In order to study the effect of germinated mung bean powder on the quality and nutrition of yogurt,different varieties of mung bean were selected in this paper,germinated mung bean sprout powder and pure milk as raw materials,Lactobacillus bulgaricus and Streptococcus thermophilus as fermentation strains,solidified germinated mung bean yoghurt was developed by single factor and orthogonal test; The contents of vitexin,isovitexin and cellulose in the germination mung bean powder were determined by high performance liquid chromatography and enzyme-weight method to explore the effects of adding germination mung bean powder on the quality and nutrition of yogurt.The results showed that the addition of germinated mung bean powder could strengthen the tissue structure of yogurt,increase the number of viable lactic acid bacteria,and give the yogurt a unique mung bean flavor; Moreover,the addition of germinated mung bean powder could enhance the antioxidant properties of yogurt,increase soluble dietary fiber,beneficial ingredients such as vitexin and isovitexin,and give yogurt physiological health functions.The best process for coagulated germination mung bean yogurt was:adding 2% germination mung bean powder,7% sucrose,0.3% CMC stabilizer,adding starter at the ratio of 1.5 g/L,and incubating at 42 ℃ for 5 hours.Under these conditions the germinated mung bean yogurt had a stable structure and good flavor and taste.

To study the effect of mung bean germination on its antioxidant activity.Experimental design mung bean germination for 6 days,the antioxidant content of total phenol,flavonoid,vitamin C,antioxidant ability DPPH clearance rate,–OH clearance rate,total reduction ability were selected as indicators,combined with correlation,significance analysis and other methods to analyze the changes of each indicator.The results showed that content of total phenols and flavones increased first and then decreased,vitamin C increased all the time,and the index of antioxidant capacity increased first and then decreased.The total phenol content reached its maximum on the 4th day of germination,and varied from 0.5612 mg/g to 0.7237 mg/g on the 1st to 4th day,increased by 28.95%.On the 3rd day of germination,the flavonol content reached the highest level.The flavonol content varied from 0.6605 mg/g to 0.6974 mg/g on the 1st to 3rd day,increased by 5.59%.Vitamin C varied from 0.7833 mg/100 g to 7.4500 mg/100 g on the 1st to 6th day.From 1st to 3rd day,DPPH clearance rate,–OH clearance rate and total reduction capacity reached the highest levels of 99.28%,97.00% and 79.26% respectively,increased by 4.68%,1.04% and 46.76% respectively.

This study compared the fungal flora of newly harvested rice in 2017 and that stored for 1 year by traditional culture method and metagenomics techniques. Results showed that the fungi flora in rice changed from various field fungi flora to the storage fungi dominant florasuch as Aspergillus and Penicillium. The results of the two used methods are highly consistent. Exploring the composition and transformations of fungal flora of newly harvested rice and that stored for 1 year can provide important guidance for the prevention of mildew during long-distance transportation.

The complete mitogenome sequence of the taiga shrew (Sorex isodon) was determined using long PCR. The genome was 17,008 bp in length and contained 13 protein-coding genes, two ribosomal RNA genes, 22 transfer RNA genes, one origin of L strand replication and one control region. The overall base composition of the heavy strand is A (32.5%), C (24.5%), T (28.5%), and G (13.5%). The base compositions present clearly the A–T skew, which is most obviously in the control region and protein-coding genes. The extended termination-associated sequence domain, the central conserved domain and the conserved sequence block domain are defined in the mitochondrial genome control region of the taiga shrew. Mitochondrial genome analyses based on MP, ML, NJ, and Bayesian analyses yielded identical phylogenetic trees. The eight Sorex species formed a monophyletic group with the high bootstrap value (100%) in all examinations.

A total of 64 haplotypes were obtained from the complete Cytochrome b gene (Cyt b) of 77 Sorex isodon collected from three populations (Daxing'anling, Xiaoxing'anling, and Changbai Mountains) in Northeast China. The haplotype diversity was 0.9920 and the nucleotide diversity was 0.0105, indicating high genetic diversity. The genetic diversity of Changbai Mountains population was significantly higher than that of Daxing'anling and Xiaoxing'anling populations. The F-statistics, the number of migrants per generation and the genetic distance results showed that the genetic distances among the populations and among the sampling sites were generally consistent with geographical distance. Analysis of molecular variance showed that the differentiation among populations, among sampling sites, and within sampling site accounted for 33.4%, 10.2% and 56.4% of total variation, respectively. The analysis of population history showed that S. isodon in Northeast China experienced no population expansion. The reported complete sequence of Cyt b gene of S. isodon (GenBank) of Europe and other parts of Asia was downloaded to examine the genetic structure of S. isodon. The phylogenetic tree was divided into two large branches. One branch consisted mainly of Daxing'anling and Xiaoxing'anling samples. The other branch was departed into two sub-branches. Median-joining network analysis showed that there were three lineages: one lineage mainly consisted of haplotypes from Daxing'anling and Xiaoxing'anling, and also four haplotypes of Changbai Mountains, while the other lineage included a few haplotypes of three populations in Northeast China, and those from Baikal Lake, Russia and Finland. The last lineage was entirely composed of haplotypes from Changbai Mountains. The results of genetic diversity, phylogenetic tree and median-joining network all suggested that the Changbai Mountains was the refuge for S. isodon during last glacial.

Objective: To investigate the proliferation of tissue-engineered cartilage cells stimulated by different intensities of compressive stress., Methods: Human embryonic cartilage cells were seeded into type II collagen sponge scaffold. The cells of the pressure groups were stimulated by different compression rate (0-5%, 0-10%, and 0-20%) at a cyclical frequency of 0.1 Hz. The cells of the control group were cultured without pressure. Gross observation, histological section, MTT assay and flow cytometry were used to observe the morphology, cell number and distribution and detect the cell proliferation and cell cycle., Results: Tissue-engineered cartilage cells in 0-10% group showed the largest size and greatest thickness with normal morphology. Tissue biopsies showed the largest number of cartilage cells with more uniform distribution, close alignment, more matrix secretion. The cartilage cell activity was significantly enhanced and the percentage of S phase cells significantly increased in the pressure group compared with those in the control group, and such changes were especially obvious in 0-10% group in which the S phase cells increased by 59.0% compared with that in the control group., Conclusion: The proliferation of tissue-engineered cartilage cells is regulated by the cyclic stress intensity, and a pressure frequency of 0.1 Hz with compression rate of 0-10% can better promote the cell proliferation.
