The recent Coronavirus disease (Covid-19), which the World Health Organization (WHO) has described as a pandemic,is affecting all parts of human society including agriculture, manufacturing and teritery sectors that encompass all service delivery industries.This work deals with the problems caused by the epidemic to the food industry, addressing the existence and continuation of SARS-CoV-2 in the food environment, and methods for inhibiting the virus and protecting the food factor and the consumer. Although food has not been involved in transmission the infection, the social disruption caused by the epidemic can cause food security problems., Yakın zamanda ortaya çıkan ve Dünya Sağlık Örgütü (WHO) tarafından pandemi olarak nitelendirilen koronavirüs hastalığı (COVID-19), tarım, imalat ve üçüncül sektörler de dahil olmak üzere toplumun tüm bölümlerini önemli ölçüde etkilemektedir. Bu çalışma, salgının gıda endüstrisi açısından neden olduğu sorunları, gıda ortamında SARS-CoV-2'nin varlığını ve kalıcılığını, virüs etkisizleştirme (inaktif) yöntemlerini ve gıda sektöründe çalışan personel ile tüketicinin korunmasını ele almaktadır. Şimdiye kadar enfeksiyonun bulaşmasına gıda dahil edilmemiş olup, bununla birlikte pandeminin neden olduğu sosyal aksamalar gıda güvenliğiyle ilgili sorunlara neden olabilmektedir.

This study made for concepts related to biotechnology research trends between the years 2000-2020 graduate thesis in the field of science in Turkey, offers a descriptive content analysis. Within the aim of the study, a total of 65 postgraduate theses were examined by scanning the database of the YOK National Thesis Center. In this study, in which document analysis, one of the qualitative research designs, was used, theses were analyzed according to years, universities, study subjects, concepts, methods, data collection tools, sampling and sample size. According to the results obtained from the findings, it has been observed that the theses are predominantly master's theses, the postgraduate theses made in the field of science education related to biotechnological concepts were carried out in a total of 27 universities and the theses were mainly done in Gazi University, İnönü University and Bolu Abant Izzet Baysal University. According to the subject distribution, it has been observed that the theses are predominantly focused on learning, attitude/perception/interest and teaching. In addition, it has been concluded that quantitative studies are mostly used in the examined theses, and empirical designs among quantitative research methods are preferred more than non-experimental designs. As data collection tools, mostly skill, attitude, perception, personality, etc. tests, achievement tests, Likert type questionnaires and semi-structured interviews were used and it was observed that the most preferred sample group was university and high school students and the sample size was mostly between 101-300, 31-100. Based on the results of the study, researchers can focus on more detailed analysis in biotechnology education through meta-analysis., Bu çalışma, Türkiye’de 2000-2020 yılları arasında biyoteknoloji kavramına yönelik fen bilimleri alanında yapılan lisansüstü tezlerin araştırma eğilimlerine yönelik, açıklayıcı içerik analizini sunmaktadır. Çalışma kapsamında YÖK Ulusal Tez Merkezi veri tabanı taranarak toplamda 65 lisansüstü tez incelenmiştir. Nitel araştırma desenlerinden doküman incelemesinin kullanıldığı bu çalışmada tezler yıllara, üniversitelere, çalışma konularına, kullanılan kavramlara, yönteme, veri toplama araçlarına, örnekleme ve örneklem büyüklüğüne göre analiz edilmiştir. Bulgulardan elde edilen sonuçlara göre tezlerin ağırlıklı olarak yüksek lisans tezi olduğu, biyoteknolojik kavramlarla ilişkili fen eğitimi alanında yapılmış lisansüstü tezlerin toplam 27 Üniversite’de gerçekleştirildiği ve tezlerin ağırlıklı olarak Gazi Üniversitesi, İnönü Üniversitesi ve Bolu Abant İzzet Baysal Üniversite’nde yapıldığı görülmüştür. Konu dağılımına göre tezlerin ağırlıklı olarak öğrenme, tutum/algı/ilgi ve öğretim odaklı olduğu, görülmüştür. Ayrıca incelenen tezlerde çoğunlukla nicel çalışmaların kullanıldığı, nicel araştırma yöntemlerinden deneysel desenlerin deneysel olmayan desenlere oranla daha çok tercih edildiği sonucuna ulaşılmıştır. Veri toplama araçları olarak çoğunlukla yetenek, tutum, algı, kişilik vb. testleri, başarı testleri, Likert türü anketler ve yarı yapılandırılmış görüşmelerin kullanıldığı, en çok tercih edilen örneklem grubunun üniversite ve lise öğrencileri olduğu ve örneklem büyüklüğünün çoğunlukla 101-300, 31-100, aralığında olduğu görülmüştür. Çalışma sonuçlarından yola çıkarak araştırmacılar biyoteknoloji eğitiminde meta-analiz yoluyla daha ayrıntılı analizlere odaklanabilir.

It is well known that fruit processing industry causes the formation of a big proportion of food processing wastes. Apricot (Prunus armeniaca L.), which is included in the genus Prunus, is one of the most commercialized fruits produced in Turkey. Turkey is the biggest apricot producer in the world with production of 811 thousand tons of apricots. Besides dried apricot production, a considerable amount of apricot is processed to apricot juice and significant amounts of byproducts including stone (kernel) and pomace are liberated, which are mainly discarded as landfill. Therefore, minimizing the environmental problems caused by discarded apricot byproducts is of critical importance. Several biological activities such as anticarcinogenic, antimicrobial, and antioxidant of various fractions of apricot kernel have been demonstrated while apricot pomace has been proven as rich sources of valuable compounds such as polyphenols, dietary fibers and carotenoids. Therefore, several attempts have been undertaken to extricate these compounds from these byproducts. In this study, recent works devoted the utilization from different byproducts of apricot processing industry have been summarized. Moreover, incorporation of these products into several food systems has been discussed.

Amaç: Bu çalışmada, fen bilimleriöğretmenlerinin, biyoteknoloji ve genetik mühendisliği konusundaki bilgidüzeyleri ile cinsiyetleri, mezun oldukları fakülte, mesleki kıdemleri vebiyoteknoloji dersi alma durumları arasında bir ilişki olup olmadığıaraştırılmıştır. Yöntem: Tanımlayıcı ve kesitsel olarak tasarlanançalışmanın örneklemini Malatya il Merkezinde görev yapmakta olan 58 fenbilimleri öğretmeni oluşturmaktadır. Öğretmenlerin, bilgi düzeylerini ölçmekiçin, tarafımızdan güvenirlik ve kapsam geçerliliği analizi yapılmış bilgitesti ve bazı demografik özellikleri belirlemeye yönelik bir ölçekkullanılmıştır. Bulgular: Sonuçlarımıza göre; fen bilimleri öğretmenlerininbiyoteknoloji/genetik mühendisliği konusundaki bilgi düzeyleri ilecinsiyetleri, mezun oldukları fakülte, mesleki deneyimleri ve biyoteknolojidersi alma durumları arasında anlamlı bir farklılık bulunmamıştır. Ancak,öğretmenlerin yarısından fazlası bilgi testinde bulunan genetik mühendisliği,genetiği değiştirilmiş organizmalar, klonlama ve insan genom projesi konularınailişkin 8 soruyu doğru cevaplayamamıştır.Sonuçlar ve Öneriler: Sonuçlarımıza göre, fen bilimleri öğretmenleribiyoteknoloji alanındaki güncel gelişmeleri takip etmiyorlar ve bu problemiçözmek için alan uzmanları tarafından bir hizmet-içi eğitime tabi tutulmalarıönerilebilir., Purpose: The aim of this study, it has been investigated whether there issignificant difference between the knowledge level of science teachers onbiotechnology/genetic engineering applications their gender, their field ofgraduation, duration of experience and taking biotechnology courses.Design & Methodology: The research method was descriptive and crosssectional. The sample of research were 58 science teachers in Malatya. Datacollection instruments were researcher made valid and reliable questionnairewhich was used to assess demographic information, knowledge level ofscience teachers.Findings: According to the analysis, there is no significant difference betweenthe knowledge level on biotechnology/genetic engineeering and the gender,the their field of graduation, duration of experience and taking biotechnologycourses was found. But, more than half of the science teachers participatingin this study did not correctly answer 8 questions of the knowledge test. Thesequestions that were answered incorrectly were mostly related to geneticengineering, genetic modified organisms, cloning and human genome project.Implications & Suggestions: The results show that science teachers do notfollow current developments and this problem needs to be solved. Thisproblem can be solved by providing in-service training by field specialists.

The aim of this studyto reveal the perceptions of preservice teachers’ on “Science” and “Scientist” conceptsthrough metaphors. Thestudy is designed based on one of the qualitative research method named asphenomenology and analyzed with content analysis. The data on completingthe expression “Science/Scientist….…is like. Because ….” was collected using 62science teachers, 45 clasroom teachers total 107 preservice teachers. Accordingto our results, preservice teachers created 85 valid metaphor for “Science” and80 for “Scientist”. Fromthe data, it is understood that mostly ‘Book’ metaphor (f=5) is used by theparticipants related to science. Mostly “Sun” metaphor (f=5) is used by thepreservice teachers related to scientist. The created metaphorswere categorized considering their common properties and similarities. In the end of this process, eightcategories for “Science” concept and six categories for “Scientist” conceptwere obtained. Preserviceteachers mostly see science as a structure “depending on effort-labor andresearch” (f=17) and scientist as “searching, hardworking, struggling person”(f=31). The differences were identified between participants’ gender, classlevels and department with regard to the categories. The negative metaphor was not found on “science”and “scientist” concepts among the metaphors created by preservice teachers., Bu çalışmanın amacıöğretmen adaylarının “bilim” ve “bilim insanı” kavramlarına ilişkin algılarınımetaforlar aracılığıyla ortaya çıkarmaktır. Nitel araştırma yöntemlerinden olgu bilim deseninegöre tasarlanan çalışmada, içerik analizi tekniği kullanılmıştır. Veriler, 62 fen bilgisi, 45 sınıföğretmeni olmak üzere toplam 107 öğretmen adayının “Bilim/Bilim İnsanı …… gibidir.Çünkü ……” ifadelerini tamamlamasıyla elde edilmiştir. Sonuçlarımıza göre, öğretmenadayları “Bilim” kavramı için 85, “bilim insanı” kavramı için 80 geçerli metafor üretmiştir. Öğretmenadaylarından elde edilen verilerde “bilim” kavramı için en çok “Kitap” (f=5),“bilim insanı” kavramı için ise “Güneş” (f=5) metaforu kullanılmıştır. Eldeedilen metaforlar daha sonra ortak özellikleri ve benzerlikleri dikkatealınarak kategorileştirilmiş ve “bilim”kavramı için sekiz, “bilim insanı” kavramı için altı kategori elde edilmiştir. Öğretmen adayları“bilim” kavramını çoğunlukla “emek-çaba ve araştırmaya bağlı” (f=17) bir yapı,“bilim insanı” kavramını ise “araştıran, çabalayan, çalışkan bir kişi” (f=31)olarak görmektedir.Kavramsalkategoriler, öğretmen adaylarının cinsiyeti, sınıf düzeyleri ve bölüm türübakımından da farklılaşmıştır.“Bilim” ve “bilim insanı” kavramlarına ilişkin oluşturulan metaforlar arasındaolumsuz bir metafora rastlanmamıştır.

This review’s subject is Bacillus genus involved in the spoilage of dairy foods. Despite the improvementof production processes and hygiene applications, spore-forming bacteria are still an emerging problem inmilk and dairy products. Spore-formers have adaptable spores, and thus they are prevalent in nature andfood processing lines. Spore formation allows these bacteria to survive under heat treatments. Among thespore-forming bacterias, the genus Bacillus is of particular importance in dairy industry.

No doubt one of the most important scientific and technological developments of the 21st century is developments in biotechnology. The purpose of this study is to investigate the preservice science teachersǯ level of knowledge toward biotechnology and genetic engineering applications. Under this caption the research was made to find out whether there is significant difference between the knowledge level of preservice science teachers on biotechnology and genetic engineering applications their gender, class level, educational status, graduated high school, parental education background and monthly income. In order to find out the knowledge level of the teachers, a knowledge test reliability and scope validity was developed and a survey to determine some demographic characteristics was prepared. The survey was applied to 291preservice science teachers in Inonu University. According to the analysis, there is no significant difference between the knowledge level on biotechnology/genetic engineering and the gender, the educational status, graduated high school, parental education status and monthly income was found. But, there is significant difference between the knowledge level on biotechnology/genetic engineering and class level was found. Our results showed that knowledge levels of 4th grade preservice science teachers were significantly different from 1st, 2nd and 3rd grade students. In addition, more than half of the preservice science teachers participating in this study did not correctly answer 8 questions of the knowledge test. These questions that were answered incorrectly were mostly related to genetic engineering, genetic modified organisms, cloning and human genome project. Bu çalışmanın amacı, fen bilgisi öğretmen adaylarının, biyoteknoloji ve genetik mühendisliği konusundaki bilgi düzeylerini belirlemektir. Bu çerçevede, fen bilgisi öğretmen adaylarının biyoteknoloji ve genetik mühendisliği uygulamalarına ilişkin bilgi düzeylerinin cinsiyetleri, sınıf düzeyleri, öğrenim durumları, mezun oldukları lise türü, anne ve babalarının eğitim durumları ve aylık gelir durumlarına göre anlamlı bir farklılık gösterip göstermediği araştırılmıştır. Öğretmen adaylarının, bilgi düzeylerini ölçmek için, güvenirlik ve kapsam geçerliliği analizi yapılan bilgi testi geliştirilmiş ve bazı demografik özellikleri belirlemeye yönelik bir anket hazırlanmıştır. Anket İnönü Üniversitesiǯnde öğrenim görmekte olan ʹͻͳfen bilgisi öğretmen adayına uygulanmıştır. Analiz sonuçlarına göre; fen bilgisi öğretmen adaylarının biyoteknoloji ve genetik mühendisliği bilgi düzeylerinin öğretmen adaylarının cinsiyeti, öğrenim durumu, mezun oldukları lise türü, anne- baba eğitim durumu ve ailelerinin aylık gelir durumuna göre bir farklılık göstermediği bulunurken, fen bilgisi öğretmen adaylarının biyoteknoloji ve genetik mühendisliği bilgi düzeylerinin sınıf düzeylerine göre anlamlı bir fark gösterdiği bulunmuştur. Sonuçlarımız Ͷ. sınıf fen bilgisi öğretmen adaylarının bilgi düzeylerinin ͳ., ʹ. ve ͵. sınıf öğrencilerinden anlamlı bir şekilde farklı olduğunu göstermiştir. Ayrıca, öğretmen adaylarının yarısından fazlası, genetik mühendisliği, genetiği değiştirilmiş canlılar, genetiği değiştirilmiş gıdalar, klonlama, insan genom projesi konularına ilişkin ͺ soruyu doğru cevaplayamamıştır. Bu sonuçlara göre öğretmen adaylarının biyoteknoloji alanındaki güncel gelişmeleri takip etmedikleri tespit edilmiştir.

Blueberry is one of the fruits that has high antioxidant activity grown in our country. Blueberryis also used for wine making. In this study we investigated alcohol amount, total acidity, reducing sugar, totalphenolic content and anthocyanine changes as weekly periods during fermentation in blueberry wine producedby the classical maceration method. It is also performed some antioxidant tests; 2,2-diphenyl-1-dipicrylhydrazylDPPH radical scavenging activity and reducing power in the final product. Alcohol amount is determined as12% for final product. Total acidity amount of wine decreased from 11.6 g L-1 to 8.7 g L-1during fermentationand anthocyanine content decreased to 15 mg L-1. Total phenolic content is measured as 199.49 mg L-1.% DPPH Radical scavenging activity and reducing power was found as 52.5% and 0.170, respectively., Yaban mersini ülkemizde de yetiştirilen antioksidan aktivitesi yüksek meyvelerden biridir. Yaban mersinimeyve şarabı yapımında da kullanılmaya başlanmıştır. Bu çalışmada, klasik maserasyon yöntemi ile üretilen yabanmersini şarabının fermantasyon boyunca alkol miktarı, toplam asitlik, indirgen şeker, toplam fenolik madde veantosiyanin değişimleri haftalık olarak incelenmiştir. Üretilen şaraptaysa antioksidan aktivite testleri 2,2-difenil-1-pikril hidrazil (DPPH) radikal giderme yöntemi ve indirgeyici güç metodları ile tayin edilmiştir. Elde edilensonuçlara göre şarabın alkol değeri fermantasyon sonunda %12’ye ulaşmıştır. Fermantasyon boyunca toplam asitlikdeğeri 11.6 g L-1den 8.7 g L-1’ye düşmüş, antosiyanin miktarı azalmış ve fermantasyon bitiminde 15 mg L-1’yedüşmüştür. Toplam fenolik bileşen içeriği fermantasyon bitiminde 199.49 mg L-1 bulunmuştur. % DPPH Radikalgiderme aktivitesi %52.5, indirgeyici güç aktivitesi ise 0.170 olarak bulunmuştur.

Background: The aim of this study was to evaluate paraoxonase-1 (PON1) and arylesterase (ARE) activities and oxidative stress status in patients with colorectal carcinomas (CRC). Materials and methods: Thirty-three patients (20 male, 13 female) with CRC and 30 healthy controls were enrolled in the study. Blood samples were obtained from the CRC patients before adjuvant therapy. Serum samples from CRC patients and healthy controls were analyzed for PON1 and ARE activities. Results: The PON1 and ARE activities of the patients with CRC were significantly higher compared to those of the control group (PON1 activity is 125.35±20.07 U/L for CRC patients and 1.22±0.48 U/L for control group, P

Background: Increasing amounts of evidence suggest patient-related systemic inflammatory response (SIR) as a powerful prognostic factor in cancer and applicability of SIR as a prognostic factor has been investigated. Aim: To evaluate the prognostic significance of SIR, which is among routinely analysed blood parameters in patients with all stages of gastric cancer (GC). Methods: A total of 245 patients with gastric cancer who were followed up and treated in four clinics of medical oncology were included in the study. At first admission of the patients, from routinely determined whole blood cell counts in medical oncology clinics, their neutrophil/lymphocyte ratio (NLR) and platelet/lymphocyte ratio (PLR) values were estimated and recorded before initiating chemo- or radiotherapy. A univariate non-parametric analytical method and chi-square test examined the correlation between prognostic factors, and survival rates. Survival curves were estimated using the Kaplan-Meier method. Results: Sixty-eight (27.8%) female and 177 (72.2) male patients (total n=245) were included in the study. When NLR was used as an indicator of SIR, 108 (44.1%) patients were SIR negative and 137 (55.9%) patients were SIR positive. When PLR was used as an indicator of SIR, SIR negativity and positivity were detected in 93(38%) and 152 (62%) patients, respectively. A statistically significant correlation was found between status of lymph node metastasis, stage of the disease and NLR (P=0.001, P=0.017). SIR determined with PLR was found to be correlated with the depth of tumor invasion and stage of the disease (P=0.016, P=0.033). A significant correlation was not detected between PLR and survival (P=0.405). Conclusion: According to our study, parameters of NLR and PLR calculated preoperatively from peripheral blood samples can be used in patients with various sizes of tumours in different disease stages. Still based on our results, NLR calculated during diagnostic workup is a parameter with a prognostic value. In addition, NLR is a determinative factor in the selection of surgical method and chemotherapeutic modalities, which also functions as a potential contributory marker in effective immunotherapeutic strategies.

Bu çalışma İngilizce öğretmen adaylarının sözlü iletişim becerilerinin gelişimi için Sözlü İletişim Becerileri dersinde negatif kibarlık stratejilerinin öğretiminin etkilerini araştırmaktadır. Çalışmada deneysel araştırma desenlerinden ön-test son-test kontrol gruplu deneysel araştırma deseni kullanılmıştır. Çalışma 2012-2013 akademik yılı Bahar Döneminde gerçekleştirilmiştir ve deney sürecini tamamlamak on hafta almıştır. Araştırmanın çalışma grubunu Gazi Üniversitesi, İngiliz Dili Eğitimi Anabilim Dalı'nda okuyan birinci sınıf öğrencilerinden oluşan iki grup oluşturmaktadır. Nitel veriler, ön-test ve son-test olarak kullanılan bir söylem tamamlama testi ve deney süreci sonunda uygulanan bir yazılı görüşme formu yoluyla elde edilmiştir. Çalışmanın ön-test ve son-test sonuçlarının analizi ve karşılaştırılması, öğretmen adaylarının deney sürecinden sonra sözlü iletişim becerilerini geliştirdiklerini göstermiştir. Yazılı görüşme formu sonuçları öğrencilerin negatif kibarlık stratejilerini öğrenmeye yönelik olumlu görüşlerini ortaya koymuştur. Ayrıca, öğrenciler bu stratejileri İngiliz Dili Eğitimi öğretim programındaki bir derste öğretilmesinin gerekliliğini vurgulamışlardır. Dolayısıyla, Sözlü İletişim Becerileri dersinde negatif kibarlık stratejilerinin öğretiminin öğretmen adaylarının sözlü iletişim becerilerini geliştirmede etkili olduğu sonucuna varılmıştır. Bulgular sonucunda, ileride yapılabilecek çalışmalar için önerilerde bulunulmuştur. This study investigates the effects of teaching negative politeness strategies in Oral Communication Skills course for the development of oral communication skills of prospective EFL teachers. The randomized pre-test post-test control group design as an experimental research design was used in this study. The study was carried out in the Spring Semester of 2012-2013 academic year and the treatment process took ten weeks to complete. The study group of the research comprises two groups of freshmen preservice teachers at Gazi University, English Language Teaching Program. The quantitative data were gathered through a discourse completion test applied as pre and post-tests and through a written interview form conducted at the end of the treatment process. The analysis and comparison of pre- and post-test results indicated that the preservice teachers improved their oral communication skills after the treatment process. The written interview form results showed that they had positive opinions towards learning negative politeness strategies. They also emphasized the necessity of teaching these strategies in one of the courses at ELT curriculum. Therefore, it was concluded that teaching negative politeness strategies in Oral Communication Skills course is effective for developing oral communication skills of prospective EFL teachers. According to the findings, suggestions are made for further studies.

Türkiye gibi gelişmekte olan ülkelerde KOBİ'ler, işsizliğin azaltılması ve yeni istihdam alanlarının yaratılması, dengeli ekonomik ve sosyal kalkınmanın sağlanması, piyasa koşullarında meydana gelen değişmelere hızlı uyum sağlayabilen esnek üretim yapılara sahip olmaları nedeniyle ekonomide önemli bir yer tutmaktadır. Bu tez çalışmasında, öncelikle Türkiye'de ve dünyada KOBİ'lerin tanımları, avantajları ve dezavantajları, karşılaştıkları sorunlar, sorunlarının aşılması için finansal destek veren kuruluşlar, Türkiye ve Bursa ekonomisine etkileri hakkında bilgi verilerek, Bursa ili özelinde bir alan çalışması yapılmıştır. Bu çalışma ile Bursa'daki KOBİ'lerin genel sorunları ve özel olarak finansman sorunlarının incelenmesi ve bu sorunların nasıl aşılmaya çalışıldığının tespiti amaçlanmıştır. Araştırmada nitel araştırma yöntemlerinden yüz yüze anket tekniği uygulanmıştır. Bursa ilinde faaliyet gösteren seksen adet firmaya yapılan anket sonuçlarına göre, KOBİ işletmelerin büyük bir çoğunluğunun finansal sorun yaşadığı, bu finansal sorunlarını bankalar aracılığı ile aşmaya çalıştıkları ve finansman sorununun çözümü için gerekli finansman araçları hakkında yeterli bilgi sahibi olmadıkları sonucuna ulaşılmıştır., Today, Small And Medium-Sized Enterprises (SMEs), a severe competitive environment created by globalization of national economies have an important role in the development and maintenance. This study in Bursa with the general problems of SMEs and the financial problems of private investigation and determination of how these problems is to overcome and striving. Face-to-face survey research, qualitative research methods were applied technique. Eighty-two companies operating in the province of Bursa according to the results of the survey, the vast majority of SME businesses experienced financial problems, they work to overcome these financial problems through the banks and finance needed to tackle the problem of financing was concluded that they did not own enough information about the tools.

Her işletme gibi konaklama işletmeleri de hem hayatiyetlerini hem de karlılıklarını sürdürebilmek için müşteri memnuniyetini üst düzeyde tutmak zorundadırlar. Bunu sağlamak için de kendilerine rekabet üstünlüğü sağlayacak yöntem ve araçları kullanmaları gereklidir. Bu çerçeve içerisinde, konaklama işletmelerinin; gelecek için yön gösterebilecek bir yönetim muhasebesine, verimlilik ve karlılıklarını değerlendirebilmek içinde finansal analiz uygulamalarına ihtiyaçları vardır. Böylece iyi ve güçlü bir muhasebe sistemiyle yöneticilerin desteklenmesi, işletme amaçlarına ulaşmada doğru kararlar alınmasını sağlayabilecektir.Çalışmamızda, yönetim muhasebesi ve finansal analiz tekniklerinin, konaklama işletmelerine özgü şartlara nasıl uyarlanabildikleri ve böylece, işletme yönetimlerine nasıl fayda sağlayabilecekleri gösterilmeye çalışılmıştır. Bu kapsamda çalışma üç bölümden oluşmuştur.Birinci bölümde, turizm sektörü ve konaklama işletmeleri tanımlanmış, sınıflandırılmış ve organizasyon yapıları hakkında bilgi verilmiştir. İkinci bölümde, yönetim muhasebesi ve finansal analiz hakkında temel bilgiler verilmiş ve genel çerçeveleri çizilmeye çalışılmıştır. Üçüncü bölümde ise, öncelikle konaklama işletmelerinin farklı özellikleri ortaya konulmaya çalışılmıştır. Daha sonra, finansal analizin temel tekniği rasyo analizine yer verilmiştir. Burada, konaklama işletmelerinin özellikleri dikkate alınarak, maliyetlerinin belirlenmesinde ve performanslarının ölçülmesinde rasyolardan nasıl faydalanılabileceği gösterilmeye çalışılmıştır. Accommodations bussiness managers, like every management, have to keep their customers? satisfaction utmost level to be able to sustain both their vitality and profits. To do so, it is necessary for them to use methods and means which will provide competitive superiority. To this end, accommodations managements need management accounting which will be able to direct the way to the future, productivity and finally need financial analysis applications in order to assess their profitability. Thus, the support of business managers through a good and strong accounting system will be able to make it possible to take correct decisions in reaching at management purposes.In our study, we have tried to show how the management accounting and financial analysis techniques should be adopted to conditions peculiar to accommodation managements and thus how it will be useful to business managements. In this connection, the study composed of three parts.In the first part, tourism sector and accommodations managements are defined, classified and given information about their organizational structures. In the second part, basic information is given about management accounting and financial analysis and tried to be given overall drafts. In the third part, different features of accommodations managements are firstly given. Afterwards, ratio analysis which is the basic technique of financial analysis is mentioned. Here, taking the features of accommodations managements into consideration, we tried to show how to make use of ratios in determining their costs and measuring their performances. 122

Bu çalışmada, labada'nın antioksidan özelliği olup olmadığı ve bitkinin çeşitli gelişme evrelerinde (Nisan, Mayıs, Haziran ve Aralık aylarında) antioksidan aktivitelerinde farklılık olup olmadığı araştırıldı. Labada yapraklarından hazırlanan sulu, etil alkollü ve etil asetatlı ekstrelerin antioksidan aktiviteleri indirgeme gücü, serbest radikal giderme aktivitesi (DPPH), hidroksi radikali giderme aktivitesi, ABTS radikal giderme aktivitesi, DMPD radikali giderme aktivitesi gibi çeşitli antioksidan testleri ile tayin edildi. Elde edilen sonuçlar ?-tokoferol asetat, butillenmiş hidroksianisol, butillenmiş hidroksitoluen ve Troloks gibi doğal ve sentetik antioksidanlarla karşılaştırıldı. Ekstrelerin total fenolik bileşik ve flavonoid miktarları da tayin edildi. Bunun yanı sıra labada yapraklarında beta karoten içeriği ve askorbik asid tayinleri de yapıldı. Antioksidan aktivitenin ekstrelerin konsantrasyonuyla doğru orantılı olarak arttığı bulundu.Rumex cristatus DC'nin antioksidan aktivitesinin bitkinin çeşitli gelişme evrelerinde farklılık gösterdiği ve en yüksek aktivitenin Haziran ayı ekstresinde olduğu saptandı.Ekstrelerde yapılan bütün testlerde antioksidan aktivite gözlemlendiğinden ve antioksidan özellik gösteren fenolik bileşikler, flavonoidler, beta karoten ve askorbik asid bakımından zengin bir bitki olduğu saptandığından, labada ekstrelerinin doğal bir antioksidan kaynağı olabileceği sonucuna varıldı. In our study, the antioxidant capacity of Rumex cristatus DC as well as the dependence of this capacity on different maturing stages of the plant was investigated. The antioxidant activity of water, ethyl alcohol and ethyl acetate extracts of Rumex cristatus was investigated by different antioxidant tests such as DPPH radical scavenging activity, ABTS radical scavenging activity, DMPD radical scavenging activity, hydroxyl radical scavenging activity and reducing power. All results were compared with natural antioxidants; ?-tocopherol acetate and synthetic antioxidants such as BHA, BHT and Trolox. Total phenolic and flavonoid contents of all extracts as well as ß-caroten and ascorbic acid contents of the extracts were determined. It is found out that antioxidant activity of the extracts increased with increasing concentration.It is observed that antioxidant activity of Rumex cristatus DC depends on different maturing stages of plant. Generally, June extracts of Rumex cristatus DC showed maximum antioxidant activity.It is concluded that Rumex cristatus DC is a fine natural antioxidant source because it has high antioxidant activity and phenolic compounds, flavonoids, beta caroten and ascorbic acid contents. 112
