Il patrimonio culturale della Puglia, la regione più sud-orientale d'Italia, ha una complessità sociale ed economica frutto di scambi intensi con il Mediterraneo orientale e successive migrazioni di popolazioni con culture e religioni diverse. La Puglia ha una lunga tradizione di coltivazione di leguminose. Queste specie hanno avuto un ruolo cruciale sia nelle tradizionali agro-tecniche, essendo coltivate in successione con i cereali, che nella alimentazione della popolazione. Tutto ciò ha permesso, nel tempo, lo sviluppo di rituali, tradizioni, credenze e detti riguardanti i legumi, principalmente fave e ceci. Questo contributo riassume informazioni su queste tradizioni evidenziando l'esistenza di un patrimonio culturale articolato ed originale relativo ai legumi. Sfortunatamente, gran parte delle vecchie tradizioni è scomparsa, e quelle ancora perpetuate sono minacciate di scomparsa in breve tempo.

From 2014 Apulia region has promoted, in the frame of the European funding for "Projects of Rural Development", five projects aimed to collection, characterisation, ex situ and in situ conservation of the autochthonous plant genetic resources. One of these projects, still in progress and named SaVeGraINPuglia (Recovery, characterization, safeguard and valorisation of pulses, cereals and forage species in Apulia), is focused on the regional herbaceous germplasm. The project is coordinated by the Istituto di Biosciences and Bio-Risorse (IBBR-CNR, Bari).

L'attività svolta nell'ambito del progetto SaVeGraINPuglia dai 21 partner del progetto ha permesso di strutturare in maniera organica informazioni di varia tipologia (storiche, agronomiche, genetiche, ecc) relative alle leguminose tradizionalmente coltivate in Puglia. La consultazione del materiale bibliografico conservato presso circa 100 biblioteche ha portato alla raccolta di una consistente documentazione storica relativa alle leguminose pugliesi. L'analisi di questo materiale permette di contestualizzare la coltivazione delle varie specie di leguminose ed in taluni casi di specifiche varietà locali sia in ambito geografico (coltivazione nell'intera regione o in ristretti areali) che in termini temporali (continuità della coltivazione nel tempo). Molte informazioni relative alle tecniche colturali, proverbi, ricette, usi rituali sono state raccolte attraverso interviste ad anziani agricoltori o durante la partecipazione a manifestazioni legate al tema della tutela della biodiversità vegetale. Il monitoraggio del territorio compiuto dal CNR-IBBR e da alcuni partner ha portato alla raccolta georeferenziata di circa 200 campioni che, come da progetto, stati catalogati e avviati alla conservazione ex situ presso le strutture deputate. L'attività di raccolta ha evidenziato una disomogenea distribuzione sul territorio regionale della coltivazione delle varie specie di leguminose. Ad esempio, la coltivazione di fava e cece è maggiormente diffusa nelle zone Murgiane e nel sud-est barese. Il fagiolo è presente in maggior misura nel comprensorio dei Monti Dauni, il pisello in ristrette zone del Salento. Il lupino è la specie meno coltivata in regione. Le varietà locali con una documentata tradizione sono risultate tutt'ora presenti nel loro areale tradizionale, sebbene in genere la produzione sia esigua e la coltivazione praticata da anziani agricoltori. Per tutti i campioni raccolti sono state compilate schede elaborate dal CNR-IBBR sulla base delle indicazioni riportate nel Piano Nazionale sulla Biodiversità e nelle linee guida di organismi internazionali. Solo su parte del materiale raccolto è stato possibile eseguire una caratterizzazione morfologica, genetica e nutrizionale. Azioni mirate di risanamento fitosanitario sono state compiute da alcuni partner. Tutti i dati raccolti (documentazione storica, interviste, foto 2D e 3D, schede descrittive delle aziende e del singolo campione) sono stati inseriti nella banca dati del progetto. Alcune delle aziende e degli agricoltori presso cui è stato reperito materiale di particolare interesse sono stati coinvolti nell'attività di conservazione in situ.

The worldwide common bean production has significantly increased in the past three decades, except in Europe where it is dropped. Nowadays, about half of beans consumed in Europe is imported. In the Mediterranean basin, the major common bean productions and consumptions are recorded in Spain, Italy and Greece, where a myriad of landraces survive on-farm. Actions to safeguard this germplasm cannot be disregarded, since Europe is considered a secondary centre of diversification of this species. Moreover, there is the need to increase the plant tolerance to drought, in view of expansion of water-stressed lands in the Mediterranean basin. Rapid progress in breeding for resistances has strongly reduced the effects of pests and diseases.

During the last two decades, our research activities have been focused on four different topics: 1) evaluation and characterization of wild and cultivated genetic resources using multidisciplinary approaches; 2) selection of genotypes having useful genetic, agronomic, quality and nutritional traits; 3) production of useful pre-breeding lines; 4) support to local communities to promote the cultivation in the traditional areas of the local varieties (on-farm conservation) with interesting agronomic performance and good nutritional and technological traits. The target seed components investigated are: o for legumes: anti-nutritionals, toxic factors, non-protein amino acids, and protein fractions with high functional value (enzymes, enzyme inhibitors); o for cereals: gluten and waxy proteins associated to nutritional, functional and technological aspects of flour and/or semolina; macro and micro elements in whole and refined flour. Genetic variation at wheat and bean protein loci, seed storage protein composition, technological and nutritional quality, agronomic performances, aptitude to industrial processing are investigated by several biochemical techniques, such as, one and two-dimensional gel electrophoresis (1D- and 2D-PAGE), capillary electrophoresis (CE), reversed phase high performance liquid chromatography (RP-HPLC), gas-chromatography (GC), spectrophotometric dosages, molecular markers and proteomic approaches. Characterisation and valorisation of legume and cereal genetic resources allow to acquire useful information to plain appropriate actions of safeguard and management of germplasm collections, as well as to support the request of quality marks for specific local varieties. Moreover, the identification of segments of genetic resources carrying out useful traits, is essential to direct breeder programs during the pre-breeding selection. Case-studies of utilisation and valorisation of genetic resources will be illustrated, along with the participation to research projects supported by private and public institutions.

Environmental degradation and the decrease of ecosystem service provision are currently of major concern, with current agricultural systems being a major driver. To meet our future environmental and sustainability targets a transformation of the agro-food systems and current agricultural value chain are crucial. One approach to redesign farming systems is the concept of biodiversity-based agriculture (BBA) which relies on sustainable diversification of biological components and their natural interactions in farming systems to maximize fertility, productivity, and resilience to external perturbations. Despite minimizing anthropogenic inputs, BBA is not yet able to meet all beneficial environmental objectives. BBA applied in the Mediterranean basin requires urgent innovation in approaches, methodologies, and models for small-holder traditional farming systems to ensure a stable provision of ecosystem services and better resilience to environmental stresses linked to climate change. Legumes are the backbone of the Mediterranean agro-ecosystems from ancient times, but their unique and wide biodiversity was not sufficiently valorized, especially by North-African countries. Here, we present LEGU-MED, a three-year international project funded by PRIMA initiative 2019. An international consortium was established involving five universities, 5 research institutes, and one private company from 8 countries: Italy, Germany, Spain, Algeria, Tunisia, Turkey, Lebanon, and Croatia. The main objective of this project is to put forward an international and well-integrated plan to valorize the legume agrobiodiversity of the Mediterranean in biodiversity-based farming systems and consequently enhance agro-ecosystem functions and services in the Mediterranean basin. The successful completion of LEGU-MED will have the following impacts on Mediterranean legume-based farming systems: (1) improve water use efficiency, (2) reduce the use of anthropogenic inputs through the maintenance of soil fertility, (3) enhance pollination and improve ecological connectivity with flora and fauna, (4) protect close-by wildland ecosystems, (5) enhance other ecosystem services (e.g., pest, disease, and weed suppression), and (6) provide healthier and safer protein-rich food. © 2022 by the authors.
