Husk tomato (Physalis pubescens L.) is one of the important 100 species in the Physalis genus of the Solanaceae family. Among unexploited tropical fruits, Physalis is a very promising fruit. Physalis is included in the priority list of many governments' horticulture and fruit export plans. It is relatively unknown in importing markets and remains an exotic fruit. The important step toward developing Physalis as a commercial crop was maximizing its technological applications. The objective of our study was to prepare a new processed pasteurized Physalis juice and to study the effects of storage and packaging on its nutritional properties. The pulp was yellowish or orange with a yield of 64%. The fresh juice had a light sweet and acidic taste (pH 3.5). The titratable acidity was 1.43%, polyphenols 76.6mg/100mL and vitamin C 38.8mg/100mL. Physalis juice was rich in carotenoids (70 [micro]g/mL). The nutritional and bio-physical characteristics of Physalis juice packaged in glass bottles and flexible laminated packs during storage under refrigeration (5 [+ or -] 1[degrees]C, 8590%RH) for 6 months were studied. Carotenoids, polyphenolic substances and ascorbic acid contents were gradually reduced throughout cold storage, where this reduction was more pronounced in juice packaged in flexible laminated packs. A slight increase in total acidity was observed with cold storage prolongation, especially in juice packaged in flexible laminated packs. Significant differences in color were found between the same juice packaged either in glass bottles or in flexible laminated packs, where the juice color was darker in flexible laminated packs. It could be noticed that, there was no migration of Na ions from glass bottles to processed juice formulas during the cold storage period. In flexible laminated packs, a slight increase of Al ions throughout the cold storage period but not exceeding the safety limit of Al daily intake (3.5mg/day). It was concluded that Physalis juice packaged in glass bottles had higher storage stability than that packaged in flexible laminated packs. - Abstract
Fried ripened curd cheese is a traditional dairy product from the Wielkopolska region of Poland. It is made from cows’ milk and has Protected Geographical Indication (PGI) status. The aim of this study was to use the microbial-culture-independent PCR-DGGE technique to examine whether a link exists between the fungal community present in the product and the geographical origin of the cheese. To look for correlations between the geographical origin and the microbiota composition, the DGGE fingerprinting profiles were subjected to a multivariate analysis, which included k-means clustering and principal component analysis (PCA). The dominant eukaryotic community of this traditional product, which has been investigated here for the first time, was shown to be composed of Galactomyces geotrichum, Kluyveromyces marxianus, Pichia kudriavzevii, Candida inconspicua, and Trichosporon spp. Our results demonstrated that PCR-DGGE is a simple and relatively inexpensive method for the traceability of Wielkopolska fried cheese and could be extended to other microbe-enriched foodstuffs.

L’Hibiscus sabdariffa L. est une plante très utilisée au Sénégal et presque dans toute l’Afrique de l’ouest. Les calices sont transformés en boisson, en concentré, en poudre, etc. par des petites et moyennes entreprises (PME) et des Groupements d’intérêt économiques (GIE). Les procédés de fabrications sont presque similaires avec quelques petites différences dans les entreprises. Cependant toutes les exigences des bonnes pratiques de fabrication et de suivi des lots ne sont pas systématiquement respectées comme la mise en place du plan HACCP (Hazard Analysis Critical Control Point) et un suivi sur le plan microbiologique des produits. Ainsi, l’objectif de ce travail est d’évaluer les diagrammes de fabrication de boissons et concentrés de bissap et de réaliser le contrôle microbiologique sur toutes les étapes du process dans 2 PME. Les visites effectuées sur les lieux de production ont permis de retracer tous les diagrammes de fabrication des différents produits. Et l’analyse microbiologique a été faite sur des échantillons prélevés au niveau de chaque étape du procédé. Les techniques classiques de la microbiologie alimentaire ont été utilisées pour la recherche de chaque germe selon les référentiels en vigueurs.Les résultats microbiologiques ont révélé une absence totale de bactéries pathogènes sur tout le procédé de transformation. Seule la présence de FMAT (Flore Mésophile Aérobie Totale), de levures et moisissures a été observée sur les échantillons. Cependant la présence d’un type de levure absente sur les matières premières a été notée sur toutes les étapes de la transformation. De plus le suivi microbiologique effectué sur un lot de production stocké à différentes températures (4, 10, 20, 30 et 37°C) pendant six mois a montré que le produit fini qui était salubre au départ présentait une certaine flore dont la quantité dépassait les valeurs seuils en vigueur. Le développement était plus remarqué sur les échantillons conservés à 4°C. Les résultats ont montré la présence d’une contamination croisée dont l’origine peut être diverse (personnel ; environnement, matériel). Pour étayer ce problème des études moléculaires de caractérisation permettant d’identifier les sources de contamination devront être menées de même que l’instauration d’un plan de suivi des bonnes pratiques d’hygiène et de fabrication.Mots-clés: procédé, microbiologie, boissons, concentrés d’Hibiscus sabdariffa. Chalices are transformed into drink, concentrate, powder, etc. by small and medium enterprises (SMEs) and Groupings of economic interest grouping (EIG). The manufacturing processes are almost similar with few differences However, all the requirements needed in good manufacturing practices and lots monitoring are not always respected as the implementation of the HACCP plan (Hazard Analysis Critical Control Point) and the microbiologically follow of products. The objective of this study was to evaluate diagrams manufacture of beverages and concentrates bissap and perform microbiological control over all stages of the process in 2 SMEs. The visits to the places of production have allowed us to trace all the diagrams of manufacturing different products and microbiological analysis was performed on samples taken at each step of the process. Conventional techniques of food microbiology were used to research each seed according standard repository. Microbiological results revealed a complete absence of any pathogenic bacteria on the method of transformation. Only the presence of two floras FMAT, yeast and mold was observed on the samples analyzed. However, we noticed the presence of a type of yeast on all stages of processing but not commodities. Microbiological monitoring on a batch production is stored at various temperatures (4, 10, 20, 30 and 37°C) for six months shows that the finished product was wholesome initially showed some flora whose amount exceeds the threshold values in force. The development was noted on more samples stored at 4°C. These results showed the presence of cross-contamination whose origin is diverse (personnel environment and material). In support of this problem of molecular characterization studies to identify sources of contamination will be conducted as well as the establishment of a monitoring plan good hygiene and manufacturing practices.Keywords: process, microbiology, drinks, concentrates of Hibiscus sabdariffa.

In vitro adhesion assay using Lactobacillus reuteri KUB-AC5 as a test strain has been studied by applying simple PCR reaction together with image analysis and plate count techniques. Critical factor affecting the PCR method was quality and quantity of DNA. The cell lysis technique was modified to optimize this method. Thus, lysozyme and proteinase K were added to lyse the cells, followed by SDS solution to obtain a complete cell lysis. Only PCR products from total cells (TC) were obtained, with low consistency, but none from cells bound to mucus (BC) at either 0.1 or 0.5 mg/mL concentration. It was hypothesized that the attached cells might not be extracted into the cell suspension. Therefore, 1% SDS solution and 0.1M NaOH were used directly in the extraction. As expected, PCR products were observed when both TC and BC were used as a DNA template. Adhesion appeared at a wide range of 0-45%, with low consistency. Therefore, a simple microbiological method (plate count) was used. The extraction of bound cells into cell suspension was critical in this method. Extraction times of 20, 60, 120 and 150 min were tried. Results showed that maximum cell number was obtained with 120 min extraction. L. reuteri KUB-AC5, L. reuteri KUB-AC16, L. reuteri KUB-AC20, L. salivarius KUB-AC21, L. acidophilus KV-1, Escherichia coli E010, Salmonella sp. S003, E. coli ATCC8739, and S. typhimurium ATCC 13311 exhibited adhesion activity of 21.6%, 0.8%, 5.7%, 1.1%, 23.1%, 10.7%, 10.3%, 4.4% and 3.2%, respectively. Among the 9 types of microorganisms tested L. acidophilus KV-1 and L. reuteri KUB-AC5 showed higher adhesion activity than the others.

- Abstract
The European Space Agency's Planck satellite, launched on 14 May 2009, is the third-generation space experiment in the field of cosmic microwave background (CMB) research. It will image the anisotropies of the CMB over the whole sky, with unprecedented sensitivity (${{\Delta T}\over T}$ ~ 2 × 10-6) and angular resolution (~5 arcmin). Planck will provide a major source of information relevant to many fundamental cosmological problems and will test current theories of the early evolution of the Universe and the origin of structure. It will also address a wide range of areas of astrophysical research related to the Milky Way as well as external galaxies and clusters of galaxies. The ability of Planck to measure polarization across a wide frequency range (30-350 GHz), with high precision and accuracy, and over the whole sky, will provide unique insight, not only into specific cosmological questions, but also into the properties of the interstellar medium. This paper is part of a series which describes the technical capabilities of the Planck scientific payload. It is based on the knowledge gathered during the on-ground calibration campaigns of the major subsystems, principally its telescope and its two scientific instruments, and of tests at fully integrated satellite level. It represents the best estimate before launch of the technical performance that the satellite and its payload will achieve in flight. In this paper, we summarise the main elements of the payload performance, which is described in detail in the accompanying papers. In addition, we describe the satellite performance elements which are most relevant for science, and provide an overview of the plans for scientific operations and data analysis.

The occurrence of food-borne diseases in the end of the 20th century allowed the emergence of the HACCP system whose role was to ensure food safety. This system is usually applied by large companies and industries, but not by SMBs in the developing world because they are binding, cumbersome and unsuited to their processes. This is the case of most of the African food industries that use artisanal methods. However, two innovative methods were especially developed by Bonne et al. (2005) and Bonne (2013) for African SMBs allowing them a comprehensive hygiene management with the determination and rapid control of their CCP process. These methods were applied to the manufacturing process of hibiscus syrup by a Senegalese SMBs and showed that HACCP principles can be adapted to SMBs. Its success depended on the commitment of management, ownership, awareness, and staff training. These two innovative methods of HACCP system were applied to enable a Senegalese SMB to produce safe syrup of Hibiscus sabdariffa that meet international requirements. [ABSTRACT FROM AUTHOR]

Traceability is defined according to ISO 9000 as the ability to retrieve the origin and use of an article or an activity through a registered method. Its implementation in the timber industry is delayed because of limits of classical identification systems with regard to the nature of timber and features of the manufacturing process. One hypothesis of tracing the source of timber and its products is by analysing in a global way the microbial communities of timber and linking this analysis statistically to its geographical origin. We proposed a very innovative tool of fungi ecology, the polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE), that was used to characterise the fungi flora of two tropical timbers species, teak and limbali from four countries: Côte d'Ivoire, Cameroon, Central African Republic and French Polynesia. The aim was to show if there was statistical relation between the fungal communities of the timbers and their geographical origins. PCR-DGGE method is a new, simple and cheap traceability tool that can trace the original locations of timbers.

National audience; The requirements of quality concern the same regulations for the consumers of the South as well as the North. However, the contextof southern countries in terms of climatic conditions as well as sociological or economic leads to differentiated positions. The contextof the South returns to the need for setting up specific control systems, and for establishing standards according to the concernedmarkets. The characterization of the livestock products specific to tropical countries (for example creole animal meat in the WestIndies or camel milk in the Middle East) is a step to precisely tackle the question of the standards applicable in southern countries. Quality consequently becomes a social construction effectively being be based on a participative approach implying all the stakeholdersof a sector. Lastly, it is advisable to distinguish the niches from the market concerned, international, local or regional, withsouthern countries being able to adapt accordingly as with the cattle market in southern Africa.; Les exigences de la qualité relèvent des mêmes droits des consommateurs au Sud comme au Nord. Toutefois le contexte des pays du Sud tant en termes de conditions climatiques que sociologiques ou économiques induit des positionnements différenciés. Les contextes du Sud renvoient à la nécessité de mettre en place des systèmes de contrôle parfois spécifiques et de réfléchir à l’obligation d’établir des normes en fonction des marchés visés. La caractérisation des produits animaux spécifiques aux pays tropicaux (par exemple la viande des animaux créoles aux Antilles ou lait de chamelle au Moyen-Orient) est une étape pour aborder justement la question des normes applicables dans les pays du Sud. La qualité devient dès lors une construction sociale pouvant efficacement s’appuyer sur une approche participative impliquant tous les acteurs d’une filière. Enfin, il convient de distinguer les niches du marché visé, international, local ou régional, les pays du Sud sachant s’adapter en fonction de ceux-ci comme le montre l’exemple du marché du bétail de l’Afrique Australe.

SEA-EU-NET project is based on the program Capacities under the 7th Framework Program (FP7) of the EU Commission with the strategic objective of Integrating and Strengthening the EU-ASEAN Science and Technology Dialogue through coordination and supporting activities. It is a 4 years program started in January 2008, and is currently supported by 22 institutions from Europe and South-East Asia. The objective is to increase the quality, quantity, profile and impact of bi-regional Science and Technology cooperation between the 10 ASEAN countries and the Members and Associated States of the European Union. Every Thematic Priority of FP7 has to implement dedicated international cooperation activities to achieve the program's goals and to address specific problems of ‘Third Countries/Regions’ (non-EU Members States or non-Associated States). This activity is performed through the organization of annual Thematic Workshops, with the objective to produce a document containing duly justified proposals for Specific International Cooperation Actions. This paper presents the results of the Thematic Workshop on ‘Food Quality, Safety and Traceability’. This expert meeting was done in Thailand in February 2009. Titles for 10 possible themes were identified on the following fields: Bacteria antibioresistance, Mycotoxins, Pathogens (bacteria), Pesticides, Heavy metals, Food traceability, Food Supply Chain, Preserving nutrients, Consumers attitudes, Peri-urban markets.

Fishes in general and tilapia in particular are traded all over the world. However, it is difficult to find out their exact geographical location. One of the techniques used in the traceability of fish and its byproducts consist in analysing in a global way the whole viable and non viable bacterial communities. For this purpose, the molecular technique employing the bacterial 16S DNA banding profiles generated by PCR-DGGE (polymerase chain reaction-Denaturing gradient gel electrophoresis) was used to evaluate the differences between the bacterial profiles of fishes from Vietnam (An Giang, south province) and those of Cameroon (Yagoua, Maga, Lagdo). The different PCR-DGGE 16S rDNA banding profiles obtained were analysed and results showed that there were specific bands for each geographical location though some bands common to Cameroon and Vietnam were observed. This method could be used as a rapid analytical traceability tool for fish products and could be considered as a provider of a unique biological bar code.

Fried cheese from Wielkopolska is one of the few traditional fermented products in Poland endowed with a Protected Geographical Indication (PGI) label. Its traditional manufacturing process, maintained through the ages in the Wielkopolska region, gives the product an original and specific character. The sensory properties of the fried cheese are closely related to the particular cheese technology, but also to its associated microbiota which plays a key role in creating its typical aroma and taste. To eliminate unfair competition and the misleading of consumers by promoting non-genuine products, it is necessary to create an effective traceability system of food articles.

- Abstract
The European Space Agency's Planck satellite, launched on 14 May 2009, is the third-generation space experiment in the field of cosmic microwave background (CMB) research. It will image the anisotropies of the CMB over the whole sky, with unprecedented sensitivity ( ~ 2 × 10-6) and angular resolution (~5 arcmin). Planck will provide a major source of information relevant to many fundamental cosmological problems and will test current theories of the early evolution of the Universe and the origin of structure. It will also address a wide range of areas of astrophysical research related to the Milky Way as well as external galaxies and clusters of galaxies. The ability of Planck to measure polarization across a wide frequency range (30-350 GHz), with high precision and accuracy, and over the whole sky, will provide unique insight, not only into specific cosmological questions, but also into the properties of the interstellar medium. This paper is part of a series which describes the technical capabilities of the Planck scientific payload. It is based on the knowledge gathered during the on-ground calibration campaigns of the major subsystems, principally its telescope and its two scientific instruments, and of tests at fully integrated satellite level. It represents the best estimate before launch of the technical performance that the satellite and its payload will achieve in flight. In this paper, we summarise the main elements of the payload performance, which is described in detail in the accompanying papers. In addition, we describe the satellite performance elements which are most relevant for science, and provide an overview of the plans for scientific operations and data analysis.

Post-harvest losses in African artisanal fisheries may thus be lower than often assumed. Fermentation offish is especially used in situations where drying offish is not possible because the climate is too wet and where cooling and sterilization of the product is too expensive. Fermented fishery products in Africa are usually whole or in cut pieces, and are not a paste or sauce. Sanitary conditions of fermented fish production were generally found to be poor and processing methods were not standardized. This article will primarily review fermented fish processing, quality parameters of fermented fish, nutritional and functional evaluation of fermented fish products, microbiology and biochemistry of fermented fish, safety of fermented fish, and the famous fermented fishery products in Africa. To the best of our knowledge, there is no review article on the fermented fishery products in Africa in scope of risks. [ABSTRACT FROM AUTHOR]

The present article is aimed at presenting various types of certification standards which are presently – or could be – applied to the production of palm oil. Doing so, it provides an overview of the existing mechanisms under way both at the European and global level and it addresses the controversial issue of reliance and accuracy of certification standards. The RSPO certification scheme provides an interesting example of such controversies. The case of palm oil reflects the recurring issue of mandatory vs. voluntary standards and the underlying question of the respective role of public vs. private stakeholders in the designing and further implementation of such standards. The high number of standards, appellations or labels creates some – understandable – confusion amongst consumers and deciders and this point is of paramount importance if confidence is on the agenda. The authors conclude on the urgent need for collaborative and multidisciplinary research in order to provide certification standards with science-based evidence and thus strengthen their reliability. The success of a certification scheme depends also greatly on the ability of stakeholders to gain a premium price to offset the incurred costs.

Le poisson est la principale source de protéines animales dans les zones côtières de l’Afrique de l’Ouest, notamment au Bénin, en Côte d’Ivoire et au Sénégal. Le problème de la conservation des produits halieutiques débarqués est un défi sociétal majeur dans ces pays du fait de l’insuffisance d’infrastructures industrielles. La transformation alimentaire traditionnelle contribue à la réduction des pertes post-capture. Divers produits transformés locaux comme l’adjuevan (Côte d’Ivoire), le lanhouin (Bénin) et le guedj (Sénégal), dont les procédés incluent le salage, la fermentation et le séchage, sont proposés aux consommateurs. Ils sont généralement utilisés comme condiments ou parfois comme sources majeures de protéines animales pour enrichir les apports nutritionnels des aliments à base de céréales locales. Les technologies traditionnelles employées pour ces produits sont peu coûteuses, du fait des équipements rudimentaires utilisés. La non-standardisation des techniques de production, notamment la fermentation, généralement spontanée, contribue à une qualité très fluctuante. Cette synthèse présente les différentes approches de fermentation conduisant aux divers produits ciblés, les caractéristiques physico-chimiques et microbiologiques de ces produits, les initiatives d’amélioration essentiellement basées sur le recours à des ferments et les défis sociétaux (renforcement de la recherche, formation des acteurs locaux, appui à la commercialisation) pour la croissance économique de ce secteur.

- Abstract
Chemical synthesis of N-e-acyllysines on an industrial scale corresponds to new requirements in the surfactant field; only one chemical synthesis process is currently known for this type of molecule. A number of organic synthesis conducted in the laboratory so far have not made it possible to consider industrial development. However, biotechnologically, it has been shown that this molecule is easily accessible using a commercially available fixed lipase. Synthesis is carried out by causing a triglyceride to react with the lysine either with or without a solvent. The latter method gives the best results at the current stage of research. Given the availability of at least one fixed lipase on the market today, and the possibility of directly applying the reaction using oils, this reaction could be scaled up rapidly for industrial development.

Candida lipolyticaYB 423-12 is able to incorporate fatty acid from the culture medium when lipids are used as carbon substrate. The composition of cell lipids is largely dependent on that of the culture medium. An important Δ 9 desaturase activity acts on incorporated palmitic and stearic acids; and Δ 11-eicosenoic and erucic acids are shortened to oleic acid.

Short-chain fatty acids are usually located at position sn-3 in natural triglycerides, particulary in dairy fats. As a result, it is extremely difficult to differentiate between sn-3 stereospecificity and short-chain typoselectivity in many lipases and acyltransferases that perform in this way. This ambiguity can be removed through successive use of a chiral triglyceride with a short fatty acid in position sn-1 and of its racemic in controlled hydrolysis reactions. After checking that the proposed method effectively confirmed the type of activity of control biocatalysts ( Candida cylindracea nonspecific lipase and Mucor miehei 1-3 regiospecific lipase), we confirmed that Carica papaya latex has a strict sn-3 stereospecificity. Survival of thermotolerant Lactobacillus reuteri KUB-AC5 in 20% (w/v) skim milk was found to be 11.3% after spray drying by using a pilot scale spray dryer with inlet temperature at 170°C and outlet temperature at 85°C. The ability of dried cell to produce antimicrobial activity was not affected by the spray drying. The model system for predicting viability of spray-dried L. reuteri KUB-AC5 during long-term storage was established, based on the Arrhenius equation, and verified by experimental data, because the viability of cells during storage can be correlated with storage temperature. The viability during storage at 30oC declined more rapidly than that storage at 4°C.
