3. Predicting the stability of emulsions in the presence of surfactants and nanoparticles using coarse-grained simulations

Abstract

Understanding the molecular mechanisms and processes that control the stability of emulsions is of great interest for many practical applications. Both surfactants and particles have been developed and optimised to control the emulsions stability. Due to the complexity of the emulsion system, it is challenging to understand the effect of these emulsifiers on the various demulsification processes, which can occur simultaneously or consecutively during phase separation. Molecular dynamics simulations are useful to identify some of the molecular mechanisms responsible for emulsions stability by providing algorithms designed to study the phenomena of interest. This work presents advances obtained via the implementation of the coarse-grained Dissipative Particle Dynamic simulation framework, DPD. First, a systematic approach was conducted to estimate the parameters to describe immiscible liquids containing surfactants. Starting from the Hansen theory of solutions, the model proved its ability to reproduce experimental water/oil interfacial tension as well as the micellar properties of aqueous non-ionic surfactants representative of the octyl polyethylene oxide family. Using this model, an algorithm was designed to study the Ostwald ripening phenomenon in an oil-in-water emulsion. The DPD simulation results are consistent with theoretical expectations, as well as with experimental observations. When surfactants were introduced to the system, the results show an enhancement in the emulsion stability due to the reduction in the interfacial tension, with a possible effect of the surfactant film properties on the Ostwald ripening rate. Finally, the effect of particle size on the arrangement of nanoparticles (NPs) on a curved oil/water interface was investigated. The arrangement of NPs showed a dependency on the particle size when the emulsion was subjected to a change in the NP-NP interaction, with a prompt self-organization of the smaller NPs. When a mixture of NPs of different sizes were introduced to the system, the NPs self-assembly on the droplet surface showed a dependency on the initial configuration. These findings could prove useful to understand the morphological changes occurring in Pickering emulsions affecting their stability, when subjected to a change in the interaction between its constituents.

Abstract

Trichinella spiralis infection is a food‐borne zoonotic disease caused by nematodes that dwell in the tissues, presenting a significant public health concern. This study aimed to evaluate the effectiveness of different treatments including silver nanoparticles (AgNPs), myrrh biosynthesized AgNPs "AgNPs synthesized using plant‐based green technologies", myrrh extract, and myrrh essential oil, as alternative treatments against T. spiralis infection. Parasitological, histopathological, and cytotoxicity assessments were conducted to investigate the effects of various concentrations of these treatments in reducing the populations of adult worms and larvae during both the intestinal and muscular phases of T. spiralis‐infected mice. The results showed that the highest antihelminthic efficacy against the intestinal phase of T. spiralis was achieved by myrrh extract (86.66%), followed closely by AgNPs (84.96%) and myrrh AgNPs (82.51%) at higher concentrations (800 mg/kg for myrrh extract, 40 μg/mL for AgNPs, and 40 μg/mL for myrrh AgNPs). While the group treated with myrrh essential oil showed the lowest percentage of adult reduction (78.14%). However, all treatments demonstrated comparable effects in reducing the larvae population in the muscle phase. Histopathological examination of the tissues revealed compelling evidence of the effectiveness of AgNPs, particularly when prepared with myrrh. Additionally, a comprehensive assessment of the cytotoxicity of AgNPs indicated low toxicity levels. This study supports that AgNPs synthesized using plant‐based green technologies hold therapeutic potential for the treatment of T. spiralis infection. These findings present a promising avenue for the development of novel antiparasitic drugs that are both effective and safe. Abstract

Cats, as widely embraced companions in diverse environments, face significant health threats due to infection by ectoparasites. The present study investigates the prevalence of ectoparasite infestations in domestic cats (Felis catus) in Giza Governorate, Egypt. Spanning from December 2022 to November 2023, the study included 400 samples of diverse feline populations. Fleas and ear mites were detected in 20.75% and 11.25% of the examined cats, respectively. While ticks and myiasis were observed in 0.5% for each. Clinical manifestations and morphological structures of the detected parasites were documented. Moreover, the research integrates molecular characterization, utilizing the COI gene for Sarcophaga species identification. The study also analyzed risk factors, adjusting for age, sex, and season, revealing variations in infestation rates. Cats under one year old exhibited the highest infestation rate (48.35%). Seasonal variation showed the highest prevalence in autumn, followed by summer and winter, with a decline in spring. This survey study provides valuable insights into ectoparasite infestations in domestic cats to serve as a pivotal step toward promoting cat welfare and safeguarding public health. 11. Effect of Black Dates on Iron Deficiency Anemia of Orphanage Children

Abstract

Iron deficiency anemia represents a major public health problem, particularly in infants, young children and pregnant women. Therefore, this study was aimed to evaluate the effect of black dates on children suffering from iron deficiency anemia living in orphanage. Forty male children (9-11years) were divided into four equal groups. Non-anemic group, anemic groups include positive control group, date with hulls group and date without hulls group (ingested100g black dates daily for 8 weeks). The energy, protein, carbohydrate, fat, fiber, vitamins and minerals intake of non-anemic and anemic groups compared with Dietary Reference Intakes (DRI) were evaluated. The anthropometric measurements and hematological parameters during the experiment period were also evaluated. Anemic groups did not consume enough protein however; energy and fiber were approximately similar to the DRI values. Non-anemic group and anemic groups had lower thiamin, vitamin A, vitamin E, calcium and phosphorus intake than DRI values. Iron and zinc was higher in non-anemic group compared with DRI values while anemic groups had an opposite trend. Date without hulls group had higher weight and body mass index than non-anemic group and date with hulls group. Hemoglobin, haematocrit, red blood cell, mean corpuscular volume, mean corpuscular hemoglobin, serum iron, serum ferritin and transferrin saturation in black date groups were increased by increasing the experiment period while total iron binding capacity had an opposite trend. Date without hulls group was more effective than date with hulls group in improving serum iron, serum ferritin, transferrin saturation and total iron binding capacity.

16. Quantification of Ostwald Ripening in Emulsions via Coarse-Grained Simulations

Abstract

Ostwald ripening is a diffusional mass transfer process that occurs in polydisperse emulsions, often with the result of threatening the emulsion stability. In this work, we design a simulation protocol that is capable of quantifying the process of Ostwald ripening at the molecular level. To achieve experimentally relevant time scales, the dissipative particle dynamics (DPD) simulation protocol is implemented. The simulation parameters are tuned to represent two benzene droplets dispersed in water. The coalescence between the two droplets is prevented via the introduction of membranes, which allow diffusion of benzene from one droplet to the other. The simulation results are quantified in terms of the changes in the droplet volume as a function of time. The results are in qualitative agreement with experiments. The agreement with the Lifshitz–Slyozov–Wagner theory becomes quantitative when the simulated solubility and diffusion coefficient of benzene-in-water are considered. The effect of two different surfactants was also investigated. In agreement with both experimental observations and theory, the addition of surfactants at moderate concentrations decreased the Ostwald ripening rate because of the reduction in the interfacial tension between benzene and water; as the surfactant film becomes dense, other phenomena are likely to further delay the Ostwald ripening. In fact, the results suggest that the surfactant that yields higher density at the benzene–water interface delayed more effectively Ostwald ripening. The formation of micelles can also affect the ripening rate, in qualitative agreement with experiments, although our simulations are not conclusive on such effects. Our simulations show that the coarse-grained DPD formalism is able to capture the molecular phenomena related to Ostwald ripening and reveal molecular level features that could help to understand experimental observations. The results could be useful for predicting and eventually controlling the long-term stability of emulsions.
