This article presents the development, implementation and results of the project “An interdisciplinary approach to the treatment of overweight children” under the name “My Challenge” camp. It is a 2-week multidisciplinary programme involving a physician, a dietitian, a psychologist, an occupational therapist or physiotherapist and a kinesiologist. The children stay in camp for 2 weeks and are actively involved in the daily preparation of healthy meals, participate in cooking workshops and interactive nutrition lessons, and are active outdoors throughout the programme.

3. Effect of Varietal Differences and Nixtamalization Conditions on the Textural, Rheological, and Nutritional Properties of Corn (Zea mays)–Based Masa Flour: Kassaï and Atp-Y Corn Varieties.

Nixtamalization is a process used in the production of tortillas. This process offers many advantages, such as improving the rheological, nutritional, and textural properties of the masa. This process is carried out under different steps which affect the quality of the final product such as the cooking and soaking conditions and the quantity of ash. In addition, the fragility of the masa makes the tortillas brittle. The present work was initiated with the aim of determining the nixtamalization conditions that would improve the textural, rheological, and nutritional properties of masa. The response surface methodology, using the central composite design was applied to three factors including the ash content and cooking and soaking times, and the responses evaluated were the adhesiveness, cohesion, final viscosity, and gelatinization temperature of masa obtained from two varieties of maize (Atp-Y and Kassaï). The optimums masa flours obtained were characterized using standard methods. Results showed that, the masa made from Kassaï variety needed a cooking time of 51.21 min and soaking time of 16.10 h in the presence of 0.80 g of ash. For the Atp-Y variety, the conditions included a cooking time of 49.17 min and a soaking time of 23.4 h in the presence of 0.24 g of ash. The responses obtained showed an adhesiveness of 0.10 kg/f and 0.05 kg/f, cohesion of 1.08 kg/f and 1.23 kg/f, final viscosity of 1504.80 cP and 1328.30 cP, gelatinization temperature 73.50 °C and 71.50 °C, and finally retrogradation 435.50 cP and 316 cP, respectively, for Kassaï and Atp-Y. Chemical characterization of the optimum masa showed that the white masa had a high protein content (10.50%), carbohydrates (71.70%), and fiber (2%) while the yellow masa presented the highest lipid content (5.47%). These finding demonstrated that Kassaï (white) maize‐masa flour obtained in optimal conditions can be recommended for the production of good quality tortillas because tortillas made with this masa are less crumbly and more elastic. Organophosphorus and carbamate Insectiside is common in Asia–Pacific region consisting of 63% of the Global death. Organophosphorus and Carbamate poisoning can lead into different complications in the respiratory,digestive,neurological aspects and maybe fatal in certain cases.Besides medical management of the same,early rehabilitation is also required to manage different kinds of neurological aspects caused due to Organophosphorus and carbamate poisoning. The study was done to introspect the early intervention in swallowing and speech therapy in organophosphorus and carbamate poisoning individual,as a part of management besides medical intervention. A 19 years old female reported to the hospital with history of consuming organophos and carbamate insecticide with the intention of self harming causing cardiac arrest and as diagnosed as Flaccid Dysarthria with Oro-Pharyngeal Dysphagia when assessed with diagnostic tools respectively. Early speech and swallowing intervention was provided and introspected using MASA which showed improvement in scores during the therapeutic intervention and was statistically analysed using linear regression analysis. The result showed the improvement in MASA scores (the slope of the best fit) and proved that MASA scores improved significantly (slope = 14.3, p < 0.05) over time as the therapy sessions proceeded. The regression model was also significant (p < 0.05). The motor-speech therapeutic intervention provided improvement in the kinematics of oro-motor skills along with improvement in intelligibility of speech. This study concludes that early intervention in managing speech and swallowing abilities in Dysarthria and Dysphagia is helpful besides medical intervention in such cases. [ABSTRACT FROM AUTHOR]

6. Surgimiento, desarrollo y privatización del sector automotriz paraestatal mexicano: DINA, MASA y VAM, 1946-1989.

- Abstract
This work focuses on the historical analysis of the Mexican parastatal automotive sector made up of three companies: Diesel Nacional, DINA, Mexicana de Autobuses, masa and Vehiculos Automotores Mexicanos, VAM, the periodicity of the study is the second half of the 20th century, which has to do with the four decades of the import substitution model and the transition to the free market economy. In that sense, the work focuses on pointing out the emergence, development and conclusion of the Mexican public automotive sector, and giving an account of how the projects were created, that is, which actors and institutions participated in the birth of these three public companies and under what conditions they occurred. In addition to this, a qualitative methodology will be used, as well as the use of primary sources from the General Archive of the Nation, agn, highlighting the DINA funds, the Ministry of Energy, Mines and Parastatal Industry, SEMIP and presidents that have been complemented with secondary sources. The originality and value of the work is determined by the few studies that exist on the parastatal automotive sector as a whole. The findings show that the Mexican automotive parastatal sector went through periods of intermittency in its historical processes: ups and downs in terms of production, sales, profits and losses, which led those in charge of the country's economy to make the decision to sell. this sector. The above was also due to a certain degree of technological obsolescence in companies, the economic crisis of the 1980s and the change from the endogenous industrial model to another that prioritized economic openness and foreign trade. 7. Evaluation of Psychometric Proprieties of Mann Assessment of Swallowing Ability (MASA) in Italian Language: A Cross-Sectional Study.

The aim of this cross-sectional study was to translate, culturally adapt, and evaluate the psychometric properties of the Italian version of the Mann Assessment of Swallowing Ability (MASA) in post-stroke individuals. The original MASA scale was translated and culturally adapted from English to Italian following the international guidelines. The internal consistency and test–retest reliability of the MASA-IT were assessed, and its concurrent validity was examined through Pearson correlation coefficients with the Italian versions of two established gold standard scales for dysphagia assessment: the Dysphagia Outcome Severity Scale (DOSS) and the De Pippo Test—Three Oz Water Swallow. The MASA-IT was administered to 78 participants. The items demonstrated excellent internal consistency, with Cronbach's alpha ranging between 0.86 and 0.89. The interclass correlation coefficient was 0.98 for inter-rater reliability and 0.99 for intra-rater reliability, indicating high reproducibility. Regarding concurrent validity, the MASA-IT showed a strong direct correlation with the DOSS scale (r = 0.949, p = 0.01) and an inverse correlation with the De Pippo Test (r = −0.783, p = 0.01), confirming its good concurrent validity. The Italian version of the Mann Assessment of Swallowing Ability (MASA-IT) is a reliable and valid tool for assessing swallowing ability in post-stroke patients. Background: muscle mass (MM) plays an important role in the physical function of hemodialysis patients; however, muscle mass measurement can be unreliable and expensive. In contrast, the measurement of physical function (PF) is simple and inexpensive and may serve as an alternative. The aim of this study was to correlate the measurement of MM by computed tomography (CT) with physical function measurements and physical activity (PA) levels in HD patients. Methods: this was a cross-sectional study that included 38 HD patients from a single HD clinic. Each participant had a CT scan to measure mid-thigh muscle mass. Physical function tests were assessed using the six-minute walk test (SMWT), handgrip strength (HGS) test, 5 x sit-tostand test (STS5), timed up and go test (TUGT) and Short Physical Performance Battery (SPPB), while physical activity levels were measured using the Godin-Shephard leisure-time physical activity questionnaire. Correlation analysis was used to examine the relationship between variables. Results: handgrip strength was strongly positively correlated with thigh muscle area (r = 0.656, p ≤ 0.001) and weakly correlated with arm muscle area (r = 0.396, p = 0.002), SMWT (r = 0.373, p = 0.004), SPPB (r = 0.269, p = 0.041) and physical activity (r = 0.323, p = 0.013). There was also a trend for an inverse correlation between handgrip strenght and TUGT (r = -0.235, p = 0.076). Positive correlations were found between the thigh muscle area and the SPPB (r = 0.339, p = 0.009) and PA (r = 0.293, p = 0.025), while there was a trend for an inverse correlation between thigh muscle area and STS5 (r = -0.256, p = 0.052). Conclusion: several measures of PF and strenght were correlated with objectives measurements of MM, thus provide options for low-cost measurements related to muscle mass. [ABSTRACT FROM AUTHOR]

9. Advancing stroke patient care: a network meta-analysis of dysphagia screening efficacy and personalization.

Introduction: The increasing incidence of stroke globally has led to dysphagia becoming one of the most common complications in stroke patients, with significant impacts on patient outcomes. Accurate early screening for dysphagia is crucial to avoid complications and improve patient quality of life. Methods: Included studies involved stroke-diagnosed patients assessed for dysphagia using bedside screening tools. Data was sourced from Embase, PubMed, Web of Science, Scopus, and CINAHL, including publications up to 10 December 2023. The study employed both fixed-effect and randomeffects models to analyze sensitivity, specificity, positive predictive value (PPV), and Negative Predictive Value (NPV), each with 95% confidence intervals. The random-effects model was particularly utilized due to observed heterogeneity in study data. Results: From 6,979 records, 21 studies met the inclusion criteria, involving 3,314 participants from 10 countries. The analysis included six assessment tools: GUSS, MASA, V-VST, BSST, WST, and DNTA, compared against gold-standard methods VFSS and FEES. GUSS, MASA, and V-VST showed the highest reliability, with sensitivity and specificity rates of 92% and 85% for GUSS, 89% and 83% for MASA, respectively. Heterogeneity among studies was minimal, and publication bias was low, enhancing the credibility of the findings. Conclusion: Our network meta-analysis underscores the effectiveness of GUSS, MASA, and V-VST in dysphagia screening for stroke patients, with high sensitivity and specificity making them suitable for diverse clinical settings. BSST and WST, with lower diagnostic accuracy, require more selective use. Future research should integrate patient-specific outcomes and standardize methodologies to enhance dysphagia screening tools, ultimately improving patient care and reducing complications. 11. A Case Report in the Management of Dysphagia in Osmotic Demyelination Syndrome Using Mann Assessment of Swallowing Ability (MASA).

Osmotic Demyelination Syndrome (ODS) is one of the primary cause of demyelination in alcoholics and malnourished resulting in various kind of clinical manifestations in pontine symptoms, neuro-behavioural symptoms movement disorders as well as speech and language and swallowing difficulties. The study was done to introspect the prognosis of swallowing therapy in a patient with ODS using MASA (Mann Assessment of Swallowing Ability). A 36 years old male with a history of regular alcohol intake and hypertensiom reported in our healthcare centre with hypoaklemia and speech, language and swallowing difficulty. Magnetic resonance imaging of the brain showed bilateral symmetrical T2 and T2 FLAIR (fluid attenuated inversion recovery) hyperintensity lesion in the bilateral basal ganglia involving the caudate nuclei, putaminal region and bilateral thalami with similar lesion along the mid brain. There were no areas of acute restriction in diffusion study. The findings suggested of Osmotic Demyelination Syndrome (ODS).When accessed with N-DAT, WAB and MASA; patient was diagnosed with Spastic Dysarthria, Transcortical Motor Aphasia and Moderate Dysphagia. Intervention was provided using speech and swallowing therapy and when introspected with MASA scores, improvement was seen within 5 days and statistically 97% of variance was seen inferring the progressing trend in the MASA scores. This study concludes that MASA can be an effective tool in introspecting the prognosis of Dysphagia in ODS and early intervention in the management of dysphasia shows positive results. 12. Chemical, physical, and sensory properties of nixtamalized oat tortillas.

- Abstract
Background and Objectives: While alkaline nixtamalization has historically been used for corn, this process may have application in other cereals. Drawbacks to wider use include the lengthy steep time, as well as the volume of alkaline wastewater produced. This study evaluated a novel, waste‐effluent‐free nixtamalization process for oat (Avena sativa) masa, and compared properties of oat masa and tortillas prepared with 1%, 1.5%, and 2% lime, with and without steeping. Findings: A minimal‐water‐addition, 45‐min simmering process, without steeping, was effluent‐free, and produced oat tortillas comparable to those produced using a traditional overnight steep. The pH increased significantly with increasing lime content (r =.982). Consumer overall‐liking scores did not significantly differ across treatments, though appearance scores were significantly higher for 2% lime samples (p <.05), which were significantly darker and more yellow, based on L* and b* values. Masa adhesiveness means ranged from 1.49 to 1.52 N, with no significant differences between the no‐steep treatments. Higher lime addition (1.5%–2%) in the no‐steep process significantly improved tortilla flexibility, based on extensibility and rollability scores, though tortilla rupture force did not vary significantly across treatments. Tortilla rollability scores at 3‐days were lowest (x̅ $\mathop{{\rm{x}}}\limits^{̅}$ = 1.1 + 0.31, indicating less cracking) for the 1.5%–2% lime no‐steep treatments, which were significantly better than the steeped treatment (x̅ $\mathop{{\rm{x}}}\limits^{̅}$ = 3.7 + 0.48). Consumers rated the steeped sample as significantly less flexible. B‐vitamins were negatively impacted by increasing lime, while calcium increased significantly with lime addition. Conclusions: The no‐steep, effluent‐free nixtamalization process produced oat tortillas with good masa and tortilla texture, which were not significantly different in consumer liking than tortillas produced via a traditional process. Significance and Novelty: This research suggests nixtamalization can be applied to other grains in a shorter, environmentally friendly process, with broader commercial applicability. This study aims to understand the manifestation of the past and the tribulations that occur in the poetry of the blind poet Al-Taṭīlī, and to reveal the symbolic argument in which the importance of time is centered in most of his poems. The study also aims to explain the image of time that appears in his poetry collection about the goals expressed by the poet. It aims to express the inner reality, not the outer, especially when explaining the tribulation that occurs using rhetorical techniques that show the creative side in the narration brought by Al-Taṭīlī. Using a descriptive and analytical approach, this method, tries to justify the occurrence of this concept in the collection of poets several extraordinary times. The importance of this study lies in the existence of the term time in most of Al-Taṭīlī's poetry. In some contexts, his works are held high because of the abundance of his poetry. His poems have a special place in Andalusian and Almoravid literature in particular. This is in line with the psychological state of the poet, who calls on his queen to produce poetic works in all circumstances including when in tribulation. The study concludes that Al-Tadili has removed everything that caused his suffering, and the sadness that befell him all the time. ¿Qué entendemos por masa en arquitectura? ¿Estamos seguros de referirnos a la misma cosa? La polisemia que se le atribuye dentro y fuera de la disciplina hace que convenga aclararlo para evitar algunos equívocos, o acaso para aumentar más la confusión. Los diccionarios definen en sus primeras acepciones a la masa como la magnitud física que expresa la cantidad de materia de un cuerpo. Masa es distinto de peso. No son sinónimos, aunque nuestro uso común tienda a convertirlos en tales. Por masa también se entiende algo que se aplica en gran cantidad: producción en masa, cultura de masas, destrucción masiva, y también hormigón en masa, vivienda en masa. Este texto repasa brevemente algunos episodios históricos y propone unas notas breves sobre la cantidad de materia –lo sólido y lo ligero– en arquitectura, descubriendo una acepción olvidada pero más ajustada y convincente de lo que la masa significa para la arquitectura.

Given a strongly continuous orthogonal representation (U
t )t∈ℝ of ℝ on a real Hilbert space ℋℝ , a decomposition ℋℝ := ⊗i∈N ℋℝ (i) ) consisting of invariant subspaces of (Ut )t∈ℝ and an appropriate matrix ((qij))NxN of real parameters, we associate representations of the mixed commutation relations on twisted Fock spaces. The associated von Neumann algebras are (usually) non-tracial and are generalizations of those constructed by Bozejko-Speicher and Hiai. We investigate the factoriality of these von Neumann algebras. Along the process, we show that the generating abelian subalgebras associated with the blocks of the aforesaid decomposition are strongly mixing masas when they admit appropriate conditional expectations. On the contrary, the generating abelian algebras which fail to admit appropriate conditional expectations are quasi-split. We also discuss non-injectivity and the Haagerup approximation property. 18. Effects of Different Fermenting Agents on Proximate Composition and Sensory Evaluation of Masa - A Fermented Puff Fried Batter.

- Abstract
Fermentation improves the shelf life, texture, taste and aroma, nutritional value and digestibility and also lowers the content of antinutrients of fermented meals. This study investigated the effect of different fermenting agents on the quality of masa. The rice grains were sorted, cleaned, washed and soaked, wet milled and fermented separately with baker’s yeast, lactic acid culture (yogourmet) and tsamiyan gaye (citric acid) respectively. The final batter was fried and package for analysis. The different fermenting agent had significant (p<0.05) effect on all parameters measured. Masa fermented with lactic acid bacteria culture (LAB) had the highest value of 9.25% 0.83%, 1.01% and 18.51% for protein, crude fibre ash and fat content respectively while yeast fermented masa had higher respective value of 21.46% and 50.12% for moisture and carbohydrate content. The pH of masa sample is within the r range of 3.76-5.57 and titritable acidity of 0.05-0.17. The sensory evaluation was carried out to assess the acceptability of the masa samples. However, all masa samples were generally accepted but baker’s yeast fermented masa had higher means scores for overall acceptability (7.40). En este trabajo nos proponemos indagar en la figura de cavilador [Grübler] que Benjamin utiliza para caracterizar a Baudelaire en “Parque Central” y en el convoluto J que le dedica al poeta en la Obra de los pasajes. Los estudios sobre la cavilación en el filósofo judeo-alemán se han centrado en su vínculo con el saber melancólico y la alegoría en el Origen del drama barroco alemán. En esta ocasión, procuramos mostrar los desplazamientos que se producen respecto del abordaje de la cavilación en Baudelaire a la vez que sostenemos que esta actividad debe ser esclarecida no sólo en relación con la alegoría sino también con la flânerie. Entendemos que en torno de la cavilación se despliega una concepción materialista del pensamiento, en la que se plasman motivos no-humanos y se lleva a cabo una articulación entre teoría y práctica, o entre pensamiento y acción, a través de la complementariedad entre la actitud del alegorista y del flâneur. Así, con la figura del cavilador, Benjamin disputa con la tradición filosófica no sólo la perspectiva dominante del pensamiento en términos de actividad humana contemplativa sino también sus potencialidades crítico-políticas para dar cuenta de los fenómenos concretos de su tiempo en un horizonte que rebasa los límites de lo humano.

Bioestimulants contribute to increase yield reflected in fruits. In this sense, a study was carried out at the Institute of Tecomatlan, Puebla, Mexico, to evaluate the influence of the Quitomax® use and the inoculation with two strains of mycorrhizae in the behavior of some variables of fruit. Seedlings were produced in trays with a commercial substrate, under the same treatments that would later be applied in field conditions, which consisted of a control where seeds were soaked in water three hours, the same time and application form, when mycorrhizae were used, and Quitomax solution. The two mycorrhizal inoculants were applied by coating the seeds. Six treatments were established since both bioestimulants were also used in combination. A randomized block design was used in the field whit four replications. At transplantation time, each inoculum was applied at root system and Quitomax® was sprayed on the foliage at seven and 28 days. The quantity of fruits per plant was evaluated and in the sixth harvest, 30 fruits were taken at random per replication of each treatments, from which the equatorial and polar diameter were measured. Treatments caused variations in the distribution of fruits by size and in the equatorial diameter, but not in the fruit shape. The number of fruits increased with respect to the control, but not their mass to the same extent. [ABSTRACT FROM AUTHOR]

This paper describes nominal plurality and examines microvariation in the marking of plural on nouns across three closely related Northern Masa languages, namely in Gizey, Masana, and Musey. These three languages use the same set of nominal plural exponents: -Vj, -ii/-ij, and -Vgi which are reflexes of Proto-Chadic *-ai, *-i and *-aki, respectively (Newman 1990). In addition to suffixal formation, the three languages have restricted sets of suppletive plural nouns in which two further formatives can be identified, namely -n and -u. Finally, traces of an erstwhile vowel internal ablaut can be observed in a few vestigial plurals. Although these languages constitute a more or less homogeneous lectal continuum, they have developed different plural assignment systems ranging from fully morphological (e.g., Masana) to fully phonological (e.g., Gizey). The three languages also differ in their potential for number-marking (numerality). Generally, nominal plurality seems to be on the decline.

Ultrasound stands out as the most suitable non-invasive diagnostic technique for examining testicular pathology. It has the ability to differentiate the most relevant causes of acute pain and scrotal inflammation, such as epididymitis, testicular torsion, and acute trauma. In patients with palpable irregularities or scrotal swelling, ultrasound can identify, locate, and characterize both intratesticular and extratesticular masses. Using a high-frequency linear transducer enables detailed visualization of testicular anatomy and surrounding structures. Additionally, it allows for the assessment of vascular perfusion through Doppler analysis. Considering clinical history and physical examination proper training and understanding the technique's limitations significantly enhance decision-making. Paciente canino (Canis lupus familiaris) hembra esterilizada, de raza mestiza, de 8 años de edad, que fue atendido en el centro integral veterinario de la ciudad de Guayaquil, Ecuador, el primero de noviembre del año 2021 refiere cuadro clínico caracterizado por astenia, anorexia, temperatura evaluada en 39,5°C y disnea a medianos esfuerzos. Al examen físico se apreció mal estado general, decaída, piel pálida y seca, ruidos cardíacos hipofonéticos, abdomen distendido con signo de baloneo positivo. En la consulta se realizó un A-Fast (Focussed assessment with sonography in trauma) en el que se observó líquido libre en los 4 cuadrantes, al realizar una exploración ecográfica T-Fast (Thoraic Focussed assessment with sonography in trauma), se evidenció efusión pericárdica. En una consulta posterior, durante la pericardiocentesis a cargo del cardiólogo, quien extrajo 40 mililitros (mL) cuyo contenido fue analizado mediante citología, mostrando células monomórficas linfoblásticas con mitosis aberrantes que sugerían el diagnóstico de linfoma. En la ecocardiografía se halló una masa a nivel de la base del corazón (pared pericárdica visceral en contacto directo con el miocardio), la cual fue removida mediante cirugía y se envió muestra al laboratorio de patología, cuyo informe diagnóstico fue compatible con linfoma difuso de células intermedias grado II.

Background and Objectives: Nutritional benefits of amaranth addition to maize products have been documented. However, studies of the effect on the final product's rheological and textural properties are scarce. The objective was to study the effect of amaranth addition on masa's rheological properties and the tortilla texture of maize nixtamalized flours obtained by extrusion technology. Findings: Composite flours of maize with 0%, 15%, 30%, or 45% amaranth were extruded, and masa and tortillas were obtained. Masa properties were evaluated with dynamic rheology and tortilla firmness with the texture profile analysis. The amaranth addition effect was not linear. Fifteen percent addition increased frequency sweep values for G′ and G″, while 30% and 45% addition decreased them. Tortilla firmness decreased at 2 storage hours for 15% addition compared with maize‐only samples (5440 and 7190 (g‐f)/mm). The effects can be partially explained by differences in starch characteristics. Conclusions: Amaranth (15% addition) improved masa viscoelastic behavior and reduced firmness during storage. Besides the nutritional effects, amaranth use at the tested level will be helpful in improving the texture of maize tortillas produced with extruded flour. Significance and Novelty: The texture of tortillas obtained by extruded flours has not been reported to be completely satisfactory; therefore, the use of amaranth has the potential to improve the final product quality. This thesis provides a morphosyntactic description of Gizey, a languoid of the Masa branch of Chadic (Afroasiatic). Gizey is spoken primarily in Northern Cameroon and Southern Chad. Based mainly on narrative texts and elicited material, I describe various grammatical structural units and the way these encode morphosyntactic categories. I show that morphosyntactic categories are expressed chiefly via analytical means or agreement, and that morphological marking is only utilised minimally. Other features of particular interest include consonant-tone interaction and how it splits verbs into different inflectional classes; the presence of frozen reduplicatives, some of which are derived via analogical reduplication; and the contrastive use of two pronoun sets to mark logophoric and antilogophoric reference. In this thesis, I also use a comparative approach to make various diachronic generalisations about Masa languages, thus making a significant contribution to the embryonic fields of Masa and Chadic comparative studies., Cette thèse fournit une description de la morphosyntaxe du gizey, un parler de la branche masa des langues tchadiques (afro-asiatiques). Le gizey est parlé principalement dans le nord du Cameroun et le sud du Tchad.En partant d’un corpus constitué principalement de textes narratifs et des données élicitées, je décris différentes structures grammaticales et leurs modalités de marquage des catégories morphosyntaxiques. Je démontre que les catégories morphosyntaxiques sont surtout exprimées de manière analytique ou via l’accord. Je démontre aussi que le marquage morphologique n’est que très peu usité. D’autres caractéristiques notables sont l’interaction entre consonne et ton et son importance pour la détermination des classes verbales, la présence de la réduplication figée avec notamment la réduplication par analogie et l’utilisation contrastée de deux séries de pronoms pour marquer la logophoricité et l’antilogophoricité.Dans cette thèse, j’adopte en outre une approche comparative pour avancer des hypothèses diachroniques concernant les langues de la branche masa. Masa is a traditionally fermented meal usually made from cereals. The aim of this research was to produce an enriched meal from rice and Bambara groundnut. The colour, functional properties and microbial quality of composite blend of rice and Bambara groundnut flour, in the ratio of 100:0, 95:5, 90:10, 85:15, 80:20, were evaluated using standard methods. Sensory properties of freshly made masa and masa prepared from stored flours were also determined. The microbial load of the masa flour blend increased over the storage period. Water absorption capacity, swelling capacity and bulk densities increased, while the oil absorption capacity decreased with the storage period. The objective colour result showed a decrease in the lightness (L*) value. Sensory properties of masa were not substantially altered with Bambara groundnut inclusion, but the ratings reduced with storage. Instant masa may be prepared from flour stored for 4 weeks without considerable changes in quality

Se obtienen tortillas a partir de harina de maíz nixtamalizado, al cual se le adicionaron diferentes proporciones de harina de B. alicastrum (0, 10, 20 y 30% p/p en base seca). Se analizan las tortillas en relación con la composición química, perfil de aminoácidos, compuestos fenólicos, actividad antioxidante y propiedades físicas. La adición de harina de B. alicastrum en tortillas aumentó la actividad antioxidante, el contenido de minerales, fibra soluble, proteína, triptófano, compuestos fenólicos totales y flavonoides totales comparado con la tortilla control. Los resultados sugieren que la adición de harina de B. alicastrum (10 y 20%) a la harina de maíz mejoró el valor nutricional y funcional de tortillas sin afectar su calidad (rolabilidad, grado de inflado y pérdida por cocción).

Las siguientes páginas versan sobre el elitismo en el pensamiento filosófico de José Ortega y Gasset (1883-1955). La reflexión del filósofo sobre la nobleza como vida esforzada y también como condición que el individuo alcanza y que no hereda, frente a la vida vulgar que Ortega vincula al imperio de la mediocridad que se expande socialmente como una peligrosa enfermedad, recorre sus páginas, desde sus inicios hasta el final de su producción intelectual. Son múltiples las lecturas que Ortega nos ofrece en relación con la dialéctica entre nobles (élites o minorías) y masas. Nos ocuparemos de la dimensión filosófica de estos dos conceptos desde su mocedad idealista neokantiana hasta su madurez raciovitalista, cuando Ortega diseña un esquema filosófico propio que se concreta en su teoría de la vida humana como realidad radical, primera y primordial. Justificamos la elaboración de este trabajo en el hecho de que resulta fundamental comprender los cambios que se producen en su filosofía para lograr entender los cambios que experimenta su pensamiento elitista.

Recientemente las masas artesanales de maíz pilado han pasado a ser un alimento de consumo masivo en Venezuela, sin un control sanitario adecuado en materia de elaboración y expendio. Existen muy pocos estudios referenciados internacionalmente, y ninguno reciente a nivel local, al respecto de este producto; por ese motivo el objetivo de esta investigación se ha enfocado su evaluación microbiológica con muestras obtenidas en el mercado municipal de Puerto La Cruz, que son el principal punto de expendio de las mismas en las principales ciudades venezolanas. Se determinaron las frecuencias de coliformes totales, coliformes fecales, presencia de Escherichia coli, aerobios mesófilos y Staphylococcus aureus como indicadores de una manipulación inadecuada; también se consideró la presencia de mohos y levaduras como microorganismo asociados a cereales. Se concluye que la totalidad de las muestras de masas de maíz pilado presentan un elevado nivel de estos microorganismos indicadores y que su consumo sin la cocción adecuada podría conllevar riesgos importantes para la salud.

Entre 1934 y 1935 Guiuseppe Terragni proyecta el monumento a Roberto Sarfatti. Esta obra es uno de sus monumentos funerarios de los que más documentación original se conservan: dos soluciones preliminares esbozadas y dos soluciones totalmente definidas; construyéndose una de ellas. El análisis de estas soluciones permite indagar en el proceso proyectual de Terragni y descifrar algunas de las claves de su arquitectura. El estudio de la Tumba Sarfatti se realiza a partir de la ejecución de las maquetas de las distintas soluciones. Esta investigación gráfica nos muestra con mayor claridad la evolución de la obra y sus parámetros compositivos.

This study aimed to evaluate the influence of fortifying steamed breads with Bambara groundnut (BGN) flour (5%, 10%, 15% and 20%) on their physicochemical and antioxidant characteristics. The water absorption capacity of the flour increased with increasing BGN flour fortification levels, while oil absorption capacity decreased. The pH and leavening capacity of the BGN flour fortified dough decreased during incubation, whilst the titratable acidity for dough fortified with 15% and 20% BGN flour increased. The inclusion of BGN flour improved the protein, ash, and crude fibre contents of flour and steamed breads. The HunterLab colour values show that BGN flour increased the yellowness (b* value) of flour and steamed bread samples, while the lightness, redness and Chroma decreased. The antioxidant properties of flours and steamed breads increased significantly (p < 0.05) with the BGN flour fortification levels. Moreover, the weight and spread ratio of the breads increased, whilst the texture became soft. The BGN flour can be utilised as a functional ingredient to enhance the nutritional and antioxidant properties of cereal-based foods such as steamed bread. [ABSTRACT FROM AUTHOR]

Este trabajo aborda el estudio de nuevas estructuras de reciclos y sistemas de recuperación de hidrógeno generados al incluir el concepto de redes de intercambio de materia (MENs) en la toma de decisiones de diseño. Cuando se diseña un proceso siguiendo la jerarquía de decisiones de Douglas (1985) se avanza en el diseño generando versiones más detalladas del proceso con un número creciente de bloques de proceso interconectados por corrientes. Al final del procedimiento se realiza una integración de calor entre las corrientes del proceso ya definidas en las etapas anteriores.Por otra parte las técnicas de síntesis de MENs se utilizan para decidir sobre intercambios de materia entre las corrientes de un proceso una vez que todas estas han sido definidas. Sin embargo el concepto de MENs puede usarse en una etapa anterior de la jerarquía de Douglas generando nuevas estructuras y sistemas de separación alternativos. Con las nuevas alternativas de diseño, se logra una apreciable reducción del hidrógeno alimentado al proceso.
