This paper had a goal to explore the relationship between autochthonous wine attributes and wine consumption motives. Data were collected through a questionnaire, processed by standard statistical methods, univariate (general description of the sample), and multivariate statistics (factor analysis, cluster analysis and logistic regression). Through factor analysis five main dimensions of wine consumption motives were determined, namely social status, socializing effects, health, self indulgence and relaxation. For autohchthonous wine (Malvazija Istarska) three factor dimensions of wine attributes were determined: reccomendations, quality and origin. Through cluster analysis, wine consumption motives showed significant relations to the wine attributes, whereas selfexpression, and health and taste stood out as the most important dimensions between high and low wine attribute importance segments.

Since the discovery of the so-called ‘French paradox’ by Renaud & de Lorgeril, M. (1992), a diet of high fat and cholesterol intake along with red wine that does not negatively impact health, such as cardiovascular risks, medical surveys found more positive relations of wine and health and more biochemical substances with positive effects on human health (Anekonda 2016 ; Golderg . The positive effects include blood pressure, cholesterol levels, blood lipids, diabetes, obesity regulation, prevention of atherosclerosis, cardiovascular disease, anti-inflammatory and antitumor effects. In addition to the positive impact on physical health, evidence exist on positive impacts of phenolic compounds (stilbenes, especially resveratrol) on mental health regarding protecting neuronal cells from damage, preventing the development of neurodegenerative diseases, treating depression, improving cognitive function, and increasing memory (Ares et al., 2015 ; Diener et al., 1999 ; Guilemin et al., 2016). The positive psychological responses of humans caused by moderate wine consumption respond to a positive sense psychological well-being, fewer or no symptoms of depression, and a higher level of positive affects and lower negative affects. During the scientific project “Vinum Sanum” several research questions were set and hypothesis upon whom surveys were conducted. The surveys included questions about human behaviour towards wine, medical aspects of wine consumption, comparison of consumers and non-consumers perceptions about health attributes of wine. The study was carried out in accordance with the Declaration of Helsinki developed by the World Medical Association and was approved by the Ethics Committee of the Clinical Hospital Center Rijeka (Croatia).The purpose of the study presented in this article was to show how wine consumers perceive wine and how it affects their psychological state. The main objective of this survey was to provide evidence about moderate wine consumption of Malvazija istarska on human health, the possible positive effects of wine consumption on psychological well-being and to detect positive perceptions towards wine. The objective was achieved by testing participants during a period of six weeks of moderate wine consumption of autochthonous Croatian grapevine variety Malvazija istarska (Vitis vinifera L.) produced in Istria county. The data were collected from wine consumers at two time points (in June and July 2019) before and after wine consumption with a self-completed questionnaire that was administered by trained researchers. Two questionnaires were used, one to measure the psychological response of the influence of moderate wine consumption and one to measure the perception of wine and its health attributes. Variables were measured with the Likert scale (1-5 for wine attributes and 1-10 for psychological affects). For data processing descriptive analysis (M, SD), and factor analysis were used. Results indicate the awareness of positive health aspects of wine consumption, connected to the positive effects of wine on cardiovascular health (namely, heart, blood vessels health and levels of blood cholesterol). Wine was perceived as a natural and healthy beverage, in a positive sense with its relaxation, hedonistic effects and quality attributes (ageing/vintage, terroir, micro region/vineyards). The psychological affects/subjective well-being included negative stress affects (being nervous, anxious and under pressure) that were explained by everyday pressures of work and family obligations. The construct of negative affects was separate from the positive affects expressed with feelings of happiness, emotional stability and positive general well-being feelings. The obtained results about positive effects of moderate wine consumption may be useful for other researchers in medical branches who question if moderate wine consumption has positive of negative effects on human health, and may serve in current discussions at the World Health Organization on wine and health.

The purpose of the survey was to identify and analyze moderate wine consumption of Croatian autochthonous wine varieties. The survey was conducted in 2019 and 2020 on the Croatian Science Foundation scientific project "Vinum Sanum". Dimensions of wine and health benefits, wine quality, labelling, positive and negative effects on wine labels and psychological well-being were assessed with a questionnaire from 374 participants. Results indicated that wine was perceived as a healthy beverage, consumed as part of healthy life style. Health benefits were perceived positively through cardiac, physical health and psychological well-being. Most important quality features were: origin; micro region, terroir, PGI/PDO (protected geographic origin/protected designation of origin), vintage, ageing and sugar content. This survey might be used as scientific evidence for developing health claims for wine, for producers to use health enhancing properties of wines and create packages and/or labels which may boost the positive perception of wine health benefits. Tourism stakeholders’ participation is mostly needed for planning purposes because they have better insights regarding various issues present on a local level. A participative approach enables tourism stakeholders to influence and control, to a certain degree, the development of tourism in their community. However, there is a lack of research on stakeholders’ understanding of a participative approach that has been identified. This study uses a qualitative research approach where a focus group (FG) with key stakeholders was employed to examine the mechanism behind the participative approach. Namely, this paper presents the findings about the local stakeholders’ experiences with a participative approach and their opinions regarding how to foster this type of initiatives in tourism settings. Data presented in this paper were collected during a discussion with an FG and processed using thematic analysis. The thoughts and opinions of stakeholders were analyzed by taking into consideration barriers and enablers related to the implementation of a participative approach. The main focus was placed on bottom-up initiatives, but other types were included as well. Identified barriers and enablers were categorized into four themes: approach necessity, appropriate stakeholders selection, correct application of the approach, and stakeholders’ motivation. The aim of this work was to determine the relationship between some aroma sensory descriptors and wine quality scores of white wines made from cv. Malvazija istarska (Vitis Vinfera L.). Six different vinification techniques were carried out: control treatment – fast grape processing without maceration (BP), fast grape processing with the addition of oenological tannin (BPT), pre-fermentative cold 1-day maceration (MM1), 7 days maceration (MM7), 21 days maceration (MM21) and vinification of dried grapes (MP) of cv. Malvazija istarska. Sensory profile of wine samples was obtained using both quantitive descriptive analysis (QDA) and 100 points O.I.V/U.I.O.E. evaluation method. The results showed a positive correlation between the presence of fruit and floral aroma attributes and overall wine impression. All observed treatments contributed to the positive effect on fruit and floral aromatic profile and overall wine impression in respect to control treatment.

The aim of this study was to establish the relationship between some sensory attributes and the overall impression of native Croatian red wine variety Teran (Vitis vinifera L.). Wines were produced with four different vinification techniques: control (7-days maceration, TM7), prolonged maceration 10 and 21 days (TM10, TM21 respectively), and pre- fermentation heating treatment (TPHT). The sensory profile of wine samples was obtained using quantitative descriptive analysis (QDA) and 100 points O.I.V/U.I.O.E. evaluation method. Five panelists rated the intensity of body/fullness, astringency, viscosity, aftertaste quality, and varietal typicity of taste. The results showed a positive correlation between the intensity of most taste attributes and the overall wine impression. A strong negative correlation was observed for astringency. All observed treatments, highlighting post-fermentative prolonged 21-day maceration and pre-fermentation heating treatment, contributed to the positive effect on taste profile and overall wine impression regarding control treatment.

The objective of this study was to analyse the impact of positive externalities of international tourism demand on increasing the market power (MP) of an extra virgin olive oil (EVOO) wholesaler in Croatia. In the context of this article, the MP measures how close the wholesaler can set the actual price of EVOO to the maximum the retailer wants to pay. Our hypothesis explained how the additional demand of tourist consumers for EVOO could stimulate and increase the MP of the wholesalers. Here, it was important to remember that the EVOO market signals relatively asymmetric quality information about products that varies in certain ranges. The selected time-series span the weekly period from 2017 to 2019. We used the Toda-Yamamoto approaches of causality in the relationship between the EVOO price gap and tourism overnights, as well as the autoregressive distributed lag model (ARDL) bounds test for cointegration. For larger EVOO bottles (0,75 and 1 l), there is unidirectional causality flowing from tourism consumption, which we presume originates from the tourism demand variable, to MP. There is a relevant bidirectional causality in the case of the 0,25 l bottle. Tourism in a purchased bottle of 0,5 l does not manifest any side-effect impact on MP. This pioneering study has investigated the relationship between the MP of EVOO wholesalers in Croatia and tourist demand. An inventive view has been adopted with regard to the theoretical concept of measuring MP, but also due to the steps towards the use of ARDL bound testing.

14. Utjecaj temperature i duljine trajanja maceracije na koncentraciju antocijana te parametre boje vina sorte ‘Teran’

Cilj ovog istraživanja bio je utvrditi utjecaj duljine trajanja i temperature maceracije na koncentraciju slobodnih i ukupnih antocijana te parametre boje u vinima sorte ‘Teran’. Provedena su četiri različita vinifikacijska tretmana: 7 dana maceracije (TM7, kontrolni tretman), 10 dana (TM10) i 21 dan maceracije (TM21) pri temperaturi od 24°C, te 10 dana maceracije uz zagrijavanje masulja na 45°C prvih 48 sati (pred-fermentacijsko zagrijavanje masulja, TPHT). Koncentracija ukupnih i slobodnih antocijana, te intenzitet, nijansa i kompozicija boje određeni su spektrofotometrijski. Koncentracija ukupnih antocijana kretala se od 334, 3 mg/L do 444, 73 mg/L (TPHT, TM21), a slobodnih antocijana od 76, 73 mg/L do 113, 57 mg/L (TM10, TM21), tretman produljene maceracije (TM21) imao je značajan utjecaj na povećanje koncentracije ukupnih i slobodnih antocijana. Intenzitet boje kretao se u rasponu od 1, 59 do 1, 69 (TM10, TPHT), a nijansa boje od 0, 52 do 0, 54, pri čemu je kontrolni tretman imao signifikantno najnižu izmjerenu vrijednost nijanse boje. Unatoč nižoj koncentraciji slobodnih i ukupnih antocijana, kod pred-fermentacijskog tretmana zagrijavanja zabilježen je signifikantno najveći intenzitet boje, što je vjerojatno posljedica procesa kopigmentacije, odnosno tvorbe polimernih pigmenata. Iz dobivenih rezultata može se zaključiti da duljina trajanja i temperatura maceracije značajno utječu na sastav vina. Poduljena maceracija vodi ka povećanju koncentracije slobodnih i ukupnih antocijana, dok pred-fermentacijsko zagrijavanje utječe na povećanje intenziteta i stabilnosti boje, stoga oba tretmana mogu imati praktičnu primjenu u proizvodnji crnih vina.

The so called cellar door or winery features and experiences of visitors are crucial for attracting the visitors to wine cellars and their future behaviour in wine consumption and wine purchase. Since very few researchers focused on the features of the wine tasting facilities-wine cellar, and due to lack of data for Croatia, our survey was focused on this issue. The survey was focused on wine producers in Istria (in Croatian and Slovenian area) which produce autochthonous cultivars such as Malvasia Istarska and provide wine tasting facilities/wine cellars open to visitors. Our findings showed that most facilities were architecturally made in rustic/traditional style (made of stone, brick and wood). We noticed that the Croatian wine producers were more open to visits (no call ahead needed) and offered more frequently meals compared to the Slovenian. Compared to Croats, in Slovenian facilities, more events in general were available and more special events for wine enthusiasts and experts.

17. Wine and health: relations from the consumers’ perspectives

The survey on wine, health and consumers’ in Croatia was based upon two samples ; wine fair visitors and local population. The wine fair visitors were more wine involved and more health consciousness about wine compared to local population. In both samples the perceptions of wine as a healthy beverage was ranked highest, followed by the perception of wine as good for ones’ health, while wine as part of healthy lifestyle scored lowest rank. According to gender differences men in both samples had more positive perception about health aspects of wine. Highly educated men (university degree), managers were most prone to consume wine as part of healthy lifestyle. Lower educated women (secondary education) in the lowest income bracket perceived wine as a natural beverage. The survey will be continued, while stated results are implications for the future research and create potential for promoting wine as healthy beverage and part of healthy lifestyle.

The paper examined three groups of wine consumers and their relations to wine attributes. A total of 412 respondents were examined, namely winery visitors, wine exhibitions visitors and residents. Data were collected about their preferences toward extrinsic and intrinsic wine attributes. Statistical analysis showed high impact of nine attribute’s, whereas extrinsic attributes of bottle and label design and awards were most important. Intrinsic attribute of recommendation of salespersons was the most important. Significant differences between three groups manifested for residents compared to wine exhibition and winery visitors and for certain attributes. Residents considered sellers’ recommendations most important, while bottle design, label and quality less important.

20. Economic growth and tourism receipts : evidence from Europe

According to TLG hypothesis, international tourism would contribute, as any other export, to income growth by enhancing efficiency through competition and by facilitating the exploitation of economies of scale in local firms. This paper utilizes the systems generalized method of moments (GMM) and panel Granger causality Granger Causality tests in panel data models, to investigate the tourism receipts and gross domestic product (GDP) relationship for 30 European countries over the period 1995–2015. This study aims to test whether tourism receipts growth model predictions are valid for 30 European countries’ economies. Values for the GDP per capita variable that is considered to represent economic growth and tourism receipts per capita variable that is considered to represent tourism concentration activities have been obtained from the World Bank Database.

The creation of new and innovative types of tourism offers intended for segments of tourist demand in a tourist destination is usually left to tourist entities or local tourist communities. Using the institutional capacity of faculties and scientific institutes to create new innovative tourism programs is less common. The research was set to give emphasis to indigenous wines and autochthonous wine varieties and according to consumer attitudes in research to create new thematic tourist itineraries and wine routes. Our main hypothesis was that differences between the population of domestic and foreign wine consumers exists and therefore we have examined two samples of consumers, domestic population and tourists. Further, our second hypothesis was that there are differences in preferences toward wine attributes and wine consumption habits. Research results showed important differences in preferences towards wine attributes between two samples of consumers (local population and tourists). Inside both of the samples differences in consumption were evident regarding gender, age and income.

23. Transfer of research results to praxis – the case of Istria young potatoe

The paper presents data about the preferences and opinions of consumers toward young potatoes. The aim was to explain consumer habits with the goal of creating a new market brand of young potatoes produced in Istria. Using a questionnaire, we interviewed consumers on the green markets and in shops. The research sample contained 679 potato consumers throughout Croatia. Two thirds of respondents were females, and most were under 55 years of age, with secondary or university education, with monthly income from 700 to 2000 euro, living in 4 member households. Their purchasing habits considered place, options in prices and quality and comparative features of branded and non-branded potatoes and organoleptic features (taste, smell, appearance). Results showed that consumers buy mostly from green markets and in market chains, and less often buy directly from the producer. Potato organoleptic attributes (taste) and potato origin (domestic or local production) were crucial influences on buying behaviour. The main attributes important to consumption were sensory attributes of taste and smell. A brand created for these potatoes should confirm the value of the product (quality, domestic production, sensory attributes) and be more recognizable compared to potatoes sold in bulk. Research results have confirmed that the values of quality and security of the food and local production through a potato market label will be supported by Croatian consumers. The market label of the young potato would be most appealing to younger generations (under 25 years) more responsive to market labels ; in smaller families (up to three family members), with income 800 to 1200 euro and slightly more by men, who trust market labels as a proof of quality.

Istra kao destinacija vinskog turizma do sada ima sedam vinskih cesta na kojima se nude kvalitetna autohtona vina. Daljnji razvoj traži nove turističke sadržaje koji će povećati atraktivnost vinske destinacije i potaknuti turističke dolaske. Stoga su u okviru IPA/EFRR projekta Malvasia TourIstra (2014.-2015.) izvedena terenska istraživanja o ponašanju potrošača vina u vinarijama i njihovim željama i potrebama prema kojima su osmišljeni novi inovativni oblici turističkih sadržaja tzv. turistički (vinski) itinereri. Identificirali smo četiri skupine potrošača u odnosu na preferirani tip vina prema kojima smo izradili četiri nove vinske ceste. U nalazu istraživanja dvije trećine potrošača kupuje vino direktno od proizvođača i ubuduće će kupovati na vinskoj cesti. U godinu dana nakon što je izrađena mobilna internet aplikacija novih vinskih cesta (interaktivna karta) koristilo je ju više od pet tisuća posjetilaca.

Vinski turizam u Istri temelji se na kvalitetnim vinima sa zaštićenim geografskim porijeklom i prepoznatljivosti Istre kao turističke destinacije. Kako je vinski turizam relativno novi fenomen i u Istri nije znanstveno istražen, cilj projekta „Putevima Malvazije istarske - Malvasia TourIstra“ bio je istražiti aspekte vinskog turizma kao fenomena u cjelini. U ovom radu dat je prikaz dijela istraživanja o profilu posjetilaca vinskih podruma u Istri, njihovoj informiranosti i motivima za posjet vinarijama. Nalazi istraživanja autora pokazuju da su posjetitelji većinom visokoobrazovane osobe, u dobi iznad trideset pet godina, zaposlenici ili iz poduzetničkih i slobodnih zanimanja s prosječnim dohotkom do dvije tisuće eura. Tri četvrtine posjetitelja su iz Europske Unije, a prevladavaju Hrvatski, Njemački i Talijanski posjetitelji. Dvije trećine posjetilaca vinskih podruma prikupljaju informacije o vinskim podrumima usmenim putem (prijenosom od obitelji, prijatelja i znanaca), a jedna trećina se informira putem elektroničkih i pisanih medija. Glavni motivi dolaska su kušanje vina i druženje.

26. Marketability of branded young potatoes – opinions of wholesalers

This paper is an example of some market aspects in creation of a new market produce “Istria young potato”. Young potatoes and potatoes in general are usually sold on the Croatian market as bulk goods, with no label and no package. Therefore our intention was to create a new market produce with the brand name “Istria young potato”. In this paper we have showed some economical aspects of marketing young potatoes according to the views and opinions of wholesalers. The research sample contained wholesale markets in Zagreb, Rijeka and Split. As a research tool for data sampling a questionnaire was used. It contained questions about the size and regionalism of the market, the annual sales, the prices, quality and origin of potatoes, and opinions about the sales of branded potatoes. Results showed that wholesale markets sell locally and regionally with average prices about 50 eurocents. Young potatoes produced in Istria have a superior quality and reasonable price price range, and with a market label the market demand is likely to rise in the future.

27. Tourists’ Attitudes towards Ecologically-Produced Food

The purchase and consumption of ecologically- produced food is on the rise in the food markets of Europe. Consumers are becoming more aware of their health and well-being and, therefore, consuming ecologically-produced foods and drinks is a reflection of becoming more conscious about one’s health and a lifestyle statement. The consumption of ecologically-produced food fosters healthier eating habits and a higher quality of life in comparison to consuming conventionally- produced food. Furthermore, such consumption relies on attitudes of responsibility towards ‘Mother Nature, ’ connection to nature, saving the planet and protection of the environment. Therefore, such consumers are more socially responsible and conscious about the future of planet Earth. Regarding economic tourism, ecologically-produced food is seen as a part of what is on offer in terms of gastronomy. The availability and range of products from ecological production differs from destination to destination. In the Croatian case, ecologically- produced foods and beverages are quite a new trend. Istria as a destination leads these trends in terms of what is available, whereas they are scarce elsewhere. Therefore, in our research, we have attempted to validate the potential of ecologically-produced food on offer in tourist facilities in accordance with tourists’ preferences. With respect to the scientific project, ‘Valorisation of selective forms of tourism in the sustainable development of rural spaces, ’ a survey was conducted with a sample of tourists with the intention of determining their interest in ecologically-produced food during their stay in Istria. We examined 1, 028 questionnaires and determined that tourists have different attitudes toward ecologically produced food depending on the land of its origin and certain sociodemographic features.

Svjetski trend u očuvanju i održivom razvoju vinogradarstva već je niz godina baziran na izvornim i tipičnim sortama pojedinih vinogorja. Od 2003. godine u znanstvenim istraživanjima na projektu „Genetski i gospodarski resursi Vitis sp.“ (2001. – 2006.) i „Valorizacija resursa vinove loze (Vitis sp.) i banka gena“ (2006. – 2012.) sustavno su se pratile autohtone sorte vinove loze na području Istre, u cilju njihovog pronalaženja te gospodarske i genetske valorizacije. Tijekom 12-godišnjeg istraživanja, u kojem je učestvovala brojna ekipa istraživača i tehničkog osoblja Instituta, pregledano je stotinjak vinograda diljem Istarskog poluotoka, starih od 50 do 100 godina, cijepljenih na mjestu sadnje, u svrhu pronalaženja i identifikacije trsova svih starih istarskih sorata različitih genetskih i gospodarskih karakteristika. Na temelju pregleda i prikupljenih podataka iz osamdesetak nasada, označeno je više stotina biotipa različitih starih prepoznatljivih sorata vinove loze te puno biotipova sa zanimljivim ampelografskim karakteristikama koji se nisu mogli svrstati u do tada poznate stare sorte. Svi označeni biotipovi ampelografski su identificirani i opisani. Njihove morfološke karakteristike opisane su pomoću OIV indikatora. Napravljene su i kemijske analize mošta (pH, šećeri, kiseline), te DAS-ELISA test, zbog utvrđivanja njihovog zdravstvenog stanja. Najveći dio tih biotipova tijekom 2005. do 2012. godine posađen je u novom pokusnom nasadu Gen kolekcije autohtonih sorata vinove loze na imanju Instituta za poljoprivredu i turizam u Poreču. Na površini od 7.182 m² nalazi se posađen 3.591 trs, uspješno razmnoženih biotipova. Taj nasad danas predstavlja osnovu za stvaranje novih klonova autohtonih sorata vinove loze u Istri. Gen kolekcija Instituta osnova je za dugoročni i održivi razvoj vinogradarstva u Istri jer ne postoji niti jedan matični nasad vinove loze podignut sukladno važećim zakonskim propisima koji bi bio izvor kvalitetnog sadnog materijala autohtonih sorata genetskog porijekla iz Istre., During a number of years, the world trends are preserving and creating a sustainable development of viticulture, based upon origin and typical varieties in certain wine growing areas. Scientific research conducted since 2003 within the project Genetic and economical resources of Vitis sp., started in 2003 and continued in 2006 with the project Valorisation of wine grapes (Vitis sp.) and gene bank (2006–2012), autochthonous sorts of wine grapes were thoroughly examined throughout Istria, with the aim of economical and genetic valorisation. Following 12 years of field research, with the commitment of a large group of scientists and technical personnel from the Institute, around a hundred vineyards were examined throughout Istria. In order to find and identify the old Istria varieties, examined vineyards were 50 to 100 years of age, grafted in situ, containing different genetic and economical characteristics. Based upon field research on hundreds of wine stocks and gathered data from eighty vineyards, numerous biotypes that could not be set in the context of the already known old varieties, with interesting ampelographic characteristics, were identified. All biotypes were ampelographically identified and described. Morphological characteristics were described with OIV indicators. Chemical analysis of must was conducted (pH, content of sugar, acidity), as well as the DAS-ELISA test for sanitary condition. The majority of selected biotypes collected during 2005–2012 were grafted on the new trial plots Gene Collection of autochthonous wine grape varieties on the land belonging to the Institute of Agriculture and Tourism in Poreč. On the plots of 7,182 m2, we have successfully planted 3,591 wine stocks. This plantation is today a base for creating new clones of autochthonous sorts in Istria. The Gene Collection is a base for long-term and sustainable development in Istria, as there exist no matricular plantations of wine grapes according to current laws that could be a source of quality seedling material with genetic origin from Istria.

Proizvodnja grožđa i vina ima tisućljeća dugu tradiciju u Istri. S izvjesnim vremenskim odmakom možemo razmatrati promjene u veličinama površina te u sortimentu vinograda i promjene u ponudi vina. U zadnjih dvadesetak godina u Istri je napravljen značajan korak u unapređenju kvalitete vina te su na tržištu prisutna mnoga visokokvalitetna vina. Istovremeno je zamjetna preferencija proizvođača da sade vinograde s autohtonim sortama (posebice Malvazija istarska i Teran) i pozitivan odgovor potrošača na tu ponudu. U cilju naglaska važnosti proizvodnje grožđa i vina od autohtonih sorti u vinogradarskoj regiji Istre prikazujemo proizvodnju grožđa i ponudu vina u razdoblju 2011-2014. te rezultate terenskog istraživanja na uzorku istarskih proizvođača vina i grožđa. Nalazi statističkih i terenskih podataka pokazuju da je Malvazija istarska najzastupljenija sorta grožđa i vrsta vina te predstavlja vodeću vinogradarsko vinarsku uzdanicu Istre.

Hrana i piće je moguće koristiti kao dodatne sadržaje prilikom razvoja novih turističkih proizvoda. S obzirom na to da postoji relativno duga veza između vina i Mediterana, što uključuje i Istarsku županiju, vino predstavlja izvrsnu priliku u kreiranju novih turističkih proizvoda. Svrha ovog rada je istražiti vino kao osnovu u razvoju novih turističkih proizvoda. Cilj ovog rada je segmentirati potencijalne potrošače turističkog proizvoda temeljenog na Malvaziji istarskoj. S ciljem utvrđivanja razlika među ispitanicima temeljem njihovog interesa za turističke vinske pakete. Kako bi se utvrdile razlike među ispitanicima temeljem njihovog interesa za vinske turističke pakete i kupovne odrednice vezane za Malvaziju istarsku, korištena je jednosmjerna analiza varijance. Ispitanici u podijeljeni u tri grupe (ne interes, bez interesa i interes) koje se razlikuju s obzirom na interes prema vinskim turističkim paketima. Podaci su prikupljeni u svibnju 2014. kao dio istraživanja fokusiranog na ponašanje posjetitelja vinskih sajmova. Razlike među tri skupine ispitanika su utvrđene s obzirom na važnost mikro-regije, nagrada, kvalitete i popusta.

Integracijom vina Malvazije istarske u zajednički prekogranični turistički proizvod nastaju četiri vinska itinerera koja se temelje na pojedinim stilovima vina Malvazije istarske. Osnovica prvog vinskog itinerera „Lepršavo osvježenje“ je svježe vino Malvazije istarske, a naglasak se stavlja na: ostvarivanje dodane vrijednosti, osvježenje, uživanje u cvjetno-voćnim mirisima, postizanje lepršave vinske avanture, skladno ispunjenje užurbanog dana, obnavljanje psiho-fizičke energije, povećanje radne produktivnosti. Drugi vinski itinerer „Potpuni eno-gastronomski doživljaj“ temelji se na zrelom vinu Malvazije istarske te naglašava: upotpunjavanje gastronomskog doživljaja uz vino, obogaćivanje vlastitog duha, kompleksnost aroma i okusa, opuštanje, duhovnu povezanost gastronomije i wellnessa. Vinski itinerer „Tradicija u novom ruhu“ je treći vinski itinerer koji se temelji na tradicionalnom vinu Malvazije istarske i naglašava: tradicijske okuse, prilagođenost suvremenim preferencijama potrošača, vinsku povijest, jedinstvenost i intenzivnost doživljaja. Zadnji vinski itinerer „Slatki vinski mozaik“ proizlazi iz slatkog vina Malvazije istarske te naglašava: intimnost, užitak, hedonizam, slast.

Vinski turizam u Istri temelji se na kvalitetnim vinima sa zaštićenim geografskim porijeklom i prepoznatljivosti Istre kao turističke destinacije. U okviru projekta Putevima Malvazije istarske - Malvasia TourIstra stvara se strukovna podloga za razvoj nove prekogranične zaštićene oznake koja nudi nove mogućnosti za teritorijalni razvoj prekogranične destinacije Istra. U terenskom istraživanju utvrdili smo stavove vinara o tržišnom potencijalu budućeg zaštićenog proizvoda te o ulogama svih aktera u njenoj promociji i jačanju pozicije na tržištu. Rezultati istraživanja pokazuju da malvazija istarska ima izuzetan potencijal za stvaranje prekograničnog brenda i to zasnovanom na tipičnom terroiru, kvaliteti i povijesnom nasljeđu.

Istraživanje provedeno tijekom 2014. godine na uzorku proizvođača vina na cjelokupnog prekograničnom području Istre pokazalo je kako su ispunjene temeljne pretpostavke koje omogućavaju potencijalni razvoj prekograničnog brenda Malvazije istarske.

U pregledu talijanskih nacionalnih i regionalnih zakona o agroturizmu pokazati će se specifičnosti koji reguliraju tu djelatnost, dočim na jednom primjeru agroturizma Corte Tamellini prikazujemo specifičnosti agroturizma regije Veneto.

Sustainable use of space is often influenced by human activities causing negative effects on biodiversity. Human impact on land and its natural reserves is very obvious in the case of forests. The neo-Malthusian forces explain these relations of population and management of biodiversity. International tourism as an income generating human activity affects biodiversity and forests too. Therefore this paper analyses the international tourism arrivals as a factor influencing deforestation in the world-wide global framework. The Mankiw, Romer and Weil (1992) growth model is applied to estimate the rate of deforestation using the rate of change of tourism arrivals, economic growth rate, and population growth rate. Descriptive and inferential analysis was used to explain a various cross-national data that are used in this paper.

36. The consumer preferences toward attributes of young potatoes and buying behaviour

The paper shows data about the preferences and opinions of consumers toward young potatoes. The aim was to explain consumer habits and to use it toward the goal of creating a new market brand of young potatoes produced in Istria. The research sample contained consumers overall Croatia. We interviewed consumers on the green markets and in shops. As a research tool we have used a questionnaire. Habits of buying considered place, options in prices and quality and comparative features of branded and non branded potatoes. Results showed that consumers buy mostly on green markets and in market chains, while less than ten percent buy direct from the producer. The main habits in buying were taste, domestic or local production regardless the prices. Branded potatoes confirm the values of quality and security of the food (from producer to consumer). Finally the prices range of branded potatoes could hinder its future marketability and sales since higher prices of branded goods are not affordable to all Croatian consumers.

U radu su istraženi ekonomski i finacijski pokazatelji proizvodnje za tri kulture (rajčica, paprika i krastavci) na otvorenom i u zaštićenom prostoru. Pokusi su postavljeni 2010. na obiteljskim poljoprivrednim gospodarstvima u Istri i nastavak su istraživanja iz 2003. Cilj istraživanja bio je dokazati da je intenzivna proizvodnja povrća isplativa i na otvorenom i u zaštićenom prostoru. Sve istraživane kulture (rajčica, paprika i krastavci) proizvedene u plasteniku pokazale su veću isplativost nego na otvorenom. Po ekonomskim pokazateljima proizvodnje najisplativija je proizvodnja rajčice u plasteniku, slijede je proizvodnje paprike u plasteniku, rajčice na otvorenom, krastavca u plasteniku, paprike na otvorenom i na kraju najmanje isplativa proizvodnja krastavca na otvorenom.

The unequal distribution of vineyard land could be according to a prior naive theorizing be a source of inefficiency in grape production. The paper investigates whether, vineyard land inequality due to specific less or more egalitarian land distribution, is a source of possible inefficiency measured by grape productivity within Croatia's counties. We analyze these issues by using cross-county data on inequality in operational holdings of vineyard land from Agricultural Survey in 2003. After constructing the Gini coefficient for vineyard land holdings, and other relevant exogenous variable which cover necessary inputs condition as a average holding size per ha, labor, capital (represented by alternative variables summed by number of tractor, barrels and cisterns), among counties, an estimation of an production function, is done by OLS estimations of grape output per ha.

U sklopu istraživanja tematike vinskih sajamova i izložbi na znanstvenoistraživačkom projektu “Valorizacija resursa vinove loze Vitis sp. i banka gena” provedeno je pilot istraživanje na izložbi vina Vinistra u 2009. godini. Iz uzorka od 48 ispitanika pokazalo se da ih dvije trećine barem jednom godišnje posjećuje sajmove i izložbe o kojima se informira putem obitelji i poznanstava, a prema vinu imaju stav vinoljubaca koji generalno preferiraju crna vina.

Izrada projekta (programa) Strategije razvoja ruralnog turizma u Brodsko-posavskoj županiji slijedi kao logičan nastavak projekta "Analiza postojećeg stanja ruralnog turizma Brodsko posavske županije". Zapravo, oba projekta čine cjelinu i treba i treba ih na taj način tretirati. Stoga rezultati i zaključci projekta "Analiza postojećeg stanja ruralnog turizma Brodsko-posavske županije" predstavljaju, jednim djelom, polaznu osnovu za koncipiranje Strategije razvoja ruralnog turizma u Brodsko-posavskoj županiji. Hipoteza da turizam inače, svojim multiplikativnim efektima, potiče ukupni društveno-ekonomski razvoj, bila je nit vodilja na način da i turizam na ruralnom prostoru izaziva iste efekte i ide u prilog razvoju ukupnog ruralnog prostora.

Farm tourism is a relatively new selective form of tourism in rural areas providing use of agricultural resources through market possibilities of tourism. In this paper the research included the farms with tourism as an income generating activity in Istria county. Analysis was based on primary research by questionnaire which was conducted on forty farms in 2009. The aim of the paper was to present a model of agricultural production that is sustainable for tourism activities on farm. The model presented an average farm that has 12.11 hectares of land in agricultural production, 50 sitting places in catering space, 6 beds in 3 rooms for lodging. The economical indicators showed that these factors results in a positive economical sense of 21.000 euro per annum while sole agricultural production sold as raw products result in economical loss.

Izrada projekta „Analize postojećeg stanja ruralnog turizma na prostoru Brodsko-posavske županije“ uslijedila je nakon donesenih razvojno-strateških dokumenata u kojima je prepoznato značenje razvoja turizma na ruralnom prostoru i njegov doprinos razvoju tog ruralnog prostora. Također se nedvojbeno ističe potreba razvoja ovog vida turizma u različitim dokumentima Republike Hrvatske . Ocijenili smo da se radi o dokumentima koji imaju karakteristike načelnosti, afirmativnosti, pozitivnosti, što je dobro, koji, međutim, ne definiraju konkretno i primjenjivo strategiju i koncepciju razvoja i to sustavno, integralno s kvantifikacijama i dinamički razrađeno. Posebno tu treba podvući potrebu organiziranog upravljanja razvojem, ali opet s elementima marketinškog pristupa. Inače, razvoj ruralnog prostora poseban je izazov iz čitavog niza razloga, a neki su od njih: nerazvijenost ruralnog prostora, nedovoljno razvijene strategije razvoja, nepoznata tržišna pozicija za proizvode i usluge itd. Činjenica je da je to problem ne samo RH nego i većeg dijela Europe. To nam ipak ne daje za pravo da kontinuirano ističemo ovaj problem prebacujući krivca na nekog drugog, a sami ne činimo dovoljno kako bi se stanje promijenilo. Ovaj je problem sve interesantniji što se više bliži dan ulaska u EU, a još je naglašeniji zbog gospodarske krize koja ga svojim negativnim zakonitostima samo zaoštrava. Smatra se da turizam na ruralnom prostoru, s obzirom na trendove potražnje u Europi i svijetu, a i na njegovu razvijenost u nekim državama, ima puno neiskorištenih mogućnosti. To je i bila polazna premisa i razlog izrade analize postojećeg stanja ruralnog turizma na području Brodsko-posavske županije, s namjerom dijagnosticiranja stanja te s naznakama mogućnosti razvoja baziranog na raspoloživim resursima

Wine is very important product of Istria County. In wine distribution there are two quite distinctive distribution and sales channels: on market sales through different intermediary (shops, restaurants, distributors etc.) and direct sales through wine cellars or on site. During March and April 2009 a survey on wine producers was conducted with the purpose to identify wine distribution channels. Most of the respondents sold their wines in restaurants ; wine cellars, as a direct method of sale, were the second place, while the stores were the least represented.

45. Ampelographic Description and Sanitary Analysis of Four Istrian Grapevine Varieties (Vitis vinifera L.)

Istrian Peninsula, one of the five districts within viticultural region of Coastal Croatia, provides great geological-reliefal and climatic diversity and various production conditions. This research studied the autochthonous varieties and their sanitary status in old vineyards. Considering the age of vineyard, ten locations were chosen where four autochthonous varieties ‘Malvasia istarska’, ‘Teran’, ‘Borgonja’, and ‘Pergola velika’ were identified using ampelographic description according to OIV descriptors. Morphological characteristics of chosen varieties were described using OIV parameters and must was chemically analysed (pH value, sugar content, titratable acidity). High intra cultivar variability was found for weight of a single bunch especially for ‘Teran’. There were also differences in sugar content of must particularly for ‘Pergola velika’. Must pH was low for all varieties with predominantly low acidity value. Sanitary status of vines was determined by testing the plant samples for the presence of three grapevine viruses (GLRaV-1, GLRaV-3 and GFLV) using DAS-ELISA. The percentage of infection for GFLV was 55.6% while for GLRaV-1 and GLRaV-3 it was 61.1%. Results showed that some morphological characteristics differ from characteristics described in literature. With purpose of preserving the biodiversity of autochthonous varieties and for future researches, healthy propagation material will be collected and planted in collection field of autochthonous varieties at the Institute of Agriculture and Tourism, Poreč.

Članak prikazuje problematiku ruralnog turizma Hrvatske i Istarske županije. Analiza je provedena metodom swot analize te usporednom analizom državne i županijske razine temeljem literaturnih i izvornih podataka. Analiza je pokazala istovjetne prednosti, mogućnosti te nedostatke i opasnosti koje prelaze sa državnog nivoa i prenašaju na županijsku razinu. Poboljšanje ruralnog turizma treba tražiti u povećanju konkurentnosti destinacije, unapređenju postojeće ponude, povećanju ukupne kvalitete ruralnog prostora, stvaranju turističkih klastera te brendiranje turističkog proizvoda ruralnog turizma.

Farm tourism is a relatively new selective form of tourism in rural areas providing use of agricultural resources through market possibilities of tourism. In this paper the research included the farms with tourism as an income generating activity in Istria county. Analysis was based on primary research by questionnaire which was conducted on forty farms in 2009. The aim of the paper was to present a model of agricultural production that is sustainable for tourism activities on farm. The model presented an average farm that has 12.11 hectares of land in agricultural production, 50 sitting places in catering space, 6 beds in 3 rooms for lodging. The economical indicators showed that these factors results in a positive economical sense of 21.000 euro per annum while sole agricultural production sold as raw products result in economical loss.

U zadnjih petnaestak godina razvoja turizma na ruralnom području, razvijao se i koncept turizma na obiteljskom gospodarstvu tzv. agroturizam. Koncept po kojem je turizam dodatna djelatnost na gospodarstvu i dodatni izvor prihoda u Istri je prihvaćen i u razvojnim strategijama i tržišno valoriziran. U međuvremenu, na većini gospodarstava pojavio se trend suprotan očekivanjima - prihodi iz turizma nadmašuju prihode iz poljoprivrede, a postojeća poljoprivredna proizvodnja ne zadovoljava potrebe turističke potrošnje na gospodarstvu. Stoga smo uočili problematiku daljnjeg razvoja te u sklopu znanstveno istraživačkog projekta “Agroturizam, čimbenik održivog razvoja” izvršili anketno istraživanje da bi saznali koji su problemi u djelatnosti poljoprivrede i djelatnosti turizma i da li se dodatno multipliciraju u agroturizmu. Rezultati istraživanja pokazuju da vlasnici agroturizama u Istri smatraju kako je za daljnji razvoj ove poslovne aktivnosti bitno uvesti dodatne poticaje i subvencije, pokrenuti programe za poticaj razvoja agroturizama unutar programa poticanja poduzetništva, izgraditi dodatnu infrastrukturu za neometano obavljanje turističke djelatnosti, te valorizirati kulturne i povijesne znamenitosti koje predstavljaju dodatnu ponudu agroturizama i motiv privlačenja turista u ruralne krajeve.
