The water footprint for fossil fuels typically accounts for water utilized in mining and fuel processing, whereas the water footprint of biofuels assesses the agricultural water used by crops through their lifetime. Fossil fuels have an additional water footprint that is not easily accounted for: ancient water that was used by plants millions of years ago, before they were transformed into fossil fuel. How much water is mankind using from the past to sustain current energy needs? We evaluate the link between ancient water virtually embodied in fossil fuels to current global energy demands by determining the water demand required to replace fossil fuels with biomass produced with water from the present. Using equal energy units of wood, bioethanol, and biodiesel to replace coal, natural gas, and crude oil, respectively, the resulting water demand is 7.39 × 1013 m3 y−1, approximately the same as the total annual evaporation from all land masses and transpiration from all terrestrial vegetation. Thus, there are strong hydrologic constraints to a reliance on biofuel energy produced with water from the present because the conversion from fossil fuels to biofuels would have a disproportionate and unsustainable impact on the modern water. By using fossil fuels to meet today's energy needs, we are virtually using water from a geological past. The water cycle is insufficient to sustain the production of the fuel presently consumed by human societies. Thus, non-fuel-based renewable energy sources are needed to decrease mankind's reliance on fossil fuel energy without placing an overwhelming pressure on global freshwater resources.

The environmental impact of the production and consumption of food is seldom depicted to consumers. The footprint of food products provides a means for consumers to compare environmental impacts across and within product groups. In this study we apply carbon, nitrogen, and water footprints in tandem and present food labels that could help inform consumers about the environmental impacts of individual food products. The footprint factors used in this study are specific to the United States, but the concept can be applied elsewhere. We propose three methods of footprint calculations: footprint weight, sustainability measures, and % daily value. We apply the three footprint calculation methods to four example labels (stars label, stoplight label, nutrition label add-on, and a detailed comparison label) that vary in design and the amount of detail provided. The stars label is simple and easily understood but provides minimal detail about the footprints. At the other end of the spectrum, the detailed comparison label gives context in relative terms (e.g., carbon emissions for equivalent distance driven) for the food product. Implementing environmental impact food labels requires additional understanding of how consumers use footprint labels, and label suitability may vary for government organizations, retail and local grocers, and farmers.

Our aim in this paper is to describe an opportunity for physics students and faculty to learn about an environmental issue of much current interest: the quantification, or footprint analysis, of carbon dioxide (CO[subscript 2]) and reactive nitrogen emissions. These can originate from human activities such as energy use, food consumption, and transportation, and are among the greenhouse gases (GHG) that contribute to global warming and rising sea levels. Moreover, nitrogen compounds also have effects on the chemistry and biology of the environment. Analyzing both of these footprints together captures multiple environmental impacts from the local to the global levels and can suggest mitigation strategies. We focus on the experiences of interdisciplinary teams, which included physics students and faculty, and that used the leading greenhouse gas analysis platform SIMAP (Sustainability Indicator Management and Analysis Platform).

Once upon a time there was enough naturally occurring nitrogen (N) to provide food for the world's peoples. Then there was not in the western regions. Now there is due to industrially produced NH3. But this transition from plenty, to scarcity, to plenty has come with a tremendous environmental cost. This paper provides an historical overview of the growth of knowledge about N and about its impacts, both positive and negative. The paper also explores three scenarios of what might have been, if in 1700 the world had the N-knowledge that we have now. The paper then projects N use to feed the world's people in 2050 under three scenarios of per-capita protein consumption: increasing, constant and decreasing relative to nutritional guidelines. The three projected results for 2050 annual N use from producing and consuming food are 320, 230 and 170 Tg N respectively. The latter is equivalent to 1970 levels. Given that the first scenario (increasing protein) is most likely without utilising our N-knowledge, the paper ends with suggestions for improvements in N use and management. The nitrogen (N) footprint is a novel approach to quantify losses to the environment of reactive N (Nr; all species of N except N2) derived from human activities. However, current N footprint models are difficult to apply to new countries due to the large data requirement, and sources of Nr included in calculating the N footprint are often incomplete. In this study, we comprehensively quantified the N footprint in China with an N mass balance approach. Results show that the per capita N footprint in China increased 68% between 1980 and 2008, from 19 to 32 kg N yr-1. The Nr loss from the production and consumption of food was the largest component of the N footprint (70%) while energy and nonfood products made up the remainder in approximately equal portion in 2008. In contrast, in 1980, the food-related N footprint accounted for 86% of the overall N footprint, followed by nonfood products (8%) and energy (6%). The findings and methods of this study are generally comparable to that of the consumer-based analysis of the N-Calculator. This work provides policy makers quantitative information about the sources of China's N footprint and demonstrates the significant challenges in reducing Nr loss to the environment. When multiple institutions with strong sustainability initiatives use a new environmental impact assessment tool, there is an impulse to compare. The first seven institutions to calculate nitrogen footprints using the Nitrogen Footprint Tool have worked collaboratively to improve calculation methods, share resources, and suggest methods for reducing their footprints. This article compares those seven institutions' results to reveal the common and unique drivers of institution nitrogen footprints. The footprints were compared by scope and sector, and the results were normalized by multiple factors (e.g., population, amount of food served). The comparisons found many consistencies across the footprints, including the large contribution of food. The comparisons identified metrics that could be used to track progress, such as an overall indicator for the nitrogen sustainability of food purchases. The comparisons also pointed to differences in system bounds of the calculations, which are important to standardize when comparing across institutions. The footprints were influenced by factors both within and outside of the institutions' ability to control, such as size, location, population, and campus use. However, these comparisons also point to a pathway forward for standardizing nitrogen footprint tool calculations, identifying metrics that can be used to track progress, and determining a sustainable institution nitrogen footprint., Competing Interests: No competing financial interests exist.

Anthropogenic sources of reactive nitrogen have local and global impacts on air and water quality and detrimental effects on human and ecosystem health. This article uses the Nitrogen Footprint Tool (NFT) to determine the amount of nitrogen (N) released as a result of institutional consumption. The sectors accounted for include food (consumption and upstream production), energy, transportation, fertilizer, research animals, and agricultural research. The NFT is then used for scenario analysis to manage and track reductions, which are driven by the consumption behaviors of both the institution itself and its constituent individuals. In this article, the first seven completed institution nitrogen footprint results are presented. The Nitrogen Footprint Tool Network aims to develop footprints for many institutions to encourage widespread upper-level management strategies that will create significant reductions in reactive nitrogen released to the environment. Energy use and food purchases are the two largest sectors contributing to institution nitrogen footprints. Ongoing efforts by institutions to reduce greenhouse gas emissions also help to reduce the nitrogen footprint, but the impact of food production on nitrogen pollution has not been directly addressed by the higher education sustainability community.
