Valencian paella is a world-famous dish that is originally from the Valencia Spanish region, in which rice is the basic ingredient along with others such as extra virgin olive oil, vegetables, seafood and/or meat. During the cooking process, the paella rice suffers a loss of moisture and the socarrat is formed, being crunchy and brown in color. The objective of this work was to evaluate the aromas generated during the formation of socarrat in paella rice (P) by an electronic nose (E-nose), discriminating against the aromatic profile of white rice (WR), and validate it with sensory analysis and gas chromatography. The results of the sensory analysis showed a decrease in positive fruity and sweet aromas of some volatile compounds such as hexanal and nonanal, among others, and an increase in roasted aromas due to the appearance of furans and furanones compounds, which is probably associated with socarrat formation. The acrylamide content increased by 33.8–48.3% as the intensity of the thermal treatment rose. The higher value of acrylamide (179.5 ng g−1) was achieved in P. The E-nose was sensitive to changes in the aromatic profile, and the PCA analysis explained 85.7% and 91.6% of the variance for WR and P, respectively. Furthermore, a strong clustering in the thermal treatments was observed, which is related to the composition of volatile compounds.

Scientific literature has been consistent for the past decades, exposing the dangers behind hazardous air quality in both indoor and outdoor environments, and its impact on human health and ecosystems. Conventional monitoring stations are expensive and bulky, limiting the spatiotemporal resolution of the provided data. For this reason, administrations are interested in adding low-cost sensors to the monitoring network, and thus obtaining measures from multiple sources to enhance the network’s density and coverage. In this work, we present a portable Instrumental Odour Monitoring System (IOMS) consisting of an electronic device with an array of metal oxide semiconductor (MOS) gas and Particle Matter sensors connected through Bluetooth with a smartphone with our own developed app that gathers data and sends it to a cloud. A adolescência é, na realidade, uma fase de extrema importância no desenvolvimento e deve merecer uma atenção, compreensão e foco especiais. Neste período específico ocorrem múltiplas alterações físicas, psicológicas, cognitivas e sociais. Com todas essas mudanças, aparece também o desejo e começo de atividades ou envolvimento sexual, o que acarreta diversos comportamentos de risco devido a esta ser uma fase de testar a independência de alguém, em parte por meio de uma conduta arriscada. Muitas vezes assume-se sob a forma de comportamento sexual de risco. Esses riscos, intimamente ligados e associados ao sexo desprotegido, estão particularmente ligados a outros riscos durante a adolescência. Assim sendo, os adolescentes de hoje podem ser bastante suscetíveis ao envolvimento em comportamentos de risco sexual na sua vida adulta e isto resulta de falta de informação e de dependerem das opiniões e comportamentos dos pares no que concerne à sexualidade trazendo muitas consequências negativas para as suas vidas. Dessa forma, este projeto foca-se em compreender as trajetórias de risco sexual durante a adolescência e a idade adulta mais jovem, bem como, em compreender e caracterizar os fatores psicológicos e sociais que influenciam a sexualidade na adolescência. Verifica-se um problema com grande parte das investigações sobre comportamento sexual de risco na adolescência e na idade adulta jovem é que a maioria dos estudos é transversal e, consequentemente, concentra-se apenas em longos períodos em pessoas na adolescência ou na idade adulta. Neste estudo vai ser usado um questionário online “Crenças e Comportamentos Sexuais de Risco” que visa compreender e caracterizar os fatores psicológicos e sociais que influenciam o comportamento e crenças sexuais na adolescência e em jovens adultos, o impacto da saúde mental nas representações e comportamento sexual de risco na adolescência, bem como a influência do início precoce da atividade/comportamento sexual sem parceiro, com um parceiro ou com múltiplos parceiros. E pretende-se que este estudo possa contribuir para a nossa compreensão do risco ou resiliência da saúde mental em jovens que iniciam atividades sexuais no final da adolescência e no início da idade adulta, examinando as alterações nos sintomas psicopatológicos na adolescência e no início da idade adulta. The concept of adolescence is not univocal, however, it is possible to describe it as a transition phase between childhood and adulthood. Adolescence is, in reality, a phase of extreme importance in development and should deserve special attention, understanding and focus. During this specific period, several physical, psychological, cognitive and social changes occur. With all these changes, there is also the desire and the beggining of activities or sexual involvement, which entails several risky actions due to this being a phase of testing someone's independence, partly due to risky conduct. They often assume a form of risky sexual behavior. These risks, closely linked and associated with unprotected sex, are particularly linked to other risks during adolescence. Therefore, today´s teenagers can be very susceptible to engaging in sexual risk behaviors in their adult lives and this results from a lack of information and from relying on peers' opinions and behaviors regarding sexuality, bringing many negative consequences for their lives. Thus, this project focused on understanding how sexual risk trajectories during adolescence and younger adulthood are represented, as well as, understanding and characterizing the psychological and social factors that influence sexuality in adolescence. In fact, there is a problem with most of the research on risky sexual behavior in adolescence and young adulthood is that most studies are cross-sectional and, consequently, concentrate only on long periods in people in adolescence or adulthood. In this study, an online questionnaire "Risk Sexual Beliefs and Behaviors" will be used, which aims to understand and characterize the psychological and social factors that influence sexual behavior and beliefs in adolescence and young adults, the impact of mental health on sexual representations and behavior risk factors in adolescence, as well as the influence of early onset of sexual activity/behavior without a partner, with one partner or with multiple partners. And it is intended that this study can contribute to our understanding of the risk or resilience of mental health in young people who initiate sexual activities in late adolescence and early adulthood, examining changes in psychopathological symptoms in adolescence and in early adulthood.

6 páginas, 5 figuras, This paper describes a prototype of artificial olfactory system or electro-optical nose (NEONOSE) containing commercially available MOX and optical (NDIR) gas sensors, forming an array of a total of 13 sensors (six MOX and seven NDIR sensors). The advantage of this configuration is to combine non-specific (MOX) and specific (NDIR) sensors to obtain an orthogonal array of sensors with a wider spectrum of responses. All the electronic circuits have been designed for this application. The prototype consists of two boards (containing different type of sensors) with two microcontrollers that communicates each other by using a digital interface. The Main Board is responsible for collecting the measurements from all the sensors and transmitting them via Bluetooth to a Smartphone. All the sensors that transmit data via IC bus, which are all the MOX sensors and one of the optical sensors, are located on this board (main). The Secondary Board contains other NDIR sensors and is responsible for processing and sending this data to the Main Board via SPI communication. All the sensors of the Secondary Board are NDIR type. Some of them return the values in analog format, requiring the use of operational amplifiers for signal processing and analog-to-digital converters for data generation. The pre-processed data of all the sensors are sent via Bluetooth to an Android smartphone, where they are collected and stored using an own-developed application. As hotspot networks are increasingly present and used, the amount of sensitive information that is transmitted in this type of network and the fact that users might not be trustworthy leads to the need for existence of security mechanisms that can guarantee, at least, confidentiality and integrity of the users’ transmitted data, as well as the authentication of these networks in order to avoid malicious ones. The majority of public hotspots work based on captive portals and require "authentication", which is not always a secure one (through a captive portal) however, captive portals can be explored in order to be used in conjunction with different technology to provide more secure solutions. This works studies the 802.1X architecture and the way it is used, it also studies captive portals and the different ways that public hotspots provide Internet to its users. The goal of this work is to develop an application that will allow users to register themselves in a system, seamlessly provide them with asymmetric credentials and configure a Wi-Fi connection to a secure network. The registration in this system and the download of the application are done through a captive portal. The users can then authenticate in the secure Wi-Fi network that was configured in their devices, this network is an extension of the EAP method, namely TLS, to authenticate the users according to the credentials that were given to them. This network also allows for authentication, authorization and accounting of its users, it will also allow users that registered in a given captive portal to use the network in any place where it is provided. Visto que as redes hotspot estão cada vez mais presentes e são bastante utilizadas, a quantidade de informação sensível que é transmitida neste tipo de redes e o facto dos utilizadores poderem não ser de confiança, faz com que seja necessária a existência de mecanismos de segurança que consigam garantir, pelo menos, a confidencialidade e integridade dos dados transmitidos, bem como a autenticação deste tipo de redes, por forma a evitar eventuais redes malignas. Grande parte dos hotspots públicos funcionam com base em captive portals sendo necessária uma "autenticação", que nem sempre pode ser considerada como segura (através de um portal web) contudo estes podem ser explorados por forma a ser utilizados, em conjunto com outras tecnologias, para providenciar soluções mais seguras. Este trabalho estuda o que é a arquitetura 802.1X e a forma como é utilizada, estuda também como funcionam os captive portals e as diferentes formas através das quais hotspots públicos fornecem Internet aos seus utilizadores. O objetivo deste trabalho é desenvolver uma aplicação que permitirá aos seus utlizadores registaram-se num sistema, fornecer-lhes credenciais assimétricas, de uma forma simplificada, e configurar uma ligação Wi-Fi a uma rede segura. O registo neste sistema e o download da aplicação serão feitos através de um captive portal. Os utilizadores poderão então autenticar-se na rede Wi-Fi segura que foi configurada nos seus dispositivos, esta rede utiliza uma extensão do protocolo EAP, nomeadamente o TLS, para autenticar os seus utilizadores tendo em conta as credenciais assimétricas que lhes foram fornecidas. Esta rede além de permitir fazer autenticação, autorização e a contabilização dos seus utilizadores, também permitirá que os utilizadores que se registem num determinado captive portal possam utilizar esta rede em qualquer sítio onde é fornecida. Dissertação de Mestrado em Engenharia Informática apresentada à Faculdade de Ciências e Tecnologia Esta tese introduz o tema da Resposta Automática a Perguntas por Agentes Conversacionais, cujo interesse tem vindo a crescer ao longo dos últimos anos devido à importância que estes têm na criação de uma relação entre os utilizadores e os produtos que utilizam, por exemplo, através de assistentes pessoais, websites de apoio ao cliente, entre outros.Numa primeira fase foram desenvolvidos modelos para o cálculo da Similaridade Semântica Textual em português com o objetivo de os utilizar para fazer o mapeamento de perguntas feitas por um utilizador e as respetivas respostas. Estes modelos recorrem ao cálculo de caraterísticas textuais entre pares de frases que são utilizadas para treinar algoritmos de aprendizagem computacional supervisionada que lhes atribuem um único valor de similaridade. A avaliação dos modelos foi feita com recurso à coleção da tarefa ASSIN de 2016, e, apesar de não terem atingido a performance do atual estado-da-arte, o seu desempenho está em par com os das melhores equipas participantes.Numa segunda fase, o modelo desenvolvido com melhor desempenho foi integrado num agente de diálogo de domínio específico. Este é capaz de identificar perguntas fora do seu domínio e, assim, responder com base num conjunto de frases de legendas de filmes, o que torna a conversa mais natural. A avaliação foi feita com recurso a variações das perguntas da base de conhecimento do agente, que permitiram quantificar o número de respostas corretas num cenário de diálogo mais próximo da realidade. Os resultados obtidos são promissores e substancialmente melhores do que os das baselines criadas para comparação. This thesis introduces the subject of Question Answering by Conversational Agents, whose interest has been rising over the past few years due to their importance on creating a relationship between consumers and the products they use, for example, through personal assistants, customer support websites, among others.In a first phase, a set of models to compute the Semantic Textual Similarity between sentences in Portuguese were developed with the aim of mapping questions from a user and their corresponding responses. These models required the extraction of textual features between pairs of sentences in order to train a variety of machine learning algorithms that can assign them a single value of similarity. The evaluation of these models resorted to the ASSIN 2016 task collection, and, although they did not reach state-of-the-art performance, it was up to the results obtained by the best participating teams.In a second phase, the model with the best performance was integrated into a domain-specific dialogue agent as its search engine. This agent is capable of identifying out-of-domain interactions and respond to them using a set of movie subtitles, which make the conversation feel more natural. In order to test how well the agent performed, a set of variations of the questions in the agent's knowledge-base were created. These allowed to quantify the number of correct responses in a more realistic conversational environment. The results were promising and substantially superior to the baselines developed.
