Polyvinyl acetate (PVA) could be used as an ingredient in food coatings, especially where high gloss is required, according to research investigating the potential of PVA as a high-gloss food coating. It was found that the gloss of apples and citrus fruits with PVA coatings is generally higher than those coated with carnauba-shellac coatings but lower than those with resin coatings. PVA and shellac coatings increase the gloss of chocolates. PVA has potential as an inexpensive alternative to shellac coating currently used for confectionery.
