Abstract The emerging world of 3D food printing is reviewed. Its role in food manufacturing, including benefits and impacts, underemphasized gastrophysical aspects, and limitations are discussed. Foods can be digitally designed and physically prepared using the layer-by-layer deposition of food components, unleashing opportunities to deliver nutritionally personalized food and new food-human interactions. Existing bottlenecks, under-researched gastropsychophysical aspects, and the lack of harmonized standards hindering its use for mass production are mentioned.

Annually, a substantial volume of food waste is being released into the environment. Restaurant food waste (RFW) valorization using microwave-assisted hydrolysis (MAH) is a sustainable approach to produce fermentable sugars. However, RFW is composed of different foodstuffs with different physicochemical, nutritional, and degradation rates. This study explored the typological, chemical, and elemental analysis of RFW. Results revealed that the four main types of RFW were vegetable (33.2 %), meat (19.3 %), rice (15.2 %), and bread waste (11.0 %). The key parameters impacting the MAH of typologically sorted RFW were identified using the Plackett–Burman design (PBD). Then the central composite design (CCD) with 30 runs was used to increase reducing sugar content (RSC). The optimized condition was as follows: temperature 96.0 °C, microwave power 340 W, HCl concentration of 1.45 %, and microwave heating time 11.1 min. The derived hydrolysates were characterized for their biochemical and monosaccharide composition.

This study compares cryogenic freezing (–80 °C and 0.5 m/s air velocity) and mechanical freezing (–40 °C and 4 m/s air velocity) conditions/methods on the quality of melon and apple tissues during a 90-day storage. Samples were analysed on the 7th, 30th, 60th, and 90th day for various qualities: pH, TSS, titratable acidity, total quality index, enzymology, vitamin C, firmness, colour, exudate, soluble protein, and microstructure. Results show pH, °Brix, titratable acidity, and total quality index changes after freezing. Trends differed between melon and apple. Melon pH increased after freezing, while apple pH decreased. Titratable acidity decreased post-freezing for both. °Brix in melon initially decreased but increased in apples with longer storage. Freezing conditions and storage durations affected total quality index. Melon firmness increased, while apple firmness decreased compared to fresh samples post-freezing. Freezing condition did not affect firmness, but storage duration impacted it. Colour was influenced by both freezing treatment and methods, as well as the duration of frozen storage for melons. The L* value decreased for both matrices following freezing treatment. The a* and b* values of apples increased after post-freezing treatment compared to fresh. The a* value of fresh and cryogenically frozen melons was similar. Colour differences were more pronounced for mechanically frozen samples, increasing during storage for apples, while a fluctuating trend was observed for melons. Apple samples exhibited a reduction in polyphenol oxidase (PPO) activity post-freezing, while peroxidase activity (POD) displayed some increase in melons. PPO activity was lower for cryogenic freezing, decreasing with storage, while POD activity was storage-duration impacted. Exudation was lower in cryogenic freezing for both matrices. Soluble protein content was higher in cryogenic frozen samples, though fluctuating. Cryogenic freezing slightly reduced pore sizes in apples, preserving microstructure better, unlike mechanical freezing which damaged cellular structure.

The communist takeover in 1975 and post-war developments in Cambodia, Vietnam and Laos catalyzed a massive exodus of refugees, some 125,000 of whom were resettled in France. Despite the growth, both in size and in complexity, of the Southeast Asian communities in France over the last five decades, little is known about these populations, and even less about the post-refugee generations, their identities, and politics, and especially their relationship to their parent’s traumatic history of migration. The invisibility of Asians in France has enabled myths and assumptions about these communities, both positive and negative, to persist unchallenged. This article aims to shed light on the post-refugee generations of Southeast Asians in France. Drawing insights from academics, researchers, journalists, filmmakers, writers, community organizers, and advocates, it engages some of the critical questions that inform the identity and politics of the Southeast Asian post-refugee generations in France, centering on questions of historical traumas and identity construction, representation, belonging, and activism. It advances the notion of refugee communities as sites of active knowledge production, and foregrounds refugee agency by giving voice to refugees and their descendants. In so doing, it aims not only to highlight experiences, concerns, and perspectives that have been obscured or marginalized but also to showcase the agency, resistance, and reclaim that are manifested in different ways, forms, and contexts in the individual and collective responses of Southeast Asians to the challenges that confront them in France.

This study investigated the effects of microwave-assisted freezing on the quality attributes of button mushrooms (Agaricus bisporus). Four levels of microwave power (0, 10, 20, 30%) were applied to the mushroom samples during freezing. The quality attributes of the frozen and thawed mushrooms were then evaluated. The results suggested that higher microwave power produced the smaller and more uniform ice crystals. Moreover, the browning index of the mushroom samples increased with increasing microwave power. The textural properties (hardness) of the mushrooms were also affected by the microwave power, showing higher values as the power increased. Furthermore, the ratio of the microwave operating system’s power to the freezer power was low and approximately 20% at the highest power level. Therefore, these findings confirm the potential of microwave-assisted freezing for reducing freeze damage to mushroom tissue and, thus, provide frozen mushroom with a better texture.

Summary: Background: Sweeteners and sweetness enhancers (S&SE) are used to replace energy yielding sugars and maintain sweet taste in a wide range of products, but controversy exists about their effects on appetite and endocrine responses in reduced or no added sugar solid foods. The aim of the current study was to evaluate the acute (1 day) and repeated (two-week daily) ingestive effects of 2 S&SE vs. sucrose formulations of biscuit with fruit filling on appetite and endocrine responses in adults with overweight and obesity. Methods: In a randomised crossover trial, 53 healthy adults (33 female, 20 male) with overweight/obesity in England and France consumed biscuits with fruit filling containing 1) sucrose, or reformulated with either 2) Stevia Rebaudioside M (StRebM) or 3) Neotame daily during three, two-week intervention periods with a two-week washout. The primary outcome was composite appetite score defined as [desire to eat + hunger + (100 − fullness) + prospective consumption]/4. Summary: Hepatocellular carcinoma (HCC) is an inflammation-associated cancer arising from viral or non-viral etiologies including steatotic liver diseases (SLDs). Expansion of immunosuppressive myeloid cells is a hallmark of inflammation and cancer, but their heterogeneity in HCC is not fully resolved and might underlie immunotherapy resistance. Here, we present a high-resolution atlas of innate immune cells from patients with HCC that unravels an SLD-associated contexture characterized by influx of inflammatory and immunosuppressive myeloid cells, including a discrete population of THBS1+ regulatory myeloid (Mreg) cells expressing monocyte- and neutrophil-affiliated genes. THBS1+ Mreg cells expand in SLD-associated HCC, populate fibrotic lesions, and are associated with poor prognosis. THBS1+ Mreg cells are CD163+ but distinguished from macrophages by high expression of triggering receptor expressed on myeloid cells 1 (TREM1), which contributes to their immunosuppressive activity and promotes HCC tumor growth in vivo. Our data support myeloid subset-targeted immunotherapies to treat HCC.

Background & Aims: Hepatocellular adenomas (HCAs) are rare, benign, liver tumours classified at the clinicopathological, genetic, and proteomic levels. The β-catenin-activated (b-HCA) subtypes harbour several mutation types in the β-catenin gene (CTNNB1) associated with different risks of malignant transformation or bleeding. Glutamine synthetase is a surrogate marker of β-catenin pathway activation associated with the risk of malignant transformation. Recently, we revealed an overexpression of glutamine synthetase in the rims of exon 3 S45-mutated b-HCA and exon 7/8-mutated b-HCA compared with the rest of the tumour. A difference in vascularisation was found in this rim shown by diffuse CD34 staining only at the tumour centre. Here, we aimed to characterise this tumour heterogeneity to better understand its physiopathological involvement. Methods: Using mass spectrometry imaging, genetic, and proteomic analyses combined with laser capture microdissection, we compared the tumour centre with the tumour rim and with adjacent non-tumoural tissue. Results: The tumour rim harboured the same mutation as the tumour centre, meaning both parts belong to the same tumour. Mass spectrometry imaging showed different spectral profiles between the rim and the tumour centre. Proteomic profiling revealed the significant differential expression of 40 proteins at the rim compared with the tumour centre. The majority of these proteins were associated with metabolism, with an expression profile comparable with a normal perivenous hepatocyte expression profile. Conclusions: The difference in phenotype between the tumour centres and tumour rims of exon 3 S45-mutated b-HCA and exon 7/8-mutated b-HCA does not depend on CTNNB1 mutational status. In a context of sinusoidal arterial pathology, tumour heterogeneity at the rim harbours perivenous characteristics and could be caused by a functional peripheral venous drainage. Impact and implications: Tumour heterogeneity was revealed in β-catenin-mutated hepatocellular adenomas (b-HCAs) via the differential expression of glutamine synthase at tumour rims. The combination of several spatial approaches (mass spectrometry imaging, genetic, and proteomic analyses) after laser capture microdissection allowed identification of a potential role for peripheral venous drainage underlying this difference. Through this study, we were able to illustrate that beyond a mutational context, many factors can downstream regulate gene expression and contribute to different clinicopathological phenotypes. We believe that the combinations of spatial analyses that we used could be inspiring for all researchers wanting to access heterogeneity information of liver tumours.

Cereal products, and in particular bread, are the main source of salt in human diets. However, salt is a critical ingredient in breadmaking, and its reduction can have a negative impact on bread quality. In order to respond to the World Health Organization (WHO)’s recommendation to reduce dietary salt intake, this research aims to develop a bread recipe ''reduced'' in salt (sodium chloride or SC) by -50 % and partly substituted by choline chloride (CC). The effect of CC on the properties of bread was studied during baking, cooling and storage of bread. It was observed that partially substituting SC with CC led to an improvement in bread texture. Indeed, CC bread was technologically similar to the control bread. In aqueous solution, CC behaves like an ionic liquid and causes a reorganization of the internal structure of the starch grain. As a result, the staling study highlighted the positive effect of CC on bread texture and on the starch retrogradation. CC limited amylopectin recrystallization by reducing water availability in the medium, consequently slowing down the staling of the bread.

Abstract During the different steps of bread-making, changes in the microstructure of the dough, particularly in the gas cell walls (GCW), have a major influence on the final bread crumb texture. Investigation of the spatial conformation of GCWs is still a challenge because it requires both high resolutions and 3D depth imaging. The originality of the present work lies in the use of label-free non-destructive multiphoton microscopy (NLOM) to image the 3D structure of GCWs, shedding light on their behavior and organization in wheat bread dough. We demonstrated that second and third harmonic generation (SHG, THG) allow imaging, respectively, of starch granules and interfaces in bread dough, while the gluten matrix was detected via two-photon excitation fluorescence (TPEF). Last, a distinction between the gluten network and starch granules was achieved using gluten endogenous fluorescence (EF) imaging, while the position, size, and 3D orientation of starch granules in GCWs were determined from harmonic imaging, made possible by the acquisition of backward and forward SHG with linear polarization. These innovative experiments highlight the strengths of NLOM for a label-free characterization of bread dough microstructure for the first time, in order to understand the role of starch granules in dough stabilization.

Abstract Unlike for advanced liver fibrosis, the practical rules for the early non-invasive diagnosis of cirrhosis in NAFLD remain not well defined. Here, we report the derivation and validation of a stepwise diagnostic algorithm in 1568 patients with NAFLD and liver biopsy coming from four independent cohorts. The study algorithm, using first the elastography-based tests Agile3+ and Agile4 and then the specialized blood tests FibroMeterV3G and CirrhoMeterV3G, provides stratification in four groups, the last of which is enriched in cirrhosis (71% prevalence in the validation set). A risk prediction chart is also derived to allow estimation of the individual probability of cirrhosis. The predicted risk shows excellent calibration in the validation set, and mean difference with perfect prediction is only −2.9%. These tools improve the personalized non-invasive diagnosis of cirrhosis in NAFLD.

The present article responds to the food engineering community’s growing interest in an emerging and lauded approach to food preservation, popularised by its developers as ‘isochoric freezing’. A strong campaign in the scientific literature and mass media has recently promoted this technique as a universal replacement for traditional food freezing and the frozen supply chain by highlighting a number of alleged advantages of ‘isochoric freezing’. Some of these claims therefore require a more neutral and critical assessment against the background of the today’s state of the art in food freezing technologies. Hence, this article spotlights several concerns regarding the plausibility, energy expenditure, resource efficiency, process rate, throughput and safety of ‘isochoric freezing’, as well as the correct use of food refrigeration terminology. The aspects considered are intended to make food scientists, technologists and engineers more aware of the real capabilities and the application perspectives of this still immature mode of refrigerated food processing.

This article aims to contribute to reflections on what makes occupational risk prevention sustainable, based on the analysis of the work of prevention advisors. It is rooted in a research-intervention commissioned by the Caisse Centrale de la Mutualité Sociale Agricole (MSA), as part of its 2021-2025 Occupational Health and Safety Plan. Firstly, the theoretical framework articulates three fields of the ergonomics literature: 1) the literature on sustainable prevention of MSDs, 2) the literature on the notions of sustainable work and decent work, and 3) the literature on the concept of sustainable development; together, this enables to identify an original reading grid to characterize sustainable prevention. Secondly, based on a retrospective analysis of six service relationships conducted by prevention advisors from four MSA with affiliated companies, we show that the quality of the service relationship is a condition for the sustainability of prevention. The prevention advisors aim to build unique and lasting relationships with their members. These relationships are a means of co-constructing actions that promote collective and primary prevention. Each prevention action is thus thought of as a part in a potential larger game that may (or may not) be actualized. These results are discussed along four axes in the light of the three fields of literature mentioned.

This article concerns workers who wish to further integrate sustainable development into their activities. It presents two workshops on a design support tool that supports the collaborative design of new work objects in this context. The workshops are based on: 1) eleven Characteristics of Sustainable Development (CSD) constructed from the ergonomics literature on sustainable development, and 2) the desire to understand the professional transition as a collaborative design process that supports projection into the future, mobilizes peers and promotes the expression of points of view. We analyze the collaborative design activity generated by the workshops during a day of support for a group of teacher-researchers in Sports Science. The results underline the decisive role of the workshops, and more specifically of the CSD, in the construction of a shared understanding between participants and in encouraging participants to engage in collaborative design activities simultaneously oriented towards the evolution of their work objects and towards a sustainable development goal. The CSD provide a framework for structuring thought while leaving total freedom in the meaning and interpretation of the ideas, as they are sufficiently “vast” for the participants to appropriate and “manipulate” them. The workshops help us to reflect on the issues of sustainable development and to promote a constructive debate on these issues. We discuss the limits of the existing workshops, tool and study. We conclude with the perspectives of applying this tool to other worker groups.
