Abstract

International audience; This paper presents a microwave sensor composed of one millifluidic channel that operates over a frequency range from 1 GHz to 4 GHz and is used for microwave spectroscopy of liquids with millilitre volumes. The accuracy of the device is first evaluated with BSA solutions of different concentrations and then with complex biological liquids such as hen egg yolk and albumen samples. Low standard deviations of the measured values of modulus and phase contrasts of the transmission coefficient S21 are obtained. These values correspond to 0.02 and 0,18 respectively for BSA solutions, as well as 0.05 and 0.03 for 10 samples of hen egg yolk and white respectively over the selected frequency range. Such accuracies enable the use of such a sensor for various applicative domains, including agronomy for which the investigation of the dielectric properties of eggs may be of interest for quality, freshness or status discrimination purpose.

Abstract

International audience; The PPILOW project aims to co-construct innovations to improve Poultry and Pig Welfare in Low-input outdoor and Organic farming systems through a multi-actor approach. PPILOW implements a participatory approach for proposing and studying welfare-improvement levers. It will provide a combination of practical solutions that can be applied at a pan-European level with specific adjustments depending on citizen’s expectations and the target market. The multi-actor approach consists in involving end-users including farmers, breeding companies, feed producers, consumer associations, retailers, advisers, processors, and scientists in National Practitioner Groups (NPG) in six participating countries. PPILOW partners facilitate the groups by connecting NPG at European level, transferring scientific information, interacting with partners engaged in animal experiments, and co-creating innovations rising from NPG-specific demands. They co-build with PPILOW partners welfare self-assessment tools (development of the PIGLOW app for pigs and refinement of the EBENE® app for poultry), and innovative breeding, feeding, and rearing strategies and techniques to improve the welfare of animals. They co-design protocols, test innovations on farm, and disseminate the results. In turn, they receive insights on methods and scientific results, and inputs from other NPG reinforcing the value of the expected outcomes. Approaches focus on avoiding physical damage and the elimination of layer male chicks, on reducing boar taint of intact male pigs, promoting positive behaviours, animal health, and robustness through field studies with pigs and poultry. Multicriteria analyses of the most effective levers of welfare improvement will be performed to evaluate their economic, social, and environmental impacts based on the ‘One Welfare’ concept; economic and business models will also be developed. To ensure the rapid uptake of the project results by end-users, the close involvement of PPILOW’s NPG throughout the EU will ensure disseminationactivities and the facilitation of change. Abstract

Animal welfare is an essential part of the sustainability of animal production. While low-input farming, such as organic animal production, is often considered animal-friendly, several ways to enhance animal welfare in low-input animal production exist. However, currently there is little information on how farmers and other supply chain actors view different innovations and tools which may influence animal welfare in low-input outdoor and organic production systems. The aim of this study was to examine farmers’ and experts’ reactions to new approaches to pig and poultry production, with special attention to their animal welfare-related measures. The reactions were tested formally in by using a quantitative survey instrument in nine European countries (Finland, UK, France, Denmark, the Netherlands, Belgium, Germany, Italy, Romania). In the survey, respondents’ views on production practices and novel measures were asked. These included aspects such as applicability and advantages and disadvantages of various measures such as avoiding mutilations, using dual-purpose or local breeds, or in-ovo sexing. The data included altogether 218 responses from nine countries. Differences between countries were tested and groups of respondents were identified. The results suggest that supply side stakeholders foresee the welfare benefits and some disadvantages of welfare improving measures proposed to them. However, they also indicate that several measures were considered inapplicable despite their benefits. Inadequate financial provisions to adopt a measure was considered as one of the most important reasons for inapplicability of a measure. This may imply either high costs of implementing measures of low market incentives or perceived low demand for animal-friendly products. Other barriers for adopting welfare-friendly measures included farm-specific factors such as limitations imposed by housing. The respondents indicated a high relative preference for feeding, breeding, shelter from predators and the use of vaccines and anti-parasitic treatments to the provision of enrichments and nesting material to pigs, and to mutilations. Farmers agreed that environmental enrichments are important welfare-improving levers and preferred their use in low-input pig and poultry production. Animal breeding-related measures in pig production were perceived quite favorably by supply side stakeholders. Despite their welfare benefits, farmers in some countries had quite high preference towards maintaining castration and tail docking in pig and beak trimming in broiler production as part of their production method.

Ainsi la température d’incubation des œufs, mais aussi les conditions d’éclosion, de démarrage des poussins, de même que l’optimisation de leur alimentation précoce ou de celle de leurs parents en élevage de reproducteurs sont autant de leviers pour permettre au jeune animal de s’adapter à ses conditions d’élevage ultérieures. Nous recherchons les mécanismes qui sous-tendent ces capacités adaptatives, pour mieux comprendre les relations entre stress périnatal et santé (Guilloteau et al., 2019 ; Beauclercq et al., 2019 ; Foury et al., 2020), entre conditions d’incubation des œufs et tolérance thermique (Loyau et al., 2015), entre comportement et physiologie précoces et capacités d’exploration des parcours de plusieurs souches de poulets de chair en élevage biologique (Bonnefous et al., 2023). Les biomarqueurs, de préférence les moins invasifs possibles, associés à la robustesse et aux capacités d’exploration des poulets de chair pourront servir à l’identification de critères de sélection et à la conception et l’évaluation de pratiques d’élevage innovantes, notamment pour l’élevage en systèmes biologiques et de plein air.

In four countries (Italy, Finland, France, United Kingdom), interviews were carried out with eleven key-informants working within the supply chain of low-input or organic production of poultry meat, eggs and pork meat (farmers, vets, companies producing progeny, feed producers, health inspectors in slaughter houses or egg packing company's experts, NGOs). Abstract

Recent research on free-range chickens shows that individual behavioral differences may link to range use. However, most of these studies explored individual behavioral differences only at one time point or during a short time window, assessed differences when animals were out of their social group and home environment (barn and range), and in specific tests or situations. Therefore, it is yet unclear how different behaviors relate to range use and how consistent these behaviors are at the individual level. To fill this gap, we here aimed to describe the behavioral budget of slow-growing male broiler chickens (S757N) when in their social group and home environment during the whole rearing period (from the second week of life to the twelfth week, before slaughter), and to relate observed behavioral differences to range use. For this, we followed a sample of individuals in two flocks (n = 60 focal chickens out of 200 chickens per flock), over two seasons, during three periods: before range access (from 14 to 25 days old), during early range access (first weeks of range access, from 37 to 53 days old), and during late range access (last weeks of range access, from 63 to 87 days old). By the end of each period, individual tests of exploration and social motivation were also performed, measuring exploration/activity and sociability propensities. Our results show that foraging (i.e., pecking and scratching at the ground) was the only behavior that correlated to range use for all three rearing periods, independent of the season. Foraging was also the only behavior that showed within-individual consistency from an early age and across the three rearing periods. Foraging may, therefore, serve as a useful behavioral predictor of range use in free-range broiler chickens. Our study increases the knowledge of how behaviors develop and relate to each other in a domesticated and intensely selected species, and improves our understanding of the biology of free-range broiler chickens. These findings can, ultimately, serve as a foundation to increase range use and improve chicken welfare.

Abstract

International audience; In free-range and organic production systems, hens can make choices according to their needs and desires, which is in accordance with welfare definitions. Nonetheless, health and behavioral problems are also encountered in these systems. The aim of this article was to identify welfare challenges observed in these production systems in the EU and the most promising solutions to overcome these challenges. It is based on a review of published literature and research projects complemented by interviews with experts. We selected EU specific information for welfare problems, however, the selected literature regarding solutions is global. Free range use may increase the risk of infection by some bacteria, viruses and parasites. Preventive methods include avoiding contamination thanks to biosecurity measures and strengthening animals' natural defenses against these diseases which can be based on nutritional means with new diet components such as insect-derived products, probiotics and prebiotics. Phytotherapy and aromatherapy can be used as preventive and curative medicine and vaccines as alternatives to antibiotics and pesticides. Bone quality in pullets and hens prevents keel deviations and is favored by exercise in the outdoor range. Free range use also lead to higher exposure to variable weather conditions and predators, therefore shadow, fences and guard animals can be used to prevent heat stress and predation respectively. Granting a free range provides opportunities for the expression of many behaviors and yet many hens usually stay close to the house. Providing the birds with trees, shelters or attractive plants can increase range use. Small flock sizes, early experiences of enrichment and personality traits have also been found to enhance range use. Severe feather pecking can occur in free range production systems, although flocks using the outdoor area have better plumage than indoors. While many prevention strategies are facilitated in free range systems, the influence of genetics, prenatal and nutritional factors in free range hens still need to be investigated. This review provides information about practices that have been tested or still need to be explored and this information can be used by stakeholders and researchers to help them evaluate the applicability of these solutions for welfare improvement.

International audience; There has been a strong consumer demand to take welfare into account in animal production, including table eggs. This is particularly true in Europe and North America but increasingly around the world. We review the main demands that are facing the egg industry driven by economic, societal and sustainability goals. We describe solutions already delivered by research and those that will be needed for the future. Already table egg consumption patterns have seen a major shift from cage to non-cage production systems because of societal pressures. These often feature free-range and organic production. These changes likely signal the future direction for the layer sector with the acceleration of the conversion of cage to barn and aviary systems with outdoor access. This can come with unintended consequences from bone fracture to increased disease exposure, all requiring solutions. In the near future, the laying period of hens will be routinely extended to improve the economics and environmental footprint of production. Many flocks already produce close to 500 eggs per hens in a lifetime, reducing the number of replacement layers and improving the economics and sustainability. It will be a challenge for scientists to optimize the genetics and the production systems to maintain the health of these hens. A major ethical issue for the egg industry is the culling of male day-old chicks of layer breeds as the meat of the males cannot be easily marketed. Much research has and will be devoted to alternatives. Another solution is elimination of male embryos prior to hatching by in ovo sexing approaches. The race to find a sustainable solution to early stage sex determination is on. Methods based on sex chromosomes, sexually dimorphic compounds and spectral properties of eggs containing male or female embryos, are being researched and are reviewed in this article. Other proposed solutions include the use of dual-purpose strains, where the males are bred to produce meat and the females to produce eggs. The dual-purpose strains are less efficient and do not compete economically in the meat or egg market; however, as consumer awareness increases viable markets are emerging. These priorities are the response to economic, environmental, ethical and consumer pressures that are already having a strong impact on the egg industry. They will continue to evolve in the next decade and if supported by a strong research and development effort, a more efficient and ethical egg-laying industry should emerge.

Abstract

National audience; Le projet H2020 PPILOW - "Poultry and PIg Low-input and Organic production systems’ Welfare" a pour objectif la co-conception d'innovations pour améliorer le bien-être des volailles et des porcs élevés dans des systèmes de production biologiques et plein air, grâce à une approche multi-acteurs mise en œuvre par 23 partenaires dans 9 pays européens. Une approche participative permettra d’impliquer les acteurs des chaînes de production, citoyens et scientifiques pour proposer et étudier des leviers d’amélioration du bien-être des animaux. Les objectifs du projet sont en particulier de : Mettre au point des méthodes d’auto-évaluation par l’éleveur du bien-être de ses animaux ; Réduire le risque d’odeur sexuelle de la viande et les problèmes comportementaux (agressivité, montes) des porcs mâles, afin de permettre l’arrêt de la castration des porcelets ; Réduire les risques de picage chez les poules afin de permettre l’arrêt de l’épointage du bec ; Permettre l’arrêt de l’élimination juste après l’éclosion des poussins mâles de souche ponte, en explorant deux méthodes : a) utiliser des croisements génétiques qui permettent d’élever les mâles pour la viande et les femelles pour la ponte b) sexer les œufs (ovosexage) pour repérer le plus tôt possible les œufs mâles et stopper leur incubation ; Favoriser l’expression du comportement exploratoire des poulets sur les parcours plein-air; Améliorer la survie des porcelets par sélection génétique ou amélioration du logement des truies ; Améliorer la santé et le bien-être des volailles en agissant sur l’environnement dès l’incubation ou peu après l’éclosion des œufs ; Réduire voire éviter l’usage de médicaments chez le porc et la poule pondeuse en utilisant des aliments ou extraits végétaux favorisant la résistance aux maladies.Les innovations les plus prometteuses seront testées dans des élevages commerciaux en interaction avec les groupes participatifs nationaux. Des évaluations multicritères seront également réalisées en mobilisant le concept «One Welfare»1, afin d’englober les objectifs de durabilité, de bien-être animal mais aussi de bien-être humain. Des modèles économiques seront créés pour évaluer les bénéfices des stratégies élaborées dans le projet PPILOW. Enfin, des actions de diffusion seront développées en impliquant les groupes multi-acteurs tout au long du projet pour faciliter les changements de pratiques.

Abstract

International audience; INTRODUCTION AND OBJECTIVEPPILOW is a multiactor project aiming to co-create with end-users innovations for improving the welfare of pigs and poultry in low-input outdoor and organic farming systems. The PPILOW participatory approach involves National Practitioner Groups (NPG) in co-building innovative breeding and rearing strategies and techniques on this purpose. Firstly, the project gathers a comprehensive inventory of the ethical, socio-economic and technical factors that are essential to improve poultry and pig welfare in organic and low-input outdoor production systems, providing a shortlist of potential levers of improvement that are experimentally- and on-farm-tested within the project. The NPGs also co-build and test with PPILOW partners mobile applications for assessing and benchmarking animal welfare status on-farm, and tools for evaluating the sustainability of the tested lever based on the One Welfare concept. METHODS AND RESULTSPPILOW partners organized the participatory approach by setting-up nine NPG dedicated to pig or poultry in six countries. The NPG identified barriers to welfare and levers for improvement, and co-created with partners shared tools and strategies for improving animal welfare to be tested experimentally and on-field. Standardized mobile apps for farmers to self-assess and benchmark on-farm the welfare status of the animals were co-developed (PIGLOW® for pigs) or refined (EBENE® for poultry) with NPG, and made EU-freely available in 9 and 7 European languages, respectively. They are currently being evaluated in longitudinal on-farm studies. Meanwhile, the creation of a data collection framework based on the One Welfare approach centred on both human and animal welfare has been co-created with NPGs. The first experimental strategy focuses on enrichments allowing keeping laying hens and fattening pigs in organic and low-input systems without beak trimming and castration, currently applied to prevent feather pecking and boar taint in meat in laying hens and in pigs, respectively. Studies on alternatives, on the one hand to beak trimming using innovative incubation and insect larvae enrichment in laying hens, and on the other hand to piglet castration through the rearing of entire male pigs with enrichments, have been completed and are currently analyzed. The second strategy explores two strategies for avoiding killing day-old layer male chicks: raising dual-purpose breeds for both egg and meat productions and developing a new in ovo sexing method. Three experimental trials are comparing dual-purpose genotypes in three countries. The ones completed on both males and females showed a high variability of technical performance between genotypes, due to different strategy for crosses, exhibiting less or high layer or meat potentials, and the egg quality results for the different crosses were assessed. On-farm trials have started for enabling the multicriteria evaluation of the use of male genotypes, and the field studies on females have been engaged with voluntary NPG participants. Concerning in-ovo sexing, refinements on methodologies for electrophysical sensing are currently running. The PPILOW project also aims to propose innovative solutions for favouring positive behaviours, health and robustness through an increased adaptation to organic and outdoor systems for laying hens, slow-growing broilers and pigs. Studies with different broiler genotypes have allowed a better understanding of the determinants of exploratory behaviour, showing that ranging behaviour is stable over time and that high-ranging broilers are more prone to work for food than low-rangers. Early management levers for improving resilience are also currently tested, including the experimental use of temperature variations during incubation, and the set-up of on-farm hatching trials with NPG members. Partners working with layers and pigs are developing strategies to limit intestinal parasitic and bacterial infections through different feed supplements, based both on in vitro and in vivo studies. In infected layers, the effect of a feed based on fermented products has been tested. Microbiological, immunological and parasitic profiles were obtained in pigs, and in vitro methods for the screening of plant extracts have been established, showing the high potential of some plants to limit worm infections. Joint protocols are developed and implemented to improve sow welfare and piglet survival through selective breeding and an innovative farrowing house design for outdoor rearing of sows and piglets. These innovative devices are currently tested in pig NPG members’ farms, with a close follow-up by NPG facilitator partners. The most promising PPILOW strategies are evaluated through multicriteria analyses according to the One Welfare concept, and business models are developed.CONCLUSIONS AND IMPLICATIONSPromising results of the project on the limitation of feather pecking in laying hens and aggressive behaviour in non-castrated pigs, of parasite development from pigs reared in low-input farms by the use of plant extracts, and for favouring piglet survival are currently obtained, which could help limiting the use of veterinary products, not only in low-input and organic farms, but also in conventional farms. Ultimately, the PPILOW project will also bring data on the feasibility of using such levers of improvement of pig and poultry health and welfare, and human well-being within the scope of the One Welfare concept. Abstract

International audience; Free-range systems provide an outdoor range for broilers to give them the possibility to express a higher frequency and a wider range of behaviours, such as exploration, compared with those raised indoors. Greater variability in outdoor range use between individuals of the same flock is often reported. Individual variation in range use may result from differences in early-life behaviour or genetic background. Understanding how earlylife behaviour influences range use may provide opportunities to enhance and predict range use. Previous studies have shown that range use could be influenced by the animal’s personality traits such as social motivation, boldness and foraging motivation. Therefore, this study investigated personality traits in several broiler strains, namely Hubbard JA757, Hubbard S757N, White Bresse and a dual-purpose strain; we examined the latter as it represents a potential solution to the ban of 1-day-old chick culling. The present study also investigated early-life behaviours, before range access, of range use to identify and assess the stability of these early-life indicators among the four broiler strains. For that purpose, we recorded the behaviour and range use of 100 male chickens per strain, both in the barn and during individual tests, before and after range access. We examined which behaviours were time consistent, whether early-life behaviours were influenced by genetic variation and whether early-life behavioural indicators predicted range use regardless of genetic variation. There was a significant (p < 0.001) difference between strains in several early-life behaviours, including the time spent resting or standing. Range use was time consistent regardless of the strain as our range use indicator followed a high-quality linear regression model (R2 > 0.7) for 82–99% of the individuals depending on their strain. Besides, time consistency of social motivation and boldness seemed to depend on the strain. Even though foraging showed low (rho = 0.2–0.4) positive correlations with range use in three of the four studied strains, there were no significant and strong correlations in the four studied strains between early-life behavioural indicators and range use. In conclusion, our results show that the link between chick behaviour (before range access) and range use can be modulated by the bird’s strain. It is crucial to consider all these different factors to better understand how range use varies within and between flocks.

Abstract

National audience; One of the major problems of the "laying hens/table eggs" sector is the culling of male chicks (brothers of layers) due to the lack of an economical market for these animals (low meat yield). This practice, inherent to the egg industry, concerns nearly 50 million male chicks in France per year. This observation questions the ethics of egg production and has been widely publicized in the last years. The awareness of this problem and of the methods used to eliminate male chicks has led to the announcement in early 2020 by various European governments of a ban on this practice by the end of 2021. Such an announcement has precipitated the search for alternatives. At present, three main strategies are being considered: 1) raising layer brothers and identifying new economical markets, 2) evaluating the performance of animals from genetic crosses where females would be raised to produce eggs and males would be raised for their meat ("dual purpose" strains), 3) developing early tools to detect the sex of the embryo in the egg (in ovo) to eliminate "male" eggs rather than male chicks. Relatively recent advances in egg sexing techniques have allowed viable markets to emerge, although most approaches still have room for improvement, and new strategies are emerging ("genome editing", incubation parameters). Some hatcheries have already invested in in ovo-sexing methods but it is clear that the question of the acceptability of the various ovosexing approaches by NGOs and consumers but also their respective economic viability for professionals will remain at the heart of the discussions in the forthcoming years.; L’une des problématiques majeures de la filière « poules pondeuses/ œufs de consommation » est l'élimination des poussins mâles (frères de pondeuses) due à l’absence de circuit de valorisation de ces animaux (du fait de leur faible rendement en viande). Cette pratique inhérente à la filière concerne près de 50 millions de poussins mâles en France par an. Ce constat questionne l’éthique de la production d’œufs et a été très largement médiatisé ces dernières années. La prise de conscience de cette problématique et des pratiques d’élimination des poussins mâles avaient conduit à l’annonce début 2020 par différents gouvernements européens de l’interdiction de cette pratique d’ici à la fin 2021, ce qui a révélé l’urgence de recourir à des alternatives. A l’heure actuelle, trois stratégies principales sont envisagées : 1) élever les frères de pondeuses et repérer des marchés de valorisation, 2) évaluer les performances d’animaux issus de croisements génétiques où les femelles auraient une production d’œufs satisfaisante et où les mâles seraient valorisés pour leur viande (souches « double fin »), 3) développer des outils de sexage précoce dans l’œuf (in ovo) pour éliminer les œufs « mâles » plutôt que les poussins « mâles ». Les avancées relativement récentes sur les techniques d’ovosexage ont permis l’émergence de marchés viables, bien que la plupart des approches présentent encore des marges d’amélioration et que de nouvelles stratégies voient le jour (« genome editing », paramètres d’incubation). Alors que certains couvoirs ont d’ores et déjà investi, il est clair que la question de l’acceptabilité des différentes approches d’ovosexage par les ONG et le consommateur mais également leur viabilité économique pour les professionnels restera au cœur des discussions dans les années à venir.

International audience; The hen's egg (Gallus gallus) is an animal product of great agronomic interest, with a world production of 70.9 million tonnes in 2018. China accounted for 35% of world production, followed by North America (12% of world production), the European Union (7.0 million tonnes, 10% of world production) and India (5.0 million tonnes, 7% of world production). In France, 16–17 billion eggs are produced annually (14.5 billion for table eggs) and more than 1 200 billion worldwide. In 2019, egg production increased by 3.3% compared to 2018, mainly due to the increase in Asian production, which has risen by 42% since 2000. Chicken eggs are widely used either as a low-cost, high nutritional quality food cooked by the consumer (more than 100 billion eggs consumed in Europe), or incorporated as an ingredient in many food products. The various production methods have changed considerably over the last 15 years with the consideration of animal welfare and changes in European regulations. In Europe, fewer and fewer eggs are produced in confinement and there has been a strong growth in the number of systems giving access to an outdoor run. In this review, we describe the different ways in which eggs are produced and processed into egg products to meet the growing demand for ready-to-use food products. We analyse the effect of this evolution of hen-rearing systems on the set of characteristics of eggs and egg products that determine their quality. We describe the risks and benefits associated with these new production methods and their influence or lack of influence on commercial, nutritional, microbial and chemical contamination risk characteristics, as well as the evolution of the image for the consumer. The latter covers the ethical, cultural and environmental dimensions associated with the way the egg is produced.
