A surrogate is commonly used for process validations. The industry often uses the target log cycle reduction for the test (LCRTest) microorganism (surrogate) to be equal to the desired log cycle reduction for the target (LCRTarget) microorganism (pathogen). When the surrogate is too conservative with far greater resistance than the pathogen, the food may be overprocessed with quality and cost consequences. In aseptic processing, the Institute for Thermal Processing Specialists recommends using relative resistance (DTarget)/(DTest) to calculate LCRTest (product of LCRTarget and relative resistance). This method uses the mean values of DTarget and DTest and does not consider the estimating variability. We defined kill ratio (KR) as the inverse of relative resistance. The industry uses an extremely conservative KR of 1 in the validation of food processes for low-moisture foods, which ensures an adequate reduction of LCRTest, but can result in quality degradation. This study suggests an approach based on bootstrap sampling to determine conservative KR, leading to practical recommendations considering experimental and biological variability in food matrices. Previously collected thermal inactivation kinetics data of Salmonella spp. (target organism) and Enterococcus faecium (test organism) in Non-Fat Dried Milk (NFDM) and Whole Milk Powder (WMP) at 85, 90, and 95°C were used to calculate the mean KR. Bootstrapping was performed on mean inactivation rates to get a distribution of 1000 bootstrap KR values for each of the treatments. Based on minimum temperatures used in the industrial process and acceptable level of risk (e.g., 1, 5, or 10% of samples that would not achieve LCRTest), a conservative KR value can be estimated. Consistently, KR increased with temperature and KR for WMP was higher than NFDM. Food industries may use this framework based on the minimum processing temperature and acceptable level of risk for process validations to minimize quality degradation.

Wild blueberry (WBB) powder can be added to the formulation of foods to encourage consumption of health-promoting polyphenolics, but the stability of polyphenolics throughout storage is important. We determined the stability of polyphenolics in five products (ice pop, oatmeal bar, graham cracker cookie, juice, and gummy product) prepared with WBB powder. Samples stored at 21 °C, 4.4 °C, or -20 °C (ice pops only) were analyzed at 0, 2, 4, 6, and 8 weeks for polyphenolic content and percent polymeric color. Total anthocyanins decreased over storage and storage temperatures in all products. However, the ice pop and the refrigerated juice both retained over 90% of their initial total anthocyanin content. The refrigerated oatmeal bar also showed good retention of anthocyanins (86%), but the gummy product retained only 43% and 51% when stored at 4.4 °C or 21 °C, respectively. The lower amount of polyphenolic compounds recovered in the gummies stored at 4.4 °C compared to 21 °C may be attributed to reduced extraction efficiency as a result of gel hardening at refrigerated temperature. Chlorogenic acid and flavonols were generally more stable than anthocyanins throughout storage.

ABSTRACT: As the demand for poultry meat continues to rise, industry production is constantly challenged with obtaining consumer needs. Integrators have answered this increasing demand by improving the growth rate of broilers allowing for increased production efficiently. The resulting broiler produces higher yields and a larger quantity of fresh poultry to satisfy consumer needs. However, this increase in efficiency has cost integrators as new quality issues continue to manifest through global production. Therefore, the objective of the current experiment was to evaluate the effect of genetic strain (standard and high yielding) and target weight on meat quality attributes such as pH, water holding capacity (WHC), and tenderness, alongside meat quality defects such as breast and tender myopathies. In the current study, 1,800 broilers from 4 commercial strains (2 high breast yielding (HY) and 2 standard yielding (SY) were raised sex separate to evaluate meat quality trends over time at 6 previously defined market weights. Birds were processed at weights ranging from 2,043 to 4,313 g in 454 g increments. HY strains produced higher breast and tender yields than those of SY strains (P < 0.05). There was an increase in breast and tender yield as target weight increased (P < 0.05) for both HY and SY strains. Differences were observed between strains for all fillet dimensions (P < 0.05); however, these measurements increased as target weight increased as expected. Woody breast (WB) had a higher severity (P < 0.05) in HY strains over SY strains, for both males and females. Differences were observed in white striping (WS; P < 0.05) for females in both strains, but no differences were observed in males. A main effect of target was noticed for both WB and WS (P < 0.05), expressing increased severity as target weight increased. Shear values were influenced more by target weight (P < 0.05), but inconsistent differences were observed between HY and SY groups. Meullenet-Owens Razor Shear (MORS) energy values increased slightly as target weights increased (P < 0.05) from 2,951 to 4,313 g in both males and females, but differences were minor and inconsistent with the smaller carcass weights. The MORS peak counts generally increased as target weight increased for both sexes. While strain had minimal effects on meat quality attributes, processing weight had a greater influence on quality, specifically muscle myopathies, WHC, and shear properties.

ABSTRACT: In recent times, meat quality has become a key aspect of poultry production. In the current study, 2,400 sex separate broilers from 4 commercial strains were placed in 6 replications to evaluate various meat quality characteristics when grown to 2 market weights. Broilers were fed 1 of 2 diets with varying degrees of amino acid inclusion to evaluate meat quality of broiler raised on varying planes of nutrition. Birds were processed to meet 2 specified target weights (2.5 and 3.8 kg) representing small bird and big bird debone markets in the United States, respectively. Birds were processed using commercial methods, deboned at 3-h postmortem, and meat quality was assessed. Myopathies (woody breast, white striping, spaghetti meat, along with tenderloin quality), fillet dimensions, color, water-holding capacity (e.g., drip loss, cook loss), and Meullenet Owens Razor Shear was determined. Data were analyzed using the Mixed Model platform of JMP Pro 15.2 (SAS Institute, Cary, NC). Diet had no effect (P > 0.05) on the key quality responses; data were then pooled resulting in main effects of sex, strain, and target weight (noted as carcass size). On the day of processing, high yielding (HY) strains produced higher breast and tender yields (P < 0.05) when compared to standard yielding (SY) strains. In addition, and as expected, females exhibited higher breast and tender yields (P < 0.05) than males. However, males had significantly thicker (P < 0.05) and longer (P < 0.05) fillets, higher incidences (P < 0.05) of white striping, and higher (P < 0.05) cook loss when compared to females. Differences were also observed in tenderness as SY strain A produced the lowest shear values, whereas SY strain B produced the highest shear values across parameters (P < 0.05). SY strains in the small bird (SB) market performed better than SY strains in the big bird (BB) market as indicated by lower incidences of breast and tender myopathies white striping, woody breast, spaghetti meat, woody-like tender, and tender feathering and improved quality attributes (P < 0.05). Similar trends were observed (P < 0.05) in HY strains as SB carcasses produced a better overall product than BB. Differences in carcass size directly impacted quality (P < 0.05) as SB markets showed improvements in most parameters assessed, but broilers representing BB markets had greater breast yield. Although strain had minimal impacts on quality measures, carcass size, and sex had a greater impact on muscle myopathies, water-holding capacity, and shear properties.

SUMMARY: In the present experiment, a Thr fermentation product (FP) (75% minimum digestible Thr) was evaluated as a replacement for crystalline L-Thr (98.5% minimum digestible Thr) as a source of digestible Thr and other nutrients to support broiler performance (0–48 d) and processing characteristics. Five phase-fed diets included 1) a positive control (PC) diet containing L-Met, L-Lys•HCl, and L-Thr, 2) a reduced protein control (RPC) diet with added L-Val, L-Ile, and L-Arg, 3) a negative control (NC) identical to the RPC except that cellulose was added at the expense of L-Thr, 4) a RPC diet with Thr-FP used in place of L-Thr with only accounting for digestible Thr and energy contributions of the FP (TFP), and 5) a RPC diet with Thr-FP used in place of L-Thr and accounting for the full nutrient matrix of the FP (TFP-FM). Overall, broilers fed the RPC diet had similar growth performance compared to birds fed the PC diet, whereas broilers fed the NC diet had reduced BW gain and increased FCR compared to the RPC-fed birds. Birds fed either the TFP or TFP-FM diet had similar growth performance to the RPC-fed birds. At processing, broilers fed the RPC diet had similar parts yields, excluding wings, to the PC group. Parts yields for the Thr-FP and NC groups were similar to the RPC group. These data confirmed the importance of adequate dietary Thr concentration in maximizing broiler performance and that Thr provided by the Thr-FP supported equivalent performance to L-Thr.

Background/objectives To test the diagnostic ability of two combined practical markers for elevated urine osmolality (underhydration) in free-living adults and children. Subjects/methods One hundred and one healthy adults (females n = 52, 40 [plus or minus] 14 y, 1.70 [plus or minus] 0.95 m, 76.7 [plus or minus] 17.4 kg, 26.5 [plus or minus] 5.5 kg/m.sup.2) and 210 children (females = 105, 1.49 [plus or minus] 0.13 m, 43.4 [plus or minus] 12.6 kg, 19.2 [plus or minus] 3.2 kg m.sup.-2) collected urine for 24-h. Urine was analyzed for urine osmolality (UOsm), color (UC), while the number of voids (void) was also recorded. Receiver Operating Characteristic (ROC) analysis was performed for UC, void, and combination of UC and void, to determine markers' diagnostic ability for detecting underhydration based on elevated UOsm (UOsm [greater than or equal to] 800 mmol kg.sup.-1). ABSTRACT: This experiment compared the effects of 2 chronic heat stress (HS) models, constant (coHS), and cyclic (cyHS), on broiler performance, carcass characteristics, and meat quality. A total of 720 male chicks from a Cobb 500 line were placed in 12 environmentally controlled chambers divided into 2 pens of 30 birds. Before the experimental HS models were applied, chamber temperatures were gradually decreased from 32°C at placement to 24°C on d 20. From 20 to 41 d, 4 chambers were set to 35°C (coHS), and 4 chambers were set to 35°C for 12 h and 24°C for the next 12 h (cyHS). Four thermoneutral chambers were maintained at 24°C with half of the birds pair-fed to equalize feed intake (FI) with coHS birds (TN-coPF) and half fed ad-libitum (TN-al). From 20 to 41 d, FI and BW gain (BWG) of cyHS, coHS and TN-coPF birds were decreased (P < 0.001), whereas feed conversion ratio (FCR) was increased (P < 0.001) for coHS and TN-coPF birds compared with TN-al birds. The overall BWG and FCR of coHS birds were lower (P < 0.001) than TN-coPF birds. Both HS models reduced (P < 0.001) carcass weight, pectoralis major yield, total breast meat yield, and increased (P < 0.001) wing yield relative to TN-al birds, with each of these measurements more impacted by coHS than by cyHS. Pair-fed birds had lower (P < 0.001) fat pad and a higher total breast meat yield than coHS birds. They also had the lowest (P < 0.001) pectoralis major ultimate pH and yellowness, and these parameters were lower (P < 0.001) for coHS birds than for TN-al birds. Both HS models reduced (P < 0.001) the incidence of woody breast and white striping. Thus, these data indicate that the detrimental effects of HS cannot be entirely explained by reduced FI and that HS per se affects metabolic pathways associated with muscle and lipid accretion in broilers.

Potential applications of chicken meat with the woody breast (WB) condition in further processed products could provide processors with alternatives to deal with this meat quality problem. The objective of this study was to evaluate the effect of the use of broiler breast fillets at varying degrees of WB severity and proportions on instrumental texture characteristics of chicken patties. A total of 54 breast fillets were collected from broilers processed as per commercial practices, previously classified based on tactile evaluation in 3 WB categories (normal [NOR]; mild [MIL], and severe [SEV]). Instrumental compression analysis was performed to validate subjective scores. Nine treatments with 6 replicates of chicken patties were prepared: 100% NOR (T1), 67% NOR + 33% MIL (T2), 67% NOR + 33% SEV (T3), 33% NOR + 67% MIL (T4), 33% NOR + 67% SEV (T5), 100% MIL (T6), 67% MIL + 33% SEV (T7), 33% MIL + 67% SEV (T8), and 100% SEV (T9). Instrumental texture profile analysis along with cook loss, color, and dimensional changes was evaluated in cooked patties. Compared with normal samples and excluding treatments T2 and T4, hardness, springiness, and chewiness values of chicken patties decreased (P 26%, P 16%, P 2) than normal patties. These data suggest that the potential use of WB meat in chicken patties is associated with the degree of WB severity and the incorporation rate. The inclusion of WB fillets at high levels into this product is not recommended owing to their poor functionality. However, feasible mixtures of normal breast fillets with those affected by WB myopathy at relatively low proportions could be considered by processors as an alternative in commercial chicken patty formulations.

Four studies were conducted on Cobb 700 broilers to evaluate the dietary protein and any maternal effects on live production and processing parameters. Day-old Cobb 700 broiler breeder pullets were reared to conform to 2 different BW curves (control BW and increased BW) with 8 replicate pens per treatment. Birds were fed common diets from 1 d of age until first egg (24 wk). At 24 wk, 12 pens of each pullet treatment were given different amino acid (AA) diets (low = 14% CP, high = 15% CP). The performance of female and male progeny from 32 and 45 wk hens were evaluated on low AA and high AA density diets. The 4 progeny trial designs were identical factorial 2 × 2 × 2 designs, with 2 pullet BW curves (control BW and increased BW), 2 dam CP diet levels (low and high), and 2 progeny CP diets (low and high), with 6 replicates each containing 18 birds, for a total of 108 broiler progeny per treatment. Broiler chickens on the higher AA density feed exhibited consistent improvement in mid-growth BW and FCR and white meat yield percentage. Some maternal effects were noted, including increased carcass yield in female broilers from 32 wk old hens. There were 3-way interactions of pullet BW × hen dietary AA × progeny dietary AA treatments for female progeny carcass yield (from 32-week-old hens) and male tender yield (from 45-week-old hens). There were 2-way interactions of pullet BW x hen dietary AA treatments effect on female and male progeny drumstick yield from 32-week-old hens, pullet BW × progeny dietary AA treatments effect on male 27 d BW from 32-week-old hens, and hen dietary AA × progeny dietary AA treatments effect on male thigh yield from 45-week-old hen. The epigenetic effects of maternal pullet BW and dietary AA treatments were seen in processing yields suggesting, the need of dietary CP changes of the progeny.

Consumer concern for broiler welfare has increased interest in chicken from slower growing (SG) broiler strains. Broilers from SG strains take longer to reach market weight, which may necessitate differences in management practices, such as stocking density. This study evaluated the effects of 2 stocking densities on production performance, body conformation, and welfare of broilers from 2 strains. Broilers from strains that reach market weight at age 42 D (CONV; N = 284) and at 63 D (SG; N = 284) were exclusively stocked into pens at a density of either 29 kg/m2 or 37 kg/m2. Birds were provided the same starter, grower, and finisher diets with diet phase changes occurring when SG bird body weight (BW) matched CONV. Live BW, body length, pelvic width, shank length, shank width, keel length, breast width, and breast depth were collected at 4 phases: Phase 1—chick placement, Phase 2—starter, Phase 3—grower, and Phase 4—finisher. At Phase 4, footpad dermatitis (FPD), hock burn (HB), and toe damage (TD) were scored. Feed conversion ratio (FCR) and mortality for each pen were recorded throughout the study. Stress and leg weakness are detrimental to broiler production, health, and welfare. Traditional methods to evaluate stress may be stressful to the bird because they are invasive and require handling and restraint. Two studies examined the effects of light intensity and flooring on the following in broilers: 1) traditional methods for assessing stress using heterophil-to-lymphocyte ratios and serum corticosterone (CORT) concentrations, 2) noninvasive measures of stress from infrared thermography (IRT) eye and beak surface temperatures, and 3) latency-to-lie (LTL) test times of birds tested individually and in groups of 5. Day-of-hatch male broiler chicks were placed into 6 pens (N = 120 chicks/pen). At 1 wk, pens were allocated to 3 light intensity treatments (2, 5, or 10 lux). At 4 wk, half of the birds from each pen were moved to a pen with wire flooring and the same light intensity. At 1, 4, 5, and 8 wk, blood samples were collected and IRT images of the heads of 5 clinically healthy broilers from each pen were captured. In study 2, IRT images of the heads of birds that became lame in the wire flooring pens were taken. There were no treatment effects on the LTL times of birds tested in groups or individually (P > 0.05). Summary: The Cobb MV × Cobb 700 male broiler was evaluated for BW and feed conversion ratio (FCR) when fed diets of increasing levels of digestible lysine (Lys) and ME within each growing phase (0–12 D, 12–26 D, 26–35 D, and 35–55 D). Male BW was highest (P < 0.0001) at 12 D of age for birds fed 1.24% digestible Lys and 3,194 ME vs. birds fed 1.20% digestible Lys and 3,084 ME. Male BW were also highest (P < 0.0001) at 26 D of age for birds fed 1.23% digestible Lys and 3,194 ME. However, birds were able to compensate with increased FCR (P < 0.0001) when fed diets with lower levels of digestible Lys and ME from 26 to 55 D to achieve similar BW (P > 0.05) compared with the birds on the highest level and duration of digestible Lys and ME. The control group, that is, industry standard digestible Lys and ME levels, had the lowest levels of digestible Lys and ME for the duration of the experiment and had the highest (P < 0.0001) FCR and the lowest (P < 0.0001) BW. The results for BW and FCR suggest that the digestible Lys needs are higher than previously established. More investigations within each growing phase should be performed to better define the requirements of the Cobb MV × Cobb 700 broiler for digestible Lys.

Summary: The percentage of broiler complex processing plants slaughtering big birds (e.g., those greater than 3.5 kg) has steadily increased in the United States the past 15 yr. Precision amino acids in dietary formulation is key as the growing cycle for these birds is extended, as well as total feed consumed. Furthermore, broilers reared for big-bird slaughter plants are destined for specialty breast meat yield portioning, making digestible Lys one of the key nutrients in feed formulation. This work assesses dietary Lys levels in graduations across feed phases to 53 D in Cobb MV × Cobb 700 female and male broilers. Optimizing digestible Lys in the starter phase (to 14 D) occurred between 1.26 and 1.31%. On average, dietary Lys intake per bird needed to optimize live performance, and white meat yield was higher in male birds (64 g) than in female birds (58 g). Optimization of Lys amino acid density in the Cobb MV × Cobb 700 broilers resulted in increased white meat yields in larger broilers, resulting in increased fillet weights per bird with white striping and woody breast being unaffected.

Background/Objectives While daily hydration is best assessed in 24-h urine sample, spot sample is often used by health care professionals and researchers due to its practicality. However, urine output is subject to circadian variation, with urine being more concentrated in the morning. It has been demonstrated that afternoon spot urine samples are most likely to provide equivalent urine concentration to 24-h urine samples in adults. The aim of the present study was to examine whether urine osmolality (UOsm) assessed from a spot urine sample in specific time-windows was equivalent to 24-h UOsm in free-living healthy children. Subjects/Methods Among 541 healthy children (age: 3-13 years, female: 45%, 77% non-Hispanic white, BMI:17.7 [plus or minus] 4.0 kg m.sup.-2), UOsm at specific time-windows [morning (0600-1159), early afternoon (1200-1559), late afternoon (1600-1959), evening (2000-2359), overnight (2400-0559), and first morning] was compared with UOsm from the corresponding pooled 24-h urine sample using an equivalence test. Results Late afternoon (1600-1959) spot urine sample UOsm value was equivalent to the 24-h UOsm value in children (P < 0.05; mean difference: 62 mmol kg.sup.-1; 95% CI: 45-78 mmol kg.sup.-1). The overall diagnostic ability of urine osmolality assessed at late afternoon (1600-1959) to diagnose elevated urine osmolality on the 24-h sample was good for both cutoffs of 800 mmol kg.sup.-1 [area under the curve (AUC): 87.4%; sensitivity: 72.6%; specificity: 90.5%; threshold: 814 mmol kg.sup.-1] and 500 mmol kg.sup.-1 (AUC: 83.5%; sensitivity: 75.0%; specificity: 80.0%; threshold: 633 mmol kg.sup.-1). Conclusion These data suggest that in free-living healthy children, 24-h urine concentration may be approximated from a late afternoon spot urine sample. ABSTRACT: Stress and lameness negatively affect the health, production, and welfare of broilers. Bacterial chondronecrosis with osteomyelitis (BCO) is a leading cause of stress and lameness in commercial broilers. External changes in skin temperature related to changes in blood flow can be detected with infrared thermography (IRT), offering a noninvasive tool to assess the health of animals. This study compared physiological and noninvasive measures of stress and lameness in clinically healthy and lame male broiler chickens between 25 and 56 d. Birds were raised in pens within separate environmental chambers containing either litter flooring (sound) or wire flooring, with the latter established to induce BCO lameness (lame). Physiological and noninvasive measures of stress and lameness were collected: body weight, (BW), relative bursa weight, core body temperature, corticosterone (CORT) concentrations in serum and feathers, surface temperatures of the head (eye and beak) and leg (hock, shank, and foot) regions by infrared thermography (IRT), leg blood oxygen saturation (leg O2), and BCO lesion severity scores of tibial head necrosis (THN) and femoral head necrosis (FHN). Lame birds exhibited greater FHN and THN lesion severities, core body temperatures, and serum CORT (P < 0.05), but had lower BW, relative bursa weight, leg O2, and IRT surface temperatures of the beak, hock, shank, and foot compared with sound birds (P < 0.05). The difference in THN lesion severity between sound and lame birds decreased with age. Linear relationships between leg O2 with IRT leg surface temperatures were positive and negative between leg O2 with BCO lesion severity (P < 0.05). There were negative correlations between serum CORT with hock, shank and foot temperatures (P < 0.001), indicating that BCO is stressful. These results indicate that birds lame from BCO are stressed, have reduced oxygen saturation of blood in their legs, and that IRT surface temperatures can be used as noninvasive indicators of stress and lameness in broilers.

The purpose of this investigation was to assess the validity and reliability of a seven-day water frequency questionnaire (TWI-FQ) to estimate daily total water intake (TWI) in comparison to a water turnover objective reference value via deuterium oxide (D2O). Data collection occurred over 3 weeks, with a wash-out period during week two. Healthy adults (n = 98; 52% female; 41 ± 14 y; BMI, 26.4 ± 5.5 kg·m−2) retrospectively self-reported consumption frequencies of 17 liquids and 35 foods with specified volumes/amounts for weeks one and three via TWI-FQ. Standard water content values were utilized to determine the volume of water consumed from each liquid and food for calculation of mean daily TWI for each week. Diet records were completed daily during week two to estimate metabolic water production. To assess validity of the TWI-FQ, participants consumed D2O at the start of each week and provided urine samples immediately before ingestion, the following day, and at the end of the week to calculate water turnover. Metabolic water was subtracted from water turnover to estimate TWI. TWI-FQ validity was assessed via Bland-Altman plot for multiple observations. Reliability was assessed via intraclass correlation and Pearson's correlation between weeks. Quercetin (QUE) is a well-known natural product that can exert beneficial properties on human health. However, due to its low solubility its bioavailability is limited. In the present study, we examine whether its formulation with two cyclodextrins (CDs) may enhance its pharmacological profile. Comparative interaction studies of quercetin with 2-hydroxyl-propyl-β-cyclodextrin (2HP-β-CD) and 2,6-methylated cyclodextrin (2,6Me-β-CD) were performed using NMR spectroscopy, DFT calculations, and in silico molecular dynamics (MD) simulations. Using T1 relaxation experiments and 2D DOSY it was illustrated that both cyclodextrin vehicles can host quercetin. Quantum mechanical calculations showed the formation of hydrogen bonds between QUE with 2HP-β-CD and 2,6Μe-β-CD. Six hydrogen bonds are formed ranging between 2 to 2.8 Å with 2HP-β-CD and four hydrogen bonds within 2.8 Å with 2,6Μe-β-CD. Calculations of absolute binding free energies show that quercetin binds favorably to both 2,6Me-β-CD and 2HP-β-CD. MM/GBSA results show equally favorable binding of quercetin in the two CDs. Fluorescence spectroscopy shows moderate binding of quercetin in 2HP-β-CD (520 M−1) and 2,6Me-β-CD (770 M−1). Thus, we propose that both formulations (2HP-β-CD:quercetin, 2,6Me-β-CD:quercetin) could be further explored and exploited as small molecule carriers in biological studies.

Woody breast (WB) condition causes significant economic losses to the global poultry industry, and the lack of an objective and fast tool to identify this myopathy is a contributing factor. The aim of this study was to determine if there are broiler carcass conformation changes that can be used to identify WB characteristics using image analysis. Images of 8-wk-old male broiler carcasses (n = 544) of high breast-yielding strains were captured before evisceration, which were processed and analyzed using ImageJ software. Image analysis could be an objective and rapid method to identify woody breast (WB) myopathy and benefit the global poultry industry. Woody breast (WB) is a major myopathy in broilers characterized by hardness of the breast fillet and can be evaluated by human palpation with a severity scale of 0 (normal) to 3 (severe). The objective of this study was to determine fillet dimensions and meat quality factors that are associated with WB scores that may potentially be used for sorting purposes. A total of 206 broiler breast fillets (deboned at 3 h postmortem) were collected and scored for WB.Thickness and length (overall, cranial, caudal, and keel regions) of the Pectoralis major (whole butterfly) were measured with a caliper. Compression force (CF), pH, and color were measured. The right side of the butterfly fillet was frozen at −20°C for 48 h and thawed for 24 h, and then CF was measured along with cook loss, Meullenet-Owens Razor Shear, and blunt Meullenet-Owens Razor Shear. Pearson correlation coefficients and nominal logistic regression were determined.Measurement responses were compared for 4 categories of WB. The keel length measurement on the breast showed no difference (P > 0.05). However, the thickness was moderately correlated with WB score (r = 0.67) and could differentiate between the scores. In addition, CF of right side was higher than left side of fillets (P < 0.05). Freezing/storage significantly decreased (P < 0.05) CF of thawed fillets compared to chilled (nonfrozen) fillets. Cook loss increased (P < 0.05) as severity for WB increased. Peak counts for Meullenet-Owens Razor Shear and blunt Meullenet-Owens Razor Shear were higher (P < 0.05) for the severe compared to the lower levels of WB severity. In conclusion, meat quality differences were evident among the WB categories, differences in CF were observed between right and left fillets, and freezing/storage decreased hardness of fillets. Breast fillet dimensions along with L* value may potentially be used to identify WB, and this model of prediction of WB could be used in the industry to select the different WB categories in the development of sorting methods.

Background and Objectives: Rice milling involves applying forces to remove bran from brown rice to produce milled rice. The physical and chemical properties of a rice kernel may affect both the amount of bran removed during milling and the amount of head rice yield (HRY) produced, which is a determinant of crop value. This study investigated bran thickness and bran chemical composition as factors that influence bran removal and HRY as a result of milling. Findings: The results showed that brown rice kernels with initial higher surface lipid contents (SLCs) required longer milling times to achieve 0.4% SLC, but the longer milling times did not translate into lower HRYs or higher bran yields. Bran chemical composition had a more significant impact on the milling characteristics than bran thickness. Arabinoxylans had the greatest impact on HRY, followed by lipids and proteins. Conclusions: Bran thickness did not have a significant impact on the milling time, bran yield, or HRY. There was significant interaction between arabinoxylans and proteins on HRY and bran yield, which indicates the probability of crosslinking between proteins and arabinoxylans. Significance and Novelty: This study demonstrates the importance of rice bran chemical components and their interactions in terms of rice milling quality, rather than their physical properties.
