To determine whether persimmon peel (PP) showing high chitinase activity could alleviate the detrimental dietary effects of chitin-rich shrimp meal (SM), we assessed the laying performance, nitrogen (N) balance, and egg quality of laying hens provided with SM diets containing PP. We also examined the color and antioxidant properties of egg yolk, as we anticipated these would be improved by providing SM and PP. Seventy-two laying hens (45 weeks of age) were allotted to one of the nine dietary treatments (eight hens each), namely three levels of SM (0%, 10%, and 15%)×three levels of PP (0%, 6%, and 8%), and fed with the experimental diets over a period of 6 weeks. Hen-day egg production, feed intake, egg mass, feed conversion ratio, and N balance reduced with increasing levels of SM, whereas the reductions were recovered in a dose-dependent manner in response to increasing levels of PP; however, the SM0% treatment showed that PP exerted little effects. Notably, reductions in the Haugh unit and albumen height of eggs with increasing SM levels, and recovery by provision of increasing levels of dietary PP, were observed. Yolk color was improved by SM, although PP exerted little effect, whereas the antioxidant properties of yolk were enhanced by the inclusion of both SM and PP in diets. Furthermore, eggshell strength, weight, and thickness were enhanced with increasing levels of SM, whereas dietary PP had little effect on these parameters. Thus, we suggest that PP can alleviate the negative effects of dietary SM and improve egg quality, without causing a reduction in laying performance, provided that the level of supplementary PP in diets is less than 8%. These findings accordingly indicate that PP is a promising feed constituent for laying hens fed with SM diets.

The present study was conducted to analyze the chemical properties of persimmon peel (PP) and the in vitro digestibility of shrimp meal (SM) diets containing PP. Discussions whether PP can be used as a feed additive to promote digestion of SM in chickens are also included. The chemical composition and chitinase activity of dried PP was studied. SM diets containing PP were formulated according to the 4 by 6 factorial design: 4 levels of SM (0%, 10%, 15%, and 20%) × 6 levels of PP (0%, 2%, 4%, 6%, 8%, and 10%). The in vitro digestibility of dry matter (IVDMD), crude protein (IVCPD), and chitin (IVCD) was also studied. PP was rich in nitrogen-free extract (NFE, about 74%) and tannin (2.8%), and the highest chitinase activity of PP was observed at pH 4.5. Approximately 50% of chitinase activity was also observed at acidic (3.0) and alkaline (8.0) pH. Its activity was slightly affected by pepsin treatment. IVDMD increased upon addition of up to 8% PP, but decreased with an increase in the level of SM. When PP level was increased up to 6%, IVCPD in the group containing 0% SM, changed slightly; however, an increasing trend was observed in the other groups. When PP level was more than 6%, IVCPD decreased in all the groups. IVCD increased dose-dependently with increasing level of PP and decreased with increasing level of SM. In conclusion, PP was rich in NFE, had high chitinase activity, and improved all digestibility parameters, such as IVDMD, IVCPD, and IVCD, in SM diets where the PP level was under 6%. Thus, up to 6% of PP can be safely included in SM diets as a digestion promoter.

To date, the effect of buckwheat phytase on laying hens has not yet been investigated. Thus, this study was conducted to compare the production performance, egg quality, and phosphorus (P) balance of laying hens given nonphytate P deficient diets supplemented with non-germinated buckwheat (BU) or germinated buckwheat (GBU). Experimental diets (17.8% CP, 2,988 kcal/kg ME) consisted of two control diets, the positive control (PC), satisfying all nutrient requirements and negative control (NC) containing 0.16% less non-phytate P than that in the PC diet, and six experimental diets (containing 10%, 15%, 20% BU or GBU), prepared by replacing maize with BU or GBU, along with the raw materials of NC diet. Fifty-six laying hens (46 week of age) were allocated to eight dietary groups (seven hens each) and experimental diets were given for a period of six weeks (week one was employed for acclimatization, and the subsequent five weeks for data collection). Deteriorated production performance (hen-day egg production, feed intake, egg weight and egg mass) and eggshell quality (shell breaking strength, shell weight and shell thickness) in laying hens given a non-phytate P deficient NC diet was restored by the addition of at least 15% BU and 10% GBU to the NC diet. Total P retention significantly increased in 20% BU, 15% GBU and 20% GBU groups as excretion decreased considerably in these groups than the NC group. Considering the hen-day egg production as an economically important parameter, we found that a 340 phytase unit (PU)/kg diet of buckwheat phytase was equivalent to 0.10% non-phytate P in laying hens. These results suggested that the addition of buckwheat in non-phytate P deficient diets can alleviate the deficiency and improve P availability in laying hens.

In the present study, the effects of dietary buckwheat on phytase activity in the digesta from different parts of the digestive tract, and ileal digestibility of nutrients were determined in broilers fed with buckwheat diets. Eighty male broilers (29-d-old) were divided into four groups (20 birds each), and were fed one of the following diets until they were 36-d-old: positive control (PC) diet formulated based on the NRC recommendations, negative control (NC) diet containing 0.15% lower non-phytate phosphorus (P) than that in the PC diet, and two other diets formulated by replacing corn in NC diet with either 20% non-germinated (BU) or germinated (GBU) buckwheat. At the age of 36 d, broilers were sacrificed to collect digesta from the crop, gizzard, duodenum, jejunum, ileum, and cecum. The activity of phytase was low in the PC and NC diets, which increased in the BU diet and increased further in the GBU diet. A similar trend was observed in the crop digesta; however, the phytase activity in the crop digesta of BU and GBU diets was marginally lower when compared with that in each diet. These values decreased sharply when the digesta moved to the gizzard, and then decreased gradually. The ileal digesta exhibited significantly low activity with negligible effect of dietary treatment. The result of two-way analysis of variance with germination and digestive tract parts as main factors showed that the effect of digestive tract parts and interaction between factors was significant on the phytase activity in digesta. The dietary BU and GBU did not affect the ileal crude protein digestibility; however, it increased the ileal phytate P digestibility. These results suggest that in broilers, the crop might be the primary site of phytate degradation by buckwheat phytase, and the buckwheat might have negligible adverse effect on ileal digestibility of nutrients.

Non-germinated (BU) and germinated (GBU) buckwheat were used: they were ground and sieved to remove hulls before use. A total of 120 male broiler chicks (8 d of age) were divided into 8 groups (15 birds each) and given one of the following 8 diets until 42 d of age: positive control (PC) diet satisfying recommended level of all nutrients, negative control (NC) diet formulated to contain 0.16% lower non-phytate P than PC diet, and six other diets, formulated by replacing maize in NC diet with BU or GBU at 10%, 15% and 20% concentrations. Starter diets contained 23.5% crude protein (CP) and 3,200 kcal of ME/kg, and were used for 8–21 d of age. Then, grower diets with 20.5% CP and 3,250 kcal of ME/kg, and were provided for 22–42 d of age. Compared with the PC group, NC group showed impaired growth performance (BW gain, FI, and FCR), and bone quality (dry weight, breaking strength and contents of ash and P in tibia). However, in most cases, these impairments were ameliorated dose-dependently by the addition of BU and GBU in diets, and the restoration magnitude was greater in GBU than in BU treatment. Total P excretion decreased in NC group and further decreased dose-dependently with increasing levels of BU and GBU. Except for the values in PC group, total P retention increased as the total P excretion decreased. In conclusion, dietary BU and GBU restored the growth performance and bone quality impaired by the P deficiency, and improved P retention in broilers, which suggested that buckwheat, especially when germinated, can be used as an alternative phytase source in broiler diets.

The present study was performed to measure the chemical composition and in vitro digestibilities of heads and hulls in three different species of the edible shrimp, and discussed their nutritional quality from the view point of practical use of shrimp meal (SM). Heads and hulls of black tiger (Penaeus monodon) (BT), white leg (Litopenaeus vannamei) (WL) and argentine red (Pleoticus muelleri) (AR) shrimps were prepared: 2 sizes of specimen were used in BT. Their inedible parts, such as heads and abdominal exoskeleton with tails (hulls) were removed, dried at 55°C and ground to pass through 1.0 mm aperture and then used as SM. Compared with hulls, heads were significantly rich in crude protein (CP) and ether extract (EE), and poor in crude fibre (CF), crude ash (CA) and chitin. Among head groups, CP level was the greatest in WL, EE level in AR, CF level in large and small BT, CA level in 3 species other than WL, chitin level in large BT. Among hull groups, CP level was the greatest in WL, CF level in large and small BT and chitin level in large BT: EE level in hulls were extremely low in all group. Overall, in vitro dry matter (DM) and CP digestibilities were significantly greater in heads than in hulls, which is reasonable because the level of chitin, non-digestible amino polysaccharide, was greater in hulls than heads in all species. There is no great difference in parameters measured between heads and heads+hulls. The results obtained here suggest that the heads of WL can be a more nutritious source of SM in poultry diets.

In order to clarify whether chitin in shrimp meal (SM) affects growth performance of broilers adversely, body weight gain, feed intake, digestibility and nitrogen retention were measured in broilers given diets containing 3 levels of SM and chitin. In addition, meat and skin color was also measured in the expectation of color intensification by astaxanthin in SM. Body weight gain, feed intake and feed efficiency decreased numerically in birds given SM diets, but did not change in birds given chitin diets. Dry matter (DM) digestibility decreased with increasing levels of SM and chitin. Chitin digestibility was low (at most 24%) and tended to decrease with increasing levels of SM and chitin. Ash digestibility decreased with increasing levels of SM but unchanged with increasing levels of chitin. N retention decreased with increasing levels of SM and chitin. The redness of thigh meat was increased by feeding SM. In conclusion, the results obtained here showed that decreased DM digestibility observed in birds given SM diets seemed to be explained by the low digestibility of chitin in SM, and SM may be useful to improve meat color of broilers.

In order to use shrimp meal (SM) made from headless black tiger shrimp waste as a protein source for poultry diets, chemical composition of SM and growth performance, dry matter (DM) digestibility and nitrogen (N) retention in broilers given diets containing SM ranged from 0% to 16% were measured. Comparing with the data in the previous reports, SM used in the present study was rich in fiber and ash, hence poor in CP. Amino acid profiles revealed that SM had lower concentration of methionine+cysteine, lysine, isoleucine, leucine, tryptophane than soybean meal. The results of orthogonal polynomials revealed that body weight gain, feed intake, feed efficiency, DM digestibility and N retention decreased with increasing levels of SM and the results of ANOVA showed that, in most case, these parameters did not change significantly when SM level was at and below 8%. However, these parameters in birds given 8% SM diets did not differ from those in birds given 12% and 16% SM diets. Taking this into account, the safer level to add SM to a broiler diet seems to be 4%. Decreased body weight gain may be resulted from decreased feed intake, feed efficiency and DM digestibility. In conclusion, it is suggested that SM can be used as a protein source in a broiler diet as far as it is included at and below 4%.

Time course changes in 13C enrichment of respiratory CO2 in young chickens intravenously injected with [1-13C] sodium acetate were examined to clarify the rapidity of oxidation of intravenous acetate to CO2 in chicken body. The 13C enrichment reached the peak level within 20-30 minutes after single intravenous injection with 1 ml of 1% [1-13C] sodium acetate and returned to the initial level by 180 minutes. On the other hand, no change in 13C enrichment of respiratory CO2 was observed in control chicks injected with saline throughout the experimental period. The recovery of the injected [1-13C] sodium acetate was estimated to be 47.0%. These results indicate that intravenously injected acetate into young chickens is rapidly metabolized to CO2 and suggest a rapid use of cecal acetate as an energy source in chickens.

Moreover, chitin digestibility was significantly greater in the TSM groups than the SM groups. In conclusion, broilers received diets containing the TSM showed better growth performance along with improved nutrient digestibility and N retention which suggests that formic acid-treated SM can be used as a potential protein source in broiler diets. These results suggest that NaOH treatment affected the nutritional quality of SM adversely. HCl and formic acids groups showed significantly increased CP level and in vitro digestibilities of DM and CP, and decreased CA level, showing that acid treatment can improve nutritional quality of SM: formic acid treatment may be more effective because of the greater values in CP level and digestibilities and decreased crude fibre level which was not observed in HCl group (P<0.05).
