Introducción: La malnutrición por exceso causa sobrepeso y obesidad, siendo un problema de salud pública, que se ha presentado en los primeros años de vida. Investigaciones realizadas han informado la existencia de insatisfacción corporal relacionada con el peso, debido a los estándares de belleza establecidos en la sociedad. Objetivo: asociar el índice de masa corporal con la insatisfacción corporal y percepción de la imagen corporal de los escolares. Materiales y métodos: estudio transversal con 610 escolares. El estado nutricional se clasificó según el puntaje z del IMC. Para determinar la insatisfacción corporal y la percepción de la imagen corporal, se aplicó una escala de imagen corporal infantil de siete fotografías, con un valor del 1 al 7 de acuerdo con el tamaño creciente, y el rango final del IMC. Se calculó la diferencia entre la figura que los participantes consideraron ideal y la forma corporal percibida. Resultados: el 47,3% presentaron sobrepeso y obesidad. La insatisfacción corporal fue mayor en las niñas con sobrepeso y obesidad (p = 0,013). El IMC correlacionó con la insatisfacción corporal (rho(608) = 0,480; p < 0,001) y la percepción de la imagen corporal (rho(608) = 0,433; p < 0,001). Conclusiones: El IMC se relacionó positivamente con la insatisfacción corporal y la percepción de la imagen corporal; esto podría elevar el riesgo de presentar trastornos alimentarios, contribuir al mantenimiento del exceso de peso corporal, al no percibirse con exceso de peso, es menos probable que realicen acciones para controlarlo.

Introducción. En los refrigerios escolares se ha incrementado el consumo de los productos industrializados y se ha observado una disminución en la ingesta de alimentos frescos. Objetivo. Determinar la prevalencia y tendencia de sobrepeso, obesidad y consumo de alimentos no recomendables en escolares del norte de México. Materiales y métodos. Estudio descriptivo y transversal, realizado del año 2015 a 2022 en una muestra de 468 niños de ambos sexos de 9 a 12 años de escuelas públicas, se les realizó mediciones antropométricas de peso, estatura y circunferencia de cintura. Para diagnosticar el estado nutricional se utilizó el puntaje Z del índice de masa corporal (IMC) por medio del software Anthro Plus. El consumo alimentario de los escolares se evaluó por medio de una lista de cotejo durante cinco días consecutivos por observación directa los alimentos y bebidas que los escolares llevaron de casa para consumir durante el horario escolar. Resultados. Se encontró que el sobrepeso (SBP) y la obesidad (OB) aumentó durante la pandemia, siendo mayor el SBP en las niñas (17,0%) y mayor la OB en los niños (46,8%). En cuanto a la ingesta alimentaria se observó que durante la pandemia aumentó el consumo de alimentos no recomendables asociándose con el IMC. Conclusiones. El sobrepeso y la obesidad aumentó durante la pandemia, siendo mayor el sobrepeso en las niñas y mayor la obesidad en los niños. En cuanto a la ingesta alimentaria se observó que durante la pandemia el consumo de alimentos no recomendables específicamente en las bebidas azucaradas aumentó y se asoció con el IMC.

Introducción: en los últimos años se ha incrementado el consumo de alimentos ultraprocesados en escolares y esto se ha relacionado con un aumento en la prevalencia de obesidad infantil. Objetivo: calcular el tamaño del efecto de una intervención nutricional en el consumo alimentario en escolares de educación básica de Reynosa, Tamaulipas, México. Materiales y métodos: estudio longitudinal, con una muestra de 309 escolares de 12 escuelas primarias públicas; se formaron dos grupos: intervención (GI) y control (GC) con seguimiento de un año. Se realizaron mediciones antropométricas. Para evaluar los alimentos incluidos en los refrigerios escolares se utilizó un registro de alimentos antes y después de la intervención y se caracterizaron como recomendables y no recomendables. Se calculó el tamaño del efecto (TE) utilizando el estadístico “g” de Hedges. Resultados: al final del estudio en ambos grupos se incrementó el consumo de agua, sin embargo, él TE fue grande en el GI (TE=0,84), mientras que en el GC fue moderado (TE=0,50). En el GI se encontró una reducción pequeña en el consumo de carnes procesadas (p=0,004; TE=0,28), cereales dulces (p=0,001; TE=0,36) y bebidas no lácteas endulzadas (p=0,001; TE=0,49); mientras que el GC mostró un incremento pequeño en el consumo de comida rápida y antojitos mexicanos (p=0,001; TE=0,46). Conclusiones: en el GI se observó una disminución y un TE pequeño en el consumo de carnes procesadas, cereales dulces y bebidas no lácteas endulzadas. Es necesario diseñar estrategias que promuevan el consumo de alimentos recomendables.

In Mexico there is an important production of soybeans; however, no evidence of the analysis of organoleptic attributes in Mexican soybean products was found, so the objective of this work was to sensorially characterise soymilk made from commercial beans grown in northern Mexico based on seven organoleptic attributes. A panel of trained judges evaluated 11 soymilks made from commercial soybeans grown in Mexico, two soymilks made from commercial soybeans reported to be free of lipoxygenases, and one control soymilk. Evaluated flavour attributes were beany, milky, greasy, toasted, bitter, metallic and rancid. The results showed that the soymilks from the JP 30790 and JP 28955 genotypes generated low beany notes. The Mexican variety Guayparime S-10 obtained the lowest beany flavour note. Among Mexican soybeans, the soymilks of Huasteca 700 and Vernal varieties got the highest values of the milky flavour and the JP 30790 and JP 28955 materials obtained intermediate values in this attribute; in the rancid attribute, the zero value was given to all the soymilks. The scarce beany notes and the high milky attribute, as well as the zero value in the rancid attribute favour an acceptable flavour in the soymilks.

In Mexico, corn is the most widely used cereal, however, in arid areas it is not possible to cultivate it, so white sorghum represents an alternative. However, it is important to know the varieties nutritional content. Therefore, this study the proximal profile and fatty acids of six white sorghum varieties grown in Mexico were evaluated. Proximate analysis was carried out based on AACC methods and gas chromatography had been used for fatty acid analysis. Mazatlan and Sureño varieties showed the highest content of proteins (12%), fiber (7%), and ash (1.65%); regarding fat content, the highest values were found in Mazatlan and Costeño (4%). For fatty acid profile, saturated and unsaturated fatty acids were detected, including Omega 6 and 9. Sorghum represents an alternative, specially for arid and semiarid regions. The results indicate that these varieties are a viable source to produce foods for human consumption.

Background. Plant morphology is the expression of a set of characteristics in response to environmental conditions and therefore to the availability of resources. Questions. Are the populations of Turnera diffusa morphologically different due to climatic factors? Species studied. Turnera diffusa, known as “damiana”. Study site and dates. Jaumave and Güémez in Tamaulipas, Mexico; during October 2013 and April 2014. Methods. Abiotic characteristics of study sites and morphological traits of the plants were evaluated, as well as the exposure of the plants to light, and the flowering; 15 random transects of 100 m2 each were made in each site. A multivariate analysis with linear discriminant functions was applied to determine possible differences between the two populations considering the morphological variables. Results. The population of T. diffusa of Güémez did present higher branch density and bigger leaves than those of Jaumave, which can be related to the greater precipitation that is received in that locality in comparison with Jaumave. T. diffusa plants with higher height were found under natural shade conditions and flowering is a condition that seems to be unrelated to the exposure. Conclusions. Populations of Turnera diffusa of Jaumave and Güémez were morphologically different.

Abstract Background Metabolic dysfunction-associated steatotic liver disease (MASLD), previously known as non-alcoholic fatty liver disease (NAFLD), is a prevalent hepatic condition linked to metabolic alterations. It gradually causes liver damage and potentially progresses to cirrhosis. Despite its significance, research, especially in the pediatric population, is limited, leading to contradictory findings in diagnosis and treatment. This meta-analysis aims to synthesize existing literature on therapeutic interventions for MASLD in children and adolescents. Methods A comprehensive search of randomized controlled clinical trials yielded 634 entries from PubMed, Scopus, and Web of Science up to 2023. Interventions included medications, behavioral modifications, dietary changes, probiotics, supplements, surgical procedures, or combinations. The analysis focused on studies with treatment duration of at least 3 months, employing a random-effects REML meta-analysis model. Treatment effects on anthropometric measurements and biochemical components were examined and adjusted for heterogeneity factors analysis. A bibliometric analysis for insights into research contributors was performed. Results The systematic review incorporated 31 clinical trials, with 24 meeting criteria for meta-analysis. These comprised 3 medication studies, 20 with supplements, 4 focusing on lifestyle, and 4 centered on diets. Significant overall treatment effects were observed for ALT, AST, BMI, and HOMA-IR mainly by supplements and lifestyle. Meta-regression identified age, BMI changes, and treatment duration as factors modifying ALT concentrations. Bibliometric analysis involving 31 linked studies highlighted contributions from 13 countries, with the USA, Spain, and Chile being the most influential. Conclusions We conclude that supplementation and lifestyle changes can effectively impact ALT and AST levels, which can help address liver issues in obese children. However, the evaluation of risk bias, the high heterogeneity, and the bibliometric analysis emphasize the need for more high-quality studies and broader inclusion of diverse child populations to provide better therapeutic recommendations. Objetivo: Determinar la prevalencia y factores de riesgo asociados al tabaquismo durante el periodo de confinamiento ante la pandemia de COVID-19. Métodos: Mediante un estudio analítico y transversal se analizaron los datos de 2372 participantes. La recolección de la información se realizó con un cuestionario autoadministrado construido con la herramienta Google Forms, el cual se distribuyó y aplicó a través de correo electrónico y de la plataforma de mensajería privada WhatsApp. La relación entre las variables independientes y la resultante fue determinada a través de regresión logística multivariada. Resultados: De la población total, 69.3 % fue del sexo femenino, la edad media de 20.11 ± 2.01 años, la prevalencia de asma de 12.2 % y la de tabaquismo activo, de 13.3 %. Una mayor proporción de pacientes con asma fumaba (14.2 versus 13,2 %), en comparación con quienes no padecían asma. La regresión logística multivariante mostró que considerar que COVID-19 no existe y no cumplir con el confinamiento se relacionaron con el tabaquismo en pacientes con asma durante la aplicación del plan de contingencia que representa la pandemia de COVID-19. Conclusiones: Durante el confinamiento en casa por COVID-19, la prevalencia de tabaquismo es mayor en pacientes con asma comparados con los individuos sin esta enfermedad, los factores que favorecen lo anterior están presentes en el entorno familiar.

Maize has antioxidant properties and a high amount of carbohydrates, while fish has high-quality proteins and unsaturated fatty acids. The goal of this study was to prepare a functional food enriched with protein and n-3 fatty acids from Scomber scombrus. A sensory analysis was carried out, along with a texture profile, color and proximate analyses, content of EPA+DHA, and shelf life analyses on five formulations of the snack produced. The best-accepted formula turned out to be the one containing 15% fish, and in comparison with the control, it displayed similar fracturability, less hardness, a higher amount of protein and lipids, and EPA+DHA (p ≤ 0.05), providing 14.6% of the daily recommended intake of EPA+DHA (30 g of product). The development of new products, such as the one proposed in this study, can be a new and healthy alternative to substitute other similar, commercially sold products with a lower amount of nutrients.

Los juegos educativos son alternativas para promover hábitos saludables en escolares especialmente. El objetivo fue evaluar la efectividad del juego Armando A. Nutricio para enseñar conceptos de alimentación y actividad física. Se seleccionó una muestra de alumnos de primaria y secundaria de la ciudad de Reynosa, Tamaulipas. A partir de un cuestionario de conocimientos generales antes y después de la aplicación del juego, en los alumnos de primaria se obtuvo la siguiente puntuación: antes del juego 9.36 ± 4.33 y al finalizar 10.9 ± 4.96 (p < 0.01) y del mismo modo en los de secundaria 13.53 ± 3.79 y 14.85 ± 4.32 (p < 0.01) de 15 preguntas sobre nutrición y actividad física. En conclusión, el juego Armando A. Nutricio se considera una herramienta útil para adquirir conocimientos sobre hábitos saludables.

The recruitment of respondents belonging to ethnic minorities poses important challenges in social and health research. This paper reflects on the enablers and barriers to recruitment that we encountered in our research work with persons belonging to ethnic minorities. Additionally, we applied the Matching Model of Recruitment, a theoretical framework concerning minority recruitment, to guide our reflection. We also explored its applicability as a research design tool. In assessing our research experience, we learned that minority recruitment in social and health research is influenced by the social context of all key players involved in the research. Also, there are enablers and barriers within that social context facilitating or delaying the recruitment process. The main enablers to recruit respondents belonging to ethnic minorities include working with community agencies and gatekeepers who share a common vision with researchers and the latter's ability to gain the trust of potential respondents. The main barriers include demanding too much from these same community agencies and gatekeepers and ignoring factors that could delay the completion of the research. Although we found the Matching Model of Recruitment to be an effective tool in assessing the processes of recruiting respondents belonging to ethnic minorities, further empirical research is needed to explore its usefulness during the research planning phase.

The efficiency of microbial transglutaminase (MTG) obtained from Streptoverticillum ladakanaum fermentation of sorghum grain and DDGS hydrolysates (HMTG) in increasing the mechanical properties of restructured meat and fish products was evaluated in this study. Gels were obtained by adding HMTG or commercial MTG at 0.3 U/g, and controls lacked enzyme. All treatments were supplemented with 2.0% NaCl. The gels with enzyme showed a lower amount of expressible water, similar to those obtained with CMTG (6% for fish gels and 8% for beef gels). Texture values were also similar. The results showed the feasibility of employing MTG obtained from sorghum hydrolysates.
