Although edible insects (EI) have been consumed for ages in many countries around the world, in most European countries, this is not a traditional practice. Still, it has been encouraged as a sustainable source of animal protein besides other nutrients. The Food and Agricultural Organization and the United Nations, recommend consuming EI as a way to contribute to the sustainable development goals. Hence, this research investigated how participants from Portugal and Romania perceive EI, and how these can be useful as a source of nutrients and other benefits for human health, as well as possible risks. For that, it was undertaken a questionnaire survey, with data collected online in the two countries. For the analysis of data, basis statistics and chi-square tests were used. Results showed significant differences between Portuguese and Romanian participants in six out of ten questions, namely regarding safety (p < 0.001), use in traditional medicine (p < 0.001), possible infection with parasites (p = 0.021), of pesticides (p = 0.031), their usage as therapeutics (p = 0.001) and being potential sources of allergens (p < 0.001) and aflatoxins (p < 0.001). Also, differences were tested for other sociodemographic variables. The results showed significant differences according to age for only three questions, gender for only two questions, and Education for most of the questions, i.e., six out of the ten. These results highlighted the greater influence of variables like country of origin and education in the perception of the effects of EI in human health.

Today's consumers are becoming more aware of what they eat and the benefits that a healthy diet can provide. Edible insects (EIs) have recently been proposed as a sustainable, protein-rich alternative food source. Consumers' adoption of insects as part of their diet may be influenced by their awareness of this source of food. In this context, the current study investigated the level of knowledge about EI in a developing country, with the goal of understanding how Lebanese people perceive EI as food, as well as whether there are any sociodemographic or socioeconomic differences in their knowledge and motivation to accept EI as food. This was a cross-sectional study conducted using a questionnaire survey of 357 Lebanese participants. Basic descriptive statistics were employed to analyze the data, which were supplemented with statistical tests such as ANOVA for comparisons between three or more groups with post hoc to examine any group differences and Cronbach's alpha to assess internal scale reliability. The search for differences according to sociodemographic and socioeconomic characteristics showed significant differences between age groups and levels of education. Additionally, the results showed that the items used to assess the EI dimensions scale have a very high internal consistency, with the lowest being nutritional aspects (α = 0.669) and the highest being health effects (α = 0.797). This work is relevant because it highlights the EI food dimensions that influence people’s acceptance in Lebanon, which is facing social and economic crises while highlighting many age inequalities and education level differences. Based on the findings, individual EI dimensions were discovered, allowing for strategies deployment to effectively improve knowledge and eventually respond to a Sustainable Development Goal objective even in a nation where this is not a traditional practice.

The regular consumption of vegetables and fruits has been indicated as part of a healthy diet. They are considered healthy foods because they are sources of vitamins, minerals, and fibre. Adequate intake of these foods can reduce the risk of certain chronic diseases, like cardiovascular disease, diabetes, obesity, and various types of cancer. The objective of the present study was to determine the consumption habits of vegetables and fruits in two different countries, Portugal and France. For this descriptive study, it was used a questionnaire survey, applied to individuals over 18 years old and carried out through the internet, being disseminated on social networks and by email. The sample was constituted by 640 participants (257 from Portugal and 383 from France). Statistical tools were used for the treatment of data, like the T-Test and chi-square test utilised to compare the results between Portuguese and French consumers. The results showed that the Portuguese eat out more often than the French. Portuguese and French like vegetables equally but the French eat more vegetables and fruit per week on average than the Portuguese. The French like soup as much as the Portuguese but the Portuguese eat soup more regularly than the French and prefer soup with cut pieces, unlike the French which prefer soup with grounded vegetables. The global consumption of vegetables and fruits is low in both countries and should be increased, most especially in Portugal, where the consumption is lower. In conclusion, despite some differences found across consumers according to country, the consumption of these foods is still below the recommendations of the World Health Organisation, and therefore, some more actions are necessary to incentivise a higher consumption of fruits and vegetables as part of a healthy lifestyle.

The current study looks at a variety of factors that affect eating patterns. This is about internal and external aspects that lead to a thorough assessment of consumer behavior, with an emphasis on driving forces and obstacles that significantly affect each consumer’s food preferences. The information is based on questionnaire research of traditional and fiber food consumption as well as specific consumer purchasing behaviors. The results of the questionnaire survey were analyzed using qualitative aspects analysis and other statistical methods (ANOVA, t-test). The study’s goal is to provide comprehensive strategies that encourage and support the intake of nutritious meals, especially in light of how different food motivations and knowledge factors influence Lebanese consumer behavior. Based on the findings, individual eating motivation and its impact on consumers’ behavior in Lebanon when making food purchase decisions were found. Sources of potential influences include information, the social environment, and environmental variables. Processes like social learning influence the interplay between these components as well as food choices and eating habits. As a result, future programs to encourage healthy eating habits might profit by putting more of an emphasis on learning principles and food preferences when programs are implemented.

The constant variation of people’s lifestyle has been linked to changes in people’s eating habits. The consumption of ready-to-eat (RTE) food products, such as fresh vegetables, salads, dairy, pre-cooked meat, or pre-cooked meals, has increased in all western countries. This study aims at characterization of the Portuguese consumers’ attitude toward chilled RTE meat and dairy foods consumption. The study was performed using a questionnaire survey disclosed through an internet platform. The sample consisted of 350 individuals, who voluntarily answered the questionnaire. The survey included questions to characterize the Portuguese purchase and food safety attitudes related to dairy and meat RTE food products. The questionnaire also included questions for the sociodemographic characterization of the sample involved. According to the results, it is not clear to the customers as which is the safer refrigerated RTE food selling format, pre-packed or foods on request. The participants consider refrigerated RTE dairy and meat food products safer when purchased at the delicatessen department in the supermarket than those purchased at open markets or bazaars. With respect to the customers’ habits, they usually purchase RTE dairy or meat food products mainly from the supermarket, and in pre-packed format. Globally, the results reveal that Portuguese consumers are conscious and follow assertive attitudes toward food safety, contributing to maintain the refrigerated food chain, even when they take the product home.

Today’s consumers are becoming more aware of what they consume and the implications that a proper diet can have for their health. This work aimed to understand how Lebanese people get information about foods, and which communication media they consider the most appropriate. Also, the attitudes toward food labelling were assessed. This was a cross-sectional study undertaken by means of a questionnaire survey on a sample of 258 Lebanese participants. Data analysis used statistical tools such as T-test and ANOVA with post hoc to test possible group differences or Cronbach’s alpha to assess internal scale reliability. The results showed that radio was the first choice as a media tool used by Lebanese people for gathering food information (29.1%), followed by hospitals (23.3%), and the participants also considered that these are the most appropriate means to communicate information (28.3 and 22.5%, respectively). Regarding the Lebanese behaviour on nutrition labelling, nearly half of the participants (44.6%) very frequently or always check the food labels but some showed no interest in the components and the fibres they contain. Reliability analysis showed that the items used to assess the food labelling scale have a very high internal consistency (α = 0.847). So, the Lebanese people tend to rely on radio for information about food and the labels are considered as important source of information as well. Nevertheless, Lebanese don’t consult the nutritional composition as often as desirable in order to adjust their purchases or compare to different items, aimed at healthier food choices. So in order to inform Lebanese people about related food rich in fibres and to instigate their purchasing intentions, the producing companies must rely on marketing campaigns through radio and on labels not just the information in nutritional composition.

This article presents a study on customer knowledge and habits regarding the use of refrigerated display cabinets (RDC). The study was carried out on a sample of Portuguese retail stores’ customers, using a questionnaire survey available through an Internet platform. The sample consisted of 136 individuals, who voluntarily participated in the study. Questions included the characterization of the sociodemographic population involved. The questionnaire included different questions to related with RDC, namely customer knowledge about the appearance of each RDC equipment, questions to evaluate the respondents’ perception about the advantages and disadvantages related to open or glass-door closed RDC, questions to assess the participants’ habits and behavior when purchasing food products from glass-door closed RDC (frequency and duration of door open), questions to characterize the consumers’ habits on purchasing food products from RDC, and also questions to characterize the consumers’ shopping attitudes in the context of the COVID-19 pandemic, caused by SARS-CoV-2. The results seem to indicate that customers prefer closed RDC; for example, 61.8% of participants prefer products preserved in glass-door closed RDC, against 6.6% that admit to preferring products preserved in open RDC. Therefore, we can deduce that the existence of doors does not appear to be an obstacle to purchasing food products. Regarding the use of glass-door closed RDC, 80.1% of the participants say they just open the door once, and 53.7% of the costumers believe they keep the door open in the interval [4‒6 s]. This indicates that Portuguese customers are quite well informed about food safety issues and seem to follow assertive attitudes when purchasing food products from RDC. This study reinforces the benefits of replacing open RDC by closed glass-doors allowing significant energy savings.

The objective of this study is to investigate the consumer perceptions about quality and safety of foods packed in plastic, as well as the impact of plastic materials on human health. To carry out the study, a questionnaire survey about the consumption habits and knowledge about plastic packaging was conducted to a sample of 487 Portuguese adult citizens. The results revealed that most respondents (81%) think about food safety and quality when purchasing foods. Additionally, it was found that the consumer’s knowledge about the toxicity of components possibly migrating from the plastic packaging to the food is still limited (only 46% of participants). However, other negative effects of plastics well known to consumers include environmental pollution and marine fauna degradation (67 and 82% of participants, respectively). Thus, it was concluded that the Portuguese population need to be further educated about the toxicity of some chemical compounds present in plastic packaging, which can be ingested by migrating to the food or which can be absorbed from the environmental microplastics resulting from incorrect disposal.

The purpose of the current study is to understand how the COVID-19 pandemic has affected eating behavior and directed toward organic food and bioproducts consumption in the North African region especially Morocco, Algeria, and Tunisia as well as identify the variables that may affect the eating behavior of these population. Data were collected using an anonymous online survey on 1,244 respondents from Morocco, Algeria, and Tunisia. The results showed that the confinement did influence the consumption of healthy food to enhance people’s immune system so as to prevent infection by the COVID-19, and other diseases. Moreover, academic level, gender, and country of residence were diversely correlated with the eating behavior during COVID-19 confinement. The understanding of people’s eating behavior will help the public health to reshape future policies toward organic and bio-based food production; moreover, some further nutritional recommendations could be concluded to maintain a global better health status and improve body defence mechanism.

Nanoscience and nanotechnology are new frontiers for this century. Nanotechnology translates into the ability to manipulate the material on a nanoscale. As in other sectors, recent developments in the field of nanoscience and nanotechnology offer new opportunities for innovation for food. Nanofoods are considered foods grown, produced, processed or packaged using nanotechnological tools that incorporate nanomaterials to improve nutritional quality, taste or texture, and increase the shelf life of food. Nanotechnology’s applications are diverse, going from nanoencapsulated ingredients, such as bioactive compounds, nutrients and food additives that increase the bioavailability of the compounds, to ingredients that constitute nanostructures and nanotextures that provide barriers for physical-chemical protection, which allow modification of flavour and odour. Also, has the potential to be used as biosensors to monitor food conditions during storage and transport, through packaging that includes indicators. This review covers the development and use of nanotechnology along the food supply chain, focusing the agricultural production, industrial processing and protection through packaging, as well as addressing the advantages and disadvantages of using this technology.

The reduction of sugar and the addition of healthier ingredients in gummy jellies brings some improved health characteristics to a product that usually is devoid of nutrition. Therefore, the aim of this study is to develop gummy jellies using natural ingredients, without added sugars or additives, in two varieties: one including orange juice and slightly sweetened with honey (ORH) and the other including puree made from a mixture of berries (BEM). These were submitted to physicochemical, microbiological, and sensorial analyses. Results of microbiological analyses showed that both gummies were suitable for consumption accordingly to EU legislation. The physicochemical analyses allowed making a nutritional evaluation, so that ORH and BEM presented 73.8 kcal/100 g and 39.8 kcal/100 g, respectively, five and nine times lower than similar commercial products. The contribution of macronutrients of ORH and BEM was as follows: 78.0 and 67% from carbohydrates, 21.7 and 33% from proteins, respectively. Regarding the potential functional properties, the antioxidant capacity was 50.4 ± 4.5 mg/L TE for ORH and 83.7 ± 7.6 mg/L for BEM. Sensorial evaluation showed that although the developed gummy jellies were slightly less appreciated than a commercial counterpart, still they were appreciated by members of a panel and particularly the ORH, which was rated with scores almost equal to those of the commercial sample. In addition, the developed gummies showed lower caloric values and higher antioxidant capacity than similar commercial candies. Overall, ORH and BEM gummy jellies could represent an opportunity to provide consumers with a healthier alternative to the common jelly candies available in the market.

Adolescents tend to neglect food and their eating pattern is influenced by several factors. Adolescents’ health literacy substantiates their ability to respond to the growing demands of health, being linked to health promotion in several areas, including food. The goal of this work was to analyze the relationship between sociodemographic and contextual variables with secondary school students’ food literacy. A quantitative, cross-sectional, descriptive and analytical study was carried out with a sample of 181 nonprobabilistic secondary school students, aged between 16 and 21 years (mean = 18.09 years ± 1.45), mostly female (58.0%), from 11th grade (35.4%), who are part of a secondary school in central Portugal. As a tool for data collection, the questionnaire of the project “Your PEL – Promote and Empower for Health Literacy in the young population” was used, aggregating three areas: eating behaviors, harmful consumptions and sexuality. The results showed that 58.6% of young people eat 4–5 meals a day, consume fast food weekly (79%) and eat soup (82.3%). Additionally, they eat fruit and vegetables on a daily basis (94.5 and 83.4%, respectively). The results further showed that 10th grade students have higher levels of health and food literacy. It was observed that both girls and boys are interested in receiving information regarding food, transmitted through social networks and by a communication application (84.5 and 73.5%, respectively), with significant differences (χ 2 = 4.768; p = 0.028). Adolescents face unique health challenges and a critical level of health literacy compromises their understanding of information about diet and future health. The results indicate that educational plans to empower adolescents in these areas, which integrate gender and age differences and sources of information as important variables to be considered, are pivotal for increasing levels of health and food literacy.

Breakfast has been considered one of the most important meals of the day. While breakfast habits and their consequences on children’s health and performance are well documented, studies on the adult population are still lacking. The aim of this study is to observe the breakfast consumption habits of Portuguese and Brazilian adults to understand the importance attributed to this meal, which leads people to have breakfast or to skip it, and also what types of food are consumed. To achieve these objectives, a questionnaire survey was carried out in both countries, and the data were collected through the internet. A convenience sample consisting of 694 participants (380 from Brazil and 314 from Portugal) were used in this study, all were adults who gave informed consent to participate in the research. The results showed that the majority of participants consumed breakfast every day (74.4% in Brazil and 78.3% in Portugal), and they did it at home (94.4 and 94.3% for Brazilians and Portuguese, respectively). The results also showed that the reasons for consuming breakfast and skipping it are very similar in both countries. People say they do not have breakfast because they do not want to eat in the morning or they do not have time. The reasons to always have breakfast include providing energy, satiety from night fasting, preventing hunger until lunch, because they like it, or simply because it is a habit. The level of knowledge was slightly higher among Portuguese than Brazilian participants and was found to vary according to the habits of having breakfast or skipping it and also according to country, sex, BMI class, and school level. In conclusion, breakfast habits were found to be very similar in both countries’, but the knowledge was higher among the Portuguese than the Brazilian participants. Breakfast is linked to a healthy lifestyle, and individuals’ behaviours and beliefs must be taken into account to promote health and well-being, thus diminishing the burden of noncommunicable diseases related to improper eating habits and dietary patterns.

The use of edible flowers (EF) in gastronomy is gaining popularity; however, there is still a lack of information about the factors that most contribute to the acceptance of this product. Therefore, the objective of this study was to investigate the habits associated with the usage of EF in gastronomy in three different countries (Portugal, Slovenia, and Brazil) and also to evaluate the major determinants for those habits. In addition, the level of knowledge was also investigated, particularly with regard to the aspects such as perceived risks of toxicity and pesticides. For that, a questionnaire survey of self-response was carried out on a sample of 559 participants, from the above-mentioned countries. To analyse the data, basic descriptive statistical tools were used combined with crosstabs and chi-square tests. Finally, a tree classification was performed using the classification and regression trees algorithm. The results revealed that, regardless of the country, the participants were familiar with the use of EF in gastronomy. The participants had, in general, already consumed EF, and their use was more popular between the Portuguese participants, being the Brazilian those who used them less. Significant differences were found between the countries in the form of consumption of EF and also in the types of EF consumed. There were also significant differences regarding the reasons for eating EF. The classification analysis showed that the country and the level of education were the major determinants for the consuming habits and knowledge about EF. This study highlighted that eating habits are very dependent on the customs and traditions of each country and helped understanding the factors that most affect the participants’ attitudes towards the consumption and knowledge of EF.

Monofloral Lavandula spp. honey is very appreciated by consumers due to its characteristic and pleasant aroma and flavor. Given the economic importance of this type of honey, it is important to develop a rapid and nonexpensive methodology that allows certifying its quality. In this context, this study aimed to compare the applicability and accuracy of FTIR-ATR and FT-Raman techniques for the quality evaluation of Lavandula spp. honey. Calibration models, with PLS regression models, were obtained for both methodologies concerning the following parameters: total acidity, reducing sugars, hidroximetilfurfural (HMF), electrical conductivity, ash, proline content, diastase activity, apparent sucrose, total flavonoids, and total phenolic contents. The calibration models had high regression coefficients, r 2 (FTIR-ATR: 0.965–0.996; FT-Raman: 0.983–0.999), high ratios of performance to deviation, RPD (FTIR-ATR: 5.4–15.7; FT-Raman: 7.6–53.7), and low root mean square errors (RMSEs; FTIR-ATR: 0.005–3.0; FT-Raman: 0.004–1.02). These results corroborate the potentiality of FTIR-ATR and FT-Raman for quality evaluation and evaluation of the chemical properties of Lavandula spp. honey even though FT-Raman technique provided more accurate models.

This review is focused on the utilization of insects as a new opportunity in food and feed products, including their commercialization both in traditional and new markets. It has been suggested that insects are considerably more sustainable when compared with other sources of animal protein, thus alleviating the pressure over the environment and the planet facing the necessity to feed the world population, constantly increasing. Many chefs have adhered to the trend of using insects in their culinary preparations, bringing insects to the plan of top gastronomy, highlighting their organoleptic qualities allied to a recognized high nutritional value. However, in some markets, insects or insect-based products are not readily accepted because of neophobia and disgust. Moreover, the insect markets, farming, and commercialization are experiencing a huge growth, in which the domain of animal feed is undoubtedly a very strong component. The future of insects as human food and animal feed seems promising in view of the recent trends and challenges.

Industrialization increases the number of heavy metals released into the environment. Lead (Pb2+), nickel (Ni2+) and chromium (Cr6+) are among these toxic metals and cause irreversible effects on ecosystems and human health due to their bio-accumulative potential. The decontamination through adsorption processes using lignocellulosic wastes from agricultural and/or forestry processes is a viable solution. Hence, this work aimed at studying the effect of pH on the biosorption of the metal ions using four different by-product materials: walnut shell, chestnut shell, pinewood and burnt pinewood. These experiments were conducted with solutions of the three heavy metals in which the adsorbents were immersed to measure the rate of adsorption. A range of pH values from 3.0 to 7.5 was used in the experiments, and the concentrations were determined by atomic absorption. The results showed different behaviour of the biosorbent materials when applied to the different metals. The lead adsorption had an ideal pH in the range of 5.5–7.5 when the walnut shell was used as an adsorbent, corresponding to values of adsorption greater than 90%, but for the other materials, maximum adsorption occurred for a pH of 7.5. For the adsorption of chromium, the pH was very heterogeneous with all adsorbents, with optimal values of pH varying from 3.0 (for chestnut shell) to 6.5 (for walnut shell and wood). For nickel, the best pH range was around pH 5, with different values according to the lignocellulosic material used. These results indicate that the tested biosorbents have the potential to decontaminate wastewater in variable extensions and that by controlling the pH of the solution; a more efficient removal of the heavy metals can be achieved.

The objective was to develop and validate an instrument that measures different determinants of people’s food choices and simultaneously accounts for a variety of factors: health, emotions, price and availability, society and culture, environment and politics, and marketing and advertising.

Recently, edible flowers (EF) have aroused increased interest because of their aesthetic properties as well as potential health benefits related to the occurrence of some bioactive compounds. Therefore, the aim of this work was to evaluate the total phenolics, anthocyanins, flavonoids, and antioxidant activity (AOA) (following DPPH and ABTS methods) in eleven EF. The samples were subjected to three successive extraction steps using methanol, and these extracts were then analysed for the aforementioned properties using spectrophotometric methods. The obtained extracts were used for the quantification of phenolic composition and AOA. The results indicated that, among the flowers analysed in this study, red rose, pink rose, and red carnation possessed the highest total phenolic contents (27.53, 23.30, and 18.17 mg g−1 gallic acid equivalents, respectively), total anthocyanins (3.07, 1.97, and 4.47 mg g−1 catechin equivalents [CE], respectively), and AOA (12.07, 15.77, and 12.93 mg g−1 TE, respectively, as given by the DPPH method or 8.23, 9.27 and 8.00 mg g−1 TE, respectively, as given by the ABTS method). The flowers with highest flavonoids contents were red carnation, Mexican marigold, and pink rose (17.50, 16.90, and 16.57 mg g−1 CE, respectively). Cluster analysis grouped the analysed flowers into two groups, those richest in phenolics with AOA and those not so rich. Finally, some important correlations were observed between the total phenolics and the AOA. In conclusion, these flowers could represent a potential source of natural compounds with antioxidant capacity.

In the present work, mass transfer properties of thistle flower (Cynara cardunculus L.) were evaluated for the convective drying carried out at temperatures between 35 and 65°C, with an air flow of 0.5 m/s. The calculations followed two different algorithms, based on mathematical models derived from the thin layer drying equation and Fick’s second law of diffusion. The results obtained indicated that different methodologies resulted in different values of mass transfer properties, which is an alert that care must be taken when choosing which calculation method might be more appropriate in a specific practical application. In all cases, the values of moisture diffusion and mass transfer coefficient were found to increase with increasing operating temperature. The values of diffusivity increased from 2.7866 × 10−9 to 1.4027 × 10−8 m2/s for the thin layer model-based algorithm and from 1.9256 × 10−10 to 1.2033 × 10−9 m2/s for Fick’s equation model. The values of the mass transfer coefficient increased from 8.4335 × 10−8 to 8.4400 × 10−7 m/s and from 5.8277 × 10−9 to 7.2398 × 10−8 m/s, respectively, for the thin layer and Fick’s law-based models.

This research work focused on the evaluation of energy and exergy in the convective drying of potato slices. Experiments were conducted at four air temperatures (40, 50, 60 and 70°C) and three air velocities (0.5, 1.0 and 1.5 m/s) in a convective dryer, with circulating heated air. Freshly harvested potatoes with initial moisture content (MC) of 79.9% wet basis were used in this research. The influence of temperature and air velocity was investigated in terms of energy and exergy (energy utilization [EU], energy utilization ratio [EUR], exergy losses and exergy efficiency). The calculations for energy and exergy were based on the first and second laws of thermodynamics. Results indicated that EU, EUR and exergy losses decreased along drying time, while exergy efficiency increased. The specific energy consumption (SEC) varied from 1.94 × 105 to 3.14 × 105 kJ/kg. The exergy loss varied in the range of 0.006 to 0.036 kJ/s and the maximum exergy efficiency obtained was 85.85% at 70°C and 0.5 m/s, while minimum exergy efficiency was 57.07% at 40°C and 1.5 m/s. Moreover, the values of exergetic improvement potential (IP) rate changed between 0.0016 and 0.0046 kJ/s and the highest value occurred for drying at 70°C and 1.5 m/s, whereas the lowest value was for 70°C and 0.5 m/s. As a result, this knowledge will allow the optimization of convective dryers, when operating for the drying of this food product or others, as well as choosing the most appropriate operating conditions that cause the reduction of energy consumption, irreversibilities and losses in the industrial convective drying processes.

The adequate intake of dietary fibers is essential to human health. Hence, this study intended to evaluate the level knowledge of about food fibers and investigate what factors might be associated with it. A descriptive cross-sectional study was conducted on a sample composed of 6,010 participants from ten different countries. The survey was based on a questionnaire of self-response, approved and complying with all ethical issues. The data collected were subjected to the factor analysis (FA) and the cluster analysis (CA). Validation was done by splitting the data set into two equal parts for confirmation of the results. FA concluded that ten from the 12 variables used to measure the knowledge about dietary fibre (DF) should be grouped into two dimensions or factors: one linked to health effects of DF (α = 0.854) and the other to its sources (α = 0.644). CA showed that the participants could be divided into three groups: Cluster 1 – good knowledge both about sources and health effects of DF; Cluster 2 – good knowledge about the sources of DF but poor knowledge about its health effects; Cluster 3 – poor knowledge both about sources and health effects of DF. The data were appropriate for the analysis by means of factor and CA, so that two factors and three clusters were clearly identified. Moreover, the cluster membership was found varying mostly according to the country, living environment, and level of education but not according to age or gender.

This study investigated the Lebanese consumers’ knowledge about healthy food perception and their food motivations according to gender and also to environmental, social, and health behaviors. The survey consisted of a longitudinal study undertaken on a sample of 450 participants from which only 410 questionnaires were considered to be valid. For the analysis of the data, basic descriptive statistics were used, complemented with statistical tests (Student t-test for comparisons between two groups and ANOVA for comparisons between three or more groups). Finally, analyses were done to evaluate the importance of healthy food perception among these people, and the possible sociodemographic variables are as follows: age group, level of education, gender, and living environment. The results allowed identifying which types of factors mostly influence people's food choices. They revealed that both the economic and availability motivations (mean scores 2.83 and 2.98 for female and male participants, respectively) and the social and cultural motivations (mean scores 2.90 and 3.09) have less impact on the perception of a healthy diet than the healthy motivations (mean scores 3.48 and 3.29) and the environmental and political motivations (mean scores 3.35 and 3.43), this last being also the highest expression and without statistical gender differences. This work is relevant because it highlights the food motivation factors that influence people’s perception about a healthy diet in a developing country, facing social and economic crisis in addition to many gender inequalities, yet having the highest education levels in the region in addition to its multiethnical diversity and religiosity.

This study investigated the Turkish consumers’ knowledge about dietary fibres and purchasing behaviours about fibre rich foods and also their attitudes towards food labelling with specific emphasis on dietary fibre. The survey consisted of a longitudinal study undertaken on a sample of 293 participants. For the analysis of the data, basic descriptive statistics was used, complemented with statistical tests (U-Mann Whitney [UMW] for comparisons between two groups and Kruskal–Wallis [KW] test for comparisons between three or more groups). Finally, a tree classification analysis was done to evaluate the relative importance of each of the possible influential variables on knowledge: age group, level of education, gender or living environment. The results revealed that both the level of knowledge about dietary fibre and foods and also the level of knowledge about dietary fibre and health effects were considered high for the general population. The classification analysis revealed that gender was the major discriminant for knowledge about dietary fibre and foods, while the most important discriminant for knowledge about dietary fibre and health effects was age. The importance of this study resided in the highlight of the pivotal factors that influence people’s knowledge about dietary fibre sources and the health benefits of its ingestion.

In the confectionery market, jelly gums are one of the most relevant sectors, being frequently consumed by many people, from children to adults. The present work intended to evaluate the textural properties in newly developed jelly gums made with berry fruits and herbs, given the critical role of texture in products with a gel-like structure. Four types of gums were developed (Strawberry & Anise, Strawberry & Mint, Raspberry & Mint, Blueberry & Mint) and their texture was evaluated through two types of tests (compression with a 75 mm probe and puncture with a 2 mm probe) allowing to calculate several textural properties. The results showed some differences between the two faces of the jelly gums analysed, i.e. on the top and on the bottom. As for the compression test, the Strawberry & Anise gums were among the softer (25.6 N) and with lower resilience (36.3%) and chewiness (16.9 N), despite being more adhesive (−0.5 N s). As for the puncture test, the sample Strawberry & Mint had the highest adhesiveness (−2.0 N s) but the lowest stickiness (−0.38 N). Additionally, very strong correlations were encountered between some of the properties studied (r = 0.861 or r = 0.822), and the factor analysis allowed defining three factors, the first clearly associated with the puncture properties while the other two were related to the compression properties. This work allowed concluding that the jelly gums presented different textural properties, particularly when assessed through different types of measurements. Hence, the use of different types of tests for texture analysis is recommended, since the results are complementary. This is relevant when developing food products intended for industrial production and commercialization.

The aim of this work was to identify procedures adopted by family farms in the centre and north of Portugal and Galicia (Spain), and to verify whether they resemble those used in organic farming. A checklist was prepared in Portuguese and Spanish and applied personally to managers of family farms. The participation was voluntary and 125 valid responses were collected.

Serra da Estrela cheese is a traditional product from artisanal manufacture using raw ewe’s milk coagulated with dried, wild thistle flower. The present study aimed to investigate the variation of textural properties in Serra da Estrela cheeses manufactured in different dairies through time, namely from April to June, following the end of the cheese making season. Three types of tests were conducted: compression, puncture and spreadability. These were carried out on samples coming from six different dairies situated in the PDO (Protected Designation of Origin) region of this type of cheese.

A healthy diet is crucial for the maintenance of health. Therefore, the aim of this work is to evaluate the perceptions towards a healthy diet among the participants with work or studies in areas related to diet and nutrition and those who did not.

This research intended to evaluate to what extent the managers in family farms tend to adopt practices of organic farming and identify the possible factors that might be associated with those choices. For that, a survey was undertaken in Portuguese and Spanish municipalities. The participation, by direct interview, was voluntary and 125 valid responses were obtained distributed as: 30 in Viseu (PT), 30 in Braga (PT), 30 in Barcelos (PT), 16 in Pontevedra (SP) and 19 in Padron (SP). For the treatment of the data, basic descriptive statistics tools were used in combination with crosstabs and chi square tests. Also tree classifications were conducted following the Classification and Regression Trees algorithm. In all tests a level of significance of 5% was considered. The results identified factors that influenced the behaviour of the managers in family farms towards an approximation to organic farming practices, which were the level of education and municipality, found as major determinants of the level of compliance with organic farming practices. Also, other factors like age or gender influence, although to a lesser extent, the compliance with organic farming. These results were the same for the chisquare tests or the tree classification analysis, and they thus indicate that improvements could be achieved towards a more expressive adoption of organic farming practices if planned to target the influential factors identified.

Physalis (Physalis peruviana L.), also known as cape gooseberry or ground-cherry, plays an important role in nutrition as an excellent base for dietetic products. Highly valued for its unique flavour, texture and colour, recent research has shown that physalis fruit is rich in many beneficial compounds. In this study, the diameter and mass of physalis fruits were measured, which can be used to calculate other biometric characteristics of the fruit, such as: surface area, volume or density. Other physical properties were measured, namely the colour coordinates, by means of a Chroma meter, whilst the textural parameters firmness and elasticity were measured with a texturometer. The following values were calculated for the physalis fruits analysed in the present work: 1.69 cm for average diameter; 8.98 cm2 for surface area, 2.51 cm3 for volume; 2.77 g for mass was, and 1.10 g/cm3 for density. The colour coordinates were 56.72 for lightness, 16.69 for redness, and 58.11 for yellowness. Skin firmness and elasticity were evaluated for texture attributes, and their average values were 2.40 N and 2.94 mm, respectively. The results of this work are in accordance with data reported by other authors in the literature.

Plant-based beverages (PBB) consumption has increased significantly worldwide due to an interest in vegetarian/vegan diets, taste preferences, health and ethical and environmental issues. Therefore, this study intends to investigate consumption habits, consumer preferences and consumers' level of knowledge about PBB. In this study, a voluntary, anonymous questionnaire survey was applied to a sample of participants from Portugal. The sample was recruited by convenience, and therefore, the distribution among the groups was not even. Data analysis involved different statistical techniques: basic statistics, chi-square tests, factor analysis, cluster analysis and tree classification analysis. The results indicated that the most consumed PBB were almond, soy and oat beverages. The majority of consumers chose these beverages for nutritional and health reasons, while a smaller number consumed them as part of a vegetarian or vegan diet. The main motivations for consuming PBB are mainly associated with sustainability and health benefits. The results regarding the respondents' knowledge about PBB revealed that a health-related profession was the most significant predictor. These results allowed us to conclude that the factors of nutrition, health, ethics and practice of a vegetarian/vegan diet influence the consumption of PBB. It was also concluded that being in a healthcare profession, along with age and professional status within this field, were significant factors influencing the level of knowledge about PBB. This review focuses on a set of studies about functional bakery products. The literature search was performed on scientific databases ScienceDirect, PubMed, MDPI, BOn, and SciELO, based on some eligibility criteria, and a total of 102 original research articles about functional bakery products were selected. The studies were analysed according to the types of products, functional properties, functional ingredients, their sources, and the types of measurements described. Results showed that breads were the most frequently analysed products. Most of the products were rich in fibre and antioxidants or were gluten-free. Of the 102 studies, 92 analysed physical properties, 81 involved chemical analyses, 50 involved sensorial analyses, and eight reported microbiological analyses. The most frequent physical properties were texture and colour, while the most frequent chemical components were fibre and minerals. For sensorial properties, colour and texture were particularly evaluated, which were also the most frequently measured physical properties. The studies presented various successful strategies for the fortification of bakery products with functional components, demonstrating their ability to meet consumer needs and potentiate industry growth. This review highlights the relevance of functional bakery products in the current food panorama, contributing to increased knowledge and stimulating discussions about the impact of functional bakery products in promoting healthier eating. Edible insects (EIs) have recently gained attention as an alternative and more sustainable food, emerging as an alternative to other protein foods with higher environmental impacts, like bovine meat. EIs contain a valuable composition of macro and micronutrients, important for human nutrition. Nevertheless, their consumption is not yet widespread in Western countries, such as in Europe. This work aimed to study how consumers in three different European locations perceive the role of EIs in human nutrition. Data collection was carried out by a questionnaire survey in three countries (Croatia, Lithuania, and Portugal), and 1723 participants were included in the study. For the treatment of the data, SPSS software was used, and chi-square tests and tree classification analysis were performed. The results showed that for all the statements presented to the participants, significant differences were found in information about EIs according to country. The results further highlighted that the participants were better informed about the high protein content of EIs, while not being well informed about their possible anti-nutritive effects. Tree classification revealed that the most important discriminating variable was country, with Lithuanian participants being better informed than those from Portugal or Croatia. Presently, there is a huge burden on public health due to a very high incidence of chronic diseases like cardiovascular diseases, diabetes, and obesity, among others. The modern lifestyle, with inadequate diets and insufficient physical activity, is one of the most important factors contributing to this situation. Therefore, a healthy diet can have a very positive impact on global population health. Fruits and vegetables are staple foods with a typically low caloric value that still contribute to an adequate ingestion of the necessary macro and micronutrients and bioactive compounds, with a beneficial effect on health. This study aimed to investigate the knowledge about the consumption of fruits and vegetables in two countries, Portugal and France. A questionnaire survey was carried out on a sample of 639 adult participants (382 French and 257 Portuguese). The results revealed significant differences in knowledge between countries, sexes, level of education, body mass index, satisfaction with body weight, reasons for dissatisfaction with weight, and having a chronic disease. The most influential sociodemographic variable was the country, while the most influential behavioral variable was practicing a varied diet. Factor analysis identified two factors, one accounting for items in the scale that were true, and the other accounting for false items; both factors had acceptable internal consistency. Finally, cluster analysis showed three clusters of participants: The first included individuals with high knowledge of both factors, the second included individuals with low or very low knowledge, and the third cluster included individuals with partial knowledge, who only knew about true items. Simple Summary: Climate change is one of the drivers of change towards sustainable food systems food security. Therefore, food security is a priority all around the world and across different sectors of society. Edible insects are recommended as a sustainable source of food of animal origin, but their acceptance is very diverse across cultures and countries. Therefore, our work investigated the perceptions of consumers about edible insects in 14 countries. We concluded that depending on origin, the level of knowledge is different, which is a starting point to design more focused campaigns to promote EIs, not only in non-insect-eating countries, but also in insect-eating countries. Better knowledge about the health effects of EIs and their nutritive value is a driver of change. Insects have been consumed for time immemorial in many regions of the globe. However, in other parts, they are not traditionally eaten. Because they are a more sustainable source of animal protein and provide valuable nutrients as well as bioactive compounds with beneficial effects on the human body, their consumption is encouraged. Knowledge can serve as a tool for better acceptance of insects as food. In this context, the present work investigated the knowledge about the nutritional value and health effects of edible insects in different countries. Data were collected by employing a questionnaire survey translated into the different languages of all participating countries and were treated using statistical tools. A total of 7222 responses were obtained. The results indicated that for many issues, the participants manifested a neutral opinion (neither agree nor disagree), but the participants who manifested agreement/disagreement were generally well informed. They were also able to identify untrue facts and answer accordingly by disagreeing. Factor analysis showed four groups of questions: nutritive value, negative perception and risks, safety and benefits of insects and contamination and harmful components. Finally, significant differences were observed according to the sociodemographic variables studies (sex, age, education, living environment and country), with age and country being the most influential of the sociodemographic factors on knowledge. Therefore, increasing knowledge is envisaged as an essential factor in augmenting the recognition of edible insects as a nutritional food, presenting health benefits apart from being a more sustainable source of animal protein when compared with beef or pork meats. Hazelnut shells (HS), scientifically known as Corylus avellana L. shells, are waste produced by companies that process nuts. The main objective of this study was to find an efficient way to maximize the chemical potential of HS by solubilizing the hemicelluloses, which could then be used to recover sugars and, at the same time, increase the lignin content of this material to produce adhesives or high-strength foams. In order to optimize the pre-hydrolysis process, two different temperatures (160 and 170 °C) and times varying from 15 to 180 min were tested. All the remaining solid materials were then liquefied using polyalcohols with acid catalysis. The chemical composition of hazelnut shells was determined before and after the pre-hydrolysis. All of the process was monitored using Fourier Transform Infrared Spectroscopy with Attenuated Total Reflectance (FTIR-ATR) by determining the spectra of solids and liquids after the pre-hydrolysis and liquefaction steps. The highest solubilization of hazelnut shells was found for 170 °C and 180 min, resulting in a 25.8% solubilization. Chemical analysis after the hydrolysis process showed a gradual increase in the solubilization of hemicelluloses as both the temperature and time of the reactor were increased. Simultaneously, the percentages of α-cellulose and lignin in the material also increased with rises in temperature and duration. FTIR-ATR allowed for the detection of significant spectral changes in the hazelnut shells from their initial state to the solid residue and further into the liquefied phase. This confirmed that pre-hydrolysis was effective in enhancing the chemical composition of the material, making it more suitable for the production of adhesives, polyurethane foams, or in the production of bioplastics and composite materials, combined with other biopolymers or synthetic polymers to enhance the mechanical properties and biodegradability of the resulting materials. Lima beans (Phaseolus lunatus) and adzuki beans (Vigna angularis) are some of the most nutritious underutilized pulses that are significant in being used as basic ingredients for the preparation of various food products. The present study aimed to determine the impact of soaking and germination on nutritional and bioactive components, in vitro protein digestibility, reducing power, metal chelating capacity, antioxidant activity, and anti-nutritional components of lima and adzuki beans. The findings showed that during the germination treatment, the in vitro protein digestibility of lima and adzuki beans increased by 14.75 and 10.98%, respectively. There was an increase in the antioxidant activity of lima beans by 33.48% and adzuki beans by 71.14% after 72 h of germination, respectively. The reducing power assay of lima and adzuki beans indicated an increase of 49.52 and 36.42%, respectively, during germination. Similarly, the flavonoid and metal chelating activity increased in lima and adzuki beans after 72 h of germination. In contrast, the anti-nutrients, such as phytic acid, tannin content, and trypsin inhibitor activity, decreased significantly p < 0.05 after 72 h of germination. These results are encouraging and allow for utilizing the flour obtained from the germinated beans in functional bakery products, which can contribute to eradicating protein deficiency among some population groups. At the same time, promoting soaking and germination of the beans as a way to enhance the nutritional quality and reduce anti-nutrients can contribute to the interest in these underutilized pulses. White crowberries (Corema album) are a fruit from an endemic shrub found in Southern European Atlantic costal dunes. Although this shrub and its fruits never became a formal commercial crop for a number of reasons, it has a long-lasting relevance and tradition, much associated with summer, beach and holidays. The main goal of this study was to conduct a thematic analysis of the words and small expressions people associate with white crowberries. For that, a questionnaire was used, and the participants were asked to indicate in an open-ended question which top-of-mind words/small expressions they associate with white crowberries. A total of 501 people participated in this study, of which only 394 knew about white crowberries, and from those, only 229 answered the open-ended question of interest to this purpose. The results showed that the words/small expressions given by the participants were distributed between five categories (1—Memories of places, people and times, 2—Emotions and experiences, 3—Sensorial perception, 4—Properties and uses, and 5—Natural resources' valuation). Additionally, 18 subcategories were also identified. The most representative of the categories was sensorial perception and the most relevant of the subcategories was habitats (a subcategory from category 1). The most frequent words mentioned by the participants were beach, berry and summer. In addition, the effect of sociodemographic groups was investigated and some variations were observed in the categories of the words mentioned by the participants according to sex, living environment or region. This work allowed for the identification of a high variability in the words or expressions that account for a rich patrimony of tacit knowledge, memories, emotions and perceptions of the population towards white crowberries, thus confirming their social as well as nutritional relevance.
