Abstract

Cereal bars are so-called convenience foods. Consumers value these products as a healthier alternative to traditional chocolate bars. Since these snacks usually contain added dried fruit, they have high potential for the utilisation of waste materials from the fruit industry. The study aimed to determine the effect of fortification of cereal bars with grape and apple pomace on their nutritional value, physical properties, and sensory quality. The control recipe was modified by replacing 10 or 20 g of sultanas with apple or grape pomace. The fortification with these food by-products resulted in a significant increase in the moisture content of the products, an increase in soluble fibre content, and a decrease in the level of antioxidant compounds. The strength of the cereal bars supplemented with grape and apple pomace increased. In addition, the panellists noticed a colour difference compared to the unmodified product (2 < ΔE < 5). A positive effect of the addition of the fruit pomace on the visual characteristics of the cereal bars was also observed. No changes were observed in the tastiness of the product. On the other hand, the aroma of the modified products and the texture of the bars containing the apple residue were less acceptable. In conclusion, cereal bars containing grape pomace and up to 10 g of apple pomace are characterised by high soluble dietary fibre content and desirable sensory and mechanical properties and are therefore recommended for industrial production. 16. Effect of Supplementation of Freshly Pressed Carrot Juice with Rhus coriaria L. on Changes in Juice Quality.

Abstract

The creation of an environmentally friendly food system involves, e.g., the production of safe and healthy food and the reduction of its waste. Therefore, the main aim of this research was to determine the effect of the addition of ground sumac powder (in the amount of 0.5, 1.5, and 3.0 g/100 mL) on the physicochemical properties of freshly pressed carrot (Daucus carota L.) juice and to obtain a product with extended shelf life. The analyses revealed the multiplication of microorganisms in the control juice samples during storage and the inhibition of the multiplication in the sumac-enriched samples. After 72 h, the addition of sumac in the amount of 0.5, 1.5, and 3 g reduced the total number of microorganisms by 1.7, 2.9, and 3.1 log10 CFU/g, respectively, compared to the control. The supplementation of carrot juice with sumac in the amount of 3% increased the content of carotenoids and polyphenolic compounds on the first day of storage by 23% and 40%, respectively, compared to the control sample. The addition of sumac to the carrot juice extended the shelf life of the product with a simultaneous significant increase in polyphenols classified as health-promoting substances. Abstract

Abdominal Aortic Aneurysm (AAA) is a major cause of cardiovascular mortality. Adverse changes in vascular phenotype act in concert with chronic inflammation to promote AAA progression. Perivascular adipose tissue (PVAT) helps maintain vascular homeostasis but when inflamed and dysfunctional, can also promote vascular pathology. Previous studies suggested that PVAT may be an important site of vascular inflammation in AAA; however, a detailed assessment of leukocyte populations in human AAA, their anatomic location in the vessel wall and correlation to AAA size remain undefined.\ud Accordingly, we performed in depth immunophenotyping of cells infiltrating the pathologically altered perivascular tissue (PVT) and vessel wall in AAA samples at the site of maximal dilatation (n=51 patients). Flow cytometry revealed that T cells, rather than macrophages, are the major leukocyte subset in AAA and that their greatest accumulations occur in PVT. Both CD4+ and CD8+ T cell populations are highly activated in both compartments, with CD4+ T cells displaying the highest activation status within the AAA wall. Finally, we observed a positive relationship between T cell infiltration in PVT and AAA wall. Interestingly, only PVT T cell infiltration was strongly related to tertiles of AAA size.\ud In summary, this study highlights an important role for PVT as a reservoir of T lymphocytes and potentially as a key site in modulating the underlying inflammation in AAA.

Abstract

Changes in textural properties of Polan and Legenda cultivars of soybean seeds resulting from hydrothermal processing were analyzed. The seeds were subjected to treatment consisting of soaking them in water on 20ºC for 120 minutes and were taken out each time and were subjected to compression tests. During the process of soaking a decrease in the values of hardness and chewiness of soybean seeds occurs. Changes in hardness and chewiness of the Polan variety are described by means of the linear function. For every minute the values of hardness dropped by 1.71 N on the average, and of chewiness by 0.3 N. Changes in hardness and chewiness of the seeds Legenda variety were described by means of the exponential function. The coefficients of equations determined here suggest that for every minute there is a 2% reduction in hardness and a 4% reduction in chewiness.

Abstract

The paper presents the results obtained from survey conducted among clients. The study was designed to test consumer preferences and attitudes on the fish and fish products market. Were used nonprobability method - quota sampling due to gender, age, education and place of residence. The research was conducted using an anonymous questionnaire, developed specifically for this work. The own research results demonstrated that education and age are factors differing opinions on the assessment of market fish and fish products. Both, the education of the respondents and their age made it possible to distinguish two segments of differentiating consumers. The first focus, represented mainly by the elderly, with higher education, characterized by an increased awareness of pro health fish products and they can discerned their taste compared to the second cluster composed mainly by younger people with primary education or vocational education.

Abstract

The study aimed at assessing the awareness concerning the qualities of tomatoes and their products, as well as the frequency and determinants of their consumption by the students of the University of Life Sciences in Lublin. The respondents included 108 female and 122 male students. Statistical analyses (the test and the Kruskal-Wallis test) revealed some differentiation in that awareness, depending on the sex and place of residence. Women and residents of towns of up to 50,000 inhabitants revealed a higher level of awareness, as compared with men and residents of villages and towns with more than 50,000 inhabitants. Students with a higher level of knowledge regarding the composition of tomatoes and their effect on human organism consume tomato products more frequently and verify the content of packaging labels.

Abstract

Background: Allergic rhinitis affects 10-30 % of the global population and this number is likely to increase in the forthcoming years. Moreover, it commonly co-exists with allergic asthma as a chronic allergic respiratory syndrome. While the involvement of Th2 cells in allergy is well understood, alterations of pro-inflammatory Th17 responses remain poorly characterized. The aim of our study was to determine whether natural seasonal allergen exposure causes changes in T cell subset characteristics in patients with allergic rhinitis and asthma. Methods: Sixteen patients with allergic rhinitis/atopic asthma (9M, 7F; age 31.8 ± 12.1) and 16 healthy controls were recruited into the study (9M, 7F; age 31.2 ± 5.3). Blood samples were collected from the patients 1-3 months before pollen season (visit 1), within 7 days of the appearance of pollen/initiation of allergic symptoms (visit 2) and 2 weeks after visit 2 following the introduction of symptomatic treatment with antihistamines (visit 3). Flow cytometry was used to assess major T cell subsets (naïve, central memory, effector memory and CD45RA+ effector) and key T cell cytokine production (IFNγ, IL-17A, TNF and IL-4) using intracellular staining. Data were analyzed using repeated measures ANOVA and paired t test. Results: As expected, an increase in the percentage of IL-4+ CD4+ cells was observed during natural pollen exposure in patients with allergic respiratory syndrome. No significant changes were observed in the production of other cytokines, including Th17 cells, which tended to be lower than in the control population but unchanged during pollen exposure. Introduction of antihistamine treatment led to only moderate changes in cytokine production from CD4 and CD8 T cells. Selective changes in CD8+ T cells were observed during natural pollen exposure including a decrease in transient cells (with features of CD45RA+ and CD45RO+ cells) and a decrease in the percentage of central memory cells in the peripheral circulation. Within the CD4 cell group the total percentage of CD45RA positive CD4 cells was increased during pollen exposure. Conclusions: Th1 and Th17 responses are not altered during pollen season but allergen exposure affects T cell activation and memory cell status in patients with allergic respiratory syndrome. Abstract

Usefulness of analytical method (bromocresole purple index - BCPI) as a new and fast way for available lysine (LA) content determination in micro-waved soybean seeds was tested. Due to a great interdependence of LA and BCPI determinations, which was confirmed by high correlation and determination coefficients values (r = 0.78 and R²) for proposed regression equations LA = f(BCPI), the BCPI method appeared to be useful for the description of available lysine (LA) content changes in micro-waved soybean seeds and soybean meal.
