Gracias a la financiación facilitada por la Junta de Comunidades de Castilla-La Mancha, la Diputación de Toledo y el CSIC, se ha llevado a cabo en 2022 una nueva campaña de excavación en el yacimiento altomedieval de Santa María de Melque (San Martín de Montalbán, Toledo). Partiendo de los trabajos arqueológicos realizados en la denominada Zona II o recinto inferior del monasterio hace más de 40 años por el arqueólogo L. Caballero Zoreda, la nueva investigación que aquí se presenta tenía como objetivos principales conocer la secuencia y articulación arquitectónica de las estancias conocidas como crujía norte y este del área indicada. Para ello, se han realizado la revisión y análisis arqueológico y geológico de las estructuras arquitectónicas exhumadas con anterioridad en la citada Zona II; la excavación arqueológica de un nuevo sector hacia occidente de la misma; y nuevos análisis arqueobotánicos y faunísticos de las muestras secuenciadas, con la intención de ayudar así a caracterizar las actividades de explotación, agrícola y/o ganadera, que se desarrollaban en este complejo caracterizado además por la presencia de varias presas de agua. Esta comunicación se centra en la presentación de los resultados preliminares de todos estos trabajos, mostrando con especial atención la secuencia arqueológica obtenida, así como los datos que se derivan del análisis de las muestras faunísticas.

The 78 faunal remains recovered from the Ribadeo I shipwreck, identified as the San Giacomo di Galizia galleon found at the Ribadeo estuary of north-west Spain, represent a very small part of the meaty provisions that this 16th-century warship would have originally carried on board. Cattle, sheep, pig, goose and hake are the species identified in the three samples analysed. The number of cattle bulk-meat cuts from the axial skeleton and fore/hind leg quarters suggest beef was an important source of protein for the crew, with mutton and pork occupying a secondary position. Aging data demonstrate the consumption of meat from sub-adult and young individuals while the frequency and location of butchery marks indicate extensive processing of the carcasses into small manageable portions, particularly in the case of cattle. Recovery of a goose tarsometatarsus (low-yield meat bone) may point to live poultry on board, while a hake vertebra evidences the likely provision of stockfish. In sum, the archaeozoological analysis provides interesting information to gain some knowledge on foodways and the types of meat available on board this Spanish galleon.

Domestication events in livestock can be studied by comparing modern DNA with ancient DNA (aDNA) from archaeological faunal remains. Investigating the phylogeny history of sheep remains from the Neolithic Spanish site of Cova de Els Trocs, provides an opportunity to gain some insights about their origins. In this work, aDNA recovered from 15 ovine specimens dated between 6000 to 4000 years BP were sequenced by whole genome sequencing (WGS), and mapped against the O. aries modern mitogenome. Complete mitogenomes were restored for 12 ancient samples. Bayesian Inference (BI) and Maximum Likelihood (ML) phylogenetic trees fitting the HKY+G+I model were performed including the mitogenomes of 12 ancient and 74 modern sheep and 4 wild species. All Neolithic samples belong to the mitochondrial haplotype B. Four ancient sheep constituted a clade (89%) with the Viena sheep breed (Karelia), suggesting a complex demographic history of their origins.

En este trabajo se presenta una aproximación a la población depositada en el depósito fumerario del Dolmen de El Pendón (Reinoso, Burgos) a lo largo del IV milenio a.C., tras el desarrollo del análisis antropológico, aún en curso. La muestra analizada hasta el momento está compuesta por 90 individuos, de ambos sexos y todas las categorías de edad, que padecieron diversos procesos patológicos, entre los que destaca el hallazgode una mastoiditis bilateral intervenida quirúrgicamente y de un absceso producido por un quiste periapical en el maxilar. El uso de tecnologías, como la Tomografía Computarizada (TC), la histología superficial con Microscopio Electrónico de Barrido y el desarrollo de mapas de remodelación, ha permitido diagnosticar correctamente ambos procesos infecciosos y determinar distintos desenlaces para cada uno de los sujetos.

Las investigaciones arqueológicas en el Dolmen de El Pendón (Reinoso, Burgos) han sacado a la luz la compleja biografía de un monumento megalítico. En origen, se trata de un sepulcro de corredor, en cuya cámara funeraria se depositaron los cuerpos de cerca de un centenar de individuos en distintos momentos a lo largo del IV milenio a.C. y que, posteriormente, experimentó una intensa transformación estructural y funcional, convirtiéndose en un centro ceremonial y de agregación poblacional. En este trabajo se presentan las distintas fases de uso documentadas en este monumento megalítico, basadas en un exhaustivo estudio estratigráfico y cronométrico, y se discute su relevancia en el contexto del megalitismo de la meseta norte española.

Taxonomic identification of whale bones found during archaeological excavations is problematic due to their typically fragmented state. This difficulty limits understanding of both the past spatio-temporal distributions of whale populations and of possible early whaling activities. To overcome this challenge, we performed zooarchaeology by mass spectrometry on an unprecedented 719 archaeological and palaeontological specimens of probable whale bone from Atlantic European contexts, predominantly dating from ca 3500 BCE to the eighteenth century CE. The results show high numbers of Balaenidae (many probably North Atlantic right whale (Eubalaena glacialis)) and grey whale (Eschrichtius robustus) specimens, two taxa no longer present in the eastern North Atlantic. This discovery matches expectations regarding the past utilization of North Atlantic right whales, but was unanticipated for grey whales, which have hitherto rarely been identified in the European zooarchaeological record. Many of these specimens derive from contexts associated with mediaeval cultures frequently linked to whaling: the Basques, northern Spaniards, Normans, Flemish, Frisians, Anglo-Saxons and Scandinavians. This association raises the likelihood that early whaling impacted these taxa, contributing to their extirpation and extinction. Much lower numbers of other large cetacean taxa were identified, suggesting that what are now the most depleted whales were once those most frequently used.

The Canary Islands were initially colonized around 200 CE by North African Berber populations who brought with them domestic plants and animals. These communities remained isolated until the arrival of Europeans in the Late Middle Ages which triggered the conquest of the archipelago. Its geostrategic location in the framework of Atlantic expansion facilitated the arrival of people, knowledge, goods, plants, and animals which served to shape the new Canarian society. This study explores the dietary practices of this period through the zooarchaeological analysis of the faunal remains recovered at the Hospital de San Martín (fifteenth to the eighteenth centuries), Las Palmas (Gran Canaria, Spain). Our results suggest that caprines were the main taxa consumed. This follows both the pre-colonial Indigenous tradition and, according to historical sources, the subsequent European period. The faunal assemblage recovered also reveals the first directly radiocarbon-dated cases in the Canary Islands of three hitherto unknown species: cattle, chicken, and rabbit. Moreover, the results evidence a progressive increase throughout the Modern Era of chicken and rabbit, and that translocating these new species to the archipelago during the European expansion led to a diversification of meat resources.

The objective of this paper is to characterise the composition and manufacturing techniques of the white paste inlays in the Bronze Age pottery decorations on the eastern Iberian Peninsula, using as a case study the Argaric archaeological site of Peñalosa (Baños de la Encina, Jaén, Spain). The determination of the characteristics and manufacture of these pastes required the application of analytical techniques such as micro-Raman spectroscopy (MRS), micro X-ray fluorescence (µEDXRF) and Fourier transform infrared spectroscopy (FTIR-ATR), as well as reference materials. This methodology made it possible to distinguish two types of production in this enclave: one with bone and the other with kaolinite. The coexistence of different manufacturing techniques had already been corroborated in other Bronze Age contexts in Europe and the southwest of the Iberian Peninsula. We were also able to determine that, in the case of paste made with bone, the temperatures would have reached 800°C, making it possible to link the use of calcined deer antlers with the manufacture of these decorations.

[Abstract] The techniques of agriculture and animal husbandry at Tell Humeida, a Middle Uruk Period (Late Chalcolithic) site on the middle Syrian Euphrates, were studied using stable isotopes of bone collagen of domestic and wild mammals and from cereal and ruderal plant seeds. Two archaeological campaigns in 2009 and 2011 yielded a small collection of bones, most of which were taxonomically indeterminable. The work had to be interrupted due to the political conflict. The faunal study comprised collagen peptide fingerprinting for taxonomic identification, followed by isotopic analysis. Multiple 14C dating were performed to date the infill to around 3600 cal BC. An isotopic analysis of the sparse plant remains suggested that irrigation and manuring were common practices. Sheep and equids predominated in the faunal assemblage. Sheep grazed on manured soils, and their diet could include millet or another C4 plant, of which, however, no carpological remains were found. The diet of equids differed from that of sheep but also that of other wild ungulates (cervids/gazelles). Their isotopic signatures indicated that they grazed in humid areas, near the watercourse. These finds indicated a settlement that was closely linked to the availability of water, which made it possible to grow crops in an almost desert-like area, and the rearing of sheep.

Thermo-alterations in skeletal remains result from circumstances that can be key to understanding the context in which these appear. Here, we present the results of a series of experiments based on the exposure of animal remains to a range of different conditions and temperatures (up to 900°C) to document a variety of contexts that provide valuable information in fossil sites and forensic cases. Meat-bearing and defleshed remains (i.e. meat manually removed before the experiment) were exposed to high-temperatures, both directly or buried in different types of sediments (silt, sand, gravel and mixed sediment), in order to document colour changes and survival of soft tissues. Thus, our main goal was to monitor colour alteration and superficial modifications on the bone surface (i.e. cracks, as well as disarticulation of small mammal carcasses caused by high temperatures).

En este capítulo se estudian los restos de fauna recuperados durante 2008 en el yacimiento de El Tormo II, Fuencaliente (Medinaceli, Soria), definido como un campo de hoyos. La asociación arqueofaunística procede de 10 estructuras negativas con graves problemas de conservación, ya que los procesos erosivos han disuelto la roca que contenía los rellenos, provocando la alteración de las estratigrafías. La datación de un radio de ovicaprino del Hoyo 3 sitúa el uso de estas estructuras en el Bronce Medio (1513-1412 cal AC, 95%), coincidiendo con las características de los otros materiales., Debido al mal estado de preservación de la asociación los datos recabados son muy reducidos. Nuestro análisis se ve limitado a la determinación taxonómica y anatómica de los restos presentes en cada uno de los hoyos, sin que de su cuantificación se pueda derivar cualquier conclusión sobre la gestión y el aprovechamiento de las especies identificadas en el asentamiento.

En este trabajo se analizan los restos de fauna recuperados manualmente en el yacimiento de la Edad del Bronce de El Pozuelo II, procedentes del relleno de doce estructuras circulares intervenidas en las campañas arqueológicas de 2006 y 2007. No se identificaron cabañas o niveles de habitación, solo hoyos de diámetros similares y profundidades diferentes que inducen a caracterizar este asentamiento al aire libre como un campo de hoyos. Los materiales cerámicos y dos dataciones radiocarbónicas adscriben la ocupación del yacimiento al Bronce Antiguo (1900-1700 cal AC, 95%) y Bronce Medio (1700-1500 cal AC, 95%)., El estudio arqueozoológico pretende obtener datos sobre los taxones desechados en los diferentes contextos, sus edades de sacrificio y determinación sexual, las partes anatómicas representadas y los procesos tafonómicos que les afectaron. Esta información permitirá reconocer el origen y el proceso de formación de las acumulaciones faunísticas, así como entender una posible diversidad funcional entre estructuras. Además, esperamos ayudar a mejorar el conocimiento actual sobre los mozos de gestión y aprovechamiento de los recursos pecuarios practicados por las poblaciones humanas asentadas en el entorno.

Bad preservation has greatly hampered archaeozoological research in the north-western region of the Iberian Peninsula. This has limited the size of samples and the specific identification of the bone remains, preventing a better understanding of livestock production and husbandry strategies. With the aim to partially fill this gap, the present paper focuses on the study of the Late Iron Age caprine remains recovered at the coastal site of A Lanzada (Pontevedra, Galicia, Spain). The location of this settlement on seashore sandy sediments has favoured the conservation of a large faunal assemblage dominated by the main domesticates. Morphological and metrical determination of caprine teeth and bones has enabled to estimate sheep to goat ratios, to build age-at-death profiles for each species and in the case of goats, to recognise female and male specimens. The large proportion of immature and sub-adult animals suggests a balanced relationship between optimisation of production and herd security, as it would be expected in a self-sufficient economy. Most interesting are the osteometric trends observed for sheep and goats. While sheep evidence a large decrease in size with respect to other northern Iberian sites dated from the Neolithic to medieval times, goats appear to have undergone little variation in the course of time. Therefore, caprines biometric change cannot be related exclusively to environmental factors but rather to different feeding and husbandry strategies that need to be further researched.

[EN] This study focuses on the chronostratigraphic sequence of the Cave of Kaf Taht el-Ghar (Dar Ben Karrich, Tétouan, Morocco) excavated in 2012 in the framework of the AGRIWESTMED research project. The broad sequence reveals a series of occupations ranging from the Pleistocene (Moroccan Aterian) to recent historical times. Our research identifies a rich Early Neolithic phase (sixth millennium cal BC) containing the earliest pottery and domesticated animal and plant remains in the western Maghreb. However, this Early Neolithic level is not an immediate successor of the last traces of the Epipalaeolithic hunter-gatherer occupation, which started at the end of the Younger Dryas (10,900–9700 cal BC). An abandonment phase, spanning more than a millennium, separated them. This hiatus appears to originate from a cold climatic event that began in the late seventh millennium cal BC (ca. 6200 BC) and ended around the mid-sixth millennium cal BC., [FR] La présente étude est centrée sur la séquence chronostratigraphique de la grotte de Kaf Taht el-Ghar (Dar Ben Karrich, Tétouan, Maroc), fouillée pour la dernière fois en 2012 dans le cadre du projet de recherche AGRIWESTMED. La séquence générale révèle une série d’occupations allant du Pléistocène (Atérien marocain) jusqu’aux temps historiques récents. Parmi les résultats les plus remarquables, on peut souligner l’identification d’une riche phase du Néolithique Ancien (6ème millénaire avant JC) contenant les plus anciens restes de poteries et de plantes et animaux domestiques datés au Maghreb occidental. Cette phase n’est. pas consécutive à l’occupation épipaléolithique, car il existe une nette rupture entre les deux phases, qui s’étend sur plus d’un millénaire. Cela semble coïncider en partie avec l’événement climatique froid de 6200 cal av. J.-C. Le début de l´ occupation épipaléolithique commencerait à son tour avec la fin du Dryas récent (10,900-9,700 cal av. J.-C.)

[EN] This paper presents the analysis of a small faunal assemblage from Sector 3 at the archaeological site of “Las Cabeceras”, Pozuelo de Alarcón, Madrid. The faunal remains were recovered from 32 pits dated to the Chalcolithic (first half of the 3rd millennium cal. BC.). The faunal spectrum is dominated by the main domesticates, followed by game species, among which red deer, equids and aurochs stand out. The dominance of adult and senile animals suggests the diversified productive orientation of the main domesticates (i.e., meat, wool, dairy products, traction, dung, etc.). In the case of pig, the absence of immature individuals and the ocurrence of quite old females may reflect an interest in the production of piglets to be exchanged among local or regional settlements. Also, it stands out the relative high frequency of wild large-sized herbivores in comparison with coeval sites located in the center of the Iberian Peninsula., [ES] Se presenta el análisis de un pequeño conjunto faunístico recuperado en las excavaciones del Sector 3 del yacimiento de Las Cabeceras, localizado en Pozuelo de Alarcón, Madrid. El material procede de los rellenos de 32 estructuras semisubterráneas de cronología calcolítica (primera mitad del III milenio cal. AC.) El espectro faunístico refleja el aprovechamiento de recursos ganaderos y en menor medida, de especies silvestres entre las que destaca el ciervo, los équidos y el uro. El sacrificio mayoritario de animales adultos y seniles sugiere el mantenimiento de cabañas ganaderas orientadas a la diversificación productiva (carne, lana, lácteos, piel, fuerza de trabajo, abono de los campos, etc.), si bien en el caso del porcino la ausencia de inmaduros y el dominio de cerdas de avanzada edad podría reflejar la producción de lechones destinados al intercambio entre asentamientos del ámbito local o regional. Igualmente, cabe destacar la contribución relativamente elevada de herbívoros silvestres de porte grande en relación a otros yacimientos coetáneos del centro peninsular

[EN] According to classical sources Barcelona was known as an oyster (Ostrea edulis Linnaeus 1758) harvesting point from Roman times onwards. Still, as of this writing, archaeomalacological studies from historical periods in the city are nearly absent. In this paper we present the analysis of archaeomalacological remains recovered from different rescue excavations on the outer side of the Roman walls of Barcelona, in particular between towers 27 and 28, along present day Sotstinent Navarro Street. The excavated area essentially corresponds with a space that in medieval times was occupied by buildings that were attached to the defensive wall, where domestic remains were found. Our results suggest that consumption was primarily focused on the edible oyster, showing a continuation of the ancient tradition into later phases. A few thorny oysters (Spondylus gaederopus Linnaeus 1758) and other bivalves (Glycymeris spp.) which might not have been necessarily consumed, were also trieved. Marine gastropods are scarce, with the exception of some murex snails. This is the first time that an archaeomalacological study addresses marine mollusc consumption in Barcelona during historical times., [ES] Según las fuentes clásicas, Barcelona fue conocida como un punto de obtención de ostras (Ostrea edulis Linnaeus 1758) desde época romana. A pesar de ello, los estudios arqueomalacológicos de época histórica en la ciudad son casi inexistentes. En este trabajo presentamos el análisis de los restos arqueomalacofaunísticos recuperados en una serie de excavaciones preventivas realizadas en la vertiente exterior de la muralla romana de Barcelona, entre las torres 27 y 28, área por donde discurre actualmente la calle Sotstinent Navarro. La zona excavada corresponde fundamentalmente a un espacio que en época medieval estaba ocupado por edificios adosados a dicha muralla y donde se recuperaron restos de función doméstica. Continuando con la tradición de época antigua, Los resultados remiten a un consumo orientado mayoritariamente a la ostra común, seguida a gran distancia por la ostra roja (Spondylus gaederopus Linnaeus 1758) y otros bivalvos que tal vez no siempre fueron consumidos (Glycymeris spp.). Los gasterópodos marinos son casi inexistentes, destacando la presencia de algunos murícidos. Estos datos suponen la primera aproximación al estudio del consumo de moluscos marinos en Barcelona durante épocas históricas a través de la Arqueomalacología., [CA] Barcelona fou coneguda com un punt d’obtenció d’ostres (Ostrea edulis Linnaeus 1758) des d’època romana, segons les fonts clàssiques. No obstant això, els estudis arqueomalacològics d’època històrica a la ciutat gairebé són inexistents. En aquest treball es presenta l’anàlisi de les restes arqueomalacofaunístiques recuperades en una sèrie d’excavacions preventives realitzades al vessant exterior de la muralla romana de Barcelona, entre les torres 27 i 28, àrea per on actualment discorre el carrer Sotstinent Navarro. La zona excavada correspon fonamentalment a un espai que en època medieval era ocupat per edificis adossats a la mateixa muralla i on foren recuperades restes de funció domèstica. Els resultats ens remeten a un consum majoritari d’ostra comuna, tot continuant la tradició d’època antiga en fases posteriors, seguida a gran distància per l’ostra roja (Spondylus gaederopus Linnaeus 1758) i altres bivalves que tal vegada no foren solament consumits (Glycymeris spp.). Els gasteròpodes marins són gairebé inexistents, amb la presència d’alguns murícids. Aquestes dades suposen la primera aproximació a l’estudi del consum de mol·luscs marins a Barcelona en èpoques històriques a través de l’Arqueomalacologia.

Este trabajo presenta los resultados del estudio pluridisciplinar de un asentamiento temporal preeuropeo situado en la Reserva Natural Especial de las Dunas de Maspalomas (Gran Canaria). Carece de estructuras estables de habitación, pero conserva de manera excepcional una estructura de combustión sobre la arena dunar. El sitio se ocupó en el cambio del I al II milenio AD, una etapa para la que se cuenta con escasos paralelos en la isla. Allí se desarrollaron actividades ligadas a la explotación estacional de pastos y recursos marinos, reflejando un comportamiento oportunista y austero, a juzgar por la sencillez del ajuar documentado.

[EN] Foodways represent a sphere of social life profoundly determined by cultural dispositions, as it might be conceived as a medium to express identity that defines us in relation to other individuals and groups. As a consequence, from the analysis of the archaeological remains of consumption of animal-based food products we can offer a glimpse into the foodways and the sociocultural identity of consumers. In this paper, we present some of the results obtained from a research project that dealt with the zooarchaeological analysis of a set of faunal assemblages recovered from two areas of the current city of Córdoba (Andalusia): the quarter of Saqunda (8th-9th centuries) and the Archaeological Area of Cercadilla (8th-11th centuries). On the ground of the taxonomic analysis and the assessment of culinary techniques inferred from butchery and burning marks, the aim is to contribute to the study of the patterns of consumption and preparation of animal products in the capital of al-Andalus during the formative period of the new Islamic society and to demonstrate the validity of these analytical techniques to shed light into the social change during this historical context., [ES] La alimentación representa un ámbito de la experiencia humana profundamente influido por disposiciones de naturaleza social y cultural, al ser un medio expresivo de identidad que nos define en relación a otros individuos y grupos. Por ello, a partir del estudio de los restos materiales derivados del consumo con fines culinarios de los productos animales en el pasado, podemos acceder al conocimiento de los hábitos de alimentación y, de esta forma, acercarnos a la identidad sociocultural de los agentes responsables de la generación de dichos residuos. En este trabajo se presentan algunos de los resultados fruto de una investigación que situó el foco de interés sobre el análisis arqueozoológico de una serie de asociaciones faunísticas identificadas como desechos de alimentación y recuperadas en dos sectores integrados en la actual ciudad de Córdoba (Andalucía) como son el arrabal de Saqunda (s. VII-IX) y la Zona Arqueológica de Cercadilla (s. VIII-XI). En concreto, y sobre la base de las informaciones derivadas del análisis taxonómico -que nos informa sobre las principales especies consumidas- y de las técnicas de preparación del alimento inferidas a partir del examen de las marcas de carnicería y de combustión, se pretende contribuir al estudio de los hábitos de elaboración culinaria y consumo cárnico en la capital de al-Andalus durante la fase formativa de la nueva sociedad andalusí y, en último término, demostrar la validez de esta aproximación analítica en la investigación sobre el cambio social operado en dicho contexto histórico.
