In much of Europe, the advent of low-input cereal farming regimes betweenc.ad800 and 1200 enabled landowners—lords—to amass wealth by greatly expanding the amount of land under cultivation and exploiting the labour of others. Scientific analysis of plant remains and animal bones from archaeological contexts is generating the first direct evidence for the development of such low-input regimes. This article outlines the methods used by the FeedSax project to resolve key questions regarding the ‘cerealization’ of the medieval countryside and presents preliminary results using the town of Stafford as a worked example. These indicate an increase in the scale of cultivation in the Mid-Saxon period, while the Late Saxon period saw a shift to a low-input cultivation regime and probably an expansion onto heavier soils. Crop rotation appears to have been practised from at least the mid-tenth century.

The early Middle Ages saw a major expansion of cereal cultivation across large parts of Europe thanks to the spread of open-field farming. A major project to trace this expansion in England by deploying a range of scientific methods is generating direct evidence for this so-called ‘Medieval Agricultural Revolution’.

This paper presents a fundamental new assessment of crop husbandry in the Mid Saxon period in England (c. AD 650–850), using data from charred plant remains. While recent archaeological studies have begun to emphasise the importance of agricultural development in this period – focusing especially upon field systems and livestock – crops have received comparatively little attention. This study challenges one popular model of Anglo-Saxon arable farming, here dubbed the ‘bread wheat thesis’, which posits a Mid Saxon shift whereby bread wheat supplanted hulled barley as the most important cereal crop in this period. The empirical basis for this model is here re-examined in the light of an updated archaeobotanical dataset from selected regions in southern Britain. No evidence for bread wheat supplanting hulled barley is discovered. Over the past decade, historians and archaeologists have become increasingly aware that the Mid Saxon period in England (7th-9th centuries AD) witnessed a transformation in agricultural practices. According to the emergent consensus, in contrast to the heavily pastoral, broadly subsistence-based mode of agriculture characteristic of the Early Saxon period (5th-7th centuries), Mid Saxon agriculture was geared towards higher levels of surplus production and placed a greater emphasis upon arable farming. The increased cultivation of bread wheat and the specialist production of sheep’s wool have been identified as particularly important innovations of this period. This thesis represents the first attempt to explore agricultural development in Mid Saxon England on a systematic archaeological basis. It considers settlement, zooarchaeological, and archaeobotanical evidence in detail, with a special emphasis on charred plant remains. The analyses utilize data gathered from excavation reports, published and unpublished, covering two case study regions: (i) the Upper/Middle Thames valley and environs, and (ii) East Anglia and Essex. In addition, a sub-assemblage of charred plant remains from a Mid Saxon monastic site at Lyminge (Kent) is studied at first hand. In this way, a series of agricultural innovations is identified in the archaeological record, including in particular: specialized pastoralism, an increased emphasis on sheep in some regions, an expansion of arable production, growth in fibre production, growth in cereal surpluses, a consequent investment in specialist storage and processing facilities, and a general diversification of crop spectra. These innovations were contingent upon, and adapted to, local environmental factors. The process of agricultural development is thought to have begun in the 7th century and continued through the 8th and 9th centuries, facilitated and stimulated by newly consolidated élite landholdings and, probably, a growing population.
