1. Urbanization associates with restricted gut microbiome diversity and delayed maturation in infants

Abstract

Summary: Alterations of the microbiome are linked to increasingly common diseases such as obesity, allergy, and inflammatory bowel disease. Post-industrial lifestyles are thought to contribute to the gut microbiome alterations that cause or aggravate these diseases. Comparing communities across the industrialization spectrum can reveal associations between gut microbiome alterations and lifestyle and health, and help pinpoint which specific aspect of the post-industrial lifestyle is linked to microbiome alterations. Here, we compare the gut microbiomes of 60 mother and infant pairs from rural and urban areas of Senegal over two time points. We find that urban mothers, who were more frequently overweight, had different gut microbiome compositions than rural mothers, showing an expansion of Lachnospiraceae and Enterobacter. Urban infants, on the other hand, showed a delayed gut microbiome maturation and a higher susceptibility to infectious diseases. Thus, we identify new microbiome features associated with industrialization, whose association with disease may be further investigated.

Abstract

Salt and dietary sodium are ubiquitously present in daily food practices and, at the same time, reducing salt intake presents an important public health issue. Given such an ambivalent position of salt in human diet, we argue that public health guidelines toward dietary sodium reduction require an eater-oriented knowledge framework. In this article we are making the first steps toward a flexible interdisciplinary database which would include nutritional, socio-economic, cultural, material, and socio-psychological determinants of salt consumption for comprehensive public health campaigns. We employ an explorative scoping review of academic articles and reports, limiting our review to the original data on salt or sodium consumption published in English or French between 2000 and 2022. We describe salt consumption as research object, identifying its representation in different research fields, data sources, methodologies, samples, and links with nutritional recommendations. We synthesize existing approaches via four eater-oriented categories: Socio-demographic and cultural descriptors of salt consumers; Knowledge, attitudes, and beliefs on nutritional norms; Salt practices associated with dietary or medical regimes; Salt materialities: interactions and contexts. In each category, we identify the dominant relational features, i.e., what kind of ‘eater-salt’ relation is being put forward. We thus build an interdisciplinary documentary base of dietary sodium consumption factors. We discuss the results, suggesting that comprehensive nutritional policies for global salt reduction require interdisciplinary eater-oriented data frameworks.

Abstract

This article focuses on parental perceptions of signs of hunger and satiety in children under 4 years of age and their effects on feeding practices, in a sample of parents of children with typical development. Discourse analysis shows the close relationships between social food norms, nutritional norms, medicalized child care norms, and educational norms in adults’ determination of children’s appetites according to their perceived needs and psychomotor development. The results also indicate how these norms are expressed according to social position, parental experience and context. More broadly, this article addresses top-down education—from adults to children—in food socialization, and points to the varying attention paid to the signals given by the child. It thus highlights some of the processes by which biological, psychological and social factors interact in socializing children to food.

Abstract

International audience; Globalization is transforming food systems around the world. With few geographical areas spared from nutritional, dietary and epidemiological transitions, chronic diseases have reached pandemic proportions. A question therefore arises as to the sustainability of local food systems. The overall purpose of this article is to put in perspective how local food systems respond to globalization through the assessment of five different case studies stemming from an international research network of Human-Environment Observatories (OHM), namely Nunavik (Québec, Canada), Oyapock (French Guiana, France), Estarreja (Portugal), Téssékéré (Senegal) and Littoral-Caraïbes (Guadeloupe, France). Each region retains aspects of its traditional food system, albeit under different patterns of influence modelled by various factors. These include history, cultural practices, remoteness and accessibility to and integration of globalized ultra-processed foods that induce differential health impacts. Furthermore, increases in the threat of environmental contamination can undermine the benefits of locally sourced foods for the profit of ultra-processed foods. These case studies demonstrate that: (i) the influence of globalization on food systems can be properly understood by integrating sociohistorical trajectories, socioeconomic and sociocultural context, ongoing local environmental issues and health determinants; and (ii) long-term and transverse monitoring is essential to understand the sustainability of local food systems vis-à-vis globalization.

Abstract

Cet article étudie les attentes et les aspirations des Bamakois et Bamakoises (habitants de la capitale du Mali) concernant leur alimentation. Dans un contexte de transition alimentaire en milieu urbain, il s'intéresse à la façon dont les représentations de l'alimentation et à travers elles, les modèles alimentaires, se déploient entre attentes liées au manque et à la faim et celles relatives au plaisir ou encore à la santé. L'analyse est basée sur une enquête menée à Bamako entre 2012 et 2013 auprès de 310 femmes et hommes âgés d'entre 18 et 70 ans, de différents niveaux socio-économiques. Elle aborde les craintes face à l'alimentation, ainsi que les représentations du " bien manger " et les besoins et aspirations des habitants de Bamako relatifs à la nourriture. L'analyse des craintes, des attentes et des aspirations reflète à la fois, l'hétérogénéité des niveaux de vie et des situations sociales qui forment le cadre des mutations en cours dans la capitale et, avec elle, la cohabitation de modèles alimentaires organisés dans certains cas, autour du manque et de la pénurie, et dans d'autres, du choix voire de l'abondance.

10. MIGRANTS AS BROKERS OF FOOD HERITAGE MAKING: A CASE STUDY OF THE BARIO FOOD AND CULTURAL FESTIVAL IN BORNEO, SARAWAK, MALAYSIA

Abstract

The communities’ ability to control heritage has been questioned and analysed in a broader perspective of socio-cultural cohesion and power. However, a research gap exists regarding the capabilities developed by the indigenous communities to collectively empower themselves by appropriating external resources such as research and development projects. To address this gap, we investigate the Kelabit socio-political configuration related to food heritage through the lens of the anthropology of brokers. The empirical basis of this contribution includes participant observation of the 11th edition of the Bario Food and Cultural Festival (Borneo, Sarawak, Malaysia) as well as semi-structured interviews with the Kelabit community members – local, diaspora and counter diaspora – and representatives of tourism and heritage. Overall, our findings unveil networked food heritage practices with outside agents and notably national and global academic institutions. Consequently, the analysis reveals the trans-identity capabilities of the Kelabit migrants in interfacing the local community with a range of stakeholders - and more specifically research networks – thereby adopting the role of cultural brokers. In doing so, the Kelabit people contribute to the intricate co-production of the definition of the Kelabit food heritage.

Abstract

International audience; The Malaysian society is undergoing rapid modernisation. The emerging middle class in Malaysia is influencing the lifestyles and traditional food habits of the main three ethnics (i.e. Malays, Chinese, and Indians). This article studied the impact of compressed modernisation on food in a multicultural context. The Malaysian Food Barometer (MFB), published in the year 2014, focuses on the socio-cultural determinants of food habits in Malaysia. Methods: The methodsapplied in the study were qualitative and quantitative surveys of the food barometersdeveloped at the national level to study the transformation of eating habits. The surveys studied the socio-economic, demographic, and cultural determinants of food consumption, as well as identifying their possible influences on healthissues. Results: The results showed two major distinguishing characteristics of Malaysian food patterns, i.e. linking with Malaysia’s multi-ethnicity background and the high frequency of foods consumed outside of home by the urban population. Conclusion: The article concluded that like many societies in transition, Malaysiahas to face a rise in the prevalence of overweight. However, with its multicultural characteristics, it becomes a privileged empirical field of observation for the analysis of modernisation modalities of diet models among different ethnic groups.

Nous avons voulu saisir les logiques qui sous-tendent ces ajustements et la façon dont ils participent à l’appropriation des modèles alimentaires par les tout-petits. Les entretiens auprès des parents montrent que ces apprentissages prennent appui sur les préférences de l’enfant pour le sucré et son rapport au jeu.

International audience; This article focuses on the food models of Senegal's Fulani populations, more precisely on two groups: one living in the sylvo-pastoral zone of Ferlo (north-eastern Senegal) and the other from Ferlo, but settled in the country's capital, Dakar. The analysis focuses on the differences but also on the common elements in their food habits and on the plurality of influences but also of change processes. Attention was paid to the forms of sociability and the content of meals, and in particular to the presence of elements considered emblematic markers of the Peul culture by the participants themselves. The objective was to identify possible transformations and continuities in culinary and food practices, but also the perceptions of the women themselves regarding the status of certain cultural markers in this context.; Cet article porte sur l’alimentation des populations peules du Sénégal, plus précisément sur deux groupes de femmes : l’un vivant dans la zone sylvo-pastorale du Ferlo (Nord Est du Sénégal) et l’autre issu du Ferlo et installé dans la capitale du pays, Dakar, depuis au moins dix ans. L’analyseporte sur les différences mais aussi les éléments communs dans l’alimentation de ces populations et sur la pluralité des influences mais aussi, des processus de changements. L’attention a été portée sur les formes de sociabilité et les contenus des repas, et notamment sur la présence d’éléments considérés comme des marqueurs emblématiques de la culture peule par les participants eux-mêmes. L’objectif était de repérer d’éventuelles transformations et continuités dans les pratiques culinaires et alimentaires mais aussi les perceptions qu’ont les femmes en particulier sur le statut de certains marqueurs culturels, dans ce contexte.

17. La construction sociale de « l’en commun » par la consommation

Abstract

Au sein de societes multiculturelles comme La Reunion ou la Malaisie, l’alimentation joue un role central dans la construction d’une identite collective fondee sur les migrations multiples. L’histoire de la cuisine creole reunionnaise, comme celle des repas entre communautes en Malaisie en sont deux exemples frappants. Le partage de mets, de plats, de recettes, la commensalite faisant de chacun un compagnon de tablee contribuent en effet, le temps d’un repas, au dialogue des cultures. Ainsi, la consommation alimentaire offre-t-elle un espace de construction de l’en commun tout en laissant s’exprimer les differences.

Abstract

International audience; Image association influences the public’s risk perception. Several studies have investigated these associated images such as on nuclear waste repositories. It has also been reported that image association factor has a significant impact on the perceived risk of health effects of radioactive substances in food released from the Fukushima nuclear power plant accident. The objective of this study was to identify the associated images of that and their origins. The survey was conducted employing focus group interviews in Japan and France, in which the participants were asked to present and describe the pictures representing their risk images. Relatively similar findings were obtained in both countries. Serious image categories (such as ‘severe health effects’, ‘fear of the invisible’, ‘spreading and accumulation’, ‘heightened dread and despair’) and their origins (visual media concerning the victims of atomic bombings in Hiroshima and Nagasaki, as seen during childhood) were identified. For the Japanese case it was found that the effect of the Fukushima accident with low-dose exposure was perceived as extremely serious image and that the image was evoked from the memories of high dose exposure in the past. The cognitive mechanisms and some implications for risk communication were discussed.
