Bisphenols (BP) are pollutants that are globally and widely distributed and adversely affect the health of humans. However, knowledge of their presence in animals, especially farm animals such as pigs, remains limited. In this study, the incidence of bisphenol A (BPA) and its five analogues - bisphenol B (BPB), bisphenol F (BPF), bisphenol S (BPS), bisphenol Z (BPZ) and bisphenol AF (BPAF) - was monitored in lactating sows on an actual pig farm. The urine samples of 27 sows were collected twice on the 3rd day after parturition, and stored at -20 °C until analysis using MDGC/MS. None of the lactating sows produced bisphenol-free urine. In contrast, the urine of all sows contained at least two bisphenols (eight females), most often five (10 females) or all six bisphenols (five females). The average concentrations of bisphenols in urine were in the order of BPB > BPA and BPS > BPZ > BPAF > BPF. The most frequently detected bisphenol was BPB (96.0% of samples) followed by BPA (89.0%), BPAF (78.0%), BPS (63.0%), BPF (52.0%) and BPZ (37.0%). Additionally, the proportion of BPB in the total bisphenol concentration in urine samples was the highest (28.74 to 93.85%) while that of BPF was the lowest (2.33 to 16.70%). Estimated daily intakes of bisphenols as well as hazard quotients were much lower than risk thresholds established for the human population, indicating safe doses for the health status of lactating sows. However, these findings are limited as the mechanism of BPA analogue' activity is still unclear, and the long-term effects of small doses of bisphenols and the potential harmful impact of BP mixtures are unknown. Knowledge of the occurrence of bisphenols in pig farming may contribute to the elimination of BPA and its analogues from this sector, which is crucial for the safety of animal products as well as the welfare of pigs.

With increasing efforts to ban surgical castration, it is important to find ways to mask the level of boar taint in meat. The aim of this study was to test the possibility of masking boar taint or skatole levels by adding dried Origanum vulgare or Allium sativum and to evaluate consumer sensory preferences towards the skatole concentration in different carcass parts (longissimus lumborum; semimembranosus; neck chop and subcutaneous fat) and the masking strategy (addition of Allium sativum or Origanum vulgare). In the first experiment, the effect of the masking strategy was evaluated at three different skatole concentrations (0.069, 0.269 and 0.463 µg/g). The results showed that the samples with low and medium skatole levels were significantly different between the control group and the groups treated with Origanum vulgare or Allium sativum. In both cases, the addition of Allium sativum and Origanum vulgare had a positive effect on the parameters of abnormal odour and pleasantness of odour (p < 0.05). According to the results of the second experiment, meat samples from leaner parts, such as the neck chop semimembranosus and longissimus lumborum, not treated with Allium sativum and Origanum vulgare for masking, were significantly (p < 0.05) worse in terms of the occurrence of boar taint or abnormal odour than the masked samples. No significant differences were found between the two masking methods.

The aim of this study was to assess the prevalence of correct saddle seating in the Czech Republic using a thermographic camera. Eighty-five randomly selected equestrian saddles were tested and evaluated. They were observed in 129 uses. Saddles of different manufacturers were evaluated after 25 min of training. Thermal images were taken under constant conditions from a distance of 1 m. The camera emissivity was 0.95 with a reflected temperature range of 26-37 °C. The maximum contact value of the saddle panels with the horse's body was 81.34% of their surface area. In all cases of measurement, the saddle panels showed asymmetry of contact with a range of detected values from 0.32% to 30.46% (P < 0.001). In 20.16% of cases, the contact was measured in the spinal canal region (min. 0%, max. 67.5%). In 7.75% of cases, saddle bridge was detected. None of the saddles tested showed 100% fitting (P < 0.001). Saddles with contact in the spinal canal and a bridge at the same time were completely excluded from the evaluation. The saddle panel contact exceeding 70% of the area and a tolerance for asymmetry not exceeding 5% were regarded as suitable for use. In considering a combination of all these parameters, only nine out of 129 cases of use were fully compliant. No correlation between saddle age and occurrence of the observed defects was demonstrated. It was found that thermographic evaluation can be proposed as a tool to standardise the assessment of saddle suitability prior to its use for a specific horse.

Cadmium (Cd) is a toxic heavy metal, discharged into environments naturally or anthropogenically, where industrial and agricultural revolutions have led to serious Cd pollution into the environment. Poultry feed may be contaminated by Cd due to its presence in concentrates and supplements, and also in the machinery and equipment used in feed production and processing. After absorption in the digestive system, Cd largely accumulates in kidneys, liver, bones and other organs and causes irreversible damage to these organs. Higher doses of Cd in the poultry diet reduced feed intake, body weight, bone mineral density, egg production and eggshell quality. Selenium (Se) is an essential micronutrient and important component of a variety of antioxidant enzymes, with the ability to antagonize metal toxicity including Cd. Hence, in the current review, we try to summarize recent information about the toxicological effects of Cd and provide updated information about the role of Se as an effective strategy in reducing Cd toxicity in poultry.

Antiepileptic drugs (e.g., carbamazepine; CBZ) are widely prescribed for various conditions beyond epilepsy, including neurologic and psychiatric disorders. These medications can have both favorable and unfavorable impacts on mood, anxiety, depression, and psychosis. CBZ has been found at low concentrations (in the unit of nanograms per liter) in rivers, surface water, and even drinking water. As a result, when reclaimed wastewater is used for irrigation in agricultural ecosystems, CBZ can be reintroduced into the environment. That is why we tested different doses of CBZ in rabbits’ feed as the meat is consumed in every community, has no religious barriers, and the potential risk of consuming meat which has been exposed to CBZ treatment is not known. Also, the evidence of the effect of CBZ on rabbits is missing. Mainly, the CBZ doses affected the count of leukocytes and other blood traits, meaning the higher the dose, the higher the reduction. Moreover, there were only low amounts of CBZ in rabbits’ meat or tissues when they were exposed to the treatment.

Boar taint is an unpleasant odour and flavour released during heat treatment of pork from uncastrated male pigs. The two main compounds responsible for boar taint are androstenone and skatole. Androstenone is a steroid hormone formed in the testis during sexual maturity. Skatole is a product of microbial degradation of the amino acid tryptophan in the hindgut of pigs. Both of these compounds are lipophilic, which means that they can be deposited in adipose tissue. Several studies have reported heritability estimates for their deposition from medium (skatole) to high magnitudes (androstenone). In addition to efforts to influence boar taint through genetic selection, much attention has also been paid to reducing its incidence using various feeding strategies. From this point of view, research has focused especially on the reduction in skatole content by supplementation of feed additives into the nutrition of entire male pigs. Promising results have been achieved using hydrolysable tannins in the diet. To date, most studies have investigated the effects of tannins on the production and accumulation of skatole in adipose tissue, intestinal microbiota, growth rate, carcasses and pork quality. Thus, the objective of this study was, in addition to determining the effects of tannins on androstenone and skatole accumulation, to assess the effects of tannins on the sensory traits of meat from entire males. The experiment was performed on 80 young boars—progeny of several hybrid sire lines. Animals were randomly assigned to one control and four experimental groups (each numbering 16). The control group (T0) received a standard diet without any tannin supplementation. Experimental groups were supplemented with 1% (T1), 2% (T2), 3% (T3) or 4% (T4) SCWE (sweet chestnut wood extract) rich in hydrolysable tannins (Farmatan). Pigs received this supplement for 40 days prior to slaughter. Subsequently, the pigs were slaughtered, and sensory analysis was applied to evaluate the odour, flavour, tenderness and juiciness of the pork. The results showed a significant effect of tannins on skatole accumulation in adipose tissue (p = 0.052–0.055). The odour and flavour of the pork were not affected by tannins. However, juiciness and tenderness were reduced by higher tannin supplementation (T3–T4) compared to the controls (p < 0.05), but these results were sex-dependent (in favour of men compared to women). Generally, women rated tenderness and juiciness worse than men regardless of the type of diet.

This study compared two histochemical staining methods of muscle fibres and evaluated their relationship with the meat quality traits of two high-value porcine muscles. Immunohistochemical (IHC) and adenosine triphosphatase (ATPase) staining was used to assess the cross-sectional area and proportion of fibre-types I, IIa, IIx and IIb in the samples of longissimus lumborum (LL) and psoas major (PM) muscles collected one-hour post-mortem from 25 crossbred pigs [Large WhiteSire × (Landrace × Large WhiteDam)] at an average age of 152 days. Muscles differed in all fibre parameters, except the proportion and relative area of type IIx fibres. The LL muscle exhibited greater fibre cross-sectional areas of all fibre types, higher proportions of type IIb/IIB, and lower proportions of I and IIa fibres than the PM muscle in both staining techniques. These two muscles also differed marginally in moisture, crude protein and intramuscular fat content. The PM muscle showed a low correlation between fibre types and chemical composition, but the LL muscle showed moderate correlations between fibre CSA and area composition for moisture and ash content. After IHC staining, an increase in LL eye muscle area and drip loss were correlated with lower proportions of type I fibres, while a greater proportion of type IIx fibres resulted in increased LL eye muscle area and moisture content. Furthermore, a higher CSA of all fibre types in the LL decreased redness (a*) and moisture content of the muscle. Results showed that IHC is more appropriate than ATPase staining for the assessment of relationships between muscle fibre parameters and meat quality traits in pigs.

Using nurse sows is a common practice for intensive pig farming because large numbers of piglets per litter result from intensive breeding. This aim of this study was to compare reproductive parameters of nurse sows and non-nurse sows in relation to subsequent reproductive performance. The study evaluated 463 breeding sows that produced at least one litter. The sows were divided into two groups: non-nurse sows (350 sows) and nurse sows (113 sows) at their first farrowing. The average length of first lactation was 35.12 days for nurse sows and 29.79 days for non-nurse sows. At first parity, nurse sows weaned 5.18% more piglets than did non-nurse sows (P < 0.05). At second parity, nurse sows had 2.25% more live born piglets than did non-nurse sows. Nurse sows also had 9.59% more total live born piglets and they were removed from the breeding herd later (on average by 67.1 days) than were non-nurse sows. In conclusion, using sows as nurse sows in their first lactations provides a good solution when there are large numbers of piglets per litter, and this practice has no negative effect on sows' subsequent reproductive performance.

Reproductive performance of sows is the main factor influencing the profitability of piglet production, and simultaneously it is a basic indicator of farm management quality. The aim of this study was to compare reproductive performance of sows from intensive and extensive feeder pig operations and the costs on those farms. Evaluated were 42 sows from extensive pig farming and 464 sows from intensive pig farming. Lifelong performance was determined for all sows. The study's results show that sows from intensive pig farming achieved a mean 2.04 fewer lactations per lifetime and were culled earlier (P < 0.0001). The mean total number of live-born piglets was 11.59% lower among sows from intensive pig farming, but these sows achieved 23.35% (P < 0.0001) higher mean number of piglets per litter. Despite shorter mean productive life, sows from intensive pig farming were more profitable. Maximizing the reproductive potential of sows has positive effect on farm profitability, and simultaneously it has no negative effect on sows' reproductive performance.

A new food and feed self-sufficiency model for the Czech Republic (RESTEP) was applied for the evaluation of possible adverse climate impacts uniformly reducing crop production by 5, 10, 20, and 30%. The situation was simulated for the whole country and four different agriculturally important regions. Biomass production modeling confirmed that for the whole country, the food self-sufficiency is secured up to 20% of yield decline for most crops, but even 5% yield decline of silage maize would lead to its shortage in animal feeding. On the other hand, regional results vary significantly. Regions Jižní Morava and Střední Čechy shown oversupply of feedstuff allowing them to cover the demands of cattle and pigs up to 20% or 30% decline of yield, respectively. The opposite model represents the Vysočina (VY) region which is not able to cover the demands from own sources even at the baseline scenario. The acreage extension of maize is not possible due to erosion risk restrictions at 25% of arable land at VY. The possible solution consists of extension acreage of alfalfa and clover or finding other plants sufficient for feeding as well for biogas facilities in regions rich in biomass energy consumers.

The aim of this study was to evaluate the effect of age of boars and their slaughter weights on the pleasantness and intensity of pork meat taste and odour. A total of 652 sensory evaluations of meat samples from sixteen crossbred entire male pigs aged 121 to 136 days with slaughter weight of 80-120 kg were performed by sensory profiling method. The age was a greater factor influencing the level of boar taint than the slaughter weight of animals. There were significant differences in the intensity of boar odour between categories of young animals (121 days) and old animals (135-136 days) (P = 0.0473) and between categories of adult animals (128 days) and old animals (P = 0.0194). Among the evaluated descriptors stronger correlations were calculated between olfactometric than between taste descriptors. Significant correlations were found between androstenone levels in subcutaneous fat and the results of sensory evaluation of muscle samples from the oldest animals aged 135-136 days.

The present study compared the fatty acid profile and some physical parameters of eggs from hens reared according to the organic system at the beginning of the first and second laying cycle. A total of 1080 eggs were analysed at the beginning of the first (from the 28th to 30th week of age) and the second (from the 78th to 80th week of age) laying cycle. It was found that the hen ages influenced the egg weight, egg surface area, yolk proportion, and eggshell colour. Albumen and eggshell proportion, albumen, yolk index, Haugh unit score, and eggshell strength were lower in eggs from older hens compared with those produced from younger layers. Monounsaturated fatty acids were found in higher amounts than saturated fatty acids and polyunsaturated fatty acids in egg yolks of eggs from layers only at the beginning of the second laying cycle. The PUFAn-6/n-3 ratio, saturation, atherogenic, and thrombogenic indices were significantly lower in the egg yolks from older hens compared to younger layers. These findings (regarding the eggs from the older ones) prove that it is practical to utilize them in the organic farming system during a period of two years.

With the increasing age of boars, the possibility of androstenone (5α-androst-16-en-3-one (AND), 5α-androst-16-en-3α-ol (α-AND), and 5α-androst-16-en-3β-ol (β-AND)) occurrence increases as well. The aim of this study was to evaluate concentrations of androstenone compounds in the saliva of boars concerning the age of animals. In total, 72 boars were evaluated (24 boars per replication). The effect of age (three different ages—152, 163, and 172 days) was observed, and (Landrace × Large White) × Pietrain genotypes were used. Chemical analysis of saliva samples was conducted by multidimensional gas chromatography/mass spectrometry (MDGC/MS). Salivary α-AND increased with age (p < 0.05), and positive correlations were found between age and submaxillary salivary gland weight (p < 0.05), age, and salivary AND concentration (p < 0.05), body weight and submaxillary salivary gland weight (p < 0.05), submaxillary salivary gland weight and salivary β-AND concentration (p < 0.05), as well as submaxillary salivary gland weight and total salivary 5α-androstenone (AND total) concentration (p < 0.001). Nowadays, animal welfare is becoming a more and more discussed topic, and pig breeding is not an exception. Specifically, the castration ban is a current issue, so it is very important to know as much as possible about compounds responsible for boar taint. Androstenone’s appearance in boars’ saliva could be one of the most important precursors for future early detection of boar taint.

A partial cDNA (~1200 bp) of the porcine ACTC1 gene was identified in the subtracted foetal hind limb muscle cDNA library (44 days of gestation; using m. biceps femoris cDNA as the driver). Using specific polymerase chain reaction (PCR) primers, a bacterial artificial chromosome (BAC) clone containing the genomic ACTC1 gene was identified and the gene was sequenced. Specific PCR primers designed from the BAC and cDNA sequences were used for amplification and comparative sequencing of ACTC1 of Pietrain and Meishan pigs. The gene is approximately 5.4 kb in length, is composed of 7 exons, and has a coding sequence containing 1134 bp. The gene was mapped using the INRA-Minnesota porcine radiation hybrid (IMpRH) panel to chromosome 1, with SW65 as the closest marker (41 cR; LOD = 7.73). Differences were observed in tissue-specific expression of ACTC1 that was studied by transcription profiling in 28 porcine tissues. Developmental differences in muscle and heart were analysed by real-time quantitative PCR (RT-qPCR). Two single nucleotide polymorphisms (SNPs) were found in intron 1. One adequately informative SNP (FM212567.1:g.901C>G) was genotyped by PCR-restriction fragment length polymorphism, and allele frequencies in eight pig breeds were calculated.

The study objective was to evaluate the effect of immunocastration in the period between the first and second vaccinations and subsequently between the second vaccination and slaughter on growth performance, carcass composition, meat quality, and boar taint, and compare results in immunocastrated males (IC), uncastrated boars (UCM), surgically castrated barrows (CM), and gilts (FE). The study included 70 pigs of the Duroc × (Large White × Landrace) crossbreed. Upon the overall assessment of the selected fattening indicators (average daily gain, feed intake), significant differences between CM and the other groups were demonstrated. Meanwhile, no significant differences were found between the IC, UCM, and FE groups. In this test, immunocastrates showed no negative effect from the second vaccination in relation to those carcass value indicators evaluated in comparison with UCM and FE. CM showed adversely lower carcass value parameters compared the other groups. No significant differences in pH, meat colour, drip loss, shear force, and intramuscular fat were found. The values of these indicators obtained for IC converged with those measured in UCM and FE. It was demonstrated that immunocastration prevented the occurrence of undesired boar taint. Androstenone decreased by 77% and skatole by 71% in IC as compared to UCM.

ABSTRACT The objectives of this investigation were to examine the impact of the dietary inclusion of rapeseed and soybean oil and the length of their feeding before slaughter on growth performance, quantitative and qualitative carcass traits, and fatty acid composition in longissimus lumborum muscle (LLM) of pigs. The experiment was conducted with 72 pigs (36 barrows and 36 gilts), divided into six oil-containing diet groups and one control group. Diets of the experimental groups were supplemented with 4% rapeseed (ROD) or soybean (SOD) oil for six, four, and two weeks before slaughter. Diet of the control group had no oil supplement. Animals were fed ad libitum and slaughtered at average body weight of 115.8 kg. The oil supplement and feeding duration had a significant effect on fatty acid composition in intramuscular fat of LLM. The diet with both rapeseed and soybean oil significantly increased the content of linoleic acid and α-linolenic acid (ALA) in intramuscular fat. Both types of oil significantly increased total PUFA, n-3 PUFA, and the PUFA:SFA ratio. The significant decrease of n-6:n-3 PUFA ratio was observed in groups fed rapeseed oil for four and six weeks. Dietary addition of oils did not have any significant effect on average daily gain, carcass traits, and physical characteristics of LLM of pigs. However, daily feed intake and feed conversion ratio were reduced in the groups with soybean oil supplement. The results show that rapeseed oil supplementation (two weeks before slaughter) has positive effect on n-6:n-3 PUFA ratio and increase of ALA without negative effect on meat and fat quality.

The objective of work was to evaluate effects of milk production level (MY1≥9500 kg, n=23; MY2 = 8000-9499, n=28; and MY3≤7999 kg, n=29) and calving interval length (CI1≥440 days, n=22; CI2 = 400-439 days, n=33; and CI3≤399 days, n=25) on the lactation curve parameters calculated using MilkBot® Model and economic profitability of Holstein dairy cow breeding. Data were obtained from 80 Holstein cows on 1st to 4th parity calved between January and August 2012 on the dairy farm of the Czech University of Life Sciences Prague in Czech Republic. Lactation curve parameters differed more in relation with milk production level compared to calving interval length. Surgical castration of piglets without pain relief is still common practice in many countries. Possible alternatives for surgical castration are application of pain relief or anaesthesia or production of boars (entire males) and immunocastrates. Each of these alternatives faces advantages and disadvantages which may result in different citizen attitudes and consumers acceptability. Understanding which practice is acceptable to whom and why may further stimulate implementation. Consumer (n = 3251) and stakeholder (n = 1027) attitudes towards surgical castration without pain relief, surgical castration with anaesthesia, immunocastration, and production of boars were surveyed from April to June 2020 via an online questionnaire in 16 countries (>175 respondents per country). Surgical castration without pain relief was separated from each of the alternatives due to animal welfare and showed the lowest acceptability (32%). Within the alternatives, a further partitioning between the alternatives was based on perceived quality and food safety, with an acceptance of 85% for applying anaesthesia, 71% for immunocastration, and 49% for boar production. Differences depending on professional involvement and familiarity with agriculture could be observed, mainly for the acceptance of surgical castration without anaesthesia, immunocastration, and boars. Castration with anaesthesia was highly accepted by all types of respondents.

The aim of this exploratory work, because of the existing bias on the size of the sample and some of the sociodemographic characteristics of the participants, was to investigate the Eastern European consumers’ beliefs and attitudes toward animal welfare, to perform a cross-country segmentation analysis and to observe possible differences with their Western European counterparts. For this purpose, a survey was conducted with 5508 consumers from 13 Eastern European countries (Bosnia and Herzegovina, Bulgaria, Czech Republic, Croatia, North Macedonia, Hungary, Moldova, Poland, Romania, Serbia, Slovakia, Slovenia, and Ukraine) using a questionnaire with nine statements about consumers beliefs regarding animal welfare (aspects of management, ethical issues about animals, and consequences of animal welfare on meat quality and price), one statement about the willingness to pay more for meat produced under better welfare conditions, and four statements regarding attitudes toward animal welfare. Differences between countries were detected for all the statements. Moreover, three clusters of consumers were identified: one with consumers indifferent towards animal welfare; one with consumers concerned about animal welfare, but they believe it is difficult to achieve; and one with consumers concerned about animal welfare, and they believe it is possible to achieve it.

Jerusalem artichoke contains inulin polysaccharide, which has prebiotic effects and influences the microbiota of the digestive tract. The addition of Jerusalem artichoke in boar diets may decrease the content of skatole and indole, which are the main constituents of boar taint, and may also negatively affect the taste and odor. The objective of this study was to evaluate the effects of different levels of Helianthus tuberosus L. (H. tuberosus) in feed mixtures on performance, carcass composition, the levels of microbiota in faecal samples, and the concentrations of skatole and indole in adipose tissue. The study was performed with 47 crossbred entire male pigs of the Large White sire × (Large White dame × Landrace) genotype fed a basal diet with 0%, 4.1%, 8.1% or 12.2% H. tuberosus for 13 days before slaughter. Significant differences in daily weight gain and daily feed intake were found (p = 0.045), with the values being lower in the group with the highest level of H. tuberosus. In addition, increasing levels of H. tuberosus decreased the concentration of skatole in the adipose tissue (p = 0.003). The highest level of H. tuberosus decreased the level of Escherichia coli (p ≤ 0.001) in the faeces. The enterococcal count increased (p = 0.029) in groups with a diet that included 4.1% and 8.1% H. tuberosus. There was also a significant correlation between the concentration of H. tuberosus and the concentration of E. coli (p < 0.001; −0.64) and the skatole levels in the adipose tissue (p = 0.001; –0.46). Moreover, there was also a positive correlation between the concentration of E. coli and the skatole levels in the adipose tissue (p = 0.023; 0.33). In conclusion, feeding pigs with H. tuberosus leads to decreased levels of skatole in the adipose tissue. According to the results of our study, a diet with 8.1% H. tuberosus is sufficient for decreasing skatole levels, which could be due to the decreased levels of pathogenic bacteria in the intestines.

The work discusses the influence of the backfat thickness change, during sow´s lactation, on their subsequent litter characteristics. The reproduction potential of 478 sows of two genotypes was assessed. The genotypes were 50 Large White (LWD) sows and 428 crossbreeds Large White x Landrace (LWD x L) sows. The backfat thickness decline was examined in accordance to P2, backfat thickness in sows during lactation namely 1 day before planned parturition as well as weaning. From the obtained results it can be stated that the backfat thickness decline level during lactation has a small influence on the number of total born piglets. In contrast, the number of piglets born alive increased when backfat thickness rate increased. With a moderate backfat thickness decline, the average birthweight piglets gradually increased. However, the opposite trend was shown for the average weight at weaning. The backfat thickness decline level during sow´s lactation influences their farrowing interval. Animals with a lower increase of the backfat thickness subsequently showed a shorter farrowing interval (148.99, respectively 151.86 days), as well as a shorter weaning – estrus interval.

The aim of the study was to evaluate the effect of selected factors affecting fatty acids (FA) composition in pig fat. In the experiment, the influence of nutrition, gender, carcass weight, lean meat proportion (LMP) and intramuscular fat (IMF) were monitored. The effect of diet, specifically the influence of added linseed or corn on the fatty acids composition in the backfat was studied in pigs. From the perspective of the required increase of polyunsaturated fatty acids (PUFA) only the addition of the linseed proved to have a significant effect. Another evaluated aspect concerning the FA spectrum was the gender. While the backfat in barrows showed higher (P≤0.05) amount of monounsaturated fatty acids (MUFA), the backfat in gilts displayed a significantly higher proportion (P≤0.01) of the PUFA and total unsaturated fatty acids (UFA). A significant effect on the PUFA proportion has also been demonstrated for the lean meat proportion (LMP) parameter, which therefore represents not only a qualitative carcass meat parameter but also plays an important role in relation to the FA composition in the fat in pigs. In connection to the FA proportion changes the study also monitored the fat oxidative stability with the use of the TBARS method. Concerning the oxidative stability the effects of nutrition, FA groups, gender, carcass weight and LMP were studied. The relationship between the above mentioned factors and oxidative stability was found to be insignificant.

The aim of this study was to evaluate the influence of controlled nutrition on the selected muscle fibres indicators and carcass value in pork. The test included 72 hybrid pigs of the D x (LWD x L) genotype of a balanced sex (barrows/gilts). Animals were divided into two groups; the 1st (control) group was fed ad libitum, while the nutrition of the 2nd (experimental) group was restricted upon reaching 80 kg of live weight. The nutritional restriction was achieved by feeding the animals with maximum dose of CFM up to 2.8 kg*day-1 (corresponding to 36.4 MJ ME*day-1, 46.76 g NS*day-1 and 23.52 g LYS*day-1). From the obtained results it is evident that the daily feed intake restriction corresponds with greater number of the MLLT muscle fibers as well as with a higher IIB type muscle fibers share, higher lean meat share and a higher shoulder proportion in the carcass.

We evaluated the proportion of fatty acid groups, with an emphasis on hypercholesterolaemic fatty acids, in the milk of 25 Holstein cows during the 1st period of lactation in relation to their negative energy balance (NEB). Sampling of each cow's milk started on the 7th day after calving. Milk samples (n = 425) were collected at 7-day periods during the first 17 weeks of lactation. The proportion (%) of saturated (SFA), hypercholesterolaemic (HCFA), volatile (VFA), unsaturated (UFA), monounsaturated (MUFA), and polyunsaturated (PUFA) fatty acids in the milk fat was determined. Body condition score and fat to protein ratio in milk were applied for precise determination of the NEB breakpoint during the observed period. The effects of parity, NEB, regression on lactation week and fat to protein ratio were evaluated using SAS 9.3. Milk contained a lower proportion of SFA as well as equally higher UFA (± 2.13%; P < 0.01) during the NEB period. The overcoming of NEB caused an increase in SFA, however, and simultaneously a significant decline in total HCFA (-1.86%; P < 0.01) as well as main MUFA (-1.81%, P < 0.05). The results document the necessity of increasing Holstein cow robustness to meet the production conditions in dairy farms in relation to the requirement of higher nutrient quality as well as the potential health benefits of cow's raw milk for consumers.

This study compared the effect of two vegetable oils and their feeding duration on pig backfat quality. The experiment was conducted with 60 DanBred pigs that were fed a diet supplemented (40 g/kg) with rapeseed or soybean oil for 2, 4 or 6 weeks before slaughter at 152 d of age. The supplementation of both vegetable oils in the diets for 6 weeks negatively changed backfat consistency. The pigs fed soybean oil for 4 (17.64%) and 6 weeks (18.52%) before slaughter showed an increase in backfat linoleic acid content (p = 0.002), whereas, in contrast to the other groups, rapeseed oil in the diet for 6 weeks (2.38%) increased α-linolenic acid content (p = 0.039). The content of PUFAs (p = 0.024) and n-6 PUFAs (p = 0.003) was increased by adding soybean oil to the diet for 4 and 6 weeks. The ratio of n-6/n-3 PUFAs was decreased (p = 0.040) by supplementing rapeseed oil for 4 and 6 weeks. The oil feeding duration decreased (p < 0.001) the atherogenic and thrombogenic indices. The lipid oxidative stability of backfat stored for 3 and 5 days increased (p < 0.001) in pigs fed dietary vegetable oils for 6 weeks prior to slaughter. In conclusion, the feeding of rapeseed oil for 4 weeks before slaughter is sufficient for improving the FA profile without negative effect on the consistency of the backfat.

The objective of this work was to verify the effect of the lean meat proportion on the chemical composition of the meaty parts (loin and ham) of pork. A total of 116 finishing hybrid pigs commonly used in the Czech Republic were fattened for this purpose. The pigs were divided according to the lean meat proportion criterion into 3 groups, i.e. more than 60.0%, 55.0-59.9% and 50.0-54.9%. Representative muscle samples were taken from the right halves of these pigs. They were then homogenised and submitted to chemical analysis. The results of the measuring showed that the values of the water content, intramuscular fat (IMF), crude proteins, and ash matter ranged in the loin between 72.50-72.80%, 1.56-1.96%, 23.20-23.40%, and 1.37-1.40%, respectively, and in the ham between of 70.43-71.59%, 3.52-4.26%, 21.67-21.95%, and 1.42-1.56%, respectively. The ascertained values of the water content and crude proteins with regard to the increasing lean meat proportion in the carcasses did not show any developmental tendencies. As for the content of IMF, it was determined that the higher was the lean meat proportion, the lower was the IMF content. Concerned of sensoric quality traits it means that pork meat from supermeaty hybrid pigs shows lower quality. Concerning the content of ash matter, it was observed that the ash content increased with an increasing lean meat proportion. In the carcass part of the musculus longissimus lumborum et thoracis (MLLT), it was demonstrated that the higher was the lean meat proportion, the lower was the content of amino acids - threonine, isoleucine, lysine, aspartic acid, serine, and proline. From point of the production of exceedingly meaty pigs (over 60%), it can be expected a worse nutritional pork meat value. In the carcass portion of the musculus semimembranosus (MS), the contents of valine, isoleucine, phenylalanine, lysine, serine, proline, and glycine increased with an increasing lean meat proportion. Within the framework of statistical evaluation of differences between the groups, the values of IMF ((P ≤ 0.01) in MLLT, water content, IMF, ash matter, threonine, valine, phenylalanine, lysine, aspartic acid, serine, glycine, and alanine in MS were highly significant ((P ≤ 0.05; (P ≤ 0.01 and (P ≤ 0.001).
