Cilj ovog istraživanja bio je utvrditi utjecaj dodatka kamilice i koprive kao prirodnih dodataka u hranidbi tovnih pilića na kvalitetu njihova mesa. Istraživanje je provedeno na 120 jednodnevnih pilića hibrida Ross 308, podijeljenih u 4 skupine. Kontrolna (K) skupina bez prirodnih dodataka u kompletnoj krmnoj smjesi te tri pokusne skupine (P1, P2, P3): P1 skupina uz dodatak 2 % koprive, P2 uz dodatak 2 % kamilice te P3 uz dodatak 1 % koprive + 1 % kamilice u kompletnim krmnim smjesama. Tov pilića trajao je 6 tjedana. Od 1. do 21. dana istraživanja pilići su bili hranjeni standardnom krmnom smjesom starter (22,05 % sirovih bjelančevina), a od 22. do 42. dana istraživanja krmnom smjesom finišer (20,18 % sirovih bjelančevina). Across the world, as well as in Croatia, there is a continuous increase in the consumption of chicken meat, and attempts are being made in modern poultry production to improve its quality as much as possible by using various natural additives. The aim of this study was to determine the influence of dietary supplementation with propolis and bee pollen on the quality of chicken meat. In order to determine this effect, the carcass body weight of slaughtered chickens and carcass yield were determined, as well as the average pH1 and pH2 of chicken breast muscle, drip loss values, and skin color and chicken breast muscle color expressed as values of L* (lightness), a* (redness), and b* (yellowness). The study was conducted on 200 Ross 308 chickens, divided into five groups. Throughout the study, the control group of chickens was fed with a basal diet, while the experimental groups of chickens were fed with the basal diet supplemented with propolis and bee pollen, each supplement given separately or in combination in specific proportions. At the end of the experiment (42nd day), 10 chickens from each group were slaughtered for the analyses mentioned above. The carcass yield values were significantly higher (P = 0.038) and the drip loss values were significantly lower (P = 0.003) in the experimental groups in comparison to the control group. The duodenum, jejunum and ileum are parts of the small intestine and the sites of the terminal stages of enzymatic digestion, and the majority of nutrient, electrolyte and water absorption. The apical, luminal membrane of the enterocyte is built of numerous microvilli that increase the absorptive surface of the cell. Carbohydrates, in the form of monosaccharides, oligosaccharides and especially polysaccharides, make up the largest quantitative and energetic part of the diet of most animals, including humans. Galactose, fructose and glucose, the final degradation products of polysaccharide and oligosaccharide enzymatic digestion, can be absorbed by enterocytes either by active transport or by facilitated diffusion. In the small intestine, the transepithelial transport of glucose, the most abundant monosaccharide after carbohydrate digestion and the main source of energy, is performed by a specific membrane transporter located in the brush border membrane of the enterocyte, the sodiumglucose cotransporter 1 (SGLT1). While SGLT1 transports glucose across the brush border membrane, a specific basolateral membrane glucose transporter, the sodium-independent glucose transporter 2 (GLUT2), transfers glucose out of the enterocyte down the concentration gradient. The sodium-potassium pump (Na/KATPase), as a sodium and potassium ion transporter, is functionally closely related to the sodium-dependent SGLT1. Na/KATPase is responsible for maintaining the electrochemical gradient of sodium ions, as the driving force for glucose transport via SGLT1. Transepithelial transport of glucose in the small intestine and the differentiation of enterocytes occurs relatively early during the foetal period, allowing glucose to be absorbed from ingested amniotic fluid. Nutrient transport is possible along the whole villus-crypt axis during intrauterine development, while transport shifts toward the villus tip in the mature small intestine. With maturation, glucose transport rates change not only across the villus-crypt axis, but also along the proximodistal axis in the small intestine. The glucose absorption rate shows differences between subunits of the small intestine depending on the age and type of ingested carbohydrates, where complex carbohydrates replace less complex carbohydrates or disaccharides.

Republika Hrvatska zbog svojih klimatskih, zemljopisnih i tradicijskih osobitosti ima bogatu tradiciju proizvodnje i pripreme različitih suhomesnatih proizvoda koji se odlikuju posebnom kvalitetom i tradicionalnim načinom proizvodnje. Šunka i pršut su tako među najpoznatijim suhomesnatim proizvodima kod nas, a kategoriziramo ih kao trajne suhomesnate proizvode od svinjskog mesa. Razlika između šunki i pršuta je u obradi butova i tehnologiji proizvodnje. Najpoznatija hrvatska šunka je slavonska šunka koja se proizvodi od obrađenog svinjskog buta iz kojega se vadi križna kost (os sacrum) i zdjelične kosti (bočna sjedna i preponska) te se donji rub buta polukružno zaobli, kako bi bio oko 6 cm od glave bedrene kosti. Nakon toga u but se utrljava sol (suho soljenje/salamurenje) ili se but potapa u salamuru (vlažno solenje/salamurenje) kroz 30 dana, poslije čega slijedi dimljenje (sušenje) na dimu drveta ili strugotine jasena, bukve, graba ili hrasta. Po završetku dimljenja pristupa se završnoj fazi tzv. zrenju šunki, u posebnim prostorijama s optimalnom mikroklimom, kroz 7-8 mjeseci, ovisno o masi buta. Najpoznatiji hrvatski pršuti su: Dalmatinski pršut, Istarski pršut, Drniški pršut i Krčki pršut. Ovi pršuti razlikuju se po tehnologiji proizvodnje, a prema Pravilniku o mesnim proizvodima koji je na snazi u Republici Hrvatskoj, svi ti pršuti su proizvodi od svinjskog buta sa kostima, sa ili bez kože i potkožnog masnog tkiva, sa ili bez nogice, i zdjeličnih kostiju, bez repa, sa ili bez dodataka začina, koji se konzerviraju postupkom suhog soljenja ili salamurenja, sa ili bez dimljenja te podvrgnutim procesima sušenja i zrenja kroz najmanje 9 mjeseci. Da bi se proizvela kvalitetna šunka ili pršut, neophodno je osigurati kvalitetnu osnovnu sirovinu (meso buta). Na kvalitetu svinjskih polovica utječe uz genetske (genotip svinja) i niz paragenetskih čimbenika: hranidba, sustav držanja, dob svinja, spol, kastracija, završna tjelesna masa svinja, postupak sa svinjama prije klanja, tehnologija proizvodnje šunki i pršuta (primarna obrada butova, soljenje, dimljenje, zrenje). Cilj ovoga rada je prikazati kako povezano djelovanje ovih čimbenika utječe na kvalitetu šunki i pršuta., Due to its climatic, geographical and traditional aspects, the Republic of Croatia has a rich tradition of production and preparation of various cured meat products that are characterized by a special quality and traditional method of production. Ham and prosciutto are thus among the most famous cured meat products in Croatia, and are categorized as permanent cured meat pork products. The difference between ham and prosciutto is in the processing of the legs and the production technology. The most famous is Slavonian ham, which is made from processed pork leg with removed sacrum and pelvic bones, whereas the thigh lower edge is semi circularly rounded to about 6 cm from the femoral head. Afterwards, salt (wet salting/brine) is rubbed into the leg or the leg is immersed in brine (dry salting/brine), for 30 days followed by smoking by wood smoke or by ash, beech, hornbeam or oak sawdust smoke. After smoking follows the final stage of hams maturing which takes place in special rooms with a optimal microclimate for 7-8 months, depending on the hem weight. The most famous Croatian prosciuttos are: Dalmatian prosciutto, Istrian prosciutto, Drniš prosciutto and Krk prosciutto. These hams differ in production technology, and according to the Ordinance on meat products which is in force in the Republic of Croatia, all these hams are pork leg products with bones, with or without skin and subcutaneous fat, with or without legs, and pelvic bones, without tail, with or without the addition of spices, preserved by dry salting or brining, with or without smoking and subjected to drying and maturing processes for at least 9 months. In order to produce quality ham or prosciutto, it is necessary to provide a quality basic raw material (ham meat). The quality of pig carcasses is affected by genetic (pig’s genotype) and a number of paragenetic factors: nutrition, housing system, age of pigs, sex, castration, final body weight of pigs, procedure with pigs before slaughter, ham and prosciutto production technology (primary processing of hams, salting, smoking, ripening). The aim of this paper is to show how the combined action of these factors affects the quality of hams and prosciutto.

Cilj istraživanja bio je usporediti učinak dopunskih smjesa s većim i manjim udjelom bjelančevina, a koje sadrže sporootpuštajuće neproteinske dušične (NPN) spojeve u tovu junadi na proizvodne pokazatelje i cijenu koštanja. U pokusu su bile 24 životinje ženskog spola križanih u tipu belgijskog plavog goveda, ravnomjerno podijeljene u dvije skupine. Trajanje pokusa iznosilo je 213 dana. Tijekom pokusa od proizvodnih pokazatelja praćeni su tjelesna masa, prosječni dnevni prirast te konverzija hrane. Osim proizvodnih pokazatelja praćena je i cijena koštanja prirasta. Provedena su četiri vaganja, od čega su dva vaganja bila pojedinačna dok su ostala dva vaganja bila grupna. Junad je hranjena TMR obrocima ujednačenih nutritivnih vrijednosti u koje su uključene dopunske smjese različite bjelančevinaste vrijednosti koje sadrže sporootpuštajuće NPN spojeve. U obrok P1 skupine bila je uključena dopunska smjesa s većom, dok je obrok P2 skupine sadržavao smjesu s manjom bjelančevinastom vrijednošću. Rezultati na kraju istraživanja pokazali su nešto veće prosječne dnevne priraste (1,27 : 1,18 kg/dan), u korist P1 skupine. Ukupna konverzija hrane bila je nešto niža kod P1 skupine u odnosu na P2 skupinu (6,4 : 6,6 kg/kg), dok je cijena koštanja po jedinici prirasta bila ujednačena tijekom cijelog istraživanja. Na kraju istraživanja može se zaključiti kako se primjenom NPN spojeva uz pažljivo balansiranje obroka može postići profitabilan i siguran tov junadi., The aim of the study was to compare the effect of supplementary mixtures with higher and lower protein content, which contain slow-release non-protein nitrogen (NPN) compounds in cattle fattening on production indicators and cost price. In the experiment there were 24 female crossbreeds in the Belgian Blue cattle type that were evenly divided into two groups. The duration of the experiment was 213 days. During the experiment, body weight, average daily gain and feed conversion were monitored as well as, the cost price of gain. Four weighings were performed, of which two weighings were individual while the other two weighings were group weighings. Cattle were fed TMR meals of uniform nutritional value that included supplemental mixtures of different protein value containing slow-release NPN compounds. A supplemental mixture with a higher protein content was included in the P1 group meal, while the P2 group meal contained a mixture with a lower protein value. The results at the end of the study showed slightly higher average daily gains (1.27: 1.18 kg / day), in favor of the P1 group. Total feed conversion was slightly lower in the P1 group compared to the P2 group (6.4: 6.6 kg / kg), while the cost price per unit of body weight gain was uniform throughout the study. At the end of the research it can be concluded that the use of NPN compounds with careful balancing of meals can achieve profitable and safe meat production.

Cilj ovoga istraživanja bio je utvrditi utjecaj dodatka propolisa i/ili pčelinjeg peluda krmnim smjesama brojlera na sastav mikrobiološke flore voljke. Istraživanje je provedeno na ukupno 200 jednodnevnih pilića hibrida Ross 308 ravnomjerno raspoređenih spolova, koji su bili podijeljeni u pet skupina. Tijekom cijeloga pokusa kontrolna je skupina pilića hranjena krmnom smjesom, dok su pokusne skupine pilića hranjene istom krmnom smjesom uz dodatak propolisa i pčelinjeg peluda, svakim dodatkom zasebno ili u kombinaciji u određenome omjeru. Tov pilića trajao je 42 dana, podnim načinom držanja na stelji od drvene strugotine. Pilići su od 1. do 21. dana istraživanja bili hranjeni standardnom krmnom smjesom starter, a od 22. do 42. dana istraživanja krmnom smjesom finišer. Hranidba kao i napajanje pilića tijekom istraživanja bili su po volji. Na kraju istraživanja, 42. dan te nakon 10-satnog gladovanja slučajnim je odabirom žrtvovano po 10 pilića iz svake skupine. U sterilne bočice uzeti su uzorci sadržaja voljki u kojima se u ovlaštenom mikrobiološkom laboratoriju utvrđivao ukupni broj bakterija, broj bakterija iz roda Enterobacteriaceae te broj bakterija iz roda Lactobacillus. Mikrobiološka analiza sadržaja voljke pokazala je kako među skupinama pilića nisu postojale statistički značajne razlike u ukupnom broju bakterija i broju bakterija iz roda Lactobacillus dok su postojale statistički značajne razlike u broju bakterija iz roda Enterobacteriaceae (P=0,042) u sadržaju voljke pilića kontrolne i pokusnih skupina. Provedeno istraživanje potvrdilo je kako dodatak propolisa i/ili pčelinjeg peluda krmnoj smjesi za tov pilića značajno pozitivno utječe na pojavu korisnih i patogenih mikroorganizama u sadržaju voljke brojlera, što se očitovalo statistički značajno manjom vrijednosti broja bakterija iz roda Enterobacteriaceae u sadržaju voljke pilića pokusnih skupina 42. dana tova u odnosu na piliće kontrolne skupine., The aim of this study was to determine the influence of the addition of propolis and/or bee pollen to broiler feed mixtures on the composition of the microbiological flora of a broiler’s crop. The study was conducted on a total of 200 one-dayold chickens of the Ross 308 hybrid, evenly distributed between the sexes, which were divided into five groups. During the entire experiment, the control group of chickens was fed with a feed mixture, while the experimental groups of chickens were fed with the same feed mixture with the addition of propolis and bee pollen, each additive separately or in combination in a certain ratio. Fattening was conducted on the wooden sawdust, and lasted for 42 days. From days 1-21 of the study chickens were fed a feed mixture of starter, and from days 22-42 of the study they were fed a finisher feed mixture. During the study, feed and water were given to chickens’ ad libitum. At the end of the study, on the 42nd day and after a 10-hour starvation, 10 chickens were randomly selected from each group and sacrificed. Samples of the broiler’s crop contents were taken in sterile vials, in which the total number of bacteria, the number of bacteria from the genus Enterobacteriaceae and the number of bacteria from the genus Lactobacillus were determined in an authorized microbiological laboratory. Microbiological analysis of the broiler’s crop contents showed that there were no statistically significant differences between the groups of chickens in the total number of bacteria and the number of bacteria from the genus Lactobacillus, while there were statistically significant differences in the number of bacteria from the genus Enterobacteriaceae (P=0.042) in the broiler’s crop content of the chickens of the control and experimental groups. The present study confirmed that the addition of propolis and/or bee pollen to the feed mixtures has a significantly positive effect on the occurrence of beneficial and pathogenic microorganisms in the contents of broiler’s crop, which was manifested by a statistically significantly lower number of bacteria from the genus Enterobacteriaceae in the broiler’s crop content of chickens of the experimental groups on the 42nd day of fattening compared to chickens of the control group.

Selen je esencijalni element za ljude i životinje, a kao građevni element selenoproteina vrlo značajan je za metabolizam organizma životinje. Cilj ovog istraživanja bio je utvrditi utjecaj dodatka selenom biofortificiranog kukuruza i soje u hranidbu tovnih pilića na tjelesnu masu i prirast te kvalitetu pilećeg mesa. Pokus je proveden na 90 jednodnevnih pilića provenijencije Ross 308 ravnomjerno raspoređenih spolova, podijeljenih u 3 skupine (kontrolna i dvije pokusne skupine pilića) u trajanju od šest tjedana. Kontrolna skupina pilića tijekom cijelog istraživanja bila je hranjena standardnom krmnom smjesom, dok je u smjesi P1skupine pilića korištena selenom biofortificirana soje, a u smjesu skupine P2 korišteni su selenom biofortificirani soja i kukuruz. Istraživanje je pokazalo kako je postojala statistički značajna razlika u tjelesnim masama (p=0, 004) i prirastima (p=0, 049) pokusnih skupina u odnosu na kontrolnu skupinu pilića u četvrtom tjednu tova. U istraživanju je tovljeno ukupno 200 pilića Ross 308 podijeljenih u pet skupina. Tijekom cijelog tova, kontrolna skupina pilića hranjena je čistom krmnom smjesom, dok su pokusne skupine pilića hranjene krmnom smjesom uz dodatak propolisa i pčelinjeg peluda (svakog aditiva zasebno ili u njihovoj kombinaciji u određenom omjeru). Po završetku tova (nakon 42 dana) i nakon 10-satnog gladovanja, žrtvovano je po 10 pilića iz svake skupine za potrebe prethodno spomenutih analiza. Utvrđene su statistički znakovito veće vrijednosti randmana (P = 0,038) pilića pokusnih skupina u odnosu na kontrolnu skupinu kao i statistički znakovito manje vrijednosti otpuštanja mesnog soka (P = 0,003) mesa pilića pokusnih skupina u odnosu na kontrolnu skupinu. Uz to, postojala je statistički značajna razlika u vrijednosti b* boje kože (P = 0,017) te statistički značajna razlika u vrijednosti b* boje mesa (P < 0,001) među skupinama pilića. Ovo je istraživanje pokazalo kako propolis i pčelinji pelud imaju značajan pozitivan utjecaj na kvalitetu pilećeg mesa.

Zbog svojih svojstava propolis se smatra funkcionalnom hranom. Budući je upotreba propolisa u preh-rani ljudi ograničena, treba ju povećati kroz konzumaciju namirnica obogaćenih propolisom koje se uče-stalo koriste u prehrani, poput pilećeg mesa. Cilj ovog istraživanja bio je utvrditi utjecaj dodatka propo-lisa hranidbi pilića na tjelesnu masu pilića, masu trupova pilića i randman, kao i na masu pojedinih dije-lova trupa (prsa, batkovi sa zabatcima, leđa sa zdjelicom, krila i vratovi) kao pokazatelja mogućnosti uporabe propolisa u hranidbi tovnih pilića i moguće proizvodnje obogaćenog pilećeg mesa. Istraživanje je provedeno na 180 pilića Ross 308 provenijencije podjednako raspoređenih prema spolu i podijeljenih u tri skupine: kontrolnu skupinu pilića (K) koja je hranjena standardnom krmnom smjesom i dvije eks-perimentalne skupine pilića (E) hranjene uz dodatak propolisa u dvije različite koncentracije ( E1 2 g / kg i E2 4 g / kg). Istraživanje je pokazalo kako nisu postojale statistički značajne razlike između skupina K i E s obzirom na tjelesnu masu i potrošnju hrane u bilo kojem tjednu pokusa. Istraživanje je nadalje otkrilo kako nije bilo statistički značajnih razlika u masi trupova pilića, randmanima i masi pojedinih dijelova trupa između skupina K i E. Može se zaključiti kako dodavanje propolisa nije rezultiralo statis-tički značajnim razlikama u istraživanim proizvodnim pokazateljima pilića. Kako bi se bolje procijenila mogućnost stvaranja propolisom obogaćenog pilećeg mesa potrebna je dodatna analiza drugih pokaza-telja., Due to its properties, propolis is considered a functional food. The study was conducted on 180 Ross 308 chickens equally distributed by sex and divided into three groups: the control group of chickens (C) fed with a basal diet and two experimental groups of chickens (E) fed with the same diet supplemented with propolis (E1 2 g/kg and E2 4 g/kg). The study showed that there were no statistically significant dif-ferences between C and E considering body weights and feed consumption in any week of the feeding trial. Study further revealed that there were no statistically significant differences in carcass body weights of slaughtered chickens, carcass yields and carcass body parts weight between C and E. It can be con-cluded that propolis addition did not result in statistically significant differences in evaluated perfor-mance indicators of chickens. In order to better evaluate the possibility of creation of the propolis en-riched chicken meat analysis of different parameters are needed.

The aim of this study was to determine the influence of dietary supplementation with propolis and bee pollen on the intestinal morphology and absorptive surface areas of chickens. Two hundred day-old Ross 308 chickens (100 male and 100 female) were equally allocated into five groups. Throughout the whole study, the control group of chickens was fed with a basal diet, while the experimental groups of chickens were fed with the same diet supplemented with propolis and bee pollen: P1 = 0.25 g of propolis/kg + 20 g of bee pollen/kg, P2 = 0.5 g of propolis/kg, P3 = 1.0 g of propolis/kg, P4 = 20 g of bee pollen/kg. The duodenal villi of chickens from all experimental groups were significantly higher and wider (p &lt, 0.001), while their duodenal villi crypts were significantly deeper (p &lt, 0.001) in comparison with these parameters in chickens from the control group. The villus height to crypt depth ratio, as well as the absorptive surface areas of broiler chickens, were significantly increased (p &lt, 0.001) in experimental groups of chickens in comparison with the control group. These findings suggest that dietary supplementation with propolis and bee pollen has a beneficial effect on broilers chickens&rsquo, intestinal morphophysiology.
