11. Resistant Starch from Exotic Fruit and Its Functional Properties : A Review of Recent Research

Abstract

Resistant starch is a functional food ingredient that can resist enzymatic digestion in the small intestine and fermentation in large intestine. Resistant starch has many benefits to human health by promoting a balanced blood sugar and beneficial gut bacteria. This review highlighted the sources of different exotic fruit starch, such as banana, jackfruit, cempedak, durian, and breadfruit. The functional properties of these exotic fruit resistant starches were covered in this review. The effect of resistant starch on glycaemic index of food was revealed. This review also discussed on the applications of resistant starch in the production of food products and their effects on food quality. The provided information through the overall review could especially benefit the food industry in producing functional food products with great consumer acceptability.

Abstract

Edible mushrooms are an excellent source of proteins, minerals, polysaccharides, unsaturated fatty acids, and secondary metabolites. Numerous studies have provided evidence for the protective effects of edible mushrooms against various chronic diseases. In this review, details on the compositions and nutritional values of edible mushrooms were discussed. Furthermore, bioactive compounds such as polyphenolic compounds and antioxidant capacity of edible mushrooms, as well as the application of these edible mushrooms as potential therapeutic agents, were covered. This chapter also endeavoured to review the recent progress on the potential utilisation of edible mushrooms in the development of functional food products and its effects on the nutritional, physical, and organoleptic properties of the developed food products. Based on the recent socioeconomic trends, the substitution of edible mushroom as an essential source of functional ingredients in food products could become a natural adjuvant for the prevention and alleviation of several lifestyle-related diseases. This information could be beneficial for the development of food products with health functionalities, which are of great interest to the medical nutrition industry, which is an industry that emerged from the convergence between the food and pharma industries.

18. In vitrostarch digestibility of bread with banana (Musa acuminataX balbisianaABB cv. Awak) pseudo-stem flour and hydrocolloids

Abstract

Novel composite breads were prepared by using banana pseudo-stem flour (BPF). BPF was substituted for commercial wheat flour (CWF) (at 10%, w/w) to prepare B10BPF and the B10BPF with added hydrocolloids [xanthan gum (XG) or sodium carboxy-methyl cellulose (Na CMC)] to prepare B10BPFXG and B10BPFCMC, respectively. The prepared composite breads had high level of minerals (calcium, phosphorus, potassium, magnesium, iron, and manganese), total sugars, and resistant starch contents. Except for the composite bread prepared by adding XG, all other samples showed non-significant decrease in the total and digestible starch. Slow starch hydrolysis rate (corresponding to increase in time) was recorded with a subsequent reduction of hydrolysis index and estimated glycemic index in the composite breads. As this is a novel composite bread developed with health promoting properties, it is expected to benefit consumers, especially for those requiring high fiber diets.

Abstract

This review focuses on providing informations on potential uses of durian, an exotic tropical fruit as a source of food, as well as a potential therapeutic agent. Apart from disseminating details on the traditional value, in this review we have focussed on the nutritional composition, presence of bioactive compounds, volatiles, antimicrobials, as well as on the toxicological effects of durian fruit consumption. Durian fruits are enjoyed for their unique taste and organoleptic qualities, but there is also a need to ensure that their potential is exploited for the international market. In addition, in the present socio-economic scenario, tapping the potential of exotic tropical fruit such as durian could benefit the health of consumers as well as support the local population who depend on farming for a livelihood. Overall, it is envisaged that identifying the nutraceutical potential of the edible and non-edible parts of durian fruits can benefit food and pharmaceutical industries., (Copyright © 2014 Elsevier Ltd.
