The objective of this study was to evaluate the effect of storage time on albumen quality, incubation yield, and hatch window in Pekin ducks (Anas boschas). A total of 1302 eggs were randomly distributed to seven treatments according to the storage time with durations ranging from 1 to 14 days. Each treatment consisted of 186 eggs with a two-day storage interval between treatments. The pH and Haugh unit (HU) of the albumen, egg weight loss during incubation (WL), hatchability (HTCH), incubation duration (ID), hatch window, asymmetry (ASS), percentile kurtosis (PK), and embryonic mortality were analyzed. A linear effect was observed forthe WL, ID, and PK and a quadratic effect forpH, HU, and HTCH over time. No significant effect of storage time was observed on ASS. Post-pipping embryonic mortality was linearly affected by storage time. Prolonging the storage period above 10 days reduces albumen quality and hatchability, delays the hatch of Pekins, and results in a higher percentage of post-pipping mortality.

The survey covered 30 Brazilian feedlots located in the five major beef-producing states. Samples of total mixed ration (TMR) and ingredients were collected and analyzed for mycotoxin using ultra-performance liquid chromatography coupled to tandem mass spectrometry. Mycotoxin concentrations were further interpreted according to known species-specific sensitivities and normalized according to the principles of toxic equivalent factors (risk equivalent quantities - REQ) expressed in mu g kg(-1) of aflatoxin B1-equivalent. Forty percent of the visited feedlots had apparent fungi in TMR. However, only one feedlot (3%) used a mycotoxin adsorbent. On the other hand, diets with high contamination presented no apparent fungi. One hundred percent of TMR was contaminated. All samples presented at least one mycotoxin contamination, with 65.5% considered low contamination, 27.6% medium contamination, and 6.90% high contamination. The toxins identified in TMR were fumonisins (most frequently), trichothecenes A, trichothecenes B, fusaric acid, aflatoxins, and ergot (mean concentration values: 2,330, 104.3, 79.5, 105, 10.5, and 5.5 mu g kg(-1), respectively). According to the contamination of TMR samples per region, Mato Grosso do Sul state presented the highest contaminations. Peanut meal was the most contaminated ingredient. One hundred percent of TMR in Brazilian feedlot is contaminated. Fumonisins were the mycotoxin most frequent and at highest concentrations in TMR samples. Moreover, mycotoxin concentrations have a distinct pattern among ingredients, TMR, and feedlots (local). The objective was to evaluate the effect of mycotoxins and yeast-derived adsorbent on performance of Nellore cattle finishing in feedlot. One hundred Nellore cattle (430 ± 1.0 kg and 24 mo) were used. At the beginning of the experiment, 4 randomly selected animals were slaughtered to determine the initial hot carcass weight (HCW). The experiment was conducted in a 2 × 2 factorial arrangement of treatments consisting of two diets with natural contamination (NC) or exogenous contamination (EC) and presence (10g/hd daily) or absence of yeast-derived adsorbent (YDA). The diets with NC and EC had the following contamination levels: aflatoxin 0 and 10 µg/kg, fumonisin 5,114 and 5,754 µg/kg, trichothecenes B 0 and 42.1 µg/kg, trichothecenes A 0 and 22.1 µg/kg, fusaric acid 42.9 and 42.9 µg/kg and REQ 15 and 45 µg/kg, respectively. The REQ is the risk equivalency quantities expressed in µg/kg of AFB1-equivalent, which is mycotoxin concentrations interpretation according to known species specific sensitivities and normalized according to the principles of toxic equivalent factors. After 97 days of experiment, remaining animals were slaughtered and the HCW was obtained for determination of the carcass gain. There were no main effects or interactions of treatment factors for final weights (P = 0.40; 597, 592, 581 and 586 kg for NC, NC+YDA, EC and EC+YDA, respectively), DMI (P = 0.92; 12.7, 12.6, 12.0 and 12.0 kg, respectively or ADG (P = 0.37; 1.72, 1.67, 1.56 and 1.62 kg, respectively). However, there were interactions between factors for carcass gain (P < 0.08; 1.20, 1.14, 1.05 and 1.12, respectively) and for dressing (P < 0.04; 57.2, 56.6, 56.2 and 56.8, respectively), as a detrimental effect of EC was partially counteracted by YDA. In conclusion, mycotoxins reduce the carcass gain and dressing percent of the animals and the yeast-derived adsorbent alleviates this damage.

SUMMARY Salmonellosis is one of the most common worldwide zoonosis, and the Enteritidis and Typhimurium serotypes are most prevalent. In this study, we evaluated the effects of a diet supplemented with mannanoligosaccharides (MOS) on CD3+ ,C D4+ ,C D8+, and goblet cell counts in the intestines of broilers vaccinated and challenged with Salmonella Enteritidis. The evaluation was based on randomized experiments including 45 chickens divided into 3 experimental groups. Group 1 received a nonsupplemented control diet. Group 2 received a diet supplemented with 1 kg MOS/t from d 1 to 21 and 0.5 kg MOS/t from d 22 to 56. Group 3 received a diet supplemented with 2 kg MOS/t from d 1 to 21 and 1 kg MOS/t from d 22 to 56. Chickens fed the lower level of MOS demonstrated reduced fecal shedding of Salmonella 14 d after being challenged (P < 0.05). Both groups of MOS-supplemented chickens showed an increase in CD4+ and CD8+ cell counts in the ileal and cecal mucosa after being challenged with Salmonella Enteritidis (SE). Supplementation with MOS increased the specific T lymphocyte infiltration in the intestinal mucosa of chickens vaccinated and challenged with Salmonella Enteritidis.

Com a proibição do uso de antibióticos como melhoradores de desempenho, aumentaram as pesquisas para desenvolver produtos alternativos que fossem eficientes para melhorar o desempenho zootécnico dos animais de produção e manter a saúde intestinal deles, por meio da redução de patógenos e da imuno modulação do trato gastrointestinal. O uso de probióticos já é conhecido há muito tempo, entretanto os mecanismos de ação destes produtos e a interação deles com o organismo animal hospedeiro estão sendo mais profundamente pesquisados agora. Sabe-se que os probióticos auxiliam no equilíbrio da microbiota intestinal, podendo, por meio deste efeito, melhorar o desempenho dos animais. Esta atividade se dá pela produção de diferentes metabólitos com ação antimicrobiana e também pela competição por sítios de ligação com bactérias patogênicas na mucosa do trato gastrointestinal ou através de imunomodulação no organismo animal. Devido a todas as ações dos probióticos, eles são utilizados como melhoradores de desempenho animal e também podem ser uma ferramenta para controle de enterobactérias de importância em saúde pública. As antibiotics growth promoters have been banned from animal feed, probiotics have received special attention as alternative products to enhance performance from livestock and keep their gastrointestinal health. Probiotics benefits are known since long time ago, however, the mechanisms of action of these products are being better researched now. Is known that probiotics could balance intestinal microbiot and due to this, they can improve animal performance. This activity is due to the production of different metabolites with antimicrobial activity and competition by bind sites on gastrointestinal mucosal. Due to all this probiotic actions, they are recommended as animal growth promoters and also may be an important tool to control enterobacterias considered risky to public health.

SUMMARY Different periods of hatching, called hatch windows, occur inside the same hatchery and birds’ development could be affected by this. This study evaluated morphology of the intestinal mucosa and gizzard, and the presence of CD3+ cells in thymus, spleen, and intestinal mucosa in broiler chicks hatched from different egg weights and in different hatch windows. Eggs from breeders at 38 wk of age were evaluated in a factorial 3 × 2 experimental design, with 3 hatch windows (hatching before 472 h of incubation, between 472 and 488 h of incubation, and between 488 and 504 h of incubation) and 2 egg weights (lightweight and heavyweight). Prematurely hatched chicks remaining inside the hatchery for longer periods presented improved koilin membrane development in the gizzard, and smaller presence of CD3+ cells in thymus, spleen, and ileum compared with those birds that hatched close to the standardized time for hatchery opening.

Para avaliar o efeito do probiótico sobre a resposta imunológica de frangos de corte desafiados com Salmonella Minnesota (SM), 60 frangos foram divididos em três grupos: CN- (controle negativo) aves que não foram inoculadas com SM, CP- (controle positivo) aves inoculadas com SM e Probiótico- aves suplementadas na ração com probiótico composto de Lactobacillus acidophilus, L. plantarium, L. rhamnosus, L. bulgaricus, Enterococcus faecium, Streptococcus thermophilus e Bifidobacterium bifidum e desafiadas com SM. Aos 14 dias foi realizada a inoculação com SM e aos 7 e 35 dias foram quantificadas células caliciformes, CD4+ e CD8+ na mucosa intestinal do íleo e ceco. Aves suplementadas com probióticos aos 7 dias de idade apresentaram aumento significativo (P≤0,05) de células caliciformes e CD4+ no íleo e de células CD8+ no ceco. Aos 35 dias houve aumento significativo (P≤0,05) das células CD8+ nas aves inoculadas do CN e Probiótico. A utilização de probióticos proporcionou redução significativa (P≤0,05) da contagem de Salmonella sp.

The use of Bacillus subtilis (BS) as a probiotic in bird feed was studied through the evaluation of its effect on th e infiltration of immune cells in the ileum and cecum mucosa of chickens challenged with Salmonella Minnesota (SM). The birds were divided into three treatment groups; Negative control, containing unchallenged birds; Positive control, with SM challenged birds; and Probiotic, with SM challenged birds fed with a diet containing BS (DSM 17299 2.13 x 10 cfu/g). The birds fed BS showed increased goblet and CD4+ 6 cell counts in the ileum and cecum before being challenged with SM in comparison to the birds not fed BS. After the SM challenge, the birds fed BS showed a reduction in the Salmonella counts at 48 Post Inoculation (PI) in the cloaca and cecum swabs and in litter samples and furthermore a reduction in CD8+ cells in the cecum compared to the challenged birds. Based on the results, it is concluded that feeding BS as a probiotic to broilers reduced the Salmonella spp. counts and thus, affected the mobilization of CD4+ and CD8+ cells in the ileum and cecum mucosa.

Este trabalho foi conduzido com o objetivo de avaliar a eficiência de um composto vegetal contendo óleo essencial de orégano, alecrim, canela e extrato de pimenta vermelha no controle de Salmonella, Eimeria e Clostridium em frangos de corte. Para tal, foram realizados dois experimentos. No primeiro avaliou-se a eficiência deste produto no controle de Clostridium perfringens após desafio com Eimeria acervulina, E. maxima e E. tenella. Aves de um dia de idade foram divididas em três grupos: T1 - dieta controle sem aditivo promotor de crescimento; T2 - dieta com adição de avilamicina (10ppm); e T3 - dieta com adição do composto vegetal (100ppm). O uso do composto vegetal na alimentação de frangos reduziu lesões específicas de E. maxima e E. tenella aos 14 dias pós-inoculação (PI) como também reduziram a contagem de unidades formadoras de colônias (UFC) de Clostridium perfringens no conteúdo do ceco das aves em relação ao grupo controle. No segundo experimento avaliou-se a eficiência deste mesmo produto em aves desafiadas com Salmonella Enteritidis. Aves de um dia de idade foram distribuídas em três tratamentos, sendo T1 - dieta controle sem adição de antibiótico promotor de crescimento, T2 - dieta com 10ppm de Avilamicina, T3 - dieta com 100ppm de um produto a base do composto vegetal acima citado. Aos 21 dias de idade todas as aves foram inoculadas com 10(5) UFC de Salmonella Enteritidis. A utilização do composto vegetal e avilamicina diminuiu a excreção de Salmonella nas aves 72 horas PI de Salmonella. A utilização do composto vegetal aumentou a relação vilo/células CD3+ no duodeno, em relação ao grupo avilamicina e controle, porém não teve efeito sobre a expressão destas células no ceco. The efficiency of a product in broiler feed containing essential oil of oregano, rosemary, cinnamon and extract of red pepper (plant compost) in the control of Salmonella, Eimeria and Clostridium was evaluated. Two experiments were carried out to evaluate the product. In the first experiment the efficiency of this product to control Clostridium perfringens after challenge with Eimeria acervulina, E. maxima and E. tenella was assessed. Day old chicks were allotted into three groups: T1 - control diet without growth promoter, T2 - diet with avilamycin (10ppm), and T3 - diet with addition of the plant compost (100ppm). The use of the plant compost in broiler diets reduced specific lesions of E. maxima and E. tenella at 14 days after inoculation and reduced the count of colony forming units (CFU) of Clostridium perfringens in the ceca comparing to the control group. In the second trial the efficiency of the same product in birds challenged with Salmonella Enteritidis was evaluated. Day old birds were submitted to three experimental diets: T1 - control diet without antibiotics growth promoter, T2 - diet with 10ppm Avilamycin, T3 - diet with 100ppm of the plant compost mentioned above. At 21 days of age all birds were inoculated with 10(5) CFU of Salmonella Enteritidis. The use of the plant compost and avilamycin decreased the excretion of Salmonella in poultry 72 hours after the inoculation. The use of the plant compost increased villous/CD3+ cells in the duodenum, compared to group avilamycin and control, but had no effect on the expression of these cells in the cecum.

Ninety-six Nellore cattle were used, (430 ± 1.0 kg and 24 mo). The treatment design was a 2 × 2 factorial arrangement consisting of two diets with natural contamination (NC) or exogenous contamination (EC) and presence (10g/hd daily) or absence of yeast-derived adsorbent (YDA). The diets with NC and EC had the following contaminations levels: aflatoxin 0 and 10 µg/kg, fumonisin 5114 and 5754 µg/kg, trichothecenes B 0 and 42.1 µg/kg, trichothecenes A 0 and 22.1 µg/kg, fusaric acid 42.9 and 42.9 µg/kg and REQ 15 and 45 µg/kg, respectively. After 97 days of experiment, all animals were slaughtered and the carcasses were stored in a chilling chamber at 4ºC. Three steaks from longissimus (2.5 cm thick) were cut between 11L*, a*, b*), cooking losses, shear force and chemical composition were analyzed. The L*, a* and b* colors were similar among factors (P ≥ 0.38), as was the cooking loss (P = 0.94; 32.4, 32.5, 33.1, 31.0%, for NC, NC+YDA, EC, EC+YDA respectively) and the shear force (P = 0.50; 6.8, 6.9, 6.8, 6.5 kgf, respectively). The chemical composition also was unaffected (P ≥ 0.61) by the treatments and the average of variables were 74.2% for moisture, 22.7% for CP, 1.04% for EE, and 2.10 for ash. In conclusion, at this level of contamination mycotoxin and yeast-derived adsorbent do not affect the meat quality of finishing Nellore cattle in feedlot. Key Words

The present study was designed to compare the ability of different probiotics, applied in feed, to reduce Salmonella colonization and interfere with the cellular dynamics in the intestinal mucosa of broilers challenged with Salmonella enterica enterica sorovar Minnesota (SM). The following probiotics were used: A composed of Bacillus subtillis CCT 7711; B containing Lactobacillus acidophilus, Lactobacillus plantarum, Lactobacillus rhamnosus, Lactobacillus bulgaricus, Enterococcus faecium, Streptococcus thermophilus, and Bifidobacterium bifidum; C consisting of Bacillus subtilis DSM 5750; and D with Enterococcus faecium. All tested probiotics were able to significantly reduce the Salmonella counts in cloacal swabs assessed at 48 h after inoculation when compared with the positive control. All probiotics were able to reduce the Salmonella counts in the cecum when compared to the positive control at 35 days. None of the tested probiotics reduced the Salmonella counts in the crop of broilers at 35 days of age. All probiotics induced an increase in the CD4 + and CD8+ cell counts in the cecum mucosa relative to the negative control group at 7 days of age; only probiotics C and D, reduced significantly the CD8 + cell counts in this same tissue of broilers at 35 days compared to positive control group. The results from this study indicated that the tested probiotics presented different effects on the reduction of SM counts and affected the cell dynamics in the cecum mucosa of broilers differently.

Dog bites are the third most common cause of absenteeism among postal workers of the Brazilian National Postal Service in Southern Brazil, with an average off-work time of approximately two days for each biting episode. The objective of this study was to evaluate the neighborhood characteristics involving dog bites that occurred during work time in postal workers, its impact on work and consequent preventive alternatives. A descriptive and analytical cross-sectional study was designed for all Curitiba postal workers. Data were descriptively analyzed and the hypothesis of correlation between median monthly income, population density and occurrence of dog bites was tested. A total of 34.9% of the postal workers answered the questionnaire and 64.6% of them had been bitten while working. The odds of bites occurring in a neighborhood increase by 1.035 times for every increase in one unit in the population density and decrease by 0.998 times for every increase of US$ 1.00 in the neighborhood median monthly income of the head of the family. The occurrence of dog bites among postal workers in Curitiba is related to income and population density and prevention strategies should address mailbox position and adequate fencing to provide protection for postal workers.
