeling in a neurodevelopmental model of SCZ to investigate how a nanocarrier can modulate drug PK and PD, contributing to the development of new treatment strategies for SCZ.

Simulation-based learning is being increasingly implemented across different domains of higher education to facilitate essential skills and competences (e.g. diagnostic skills, problem-solving, etc.). However, the lack of research that assesses and compares simulations used in different contexts (e.g., from design perspective) makes it challenging to effectively transfer good practices or establish guidelines for effective simulations across different domains. This study suggests some initial steps to address this issue by investigating the relations between learners' experience in simulation-based learning environments and learners' diagnostic accuracy across several different domains and types of simulations, with the goal of facilitating cross-domain research and generalizability. The findings demonstrate that used learners' experience ratings are correlated with objective performance measures, and can be used for meaningful comparisons across different domains. Measures of perceived extraneous cognitive load were found to be specific to the simulation and situation, while perceived involvement and authenticity were not. Further, the negative correlation between perceived extraneous cognitive load and perceived authenticity was more pronounced in interaction-based simulations. These results provide supporting evidence for theoretical models that highlight the connection between learners' experience in simulated learning environments and their performance. Overall, this research contributes to the understanding of the relationship between learners’ experience in simulation-based learning environments and their diagnostic accuracy, paving the way for the dissemination of best practices across different domains within higher education.

ABSTRACT: Aerobic respiration declines in the root tissue of soybean plants exposed to waterlogged soil with a low oxygen content, causing metabolic disorders that negatively affect gas exchange and photosynthetic activity, hampering growth and production. As such, this study to investigated daytime gas exchange, relative chlorophyll content, specific leaf area (SLA) and photosynthetic activity curves in response to photosynthetic photon flux density (PPFD) in soybean plants grown under different conditions: no stress (control), shading, waterlogged soil, and waterlogged soil + shading. Soybean plants exposed to either waterlogging or shading and both conditions simultaneously exhibited reduced photosynthesis linked to lower stomatal opening. Plants submitted to shading showed an increase in SLA, quantum yield and photosynthetic rates, while those grown in waterlogged soil, in full sun, exhibited chlorotic leaves and low apparent quantum yield, resulting in low photosynthetic rates under shading and high light levels. Thus, waterlogging and shading in isolation or combined, compromise daytime gas exchange and alter photosynthetic activity in plants.

Abstract Background Omicron has become the dominant variant of severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) since first reported in November 2021. From the initially detected Wuhan lineage, sublineages BA.2, BA.4, BA.5, BQ, XAG, and XBB have emerged over time and are dominant in many countries. Therefore, the aim is to evaluate which variants are circulating and the clinical characteristics of inpatients infected with the Omicron variant. Methods This retrospective cohort study selected hospitalized patients admitted with respiratory symptoms to a hospital in the state of Rio Grande do Sul, Brazil, between June and July 2022. SARS-CoV-2 results were analyzed together with clinical outcomes and vaccination status. A viral genome library was prepared and forwarded to the Illumina MiSeq Platform for sequencing. Results In total, 37 genomes were sequenced. Concerning the Omicron sublineages, our study detected: BA.1 (21 K), BA.2 (21 L), BA.4 (22A), BA.5 (22B), BA.2.12.1 (22C), BQ.1 (22E), XBB (22F), and XAG recombinant. Omicron BA.5 (30%), BA.2 (19%), and BQ.1 (19%) were the most frequent sublineages, respectively. In total, 38% of patients present hypertension, and the most common symptoms were coughing (62%). Analyzing the COVID-19 vaccination, 30% of patients were fully vaccinated, 49% had a partial vaccination status, and 21% were unvaccinated (no dose). Conclusions BA.5 was the most prevalent sublineage in our study and surpassed the predominance of BA.2, as reported by the national genomic surveillance program. BQ.1 was diagnosed earlier in this study than it was officially reported in the state. Current data have demonstrated that the Omicron variant causes less severe infections, with the high rate of transmissibility and mutational landscape causing the rapid emergence of new sublineages.

Currently, a municipality in the southwest of Paraná is in the process of joining the SUSAF (Unified State System of Family, Craft, and Small-Size Agroindustrial Health). For that, the agroindustries that wish to join must follow a series of requirements related to self-control programs in a way that guarantees food safety, identity, quality, and integrity through procedures defined by MAPA (Ministry of Agriculture, Livestock and Supply). Thus, given the importance of self-control programs in food establishments, the objective of the present work was to evaluate the quality of the water used in the agroindustries of milk and dairy products in this municipality regarding the presence of total coliforms and E. coli (Escherichia coli) as well as parameters of chlorine content, pH and temperature. In addition, a questionnaire related to the SUSAF program has been applied to understand its structures and the development of its self-control programs. When verifying the results concerning residual chlorine, it is observed that they do not comply with the legislation on water potability standards (BRASIL, 2021). The presence of total coliforms and E. coli in the water used in the participating companies was also identified, a reason for concern for the final consumer, who is exposed to the possibility of contracting a Foodborne Disease. These results are directly linked to the self-control programs developed by the agroindustry or due to the lack of implementation of these. It was concluded that the agroindustries interested in joining the SUSAF are partially adequate concerning the physical structure aspects. Still, it is suggested that their self-control programs be reassessed.

Abstract Cornstarch is one of the most used depressants in mineral flotation operations. However, corn is a costly input for the Brazilian mineral industry, since its main destination is to serve the animal and human food market and exports. In this study, sorghum and millet, two cheaper starch sources, were tested in order to reduce the mining dependence on corn. A simplex lattice design mixture {3,4} was used to evaluate the best proportion of corn, millet, and sorghum flours to be used as a pyrochlore depressant in relation to the industrially adopted cornstarch (Stargill 6172 supplied by Cargill). Flotation tests were carried out on a bench scale Denver flotation cell. All tests were performed in triplicate in a single rougher stage. The results found suggest that sorghum flour was a stronger pyrochlore depressant compared to corn and millet flours, with an average Nb2O5 content of 1.72 ± 0.05% and recovery of 80.75 ± 4.10%. These values were close to the ones found with Stargill 6172 (1.32 ± 0.02 and 80.95 ± 1.13%, Nb2O5 content and recovery, respectively), the industrially adopted depressant. The marked price and the easiness in the production of the flour in relation to the extraction of starches makes the sorghum flour a potential pyrochlore depressant, replacing the industrially used cornstarch.

O crescimento do futebol feminino mundial vem abrindo possibilidades para que cada vez mais tenham profissionais interessados na modalidade. O treinamento de goleiras de futebol feminino está evoluindo com a modalidade, dentro disso o desempenho de altura de salto em goleiras de futebol feminino é algo relevante. Assim, o objetivo do estudo foi conduzir uma revisão sistemática a fim de verificar o desempenho na altura de salto de goleiras de futebol feminino. A busca foi realizada nas bases de dados PubMed e SPORTDiscus em janeiro de 2023 e foram encontrados 109 artigos, dos quais 8 foram incluídos. A avaliação de salto mais utilizada foi o countermovement jump e o equipamento mais utilizado foi o tapete de contato. Os valores de desempenho de salto vertical variaram de 20,65 ± 5,05 até 54,00 cm. Assim, devido a variação dos resultados encontrados, sugere-se que os responsáveis pelas análises verifiquem se os dados de perfil do estudo estão de acordo com o contexto em que serão utilizados como parâmetros no planejamento do treinamento das goleiras de futebol feminino.

A prática profissional do futebol feminino no Brasil vem se expandindo. Essa expansão incentivou a surgimento de categorias de base nas equipes. Com isso, investigar a diferença entre o perfil das jogadoras profissionais e das categorias de base se torna importante para realizar uma melhor transição entre as categorias. Assim, o objetivo do estudo foi comparar o perfil antropométrico e o desempenho físico de jogadoras da categoria sub-20 e profissional do futebol feminino. Para isso, foi realizada a avaliação antropométrica de 19 jogadoras de futebol da categoria sub-20 (17,9 ± 0,81 anos) e 20 jogadoras profissionais (24,4 ± 6,46 anos) de uma equipe de elite do Brasil. Além disso, o desempenho físico foi avaliado pelos testes countermovement jump (CMJ), sprints de 10 metros e 30 metros. Apenas os desempenhos no CMJ e sprint de 30 metros foram diferentes significativamente entre os grupos. Abstract Placing a stronger focus on subject-specific responses to footwear may lead to a better functional understanding of footwear’s effect on running and its influence on comfort perception, performance, and pathogenesis of injuries. We investigated subject-specific responses to different footwear conditions within ground reaction force (GRF) data during running using a machine learning-based approach. We conducted our investigation in three steps, guided by the following hypotheses: (I) For each subject x footwear combination, unique GRF patterns can be identified. (II) For each subject, unique GRF characteristics can be identified across footwear conditions. (III) For each footwear condition, unique GRF characteristics can be identified across subjects. Thirty male subjects ran ten times at their preferred (self-selected) speed on a level and approximately 15 m long runway in four footwear conditions (barefoot and three standardised running shoes). We recorded three-dimensional GRFs for one right-foot stance phase per running trial and classified the GRFs using support vector machines. The highest median prediction accuracy of 96.2% was found for the subject x footwear classification (hypothesis I). Across footwear conditions, subjects could be discriminated with a median prediction accuracy of 80.0%. Across subjects, footwear conditions could be discriminated with a median prediction accuracy of 87.8%. Our results suggest that, during running, responses to footwear are unique to each subject and footwear design. As a result, considering subject-specific responses can contribute to a more differentiated functional understanding of footwear effects. Incorporating holistic analyses of biomechanical data is auspicious for the evaluation of (subject-specific) footwear effects, as unique interactions between subjects and footwear manifest in versatile ways. The applied machine learning methods have demonstrated their great potential to fathom subject-specific responses when evaluating and recommending footwear.

Purpose: To advance the learning of professional practices in teacher education and medical education, this conceptual paper aims to introduce the idea of representational scaffolding for digital simulations in higher education. Design/methodology/approach: This study outlines the ideas of core practices in two important fields of higher education, namely, teacher and medical education. To facilitate future professionals' learning of relevant practices, using digital simulations for the approximation of practice offers multiple options for selecting and adjusting representations of practice situations. Adjusting the demands of the learning task in simulations by selecting and modifying representations of practice to match relevant learner characteristics can be characterized as representational scaffolding. Building on research on problem-solving and scientific reasoning, this article identifies leverage points for employing representational scaffolding. Findings: The four suggested sets of representational scaffolds that target relevant features of practice situations in simulations are: informational complexity, typicality, required agency and situation dynamics. Representational scaffolds might be implemented in a strategy for approximating practice that involves the media design, sequencing and adaptation of representational scaffolding. Originality/value: The outlined conceptualization of representational scaffolding can systematize the design and adaptation of digital simulations in higher education and might contribute to the advancement of future professionals' learning to further engage in professional practices. This conceptual paper offers a necessary foundation and terminology for approaching related future research.

The aim of this study was to evaluate the influence of different stunning methods on the meat quality of Arapaima gigas fillets from fish farming. A total of 48 specimens of A. gigas in the weight class 11.1 to 14.0 kg were investigated; these fish were subjected to different stunning methods for slaughter: ice asphyxia (IA), air asphyxia (AA), electronarcosis (EE) and hypothermia followed by bleeding (HB). Then, data were obtained from the analysis of pH, rigor mortis index (RI), water activity (Aw), instrumental texture (compression strength, firmness and adhesiveness) and blood glucose and via instrumental colourimetry. During the study, for up to 15 days of refrigerated storage, the methods provided pH values below 6.0. A. gigas submitted to EE and HB remained longer in the pre-rigor status. In addition, they expressed lower percentages of Aw. The EE method resulted in better texture assignments in the fillets. The blood glucose values indicated that the fish subjected to EE were less stressed. Concerning instrumental colourimetry, the fillets submitted to EE and HB showed greater luminosity; the fillets subjected to AA showed greater red-green colour intensity, while the fillets subjected to EE showed greater yellow-blue colour intensity. Therefore, the fish did not suffer stress with electronarcosis, and the fillets showed better preservation, juiciness, and tenderness.

Abstract The evolution of female soccer is related to the increase in high-intensity actions and choosing the abilities that best characterize the players' performance. Determining the capabilities that best describe the players' performance becomes essential for coaches and technical staff to obtain the results more efficiently within the competitive calendar. Thus, the study aimed to analyze the correlations between performance in the 20-m sprint tests with and without the ball and the Zigzag 20-m change-of-direction (COD) test without the ball in professional female soccer players. Thirty-three high-level professional female soccer players performed the 20-m sprint tests without a ball, 20-m sprint tests with the ball, and the Zigzag 20-m COD test without the ball. The shortest time obtained in the three trials was used for each test. The fastest time in the three trials was used for each test to calculate the average test speed. The Pearson product–moment correlation test was applied to analyze the correlation between the performance in the tests. Este estudo insere-se no campo da leitura literária e pretende lançar um olhar à atuação do narrador como um mediador simbólico de leitura e, assim, responsável também por aproximar ou distanciar o leitor da obra. Nessa perspectiva, vê-se a literatura como meio de instrumentalização de leitores a fim de torná-los críticos e autores conscientes das reflexões necessárias para que, de forma livre e crítica, tomem suas decisões frente ao contexto em que estão inseridos. Assim sendo, com base no aporte teórico de estudiosos da leitura literária, da narrativa, do narrador e da mediação, analisamos o livro Percy Jackson e os deuses gregos, de Rick Riordan, e apresentamos uma proposta de mediação leitora realizada com adolescentes com idade entre 11 e 13 anos, em uma escola comunitária gaúcha. Entre os resultados obtidos, pode-se destacar a importância do processo descrito no estudo para a formação do perfil leitor dos estudantes, contribuindo com a prática docente e a seleção de narrativas pertinentes à proposta.

The main aimed of this study was to evaluate the physicochemical parameters, abundance and density of cyanobacteria, determine their blooms and the ecotoxicological risk of their cyanotoxins in fish ponds water. This study was conducted out in 20 fish farms in Rondônia state (Brazilian Amazon), samplings were carried out in the rainy and dry seasons. The experiment was developed in a completely randomized factorial design 20 × 3 x 3 (20 fish farms, 3 ponds and 3 replications). Regarding the composition of qualitative samples, horizontal and vertical hauls were carried out on the water surface, quantitative samples was obtained using a plankton net (50 μm mesh opening). Meanwhile, with the use of a multiparametric probe, physicochemical analyzes in fish ponds water were carried out. Furthermore, the cyanobacteria found were classified taxonomically and its blooms were recorded. Finally, blood was collected from 60 Colossoma macropomum. Concerning the higher averages in the rainy season 6.13 mg L⁻1 of dissolved oxygen, 40.02 cm of transparency, 0.35 NO31⁻ of nitrate, 0.15 NO21⁻ of nitrite, 44.55 mg L⁻1 CaCO3 of alkalinity and 50.10 mg L⁻1 CaCO3 of hardness, while higher averages of pH, phosphate and phosphorus were found in the dry season. A total of 15 families and 29 species of cyanobacteria were identified in the different seasons. The families that showed the highest densities (rainy and dry seasons) were Microcystaceae (356 and 760 cells mL⁻1), Leptolyngbyaceae (126 and 287 cells mL⁻1) and Microcoleaceae (111 and 405 cells mL⁻1). The species that showed the highest densities were Microcystis aeruginosa (356 and 697 cells mL⁻1), Planktolyngbya limnetica (98 and 257 cells mL⁻1) and Planktothrix sp. (111 and 239 cells mL⁻1). There were significant Pearson's correlations (r > 0.85; p QL). Abundance and density of cyanobacteria and their blooms and cyanotoxins can be used as bioindicators of eutrophication and/or water quality and ecotoxicological risk in fish ponds.

The main aimed of this study was to provide information on microplastics present in the freshwater of fish farm ponds. In addition, the study showes a relationship between the seasonal, spatial distribution and the amount of microplastics found. This study was conducted in 35 fish farms located in the Rondônia state, Brazil, the sample collects were carried out in the two Amazonian hydrological seasons (dry and rainy). The study was developed in a completely randomized factorial scheme 35 × 3 x 3 (35 fish farms, 3 ponds and 3 repetitions per ponds). Microplastic sampling was performed following a modified method based on National Oceanic and Atmospheric Administration (NOAA). This paper presents a new interim check device for coordinate measuring machines (CMMs) built from an AISI 1020 carbon steel bar with the incorporation of calibrated spheres. This artifact’s construction was made to make the interim checks of machines of this type faster and cheaper. Three devices were designed based on the ISO 10360-2 standard, the good practice guide No. 42 (NPL), and prominent authors’ research on the subject. The three options are presented in detail, but only one was built due to budget, size, and adaptability restrictions. An exploratory study was conducted to verify the device’s usability in two CMMs and concluded that the differences between the measurements are not significant. However, one machine had absolute variation values and a total standard deviation higher than the other, generating a larger expanded uncertainty.

This study investigates the hydrophobic aggregation of fine quartz particles through shear flocculation induced by dodecylamine in aqueous solutions. The effect of stirring speed, collector concentration, flocculation time, and pH were investigated. The results showed that the impact of stirring speed on particle aggregation in the absence of a collector is very limited. Quantitative analyses demonstrated that the variation of collector concentration intensified the flocculation process more than the stirring rate. Numerical optimization showed that the large volume occupied by the flocs was 12.3 mL, achieved with a stirring speed of 2135 rpm and dodecylamine concentration of 1.39 × 10−2 mol·L−1. The highest quartz particle aggregation was observed at pH 10.5, corroborating the importance of the non-dissociated amine molecules for particle hydrophobization. High zeta potential values did not result in reducing aggregation, indicating that hydrophobicity was the governing factor in the shear flocculation process.

This study aimed to evaluate the occurrence of mycotoxigenic fungi in fish farm water and mycotoxins in feeds for farmed tambaqui (Colossoma macropomum). A total of 40 samples of freshwater from fish farms and 16 samples of feed were collected and analyzed for microbiology. A total of five species of free-living fungi were identified in fish farms: Aspergillus fumigatus, Penicillium citrinum, P. implicatum, Fusarium oxysporum and Alternaria alternata. These fungi species were counted in water samples at 35.14 CFU mL−1 and 24.69 CFU mL−1 in the dry seasons. In all fish farms, there was a higher abundance of fungi species in the rainy season. During visits to the fish farmers, it was possible to verify poor feed storage conditions. Concerning mutations in blood cells, in tambaqui (C. macropomum), a total of 159 anomalies were found, and in Leptodactylus petersii, 299 anomalies were found, with higher incidences in conditions above 1.0 CFU mL−1 in log10(x+1) fungi and in the rainy season. The occurrence of mycotoxicological contamination was confirmed in 81.25% of the analyzed samples. The quantified mycotoxin was Fumonisins B1 + B2 (375 to 1418 μg kg−1). Pearson’s correlation analysis showed a significant positive correlation between Fumonisins and feed samples (r = 0.83). There was also a significant positive correlation between the abundance of fungi in water and the quantification of Fumonisins (r = 0.79). Based on the results obtained, it can be concluded that free-living fungi can be used as bioindicators of water quality in fish farms. Consequently, the lack of good management practices caused microbiological contamination of the aquatic environment.

The production of fish flour is an alternative for better use of the raw material, although it is rarely used in instant food. Thus, the aimed of this study was to evaluate Oreochromis niloticus (Nile tilapia) and Cynoscion virescens (croaker) fillets and the elaboration of flour with filleting by-products for inclusion in food products. Carcasses and heads of the two fish species were cooked, pressed, ground, subjected to drying and re-grinding to obtain standardized flours. These carcass flours were seasoned (sweet and salted). This study was organized into two experimental tests: Test 1: Yield, physicochemical and microbiological analyzes of fillets and flours made from carcass and head of Nile tilapia and croaker; Test 2: Seasoned flours made from Nile tilapia carcasses. There was a difference in fillets yield, where the croaker demonstrated 46.56% and the Nile tilapia 32.60%. Nile tilapia fillets had higher protein content (17.08%) and lower lipid content (0.89%) compared to croaker fillets (14.21 and 4.45%). Nile tilapia backbone flour had the highest protein content (55.41%) and the croaker the highest ash (45.55%) and the lowest Nile tilapia (28.38%). The head flours had lower protein contents (39.86%). Flours produced with croaker backbone had higher levels of calcium and phosphorus (9.34 and 9.27%). However, Nile tilapia backbone flour showed higher contents of essential amino acids. These flours demonstrated a fine granulometry (0.23 to 0.56 mm). Seasoned flours demonstrated interaction between fish species and flavors for moisture, ash, carbohydrates, calcium and phosphorus. The highest protein content (29.70%) was for Nile tilapia flour sweet flours (31.28%) had higher protein content, while salted lipids (8.06%). Nile tilapia has a lower fillet yield, although with a high protein content and low lipid content. Comparing the flours made from filleting by-products, the backbone flour has better nutritional quality, with Nile tilapia being superior to that of croaker, especially in terms of protein and amino acids.
