AbstractWheat-based foods has emerged as another potential vehicle for foodborne illness in humans. The recent occurrence of recalls involving wheat-based foods requires a full understanding of how these pathogens thrive in these food products and developing potential intervention strategies to address pathogen contamination. This manuscript is the second of a two-part review covering the status of the food safety of wheat-based products. In this manuscript, available information on the survival of enteric foodborne pathogens, food safety issues, and potential pathogen reduction steps on wheat-based foods were reviewed. Shiga toxin-producing E. coli and Salmonella are capable of surviving in wheat flours and grains for extended periods (≤ 2 years). Based on the food safety issues linked to wheat flour, the main enteric pathogens of concern are STEC (O157, O121, O26, and O103) and Salmonella. Diverse interventions such as tempering treatments, thermal treatments, and non-thermal technologies all effectively reduced the pathogenic loads of wheat grains and wheat flours (2 to 6 log CFU/g reduction). Addressing pathogen contamination of wheat-based foods is a major concern for the milling industry. Future studies could be focused on improving pathogen reduction performance and validating their effects against diverse product and process conditions. [ABSTRACT FROM AUTHOR]

Background and objectives: As wheat is milled into flour, there is a substantial risk of cross‐contamination by microorganisms potentially inhabiting the milling equipment. The objectives of this study were designed (a) to assess the levels of microbial contamination associated with the milling equipment and the wheat as it is processed from grain to packaged flour, and (b) to identify equipment that could serve as a source of contamination during processing. Findings: Equipment used to clean and temper wheat grain was found to harbor substantial populations of aerobic mesophilic bacteria, Enterobacteriaceae, and molds. Generic E. coli was found in 2 instances on cleaning equipment at an average of 0.4 log CFU/10 cm2. Coliform counts increased markedly in wheat kernels and milled fractions after passing through the different milling steps. Conclusions: These data demonstrate that microorganisms, including fecal indicators, were common colonizers of milling equipment and that a consistent cross‐contamination risk existed throughout the processing line. Cleaning and sanitation efforts should focus especially on tempering equipment and prompt removal of buildup of grain/flour residues within the milling equipment. Significance and novelty: This study identified critical control areas and equipment where cross‐contamination is likely to occur during milling. Background and objectives: Refrigerated dough products have the potential to be a safety hazard to consumers because they could be consumed raw or undercooked. The objectives of this study were designed to evaluate the microbial and functionality changes in high pressured sugar‐cookie dough as a function of aw (0.80–0.87), pressure level (100–600 MPa), and holding time (1–6 min). Findings: Endogenous microbial populations were marginally reduced (0.2–0.5 log CFU/g) by pressure treatments. However, treating the dough at 600 MPa for 6 min significantly reduced counts of inoculated Escherichia coli by as much as 2.0 log CFU/g. Increasing the aw of cookie dough from 0.80 to 0.87 did not play a significant role in the reduction of microbial counts; however, it yielded a softer and thicker cookie when baked. Dough and cookie physical characteristics did not differ significantly among HPP‐treated and control doughs within the same aw level. Conclusions: The results of this study suggest that pressure treatment has the potential to improve the microbiological quality of wheat‐based cookie doughs. However, variations in food matrix composition must be considered because some food constituents, such as sugar and fat, may protect microorganisms against pressure‐induced inactivation. AbstractThe number of food safety issues linked to wheat milled products have increased in the past decade. These incidents were mainly caused by the contamination of wheat-based products by enteric pathogens. This manuscript is the first of a two-part review on the status of the food safety of wheat-based products. This manuscript focused on reviewing the available information on the potential pre-harvest and post-harvest sources of microbial contamination, and potential foodborne pathogens present in wheat-based products. Potential pre-harvest sources of microbial contamination in wheat included animal activity, water, soil, and manure. Improper grain storage practices, pest activity, and improperly cleaned and sanitized equipment are potential sources of post-harvest microbial contamination for wheat-based foods. Raw wheat flour products and flour-based products are potentially contaminated with enteric pathogens such as Shiga toxin-producing E. coli (STECs), and Salmonella at low concentrations. Wheat grains and their derived products (i.e., flours) are potential vehicles for foodborne illness in humans due to the presence of enteric pathogens. A more holistic approach is needed for assuring the food safety of wheat-based products in the farm-to-table continuum. Maize ( Zea mays) is a staple in many developing countries but is known to be prone to pest (insects, birds, and rodents) and fungal infestation. In Guatemala, mycotoxin contamination of cultivated products may occur owing to such factors as environmental conditions and the use of traditional agriculture operations. To assess the current maize conditions in Guatemala, a small-scale study was performed. Mold and insect counts and mycotoxin (aflatoxin and fumonisin) concentrations were determined on 25 farms in two townships (Chiantla and Todos Santos) of the Huehuetenango Department. Total fungal counts were 3.6 to 6.83 log CFU/g with no significant differences ( P > 0.05) across farms at different altitudes. Farms where maize was not produced but was purchased were at higher risk of fumonisin contamination, whereas local producers were mostly affected by aflatoxins. Aflatoxin was present in maize from 100% of farms at 1.0 to 85.3 ppb, and fumonisin was detected on 52% of farms at 0.4 to 31.0 ppm. Average mycotoxin consumption amounts were above the recommended maximum intake for aflatoxin in both produced and purchased maize and above the provisional maximum tolerable daily intake for fumonisin in purchased maize. Estimated daily intake was 0.01 to 0.85 μg/kg of body weight per day for aflatoxin and 2.9 to 310.0 μg/kg of body weight per day for fumonisin. An entomological analysis revealed overall 32% prevalence of Ephestia kuehniella (flour moth), 16% prevalence of Sitophilus zeamais (maize weevil), and 8% prevalence of Tribolium sp. (flour beetle) on the analyzed farms. This study highlighted poor agricultural practices used in the highlands of Guatemala.
