1. PROGRAMA DE CAPACITACIÓN PARA LA EXPLOTACIÓN SOSTENIBLE DE ESPECIES DE SALICORNIA EN LA SALINA 'EL REAL'

The objective of the research was to develop the training program for the workers of the salt mine “El Real?, Playa Santa Lucía, in Camagüey oriented to the sustainable exploitation of the Salicornia species. Of the empirical methods, the documentary review was used, which consisted of collecting important information from different documents, including theses, books and scientific articles. A group interview was applied to five key informants and a survey to 10 workers who work in the salt mine with the aim of analyzing the level of knowledge about the applications of salicornia in human nutrition. The evaluation of the training program proposal was requested using the consensus method by nominal group. It is concluded that the diagnosis made showed that there are limitations, due to the lack of knowledge of the workers of the ?El Real” salt mine, of aspects related to the Salicornia species, among which stand out: their characteristics and modes of use, sustainable management and the efficiency in the use of these plants, for which a training program was developed, which complements the theoretical and practical bases to achieve the sustainable management of these and their use in human food and the assessment of the feasibility of the The proposal by the specialists was evaluated between the categories of very adequate and adequate, which offers an alternative for practical implementation and its improvement. Keywords: training; Salicornia species; healthy food., El objetivo de la investigación fue elaborar el programa de capacitación para los trabajadores de la salina “El Real?, Playa Santa Lucía, en Camagüey orientado a la explotación sostenible de especies de Salicornia. De los métodos empíricos, fueron empleados la revisión documental la que consistió en recopilar información importante de diferentes documentos, entre ellos, tesis, libros y artículos científicos. Se aplicó una entrevista grupal a cinco informantes clave y una encuesta a 10 trabajadores que laboran en la salina con el objetivo de analizar el nivel de conocimientos acerca de las aplicaciones de la salicornia en la alimentación humana. Se solicitó la valoración de la propuesta de programa de capacitación utilizando el método de consenso por grupo nominal. Se concluye que el diagnóstico efectuado demostró que existen limitaciones, dadas por el desconocimiento que poseen los trabajadores de la salina ?El Real?, de aspectos relacionados con las especies de Salicornia entre los que se destacan: sus características y modos de utilización, el manejo sostenible y la eficiencia en la utilización de estas plantas, por lo que se elaboró un programa de capacitación, el que complementa las bases teóricas y prácticas para lograr el manejo sostenible de estas y su utilización en la alimentación humana y la valoración de la factibilidad de la propuesta por los especialistas fue evaluada entre las categorías de muy adecuado y adecuado, lo que ofrece una alternativa para la implementación práctica y su perfeccionamiento.
