Tato diplomová práce se zabývá obsahem polyfenolových látek ve vybraných vzorcích superpotravin. Dále byl studován i vztah mezi obsahem polyfenolových látek a antioxidační aktivitou. V teoretické části jsou uvedeny charakteristiky superpotravin, jejich účinky na lidské zdraví, dále principy kapalinové chromatografiea extrakčních metod. V experimentální části byly polyfenolové látky identifikovány a kvantifikovány pomocí HPLC s detektorem CoulArray. Dále byl stanoven celkový obsah polyfenolových látek metodou dle Folin-Ciocalteua. Antioxidační aktivita byla stanovena pomocí metod DPPH a ABTS. V závěru práce jsou získané výsledky diskutovány a jednotlivé superpotraviny jsou porovnány s publikovanou literaturou i mezi sebou na základě jejich antioxidační aktivity a obsahu polyfenolových látek., This diploma thesis deals with the content of polyphenols in selected samples of superfoods. The relation between the content of polyphenols and the antioxidant activity was also studied. The theoretical part is focused on the characteristics of superfoods, their effects on human health, further the principle of liquid chromatography and extraction methods. In the experimental section, polyphenols were identified and quantified by HPLC with CoulArray detector. In addition, the total amount of polyphenols was determined by the Folin-Ciocalteu method. Antioxidant activity was determined using the DPPH and ABTS methods. Tato bakalářská práce se zabývá aminokyselinami, jejich vlastnostmi a stanovením, se zaměřením na prolin. V experimentální části byl stanoven obsah prolinu spektrofotometrickou metodou ve 25 vzorcích medovin z obchodních řetězců, ale i od soukromých výrobců.
