Inclusion of legume in grass pastures optimizes protein values of the forage and promotes improved digestibility. Therefore, we hypothesized that finishing steers on a novel combination of legumes and grass pasture would produce carcasses with acceptable traits when compared to carcasses from steers finished in feedlot systems. In this study, we evaluated the effects of finishing steers on three systems including: grazing legume–grass pasture containing oats, ryegrass, white and red clover (PAST), grazing PAST plus supplementation with whole corn grain (14 g/kg BW (SUPP)), and on a feedlot-confined system with concentrate only (28 g/kg BW, consisting of 850 g/kg of whole corn grain and 150 g/kg of protein–mineral–vitamin supplement (GRAIN)) on growth performance of steers, carcass traits and digestive disorders. Eighteen steers were randomly assigned to one of three dietary treatments and finished for 91 days. Data regarding pasture and growth performance were collected during three different periods (0 to 28, 29 to 56 and 57 to 91 days). Subsequently, steers were harvested to evaluate carcass traits, presence of rumenitis, abomasitis and liver abscesses. The legume–grass pasture provided more than 19% dry matter of protein. In addition, pasture of paddocks where steers were assigned to SUPP and PAST treatments showed similar nutritional quality. When compared to PAST, finishing on SUPP increased total weight gain per hectare, stocking rate, daily and total weight gains. The increase of weight gain was high to GRAIN than SUPP and PAST. Steers finished on GRAIN had high hot carcass weight, fat thickness and marbling score when compared to PAST. However, these attributes did not differ between GRAIN and SUPP. Abomasum lesions were more prevalent in steers finished on GRAIN when compared to PAST. Results of this research showed that it is possible to produce carcasses with desirable market weight and fat thickness by finishing steers on legume–grass pasture containing oats, ryegrass, white and red clover. Moreover, supplementing steers with corn when grazing on legume–grass pasture produced similar carcass traits when compared to beef fed corn only.

The objective of this study was to evaluate the effects of three finishing systems based on concentrate and legume-grass pasture on beef. Steers were finished for 91 days with an exclusively whole corn grain-based (GRAIN) diet, grazed on legume-grass pasture plus 1.4% of body weight of whole corn grain supplementation (SUPP), or grazed on legume-grass pasture (PAST) only. Lipid and myoglobin oxidation, pH, objective color, and α-tocopherol concentrations were evaluated on M. longissimus thoracis steaks. Dietary treatments did not affect pH and minimally affected protein carbonylation. Steaks from steers fed GRAIN were less red, showed higher lipid oxidation during retail display, and higher metmyoglobin formation from day 7 to 13 when compared to PAST. Levels of α-tocopherol were higher in steaks from steers fed diets containing legume and grass. Inclusion of roughage in finishing diets is essential to maintain retail color and prevent lipid and myoglobin oxidation.

Pasture-finished beef is becoming more popular among consumers due to concerns related to fatty acid content and sustainable practices. The effects of finishing crossbred steers on legume-grass pasture comprised of oats, ryegrass, and clover (PAST), legume-grass pasture plus whole corn grain (WCG) supplementation (SUPP), and only with WCG (GRAIN) on fatty acids profile, volatile compounds, sensory, and texture attributes were studied. Pasture diets (PAST and SUPP) led to lower n-6/n-3 ratio (P 0.001), and highest deposition of C18:2 cis-9 trans-11 (P 0.001) in the lean. Beef from steers fed GRAIN had the highest values of volatile compounds associated with lipid oxidation. Off-flavor intensity was significantly greater on beef from steers fed GRAIN when compared to PAST. Overall, muscles from steers finished on PAST and SUPP showed similar attributes but differ when compared to GRAIN. The presence of forage is essential to improve fatty acid profile, decrease volatile compounds associated with lipid oxidation, and minimize off-flavor.

Em busca de competitividade, as modernas empresas do agronegócio diversificam seus produtos, passando a trabalhar com sistemas altamente integrados, muito mais complexos do ponto de vista técnico e também gerencial. A determinação do custo dos produtos assume importância cada vez maior na gestão destas empresas, ao mesmo tempo em que se torna mais difícil devido aos ‘custos de complexidade’, crescentes nestes sistemas produtivos. Este trabalho tem o objetivo de, através de um estudo de caso, aplicar o método de Custeio Baseado em Atividades (ABC) em uma empresa com o perfil do moderno agronegócio brasileiro, evidenciando e discutindo as principais vantagens e desvantagens associadas a esta metodologia. Para facilitar a aplicação, foi utilizado o Time Driven ABC para auxiliar na geração dos direcionadores de custo. Foram identificadas e custeadas 136 atividades, fornecendo uma visão horizontal dos custos, até então não disponível no sistema utilizado, evidenciando as principais atividades consumidoras de recursos em âmbito geral e para cada produto. O cálculo do custo dos produtos através do método ABC apresentou alterações em todos os produtos quando comparado ao obtido pelo método atual (Centros de Custos), sendo que estas alterações foram marcantes apenas nos produtos com menor participação no custo e faturamento total da empresa. A aplicação identificou a capacidade atual das atividades, sendo que trabalhos futuros deverão parametrizar o desempenho ideal para possibilitar a identificação de perdas e desperdícios. The modern agribusiness companies, searching for competitiveness, have diversified their products, going to work with highly integrated systems, much more complex both in technical and management standpoint. The product cost determination have assumed increasing importance in these companies management, other side, it becomes more difficult due to the 'complexity costs', that have growing in these enterprises. This work aims, through a case study, to apply the method of Activity Based Costing (ABC) in a company with the profile of modern agribusiness, showing and discussing the main advantages and disadvantages associated with this methodology. To facilitate implementation, were used the Time Driven ABC to assist in the cost drivers generation. Were identified and funded 136 activities, providing a horizontal view of costs, not previously available on the used system, highlighting the main activities resources consumers at the general level and for each product. The calculation of products costs through the ABC method have altered all products costs when compared to that obtained by the actual method (Cost Centers), and these changes were specially observed in products with lower participation in the total company's costs and revenues. The application identified the current capacity of the activities, and future works should parameterize the optimum performance to enable the losses and wastes identification.

The objective of this study was to implement an indicator system that allows an overview of the performance at all levels of the company and to evaluate its overall performance using a consolidate general indicator. In the company studied, three business sectors were identified (crops, beef cattle production and viticulture) in addition to management sector, to which strategic objectives were determined. After that, it was mapped the macroprocesses that compose each business activity, a total of 14, and the critical indicators of performance to achieve the objectives, making up 50 indicators whose objectives were definied by the management team. It is possible to build consolidated indicators using the Analytic Hierarchy Process method, which allows weighing the relative importance of the indicators at each hierarchical level, that is, macroprocesses, activities and overall company performance for the achievement of the established goals. Esta pesquisa foi realizada com os objetivos de implementar um sistema de indicadores que permita uma visão do desempenho em todos os níveis da empresa e avaliar seu desempenho global por meio de um indicador geral consolidado. Na empresa estudada, foram identificados três ramos de negócio (agricultura, pecuária e vitivinicultura) mais o setor administrativo, para os quais foram determinados objetivos estratégicos. Sequencialmente, foram mapeados os macroprocessos que compõem cada uma das atividades do negócio, num total de 14, e os indicadores críticos de desempenho para o atendimento dos objetivos, perfazendo um total de 50 indicadores, cujas metas foram definidas pela equipe de gestores. É possível a construção de indicadores consolidados utilizando o Analytic Hierarchy Process, o qual permite ponderação da importância relativa dos indicadores em cada nível hierárquico, ou seja, macroprocessos, atividades e desempenho global da empresa em busca dos objetivos traçados.

The objective of this study is to identify demands of customers of a sire-producing company in Rio Grande do Sul, Brazil, by using a methodology adapted from quality function deployment tool. The adaptation consisted on the fact that matrices are treated in an unified manner among product and services due to the high perception of inter-relationship among these business components. The results evidenced that clients priorize traits related to the product, especially genetic value of the bulls. Service items were also highlighted, and they may be presented as an opportunity of differentiation among suppliers. Customer profile influenced priority order inasmuch as farmers with no technical services prioritized performance traits over genetic traits, opposing to those who were assisted and to technical consultants. Concerning to farm size, there were changes only in the tertiary level of the priority order of the demands. The adaptation of the methodology for joint analysis interfered in the results, especially in service prioritization. This study contributed to formatting a model for using quality function deployment in sire production, helping to identify quality demands and its priority levels for the population and researched company, and it may be used in further studies on the product beef sires. Este trabalho foi realizado com o objetivo de identificar as demandas dos clientes de uma empresa produtora de touros de corte no Rio Grande do Sul por meio de uma metodologia adaptada da ferramenta desdobramento da função qualidade. A adaptação consistiu no fato de que as matrizes são tratadas de forma unificada entre o produto e os serviços, devido à percepção do elevado nível de inter-relacionamento entre esses componentes no negócio. Os resultados evidenciaram que os clientes priorizam as características relacionadas ao produto, especialmente o valor genético dos touros. Os itens de serviços também se destacaram, podendo configurar-se como uma oportunidade de diferenciação entre as empresas fornecedoras. O perfil dos clientes influenciou a ordem de priorização, uma vez que os produtores sem assistência técnica priorizaram as características de desempenho às genéticas, ao contrário dos assistidos e dos consultores técnicos. No tamanho da propriedade, só houve alterações na ordem de priorização no nível terciário das demandas. A adaptação da metodologia para a análise conjunta interferiu no resultado, principalmente na priorização dos serviços. O estudo contribuiu com a formatação de um modelo de uso do desdobramento da função qualidade na produção de touros, auxiliando na identificação da qualidade demandada e no seu nível de priorização para a população e empresa pesquisada, podendo ser utilizado em outros estudos para o produto touro.

Objetivou-se neste trabalho propor uma metodologia para implantação de um sistema de indicadores de desempenho para empresas de pecuária de corte. Foram utilizados como suporte à implementação os objetivos estratégicos e a priorização de processos previamente realizados na empresa. Os possíveis indicadores foram listados e confrontados com as eventuais restrições à implantação e posteriormente analisados pela óptica do Balanced Score Card (BSC). Na sequência, procedeu-se à análise individual dos indicadores escolhidos e de seu relacionamento com os objetivos estratégicos da empresa. Foram selecionados 17 indicadores, dois financeiros, nove de processos, quatro dos clientes e dois de aprendizado e crescimento. Evidenciou-se, pela análise de relacionamento, que os indicadores permitem adequado monitoramento dos processos críticos para atingir os objetivos estratégicos consolidando o sistema de gestão. It was aimed to propose a methodology for implementing a performance indicator system in a beef cattle company. Strategic goals and prioritization of process previously performed in the company was used as a support to the implementation. Possible indicators were listed and confronted with occasional restraints to its implementation and further analyzed by the Balanced Score Card (BSC) point of view. Subsequently, indicators were individually analyzed and their relationship with the company’s strategic goals was determined. Seventeen indicators were selected, two under financial perspective, nine under process perspective, four under customer perspective, and two under development and learning perspective. The relationship analysis showed that the indicators support appropriate monitoring of the critical processes to achieve the strategic goals, thereby consolidating the management system.

The method suggests using a series of tools mentioned in the literature that were organized providing logical reasons for the managers to build the management system. When mapping the processes of the studied enterprise, four macroprocesses were identified, which were sustained by 21 support processes, in addition to three management processes. The strategic aims were determined by the internal and external environmental analysis, resulting in five priority items, and the processes considered critical to achieve them were described by flow diagrams. The strategies to achieve the goals were determined by the Porter General Strategies method, where the differentiation option was chosen for the two main macroprocesses, whose action focuses were different. Objetivou-se, por meio de um estudo de caso, propor a implantação de um método de gestão orientado por macroprocessos para auxiliar na definição dos objetivos estratégicos de uma empresa de pecuária de corte, bem como das estratégias para seu atendimento, contribuindo com a manutenção e/ou o aumento da competitividade do negócio. O método propõe a utilização de ferramentas citadas na literatura, ordenadas de forma a orientar o raciocínio lógico dos gestores na montagem do sistema. Um dos maiores desafios para os gestores na atualidade tem sido a adaptação do ambiente interno de suas organizações às constantes mudanças no ambiente externo, as quais são cada vez mais rápidas e influenciadas por um número maior de fatores devido a globalização da economia. Considera-se ainda que o gestor apenas tem possibilidade de atuar no ambiente interno, onde muitas vezes encontram-se os maiores empecilhos ao atingimento dos objetivos. Neste contexto, o presente trabalho tem por objetivo, através de um estudo de caso, propor um método de gestão baseado em macroprocessos e formação de um pacote de indicadores para dar suporte às decisões dos gestores neste ambiente cada vez mais competitivo. O método propõe a utilização de uma série de ferramentas citadas na literatura, subdivididas em dois grandes grupos: mapeamento e gestão por macroprocessos e sistemas de indicadores de desempenho. As ações foram ordenadas de forma a orientar o raciocínio lógico dos gestores na montagem do sistema de gestão. O método é composto de três etapas: Determinação da identidade organizacional, implantação da gestão por macroprocessos e implantação do sistema de indicadores de desempenho. Na empresa estudada, foram identificados quatro (4) macroprocessos, sustentados por vinte e um (21) processos de apoio, além de três (3) processos gerenciais. Foram mapeados usando-se o método dos fluxogramas os processos considerados críticos para o atingimento dos objetivos estratégicos. Tais objetivos foram determinados pelo método das Estratégias Genéricas de Porter, resultando em cinco (5) itens prioritários. Quanto aos indicadores, foram concebidos sob a óptica do Balanced Score Card, determinando-se dois indicadores sob a perspectiva financeira , nove na de processos , quatro na dos clientes e dois na perspectiva de aprendizado e crescimento. One of the largest challenges for the managers at moment has been the adaptation of intrinsic environment of their organizations to the constant alterations of the external environment, which are each time faster and influenced by a bigger number of factors due to the economic globalization. It is still considered that the manager just have the possibility of action at intrinsic environment, where many times, are found the largers obstacles to get the objectives. In this context, this work has the objective, by a case study, of to propose a management method based on macroprocesses and formation of a pack of indicators to give support to the decisions of the managers in this environment each time more competitive. The method suggests the utilization of a serie of tools cited at literature, subdivided in two big groups: mapping and management by macroprocesses and performance indicators system. The actions were organized to give a logical reason to the managers build the management system. The method is based on three stages: determination of the identity organization, introduction of macroprocesses management and introdution of performance indicators system. At the studied enterprise, were identified four macroprocesses, sustained by twenty one (21) support processes, beyond three management processes. Where maped by fluxograms tecnics, the processes considered criticals to obtain the strategicals aims. These aims were identified by the method of General Strategies of Porter, resulting in five priority points. The indicators were conceived under the Balance Score Card optic, where were determined two indicators by the financial, nine by the processes, four by the clients and two by the learning and development perspective.

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES Instituto Federal de Mato Grosso - IFMT Known as the pirarucu in Brazil and paiche in Peru, Arapaima gigas is one of the world’s largest freshwater fish. This species provides excellent industrial yields and has mild-flavored meat, light coloring, soft textures, a boneless fillet, traditionally sold in the domestic market as a dry salted product, and usually portrayed as the “Brazilian cod.” Several factors, directly and indirectly, influence the chemical composition of fish, including intrinsic determinants such as genetics, morphology, physiology, age, body weight, and extrinsic factors including climatic factors, food, production water quality, among others. Given the above, this study aimed to characterize the raw materials of the pirarucu blanket in different-aged animals given climatic variation (rainy and dry periods) and develop salting technology to suggest a protocol that complies with Brazilian legislation. For this, four harvests were carried out in two excavated tanks, obtaining five specimens per harvest per tank, with the animals being 18-, 24-, 25-, and 30-months old. The animals were slaughtered and processed in a local slaughterhouse, and the blankets were characterized according to their biometric indices, proximate composition, caloric value, instrumental color, fatty acid profile, lipid nutritional quality indices, freshness via total volatile nitrogen bases, pH in 24 h, water activity, water retention capacity, drip loss, cooking loss, and shear force. Collagen was quantitatively determined in the pirarucu skin, muscles, and scales, and dry salt blankets were developed only once and under refrigeration using 24-month-old specimens in a composite rotational design with two independent variables (salt concentration and salting time) in fourteen trials whose dependent variables were moisture, ash, water activity, and sodium chloride. There was a statistically significant difference in head weight, average daily gain, blanket compactness index, proximate composition, caloric value, total volatile nitrogen bases, shear force, pH in 24 h, water activity, and collagen in the pirarucu skin. It was found that the younger the fish, the better the Kleiber index and the worse the total length and its correlation with the other indices; both the age and weight of the animal influenced the proximate composition and physicochemical characterization, while the fatty acid profile only correlated with age. It is concluded, therefore, that the particularity of the studied region, where there is no significant variation in temperature and there is only a change in rainfall that directly interferes in the quality of the breeding water, such as the difference in age and weight of the evaluated animals, all influenced, even if in varying degrees, the analyzes and indices carried out showing that it is possible to determine a raw material that expresses the best that a species can produce. In this sense, it was possible to determine the best protocol for the creation and processing of pirarucu aiming both an increase in fish farming of this species and also to meet an increasingly demanding and globalized consumer market. Therefore, it is suggested to carry out the dry salting in a period of 24 h with 21.6% of coarse salt, which complies with Brazilian legislation. Descrito como pirarucu no Brasil e paiche no Peru, o Arapaima gigas é relatado como um dos maiores peixes dulcícolas de escama do mundo tendo ótimo rendimento industrial, além de carne com sabor suave, cor clara, textura macia, filé ausente de espinhas, tradicionalmente comercializado no mercado interno como produto salgado seco e normalmente retratado como “bacalhau brasileiro”. Diversos fatores influenciam direta e indiretamente na composição química do pescado, dentre estes tem-se os intrínsecos tais como genética, morfologia, fisiologia, idade, peso corporal do peixe; e os extrínsecos como fatores climáticos, alimentação, qualidade da água de produção, dentre outros. Por isso, objetivou-se neste trabalho caracterizar a matéria- prima manta de pirarucu com animais de diferentes idades frente à variação climática (chuva e seca) e desenvolver tecnologia de salga visando sugerir um protocolo que atendesse à legislação vigente. Para tal, realizou-se quatro despescas em 2 tanques, obtendo 5 espécimes por despesca por tanque, estando os animais com 18, 24, 25 e 30 meses de idade. Os animais foram abatidos e processados em frigorífico local, e as mantas caracterizadas quanto aos seus índices biométricos, composição centesimal, valor calórico, cor instrumental, perfil de ácidos graxos, índices de qualidade nutricional lipídica, frescor via bases voláteis nitrogenadas totais, pH em 24h, atividade de água, capacidade de retenção de água, perda por gotejamento, perda por cozimento e força de cisalhamento. Determinou-se quantitativamente colágeno em pele, músculo e escama de pirarucu. Desenvolveu-se mantas salgadas secas uma única vez e sob refrigeração utilizando espécimes com 24 meses de idade em delineamento composto rotacional com duas variáveis independentes (concentração de sal e tempo de salga) em quatorze ensaios cujas variáveis dependentes foram umidade, cinzas, atividade de água e cloreto de sódio. Houve diferença estatística significativa para peso da cabeça, ganho médio diário, índice de compacidade da manta, composição centesimal, valor calórico, bases voláteis nitrogenadas totais, força de cisalhamento, pH em 24 h, atividade de água e colágeno em pele de pirarucu. Verificou-se que quanto menor a idade, melhor o índice de Kleiber e pior o comprimento total e sua correlação com os demais índices; tanto a idade quanto o peso do animal influenciaram na composição centesimal e caracterização físico-química, ao passo que no perfil de ácidos graxos obteve-se correlação apenas com a idade. Conclui-se, assim, que a particularidade da região estudada onde não há variação significativa de temperatura e somente existe modificação em regime pluviométrico que interfere diretamente na qualidade da água de criação, tal como a diferença na idade e peso dos animais avaliados, todos influenciaram, mesmo que em graus variados, as análises e índices realizados demonstrando ser possível determinar uma matéria- prima que exprime o melhor que uma espécie pode produzir. Neste sentido, foi possível determinar qual melhor protocolo de criação e processamento do pirarucu visando tanto um incremento na piscicultura desta espécie como também em atender um mercado consumidor cada vez mais exigente e globalizado. Portanto, sugere-se realizar a salga seca em um período de 24h com 21,6% de sal grosso, atendendo ao preconizado na legislação brasileira.

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES The management of animal feed has been carried out with the intention of positively modifying the fatty acid profile of meat products in order to add value and increase its nutritional value. An alternative is the addition of oils rich in polyunsaturated fatty acids (PUFA), such as lindseed oil (LO). However, at the same time that LO is added to the diet, the oxidative stability of the final product may be compromised, based on this, the concomitant use of natural antioxidants such as grape pomace (GP) has been used. The GP has a high antioxidant potential due to the presence of phenolic compounds in its constitution. The objective of the work was to evaluate the effects of supplementation of the pig diet with LO and red grape marc, preserved in the form of silage (GPS) on the quality of raw ham. The LO was included in the diet as a source of omega 3 fatty acids (FA) and GPS as a source of natural antioxidants. Pigs were born from sows of the MO25 line dams (50% Landrace, 25% Large White, 25% Moura) and Embrapa MS115 line borns and were randomly distributed in the experimental groups through a completely randomized design, composed of five treatments with 8 repetitions (4 castrated males and 4 females). The experimental groups were: CON - Control: conventional feed (FC); 3% LO: FC with 3% LO; LO + E: FC with 3% LO and 200mg tocopherol acetate per kg of feed; LO + GPS10: FC with 3% LO + 10% with GPS (dry base); LO + GPS20: FC with 3% LO + 20% with GPS (dry base). The animals were raised in a confinement system, grouped by treatment in concrete stalls, with water slide type byte ball with a density of 1.2 m2 per swine. After a water fast of approximately 12 hours, the animals were slaughtered following the protocols established by the technical regulations for pre-slaughter and humane slaughter management. Slaughter occurred when the animals reached an average weight of 113 ± 2kg. After slaughter operations, the half carcasses were stored at 4 ºC, staying for 24 hours in these conditions. After the salting stage with Sodium Chloride, the legs were subjected to the maturation process, and were kept in cameras with temperature and humidity control for 16 months. Afterwards, 6 legs per treatment were selected at random for the analysis and evaluated using the proximate composition, texture, fatty acid profile and color tracking, water activity (aW), pH, and lipid oxidation under cold storage (0, 20, 40 and 60 days). The results were submitted to statistical analysis using the SAS® statistical program. The developed ham was classified according to Brazilian national legislation as raw ham of the “Serrano type”. The ham had a total protein content between 40 and 44%, there was also a modification of the fatty acid profile with the inclusion of LO, increasing the levels of oleic, linoleic, cis-11-eicosenoic acid and the appearance of eicosapentaenoic fatty acid (EPA), In addition to reducing lipid oxidation, assessed through the level of substances reactive to thiobarbituric acid (TBARS), GPS was comparable to the effect of α-tocopherol acetate. The inclusion of LO also led to an improvement in the texture parameters in raw hams, also changing the color of the product. The use of GPS in the pig diet, in the form and levels used in this study, constitutes an efficient alternative being comparable to vitamin E and is shown as a source of nutrients and qualified natural bioactive compounds in the production of raw ham. O manejo da alimentação animal vem sendo realizado com intenção da modificação positiva do perfil de ácidos graxos dos produtos cárneos com o intuito de agregar valor e aumentar o seu valor nutricional. Uma alternativa é a adição de óleos ricos em ácidos graxos poli-insaturados (AGPI), como é o exemplo do óleo da linhaça (OL). Porém, ao mesmo tempo que o OL é adicionado na alimentação, a estabilidade oxidativa do produto final pode ser comprometida, baseado nisso, o uso concomitante de antioxidantes naturais como o bagaço de uva (BU), vem sido utilizado por apresentar elevado potencial antioxidante devido à presença dos compostos fenólicos na sua constituição. O objetivo do trabalho foi avaliar os efeitos da suplementação da dieta de suínos com OL e bagaço de uvas tintas, conservado na forma de silagem (SBU), sobre a qualidade do presunto cru. O OL foi incluído na dieta como fonte de ácidos graxos (AGs) ômega 3 e a SBU como fonte de antioxidantes naturais. Os suínos foram nascidos de porcas da linhagem MO25 (50% Landrace, 25% Large White, 25% Moura) com cachaço da linhagem Embrapa MS115 e foram distribuídos aleatoriamente em grupos experimentais através de um delineamento experimental inteiramente casualizado, composto por cinco tratamentos com 8 repetições (4 machos castrados e 4 fêmeas). Os grupos experimentais foram: CON – Controle: ração convencional (RC); 3% OL: RC com 3% de OL; OL + E: RC com 3% de OL + 200mg de acetato de α-tocoferol por kg de ração; OL + SBU10: RC com 3% de OL + 10% de SBU (base seca); OL + SBU20: RC com 3% de OL + 20% de SBU (base seca). Os animais foram criados em sistema de confinamento, agrupados por tratamento em baias de concreto, com lâmina d’água e bebedouros tipo byte ball, com densidade de 1,2 m2 por animal. Após jejum hídrico de aproximadamente 12 horas, os animais foram abatidos seguindo os protocolos estabelecidos pelo regulamento técnico de manejo pré-abate e abate humanitário. Os animais tiveram como critério de abate peso médio de 113 ± 2kg. Após as operações de abate, as meias carcaças foram armazenadas a 4 ºC, permanecendo por 24h nestas condições. Posteriormente, o pernil da meia carcaça esquerda foi utilizado para a elaboração do presunto. Após a etapa da salga com Cloreto de Sódio, os pernis foram submetidos ao processo de maturação, e foram mantidos em câmeras com controle de temperatura e umidade durante 16 meses. Após, 6 pernis por tratamento foram selecionados aleatoriamente para a realização das análises e avaliados através da composição centesimal, textura, perfil de ácidos graxos e o acompanhamento da cor, atividade de água (aW), pH e oxidação lipídica sob armazenamento refrigerado por 0, 20, 40 e 60 dias. Os resultados foram submetidos a análise estatística através do programa estatístico SAS®. O presunto desenvolvido segundo a legislação nacional brasileira se enquadrou como presunto cru do “tipo Serrano”. O presunto apresentou um teor total de proteínas entre 40 e 44%, havendo também modificação do perfil de ácidos graxos com a inclusão do OL, aumentando os níveis dos ácidos graxos oleico, linoleico, ácido cis-11-Eicosenoico e o aparecimento do ácido graxo eicosapentaenoico (EPA). Além de reduzir a oxidação lipídica, avaliada através do nível de substâncias reativas ao ácido tiobarbitúrico (TBARS), a SBU teve efeito antioxidante comparável ao efeito do acetato de α-tocoferol. A inclusão do OL também ocasionou uma melhora dos parâmetros de textura nos presuntos crus, modificando também a cor do produto. O emprego de SBU na dieta de suínos, na forma e níveis empregados neste estudo, constitui-se uma alternativa eficiente sendo comparável a vitamina E e se mostrou como uma fonte de nutrientes e de compostos bioativos naturais visando a produção de presunto cru.

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES The aim of this study was to evaluate the potential of the winemaking residue of red grapes (Vitis vinifera) in form of silage (GPS), at the level of 200 g/kg in dry base, in the diet of confined and free pigs, with access and without access to vegetation on weight gain, carcass characteristics, weight of commercial cuts, economic viability and meat quality. Forty-eight pigs were randomly assigned to six treatments: SYSCON: confined animals that received conventional feed; SYSCON + GPS: confined animals that received conventional feed with 20% grape pomace silage; SYSOUT A: free animals in vegetation area that received conventional feed; SYSOUT A + GPS: free animals in vegetation area that received conventional feed with 20% grape pomace silage; SYSOUT B: free animals in no vegetation area that received conventional feed; SYSOUT B + GPS: free animals in no vegetation area that received conventional feed with 20% grape pomace silage. The statistical analysis was performed in a 3x2 factorial arrangement, which considered production system, feed and its interactions. During the experiment, performance data were collected and, after slaughter, it was realized the carcasses characterization, the main commercial cuts and the analysis of feed costs. In order to evaluate the meat quality, analyzes of centesimal composition, cholesterol content, fatty acid profile, water loss, shear force, texture profile and sensory analysis were performed. Oxidative stability and objective color were analyzed during refrigerated storage. There were no significant differences in weight gain and in weight of main commercial cuts. The results showed a significant effect on the final pH values, cooling loss and drip loss of the carcasses as a function of the production system. The centesimal composition of meat, cholesterol content, fatty acid profile, juiciness and flavor did not change. The supplementation of GPS in the pigs' diet promoted different effects on the quality of the meat produced, such as greater subjective and objective tenderness, greater intensity of red color and reduced lipid oxidation of the Longissimus thoracis muscle under refrigeration. It was concluded that the inclusion of GPS at the employed level, regardless the production system, does not compromise weight gain, carcass characteristics, weight of commercial cuts, it promotes reduction of feed costs and improves meat quality, constituting a sustainable alternative for a waste that needs to be used. Objetivou-se com este estudo avaliar a potencialidade do resíduo de vinificação de uvas tintas (Vitis vinifera) na forma de silagem (SBU), ao nível de 200 g/kg em base seca, na alimentação de suínos confinados e ao ar livre, com e sem acesso a vegetação sobre o ganho de peso, características de carcaça, peso de cortes comerciais, viabilidade econômica e qualidade da carne. Quarenta e oito suínos foram distribuídos aleatoriamente em seis tratamentos: SISCON: animais confinados recebendo ração convencional; SISCON + SBU: animais confinados recebendo ração convencional com 20% de silagem de bagaço de uva; SISCAL A: animais livres em área com vegetação recebendo ração convencional; SISCAL A + SBU: animais livres em área com vegetação recebendo ração convencional com 20% de silagem de bagaço de uva; SISCAL B: animais livres sem vegetação recebendo ração convencional; SISCAL B + SBU: animais livres sem vegetação recebendo ração convencional com 20% de silagem de bagaço de uva. A análise estatística foi realizada em arranjo fatorial 3x2, considerando o sistema de produção, a alimentação e suas interações. Durante o experimento foram coletados dados de desempenho, e após o abate, foi realizada a caracterização das carcaças, dos principais cortes comerciais e análise de custos com a alimentação. Para avaliar a qualidade da carne foram realizadas análises de composição centesimal, teor de colesterol, perfil de ácidos graxos, perdas de líquido, força de cisalhamento, perfil de textura e análise sensorial. A estabilidade oxidativa e a cor objetiva foram analisadas durante o armazenamento refrigerado. Não foram observadas diferenças significativas no ganho de peso e no peso dos principais cortes comerciais. Os resultados acusaram efeito significativo nos valores de pH final, perda por resfriamento e perda por gotejamento das carcaças em função do sistema de produção. A composição centesimal da carne, teor de colesterol, perfil de ácidos graxos, suculência e flavor não sofreram alterações. A suplementação de SBU na alimentação dos suínos promoveu efeitos diferenciados na qualidade da carne produzida, como maior maciez subjetiva e objetiva, maior intensidade da cor vermelha e redução da oxidação lipídica do músculo Longissimus thoracis sob-refrigeração. Conclui-se que a inclusão de SBU no nível empregado, independente do sistema de produção, não compromete o ganho de peso, as características de carcaça, o peso dos cortes comerciais, promove redução dos custos com a alimentação e melhora a qualidade da carne, constituindo-se em alternativa sustentável para um resíduo que necessita ser aproveitado.

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES Fundação de Amparo à Pesquisa do Estado do Rio Grande do Sul - FAPERGS The inclusion of natural products with antioxidant action in the animal feed, as well as the use of different lipid sources, especially n-3 polyunsaturated fatty acids (n-3 PUFA), are nutritional strategies that have been studied to incorporate these compounds into the effect. The presence of n-3 in meat is intended to promote the physiological-functional appeal of these fatty acids, while the presence of natural antioxidants can result in positive effects on the shelf life of the product, as well as promoting a healthier connotation. Thus, the objective of this study was to evaluate the effect of inclusion in the diet of linseed oil (n-3 fatty acid source) and grape pomace (antioxidant source) on weight gain, carcass characteristics, shelf life and shelf life of pork meat. A total of 44 animals from F1 (50% Large White x 50% Landrace) breeders with an Embrapa MS115 clown with an average body weight of 48.6 kg were randomly assigned to four treatments with 11 animals per treatment (4 machos and 4 Females), were raised to slaughter weight (120kg), with free food and water supply and weekly body weight control. The treatments consisted of the following diets: soybean meal control (CONT); with the addition of 3% linseed oil (3% OL); with 3% linseed oil and 3.5% dry grape pomace silage (3.5% SBU); and diet with 3% linseed oil and 7.0% of grape pomace silage on dry basis (7% SBU). During the slaughter procedure, the weight of the hot and cold carcass was recorded, the pH was measured 45 minutes and 24 hours after death in the Longissimus thoracis and lumborum (LTL) muscle, between the 11th and 12th ribs of the left half carcasses. Visual assessments of muscle color and marbling, loin eye area, dorsal fat thickness were measured at the level of the first rib, last rib, last lumbar vertebra and halfcarcass cross-section between the 11th and 12th ribs using a caliper and drip loss. The LTL muscle was analyzed 24 hours after slaughter by chemical composition, fatty acid profile, cooking loss, texture profile, water activity, pH, coloration, oxidative and protein stability, as well as the acceptability of the products throughout its slaughter. Shelf life for 12 days of vacuum packed storage under refrigeration at 4 ° C, as well as sensory analysis. The inclusion of OL and SBU in the pig diet did not affect weight gain, generated a final product with higher nutritional value (increased proportion of polyunsaturated fatty acids / saturated fatty acids (AGPI / AGS) and reduction of n-ratio). 6 / n-3, without affecting the sensory parameters. As for the shelf-life of pork during storage under commercial refrigeration conditions (4ºC), the inclusion of SBU at 7% resulted in meat with similar lipid stability to the control diet. Therefore, the addition of OL and SBU to the pig diet can be adopted as a strategy to improve the fatty acid profile of meat and meat products, with oxidative stability similar to meat of pigs fed diets without lipid source. At the same time, the use of grape pomace in the pig finishing diet proved to be an alternative for recycling this residue that presents high potential for environmental contamination. A inclusão de produtos naturais com ação antioxidante na ração animal, assim como o uso de diferentes fontes lipídicas, especialmente de ácidos graxos poli-insaturados n-3(AGPI n-3), são estratégias nutricionais que vêm sendo estudadas para incorporar estes compostos na carne. A presença de n-3 em carnes tem como principal finalidade promover o apelo fisiológico-funcional destes ácidos graxos, ao passo que a presença de antioxidantes naturais pode resultar em efeitos positivos na vida de prateleira do produto, além de contribuir para uma conotação mais saudável. Assim, o objetivo deste estudo foi avaliar o efeito da inclusão na dieta de óleo de linhaça (fonte de ácidos graxos n-3) e de bagaço de uva (fonte antioxidante) no ganho de peso, características da carcaça, qualidade e vida de prateleira da carne de suínos. Um total de 44 animais, filhos de matrizes da linhagem F1 (50% Large White x 50% Landrace) com cachaço da linhagem Embrapa MS115, com peso corporal médio de 48,6 kg, foram distribuídos aleatoriamente em quatro tratamentos com 11 animais por tratamento (4 machos e 4 fêmeas), foram criados até o peso de abate (120kg), com fornecimento de alimento e água à vontade e controle semanal do peso corporal. Os tratamentos consistiram das seguintes dietas: controle a base de farelo de soja e milho (CONT); com adição de 3% de óleo de linhaça (3%OL); com 3% de óleo de linhaça e 3,5% de silagem de bagaço de uva em base seca (3,5%SBU); e dieta com 3% de óleo de linhaça e 7,0% de silagem de bagaço de uva em base seca (7%SBU). Durante o procedimento de abate, foi registrado o peso da carcaça quente e fria, o pH foi medido 45 minutos e 24 horas após a morte no músculo Longissimus thoracis e lumborum (LTL). Avalio-se após 24 horas visuais da cor e do marmoreio do músculo, área do olho lombo, espessura da gordura dorsal foi mensurada no nível da primeira costela, última costela, última vértebra lombar e seção transversal de meia carcaça entre a 11ª e a 12ª costelas, utilizando um paquímetro digital e a perda de gotejamento. O músculo LTL foi analisado 24 horas após o abate através da composição química, perfil de ácidos graxos, perda por cocção, perfil de textura, atividade de água, pH, coloração, estabilidade oxidativa e proteica, como também análise sensorial, além da aceitabilidade dos produtos ao longo de sua vida de prateleira por 12 dias de armazenamento sob refrigeração a 4°C. A inclusão de OL e SBU na dieta dos suínos não afetou o ganho de peso, gerou um produto final com maior valor nutricional (aumento da proporção de ácidos graxos poli-insaturados/ácidos graxos saturados (AGPI/AGS) e redução da relação n-6/n-3, sem afetar os parâmetros sensoriais. A inclusão durante o armazenamento sob condições comerciais de refrigeração (4ºC) de SBU ao nível de 7% resultou em carne com similar estabilidade lipídica à dieta controle. Portanto, a adição do OL e da SBU na dieta de suínos pode ser adotada como uma estratégia para melhorar o perfil de ácidos graxos da carne e produtos derivados, o 7%SBU evitou o aumento da oxidação lípidica causado pela incorporação do OL na dieta. Ao mesmo tempo, o emprego de bagaço de uva na dieta de terminação de suínos, mostrou ser uma alternativa para reciclagem deste resíduo que apresenta elevado potencial de contaminação ambiental.

The food industry generates a considerable amount of waste. These foods are a source of bioactive compounds, which is their reuse in interesting animal feed. In addition, the low cost of victory and the consequent reduction of production costs comes to contribute to the production and reuse of waste. The objective of this study was to evaluate the zootechnical performance and meat quality of broilers fed with increasing levels of dehydrated and ground grape pomace (BU) included in the diet. A total of 640 birds of the Cobb lineage were used in a completely randomized design with four treatments: BU 0 - conventional feed; BU 50 - conventional feed + 50 g/kg BU; BU 100 - conventional feed + 100 g/kg BU; BU 150 - conventional feed + 150 g/kg BU. The experimental period was 45 days and at the end were selected 4 birds per treatment and slaughtered for further laboratory analysis. The parameters of zootechnical performance measured were weight gain (GP), feed intake (CR) and feed conversion (CA). The meat quality was evaluated through centesimal composition, texture, fatty acid profile and monitoring of muscle pH, color stability and lipid oxidation under storage (1,4,7 and 10 days) under refrigeration. The results were submitted to statistical analysis through the SAS statistical program. Significant results (p ≤ 0.05) were found for the parameters of zootechnical performance, and the higher the supplementation with BU, the higher the CR and the AC and the lower the GP. The inclusion of BU also modified the lipid content, increasing the levels of C18: 2 n-6 and consequently increasing the content of polyunsaturated fatty acids. The values found for thiobarbituric acid reactive substances (TBARS) showed a significant effect (p ≤ 0.05) of inclusion of BU in the diet. In general, it can be concluded that supplementation with BU affected zootechnical performance, in the same way that it was shown to be able to promote the control of oxidative processes in chicken meat during storage under refrigeration. A indústria de alimentos gera quantidade de resíduos considerável. Esses resíduos são fonte de compostos bioativos, o que torna seu reaproveitamento na alimentação animal interessante. Aliado a isso, o baixo custo de obtenção e consequente redução dos custos de produção vem para contribuir com a cadeia produtiva e de reaproveitamento de resíduos. O objetivo do estudo foi avaliar o desempenho zootécnico e qualidade da carne de frangos de corte alimentados com níveis crescentes de bagaço de uva – desidratado e moído (BU) incluídos na dieta. Foram utilizadas 640 aves da linhagem Cobb distribuídas em um delineamento inteiramente casualizado, com 4 tratamentos: BU 0 - ração convencional; BU 50 - ração convencional + 50 g/kg de BU; BU 100 - ração convencional + 100 g/kg de BU; BU 150 - ração convencional + 150 g/kg BU. O período experimental foi de 45 dias e ao final foram selecionadas 4 aves por tratamento e abatidas, para posterior realização das análises laboratoriais. Os parâmetros de desempenho zootécnico mensurados foram ganho de peso (GP), consumo de ração (CR) e conversão alimentar (CA). A qualidade da carne foi avaliada através de composição centesimal, textura, perfil de ácidos graxos e acompanhamento do pH muscular, estabilidade de cor e oxidação lipídica sob armazenamento (1,4,7 e 10 dias) sob refrigeração. Os resultados obtidos foram submetidos a análise estatística através do programa estatístico SAS. Foram encontrados resultados significativos (p ≤ 0,05) para os parâmetros de desempenho zootécnico, sendo que quanto maior a suplementação com BU, maior foi o CR e a CA e menor o GP. A inclusão de BU também modificou o conteúdo lipídico, aumentando os níveis de C18:2 n-6 e consequentemente aumentando o teor de ácidos graxos poli-insaturados. Os valores encontrados para as substâncias reativas ao ácido tiobarbitúrico (TBARS) demonstraram efeito significativo (p ≤ 0,05) da inclusão de BU na dieta. No geral, pode-se concluir que a suplementação com BU afetou o desempenho zootécnico, da mesma forma que demonstrou ser capaz de promover o controle dos processos oxidativos na carne de frango durante o armazenamento sob refrigeração.

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES The objective of this study was to evaluate the effects of three finishing systems based on concentrate and legume-grass pasture on pasture and growth performance, carcass traits, presence of rumenitis, abomasitis, and liver abscesses, and beef quality. Steers were finished for 91 days with an exclusively whole corn grain-based (GRAIN) diet, grazed on legume-grass pasture plus 1.4% of body weight of whole corn grain supplementation (SUPP), or grazed on legume-grass pasture (PAST) only. The legume-grass pasture provided high levels of protein (more than 19% DM) and improved digestibility (more than 88% DM) over all three periods. Pasture of paddocks where steers were assigned to SUPP and PAST treatments showed similar nutritional quality. When compared to PAST, SUPP diet increased total weight gain per hectare, stocking rate, daily and total weight gains. The increase of weight gains was high to GRAIN than SUPP and PAST (1.81, 1.51, and 1.20 kg/animal/day respectively). Steers finished on GRAIN had higher fat thickness and marbling score when compared to PAST. There were no differences on hot carcass weight for cattle finished on GRAIN and SUPP. Abomasum lesions were more prevalent in steers finished on GRAIN when compared to PAST. Pasture diets (PAST and SUPP) led to lower n-6/n-3 ratio (P < 0.001), and highest deposition of C18:2 cis-9 trans-11 (P < 0.001) in the lean. Beef from steers fed GRAIN had the highest values of volatile compounds associated with lipid oxidation. Off-flavor intensity was significantly greater on beef from steers fed GRAIN when compared to PAST. Steaks from steers fed GRAIN were less red (P < 0.001), showed higher lipid oxidation (P < 0.001) during retail display, and higher metmyoglobin formation (P < 0.001) from day 7 to 13 when compared to PAST. Levels of α-tocopherol were higher in steaks from steers fed diets containing legume and grass (P < 0.001). Inclusion of concentrate on finishing diet of steers increase growth performance, however, carcass from steers finished on legume-grass pasture has desirable traits. The roughage, independently of what level was offered, is essential to improve fatty acid profile, decrease volatile compounds associated with lipid oxidation, minimize off-flavor, maintain retail color and prevent lipid and myoglobin oxidation. O objetivo do estudo foi avaliar o efeito de três diferentes sistemas alimentares de terminação de novilhos compostos por concentrado e pastagem consorciada de leguminosas e gramíneas no desempenho produtivo da pastagem e dos novilhos, características da carcaça, presença de ruminite, abomasite e abscessos hepáticos, assim como qualidade da carne. Novilhos foram terminados por 91 dias com dieta composta exclusivamente grão inteiro de milho (GRAIN), em pastagem consorciada de gramíneas e leguminosas e suplementação de 1,4% do peso vivo (SUPP), ou somente em pastagem consorciada de leguminosas e gramíneas (PAST). A pastagem consorciada proporcionou alto nível proteico (mais de 19% MS) e digestibilidade (mais de 88% MS) durante todo experimento. Piquetes utilizados para terminação de novilhos com dietas SUPP e PAST apresentaram similar qualidade nutricional. Quando comparado com PAST, a terminação SUPP aumentou o ganho de peso total por hectare, taxa de lotação, ganho de peso diário e total. O ganho de peso diário foi superior na dieta GRAIN do que SUPP e PAST (1,81, 1,51 e 1,20 kg/animal/dia respectivamente, P < 0,001). Novilhos terminados no tratamento GRAIN obtiveram aumento de espessura de gordura subcutânea e marmoreio quando comparado com PAST. Não houve diferença no peso de carcaça quente de bovinos terminados com dietas GRAIN e SUPP. Lesões abomasais foram mais prevalentes em novilhos terminados no GRAIN do que PAST. Dietas composta por pastagem (PAST e SUPP) reduziram a relação n-6/n-3 (P < 0,001) e elevaram a deposição muscular de C18:2 cis-9 trans-11 (P < 0,001). Carne de novilhos terminados com GRAIN apresentaram maiores valores de compostos voláteis associados com oxidação lipídica e a intensidade de off-flavor foi maior em carne de novilhos alimentados com GRAIN quando comparado com PAST. A carne de novilhos alimentados com GRAIN apresentou inferior coloração vermelha (P < 0,001) e maior oxidação lipídica (P < 0,001) durante a o período de estocagem, assim como maior formação de metamioglobina (P < 0,001) do dia 7 ao 13 quando comparado com PAST. Os níveis musculares de α-tocoferol foram superiores em novilhos terminados em pastagem consorciada (P < 0,001). A inclusão de concentrado na dieta de terminação de novilhos eleva o desempenho produtivo, no entanto, carcaças de novilhos terminados em pastagem consorciada de gramíneas e leguminosas apresentam desejável acabamento. A presença de forragem, independentemente do nível utilizado, é essencial para melhorar o perfil lipídico, diminuir compostos voláteis relacionados com oxidação lipídica, minimizar off-flavor, manter a estabilidade de cor durante estocagem aeróbica e prevenir a oxidação lipídica e da mioglobina.

The objective of this study was to evaluate the grape marc diet and linseed oil in the sheep finishing diet on animal performance, carcass characteristics and meat quality. Thirty - two sheep Texel with a mean weight of 26.35 kg were randomly distributed in a completely randomized design in four trataments with eight replications. B w ’ ent grain (BSG) is the most abundant by-product of the brewing industry.It is available at low cost as a valuable source of phenolic acids. Thus, the objective was to evaluate different extraction conditions for the characterization and identification of BSG polyphenols and their effect on the performance and quality attributes of beef under feedlot. In order to characterize the BSG and other ingredients used in the diets (corn silage, rice bran, corn bran and wheat bran), chemical composition, determination of total phenolics, total flavonoids, and in vitro antioxidant activity of the extracts were performed. Extracts were obtained by conventional extraction and assisted by microwave. using solvent 50% acetone, 50% methanol, or 0.75% NaOH. Samples were studied in natura or deffated. Using HPLC-DAD, monomers of phenolic compounds from all samples were identified and quantified. Four formulations were tested by varying the replacement level of corn silage by BSG at the termination of beef cattle in a completely randomized design (DIC) with five replicates in each treatment. During feedlot, the average daily consumption of the animals and the average daily weight gain were evaluated. The digestibility of dietary nutrients and levels of phenolic compounds and endogenous antioxidant enzymes in bovine blood. Longissimus thoracis muscle was analyzed 24 hours after slaughter through temperature, pH, chemical composition, fatty acid profile, color, cooking loss, texture profile, water activity, oxidative, protein and microbiological stability, besides the acceptability of products throughout its shelf life for 75 days of vacuum-packed refrigerated storage. The BSG in replacement of corn silage up to 35% in the finishing diet of cattle feedlot allows excellent production performance and a significant reduction in production costs, considering the market values currently practiced. Regarding the final product, beef with the inclusion of BSG in the animals' diet presents a higher amount of fatty acids that are beneficial to the health of the consumers. Moreover, meat has hight oxidative stability and increased tenderness. The inclusion of up to 35% BSG in the cattle finishing diets as a forage source did not promote any undesirable effect during the shelf life evaluation under commercial conditions. The use of BSG to replace corn silage in beef cattle diets can be adopted as a strategy to reduce feed costs. Furthemore, it is also a source of polyphenols from a material that needs to be recycled. Those substances have show that are able to improve important attributes related to meat quality, as: tenderness, fatty acid profile, and oxidative stability. A incorporação dos antioxidantes naturais em carne pode ser através do contato direto na superfície ou pela suplementação. Na dieta animal com antioxidantes e deposição metabólica na carne para exercer sua atividade protetora. O resíduo úmido de cervejaria (RUC) é o mais abundante subproduto da indústria cervejeira, disponível a baixo custo como uma fonte valiosa de ácidos fenólicos. Neste sentido, objetivou-se avaliar diferentes condições de extração para a caracterização e identificação de polifenois de RUC e o seu efeito sobre o desempenho e atributos de qualidade da carne de bovinos sob sistema de confinamento. A fim de caracterizar o RUC e demais ingredientes utilizados nas dietas (silagem de milho, farelo de arroz, farelo de milho e farelo de trigo) foi efetuado a composição química, a determinação de fenólicos totais, flavonoides totais e atividade antioxidante in vitro dos extratos obtidos por extração convencional e assistida por micro-ondas; variando o solvente entre acetona 50%, metanol 50% ou NaOH 0,75% e amostras in natura ou desengorduradas. Utilizando HPLC-DAD foram identificados e quantificados os monômeros de compostos fenólicos de todas as amostras. Quatro formulações foram testadas variando o nível substituição de silagem de milho por RUC na terminação de bovinos de corte em delineamento inteiramente casualizado (DIC) com cinco repetições em cada tratamento. Durante o confinamento foram avaliados o consumo médio diário dos animais e o ganho de peso médio diário. A digestibilidade dos nutrientes da dieta e os níveis de compostos fenólicos e enzimas antioxidantes endógenas no sangue dos bovinos. O músculo Longissimus thoracis foi analisado 24 horas após o abate através da temperatura, pH, composição química, perfil de ácidos graxos, coloração, perda por cocção, perfil de textura, atividade de água, estabilidade oxidativa, proteica e microbiológica, além da aceitabilidade dos produtos ao longo de sua vida útil por 75 dias de armazenamento embalado à vácuo sob refrigeração. A comparação entre o RUC e demais ingredientes utilizados nas dietas experimentais dos animais revelou que este resíduo possui a maior concentração de polifenóis identificados e biodisponíveis com consequente maior potencial antioxidante. O RUC em substituição a silagem de milho em até 35% na dieta de terminação de bovinos em confinamento possibilita excelente desempenho produtivo e redução significativa nos custos de produção, considerando os valores de mercado praticados atualmente. Quanto ao produto final, a carne bovina com a inclusão de RUC na dieta dos animais apresenta maior quantidade de ácidos graxos benéficos à saúde dos consumidores, com maior estabilidade oxidativa e aumento na maciez. Quanto a vida útil da carne bovina durante o armazenamento sob condições comerciais, a inclusão de até 35% de RUC nas dietas de terminação de bovinos como fonte forrageira não promoveu qualquer efeito indesejável. O uso do RUC em substituição a silagem de milho em dietas de bovinos de corte pode ser adotado como uma estratégia para reduzir o custo de alimentação e pelo uso de um material que apresenta a necessidade de ser reciclado. Além disso, o material é fonte de polifenois, proporcionando incremento em atributos importantes de qualidade da carne, tais como: maciez, perfil de ácidos graxos e estabilidade oxidativa.

The demand for pork with sensory features that meet consumer demands, both for consumption in natura and processed products is relevant, therefore, evaluated the effect of different genetic groups of pigs slaughtered at two different weights (100 and 120 kg liveweight) regarding the quality of carcass and meat. The experiment with the participation of forty-eight animals, which are three distinct genetic groups: animals belonging to the genetic group 1 (G1) with 50% Duroc, Landrace and 25% 25% Large White; genetic group 2 (G2) with 29.7% Duroc, 29.7% Large White, Landrace 25% and 15.6% Pietrain and genetic group 3 (G3) with 29.7% Duroc, Landrace 25%, 17.2 % Large White, Pietrain 15.6% and 12.5% Moura. They collected data gain of daily weight (ADG), being slaughtered as reached the stipulated weight. After the slaughter, the characterization was carried out: hot carcass yield (WHR), cold carcass yield (RCF), ribeye area (REA), backfat thickness (ET) and drip loss (PG) . For performance evaluations of major cuts, carcasses were split into its primary cuts: head, ham, loin, fillet, belly, ventral belly, skirt steak, palette, palette-on, tip of the chest and leg. Later, Shank was deployed in the following structures: topside, rump, hard cushion, duck, lizard, bone, internal fat, external fat, skin and bones, cuts to income assessment. During boning, was collected the Longíssimus dorsi muscle of each experimental unit for further physical and chemical analysis, the following determinations are made: pH, color, water holding capacity, TBARS (lipid oxidation test), fluid loss by cooking , cholesterol, shear force, chemical composition and fatty acid profile. Statistical analysis was performed using factorial design (3x2), and the data were analyzed with the aid of SAS software, version 9.1. The animals of Duroc strain showed higher carcass yield (WHR and RCF) and higher yield of some commercial cuts, as forearm and sobre-paleta, already Moura race, influenced positively the GPD, the amount of internal fat and yield head and fillet, but negatively on the PG. In the remaining meat quality assessments, the crosses did not differ. The slaughter weight at 120 kg liveweight showed higher ADG, RCF, WHR, AOL and increased income for some commercial cuts like flank steak and leg, however, influenced the higher deposition of external carcass fat and greater amount of cholesterol present in the muscle . While animals slaughtered at 100 kg presented more C18-1n9c (oleic), and monounsaturated fatty acids (MUFA) and some commercial cuts (forearm and topside). It follows that the use of Moura and Duroc breed industrial crossings, provide good carcass characteristics and meat quality as well as good animal. The slaughter of animals at 120 kg BW, proved to be an alternative to housing production with good high and muscular performance ADG of animals to slaughter. A procura de carne suína com características sensoriais que atendam as exigências dos consumidores, tanto para consumo in natura como de produtos processados é relevante, portanto, foram avaliados o efeito de diferentes grupos genéticos de suínos, abatidos com dois pesos distintos (100 e 120 kg de peso vivo) com relação a qualidade da carcaça e da carne. O experimento contou com a participação de quarenta e oito animais, sendo estes de três grupos genéticos distintos: animais pertencentes ao grupo genético 1 (G1) com50% Duroc, 25% Landrace e 25% Large White; grupo genético 2 (G2) com 29,7% Duroc, 29,7% Large White, 25% Landrace e 15,6% Pietrain e grupo genético 3(G3) com 29,7% Duroc, 25% Landrace, 17,2% Large White, 15,6% Pietrain e 12,5% Moura. Foram coletados dados de ganho de peso diário (GPD), sendo abatidos conforme atingiam os pesos estipulados. Após o abate dos animais, foi realizada a caracterização de: rendimento de carcaça quente (RCQ), rendimento de carcaça fria (RCF), área de olho de lombo (AOL), espessura de toucinho (ET) e perda por gotejamento (PG). Para avaliações de rendimento dos principais cortes, as carcaças foram desdobradas em seus cortes primários: cabeça, pernil, carré, filé, barriga, barriga ventral, fraldinha, paleta, sobre-paleta, ponta do peito e perna. Posteriormente, o pernil foi desdobrado nas seguintes estruturas: coxão mole, alcatra, coxão duro, patinho, lagarto, osso, gordura interna, gordura externa, pele e ossos, para avaliação de rendimento dos cortes. Durante a desossa, foi coletado o músculo Longíssimus dorsi de cada unidade experimental para posterior análise físico-química, sendo realizadas as seguintes determinações: pH, cor, capacidade de retenção de água, TBARS (teste de oxidação lipídica), perda de líquido por cocção, colesterol, força de cisalhamento, composição centesimal e perfil de ácidos graxos. Na análise estatística utilizou-se delineamento fatorial (3x2), e os dados foram analisados com o auxílio do programa SAS, versão 9.1. Os animais da linhagem Duroc, apresentaram maior rendimento de carcaça (RCQ e RCF), bem como maior rendimento de alguns cortes comerciais, como antebraço e sobre-paleta, já a raça Moura, influenciou positivamente no GPD, na quantidade de gordura interna e no rendimento de cabeça e filé, porém negativamente na PG. Nas demais avaliações de qualidade da carne, os cruzamentos não diferiram entre si.O peso de abate em 120 kg de peso vivo proporcionou maior GPD, RCF, RCQ,AOL e maior rendimento de alguns cortes comerciais como fraldinha e perna, porém, influenciou na maior deposição de gordura externa na carcaça e maior quantidade de colesterol presente no músculo.Enquanto os animais abatidos com 100 kg apresentaram maior quantidade de C18-1n9c (oléico), e de ácidos graxos monoinsaturados (MUFA) e de alguns cortes comerciais (antebraço e coxão mole). Conclui-se que a utilização da raça Duroc e Moura em cruzamentos industriais, proporcionam boas características de carcaça e qualidade de carne, bem como, bom desempenho dos animais. Já o abate dos animais aos 120 kg de PV, mostrou ser uma alternativa para produção de carcaça com bom rendimento muscular e elevado GPD dos animais até ao abate.

The objective of this study was to evaluate various financial indicators, estimated deterministically, on the economic feasibility of finishing steers commercialized with different weights, using the simulation technique. A deterministic analysis was conducted, simulating performance data steers with average initial weight of 350 kg, fed in confinement for slaughter with 410, 440, 470, 500, 530, 560 and 590 kg. The feeding period varies from 46 to 185 days, respectively. The date of the sale was the same for all weights on the highest price of the year, varying the date of purchase. Based in various economic indicators, the viability of the investment decreased linearly according to the increase in weight. The net present value was R$ 41,18, R$ 41,04, R$ 10,06, R$ -27,31, R$ -9,88, R$ -28,37, R$ -37,37, the index benefit: cost R$ 1,029, R$ 1,028, R$ 1,004, R$ 0,997, R$ 0,996, R$ 0,989, R$ 0,986, Additional Return on Investment 0,96, 0,92, 0,11, -0,06, -0,07, -0,18, -0,20% per month and Internal Rate of Return 1,69, 1,64, 1,00, 0,61, 0,79, 0,66, 0,65% per month, respectively from lowest to highest weight. The use of confinement as termination option to obtain the direct benefits of this technology is an alternative investment with low economic return. Diante da necessidade de adotar técnicas com o objetivo de prever a viabilidade do investimento e saber o real resultado econômico, alternativas usando simulação e análise conjunta de vários indicadores, podem fornecer informações consistentes para auxiliar a tomada de decisão. O objetivo deste estudo foi avaliar diversos indicadores financeiros estimados de forma determinística na viabilidade econômica da terminação de novilhos em confinamento, comercializados em diferentes pesos, utilizando a técnica de simulação. Foi realizada uma análise determinística simulando dados de desempenho de novilhos com peso médio inicial de 350 kg, alimentados em confinamento para serem abatidos com 410, 440, 470, 500, 530, 560 e 590 kg. O período de alimentação variou de 46 a 185 dias, respectivamente. A data da venda foi a mesma para todos os pesos, na cotação mais alta do ano, variando a data da compra. Baseada em vários indicadores, a viabilidade do investimento diminuiu linearmente de acordo com o aumento do peso.
