Summary: A trend to study entomological options as food is turning the practice of entomophagy into a novel research field in search for sustainable and accessible sources of nutrients. In this work, cricket (Gryllus assimilis) was processed into flour (CF), and then extracted using different solvents to obtain oils and defatted flours. The repeatability of CF obtention, its nutritional profile, and some of its physicochemical properties were studied. Results showed repeatability with a 28% mass yield for CF production. The CF presented adequate amino acid, mineral, and fatty acid profiles, a high content of dietary fibre, and low available carbohydrates, thus being considered a suitable alternative for inclusion in healthy human diets. Using data obtained from the total nitrogen content, the amino acid profile, and the total dietary fibre determinations, the CF protein digestibility was estimated at 67.4%. Based on experimental data, a mean nitrogen‐to‐protein conversion factor of 5.76 was calculated for a G. assimilis meal. Background: Food waste is a global and growing problem that is gaining traction due to its environmental, ethical, social, and economic repercussions. Between 2022 and 2027, the worldwide papaya market is expected to have a huge increase, meaning a growth in organic waste, including peels and seeds. Thus, this study evaluated the potential use of peels and seeds of two mature papaya fruits as a source of bioactive compounds, converting these by-products into value-added products. Proximate analysis (AOAC methods), mineral content (ICP-MS), free sugars (HPLC-ELSD), fatty acid composition (GC-FID), vitamin E profile (HPLC-DAD-FLD), and antioxidant activity (DPPH and FRAP assays) were evaluated. Results: Both by-products showed high total protein (20–27%), and dietary fiber (32–38%) contents. Papaya peels presented a high ash content (14–16%), indicating a potential application as a mineral source. 14 fatty acids were detected, with α-linolenic acid (30%) as the most abundant in the peels and oleic acid (74%) in the seeds. Both by-products showed high antioxidant activity. Metabolic disorders including hypertension, diabetes and cardiovascular disease etc. are the major threats to public health and economy. Management and prevention of alarmingly increased aforementioned disorders has attracted researchers to explore their natural remedies. The objective of this study was to explore ultrasonically extracted dietary fibers from indigenous oat cultivars (SGD2011, Avon, SGD81, PD2LV65, and S2000) for their techno-functional characteristics, mineral composition and phytochemicals. These characteristics will find the way to ultimately use oats in food and feed industries to address consumer demand. Extraction of dietary fibers from oat cultivars was optimized by response surface methodology. These cultivars varied significantly (p < 0.05) for oil holding capacity, water saturation and water holding capacity. The SGD81 cultivar showed the highest oil holding capacity, water holding capacity and water saturation due to its highest fraction of dietary fiber. The highest values of total phenolic contents, total flavonoid contents, total flavonol contents, 2,2-Diphenyl-1-picrylhydrazyl radical scavenging activity, and anthocyanins were shown by SGD81, and SGD2011. All cultivars varied significantly (p < 0.05) with respect to phytochemical quantification. The cultivars SGD81 and SGD2011 showed the best phenolic acid profile and can be effectively used as source of nutraceutical. Beyond well-established nutritional properties of oat, these may also contribute dietary fibers for their nutraceutical properties. This approach can protect people from metabolic disorders. Moreover, extraction of dietary fibers through sonication can be considered an eco-friendly strategy.

This study compared the effect of four levels of K Humate S100R (potassium humate) supplementation on the quality, shelf-life, and nutritional properties of beef. Angus steers (n = 40) were individually housed and fed either 0, 35, 70, or 140 g K Humate S100R/animal/day for 100 days, following a 30 day adjustment period. The steers were slaughtered at the completion of the feeding study. The left m. longissimus lumborum (LL) was collected at 24 h post-mortem and aged for either 2 or 6 weeks before analysis. K Humate S100R supplementation did not affect beef drip loss, cooking loss, shear force, sarcomere length, ultimate pH, intramuscular fat content, or total volatile basic nitrogen concentrations (P > 0.05). Steers supplemented with 70 g/day K Humate S100R produced beef with higher a* values on Days 1 and 3 of retail display (P < 0.05). Beef mineral composition was unchanged by K Humate S100R supplementation (P > 0.05), but there were minor changes to the fatty acid profile. Specifically, the ratio of omega-6 to omega-3 (P < 0.05) and C20:2n-6 concentrations (P < 0.05) increased with supplementation level. Together, these results demonstrate no detrimental effects on beef quality and shelf-life as a result of K Humate S100R supplementation.

Crithmum maritimum L. (sea fennel), an edible xerophyte of coastal habitats, is considered an emerging cash crop for biosaline agriculture due to its salt-tolerance ability and potential applications in the agri-food sector. Here, the nutritional value and bioactive properties of sea fennel are described. Sea fennel leaves, flowers, and schizocarps are composed of carbohydrates (>65%) followed by ash, proteins, and lipids. Sea fennel's salty, succulent leaves are a source of omega-6 and omega-3 polyunsaturated fatty acids, especially linoleic acid. Extracts obtained from flowers and fruits/schizocarps are rich in antioxidants and polyphenols and show antimicrobial activity against Staphylococcus aureus, Staphylococcus epidermis, Candida albicans, and Candida parapsilosis. Plant material is particularly rich in sodium (Na) but also in other nutritionally relevant minerals, such as calcium (Ca), chlorine (Cl), potassium (K), phosphorus (P), and sulfur (S), beyond presenting a potential prebiotic effect on Lactobacillus bulgaricus and being nontoxic to human intestinal epithelial Caco-2 model cells, up to 1.0% (w/v). Hence, the rational use of sea fennel can bring nutrients, aroma, and flavor to culinary dishes while balancing microbiomes and contributing to expanding the shelf life of food products. The objective of this work was to evaluate the effect of particle size on the chemical composition, fatty acid and polyphenol profile, physicochemical and techno-functional properties, and antioxidant capacity of flour obtained from date seeds. The date seed flours obtained had a high content of total dietary fiber (67.89–76.67 g/100 g), and the reduction in particle size decreased the moisture and protein contents, while the fat, mineral (Ca, Fe, Zn, and Mg), and fatty acid contents were significantly increased, with oleic acid being the highest. Water activity increased with decreasing particle size, and the finest flour (<210 mm) tended to be yellowish and reddish. The water- and oil-holding capacities decreased in the flours with the smallest particle size compared to the largest sizes. The main polyphenolic compounds in all the samples were catechin, epicatechin, and epigallocatechin-3-gallate. The antioxidant activity significantly improved with reductions in the particle size of the date seed flour, with the ABTS, DPPH, and FRAP values ranging between 8.99 and 20.68, 0.66 and 2.35, and 1.94 and 4.91 mg Trolox equivalent/g of date seed flour. The results of the present study suggest that the flour obtained from date seeds cv. Medjool can be a valuable co-product for the food industry due to its fiber content, essential fatty acids, and bioactive compounds that can help reduce the amount of waste generated, promoting the circular economy in the food chain. Fungal infections are a serious health concern that poses a danger to global healthcare systems. The innate resistance of fungi to chemical agents has made researchers investigate natural sources with bioactive contents against a wide spectrum of pathogenic microbes. The present study aimed to explore the variability of the mineral profile, as well as the antifungal effect of different extracts of Ajuga iva L. collected from different geographical locations in Morocco. Different extracts (aqueous, ethanol, and methanol) were prepared from Ajuga iva samples using the maceration technique. The mineral profile of the extracts was determined using inductively coupled plasma atomic emission spectroscopy (ICP-AES). Eight pathogenic fungi were used to determine the antifungal effect of different extracts of Ajuga iva using agar disc diffusion method. The results showed high variability in the mineral profile according to geographical origin with the abundance of Na (between 160.52 and 192.40 mg/L), K (between 10.52 and 41.41 mg/mL), Ca (between 32.07 and 58.76 mg/L), Mg (between 4.16 and 8.42 mg/L), and P (between 1.69 and 10.54 mg/L). All the test extracts exhibited considerable antifungal effects against all fungi except Cryptococcus. The findings of the present study confirmed that Ajuga iva is a valuable source of essential minerals and is effective in inhibiting the growth of pathogenic fungi. [ABSTRACT FROM AUTHOR]

The aim of the present study was to establish the changes in lipid and mineral metabolism in cows from the Holstein breed with ketosis. Blood samples were obtained from 158 cows for determination of β- hydroxybutyrate (BHBA), non-esterified fatty acids (NEFA), total cholesterol (TC), high-density lipoproteins (HDL-C), low-density lipoproteins (LDL-C), triglycerides (TG), calcium (Ca), phosphorus (P) and magnesium (Mg). The cows were divided in three groups: pregnant, recently calved and lactating. Target cows were classified as healthy (C), affected with subclinical (SCK) and with clinical ketosis (CK) depending on their blood BHBA levels. The levels of NEFA in cows with SCK were elevated, while in cows with CK -- decreased. The quantities of total cholesterol and HDL-C decreased, while the blood levels of LDL-C and TG were increased in cows with SCK and CK ketosis. Tempe is one of the popular foods in Indonesia which comes from fermented soybeans with the help of Rhizopus oligosporus. The development of tempeh with non-soy ingredients is starting to be carried out frequently. Cowpea (Vigna unguiculata subsp. unguiculata) is one of the nuts that is often consumed by Indonesian people. Cowpeas can be an alternative substrate for tempeh fermentation, because of their nutritional content, including vitamins and minerals, which are quite good for the body. However, some of these minerals are still bound to the phytic acid compound so it needs to be explained by the fermentation process. This research aimed to determine the ash content, mineral content of iron, calcium, and total mold in cowpea tempeh at a fermentation time of 35, 45, and 54 hours using standard methods. The research design used was a Completely Randomized Design (CRD) with repetition 3 times for each treatment for fermentation duration P1 (35 hours), P2 (45 hours), and P3 (54 hours). The ash and calcium content of cowpea tempeh decreased with fermentation times of 45 and 54 hours compared to 35 hours. In terms of iron content, the amount was almost the same at all fermentation times. Meanwhile, the total number of molds increased with fermentation times of 45 and 54 hours. Based on the results of observations for further research, the fermentation time for making cowpea tempeh used in this optimization was determined to be 35 hours. A fermentation time of 35 hours produces good cowpea tempeh, high calcium content, and efficient time and energy.

The broad spectrum of plant origin of propolis makes them very heterogeneous in terms of their chemical composition. This fact conditions the potential use in medicine. Among the main bioactive components, polyphenols and minerals are related to different medicinal properties attributed to propolis. This study aims to identify and quantify the presence of 15 polyphenols and 8 minerals, in a collection of georeferenced propolis from 14 locations in Uruguay. Polyphenols in ethanolic extracts of propolis were identified and quantified by HPLC, while minerals were studied by atomic absorption spectroscopy in crude propolis. The plant environment was characterized using information on the productive use of the soil. The three main polyphenols found in all locations were chrysin, galangin and pinocembrin. All polyphenols analyzed were found, except rutin, which was not detected in any sample. Regarding the concentration of polyphenols, we can divide Uruguay into two regions: the southwest with high concentrations of 125 g/kg, and the northeast with concentrations of 16 g/kg. All minerals were identified. The variations between localities and seasons rule out the use of minerals for a determination of geographical origin. The description of the plant environment was partially adjusted with the types of propolis. Concentrations found of polyphenols and minerals are within the values reported in the world. Studies on the high polyphenolic content of propolis from the southwestern region should continue due to its potential medicinal use.

Simple Summary: The rational use of agriculture and agro-industrial by-products in ruminant nutrition contributes to greater respect for the environment in addition to a better final product quality. Artichoke crops are widespread in the Mediterranean region but mostly not properly valued. Previous studies carried out with artichoke by-product silage at 25, 40 and 60% inclusion in dairy goat feed for one month showed that 40% inclusion would be a good option without any harm to milk yield and composition or animal health status. Therefore, it is worth studying the effect of feeding animals with 40% artichoke by-product silage during a full lactation period. No negative effects were observed on animal performances and productivity, allowing us to reduce agroindustry wastes and offering a long-term preserved by-product that promotes a sustainable circular economy and the production of animal products with high nutritional value, like goat milk. The aim of this work is to study the effect of 40% inclusion of artichoke by-product silage (AB) in dairy goat diets on milk yield, composition and animal health status during a full lactation period compared to an isoenergetic and isoproteic mixed ration based on alfalfa hay and a cereal and legume mixture. Milk yield was not affected by the dietary treatments, and neither was body weight. AB treatment reduced whey protein (0.38 vs. 0.42%, p < 0.05) and milk urea concentrations (687 vs. 773 mg/L, respectively, p < 0.001), and did not affect total true protein (3.22 vs. 3.24% p > 0.05) or other macro-composition variables. AB treatment showed higher milk concentrations of Ca (p < 0.05), Mn (p < 0.01), Cu (p < 0.01) and Zn (p < 0.001) compared to the control group (C). Slight differences were observed in milk fatty acid profile without any negative effects (p > 0.05) on the blood cholesterol and glucose of goats. The AB group reduced blood urea due to its high dietary total phenol content. However, it had a positive effect on β-hydroxybutyrate (p < 0.05) and nonesterified fatty acids (p > 0.05). It was concluded that 40% artichoke by-product inclusion in dairy goat feed for the whole lactation period (23 weeks) is a sustainable solution, reducing feeding cost by 12.5% per kg of dry matter, contributing to a better circular economy without any negative repercussions on the productivity and health of Murciano–Granadina dairy goats. This study aimed to evaluate the influence of potential functional ingredients—green banana starch, green banana pulp flour or whole green banana flour—on the composition, physicochemical and sensory properties of plant-based fermented beverages made of baru nuts. The incorporation of green banana-derived ingredients, especially the whole flour, increased protein (2.44–2.81 g/100 g), fibre (1.53–2.32 g/100 g), resistant starch (0.15–0.33 g/100 g) and ash (0.36–0.61 g/100 g) content in fermented beverages. The total phenolic content and antioxidant capacity were higher in beverages added with pulp or whole flour. The main polyphenols identified were catechin (0.75–4.97 mg/100 g), gallic acid (0.29–0.52 mg/100 g) and ferulic acid (0.17–0.64 mg/100 g). All beverages showed to be rich in unsaturated fatty acids (68%) as omega-3, omega-6, and conjugated linoleic acid. The incorporation of green banana in beverages enhanced the probiotic bacteria growth indicating the potential prebiotic effect of the unripe fruit. The sensory acceptance of fermented beverages was also improved after adding green banana. Overall, whole green banana flour stood out as the main factor that increased the nutritional value of baru nut fermented beverage. Green banana was used for the first time as a potential prebiotic ingredient in a plant-based beverage. Zinc is an important nutrient for several plants and humans. Nitric oxide (NO) is a free radical that is important to biological processes that mediate the growth and mitigation of biotic and abiotic stresses in plants. The present study investigated the enzymatic and photosynthetic profile and the accumulation of macro- and microelements in rice plants (Oryza sativa L.) that received foliar treatments of zinc oxide nanoparticles (ZnO NPs), nitric oxide donor (GSNO), and the association of both (GSNO–ZnO NPs). Zinc concentration in rice husks increased by 66% and 68% in plants treated with ZnO NPs and GSNO–ZnO NPs, respectively. The GSNO treatment caused an increase of 25% in the Fe concentration in the rice grains. Only a small disturbance of the antioxidant system was observed, with increases in H2O2, S-NO, and NO2−, mainly in the group treated with GSNO–ZnO NPs; however, the disturbance did not affect the yield, the growth, or vital processes, such as as photosynthetic pigments production. There was an increase in chlorophyll B of 290% and an increase in chlorophyll A of 187% when ZnO NPs was applied. GSNO–ZnO NPs increased chlorophyll B by 345% and chlorophyll A by 345%, indicating that the treatments GSNO, ZnO NPs, and GSNO–ZnO NPs reduced possible oxidative stress and helped as protective treatments. ABSTRACT: This study aimed to assess the influence of glycosaminoglycan (chondroitin and glucosamine sulfates) supplementation in the diet of broilers on the expression of matrix metallopeptidase 9 (MMP-9) and metallopeptidase inhibitor 2 (TIMP-2) genes, the synthesis of proteoglycans, collagen type II and chondrocytes, bone and cartilage macroscopy, bone mineral densitometry, bone breaking strength and mineral profile. A completely randomized design was carried out in a 3 × 3 factorial scheme (3 levels of chondroitin sulfate: 0.00, 0.05, and 0.10%; and 3 levels of glucosamine sulfate: 0.00, 0.15, and 0.30%), totaling 9 treatments. At 21 and 42 d of age, broilers were slaughtered, and tibias and femurs were collected for evaluation. There was an interaction (P < 0.05) of sulfates for the expression of MMP-9 and its inhibitor TIMP-2 in femur articular cartilage, as well as for the number of chondrocytes, collagen type II and proteoglycans in tibia articular cartilage, bone and cartilage macroscopy and mineral profile (P < 0.05), with better results obtained with the inclusion of chondroitin and/or glucosamine sulfates in the feed. In conclusion, chondroitin and glucosamine sulfates can be used in broiler diets in order to favor the development of the structure of the locomotor system (bones and joints), thus preventing locomotion problems.

Seven date seeds cultivars, Deglet Nour, Degla Baïdha, Fakht, Ghars, Hamraya, Tafezouin and Takermost were provided from Algerian Sahara. Some of these Algerian date seeds were studied for the first time (Fakht, Hamraya and Takermost). The biochemical characterization of these date seeds were studied, including fatty acids and minerals profiles. The results showed that date seeds are a good source of carbohydrates and crude cellulose, with averages of 66.63 and 13.20%, respectively. They are also a good source of proteins, with the cultivar Deglet Nour seeds as the richest one (9.27 ± 0.03%). The main fatty acid for all date seeds oils is oleic acid except for Deglet Nour in which lauric acid is the main one. However, the studied date seed oils could be classified as oleic-lauric oil. Potassium was the highest mineral in all date seeds cultivars, with values ranging from 2700 to 2900 mg/Kg, followed by sodium and iron. These results indicate that date seeds have good nutritional value with different compositions among cultivars. It could be concluded that date seeds could be considered as a good opportunity for their technological and industrial valorization.

Aside from their bioremediation roles, little is known about the food and feed value of earthworms. In this study, a comprehensive evaluation of the nutritional composition (proximate analysis and profiles of fatty acids and minerals) and techno-functional properties (foaming and emulsion stability and capacity) of earthworm (Eisenia andrei, sourced in New Zealand) powder (EAP) were investigated. Lipid nutritional indices, ω6/ω3, atherogenicity index, thrombogenicity index, hypocholesterolemic/hypercholesterolemic acid ratio, and health-promoting index of EAP lipids are also reported. The protein, fat, and carbohydrate contents of EAP were found to be 53.75%, 19.30%, and 23.26% DW, respectively. The mineral profile obtained for the EAP consisted of 11 essential minerals, 23 non-essential minerals, and 4 heavy metals. The most abundant essential minerals were potassium (8220 mg·kg−1 DW), phosphorus (8220 mg·kg−1 DW), magnesium (744.7 mg·kg−1 DW), calcium (2396.7 mg·kg−1 DW), iron (244.7 mg·kg−1 DW), and manganese (25.6 mg·kg−1 DW). Toxic metals such as vanadium (0.2 mg·kg−1 DW), lead (0.2 mg·kg−1 DW), cadmium (2.2 mg·kg−1 DW), and arsenic (2.3 mg·kg−1 DW) were found in EAP, which pose safety considerations. Lauric acid (20.3% FA), myristoleic acid (11.20% FA), and linoleic acid (7.96% FA) were the most abundant saturated, monounsaturated, and polyunsaturated fatty acids, respectively. The lipid nutritional indices, such as IT and ω-6/ω-3, of E. andrei were within limits considered to enhance human health. A protein extract derived from EAP (EAPPE), obtained by alkaline solubilisation and pH precipitation, exhibited an isoelectric pH of ~5. The total essential amino acid content and essential amino acid index of EAPPE were 373.3 mg·g−1 and 1.36 mg·g−1 protein, respectively. Techno-functional analysis of EAPPE indicated a high foaming capacity (83.3%) and emulsion stability (88.8% after 60 min). Heat coagulation of EAPPE was greater at pH 7.0 (12.6%) compared with pH 5.0 (4.83%), corroborating the pH-solubility profile and relatively high surface hydrophobicity (1061.0). These findings demonstrate the potential of EAP and EAPPE as nutrient-rich and functional ingredients suitable as alternative food and feed material. IntroductionFortification of cereal products with natural plant extract is an interesting approach to fulfill the dietary requirement of the people.Materials and methodsPeels of pomegranate (rich source of natural compounds) were cut into small pieces and dried in three different methods such as solar drying (SOD), oven drying (OD), and sun drying (SUD). The fine powder was prepared and proximate compositions (protein, ash, moisture, fats, fiber, and carbohydrates), minerals (zinc, iron, calcium, and potassium), total phenolic content (TPC), total flavonoid content (TFC), and antioxidant activity (DPPH) of the pomegranate peel powder (PP) were evaluated. Fine wheat flour (FWF) was fortified with different concentrations (3, 6, 8, 10, and 12 g) of PP powder, cookies were prepared and all the above analysis along with physical parameters (weight, width, thickness, spread ration) and sensory analysis were conducted. Cookies without PP powder were served as control.Results and discussionResults showed that a SOD was the best for drying PP powder in terms of compositional analysis. Addition of PP powder significantly (P < 0.05) enhanced the nutritional value, minerals profile and physical attributes of the fortified cookies. Scolymus hispanicus L. is a wild edible species with wide distribution in the Mediterranean area. Recent research has focused on the domestication of wild edible greens, which is essential for the preservation of agroecosystems and the increase in biodiversity, especially under the adversely changing climate conditions. In the present work, the aim was to evaluate the response of S. hispanicus plants to different fertilization regimes that varied in the amounts of nitrogen, phosphorus and potassium in regard to plant growth and chemical composition of leaves. For this purpose, plants were grown in pots within an unheated greenhouse. Seven experimental treatments were used, including six fertigation regimes (SH1-SH6) and the control treatment (SHC), where no fertilizers were added. Fresh yield was beneficially affected by the treatments that included a high content of P and K (e.g., SH3 and SH5), while lesser amounts of these macronutrients (e.g., SH1 and SH4) resulted in higher chlorophyll content (SPAD index) and leaf area. In terms of mineral profile, high amounts of P and K improved dietary fiber and carbohydrates content, whereas the untreated plants had the highest content of ash, fat and crude protein. Oxalic and quinic acid were the major organic acids detected, with fertigation regimes significantly reducing their content compared to the control treatment. α-tocopherol was the only isoform of vitamin E detected in all the samples, while glucose and fructose were the most abundant sugars, with their highest content detected in control and SH4 treatments, respectively. Scolymus hispanicus leaves were rich in macro and micro minerals, while their contents varied depending on the fertigation regime. Finally, α-linolenic, palmitic, and linoleic acid were the major fatty acids detected, while their contents were beneficially affected by low nutrient inputs (e.g., untreated plants and SH1 and SH2 treatments). In conclusion, the regulation of nutrient solution seems to be an effective practice to increase fresh yield in S. hispanicus without compromising the nutritional profile of the edible product, while low inputs of macronutrients such as P and K may improve the chemical composition of the species, especially in terms of n-fatty acids. Stingless bee honey (SBH) is gaining attention due to its nutritional, sensorial, and medicinal characteristics. This study focuses on the combination of physicochemical properties, antioxidant capacity, mineral profile, and mass spectrometry-based fingerprints, using a chemometric approach to differentiate SBH (n = 18) from three different Brazilian biogeographical zones (Caatinga, Cerrado, and Atlantic Forest). The physicochemical properties of SBH varied, resulting in a wide range of water activity, moisture, total soluble solids, pH, and total and free acidity. The Caatinga honey showed the highest and the lowest contents of phenolics and flavonoids, respectively. The antioxidant free-radical scavenging assays demonstrated that the Brazilian SBH has a high antioxidant potential. The mineral profile of honey samples from the Atlantic Forest revealed higher contents of Ca and Fe while the Cerrado and Caatinga honey showed the highest P contents. Partial Least-Squares Discriminant Analysis (PLS-DA) analysis separated the samples into three groups based on the biogeographical zones of harvest. The main separation factors between groups were the m/z 326 ion and the Fe content. Univariate analysis confirmed that Fe content is important for SBH discrimination. Global interest in yacon (Smallanthus sonchifolius) is growing due to its potential as a functional food, attributable to its unique profile of bioactives and high fructooligosaccharide (FOS) content, which vary between cultivars. Our objective was to conduct a comprehensive chemical and nutritional analysis of New Zealand yacon concentrate (NZYC)—a sweet syrup derived from the roots of cultivar 'New Zealand', which was first grown in the 1980s. The major minerals in NZYC were potassium, phosphorus, and calcium. The FOS content ranged from 17.6 to 52.7 g/100g. Total phenolic content ranged from 565 to 785 mg gallic acid equivalents per 100 g; chlorogenic acid and caffeic acid were the major phenolic compounds. The major amino acids were L-arginine, L-glutamic acid, L-proline, L-aspartic acid, and asparagine. The major organic acids were citric, malic, quinic, and fumaric acids. Antioxidant activity ranged from 1084.14 to 3085.78 mg Trolox equivalents per 100 g depending on the assay used. The glycaemic index (GI) value was 40 ± 0.22, classifying it as a low-GI food. Introduction- One of the most severe and persistent psychiatric diseases that lasts for at least six months is schizophrenia. There are major mental and physical comorbidities, a high prevalence, a chronic course, and extremely large individual and social costs (lost productivity and increased medical expenses). "The mental disability known as "psychosis," which is a prevalent occurrence in schizophrenia, is characterised by hallucinations, sensory perception problems, or delusions. The disorder is brought on by biopsychosocial factors, such as perinatal, genetic, neuroanatomical, neurochemical, and other biological problems. Material and Methods-This was a hospital based case-control study consisting of Fifty diagnosed patients with schizophrenia upto age group of 65 years attending psychiatry department were included as cases and Fifty healthy age and gender matched healthy controls participated as controls in the study. A written and informed consent to all the participants of both the groups was taken after explaining the purpose and details of the study. Using ECi, serum TSH, T3, and T4 are estimated. Utilizing Vitros 4600, calcium, magnesium, and phosphorus are also calculated. Results: In the schizophrenia group, TSH levels were significantly higher (P=0.019), although T3 and T4 values were significantly lower (P=0.004 and P=0.001, respectively), and serum Ca levels were lower (P=0.000). Serum Po4 concentrations were noticeably higher. serum Mg levels in the schizophrenia group were lower (P=0.000) than in the control group (P=0.003). Conclusions: We came to the conclusion that thyroid hormone levels are typically lower in psychiatric disorders. This implied that the thyroid gland was underactive. The study also found elevated serum Po4 levels and lower Ca and Mg levels. The aforementioned minerals can become out of balance in a number of ways. Seven date seeds cultivars, Deglet Nour, Degla Baïdha, Fakht, Ghars, Hamraya, Tafezouin and Takermost were provided from Algerian Sahara. Some of these Algerian date seeds were studied for the first time (Fakht, Hamraya and Takermost). The biochemical characterization of these date seeds were studied, including fatty acids and minerals profiles. The results showed that date seeds are a good source of carbohydrates and crude cellulose, with averages of 66.63 and 13.20%, respectively. They are also a good source of proteins, with the cultivar Deglet Nour seeds as the richest one (9.27 ± 0.03%). The main fatty acid for all date seeds oils is oleic acid except for Deglet Nour in which lauric acid is the main one. However, the studied date seed oils could be classified as oleic-lauric oil. Potassium was the highest mineral in all date seeds cultivars, with values ranging from 2700 to 2900 mg/Kg, followed by sodium and iron. These results indicate that date seeds have good nutritional value with different compositions among cultivars. The aim of this investigation was to examine levels of minerals in fruit pulp of 12 jackfruit (Artocarpus heterophyllus Lam.) genotypes. In total, 25 mineral elements including quantity (7), essential-trace (12) and unclassified mineral elements (6) have been detected using ion chromatography, inductively coupled plasma-mass spectrometry, and inductively coupled plasma-optical emission spectrometry. Overall, 'Seedling 1 (yellow-fleshed)' was shown to be comparatively rich in essential-trace elements (molybdenum, chromium, copper, and iron). In contrast, 'Accession 284 (yellow-fleshed)' and 'Rajang (orange-fleshed)' shared similarities in their mineral profile and were rich in quantity elements (potassium, sulphur, calcium, and magnesium). 'Seedling 6 (yellow-fleshed)' was near the average of all genotypes, where zinc was the only key element in the rest of the seedling selections. Accordingly, our study provides valuable insights into the potential effect of genotypes on mineral concentrations, contributing to the field of nutritional security by highlighting levels of major mineral elements in dried fruit pulp of ripe jackfruit. This work aimed to characterize chemical composition of Malbec and Cabernet Franc red wines from two different regions of La Pampa's province, which stands out as one of the youngest wine-producing regions in Argentina and has remained unexplored until now. These wines were produced from grapes of two consecutive vintages (2021 and 2022), and were harvested at two different ripeness levels. Global phenolic parameters, colour characterization and multi-elemental profile were evaluated. Multivariate statistical approaches were successfully implemented to investigate the vintage and ripeness effects on chemical profile of red wines and characterize them based on regional variations. Our results showed that vintage and ripeness affected both phenolic and multi-elemental profiles, and such chemical variables allowed the wines differentiation according to region. The results of this first study could form the basis for future research into optimizing the region's winemaking potential. The aim of this work is to study the effect of 40% inclusion of artichoke by-product silage (AB) in dairy goat diets on milk yield, composition and animal health status during a full lactation period compared to an isoenergetic and isoproteic mixed ration based on alfalfa hay and a cereal and legume mixture. Milk yield was not affected by the dietary treatments, and neither was body weight. AB treatment reduced whey protein (0.38 vs. 0.42%, p < 0.05) and milk urea concentrations (687 vs. 773 mg/L, respectively, p < 0.001), and did not affect total true protein (3.22 vs. 3.24% p > 0.05) or other macro-composition variables. AB treatment showed higher milk concentrations of Ca (p < 0.05), Mn (p < 0.01), Cu (p < 0.01) and Zn (p < 0.001) compared to the control group (C). Slight differences were observed in milk fatty acid profile without any negative effects (p > 0.05) on the blood cholesterol and glucose of goats. The AB group reduced blood urea due to its high dietary total phenol content. However, it had a positive effect on β-hydroxybutyrate (p < 0.05) and nonesterified fatty acids (p > 0.05). It was concluded that 40% artichoke by-product inclusion in dairy goat feed for the whole lactation period (23 weeks) is a sustainable solution, reducing feeding cost by 12.5% per kg of dry matter, contributing to a better circular economy without any negative repercussions on the productivity and health of Murciano–Granadina dairy goats.

Zinc is an important nutrient for several plants and humans. Nitric oxide (NO) is a free radical that is important to biological processes that mediate the growth and mitigation of biotic and abiotic stresses in plants. The present study investigated the enzymatic and photosynthetic profile and the accumulation of macro- and microelements in rice plants (Oryza sativa L.) that received foliar treatments of zinc oxide nanoparticles (ZnO NPs), nitric oxide donor (GSNO), and the association of both (GSNO–ZnO NPs). Zinc concentration in rice husks increased by 66% and 68% in plants treated with ZnO NPs and GSNO–ZnO NPs, respectively. The GSNO treatment caused an increase of 25% in the Fe concentration in the rice grains. Only a small disturbance of the antioxidant system was observed, with increases in H2O2, S-NO, and NO2−, mainly in the group treated with GSNO–ZnO NPs; however, the disturbance did not affect the yield, the growth, or vital processes, such as as photosynthetic pigments production. There was an increase in chlorophyll B of 290% and an increase in chlorophyll A of 187% when ZnO NPs was applied. GSNO–ZnO NPs increased chlorophyll B by 345% and chlorophyll A by 345%, indicating that the treatments GSNO, ZnO NPs, and GSNO–ZnO NPs reduced possible oxidative stress and helped as protective treatments.

The presence of carbon and nitrogenous compounds in mango processing by-products makes them excellent substrates for the biosynthesis of many microbial metabolites using fermentation processes. Pretreatment of the substrate with retention of crucial growth supporting compounds is vital for designing and optimizing fermentation media for enhanced production of desired metabolites. The present study investigated the effect of hot air drying (HAD) (50, 60, 70, and 80 °C) on the bioactive compounds, physio-chemical and mineral profile, fermentable sugar, and microbial safety of mango (cv. chausa) seed kernel powder. Results indicated that different drying temperatures non-significantly (P<0.05) affected the carbohydrates, starch (except at 60 and 80 °C), nitrogen, and protein content. The pH (except at 70 °C), total phenolics, and antioxidant activity decreased with an increase in drying temperatures. Inductively coupled plasma–optical emission spectrometry (ICP-OES) analysis revealed the increase in concentrations of majority minerals with incremental drying temperature. The microbial load of powdered seed kernel after 30 days of room temperature storage was within safe limits, as samples were devoid of food pathogens. Briefly, the study suggests HAD (at 70–80 °C) to convert mango kernels into stable powdered form for prolonged storage. The powdered kernels can be utilized in diversified food industry and as a feedstock (with safe storability, preserved bioactive, mainly carbon and nitrogen compounds) for biosynthesis of valuable metabolites via microbial fermentation route. Briefly, the study suggests the effectiveness of convective hot air drying (at 70–80 °C) for efficient drying and prolonged storage of stable powdered form mango peels (MP). Rabbit meat has outstanding nutritional characteristics—it is a lean meat with low fat, cholesterol and sodium content, with high-biological-value proteins, potassium, phosphorus, selenium, iron and vitamin B12 level. The dietary inclusion of natural bioactive compounds can improve the quality of rabbit meat. The present study evaluated the effect of enterocin 7420 (Ent 7420) and sage (Salvia officinalis) extract on the quality and mineral content of rabbit meat. A total of 96 Hyla rabbits (aged 35 days) were divided into E (Ent 7420; 50 µL/animal/d), S (sage extract; 10 µL/animal/d), E + S (Ent 7420 and sage in combination) and control (C) groups. Additives were administrated in drinking water for 21 days. A significant increase in meat iron (p < 0.01) content was noted; phosphorus and zinc levels were also elevated in experimental groups, compared with control data. Ent 7420 and sage treatment reduced the calcium and manganese (p < 0.01) contents. The physico-chemical traits of rabbit meat were not negatively influenced by treatment. Based on these results, diet supplementation, mostly with Ent 7420 but also in combination with sage, could enhance the quality of rabbit meat mineral, with a focus on its iron, phosphorus and zinc contents. Aside from their bioremediation roles, little is known about the food and feed value of earthworms. In this study, a comprehensive evaluation of the nutritional composition (proximate analysis and profiles of fatty acids and minerals) and techno-functional properties (foaming and emulsion stability and capacity) of earthworm (Eisenia andrei, sourced in New Zealand) powder (EAP) were investigated. Lipid nutritional indices, ω6/ω3, atherogenicity index, thrombogenicity index, hypocholesterolemic/hypercholesterolemic acid ratio, and health-promoting index of EAP lipids are also reported. The protein, fat, and carbohydrate contents of EAP were found to be 53.75%, 19.30%, and 23.26% DW, respectively. The mineral profile obtained for the EAP consisted of 11 essential minerals, 23 non-essential minerals, and 4 heavy metals. The most abundant essential minerals were potassium (8220 mg·kg−1 DW), phosphorus (8220 mg·kg−1 DW), magnesium (744.7 mg·kg−1 DW), calcium (2396.7 mg·kg−1 DW), iron (244.7 mg·kg−1 DW), and manganese (25.6 mg·kg−1 DW). Toxic metals such as vanadium (0.2 mg·kg−1 DW), lead (0.2 mg·kg−1 DW), cadmium (2.2 mg·kg−1 DW), and arsenic (2.3 mg·kg−1 DW) were found in EAP, which pose safety considerations. Lauric acid (20.3% FA), myristoleic acid (11.20% FA), and linoleic acid (7.96% FA) were the most abundant saturated, monounsaturated, and polyunsaturated fatty acids, respectively. The lipid nutritional indices, such as IT and ω-6/ω-3, of E. andrei were within limits considered to enhance human health. A protein extract derived from EAP (EAPPE), obtained by alkaline solubilisation and pH precipitation, exhibited an isoelectric pH of ~5. The total essential amino acid content and essential amino acid index of EAPPE were 373.3 mg·g−1 and 1.36 mg·g−1 protein, respectively. Techno-functional analysis of EAPPE indicated a high foaming capacity (83.3%) and emulsion stability (88.8% after 60 min). Heat coagulation of EAPPE was greater at pH 7.0 (12.6%) compared with pH 5.0 (4.83%), corroborating the pH-solubility profile and relatively high surface hydrophobicity (1061.0). These findings demonstrate the potential of EAP and EAPPE as nutrient-rich and functional ingredients suitable as alternative food and feed material. The presence of heavy metals, however, should be carefully considered.

Yacon (Smallanthus sonchifolius) is an ancient Andean crop, traditionally used for both food and medicinal purposes, which was first introduced to New Zealand in the 1980s. In recent years, there has been growing global interest in yacon due to its potential as a functional food, which could be related to its unique profile of bioactive compounds, including prebiotic compounds, such as fructooligosaccharides (FOS), and phenolic compounds, which may have a range of activities, including antioxidant ones. FOS are non-digestible prebiotic carbohydrates, providing low calorific value and a positive impact on gut microflora. Our objective was to conduct a comprehensive chemical analysis of New Zealand yacon concentrate (NZYC, a sweet syrup produced from juice extracted from New Zealand grown yacon roots). Analysis included proximate composition, mineral, sugar, phenolic, amino acid, and organic acid profiles as well as antioxidant activity. The major mineral identified in NZYC was potassium (658 ± 6 mg/100 g), with significant concentrations of phosphorus, calcium, magnesium, and iron also determined by microwave plasma atomic emission spectrometry. The FOS content of NZYC ranged from 17.6 ± 0.3 to 52.7 ± 0.8 g/100 g as determined by high-performance liquid chromatography (HPLC), coupled with an evaporating light scattering detector (ELSD). The total phenolic content of NZYC ranged from 565 ± 9 to 785 ± 43 mg gallic acid equivalents per 100 g by the Folin-Ciocalteu method. Chlorogenic acid and caffeic acid were quantified as the major phenolic compounds. The major amino acids quantified were L-arginine, L-glutamic acid, L-proline, L-aspartic acid, and asparagine. The major organic acids quantified were citric, malic, quinic, and fumaric acids. The antioxidant activity of NZYC was determined by the ferric-reducing antioxidant power (FRAP) assay, cupric ion-reducing antioxidant capacity (CUPRAC) assay, and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, and it was several times higher than both Manuka honey and goji berries by the basis of weight. These results support the classification of New Zealand yacon concentrate as a nutraceutical food product and its use in further development of novel food products.

The world population is projected to increase to 9.9 billion by 2050 and, to ensure food security and quality, agriculture must sustainably multiply production, increase the nutritional value of fruit and vegetables, and preserve genetic variability. In this work, an Apulian landrace of Cucumis melo L. called "Carosello leccese" was grown in a greenhouse with a soilless technique under light-emitting diodes (LEDs) used as supplementary light system. The obtained results showed that "Carosello leccese" contains up to 71.0 mg·g−1 dried weight (DW) of potassium and several bioactive compounds important for human health such as methyl gallate (35.58 µg·g−1 DW), α-tocopherol (10.12 µg·g−1 DW), and β-carotene (up to 9.29 µg·g−1 DW under LEDs). In fact, methyl gallate has antioxidative and antiviral effects in vitro and in vivo, tocopherols are well recognized for their effective inhibition of lipid oxidation in foods and biological systems and carotenoids are known to be very efficient physical and chemical quenchers of singlet oxygen. Finally, it was demonstrated that the LEDs' supplementary light did not negatively influence the biochemical profile of the peponids, confirming that it can be considered a valid technique to enhance horticultural production without reducing the content of the bioactive compounds of the fruits. Research background. Numerous factors affect the ripening of reduced-fat white cheese. The aim of this study is to investigate the influence of ripening environment (brine or vacuum plastic bags without brine) on the chemical composition, protein, fatty acid profile and mineral content as well as antioxidant properties of industrially produced reduced-fat white cheese. Experimental approach. A low-fat white cheese was manufactured on an industrial scale from milk that remained after the production of kajmak and ripened for 60 days at 4 °C after packaging in a polystyrene container with brine containing 6% salt or in vacuum-sealed polyethylene bags. The influence of ripening environment on proteolysis was monitored by the change of soluble nitrogen fractions as well as by sodium dodecyl sulphate–polyacrylamide gel electrophoresis of tris(hydroxymethyl) aminomethane-HCl extracts of cheese proteins under non-reducing conditions and water-soluble fractions under reducing conditions. An effect that ripening environment had on fatty acid and mineral content was also monitored. The change of antioxidant potential of the investigated cheese during ripening led to the change of iron(II) chelating ability, reducing power and free-radical scavenging activity. Results and conclusions. The ripening environment differently affected proteolysis, fatty acid composition, mineral profile and antioxidant properties of reduced-fat white cheese. White cheese ripened in brine had more intensive proteolytic changes than the cheese ripened in a vacuum, but also more intensive diffusion processes, especially between the 40th and 60th day of ripening. The brine-ripened cheese had higher values of water-soluble nitrogen content, but lower contents of trichloroacetic acid-soluble and phosphotungstic acid-soluble nitrogen than the vacuum-ripened cheese. Cheese ripened in brine had a lower content of almost all investigated macro- and microelements. After 60 days of ripening, in cheese ripened in brine only myristic (C14:0) and palmitic acid (C16:0) were detected, whereas in the vacuum-ripened cheese C10:0-C16:0 fatty acids dominated. Vacuum-ripened reduced-fat cheese had more favourable reducing power, while white brined reduced-fat cheese had better radical scavenging activity and iron(II) chelating activity. Novelty and scientific contribution. These results suggest significant influence of ripening conditions (immersion in brine or in vacuum-sealed polyethylene bags) on nutritive and functional properties of reduced-fat white cheese. Ripening in a vacuum has become a useful method for obtaining high-value reduced-fat white cheese.

The chemical and microbiological characteristics of filets of Spaurus aurata L. specimens fed with diets containing a Hermetia illucens meal (HIM) at the 25, 35, and 50%, as a partial replacement for fish meal (FM) were evaluated. The diets, formulated to satisfy the nutritional needs of fish, were isoenergetic (22 MJ/kg gross energy), isonitrogenous (43 g/100 g, a.f.), and isolipidic (19 g/100 g, a.f.). Seventy-two specimens were randomly killed after 186 days of growing trials. Then, the filets were analyzed for chemical profile, fatty acids, amino acids, minerals, and microbial flora. Data were subjected to statistical analysis. No significant differences were observed in chemical composition. The sum of polyunsaturated fatty acids (PUFAs) showed a similar content in the filets; eicosapentaenoic acid was similar in the filets of HIM0, HIM35%, and HIM50%, whereas docosahexaenoic acid was higher in filets of the HIM0 group. n3/n6 PUFA ratio and the sum of EPA + DHA showed a high value (p < 0.001) in filets of the group fed with FM. No significant difference was observed in thrombogenic index and hypocholesterolaemic/hypercholesterolaemic ratio in the groups; the atherogenic index showed a higher value (p = 0.001) in the HIM50% group. Indispensable amino acids showed some significant (p < 0.0001) differences in the groups; arginine and phenylalanine content was higher in the filets of fish fed with FM; isoleucine and valine content was higher in the filets of HIM50%; leucine, lysine and methionine content was lower in the filets of HIM35%; histidine content was lower in the filets of HIM25%; tryptophan content was lower in filets of the HIM50% group. EAA/NEAA ratio showed highest value in the filets of the group that received FM. The presence of HIM in the three diets kept chromium, manganese, iron, copper, zinc, and nickel levels lower than those recommended by various authorities. Ca/P ratio showed a higher level (p < 0.0001) in the group fed with FM than those fed with diets containing HIM. The insect meal in the diets did not influence the microbiological profile of fish. Use of HIM as an unconventional feed ingredient in Sparus aurata diet looks promising, although the quality of filets may be affected.
