24. Sensory-Guided Analysis and Recombination of Characteristic Flavor Compounds in Vanilla planifolia Andrews

Abstract

Headspace solid phase microextraction (HS-SPME) combined with gas chromatography-mass spectrometry (GC-MS) was used to analyze the volatile aroma components of vanilla extract. The characteristic flavor compounds of vanilla extract were analyzed by a sensory-guided approach based on olfactory threshold and odor activity value (OAV) and reconstituted by aroma recombination test. The results showed that 83 aroma compounds were detected in vanilla extract, and 34 aroma components contributing to creamy, sweet, sour, acidic aroma, balsamic, burnt, bean-like and spicy aroma notes were found to be closely related to the characteristic flavor of vanilla extract. According to their OAV values, 14 aroma compounds including vanillin, 4-(ethoxymethyl) phenol, 2-methoxy-phenol, acetic acid, 4-vinyl guaiacol, and vanillin ethyl ether were identified as the key components contributing to the characteristic flavor of vanilla extract. The aroma recombination sample of these characteristic flavor compounds had vanilla-like creamy, sweet, smoked and sour aromas, and could be used to identify the characteristic aroma of vanilla with a sensory similarity of 92.33%, indicating that the 14 characteristic flavor compounds can be used as key indicators for quality control of natural perfumes with the characteristic flavor of vanilla and provide a material basis for the reconstitution of food additives with the characteristic flavor of vanilla.

Abstract

The influence of external strain on the gate leakage current of AlGaN/GaN high-electron-mobility transistors was studied. The magnitude of the leakage current increased by 39% under 0.1% tensile strain but decreased by 23% under −0.1% compressive strain. The leakage current obeyed the Poole–Frenkel conduction mechanism, demonstrating a decrease/increase in the barrier height for electron emission from the trap state into the continuum dislocation state. Furthermore, the magnitude of critical reverse stressing voltage for the onset of degradation induced by the inverse piezoelectric effect became lower/higher under tensile/compressive strain compared with that of the initial state, which was attributed to the modification of the total stress in the film. In addition, using the transient current method, it was established that the detrapping time constant for the traps in the AlGaN barrier increased as a result of the tensile strain, which is ascribed to movement of the dislocation level away from the conduction band. Abstract

In order to study the inhibitory characteristics of CO2 on the spontaneous combustion of high-sulfur coal, the high-sulfur anthracite from Yangquan was selected to conduct thermogravimetric analysis experiments under different ratios of φ(O2)/φ(CO2), exploring the influence of CO2 on the spontaneous combustion process of high-sulfur coal from the perspective of combustion characteristics, heat release and activation energy. The results show that with the increase of CO2 concentration, the temperature range of the three stages of high-sulfur coal combustion is “hysteresis”, and the heat release and the rate of heat release gradually decrease; the ignition temperature, combustion temperature and maximum weight loss temperature increase with the increase of CO2, which inhibits the combustion process of high-sulfur anthracite. In inert atmosphere, the combustability of high-sulfur coal decreases and the energy required for combustion increases. The inhibitive effect of CO2 on the spontaneous combustion of high sulfur anthracite was revealed from the decrease of combustion and exothermic property and the increase of activation energy.
