Plant development is constantly affected by biotic and abiotic factors, which influence their morphology and chemical composition. In this context, the evaluation of morphological and physicochemical variation of 35 loquat genotypes during two consecutive years, 2015 and 2016, were carried out. The results revealed a significant difference of the morphological and the physicochemical traits between the two years. Indeed, 2016 showed high values for fruit and leaf traits as well as the physicochemical parmeters, while 2015 recoreded the highest values for seeds traits. In addition, the ANOVA results showed a significant effect of genotype on the physicochemical parameters and the morphological characters, excluding the geometric diameter and spherical index of seeds. Regarding the effect of year, it was also significant on physicochemical parameters and morphological traits except the size and shape of fruit and the seed shape. For the genotype x year interaction effect, it was significant on all traits studied, with the exception of the traits relating to geometric diameter of fruit and seed plus the sphericity index of the seed. Thus, size and shape of fruit remained stable over these two consecutive years. The identification of stable traits presents a result that could be beneficial for breeding programs.

This study explores the potential of olive leaves, long integral to Mediterranean traditional medicine, as a rich source of valuable compounds. The challenge lies in their considerable water content, hindering these compounds’ full valorization. Four drying methods (air-drying, oven-drying, freeze-drying and solar-drying) were investigated for their impact on nutrient and bioactive compound content in the leaves of four olive varieties (“Arbequina”, “Koroneiki”, “Menara” and “Picholine Marocaine”) cultivated in Morocco. In their fresh state, “Picholine Marocaine” exhibited the highest protein levels (6.11%), “Arbequina” had the highest phenolic content (20.18 mg gallic acid equivalents/g fresh weight (FW)), and “Koroneiki” and “Menara” were highest in flavonoids (3.28 mg quercetin equivalents/g FW). Specific drying methods proved optimal for different varieties. Oven-drying at 60 °C and 70 °C effectively preserved protein, while phenolic content varied with drying conditions. Air-drying and freeze-drying demonstrated effectiveness for flavonoids. In addition, an analytical approach using high-performance liquid chromatography and diode array detection (HPLC-DAD) was applied to investigate the effects of the different drying methods on the bioactive fraction of the analyzed samples. The results showed qualitative and quantitative differences depending on both the variety and the drying method used. A total of 11 phenolic compounds were tentatively identified, with oleuropein being the most abundant in all the samples analyzed. The freeze-dried samples showed the highest content of oleuropein in the varieties “Arbequina” and “Picholine Marocaine” compared to the other methods analyzed. In contrast, “Koroneiki” and “Menara” had higher oleuropein content when air dried. Overall, the obtained results highlight the importance of tailored drying techniques for the preservation of nutrients and bioactive compounds in olive leaves.

Sesame (Sesamum indicum L.) is an ancient oilseed, aromatic, and medicinal crop widely used for its high-quality oil and seeds. The available genetic diversity in Morocco is too limited; thus, a mutagenesis breeding program was adopted. This study was carried out to evaluate the novel variability induced and observed in 11 M4 mutant lines and to estimate some valuable genetic parameters. The experiment was conducted in two different environments using a randomized complete block design with three replications. Phenological, morphological, and agronomic traits were recorded. To estimate the effect of genotype, environment, and their interaction, ANOVA and planned contrast analyses were performed. To examine relatedness among genotypes, cluster analysis was performed. Significant differences among mutants and between parent cultivars and their respective mutant lines were observed. Genetic parameters such as genotypic (GCV) and phenotypic (PCV) coefficients of variation, broad-sense heritability (H2 b.s), genetic advance (GA), and genetic advance over the mean (GAM) were high in most traits. Highly productive mutants, ‘US2-1’ and ‘US1-2’, were observed, exhibiting the highest number of capsules per plant and seed yield ever reported. Additionally, there are other promising mutants with early flowering, early maturity, and a reduced height of the first capsule. This suggests that mutagenesis can be successfully applied to develop high-yielding sesame varieties along with other improved phenological and agromorphological traits. All these mutant lines can be used as promising germplasm to develop competitive sesame cultivars to meet the increasing demand for sesame oil and seeds in the actual context of climate change.

This study aims to identify the individual phenolics and volatile compounds, as well as the organic acids of strawberry tree (Arbutus unedo L.) genotype fruits. The antioxidant activities were also assessed using three methods (DPPH, ABTS and βeta carotene bleaching assays) significant differences (p˂0.05) were observed among all the genotypes. Total phenols varied from 25.37 to 39.06 mg GAE/g dried weight (DW), total flavonoids ranged between 3.30 and 7.07 mg RE/g DW, and anthocyanins varied from 0.15 to 0.64 mg cya-3-glu/100 g DW. Moreover, the antioxidant activities were in the range of 3.33–21.08, 2.25–19.58, and 1.08–13 mg ascorbic acid equivalent/g DW for DPPH, ABTS and βeta carotene bleaching assays, respectively. Seventeen phenolics compounds were identified by HPLC in A. unedo fruits. Gallocatechol and catechin were the most abundant compounds. Among the volatile compounds identified, hexadecanoic acid was the most abundant in all the genotype fruits. The principal component analysis revealed that the first two components formed 66.47% of the total inertia.

The bioavailability of cosmetic, pharmaceutical, nutraceutical, and food preparations depends, among other factors, on the galenic form and the control of the granulometric structure of powders. The present study aimed to evaluate the effect of argan pulp powder particle size on functional, physicochemical properties, and antioxidant bioactivity. The particle size study revealed a unimodal particle volume distribution, explaining the regular particle shape. The results relating to functional properties indicated that the critical fraction was in the range of 50–125 µm. However, the study of the particles in each class, evaluated via SEM, showed that the morphology of the pulp powder was strongly dependent on the degree of grinding. Le procédé de production du paprika à partir de la Niora (Capsicum annuum L.) au Maroc consiste essentiellement en une récolte manuelle des fruits en pleine maturité, en un séchage traditionnel au soleil et en un broyage dans des unités de transformation traditionnelles et se termine par un huilage (l’enlèvement du pédoncule est facultatif). Les détails concernant les opérations de transformation sont rapportés. Dans un deuxième volet une étude comparative de la qualité du paprika provenant de trois régions productrices de l’épice au Maroc a été abordée à travers l’analyse de leurs paramètres physico-chimiques et nutritionnels, de leur composition en métabolites secondaires et de leur pouvoir antioxydant. Les paprikas des 3 provenances ont montré des valeurs d’ASTA qui variaient de 104 à144 Unités. Les principaux acides gras composant le paprika sont l'acide linoléique, l'acide palmitique et l’acide oléique. En matière de composition minérale, les paprikas issus des 3 régions sont riches en potassium, en magnésium et relativement pauvre en sodium. Le paprika d’El Kalâa des Sraghna a montré les valeurs les plus élevées en capsaicinoïdes totaux (184,97 mg/kg PS). Les meilleures capacités antioxydantes ont été obtenues par le paprika du Tadla (IC50 de 260 µg/ml pour le test de DPPH et de 43,03 µg/ml pour le test d’ABTS).

Abstract First convectional thin layer drying of two fig (Ficus carica L.) varieties growing in Moroccan, using partially indirect convective dryer, was performed. The experimental design combined three air temperatures levels (60, 70 and 80 °C) and two air-flow rates (150 and 300 m3/h). Fig drying curve was defined as a third-order polynomial equation linking the sample moisture content to the effective moisture diffusivity. The average activation energy was ranged between 4699.41 and 7502.37 kJ/kg. It raised proportionally with the air flow velocity, and the same pattern were observed for effective moisture diffusivity regarding drying time and velocity. High levels of temperature (80 °C) and velocity (300 m3/h) lead to shorten drying time (200 min) and improve the slices physical quality. Among the nine tested models, Modified Handerson and Pabis exhibited the highest correlation coefficient value with the lowest chi-square for both varieties, and then give the best prediction performance. Energetic investigation of the dryer prototype showed that the total use of energy alongside with the specific energy utilization (13.12 and 44.55 MWh/kg) were inversely proportional to the velocity and drying temperature. Likewise, the energy efficiency was greater (3.98%) higher in drying conditions.

Pomegranate tree is cultivated since ancient times in Morocco, where a high genetic diversity is hosted mainly in traditional agroecosystems. Over the past decade, it regained importance through extension of cultivated area, but remains thus far little valued. To date, its genetic variability and chemodiversity have gone unheeded for many reasons, some of which are related to previous agricultural strategies. In this context, the present study aimed to screen an ex-situ collection of seven local cultivars and seven exotic varieties with regard to 50 fruit morphometric and biochemical descriptors. The results showed statistically significant variability within accessions (p < 0.01), based on all aforementioned traits, except for seed weight, with coefficients of variation greater than 49%. This indicated a high level of phenotypic diversity among the studied genetic pool. The 3D scatter plot built based on the principal component analysis displayed an interesting discrimination with regard to the genotypes' geographic origins with a total variance of about 50%. According to morphometric based-heatmap, four main clusters were identified distinguishing the typicality of some local cultivars compared to exotic varieties, mainly ‘Sefri’, ‘Bzou’, ‘Chioukhi’ and ‘Djeibi’. Traits having the highest impact on discrimination between accessions were, by order of importance, fruit weight and its dimensions, juice yield, aril yield, single aril diameter, soluble sugars (glucose and fructose) along with contents in some organic acids, including citric, palmitic, linoleic and malic acids. Potential statistically significant correlations were spotted through bi-dimensional heatmap analysis, particularly between the fruit size, shape and peel traits along with some biochemical attributes. As many areas of the species chemodiversity and functional properties are still needed to be investigated further, the results of the present study are of great interest for the species valorization and for breeding programs.

Rapeseed (Brassica napus L.) is the world’s second-largest oilseed crop after soybean. It contains functional compounds, including fatty acids and phenols, which are known for their health and nutritional benefits. In Morocco, rapeseed was introduced as a promising oilseed crop that has shown good adaptation and great potential. Six genotypes were registered and released as the most high-performance Moroccan varieties in terms of both seed yield and oil content. Apart from their ‘00′ quality, i.e., oil without erucic acid and meal with very low glucosinolate content, there is no information on other important quality traits. Therefore, this research aimed to characterize the lipochemical and phenolic attributes of those varieties, namely Baraka, Narjisse, Moufida, Lila, Alia, and Adila, grown at two contrasting sites (Allal Tazi and Douyet) so as to assess the environmental impact on oil quality. A set of 14 parameters were analyzed, comprising seed yield, oil content (Oil C), protein content (PC), acidity index (IA), peroxide index (IP), refractive index (IR), iodine value (IO), total phenolic content (TPC), total flavonoids, total carotenoid contents, free-radical scavenging activity (FRSA), half-maximal inhibitory concentration, fatty acid composition, and omega 6/omega 3 ratio. The results displayed significant differences (p < 0.001) between the two sites for all the abovementioned traits, except for IA, with an outperformance of Allal Tazi over Douyet. Additionally, variety and variety by site interaction had a significant effect on all the studied parameters, except for IA, IP, IR, and TPC. Over both environments, the varietal effect generated variations in yield of 10.9 to 17.1 q/ha, Oil C of 36.7 to 39.9%, PC of 21.3 to 25.9%, IO of 94.1 to 100 g I2/100 g, FRSA of 22.7 to 42.9%, and an omega6/omega3 ratio of 1.8 to 2.3%. It is noteworthy that the Moufida and Alia varieties displayed a low-magnitude effect of the environment, as they maintained similar high performance over both sites. They, thus, represent Moroccan genetic material of interest from an agronomic and nutritional perspective. Therefore, they should be promoted and encouraged for cultivation in Morocco, mainly in the Allal Tazi area and similar regions.

The objective of this study was to identify, quantify, and elucidate the polyphenols, flavonoids, and anthocyanins, and their antioxidant activities (via 13 2,2-diphenyl-1-picrylhydrazyl) (DPPH) radical and 2,2ʹ-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical cation scavenging abilities and bleaching β-carotene tested in vitro in the whole fruit, fruit skin of strawberry tree fruits of 5 genotypes and to find out the most valuable fruit for disease preventing diets. Total phenols, total flavonoids, total anthocyanins, antioxidant activity (DPPH, ABTS and β-carotene bleaching assay), pH, titrable acidity, soluble solids, and organic acids were investigated in five strawberry tree genotypes belonging to several areas in Morocco. Qualitative and quantitative analyses of individual phenolic compounds by high-performance liquid chromatography (HPLC) were also carried out. Significant differences (p˂0.05) were observed across the five genotypes in total phenols (25.37–39.06 mg GAE/g DW), total flavonoids (3.30–7.07 mg RE/g DW), total anthocyanins (0.15–0.64 mg cya-3-glu/100 g DW), pH (2.44–3.92), titrable acidity (0.65–1.01 g malic acid/100 g fw), and soluble solids (14.83–18.53%). The antioxidant activity was evaluated by three assays. The values were 3.33–21.08, 2.25–19.58, and 1.08–13 mg AAE/g DW for DPPH scavenging test, ABTS, and β-carotene bleaching, respectively. Gallocatechol and catechin were the most abundant phenolic compounds. Principal component analysis showed that the first three components formed 90.25% of the total inertia. Chlorogenic acid, ellagic acid derivative I, ellagic acid, rutin, and cyanidin-3,5-diglucoside were the most involved variables in the total variance explained.

Moisture sorption isotherms of five sweet cherry cultivars (Prunus avium L.) at three temperatures of 30°C, 40°C, and 50°C, and water activity range of 0.057–0.898 were determined using the static gravimetric method. The sorption isotherms of all cultivars decreased with increasing temperature, and they all exhibited type II behavior according to the classification of IUPAC (International Union of Pure and Applied Chemistry). The isosteric heat of sorption, differential entropy, spreading pressure, and water surface area were determined, and the energy associated with the sorption processes was defined. The curves were fitted to GAB, PELEG, and ENDERBY models, and the GAB model gave the best fit for the whole set of data. The enthalpy–entropy compensation proved that the process occurs spontaneously and is fully controlled the enthalpy. The spreading pressure value varied with temperature in all sweet cherry cultivars in both the desorption and adsorption processes. The average surface area varied from 78.05 to 214.02 m2/g for desorption and from 49.0 to 204.4 m2/g for adsorption from 30 to 50°C.

Palm date seeds oil of eight varieties were investigated for physical, chemical, and phytochemical analysis, and compared to used commercial oils. Significant differences were observed among varieties. The oil content of the eight varieties ranged from 6.05 to 10.25%. Fatty acid analysis using GC-MS revealed that oleic acids were the dominant component (38.67–44.38%) followed by lauric (21.72–26.66%), myristic (11.26–13.04%); palmitic (9.65–11.38%); linoleic (6.25–8.24%); stearic (3.06–3.32%) while linolenic acid was found in traces. The carotenoids content ranged from 17.57 ± 0.02 to 12.35 ± 0.03 mg/kg oil, total phenolic content ranged from 58.04 ± 0.30 to 181.03 ± 0.75 mg GAE/100 g and flavonoids content values ranged from 22.81 ± 0.08 to 53.41 ± 0.72 mg RE/100 g oil. The antioxidant activities (DPPH and ABTS) varied from 17.28 ± 1.06 to 47.37 ± 1.05 and 3.10 ± 0.28 to 8.83 ± 0.08 mg AAE/100 g, respectively. The phenolic compounds identified in seed oils were hydroxytyrosol (30.36 ± 0.21 to 38.63 ± 0.14 μg/g oil), procatechuic acid (14.47 ± 0.09 to 35.21 ± 0.07 μg/g oil), tyrosol (14.36 ± 0.03 to 21.23 ± 0.12 μg/g oil), gallic acid (7.37 ± 0.04 to 17.68 ± 0.09 μg/g oil), caffeic acid (3.21 ± 0.11 to 7.09 ± 0.12 μg/g oil) and oleuropein (1.37 ± 0.02 to 7.27 ± 0.05 μg/g oil). The total amount of the identified phenolic compounds recorded in Bouslikhan variety (107.32 μg/g oil). The results suggest that palm date seeds oil are strong radical scavengers and can be considered a good source of natural antioxidants for medicinal, functional food, and commercial uses.

Argania spinosa L. Skeels is an emblematic tree in Morocco, known worldwide for its medicinal and nutritional value. Its fruits contain kernels used to prepare an edible oil, the leaves are used to feed livestock, and its wood is used as fuel. If the oil acquires high importance, the other components of the fruit of the argan are undervalued. Our objective is to invest the waste of the argan industry. Particularly, our study aimed to assess the effect of thermal activation of argan pulp on its therapeutic value, its phenolic profile and its functional and physicochemical properties. After heat treatment, the HPLC analysis for the average total phenolic content varied from 2% to 37%, depending on temperature. The antioxidant activity was increased with heat treatment. Higher values of antioxidant activity, polyphenol and pigment content were recorded at 70 °C. Functional properties analysis indicated that water solubility index and water absorption capacity were significantly affected by heat stress. Physicochemical analysis showed that moisture content, titratable acidity and soluble solids were affected.

Understanding sorption isotherms is crucial in food science for optimizing the drying processes, enhancing the shelf-life of food, and maintaining food quality during storage. This study investigated the isotherms of sweet cherry powder (SCP) using the static gravimetric method. The experimental water sorption curves of lyophilized sweet cherry powder were determined at 30°C, 40°C, and 50°C. The curves were then fitted to six isotherm models: Modified GAB, Halsey, Smith, Oswin, Caurie, and Kühn models. To define the energy associated with the sorption process, the isosteric sorption heat, differential entropy, and spreading pressure were derived from the isotherms. Among the six models, the Smith model is the most reliable in predicting the sorption of the cherry powder with a determination coefficient (R2) of 0.9978 and a mean relative error (MRE) ≤1.61. The values of the net isosteric heat and differential entropy for the cherry increased exponentially as the moisture content decreased. The net isosteric heat values varied from 10.63 to 90.97 kJ mol−1, while the differential entropy values varied from 27.94 to 273.39 J. mol−1K−1. Overall, the enthalpy-entropy compensation theory showed that enthalpy-controlled mechanisms could be used to regulate water adsorption in cherry powders.

Sesame seed represents a reservoir of nutritional components with many medicinal properties. With the current trend to increase both seed yield and nutritional quality, the cultivation of new high-quality sesame varieties is a necessity to improve human health and promote the economic efficiency of this crop. However, research efforts for the development of cultivars of high nutritional quality are too scarce. In this study, we evaluated the nutritional value and antioxidant activity of seeds of selected M3 sesame mutants, in comparison with their two wild-type cultivars. The measurements included ash, proteins, crude fibers, sugars, total phenolic content (TPC), total flavonoid content (TFC), total anthocyanin content (TAC), lignans and free radical scavenging activity (FRSA). The results show higher FRSA, TPC, TAC and lignans in the mutant “US2-6”, compared to the wild type “US06”. Besides this, seeds of the mutant “US1-DL” are rich in ash and sugars, while high protein and fiber contents were found in the mutants “ML2-5” and “US2-7”, respectively. This work highlights the possibility of improving the nutritional value of sesame germplasm through mutagenesis. The valuable germplasm obtained will be used in the sesame breeding program to develop cultivars with high nutritional quality and antioxidant activity, which could contribute to the prevention of diseases related to free radicals and nutritional deficiencies.

The characteristics of pomegranate cultivars is important not only to put in evidence the diversity of varieties, but also to meet current market demand for quality fruits. The study was performed on a pomegranate collection from the National Institute for Agricultural Research experimental station, in a semi-arid climate. The aim of the current work was to study the morphological and biochemical characteristics and antioxidant capacity of eighteen pomegranate cultivars grown in Morocco. The results of fruit weight, aril percentage, seed percentage, and skin percentage were between 206.6–506.67 g, 56.45–69.41%, 9.36–18.56%, 22.09–42.60% respectively. This study showed that there were significant variations among the investigated cultivars for all measured parameters except aril length and seed weight. However, the results displayed that the values of total phenolic content varied from 1384.85 to 9476.32 mg GAE/L for local cultivars and from 1284.42 to 8295 mg GAE/L for foreign cultivars. These cultivars showed a high antioxidant capacity as high as 4577.12 ± 29.73 mg L−1 juice and correlated with high phenol content. The result of morphological characteristics and chemical properties implies the great potential of pomegranate grown in Morocco for both fresh consumption and fruit processing. Additionally, the ‘Grenade jaune’, ‘Chioukh’ and ‘Gordo de Jativa’ cultivars are suitable for the production of juices because of its high phenolic compositions. Figs are a traditional pantry staple for healthy eating in Middle Eastern and North African countries as fig trees grow abundantly in such hot and dry climates. Despite the importance of this species, chemotypic diversity has gone unheeded and therefore its valorization pathways remain poorly documented. For this reason, high-pressure liquid chromatography (HPLC) alongside vibrational spectroscopy were used to investigate the changes of antiradical potency and primary and secondary metabolites in fresh figs with regard to the combined effect of the cultivar factor and the fruit peel chromatic coordinates. Fourier-transform infrared spectroscopy (FTIR) fingerprinting displayed six major peaks assigned to functional groups of the investigated samples with significant differences in their vibration intensities. Biochemical screening revealed highly significant variability (p < 0.05) among the investigated cultivars. Antioxidant activity was found to be higher in free radical scavenging using 2,2-diphenyl-1-picrylhydrazyl (DPPH) compared to ferric reducing ability (FRAP). Chemometric investigations of both biochemical and FTIR fingerprinting showed satisfactory resolutions, and the total phenol contents and chromatic coordinates had the highest scores in the dataset. However, the cultivars’ geographical origin seemed not to have a clear impact on the clustering results. The aforementioned analytical procedures were found to be equally important and can be jointly used for high-resolution screening and discrimination of fig trees.

In the context of climate change and water scarcity, there is a need to develop and use drought-tolerant sesame cultivars. This study was conducted to evaluate the response of 13 sesame genotypes, including 11 mutants and their wild-types, to drought during germination and early seedling growth. Moderate and severe drought stress was simulated by applying polyethylene glycol (PEG) at two osmotic potentials, −0.6 MPa and −1.2 MPa, respectively, on seeds of two successive mutant generations, M2 and M3. The parameters measured or calculated were germination percentage (GP), germination rate (GR), mean germination time (MGT), root length (RL), shoot length (SL), root to shoot ratio (RSR), and the seedling vigor index (SVI). Results showed the significant effect of genotype, drought, and drought × genotype interaction on all parameters investigated. Under severe drought, seeds of seven genotypes, including wild types, were not able to germinate. There was a drastic decline of all parameters for the rest, except MGT and RSR, which markedly increased. Interestingly, two mutants, “ML2-5” and “ML2-10”, were identified as the most tolerant to severe drought and the most stable over both generations. The present work is the first report of sesame germplasm with such a high level of tolerance to drought during germination and early seedling growth stages.

In the present study, chromatic coordinates, phenolic acids, flavonoids and antioxidant capacity assessed by 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2′-azino-bis (3-ethylbenzothiazoline-6-sulfonate (ABTS) and lipid peroxidation inhibition capacity (LPIC) essays and their relative IC50 were investigated in 25 fig cultivars growing in Morocco. The aims of this study were to determine (i) the variation in these compounds among light and dark-colored cultivars, (ii) their partitioning between fruit peel and pulp and (iii) to display network connections among these variables. Twelve phenolic compounds (PCs) were isolated in peel extract versus eight in pulp samples. Anthocyanins, mainly cyanidin-3,5-diglucoside and cyanidin-3-O-rutinoside, were the predominant compounds in peels, where the mean concentrations were 75.90 ± 18.76 and 77.97 ± 18.95 µg/g dw, respectively. On the other hand, (−)-epicatechin and cyanidin-3-O-rutinoside were the major compounds in the pulp extracts, where the mean values were 5.23 ± 4.03 and 9.01 ± 5.67 µg/g dw, respectively. A two-dimensional hierarchically clustered heatmap was applied to the dataset to explore correlations in the dataset and similarities between cultivars, without dimensionality reduction. Results showed that anthocyanins, particularly pelargonidin-3-O-rutinoside, cyanidin-3,5-diglucoside and cyanidin-3-O-rutinoside, were the main contributors to the peels’ free radical scavenging capacity. This capacity was particularly higher in the peel of dark-colored figs compared to the fruit pulp. The local cultivar “INRA 1301” showed the most promising phenolic profile due to its very high levels of almost all detected PCs, especially (−)-epicatechin, quercetin-3-O-rutinoside, quercetin-3-O-glucoside, cyanidine-3,5-diglucoside, cyanidine-3-O-rutinoside and pelargonidin-3-O-rutinoside (54.66, 141.08, 35.48, 494.08, 478.66, 12.56 µg/g dw, respectively). Having the darkest figs in the collection (L* = 25.72, c* = 22.09 and h° = 20.99), this cultivar has also combined promising IC50 values, which were of 19.85, 40.58 and 124.78 µg/mL for DPPH, ABTS and LPIC essays, respectively.

This study aimed to explore the main biochemical components and the antioxidant capacity of five strawberry tree fruits using three antioxidant essays within the ecotypic comparison scheme, to find out the most valuable fruit presenting disease-preventing properties. Total phenols, total flavonoids, total anthocyanins, antioxidant activity (DPPH, ABTS, and β-Carotene bleaching assays), pH, titratable acidity, soluble solids, and moisture content were investigated in five strawberry tree genotypes belonging to several areas in Morocco. Phenolic compounds were also identified using high performance chromatography (HPLC), with a diode array detector (DAD). High significant differences (p ˂ 0.05) were revealed among the examined genotypes regarding their total phenols (25.37–39.06 mg gallic acid equivalents (GAE)/g Dry weight (DW), total flavonoids (3.30–7.07 mg RE/g Dry weight (DW), total anthocyanins (0.15–0.64 mg cya-3-glu/100g Dry weight (DW), pH (2.44–3.92), titratable acidity (0.65–1.01 g malic acid/100g Fresh weight (FW), and soluble solids (14.83–18.53%). The average radical scavenging capacity, assessed using three methods, exhibited the following concentration ranges: 3.33–21.08, 2.25–19.58, and 1.08–13 mg Ascorbic Equivalent (AAE/g Dry weight(DW) for the DPPH scavenging test, ABTS, and β-carotene bleaching, respectively. Seventeen phenolic compounds were identified in sampled cultivars. Gallocatechol and catechin were found to be the major phenolic compounds. The correlation matrix revealed significant correlations among investigated variables, particularly ABTS and DPPH. The principal component analysis showed that the first three components formed 90.25% of the total variance. The following variables: chlorogenic acid, ellagic acid derivative, ellagic acid, rutin, and cyanidin−30.5-diglucoside, were the most involved in the total variance. The results revealed highly promising physico-biochemical profiles within the studied strawberry tree genotypes.

Wild edible fruits have been used centuries by local people mainly for nutrition purposes and they have attracted the attention of researchers in the last decade throughout the world. Among wild edible fruits, the strawberry tree (Arbutus unedo) is widely distributed mainly in Mediterranean countries. However, the lack of information about strawberry tree genetic resources in Mediterranean countries is a major cause of its low exploitation by breeders. For a practical use and exploitation of the strawberry tree native germplasm, phenological, morphological, and biochemical characterization of the plant is essential. In this study, some important phenological, morphological, and biochemical characteristics of sixteen local strawberry tree genotypes were determined. Significant variations (p < 0.05) were observed in most of the investigated phenological, morphological, and biochemical traits of the genotypes. The genotypes were harvested between 2–21 November. The fruit weight and the number of fruits per cluster of the genotypes varied from 3.89 to 6.86 g and 3.61 to 7.94, respectively. Vitamin C and total dietary fiber contents of genotypes were found quite variable, ranging from 58 to 93 mg/100 g and 7.04 to 12.36 g/100 g, respectively. The fruits of the strawberry tree include mainly fructose and glucose rather than sucrose. Local strawberry tree genotypes are found to be promising for further valorization through horticultural characteristics for breeding. Some genotypes had significantly higher fruit weight, vitamin C concentrations, total dietary fiber, and total phenolic concentration and may be good selections for producing health products.

There are not many exhaustive works emphasizing the amount of genetic diversity among the strawberry tree (Arbutus unedo L.) genotypes in Morocco. This work aims to assess the biochemical composition of strawberry tree fruits, as well as to establish the variation of this composition among them. In this study, total phenols (TP), total flavonoids (TF), condensed tannins (CT) and hydrolyzable tannins (HT), total anthocyanins (TA), and free radical scavenging activity through ABTS were investigated in strawberry tree fruits. Furthermore, qualitative and quantitative analyses of individual phenolic compounds by high-performance liquid chromatography (HPLC) were carried out. Color parameters such as lightness (L*), Chroma (c*), and hue angle (h°) were also investigated. All studied variables showed highly significant differences among all samples with the exception of hydrolyzable tannins and chromatic coordinates. TP varied from 22.63 ± 1.74 to 39.06 ± 2.44 mg GAE/g DW, TF varied from 3.30 ± 0.60 to 8.62 ± 1.10 mg RE/g DW, and TA ranged between 0.12 ± 0.06 and 0.66 ± 0.15 mg cya-3-glu/100 g DW. In addition, CT and HT amounts were in the range of 10.41 ± 1.07–16.08 ± 1.50 mg TAE/g DW and 4.08 ± 2.43–6.34 ± 3.47 TAE/g DW, respectively. Moreover, the IC50 value (ABTS) ranged between 1.75 and 19.58 mg AAE/g DW. 17 phenolic compounds were detected in strawberry tree fruits. Gallocatechol and catechin were the most abundant phenolic compounds. Matrix of correlations revealed significant positive and negative correlations among variables particularly c*, a*, and b*. Principal component analysis (PCA) showed that the first three components formed than 68% of the total inertia. The following variables gallic acid, protocatechuic, gallocatechin, gallic acid derivative, chlorogenic acid, syringic acid, ellagic acid derivative II, L*, and h* were the most involved in the total variance explained. Hierarchical clustering classified samples into one main cluster, with a single branch. The results highlight a high biochemical diversity within studied strawberry genotypes, which is probably more genetically related.

This study investigated the antioxidant capacity by the scavenging activity against 1,1-diphenyl-2-picrylhydrazine (DPPH), Ferric reducing antioxidant power (FRAP) and 2,2′-azinobis-3-ethylbenzothiazoline-6-sulfonate (ABTS). The total polyphenols (TP), total flavonoid (TF), total anthocyanins content (TAC), the qualitative and quantitative analyses of individual phenolic compounds by high-performance liquid chromatography (HPLC) were also evaluated in pomegranate juices (PJ). Phenolic compounds identified in analyzed cultivars were gallic, chlorogenic, caffeic, ferulic, ellagic acids, catechin, epicatechin, phloridzin, quercetin and rutin. PJ showed significantly high TP and antioxidant capacities, but some differences existed among these cultivars. The correlation values (R2 = 0.9) between the flavonoids content and antioxidant capacity of the PJ, show that the flavonoids are among the microconstituents contributing to the antioxidant activity of pomegranate. The TP of the 18 cultivars varied from 1385 to 9476 mg GAE/L of juice. The highest TP levels were detected in the local cultuvars L1 and L3, and the lowest in the L5.

Polyphenols and betalain pigments respond property’s antioxidants benefic for the human health (Will Strike et al., 2002; Lecerf, 1999). The item present shows procured results for strengths in polyphenols and in betalains to the time in fruits and in their juice for the period 2008–2009. Our searches show that rate in polyphenols is more increased in the entire fruit than in only the juice. We have equally remarked that the red prickly pear contains amounts of polyphenols more raised than those of the yellow variety. This study has permitted us equally to value betalain pigments extracted from fruity juice. These are the betalains present in the epidermis and the pulp of the prickly pear confers on it its color varying from yellow to purple. Results show that yellow and red prickly pears contain imported strengths in betalains. Our work shows that the red prickly pear contains betaxanthin pigments in excess of the indicaxanthin that permits to valorize human’s potential spring of genuine colorings. Betalains and polyphenols are antioxidants that contribute to nutritional prickly pears’ quality and to their products of transformation.

Olive oil phenolic fraction considerably contributes to the sensory quality and nutritional value of this foodstuff. Herein, the phenolic fraction of 203 olive oil samples extracted from fruits of four autochthonous Moroccan cultivars (“Picholine Marocaine”, “Dahbia”, “Haouzia” and “Menara”), and nine Mediterranean varieties recently introduced in Morocco (“Arbequina”, “Arbosana”, “Cornicabra”, “Frantoio”, “Hojiblanca”, “Koroneiki”, “Manzanilla”, “Picholine de Languedoc” and “Picual”), were explored over two consecutive crop seasons (2012/2013 and 2013/2014) by using liquid chromatography-mass spectrometry. A total of 32 phenolic compounds (and quinic acid), belonging to five chemical classes (secoiridoids, simple phenols, flavonoids, lignans and phenolic acids) were identified and quantified. Phenolic profiling revealed that the determined phenolic compounds showed variety-dependent levels, being, at the same time, significantly affected by the crop season. Moreover, based on the obtained phenolic composition and chemometric linear discriminant analysis, statistical models were obtained allowing a very satisfactory classification and prediction of the varietal origin of the studied oils.
