Tree cultivars (Jupiter, Sejnov, and Elit) of walnut ( Juglans regia L.) were collected during the 2004 harvest from Cacak, Central Serbia. The chemical composition, including moisture, total oil content, crude protein, ash, and carbohydrates, was determined. Afterwards, two techniques of oil extraction were implemented: cold pressing extraction and organic solvent extraction. Iodine value, saponification value, acid value, and peroxide value of obtained walnut oils were analyzed. The fatty acid composition of the walnut oils was determined using gas chromatography with flame ionization detector. The oleic acid content of the oils ranged from 15.9–23.7% of the total acids, while linoleic acid content ranged from 57.2–65.1% and the linolenic acid from 9.1–13.6%. Studies on the physical and chemical characteristics of seed oil from Ribes nigrum L. indicated that the seeds contained from 8 to 15 percent oil. Fatty acids in the oil included oleic (12.3%), linoleic (41.0%), alpha-linolenic (20.9%), gamma-linolenic (12.6%) and stearidonic (1.6%). The seed oil also contained alha-tocopherol, gamma-tocopherol, and delta-tocopherol, plus 2.21 mg/1 of carotene, 3.11 mg/1 of chlorophyll, and 0.64 mg/1 of chlorophyll b. Ethanol/water (7∶3) extracts of the plant species Anthriscus sylvestris possess antioxidant activity. Separation and identification of antioxidant components by thin-layer and column chromatography and spectral analysis demonstrated that quercetin and apigenin appeared to be the main flavonoid species in Anthriscus sylvestris. Rutin was one of the major quercetin glycosides. Structures of the isolated compounds were determined by infrared andH nuclear magnetic resonance spectroscopies. Ethanolic extract (70%) of A. sylvestris showed concentration-dependent, strong antioxidant activity as determined by the Schaal Oven test of lard at 60°C. Rancimat analysis at 100°C showed that the antioxidant activity of 70% ethanolic extract of A. sylvestris was superior to quercetin, apigenin, or a tocopherol mixture. [ABSTRACT FROM AUTHOR]
