Quinoa is emerging as a key seed crop for global food security due to its ability to grow in marginal environments and its excellent nutritional properties. Because quinoa is partially allogamous, we have developed quinoa inbred lines necessary for molecular genetic analysis. Our comprehensive genomic analysis showed that the quinoa inbred lines fall into three genetic subpopulations: northern highland, southern highland, and lowland. Lowland and highland quinoa are the same species, but have very different genotypes and phenotypes. Lowland quinoa has relatively small grains and a darker grain color, and is widely tested and grown around the world. In contrast, the white, large-grained highland quinoa is grown in the Andean highlands, including the regionwhere quinoa originated, and is exported worldwide as high-quality quinoa. Recently, we have shown that viral vectors can be used to regulate endogenous genes in quinoa, paving the way for functional genomics to reveal the diversity of quinoa. However, although a high-quality assembly has recently been reported for a lowland quinoa line, genomic resources of the quality required for functional genomics are not available for highland quinoa lines. Here we present high-quality chromosome-level genome assemblies for two highland inbred quinoa lines, J075 representing the northern highland line and J100 representing the southern highland line, using PacBio HiFi sequencing and dpMIG-seq. In addition, we demonstrate the importance of verifying and correcting reference-based scaffold assembly with other approaches such as linkage maps. The assembled genome sizes of J075 and J100 are 1.29 and 1.32 Gb,with contigs N50 of 66.3 and 12.6Mb, andscaffoldN50of 71.2 and70.6Mb, respectively, comprising 18 pseudochromosomes. The repetitive sequences of J075 and J100 represent 72.6% and 71.5% of the genome, the majority of which are long terminal repeats, representing 44.0% and 42.7% of the genome, respectively. The de novo assembled genomes of J075 and J100 were predicted to contain 65,303 and 64,945 protein-coding genes, respectively. The high quality genomes of these highland quinoa lines will facilitate quinoa functional genomics research on quinoa and contribute to the identification of key genes involved in environmental adaptation and quinoa domestication. Background: The inclusion of minor and pseudo-cereals enhances the nutritional quality of a gluten-free diet. Yet, affordability determines practical implementation. Environmental concerns should also be considered as moving towards a more sustainable diet. How do these aspects of sustainability manifest themselves in a special diet, such as gluten-free? Methods: An international pilot survey among practicing dietitians was conducted during the Congress of The European Federation of the Associations of Dietitians (EFAD, Budapest, 2023). Respondents marked their recommendation for eight gluten-free cereals based on five criteria, including nutritional quality, accessibility/price, and climate change. Differences were analysed using Cohran's Q and pairwise post-hoc tests (N = 38). Results: There were significant differences in the recommendation for cereals (p < 0.05 for each grain), with quinoa (89.5%), gluten-free oats (89.5%), rice (86.8%), and corn (65.8%) being the most recommended. Buckwheat (55.3%), millet (50.0%), amaranth (44.7%) and sorghum (26.3%) were less recommended. Although gluten-free oats were recommended overall, quinoa was recommended for its nutritional content, and rice and corn were recommended for accessibility/price. No cereal received a high recommendation for climate change. Conclusions: According to this pilot survey, nutritional content and accessibility/price were the most important criteria for evaluating gluten-free grains. Dietitians were willing to integrate climate change considerations into practice, but more information is needed. The recommendation for minor and pseudo-cereals contradicted the importance emphasised by the literature. Summary: The study investigates the impact of incorporating a fibre‐rich component derived from quinoa (QFC) into wheat flour on the physicochemical, rheological and bread‐making characteristics. QFC, possessing triple the dietary fibre contents of quinoa grain, increased fibre levels in blends from 4% to 12%. As QFC inclusion increased from 0% to 20%, farinograph water absorption increased from 59.6% to 66.7%, while dough stability decreased from 9.9 to 3.5 min. Amylograph properties exhibited elevated gelatinisation temperature and reduced viscosities with QFC supplementation. Bread hardness surged from 997 to 2800 g with 0%–20% QFC incorporation. Sensory quality remained acceptable up to 15% QFC, beyond which it significantly declined. Additives enhanced bread volume from 2.66 to 3.34 for 15% QFC bread, along with sensory parameters. The QFC‐incorporated bread not only improved nutritional quality but also positioned itself as a viable fibre‐rich alternative in the food industry, promising benefits for health‐conscious consumers. Climate change has become a concern, emphasizing the need for the development of crops tolerant to drought. Therefore, this study is designed to explore the physiological characteristics of quinoa that enable it to thrive under drought and other extreme stress conditions by investigating the combined effects of irrigation water levels (100%, 75%, and 50% of quinoa's water requirements, WR as I1, I2 and I3) and different planting methods (basin, on-ridge, and in-furrow as P1, P2 and P3) on quinoa's physiological traits and gas exchange. Results showed that quinoa's yield is lowest with on-ridge planting and highest in the in-furrow planting method. Notably, the seed protein concentrations in I2 and I3 did not significantly differ but they were 25% higher than those obtained in I1, which highlighted the possibility of using a more effective irrigation method without compromising the seed quality. On the other hand, protein yield (PY) was lowest in P2 (mean of I1 and I2 as 257 kg ha−1) and highest in P3 (mean of I1 and I2 as 394 kg ha−1, 53% higher). Interestingly, PY values were not significantly different in I1 and I2, but they were lower significantly in I3 by 28%, 27% and 20% in P1, P2, and P3, respectively. Essential plant characteristics including plant height, stem diameter, and panicle number were 6.1–16.7%, 6.4–24.5%, and 18.4–36.5% lower, respectively, in I2 and I3 than those in I1. The highest Leaf Area Index (LAI) value (5.34) was recorded in the in-furrow planting and I1, while the lowest value was observed in the on-ridge planting method and I3 (3.47). In I3, leaf temperature increased by an average of 2.5–3 oC, particularly during the anthesis stage. The results also showed that at a similar leaf water potential (LWP) higher yield and dry matter were obtained in the in-furrow planting compared to those obtained in the basin and on-ridge planting methods. The highest stomatal conductance (gs) value was observed within the in-furrow planting method and full irrigation (I1P3), while the lowest values were obtained in the on-ridge and 50%WR (I3P2). Finally, photosynthesis rate (An) reduction with diminishing LWP was mild, providing insights into quinoa's adaptability to drought. In conclusion, considering the thorough evaluation of all the measured parameters, the study suggests using the in-furrow planting method with a 75%WR as the best approach for growing quinoa in arid and semi-arid regions to enhance production and resource efficiency. The dual pressures of climate change and population growth have made the development of new grains a necessity. Agriophyllum squarrosum (sand rice) has high adaptability to harsh environments and does not occupy agricultural land. It is widely cultivated and consumed in Central Asia. Sand rice, together with quinoa and buckwheat, belongs to the same pseudocereals group with rich nutritional value and gluten‐free properties; however, its nutritional composition and health benefits differ from those of quinoa and buckwheat. Sand rice seeds are a rich source of nutrients and bioactive compounds, including proteins, amino acids, unsaturated fatty acids, and crude fiber, which are similar to those in buckwheat and quinoa; however, their starch content is relatively low. Sand rice seeds also possess phenolic acids and flavonoids, which exhibit antioxidant, anticancer, anti‐diabetes, and anti‐inflammatory properties. Furthermore, sand rice extracts are considered suitable for treating some chronic diseases. Overall, sand rice is considered a good plant‐based food that can be used to develop various functional foods and beverages or mixed with other grains in different recipes. However, advancements in the processing technology of sand rice‐based foods are required to fully exploit the potential of sand rice in the food industry to improve human health. This review analyzes the current understanding of the nutritional content of sand rice by comparing it with that of quinoa and buckwheat. Background: Abiotic stress seriously affects the growth and yield of crops. It is necessary to search and utilize novel abiotic stress resistant genes for 2.0 breeding programme in quinoa. In this study, the impact of drought stress on glucose metabolism were investigated through transcriptomic and metabolomic analyses in quinoa seeds. Candidate drought tolerance genes on glucose metabolism pathway were verified by qRT-PCR combined with yeast expression system. Results: From 70 quinoa germplasms, drought tolerant material M059 and drought sensitive material M024 were selected by comprehensive evaluation of drought resistance. 7042 differentially expressed genes (DEGs) were indentified through transcriptomic analyses. Gene Ontology (GO) analysis revealed that these DEGs were closely related to carbohydrate metabolic process, phosphorus-containing groups, and intracellular membrane-bounded organelles. The Kyoto Encyclopedia of Genes and Genomes (KEGG) enrichment analysis detected that DEGs were related to pathways involving carbohydrate metabolisms, glycolysis and gluconeogenesis. Twelve key differentially accumulated metabolites (DAMs), (D-galactose, UDP-glucose, succinate, inositol, D-galactose, D-fructose-6-phosphate, D-glucose-6-phosphate, D-glucose-1-phosphate, dihydroxyacetone phosphate, ribulose-5-phosphate, citric acid and L-malate), and ten key candidate DEGs (CqAGAL2, CqINV, CqFrK7, CqCELB, Cqbg1x, CqFBP, CqALDO, CqPGM, CqIDH3, and CqSDH) involved in drought response were identified. CqSDH, CqAGAL2, and Cqβ-GAL13 were candidate genes that have been validated in both transcriptomics and yeast expression screen system. Conclusion: These findings provide a foundation for elucidating the molecular regulatory mechanisms governing glucose metabolism in quinoa seeds under drought stress, providing insights for future research exploring responses to drought stress in quinoa. Quinoa is an important economic food crop. However, quinoa seedlings are susceptible to drought stress, and the molecular mechanism of drought tolerance remains unclear. In this study, we compared transcriptomic and physiological analyses of drought-tolerant (L1) and susceptible (HZ1) genotypes exposed to 20% PEG for 3 and 9 days at seedling stage. Compared with HZ1, drought stress had less damage to photosynthetic system, and the contents of SOD, POD and CAT were higher and the contents of H2O2 and O2-were lower in L1 leaves. Based on the RNA-seq method, we identified 2423, 11856, 1138 and 3903 (HZ1-C3-VS-T3, HZ1-C9-vs-T9, L1-C3-vs-T3 and L1-C9-vs-T9) annotated DEGs. Go enrichment was shown in terms of Biological Process: DEGs involved in biological processes such as metabolic process, cellular process, and single-organism process were most abundant in all four comparison treatments. In Molecular Function: the molecular functions of catalytic activity, binding and transporter activity have the most DEGs in all four processes. Cellular Component: membrane, membrane part, and cell have the most DEGs in each of the four processes. These DEGs include AP2/ERF, MYB, bHLH, b-ZIP, WRKY, HD-ZIP, NAC, C3h and MADS, which encode transcription factors. In addition, the MAPK pathway, starch and sucrose metabolism, phenylpropanoid biosynthesis and plant hormone signal transduction were significantly induced under drought stress, among them, G-hydrolases-66, G-hydrolases-81, G-hydrolases-78, Su-synthase-02, Susynthase-04, Su-synthase-06, BRI1-20 and bHLH17 were all downregulated at two drought stress points in two genotypes, PP2C01, PP2C03, PP2C05-PP2C07, PP2C10, F-box01 and F-box02 were upregulated at two drought stress points in two genotypes. These results agree with the physiological responses and RNAseq results. Collectively, these findings may lead to a better understanding of drought tolerance, and some of the important DEGs detected in this study could be targeted for future research. And our results will provide a comprehensive basis for the molecular network that mediates drought tolerance in quinoa seedlings and promote the breeding of drought-resistant quinoa varieties. The depletion of freshwater resources, as well as climate change and population growth, are threatening the livelihoods of thousands of people around the world. The introduction of underutilized crops such as quinoa may be important in countries with limited productivity and/or limited access to water due to its resistance to different abiotic stresses and its high nutritional value. The aim of this review is to assess whether techniques such as germination, malting and fermentation would improve the nutritional and bioactive profile of quinoa. The use of nitrogen oxide-donating, oxygen-reactive and calcium-source substances increases germination. The ecotype used, temperature, humidity and germination time are determining factors in germination. The presence of lactic acid bacteria of the rust-type phenotype can improve the volume and texture during baking of the doughs, increase the fiber content and act as a prebiotic. These techniques produce a significant increase in the content of proteins, amino acids and bioactive compounds, as well as a decrease in anti-nutritional compounds. Further studies are needed to determine which conditions are the most suitable to achieve the best nutritional, functional, technological, and organoleptic quinoa properties. [ABSTRACT FROM AUTHOR]

BACKGROUND RESULTS CONCLUSION Consumption of pseudocereal‐based foods decreased in phytate concentration can provide better nutrition concerning mineral bioavailability. This study aimed to evaluate the mineral bioavailability of quinoa sourdough‐based snacks in a murine model. The mice were divided into five groups. One group was fed with basal snacks; three control groups received quinoa‐based snacks made from non‐fermented dough, dough without inoculum, and chemically acidified dough; and the test group (GF) received quinoa snacks elaborated from sourdough fermented by a phytase‐positive strain, Lactiplantibacillus plantarum CRL 1964. Food intake, body weight, and mineral concentration in blood and organs (liver, kidney, and femur) were determined.Food consumption increased during the feeding period and had the highest (16.2–24.5%) consumption in the GF group. Body weight also increased during the 6‐weeks of trial. The GF group showed higher (6.0–10.2%) body weight compared with the other groups from the fifth week. The concentrations of iron, zinc, calcium, magnesium, and phosphorus in blood, iron and phosphorus in the liver, manganese and magnesium in the kidney, and calcium and phosphorus in the femur increased significantly (1.1–2.7‐fold) in the GF group compared to the control groups.The diet that includes quinoa snacks elaborated with sourdough fermented by phytase‐positive strain L. plantarum CRL 1964 increased the concentrations of minerals in the blood, liver, kidney, and femur of mice, counteracting the antinutritional effects of phytate. This study conducted a comparison of the nutritional content and lipid composition of five different varieties of quinoa (QL-1, SJ-1, SJ-2, KL-1, and KL-2) from Qinghai Province, China. Each of the five varieties exhibited varying levels of essential nutrients, including crude protein, dietary fiber, and crude fat. The QL-1 variety has the highest concentration of phytic acid, measuring 1.66 g/100 g. A non-targeted lipomics analysis discovered a total of 16 lipid categories and 383 individual lipids in quinoa. Out of the several substances, glyceride had the highest concentration, exceeding 70%, with phospholipids coming next. The percentage of fatty acids and fatty acid esters was between 5 and 11%. The glycerides in all five kinds exhibited a similar composition, with unsaturated glycerides constituting over 99% of the total glycerides. Phospholipids constituted over 11% of the overall lipid content, with lecithin comprising more than 80% and cephalin ranging from 16.70 to 18.61%. Agricultural drainage water production in southwestern Iran is a serious problem, but this low-quality water can be considered a potential alternative source of freshwater. In this regard, the cultivation of salinity-resistant plants using drainage water can be considered a suitable measure. Quinoa (Chenopodium quinoa Willd.) is a valuable halophyte, and the World Health Organization has recognized it as a plant that can guarantee the world's future food security. For this purpose, this study was conducted to investigate the sustainable use of drainage water for quinoa cultivation (2019–2020). First, quinoa seed germination experiments were conducted in the laboratory using four different salinity solutions [0 (control), 9, 18, and 27 dS/m ]. Then, field research was conducted in the form of a split-plot factorial design so that irrigation management and planting date were implemented as the main treatments and genotype factor as subtreatment in small plots. Four genotypes of quinoa were planted on the research farm on three dates, January 20 (D1), February 5 (D2), and February 20 (D3). Irrigation managements include irrigation with water from the Karun River (as freshwater, I1), drainage water from sugarcane fields (I2), and alternating irrigation with freshwater and drainage water (I3). An average reduction of 4% in the total germination at 27 dS/m salinity compared to the control treatment indicated that quinoa was well adapted to salinity during germination. The highest biomass was produced by the Rosada genotype cultivated on the D3 under I1 management at a rate of 540 g/m2 , followed by the Q26 genotype cultivated on the D1 under I3 management (499 g/m2). Finally, it can be concluded that, to maintain the salt balance in the soil, leaching at the end of the growing season is necessary to remove salts and maintain sustainable haloculture. • Salt-coping strategies were studied investigating roots through a rhizoslide setup. • Different salt tolerance mechanisms were identified in the two halophyte species. • New Zealand spinach accumulated sodium and showed increased WUE at 100 mM NaCl. • Quinoa behaved as a sodium excluder with restricted growth at 100 mM NaCl. • Salinity affected both root architecture and plant transpiration. Soil salinity, root sodium concentration, and transpiration rate are important environmental factors impacting plant growth and productivity. This study investigates the salt-coping strategies of two plant species under varying salinity levels: New Zealand spinach species grown at three salinity levels (i.e., 0, 100, and 200 mM NaCl) and three varieties of quinoa, i.e., "Vikinga", "Dave 407" and "Red Head", grown with or without salt (i.e., 0 and 100 mM NaCl). The plants were grown on glass fiber sheets (rhizoslides) under controlled laboratory conditions. The relationship between transpiration rate, salinity, and root architecture was analyzed for each species. The root apparatus of New Zealand spinach was significantly more developed in plants grown at 100 mM NaCl compared to both 200 mM NaCl and control. The quinoa varieties responded differently to the increasing salt concentrations, with salt-treated "Red Head" plants significantly reducing their total root length and salt-treated "Vikinga" significantly reducing its lateral roots compared to the controls. Salt concentration near New Zealand spinach roots was lower compared to areas without roots, suggesting active salt uptake. In contrast, quinoa rhizoslides exhibited higher salt concentration in proximity to the roots, indicative of salt exclusion. The study provides insights into the adaptation and tolerance mechanisms of these two species to salinity, elucidating the mechanisms by which plants regulate their sodium uptake and root growth. The obtained results suggest that not only the selection of appropriate plant species (halophytes), but also varieties, plays a crucial role in improving crop productivity in salt-affected areas. The aim of this study was to investigate the modification of mechanical, rheological, and sensory properties of chickpea pastes and gels by incorporating other ingredients (olive oil or quinoa flour), to develop plant‐based alternatives that meet consumer demands for healthy, natural, and enjoyable food products. The pastes and gels were made with different amounts of chickpea flour (9% and 12%, respectively). For each product, a first set of products with different oil content and a second set with quinoa flour (either added or replaced) were produced. The viscoelastic properties of the pastes and the mechanical properties of the gels were measured. Sensory evaluation and preference assessment were carried out with 100 participants using ranking tests. The study found remarkable differences in rheological, mechanical, and sensory properties of chickpea products upon the inclusion of oil and quinoa flour. The addition of oil increased the viscosity and decreased the elastic contribution to the viscoelasticity of the pastes, while it improved the firmness and plasticity in gels. It also increased the creaminess and preference of both pastes and gels. Replacing chickpea with quinoa flour resulted in less viscous pastes and gels with less firmness and more plasticity. In terms of sensory properties, the use of quinoa as a replacement ingredient resulted in less lumpiness in the chickpea paste and less consistency and more creaminess in both the pastes and gels, which had a positive effect on preference. The addition of quinoa increased the viscosity of pastes and the firmness and stiffness of gels. It increased the consistency and creaminess of both pastes and gels. Quinoa flour and/or olive oil are suitable ingredients in the formulation of chickpea‐based products. Summary: Climate change may result in a drier climate and increased salinization, threatening agricultural productivity worldwide. Quinoa (Chenopodium quinoa) produces highly nutritious seeds and tolerates abiotic stresses such as drought and high salinity, making it a promising future food source. However, the presence of antinutritional saponins in their seeds is an undesirable trait. We mapped genes controlling seed saponin content to a genomic region that includes TSARL1. We isolated desired genetic variation in this gene by producing a large mutant library of a commercial quinoa cultivar and screening the library for specific nucleotide substitutions using droplet digital PCR. We were able to rapidly isolate two independent tsarl1 mutants, which retained saponins in the leaves and roots for defence, but saponins were undetectable in the seed coat. We further could show that TSARL1 specifically controls seed saponin biosynthesis in the committed step after 2,3‐oxidosqualene. Climate change is causing drastic reduction in crop yields around the globe due to increase in soil salinity, drought and heat stress. Quinoa (Chenopodium quinoa Willd) is regarded as a very significant food security crop considering the climate change scenario. Two quinoa genotypes (Puno and Titicaca) were cultivated on salt affected soil under drought stress with different sowing dates. Compared with early sowing, late sowing combined with salinity and drought stress caused drastic decline in plant growth and grain yield due to imposition of heat stress. Plant biomass and grain yield decreased by 26% and 39% in Puno, and by 34% and 49% in Titicaca under late sowing accompanied by salt and drought stress. Relative water contents and stomatal conductance of leaves declined in the same trend in both genotypes. Shoot Na+ concentration was the highest whereas K+ concentration was the lowest in both genotypes when drought and salt stress were combined under late sowing. Grain minerals (Ca, Mg, Fe, Zn, Cu, K, P, N and Mn) and dietary contents (protein, lipids, carbohydrates and fibre) were decreased more under the combination of salinity and drought for late sowing as compared to early sowing. When salinity and drought stress were combined under late sowing, the contents of H2O2 and TBARS were 1.9 and 2.2‐fold higher in Puno and 2.4 and 2.6‐fold higher in Titicaca, respectively. The oxidative stress was mitigated by enhanced activities of antioxidant enzymes (CAT, SOD and POD) more in Puno than Titicaca. Plant biomass and grain yield were higher in Puno with better grain quality than Titicaca. Hence, this genotype should be cultivated on salt affected soils facing drought and high temperatures. The study aimed to investigate the antioxidant properties of ginseng and red quinoa extract nanoemulsion and its effect on the shelf life of dairy cream. Nanoemulsion includes dairy cream, Tween 80, chitosan, whey protein powder, chitosan/whey protein powder, red quinoa extract, ginseng extract, and a mixture of extracts (1:1). The highest total phenol content and total flavonoid content were related to ginseng extract (24,009.55 mg of gallic acid equivalent/kg, 883.16 mg quercetin/kg) with ethanol–water solvent (80:20). Most of the phenolic and flavonoid compounds of ginseng and red quinoa extracts were related to p‐coumaric acid (211.3 μg/g), catechin (29.6 μg/g), ellagic acid (73.88 μg/g), and rutin (34.12 μg/g), respectively. Considerable antioxidant power in the concentration of 800 ppm of red quinoa and ginseng extracts (ethanol–water solvent (50:50), (80:20)) in 2,2‐diphenyl‐1‐picrylhydrazyl radical scavenging (80%, 82%, 80%, and 78%), bleaching β‐carotene: linoleic acid (81%, 73%, 77%, and 86%), and ferric reducing antioxidant power assays (70%, 73%, 72%, and 76%) was observed. Nanoemulsions of red quinoa extract with chitosan wall had the smallest particle size (250.67 nm), the highest encapsulation efficiency (72.79%), and the polydispersity index (0.34). Nanoemulsions containing ginseng + quinoa (1:1) with chitosan/whey protein powder wall showed the highest viscosity (5.30 mPa/s) and the mostzeta potential (−32.6 mv). Also, nanoemulsions of red quinoa extract showed the lowest amount of peroxide value and the thiobarbituric acid value (12 milliequivalent O2/kg–0.48 μg/mL) in dairy cream oil. In general, the red quinoa extract with chitosan wall was superior to other samples due to the delay in oxidation and positive effect on the shelf life of dairy cream. [ABSTRACT FROM AUTHOR]

Three different fermented plant-based beverages were prepared and stored for a long period (50 days) to assess the effect of the quinoa-to-chickpea ratio on physicochemical stability and microbiological quality. Physicochemical stability was evaluated based on pH, acidity, Brix degrees, water-holding capacity (WHC), viscosity, and viscoelasticity. At the end of the long-term storage period, the pH, acidity, and WHC remained stable. During the entire storage period, the beverages maintained good bacterial, fungal, and lactic acid bacteria (LAB) counts. Quinoa and chickpea flour ratios of 50% showed a higher viscosity (18 Pa.s) and WHC (65%) during short-term storage (0–30 d), indicating that the presence of chickpea flour had a positive effect on these parameters, possibly because chickpea starch contains higher amounts of amylose and long-branch chain amylopectin, which impacts the retrogradation pattern under acidic and refrigerated conditions. However, at the end of storage (50 days), the same blend had a higher acidity, lower viscosity (0.78 Pa.s), and lower LAB counts (~1 × 108 CFU/mL), indicating that the increase in chickpea flour had an adverse long-term effect on these parameters. These results suggest that although different ratios of plant sources can improve the physical aspects, they need to be incorporated in a balanced manner to avoid negative effects on both short- and long-term storage, owing to the incorporation of different types of starches and proteins affecting the stability of the system. Quinoa (Chenopodium quinoa Willd.) is a pseudocereal originally grown in the Andean region of South America. This study focused on investigating the changes in phenolic profile and antioxidant capacity in white and red quinoa varieties after short-term fermentation with Lactiplantibacillus plantarum 299v®. During fermentation, pH and lactic acid formation were monitored every three hours until pH was below 4.6. The quinoa phenolic profile was quantified via LC–UV–MS. Total polyphenol content (TPC) and total antioxidant capacity (DPPH and FRAP) were determined via spectrophotometric methods. The findings showed that fermentation resulted in a significant increase (p < 0.001) in TPC from 4.68 to 7.78 mgGAE·100 g−1 for the white quinoa and from 5.04 to 8.06 mgGAE·100 g−1 for the red quinoa variety. Gallic acid was the most abundant phenolic acid detected in unfermented quinoa samples (averaging 229.5 μg·g−1). Fermented white quinoa showed an 18-fold increase in epicatechin, while catechin was found only in fermented red quinoa (59.19 μg·g−1). Fermentation showed a significantly positive impact on the iron-reducing antioxidant capacity (FRAP) of quinoa (p < 0.05). Red quinoa had a higher FRAP antioxidant capacity than the white variety; a similar trend was observed with the DPPH assay. There was a significant correlation (r > 0.9, p < 0.05) between TPC and antioxidant capacity. In conclusion, short-time lactic fermentation effectively increased phenolic content and antioxidant capacity in both quinoa varieties. Quinoa is a highly nutritious and biologically active crop. Prior studies have demonstrated that quinoa polysaccharides exhibit anti-obesity activity. This investigation confirmed that quinoa polysaccharides have the ability to inhibit the growth of 3T3-L1 preadipocytes. The objective of transcriptome research was to investigate the mechanism of quinoa water-extracted polysaccharides and quinoa alkaline-extracted polysaccharides that hinder the growth of 3T3-L1 preadipocytes. There were 2194 genes that showed differential expression between untreated cells and those treated with high concentrations of quinoa water-extracted polysaccharides (QWPHs). There were 1774 genes that showed differential expression between untreated cells and those treated with high concentrations of quinoa alkaline-extracted polysaccharides (QAPHs). Through gene ontology and KEGG pathway analysis, 20 characteristic pathways are found significantly enriched between the untreated group and the QAPH and QWPH groups. These pathways include the NOD-like receptor, Hepatitis C, and the PI3K-Akt signaling pathway. Atp13A4 and Gbgt1 have been identified as genes that are upregulated and downregulated in both the untreated group and the QWPH group, as well as in the untreated group and the QAPH group. Quinoa (Chenopodium quinoa Willd.) has gained worldwide recognition for its nutritional values, adaptability to diverse environments, and genetic diversity. This review explores the current understanding of quinoa tolerance to environmental stress, focusing on drought, salinity, heat, heavy metals, and UV-B radiation. Although drought and salinity have been extensively studied, other stress factors remain underexplored. The ever-increasing incidence of abiotic stress, exacerbated by unpredictable weather patterns and climate change, underscores the importance of understanding quinoa's responses to these challenges. Global gene banks safeguard quinoa's genetic diversity, supporting breeding efforts to develop stress-tolerant varieties. Recent advances in genomics and molecular tools offer promising opportunities to improve stress tolerance and increase the yield potential of quinoa. Transcriptomic studies have shed light on the responses of quinoa to drought and salinity, yet further studies are needed to elucidate its resilience to other abiotic stresses. Salinization and sodication present significant threats to crop productivity in many parts of the world including Pakistan. Cultivating halophytes like quinoa presents a viable solution for the profitable use of salt-affected lands. This study specifically examines the performance and salt tolerance mechanism of four quinoa accessions under varying salinity and sodicity levels. In addition to a control group, different combinations of electrical conductivity and sodium adsorption ratio (ECe dS m−1 SAR levels) were established: 10:20, 10:40, 20:20, and 20:40, achieved by using a mixture of salts. Most of the quinoa cultivars exhibited robust growth, with the exception of GLN-22, which proved unable to withstand high levels of salinity and sodicity, resulting in a 78% reduction in yield. GLN-29, on the other hand, demonstrated superior performance across all levels of salinity and sodicity. UAF-Q7 excelled under conditions of high salinity and low sodicity compared to equivalent salinity levels but elevated sodicity. Meanwhile, GLN-33 exhibited enhanced growth under elevated sodicity levels but struggled in the face of high salinity stress. In terms of nutrient uptake, GLN-29 displayed a higher accumulation of Na+ (32%) in older leaves compared to younger ones, alongside elevated levels of antioxidant activity at all salinity and sodicity levels. Notably, GLN-29 exhibited excellent adaptation to both high salinity and sodicity levels, resulting in the highest grain yield (14.75 g/pot) and the salt tolerance mechanism was associated with highly efficient K+ retention and transport of Na+ to older leaves. Quinoa and other small-seeded crops possess relatively diminutive seed diameters, rendering them highly susceptible to the influence of airflow. The seeding process is impacted by the Cluster Hole Effect, where seeds are unintentionally drawn into areas between the suction holes. This leads to multiple seeds being picked up at once, making it difficult to meet the precise seeding requirements for quinoa. To delve deeper into the mechanism of the cluster hole effects, this study focused on quinoa seeds as the primary research subject. This study analyzes the migration conditions of seed population suction and establishes an equation for seed suction considering the cluster hole effect. CFD methods were employed to analyze the impact of various vacuum chamber negative pressures, suction hole spacing, and suction hole quantities on the suction flow field. By combining simulation results with evaluation criteria such as the qualification rate of seeds per hole, the qualification rate of hole spacing, empty hole rate, and hole spacing coefficient of variation, single-factor experiments and Box–Behnken response surface experiments were conducted to analyze the effects of different factors and their interactions, ultimately determining an optimal parameter combination. The results indicate that with five suction holes, spaced at D11, a vacuum pressure of 1.2 kPa, and a rotation speed of 15 rpm, the seeding performance is optimal. The qualification rate of seeds per hole reaches 98.67%, the qualification rate of hole spacing is 96%, and the hole spacing coefficient of variation is 5.24%, meeting agricultural requirements. Plant-derived biosurfactants are widely used due to their emulsifying and surface-active properties and can be applied in various products. The aim of this present study was to develop a mouthwash using chitosan hydrochloride and saponins extracted from the plants Chenopodium quinoa and Glycine max. After extraction of the biosurfactants using the Soxhlet method, they were characterized with the aid of infrared spectroscopy and subjected to determination of critical micelle concentration, which was found to be 4.0 and 3.5 g/L for C. quinoa and G. max, respectively. The stability of the emulsions was investigated in the presence of different oils and at different values of temperature, pH, and salinity, which showed an emulsification index greater than 40% under all conditions analyzed. After obtaining the mouthwash formulation, tests of foaming capacity, pH, and genotoxicity were performed in cells of onion (Allium cepa) roots. No presence of micronuclei was found in the roots exposed to the formulation, which indicates that there was no aggression to the cells. The results of antimicrobial susceptibility tests revealed bacteriostatic/bactericidal activity as well as antibiofilm activity of formulations against the microorganisms tested. In conclusion, the biosurfactants present in extracts from C. quinoa and G. max were found to be stable, non-toxic molecules with antimicrobial activity, with potential to replace toxic emulsifying agents commonly used in commercial products. Background: As an emerging food crop with high nutritional value, quinoa has been favored by consumers in recent years; however, flooding, as an abiotic stress, seriously affects its growth and development. Currently, reports on the molecular mechanisms related to quinoa waterlogging stress responses are lacking; accordingly, the core genes related to these processes were explored via Weighted Gene Co-expression Network Analysis (WGCNA). Results: Based on the transcriptome data, WGCNA was used to construct a co-expression network of weighted genes associated with flooding resistance-associated physiological traits and metabolites. Here, 16 closely related co-expression modules were obtained, and 10 core genes with the highest association with the target traits were mined from the two modules. Functional annotations revealed the biological processes and metabolic pathways involved in waterlogging stress, and four candidates related to flooding resistance, specifically AP2/ERF, MYB, bHLH, and WRKY-family TFs, were also identified. Conclusions: These results provide clues to the identification of core genes for quinoa underlying quinoa waterlogging stress responses. BACKGROUND RESULTS CONCLUSION Considering the nutritional value and adaptability of quinoa, integrating it into African diets could enhance food and nutrition security, contingent on the acceptability of quinoa‐based foods. This study therefore determined consumer acceptability of six stiff porridge (nsima) samples, their sensory profiles, and their emotion profiles. The samples comprised controls made from whole corn flour, dehulled corn flour, and soaked, dehulled corn flour and from 1:1 blends of quinoa and each corn flour type.Despite quinoa being unfamiliar, none of the stiff porridge samples prepared using 1:1 blend of quinoa and corn flour was disliked (liking score of ≤4 on a 9‐point hedonic scale). Sensory properties and emotions both had significant (P < 0.05) effects on consumer acceptability. When samples were perceived to be bitter, sticky, and thick, there was an overall mean reduction in liking of 2.3, 1.0, and 0.3, respectively. With regard to emotions, the highest positive mean impact of 1.6 was associated with feeling satisfied followed by being happy and nostalgic (1.4). The sensory and emotion profiles of nsima prepared using whole corn flour were like those of quinoa‐based nsima samples. However, profiles of nsima samples from dehulled corn, and soaked dehulled corn flour, respectively, were considered ideal.Quinoa‐based nsima can be adopted easily by the current consumers of whole corn flour nsima in Malawi and possibly in other African countries with similar dietary inclinations. Lactobacillus plantarum is a functional probiotic and could be used in yogurt fermentation to improve the function and flavor. However, L. plantarum has relatively poor acid resistance, and cell viability gradually decreases as pH decreases during yogurt fermentation. Therefore, exploring suitable strategies to promote the fermentation of L. plantarum for yogurt processing is important. In the present study, the effects of quinoa protein hydrolysates (QPHs) on the qualities and volatiles of yogurt fermented by L. plantarum were investigated. QPH addition significantly promoted bacterial growth and organic acids production, subsequently improved the water-holding capacity and viscosity of yogurt. QPH addition also increased the overall antioxidant capacity of yogurt, but the DPPH radical-scavenging ability of 1% QPH-supplemented yogurt was significantly greater than that of 2% QPH-supplemented yogurt. Additionally, QPHs promoted the metabolism of L. plantarum and further promoted the production of volatile flavor compounds. Fifty-two volatile compounds (mainly acids, esters, and ketones) were detected in 2% QPH-supplemented yogurt, which was 1.86-fold greater than the number detected in the control samples. Some aroma components, such as nonanoic acid and maltol, were significantly increased, but undesirable volatiles, such as decanal, were decreased. QPH composition analysis indicated that 60.79% of the peptides contained hydrophobic amino acids at the N-terminus or the C-terminus, which may explain QPHs’ strong antioxidant properties. BACKGROUND RESULTS CONCLUSION Quinoa contains far more nutrients than any traditional grain crop. It is known that terpenoids in quinoa have anti‐inflammatory and antitumor effects, but their role in reversing drug resistance remains unclear.Our previous studies showed that quinoa‐derived terpenoid compounds (QBT) can inhibit the occurrence and development of colon cancer. This study further indicates that QBT markedly reverse drug resistance of colon cancer. The results showed that QBT combined with 5‐fluorouracil (5‐Fu) treatment significantly enhanced the chemotherapy sensitivity of HCT‐8/Fu, compared with 5‐Fu treatment alone. Moreover, we found that QBT significantly reduced the expression of drug‐resistant proteins (P‐gp, MRP1, BCRP), and increased the accumulation of chemotherapy drugs. Taking P‐gp as the target for biogenesis prediction analysis, results showed that upregulation of miR‐495‐3p enhanced the chemosensitivity of drug‐resistant HCT‐8/Fu cells. Besides, the results showed that miR‐495‐3p was abnormally methylated in HCT‐8/Fu compared with HCT‐8 colon cancer cells. The expression of methyltransferases DNMT1, DNMT3a and DNMT3b was abnormal. After QBT treatment, the expression level of methyltransferases returned to normal. In addition, the QBT + 5Fu group showed inhibition of tumors in nude mice.QBT treatment downregulated the expression of drug‐resistant protein P‐gp by inhibiting the methylation of miR‐495‐3p, and enhanced the accumulation of 5‐Fu in vivo, which in turn reversed its chemoresistance. Quinoa (Chenopodium quinoa, 2n = 4x = 36), a super pseudocereal crop, has been introduced into China nearly 60 years. Many excellent varieties have been developed through massive selection; however, few are developed through mutagenesis breeding. In this study, the 'Longli-4' variety, locally cultivated in Gansu province, Northwest China, was selected for experimentation. The grains of 'Longli-4' were treated with ethyl methanesulfonate (EMS) at a concentration of 0.8% for 8 h. Nine plants from independent M2 families were randomly selected to investigate the mutagenesis effect of EMS on the quinoa genome. The results indicated that the single nucleotide polymorphisms (SNPs) induced by EMS were unevenly distributed across all 18 chromosomes, with an average mutation frequency of 91.2 SNPs/Mb, ranging from 4.5 to 203.5 SNPs/Mb. A significant positive correlation between the number of SNPs and chromosome length was identified through linear model analysis. Transitions from G/C to A/T were the most predominated in all variant categories, accounting for 34.4–67.2% of the mutations, and SNPs were significantly enriched in intergenic regions, representing 69.2–75.1% of the total mutations. The use of plant growth‐promoting rhizobacteria (PGPR) in agriculture is one of the most promising approaches to improve plants' growth under salt stress and to support sustainable agriculture under climate change. In this context, our goal was to grow and enhance quinoa growth using native rhizobacteria that can withstand salt stress. To achieve this objective, we isolated rhizobacteria from three saline localities in a semi‐arid region in Tunisia, which are characterized by different halophyte species and tested their plant growth‐promoting (PGP) activities. Then, we inoculated quinoa seedlings cultivated on 300 mM NaCl with the three most efficient rhizobacteria. A positive effect of the three‐salt tolerant rhizobacteria on the growth of quinoa under salinity was observed. In fact, the results of principal component analysis indicated that the inoculation of quinoa by salt‐tolerant PGPR under high salinity had a prominent beneficial effect on various growth and physiological parameters of stressed plant, such as the biomass production, the roots length, the secondary roots number, proline content and photosynthesis activities. Three rhizobacteria were utilized in this investigation, and the molecular identification revealed that strain 1 is related to the Bacillus inaquosorum species, strain 2 to Bacillus thuringiensis species and strain 3 to Bacillus proteolyticus species. We can conclude that the saline soil, especially the halophytic rhizosphere, is a potential source of salt‐tolerant plant growth‐promoting rhizobacteria (ST‐PGPR), which stimulate the growth of quinoa and improve its tolerance to salinity. The experiment was in order to select and identify different types and functions of quinoa germplasm resources and provide suitable quinoa germplasm resources which appropriate to the high-altitude and cool areas of Gansu Province. 17 quinoa germplasm resources were introduced, and their main agronomic traits, disease resistance and yield were studied and analyzed in a one-way randomized design using principal component analysis and cluster analysis. The results showed that 16 of the 17 introduced quinoa germplasm resources could emerge normally, 14 could develop and mature successfully, and CHLi13 and CHLi14 were immature but with higher plant heights. Among the 14 normal mature resources, the plant heights ranged from 78 to 182 cm, main spike length ranged from 22 to 72 cm, main spike diameter ranged from 9 to 32 mm, and the number of branches ranged from 8 to 20. Except growth period, the coefficient of variation of other indexes was about 20%. None of the tested resources showed sprouting or lodging. CHLi01 and CHLi02 exhibit varying degrees of susceptibility to stem rot, leaf spot, and downy mildew, and the most serious downy mildew disease infections were found in CHLi07, CHLi09 and CHLi17. CHLi03, CHLi06, CHLi07, CHLi08, CHLi09, CHLi10, and CHLi16 had high yields, all exceeding 3 800 kg/hm2. After principal component analysis, the cumulated variance contribution ratio of the first five factors reached 83.297%, which was well represented, with components 1 and 2 being better able to represent the relationship between agronomic traits and yield, and components 3 and 4 could better represent stem rot disease, leaf spot disease and downy mildew disease and thousand grain weight. Meanwhile, the common factor variance of each index was greater than 0.7, which could adequately represent the raw data of each index. It can be judged by cluster analysis that at genetic distance 5, the 14 quinoa resources that emerged and matured normally were classified into three major groups, among which seven resources, CHLi03, CHLi06, CHLi07, CHLi08, CHLi09, CHLi10 and CHLi16, achieved higher yields due to the high number of branches and high effective branching rate. The study indicates that the resources identified as suitable for wider cultivation are CHLi06, CHLi08, CHLi13, CHLi14, and CHLi16. Soil salinization is a global agro-ecological problem and a major factor impeding agricultural development. Planting salt-tolerant plants to improve saline soils offers both ecological and economic benefits. Currently, there are few studies addressing the combined effects of salt and alkali stress. Quinoa is known for its salinity tolerance. However, research has predominantly focused on the effects of salinity stress on quinoa's morphology and physiology, with its molecular mechanisms remaining unclear. To better understand quinoa's response mechanisms to salinity and alkali stress, we employed RNA-seq technology to analyze transcriptomes under these conditions. We identified 1833 differentially expressed genes (DEGs) under salt stress and 2233 DEGs under alkali stress. Gene Ontology (GO) and Kyoto Encyclopedia of Genes and Genomes (KEGG) annotations revealed that quinoa responds to salt and alkali stress through similar mechanisms. Both stresses promoted sucrose synthesis, starch synthesis and catabolism, which increased the osmotic potential of quinoa leaves. Additionally, there was a regulation of the down-regulated expression of the abscisic acid receptor PYR/PYL and the up-regulated expression of the serine/threonine protein kinase (PP2C) gene in the ABA signaling pathway. Contrasting with salt tolerance, the mechanism specific to quinoa's alkalinity tolerance involves the up-regulation of the citric acid cycle via an active γ-aminobutyric acid (GABA) branch, enhancing quinoa's energy metabolism. In summary, our transcriptome analysis revealed key regulatory mechanisms in quinoa's response to saline and alkaline stress. Climate change has intensified abiotic stresses, notably salinity, detrimentally affecting crop yield. To counter these effects, nanomaterials have emerged as a promising tool to mitigate the adverse impacts on plant growth and development. Specifically, zinc oxide nanoparticles (ZnO-NPs) have demonstrated efficacy in facilitating a gradual release of zinc, thus enhancing its bioavailability to plants. With the goal of ensuring sustainable plant production, our aim was to examine how green-synthesized ZnO-NPs influence the seedling growth of quinoa (Chenopodium quinoa L. Cv Atlas) under conditions of salinity stress. To induce salt stress, solutions with three different NaCl concentrations (0, 100, and 200 mM) were prepared. Additionally, Zn and ZnO-NPs were administered at four different concentrations (0, 50, 100, and 200 ppm). In this study, plant height (cm), plant weight (g), plant diameter (mm), chlorophyll content (SPAD), K/Na value, Ca/Na value, antioxidant enzyme activities (SOD: EU g−1 leaf; CAT: EU g−1 leaf; POD: EU g−1 leaf), H2O2 (mmol kg−1), MDA (nmol g−1 DW), proline (µg g−1 FW), and sucrose (g L−1), content parameters were measured. XRD analysis confirmed the crystalline structure of ZnO nanoparticles with identified planes. Salinity stress significantly reduced plant metrics and altered ion ratios, while increasing oxidative stress indicators and osmolytes. Conversely, Zn and ZnO-NPs mitigated these effects, reducing oxidative damage and enhancing enzyme activities. This supports Zn's role in limiting salinity uptake and improving physiological responses in quinoa seedlings, suggesting a promising strategy for enhancing crop resilience. In this study, 300 quinoa accessions were systematically screened for adaptation to low-altitude areas using seventeen traits. The experiment was conducted in Taigu District, Jinzhong City, Shanxi Province, in 2021, at an altitude of 791 m. Out of the 300 genotypes, 107 were able to produce flowers and fruit, with yields ranging from 538 to 5132 kg ha−1 and with 1000-grain weights between 1.19 g and 2.37 g. These 107 quinoa genotypes were categorized into four groups based on grain yield: below 1500, 1500–2250, 2250–3000, and above 3000 kg ha−1. These groups consisted of 33, 33, 24, and 17 genotypes, respectively. This study found that the 1000-grain weight ranged from 1.19 g to 2.37 g, with an average of 1.72 g, 1.72 g, 1.83 g, and 1.92 g for the respective yield levels. Among the 107 genotypes, 25 had a 1000-grain weight exceeding 2 g, and 13 of these genotypes also had yields exceeding 2250 kg ha−1. The growth period of quinoa genotypes in the low-altitude area was approximately 138–142 days, with longer growth periods associated with higher yield levels. JQ-00084 is the only genotype with a yield > 3000 kg ha−1 and meets all the growth criteria, including a 1000-grain weight exceeding 2 g and a flowering-to-maturity period of over 80 days. Meanwhile, JQ-00315, JQ-00521, JQ-1029, and JQ-02405 fulfilled at least four criteria. These results highlight the importance of germplasm screening for low altitudes, and a large set of germplasms could be screened using the above criteria of phenology, growth, and yield traits. This study aims to investigate the effect of substituting different levels of chickpea flour (0, 25, 50, 75 and 100%) with quinoa flour on the relationship and dependence between the amount of protein, ash, moisture, specific volume, texture, color changes and sensory characteristics. Gluten-free cookies were analyzed using principal component analysis (PCA). The obtained results showed the dependence and relationship between the evaluated parameters to the change in the level of substitution of chickpea flour with quinoa in the formulation of gluten-free cookies. By replacing 25%, the relationship between the parameters changed significantly. With the increase of substitution level change from 25 to 50%, with the predominance of smell and taste and change in texture, the relationships between the evaluated parameters in the space of principal component analysis were rearranged relative to each other. By increasing the substitution level from 50 to 75%, the influence of the presence of quinoa flour on the textural characteristics of the manufactured product and its relationship with other parameters showed the variation of the examined traits. This indicated the critical level of relationship change towards the predominance of quinoa properties in the formulation. At the replacement level of 100%, based on the position of the special volume parameter with the parameters related to tissue characteristics, an opposite relationship was observed between them. Based on the results, it shows the applicability of principal component analysis as a useful tool in identifying the substrate of relationships between quantitative and qualitative parameters in the direction of designing and developing food formulations, and finally, the maximum replacement of 50% of chickpea flour with quinoa flour in Chickpea sweet formulation is recommended. Summary: In this study, the effect of roasting, boiling and germination processes on bioactive compounds, antioxidant activity, fatty acid and phenolic profiles and biogenic elements of quinoa seed and oils was assigned. The moisture amounts of boiled and germinated quinoa seeds were recorded to be significantly higher than the control. Also, the oil yield of quinoa seeds decreased compared with the control by roasting, boiling and germinating. The total phenolic and flavonoid quantities of quinoa seeds were assigned to be between 137.70 (germinated) and 315.00 (boiled) to 156.62 (boiled) and 402.38 mg/100 g (control), respectively. Antioxidant capacities of processed quinoa seeds were reported to be between 11.91 (germinated) and 14.43 mmol kg−1 (roasted). The highest total flavonoid and antioxidant capacities were recorded in the control group and roasted quinoa seeds. The highest decrease in total phenol amount of quinoa seeds was detected in germinated quinoa. Gallic acid and catechin values of quinoa seeds varied to be between 29.17 (boiled) and 38.00 mg/100 g (control) to 2.72 (germinated) and 137.26 mg/100 g (control), respectively. The rutin, ferulic acid and p‐coumaric acid contents of the processed (roasted, boiled and germinated) quinoa seeds gradually increased compared with the control. The highest palmitic, oleic, behenic and arachidonic acids were recorded in germinated quinoa oil, followed by the fatty acids of boiled, raw (control) and roasted quinoa seed oils in descending order. This study aims to understand the influence of nitrogen accumulation, fungal endophyte, yield, nitrogen use efficiency, and grain nutritional quality parameters on the yield of quinoa in some areas of China. The endophytic microbial community in plants plays a crucial role in plant growth, development, and health, especially in quinoa plants under different nitrogen fertilizer levels. The results from the present study indicated that appropriate nitrogen application significantly enhanced the nitrogen accumulation and yield of quinoa grains during maturity, increasing by 34.54–42.18% and 14.59–30.71%, respectively. Concurrently, protein content, amylose, total starch, ash, and fat content also increased, with respective growth rates of 1.15–18.18%, 30.74–42.53%, 6.40–12.40%, 1.94–21.94%, and 5.32–22.22%. Our constructed interaction network of bacterial and fungal communities revealed that bacteria outnumbered fungi significantly, and most of them exhibited synergistic interactions. The moderate increase in N150 was beneficial for increasing quinoa yield, achieving nitrogen use efficiency (NUE) of over 20%. The N210 was increased, and both the yield and NUE significantly decreased. This study provides novel insights into the impact of nitrogen fertilizer on quinoa growth and microbial communities, which are crucial for achieving agricultural sustainable development. Very small granule starch is a good source for effective Pickering emulsion stabilizers. In this study, native Agriophyllum squarrosum (A. squarrosum) starch (N‐AS) and native quinoa starch (N‐QS) are modified by octenyl succinic anhydride (OSA), and the physicochemical as well as the emulsifying characteristics of two modified starches are evaluated. Fourier transform infrared spectroscopy (FTIR) shows that the esterification reactions between OSA and the two starches are successful, and the substitution effect of OSA‐modified A. squarrosum starch (OSA‐AS) is better than that of OSA‐modified quinoa starch (OSA‐QS). X‐ray diffraction (XRD) analysis shows that OSA modification does not alter the crystal type of the starch particles. OSA modification increases the particle size and hydrophobicity of both starches, and the particles of OSA‐AS are smaller than that of OSA‐QS, which corresponded to the fact that N‐AS possesses a smaller particle size compared to native N‐QS. OSA‐modified starches are arranged at the interface of oil–water to stabilize the emulsion. The OSA‐AS displays better performance of stabilizing emulsion than OSA‐QS. The Pickering emulsions formed by all OSA‐modified starch samples are mainly elastic gel‐like emulsions. In summary, OSA‐AS is more suitable for Pickering emulsion stabilizer than OSA‐QS. Simple Summary: Quinoa is an Andean grain that has gained global popularity due to its nutritional properties. The production area has expanded outside its Andean origins and the crop is now produced worldwide. However, new emerging pests cause serious problems in the crop and limit its production. This review discusses the status of the pests of quinoa in the world and the agricultural strategies implemented in the framework of integrated pest management (IPM). The literature regarding sampling methodologies for pest monitoring, determining economic threshold levels, cultural practices, and chemical and biological control is summarized, and a critical perspective on establishing IPM in quinoa is given. Since ancestral times, quinoa (Chenopodium quinoa Willd.) has been cultivated in the Andean regions. Recently, this pseudocereal has received increasing international attention due to its beneficial properties, such as adaptation and resilience in the context of global change, and the nutritional value of the grains. As a result, its production areas have not only increased in the highlands of South America but have also expanded outside of its Andean origins, and the crop is currently produced worldwide. The key pests of quinoa in the Andean region are the gelechiid moths Eurysacca melanocampta and Eurysacca quinoae; in other parts of the world, new pest problems have recently been identified limiting quinoa production, including the gelechiid Scrobipalpa atripicella in North America and Europe and the agromyzid fly Amauromyza karli in North America. In this review, the status of quinoa pests in the world is presented, and different aspects of their integrated management are discussed, including sampling methodologies for pest monitoring, economic threshold levels, and various control strategies. BACKGROUND: Postmenopausal osteoporosis (PMO) is associated with dysregulation of bone metabolism and gut microbiota. Quinoa is a grain with high nutritional value, and its effects and potential mechanisms on PMO have not been reported yet. Therefore, the purpose of this study is to investigate the bone protective effect of quinoa on ovariectomy (OVX) rats by regulating bone metabolism and gut microbiota. Results: Quinoa significantly improved osteoporosis‐related biochemical parameters of OVX rats and ameliorated ovariectomy‐induced bone density reduction and trabecular structure damage. Quinoa intervention may repair the intestinal barrier by upregulating the expression of tight junction proteins in the duodenum. In addition, quinoa increased the levels of Firmicutes, and decreased the levels of Bacteroidetes and Prevotella, reversing the dysregulation of the gut microbiota. This may be related to estrogen signaling pathway, secondary and primary bile acid biosynthesis, benzoate degradation, synthesis and degradation of ketone bodies, NOD‐like receptor signaling pathway and biosynthesis of tropane, piperidine and pyridine alkaloids. Correlation analysis showed that there is a strong correlation between gut microbiota with significant changes in abundance and parameters related to osteoporosis. Conclusion: Quinoa could significantly reverse the high intestinal permeability and change the composition of gut microbiota in OVX rats, thereby improving bone microstructure deterioration and bone metabolism disorder, and ultimately protecting the bone loss of OVX rats. © 2024 Society of Chemical Industry. The triple burden of malnutrition is a problem that is being fought against at global, continental, regional and national levels. When consumed in adequate quantities, healthy diets are important in reversing the menace of malnutrition. In Kenya, grains are an important source of energy and micronutrients. Even though they contribute most energy and micronutrients, a huge Recommended Daily Allowance deficit still exists. Incorporating ancient grains such as quinoa which are nutrientrich and can survive in harsh climatic zones into the diets, can boost the efforts made towards the fight against malnutrition. Though quinoa adaptation trials have been conducted in Kenya, expanded data on the nutrient content are yet to be compiled. Between May 2022 and August 2022, four varieties of quinoa; Cherry Vanilla, Titicaca, Brilliant Bright Red and Biobio were grown at the University of Nairobi, Upper Kabete campus field station. The harvests of the four varieties were separately analyzed to determine and compare the content levels of macronutrients (carbohydrates, crude protein, fats) and micro-nutrients (manganese, magnesium, potassium, calcium, iron, copper and zinc). The four varieties were significantly different in all the analyzed elements except moisture content. Cherry vanilla had the highest level of crude protein (25.1±0.3g/100g) and fat (11.46±0.184g/100g) but the lowest level of carbohydrates (42.5±0.4%). Titicaca had the highest amounts of; manganese (21.9±0.06g/100g), potassium (511.9±0.03mg/100g), iron (11.5± 0.07mg/100g) and zinc (14.1±0.0mg/100g). Biobio variety exhibited the highest amount of magnesium (73.9±0.1mg/100g). In conclusion, the different varieties of quinoa significantly differ in their levels of macro and micronutrients. The Kenyan-grown quinoa has the potential to contribute to increased dietary intake of both macronutrients and micronutrients of children aged 2-6 years old. The Kenyan-grown quinoa contains levels of micronutrients in higher amounts compared to maize, rice and wheat - the commonly consumed cereals in Kenya. On this basis, the study recommends that the growing and consumption of quinoa should be promoted in Kenya and introduced into the diets of children aged 2-6 years of age in Kenya. HC-Pro and coal protein (CP) genes of a potyvirus facilitate cell-to-cell movement and are involved in the systemic movement of the viruses. The interaction between HC-Pro and CP is mandatory for aphid transmission. Two turnip mosaic virus (TuMV) isolates, RC4 and YC5, were collected from calla lily plants in Taiwan. The virus derived from the infectious clone pYC5 cannot move systemically in Chenopodium quinoa plants and loses aphid transmissibility in Nicotiana benthamiana plants, like the initially isolated virus. Sequence analysis revealed that two amino acids, P5 and A206, of YC5 CP uniquely differ from RC4 and other TuMV strains. Recombination assay and site-directed mutagenesis revealed that the fifth residue of leucine (L) at the N-terminal region of the CP (TuMV-RC4), rather than proline (P) (TuM V-YC5), is critical to permit the systemic spread in C. quinoa plants. Moreover, the single substitution mutant YC5-CPP5L became aphid transmissible, similar to RC4. Fluorescence microscopy revealed that YC5-GFP was restricted in the petioles of inoculated leaves, whereas YC5-CPp5L-GFP translocated through the petioles of inoculated leaves, the main stem, and the petioles of the upper uninoculated leaves of C. quinoa plants. In addition, YC5-GUS was blocked at the basal part of the petiole connecting to the main stem of the inoculated C. quinoa plants, whereas YC5-CPp51-GFP translocated to the upper leaves. Thus, a single amino acid, the residue Ls at the N-terminal region right before the f'DAGs motif, is critical for the systemic translocation ability of TuMV in a local lesion host and for aphid transmissibility in a systemic host. AbstractContamination of soils with heavy metals (HMs) is a serious concern due to the non-biodegradability and accumulation of these metals in living organism. The aim of this study was to evaluate the effectiveness of fish scale powder, chitin, and chitosan in reducing zinc (Zn) accumulation of quinoa grown on Zn-polluted soil. A 3*4 factorial greenhouse trial was conducted with three levels of Zn contamination (0, 100, and 200 mg kg−1) and four types of amendment (control, and 0.15% of each fish scale powder, chitin, and chitosan). The quinoa seeds were sown in soil treated with Zn contamination and amendments. Results showed that application of amendments especially chitosan increased shoot and root dry weight and greenness index of quinoa leaf. While high soil Zn levels decreased cationic micronutrients uptake in quinoa shoot, chitosan addition desirably enhanced cationic micronutrients uptake in quinoa shoot. Overall, amendment addition significantly decreased Zn concentration and uptake in plant; the highest decrease was observed following the application of chitosan. Although the application of high Zn levels significantly increased the values of phytoextraction efficiency, application of chitin and chitosan significantly decreased it. The value of translocation factor was lower than one, demonstrating that a large amount of Zn was stabilized in the root tissues, while a small amount of this metal was transferred to aboveground parts of quinoa. Results of this study revealed that fish scales derivatives were effective in preventing Zn toxicity and at the same time increasing cationic micronutrients contents of quinoa grown on HMs-polluted soil. Quinoa is one of the most popular ingredients in the creation of healthy and environmentally friendly foods, due to its rich nutrient composition, balanced amino acids, and various bioactive substances. Quinoa noodles can be prepared for green and healthy food, particularly for better taste and market prospects. However, the traditional processing of wheat noodles cannot fully meet the high quality of quinoa noodles at present, due to the lack of gluten. Among them, extrusion has been applied to prepare the whole quinoa noodles. The natural color of food can also be closely related to its nutritional value. Quinoa grains with different colors often vary in the content of starch, protein, fat, fiber, and active substances. This study aims to clarify the great influence on the cooking and nutritional quality of extruded noodles made with quinoa as raw materials. The mechanism of quality of extruded quinoa noodles with different colors was explored to compare the basic components, gelatinization of quinoa flours, the microstructure, cooking quality, active components, and starch digestion. Results showed that the white quinoa achieved the highest content of total starch and crude fiber, compared with the red and black quinoa powder. The content of crude fiber increased significantly with the deepening of the color of quinoa powder. Among the three types of quinoa powder, the red quinoa exhibited the highest levels of fat and protein content. In terms of gelatinization properties, the peak viscosity, final viscosity, and setback value of white quinoa powder were superior to those of red and black quinoa powder. The pasting temperature of white quinoa powder was lower than that of red and black quinoa powder. Furthermore, L* values significantly decreased after extrusion, whereas, a* value and b* values significantly increased (P < 0.05). Additionally, the red and black quinoa powder, along with their extruded noodles, exhibited higher levels of polyphenols, flavonoids, and antioxidant activities, compared with the white quinoa. X-ray diffraction revealed that the extrusion process caused the changes of starch crystal type from type A to V. There was a decrease of starch crystallinity in the white, red, and black quinoa noodles from 17.12%, 25.55%, and 21.41% to 10.53%, 8.06% and 7.71%, respectively. White quinoa noodles shared the highest crystallinity, due to the high starch content and high setback value of powder. The recrystallization of starch formed a relatively stable and orderly molecular structure, thus enhancing the crystallinity of starch in the extruded quinoa noodles. Although the cooking time of red and black quinoa extruded noodles was shorter than that of white ones, their overall cooking quality was notably inferior. The cooking loss of white quinoa noodles was 7.46%, which was significantly lower than that of red (10.12%) and black (9.16%). At the same time, the extruded white quinoa noodles also exhibited the highest hardness (30.71 N) and springiness (0.97). The extruded noodles relied primarily on the gelatinization and retrogradation of starch. The rearrangement of starch was dominated to form a stable gel structure after extrusion for the cooking quality of extruded quinoa noodles. Scanning electron microscope images confirmed that the gel network structure of white quinoa extruded noodles was denser and more complete, thereby leading to the lower cooking loss and superior texture, compared with the red and black quinoa extruded noodles. The in vitro starch digestibility showed that the white quinoa noodles contained the highest resistant starch content and the lowest predicted glycemic index of 68.56. In summary, the red and black quinoa presented a relatively higher content of active substances, but white quinoa was more suitable for the production of high-quality and low-GI extruded noodles. The current research explored the possible protective effect of chenopodium quinoa extract against CCl4 acute liver toxicity in Sprague Dawley rats. Thirty rats were divided into five groups with six rats in each group. CCl4 (Carbon tetrachloride) was administered at a dose rate of 2 mL/kg b.w. intra‐peritoneally once a week for 3 weeks. The plant extract was given through oral gavage for a period of 21 days. Group I served as a normal group which was given with basal diet. Group II was referred to as a positive control group and received CCl4 2 mL/kg body weight (i.p.). Group III was the standard treatment group and received 2 mL/kg CCl4 (i.p.) and 16 mg/kg body weight (p.o.) silymarin. Group IV was the plant treatment group, which received 2 mL/kg CCl4 (i.p.) and 600 mg/kg body weight of quinoa seed extract (p.o.). Group V was the combined treatment group, which received 2 mL/kg CCl4 (i.p.) accompanied with a combination of silymarin (p.o.) 16 mg/kg body weight and quinoa seed extract (p.o.) 600 mg/kg body weight. The liver biomarkers were assessed along with histopathological analysis to observe the changes in the liver. The outcome suggested that the treatment, which was given with the combination of silymarin and quinoa seed extract, significantly enhanced the antioxidant levels, reduced the oxidative stress, and restored the liver function as evidenced by biochemical parameters histopathological studies. Quinoa is a full‐nutrition food; however, its poor flavor and small size make it not the best food option for direct consumption. In this study, a quinoa snack (QS, a cake) was developed, and the aroma profile of the products was improved by adding jujube fruit powder (made from dried jujube fruits, from 5% to 30%). Gas chromatography mass spectrum (GC–MS) combined with electronic nose (e‐nose) was applied for characterizing the aroma profiles of QS samples. Results showed a total of 26 aroma compounds were identified in QS samples by GC–MS, and 3‐methylbutanol (from 1525 μg/kg in QS‐30 to 3487 μg/kg in QS‐0), ethanol (from 1126 μg/kg in QS‐0 to 3581 μg/kg in QS‐30), hexanal (from 125.6 μg/kg in QS‐30 to 984.1 μg/kg in QS‐0), and acetaldehyde (from 531.9 μg/kg in QS‐30 to 191.1 μg/kg in QS‐0) were common. The e‐nose response of W1S (sensitive to methane, from 17.50 of QS‐0 to 93.85 of QS‐30) and W1W (sensitive to sulfur‐organic compounds of e‐nose, from 15.57 of QS‐0 to 39.50 of QS‐30) were significantly higher, and significant differences were presented among QS samples. In conclusion, the aroma profile of the QS sample was significantly (p <.05) enhanced by the addition of jujube powder, and QS‐30 with the highest jujube content (30%) presented the strongest aroma profile. Moreover, QS samples with different additions of jujube powders could be well distinguished by principal component analysis (PCA), and the combination of e‐nose and GC–MS was effective in the volatile profile analysis of QS samples. Quinoa is a facultative halophyte with excellent tolerance to salinity. In this study, the epidermal bladder cell complex (EBCc) of quinoa leaves was studied to determine their cellular characteristics and involvement in salt tolerance. We used light microscopy, confocal RAMAN microscopy, confocal fluorescence microscopy, transmission electron microscopy, and environmental scanning electron microscopy complemented by energy dispersive X-ray analysis. Ionic content was quantified with flame atomic absorption spectroscopy and with flame emission photometry. Results show that: (i) the number of EBCcs remains constant but their density and area vary with leaf age; (ii) stalk cells store lipids and exhibit thick walls, bladder cells present carotenes in small vesicles, oxalate crystals in vacuoles and lignin in their walls and both stalk and bladder cells have cuticles that differ in wax and cutin content; (iii) chloroplasts containing starch can be found on both stalk and bladder cells, and the latter also presents grana; (iv) plasmodesmata are observed between the stalk cell and the bladder cell, and between the epidermal cell and the stalk cell, and ectodesmata-like structures are observed on the bladder cell. Under high salinity conditions, (v) there is a clear tendency to accumulate greater amounts of K+ with respect to Na+ in the bladder cell; (vi) stalk cells accumulate similar amounts of K+ and Na+; (vii) Na+ accumulates mainly in the medullary parenchyma of the stem. These results add knowledge about the structure, content, and role of EBCc under salt stress, and surprisingly present the parenchyma of the stem as the main area of Na+ accumulation. Plant protein ingredients are gaining attention for human nutrition, yet they differ significantly from animal proteins in functionality and nutrition. Fungal solid-state fermentation (SSF) can modulate the composition and functionality, increasing their applicability in foods. Quinoa flour (QF) served as a substrate for Aspergillus oryzae and Rhizopus oligosporus, resulting in two fermented ingredients (QFA and QFR) with different nutritional, functional, and aroma characteristics. A higher increase in protein (+35%) and nitrogen (+24%) was observed in the QFA, while fat was predominantly increased in the QFR (+78%). Fermentable oligo-, di-, monosaccharides and polyols (FODMAPs) decreased in the QFR but increased in the QFA due to polyol production. Metabolomic analysis revealed higher lactic acid concentrations in the QFA, and higher citric, malic, and fumaric acid contents in the QFR. The SSF reduced most antinutrients, while R. oligosporus produced saponins. Olfactometry showed the development of fruity ester compounds and a decrease in metallic and cardboard aromas. Both ingredients showed an enhanced water-holding capacity, with the QFA also demonstrating an increased oil-holding capacity. Complex formation increased the particle size, reduced the solubility, and decreased the foaming properties. Mycelium production darkened the ingredients, with the QFR having a higher differential colour index. Quinoa, a globally cultivated "golden grain" belonging to Chenopodium in the Amaranthaceae family, is recognized for being gluten-free, with a balanced amino acid profile and multiple bioactive components, including peptides, polysaccharides, polyphenols, and saponins. The bioactive compounds extracted from quinoa offer multifaceted health benefits, including antioxidative, anti-inflammatory, antimicrobial, cardiovascular disease (CVD) improvement, gut microbiota regulation, and anti-cancer effects. This review aims to intricately outline quinoa's nutritional value, functional components, and physiological benefits. Importantly, we comprehensively provide conclusions on the effects and mechanisms of these quinoa-derived bioactive components on multiple cancer types, revealing the potential of quinoa seeds as promising and effective anti-cancer agents. Furthermore, the health-promoting role of quinoa in modulating gut microbiota, maintaining gut homeostasis, and protecting intestinal integrity was specifically emphasized. Finally, we provided a forward-looking description of the opportunities and challenges for the future exploration of quinoa. However, in-depth studies of molecular targets and clinical trials are warranted to fully understand the bioavailability and therapeutic application of quinoa-derived compounds, especially in cancer treatment and gut microbiota regulation. Introduction: One of the non-biological stresses for crop plants is drought and lack of water, which is the most important factor limiting the growth of crop plants in arid and semi-arid areas, including Iran. Drought impairs normal growth, disturbs water relations, and reduces water use efficiency in plants. Plants, however, have a variety of physiological and biochemical responses at cellular and whole organism levels, making it a more complex phenomenon. The rate of photosynthesis is reduced mainly by stomatal closure, membrane damage, and disturbed activity of various enzymes, especially those involved in ATP synthesis. Plants display a range of mechanisms to withstand drought, such as reduced water loss by increased diffusive resistance, increased water uptake with prolific and deep root systems, and smaller and succulent leaves to reduce transpirational loss. Therefore, the effects of drought stress and seed nutritional priming on plants can play an important role in managing different irrigation regimes to deal with adverse environmental conditions and improve crop yield management. For this purpose, an experiment was conducted in the form of a factorial split plot, with three rounds of irrigation of 7, 10 and 14 days as the main factor and seed priming at two levels without prime as a control and Iron sulfate + zinc sulfate combination as the second factor was applied on three genotypes (Q12, Q29 and Giza1) of quinoa as secondary factors, in the crop year of 2021-2022 in the regions of Neishabour and Kashmar. Results and discussion: Moisture stress decreased the relative water content and percentage of membrane stability. In Kashmir region, the highest relative water content was observed in cultivars Q12 and Giza under the treatment of irrigation once every 14 days. While in the Neishabur region, the highest value of the mentioned variable was obtained in the treatment of irrigation once every 7 days and cultivar Q29. Slicing analysis of the interaction effect of cultivar and irrigation treatments and the interaction effect of irrigation and priming in Kashmir region showed that the 7 and 10 day irrigation treatment was significant on cell membrane stability. Comparison of the average interaction effect of the three tested factors in Neishabur area showed that the variety Q12 (regardless of seed priming) along with applying 14 days of irrigation caused a significant increase in membrane stability in Neishabur. Although the lowest level of membrane stability was obtained in the priming treatment of Q12 and Giza cultivars with the application of 7 days of irrigation once. It was observed that the priming treatment of Q29 and Giza cultivars with irrigation every 10 and 7 days, respectively, showed the highest amount of total chlorophyll in the Kashmir region, while in the Neishabur region, the highest amount of total chlorophyll was obtained in non-priming of Giza cultivar with the application of 10 Irrigation once a day. The results of the experiment showed that seed priming of Q12 and Q29 cultivars under irrigation once every 7 days caused a significant increase in seed yield in Kashmir region. In Neishabur region, the highest amount of seed yield was obtained in the non-priming cultivar Giza under irrigation once in 10 days. Conclusion In general, seed priming with zinc sulfate and iron sulfate can improve the physiological characteristics of quinoa under water stress. Although in regarding the relative water content, the Q29 variety had a dominant effect on the priming treatment in Neishabour region. According to the results of the Q29 variety in the Kashmar region and the Giza variety In the Neishabour region, it will help plant growth by maintaining the chlorophyll content of the leaves under low irrigation conditions.
