Following our previous publications concerning the vitamin A and the vitamin C content of mothers' milk, cows' milk and cows' milk mixtures for infant feeding, the present paper concerns a corresponding investigation on canned milk.From three to six samples were obtained of each variety of imported canned milk obtainable in Batavia in the retail trade and their vitamin A and vitamin C content was determined, according to the method described previously. The milk was diluted in the manner indicated on the label as adapted to infants about 3 months old.It is not likely that in the preparation of canned milk there is any appreciable loss of vitamin A or of carotene, as heating has a destructive effect on vitamin A substances only when it is possible for oxygen to exercise its influence, which is avoided as far as possible in the process of canning milk.
