Peanut allergens adversely affect the health and quality of life of millions of consumers worldwide. The seeds of the peanut plant (Arachis hypogaea L.) contain a number of allergens that trigger the production of specific IgE antibodies in allergy-prone individuals. Currently, 18 proteins found in peanuts are accepted as allergens. These allergens are named from Ara h 1 to Ara h 18. Ara h 2, Ara h 6 and Ara h 7 are from albumin, Ara h 1 and Ara h 3 are from globülin. Ara h is the abbreviation of Arachis hypogaea, the Latin name for peanut. A peanut allergy is a reaction that occurs shortly after eating to peanuts or peanut products. It has various symptoms that can go up to swelling of the tongue, itching of the palate, itching and burning in the throat, itching in the eyes and nose, nausea, vomiting, abdominal pain, shortness of breath, wheezing, bruising, chest pain, hives, low blood pressure and shock. In this review, the properties of peanut allergens and the methods of reducing the allergen effect will be reviewed.

Geleneksel olarak yüzyıllardır insan beslenmesinde ve hastalıklarda iyileştirici olarak kullanılan susam tohumlarına ve ürünlerine olan talep, beslenme ve sağlık üzerindeki olumlu etkilerinin daha iyi anlaşılması nedeniyle son yıllarda daha da artmıştır. Bu çalışmada neredeyse tamamı ihraç olan Altın (Gökova) Susamın bazı tohum ve yağ özellikleri belirlenmiştir. Susam tohumlarının bin dane ağırlığı 3.40 g, ham protein oranı %20.24, ham yağ oranı ise %50.05 olarak bulunmuştur. Tohum renk analizi değerlerinden L*, a*, b*, c* ve h ortalamaları sırasıyla; 55.78, 10.35, 29.88, 31.62 ve 70.89 olarak belirlenmiştir. Toplam antioksidan kapasitesi 1405.53 mg trolox eşdeğeri/100g olarak belirlenirken, toplam fenolik madde içeriği ise 483.34 mg gallik asit eşdeğeri/100g olarak bulunmuştur. Susam numunelerinin yağlarında yapılan analizler sonucunda ise; palmitik asit oranı %9.45, oleik asit oranı %40.46, linoleik asit oranı %42.57 ve stearik asit oranı %4.96 olarak belirlenmiştir. Susam lignanlarından sesamol, sesamin ve sesamolin içerikleri ise sırasıyla 0.076 µg/g yağ, 12.278 mg/g yağ, 0.906 mg/g yağ olarak bulunmuştur. Susam tohum yağlarında ortalama α-tokoferol 1.57 µg/g, α-tokotrienol 1.22 µg/g, γ-tokoferol 47.59 µg/g, toplam tokoferol ise 49.17 µg/g olarak belirlenmiştir. Susam yağı renk analizi değerlerinden L*, a*, b*, c* ve h sırasıyla; 93.34, -1.57, 30.37, 30.41 ve 92.99 olarak belirlenmiştir. Kırılma indisi (20°C), iyot sayısı, sabunlaşma sayısı, serbest yağ asidi, ve sabunlaşmayan madde değerleri ise sırasıyla; 1.47, 107.86, 186.4 mgKOH /g yağ, %0.82 ve 1.74 g/kg olarak bulunmuştur. Altın (Gökova) Susam numunelerinde belirlenen kalite kriterlerinin literatür verilerine uygun olduğu ve çoğunlukla daha iyi sonuçlar verdiği belirlenmiştir.

Knowing the fermentation characteristics and quality characteristics of silage is important for silage quality and to feed animal. Fermentation characteristics of silages made in different mixing ratios and cutting periods of maize (Zea mays L.) and soybean (Glycine max L.) grown in Çukurova conditions were determined. Different mixing systems of maize and soybean [pure maize, pure soybean, alternate rows (1M+1S, 1M+2S, 2M+1S) and same row (1M +1S, 1M+2S, 2M+1S)]. The forage was harvested at two different growth stages of maize such as the milk and dough stages. In the research, Yeşilsoy soybean variety and 31Y43 variety as silage corn were used as material. The experiments were carried out A split plot randomised complete block design with 4 replications in the Eastern Mediterranean Agricultural Research Institute Experiment Area for 2 years under second crop conditions. Although mixing ratios vary according to form periods and years; crude ash content 5.20-11.33%, pH 3.75-5.51, DM ratio between19.60 and 37.59%; lactic acid from organic acids 4.76-163.7%, acetic acid 2.95-94.4%, propionic acid 0.87-4.30%, butyric acid 0.28-55.10% and ethyl alcohol 2.03-25.83%. Pure soybean has higher ash content, pH, AA, PA and BA than pure corn and sowing pattern; It is seen that DM ratio, LA and ethyl alcohol have lower values than pure corn and mixtures. As a result of the research, in terms of important silage parameters, it is seen that the dough stage period has better than the milk stage period and pure corn has better characteristics than pure soybean, and the mixtures are equivalent to corn in terms of fermentation properties.

Beslenme ve sağlık üzerindeki olumlu etkilerinin daha iyi anlaşılmasından dolayı susam tohumlarına ve ürünlerine tüketici taleplerinde son yıllarda sürekli bir artış olmuştur. Çalışmanın amacı, farklı tohum renklerine sahip 17 susam genotiplerinin toplam fenolik madde ile DPPH ve ABTS yöntemleri ile antioksidan içeriğinin belirlenmesidir. Toplam fenolik madde miktarı 1,99 ile 6,81 mg GA/g arasında değişim göstermiş olup, en yüksek fenolik madde miktarı değeri Libya genotipinden elde edil en düşük değer Gaziantep-Oğuzeli genotipinden elde edilmiştir. DPPH yöntemine göre elde edilen antioksidan aktivitesi değerleri 8,23 ile 17,50 mg Trolox/g arasında değişirken, ABTS yöntemine göre elde edilen antioksidan aktivitesi değerleri 3,62 ile 4,18 (mmol Trolox)/g arasında değişmiştir. Yapılan korelasyon analizine göre toplam fenolik madde, DPPH ve ABTS yöntemlerine göre antioksidan kapasiteleri arasında istatistiki olarak önemli ve olumlu bir ilişki olduğu tespit edilmiştir. Ancak, tohum rengi ile bu özellikler arasında bir ilişki tespit edilememiştir.

Statik olarak istif halinde muhafaza edilebilen polipropilen gıda saklama kutuları taşıma esnasındaki iklim koşulları ve yoldan araca gelen dinamik yüklerin etkisiyle deformasyona uğrayarak ezilmesi problemi taşımacılıkta çok sık karşılaşılan bir durumdur. Zira bir termoplastik türevi olan polipropilen de tıpkı diğer termo plastikler gibi sıcaklık değişimine karşı oldukça hassastır. Bununla beraber nakil edilen yükün gıda olması, polimer saklama kabının kırılma dayanımını artıran bir takım katkı maddelerinin kullanımını da sınırlandırmaktadır. Bunun sebebi ise pek çok katkı maddesi saklama kabının dayanımını artırıp kırılganlığını azaltırken, diğer yandan insan sağlığını için risk oluşturan bileşenler içermektedir. Bu durumu bertaraf etmek için özel önlemlerin alınması ya da istif sayısının azaltılması gerekebilir bu da nakliye maliyetlerinin arttırılmasıyla sonuçlanır. Bu çalışmada polipropilen gıda saklama kutularının düzgün olmayan yol şartlarındaki mukavemet analizi deneysel ve bilgisayar simülasyonları (Abaqus yazılımı) yardımı ile yapılmakta ve belirtilen ivme ve yükleme koşulları için riskli sıcaklık değeri belirlenmektedir.

Bu çalışma, robotik uygulamaları için, titreşime dayalı olarak hem karada hem de su üzerinde hareket edebilen, yenilikçi bir ilerleme mekanizmasını tanıtmaktadır. İlerleme mekanizması, su üzerinde batmadan durmasını sağlayan düşük yoğunluklu dikey kanat profiline sahip iki ayaktan ve U şeklinde yay çeliğinden üretilmiş elastik bir çubuktan oluşmaktadır. U şekilli çubuğun ortasına yerleştirilen basit bir sarkaç vasıtası ile sistem titreşime zorlanarak ilerleme gerçekleştirilmektedir. Su içerisinde dikey konumlandırılmış ayaklar salınım yaptıkça ön ve arka yüzeyler arasında oluşan basınç farkı ile robot ileri yönde hareket etmektedir. Karadaki hareketi ise elastik kirişin doğal titreşim modlarına bağlı olarak gerçekleşmektedir. Çalışmada farklı titreşim frekanslarının ilerleme hızına ve yer değiştirme maliyetine etkisi deneyler ile incelenmiş ve sonuçlar yorumlanmıştır. Buna ek olarak ön modelin yer değiştirme maliyeti (CoT) literatürdeki bazı robotlar ve canlılar ile karşılaştırılmıştır., This work presents an innovative locomotion mechanism both on land and water surface based on vibration, for robotic applications. In this work, the effect of different vibration frequencies on the locomotion velocity and the Cost of Transport (CoT) were investigated experimentally and the results were interpreted and discussed. In addition to these, the Cost of Transport of the preliminary model was compared with that of some robots and creatures in the literature.

In this study a locomotion mechanism which is similar to snake and fish swimming has been developed by using the natural vibration behavior of a simple cantilever beam (thin metal film). The swimming locomotion of the mechanism that is driven by wave propagation motion of the metal film has been confirmed by experiments. A metal cantilever beam (metal film), which is forced to vibrate at natural frequency by using a simple micro vibration motor, generates a propelling force, such as a fish fin that fluctuates in the liquid. And in this way, the swimming locomotion is provided in the specified directions depending on the orientation of the beam. In this way, it is aimed to develop an innovative and low energy consumption locomotion mechanism. The effects of design variables such as beam length and width, which effect the beam's natural frequency and locomotion performance, have been experimentally investigated on various test prototypes. The direction control and maneuverability of the robot can be improved by adding a second cantilever beam. Analytical calculations and experimental results showed the applicability of the proposed approach and the design. The locomotion mechanism introduced in the study has the potential to be used in micro robotic applications with its maneuverability and low energy consumption features.

Eyleyiciler herhangi bir robotik sistemin genel performansini belirleyen en onemli bilesenlerdir. Uzun yillar boyunca, uygun eyleyicilerin eksikligi, hareket, guvenlik ve enerji verimliligi acisindan canli organizmalarla rekabet edebilecek yuksek performansli makinelerin veya robotlarin gelismesini engellemistir. Biyolojik sistemlerin cevresel degiskenlere adaptasyon ozellikleri; Ornegin, degisken sertlik ozelliklerine sahip biyolojik kasin kontrol performansi, mekanik cihazlarin performansini asmaktadir. Elastik eyleyicilerin degisken rijitlik ozellikleri, endustriyel robotlarda kullanilan konum hassasiyeti gerektiren geleneksel rijit eyleyicilerin calisma prensibinden oldukca farklidir. Son yillarda elastik eyleyicilerin tasarimi uzerine cok sayida calisma yapilmis olmasina ragmen, yaygin olarak kullanilan basit rijit servo eyleyiciler yerini alabilecek dusuk maliyetli ve kompakt bir elastik eyleyici henuz mevcut degildir. Bu calismada, dusuk maliyetli olmasi nedeniyle robotik uygulamalarinda ve hobi araclarinda cok yaygin olarak kullanilan standart bir servo motor, disli sistemine eklenen elastik bir kavrama vasitasiyla sertligi degistirilebilir bir eyleyiciye donusturulmektedir. Elastik kavrama, silindirik diskin uzerine yerlestirilmis prizmatik kesitli dort kucuk yayrak yaydan olusmakta ve eyleyicinin sertligi, prizmatik yaylarin (millerin) kavrama uzunlugunu degistirerek ayarlanmaktadir. Calismada, bu yenilikci tasarim tanitilmis, ardindan prizmatik milin burulma rijitliginin kavrama uzunlugu ile degisimini ifade eden denklemler ve bu denklemlerin cozumleri verilmistir.

The demand for sesame seeds and their products, which have traditionally been used for centuries as a cure for human nutrition and diseases, has increased in recent years due to a better understanding of their positive effects on nutrition and health. In this study, some seed and oil properties of Golden (Gökova) Sesame, almost all of which are exported, were determined.The thousand grain weight of sesame seeds was 3.40 g, the crude protein rate was 20.24% and the crude oil rate was 50.05%. Seed color analysis average values L*, a*, b*, c* and h respectively; 55.78, 10.35, 29.88, 31.62 and 70.89. While the total antioxidant capacity was determined as 1405.53 mg trolox equivalents/100g, the total phenolic content was found to be 483.34 mg gallic acid equivalents/100g. As a result of the analyzes made in the oils of sesame samples; palmitic acid ratio 9.45%, oleic acid ratio 40.46%, linoleic acid ratio 42.57% and stearic acid ratio 4.96%. Sesamol, Sesamin and Sesamoline amounts of sesame lignans were found as 0.076 µg/g oil, 12.278 mg/g oil, and 0.906 mg/g oil, respectively. Average α-tocopherol was found as 1.57 µg/g, α-tocotrienol was found as 1.22 µg/g, γ-tocopherol was found as 47.59 µg/g, and total tocopherol was found as 49.17 µg/g in sesame seed oils. Arpa; Poaceae familyasından Hordeum cinsine ait olup buğday gibi en eski tahıl ürünlerinden biridir. Bileşiminde kuru maddede yaklaşık %65-68 nişasta, %8-17 protein, %3.6-9 β-glukan, %2-3 serbest lipid ve %1.5-3 mineral madde bulunmaktadır. Son yıllarda yapılan çalışmalarda arpanın buğday ekmeği reçetelerinde belli bir orana kadar kullanılabildiği gözlemlenmektedir. Bu çalışmada farklı arpa çeşitlerinden elde edilen unlarının buğday ununa farklı oranlarda ilavesiyle elde edilen ekmek hamurlarının reolojik özellikleri araştırılmıştır. Arpa unlarının kimyasal ve fizikokimyasal özellikleri incelendiğinde; nem oranlarının %11.21-%12.83 arasında, kül oranlarının %1.43-%1.89 arasında, protein oranlarının %12.75-%14.24 arasında değiştiği belirlenmiştir. Tüm tane arpa numunelerinin β-glukan değerleri %4.22-%5.7 arasında, arpa unlarının β-glukan değerleri ise %1.88-%3.08 arasında değiştiği, buğday ununun β-glukan değerinin de %0.21 olduğu belirlenmiştir. Çalışmada arpa unu % 10, %20 ve %30 oranlarında kullanılmıştır. Arpa unlarının kullanım miktarının artmasıyla su absorpsiyon miktarının arttığı gözlemlenmiştir. Ekstensograf analizlerine göre %10 ve %20 oranında arpa unu ilavesinin ekmek yapımına uygun olduğu gözlemlenmiştir. Bu oranlarda arpa unu kullanımı ile de β-glukan yönünden zenginleştirilmiş ekmekler üretilebilecektir.

Determining of harvest time in sesame growing is an important issue since all of the seeds do not mature at the same time. Determining harvest time according to the lower, middle or upper capsules is a tough decision because vegetative and generative growth is still ongoing. In this study, it was aimed to determine the 1000 grains weight, protein content, oil content and fatty acids in the lower, middle and upper capsules of the plant at five different harvesting times of the capsules targeted by the harvest. Bu calismada bir universite yemekhane sisteminden alinan veriler WEKA acik kaynak kodlu yazilimi vasitasiyla Yapay Sinir Agi, Destek Vektor Makinasi ve Regresyon analizi metotlari kullanimi ile gunluk talep miktarinin tahmini yapilmis ve ilgili metotlarin performans karsilastirilmasi sunulmustur. Yapilan calisma ile universite gibi farkli davranislara sahip tuketici tipine gore farkli metotlarin baskin oldugu ve secilecek metot ile atik yemek miktarinin minimize edilebilecegi onerilmistir.

This study was performed in order to evaluate efficiency of near-infrared reflectance spectroscopy (NIRS) for the determination of fatty acid composition ratio of sunflower seeds and to compare performance of calibration methods. Calibration equations were developed using modified partial least squares (MPLS) and partial least squares (PLS) regression methods. Ninety-three sunflower seed varieties were from test field of East Mediterranean Agricultural Research Institute. In order to determine the reference fatty acid values needed to construct calibration in NIRS analysis, sunflower seed samples were analyzed by gas chromatography method. Coefficients of determination (R(2)) in calibration were developed using MPLS and PLS as follows: for palmitic acid 0.706–0.664, for stearic acid 0.615–0.654, for oleic acid 0.996–0.994, for linoleic acid 0.995–0.994, for arachidic acid 0.768–0.643, for linolenic acid 0.818–0.763, for behenic acid 0.891–0.776, for eicosapentaenoic 0.933–0.892, for unsaturated fatty acid 0.837–0.890 and for saturated fatty acid 0.837–0.890 respectively. The results showed that NIRS was a reliable technique that can be used as a tool for rapid pre-screening of fatty acid composition of sunflower seeds.

Arastirma, Cukurova bolgesine uygun kislik ara urun yetistirme doneminde tarimi yapilabilecek, ot verimi ve kalitesi yuksek yeni Iskenderiye ucgulu ( Trifolium alexandrinum L.) cesitlerinin gelistirilmesi amaciyla yurutulmustur. Arastirma, populasyon karakterindeki materyalde, kendine dollenen bitkilerde uygulanan tek bitki seleksiyonu yontemiyle, Adana Dogu Akdeniz Tarimsal Arastirma Enstitusu Arastirma Alaninda, 2010-2015 yillari arasinda kislik donemde yurutulmustur. Arastirmaya, Kasim 2010’de 70 x70 cm araliklarla 2000 tek bitki elde edilecek sekilde kaynak populasyonu ile baslanmistir. 2011 yilinda 200 tek bitki, 2012 yilinda 70 tek bitki sirasi, 2013 yilinda ise 22 genotip secilmistir. 2013-14 ve 2014-15 yillarinda standart cesitlerinde yer aldigi 25 genotiple cesit verim denemelerine devam edilmistir. Arastirmada cesit verim denemeleri, tesaduf bloklari deneme deseninde 4 tekrarlamali olarak yurutulmustur. Cesit verim denemeleri sonucunda, genotiplerin ciceklenme gun sayisi, kuru madde verimi, sindirilebilir kuru madde verimi, ham protein orani ve nispi yem degeri sirasiyla 120.0-132.8 gun, 894-1222 kg da -1 , 4449.7-611.5 kg da -1 , % 14.02-17.21, ve 80.5-102.2 arasinda degisim gostermistir. Iki yillik cesit verim denemeleri sonucu 3,4,13,10,17,14 ve 7 no’lu genotiplerin verim ve bazi kalite degerleri bakimindan diger genotiplerden ustun olduklari saptanmistir. Soz konusu genotipler, ileride yapilacak islah calismalarinda degerlendirilecektir.

Theaim of this study was to determine the durum wheat quality parameters using Near-InfraredSpectroscopy (NIRS) at early stages. In this study, Foss NIRSystem XDS wasused. Durum wheat types at late stages which were subject to adaptation andplant breeding from test field of East Mediterranean Agricultural ResearchInstitute and some standard varieties were used. In order to determine thereference values needed to construct calibration in NIRS analysis, durum wheatsamples were analyzed by classical analysis methods. Moisture, gluten, proteinand starch contents, hectoliter weight, and zeleny sedimentation values were thereforedetermined. Coefficients of determination (RSQ) between classical analysisresults and values predicted by NIRS were calculated as follows: for moisture content0.816, for hectoliter weight 0.906, for gluten content 0.972, for protein content0.975, for starch content 0.929 and for zeleny sedimentation values 0.968. As aresult, this study shows that NIRS is possibly a fast and efficient method todetermine the quality parameters of durum wheat, and can be used for thedetermination of wheat quality from beginning to the last stage of plantbreeding process successfully, in order to supply customer with products indesired quality characteristics.
